Whipped Feta & Porcini Mushroom Dip with Craize Crackers Prep Time: 10 minutes Cook Time: 10 minutes Servings: 2 dozen crackers

7 oz Atalanta Feta ¼ cup cream fraiche 1 Tbsp fresh dill, chopped 8oz assorted mushrooms, sliced ½ cup sliced onion 2 Tbsp olive oil 2 Tbsp Melchorri Porcini Mushroom Pate 24 Craize crackers - Sweet Corn and/or Evertything In a food processor, combine Atalanta feta and sour cream; pulse until smooth. Add the fresh dill, pulse until combined. Set aside. Heat 2 Tbsp olive oil in large pan over medium-high heat. Add the sliced mushrooms and onions. Cook until mushrooms are golden brown and tender, about 7-10 minutes. Season with salt and pepper. Assemble by spreading 1 small spoonful of the whipped feta on each Craize cracker. Top with sautéed mushrooms and onions, and finish with a small spoonful of Melchorri Porcini Pate. Garnish with fresh dill. -
