What a creative, inspiring world we live in, and thanks to the Internet ideas are literally at our fingertips 24/7. One place in particular that has inspired me is Me & Mrs. Jones design and paint boutique. What a game changer the Annie Sloan brand chalk paint that they sell has been for me and my home, and I am sure for many of you readers, as well. For example, an old dresser can be transformed with a new color in a matter of hours, and kitchen cabinets can be re-painted in an afternoon thanks to this virtually odorless, easy to apply, quick drying paint. I recently transformed the parquet wood in my den into a beautiful, neutral striped pattern that instantly updated the room and made it unique. I can’t tell you how many compliments I get on that floor. Summer is the perfect time to flip through magazines or browse websites and let your imagination wander, then take something old and make it new again.

Steps for
Healthy Legs
W
e've all been told in some form or another that it is normal for our legs to ache and get charley horses as we get older. Aches and pains, after all, are part of life and are often attributed to arthritis. Varicose veins, especially in young adults, are thought of as battle wounds inflicted by the work that we do, the price to pay for having had babies or the result of bad genes from our parents and grandparents. It turns out that these “truisms” aren’t really true after all. Painful legs and varicose veins that were once untreatable are actually signs of a very treatable underlying problem with veins in our legs called venous insufficiency. Venous insufficiency can cause many symptoms. Some people have unsightly varicose veins, the knobby, twisty veins on the surface of the legs. Varicose veins can cause more than just dissatisfaction with a person's appearance; they can cause pain and swelling that worsen as the day goes on, especially in those who are on their feet a lot. Other people with venous insufficiency don't develop varicose veins 18 | At Home Memphis & Mid South • June 2016

but instead get tired legs, especially after a long day, and swollen, painful or discolored ankles. Some people experience charley horses and restless legs that keep them awake at night. With venous insufficiency, the internal veins that you can’t see get stretched out and can no longer overcome the forces of gravity. Blood begins to pool in the legs, causing the symptoms mentioned above. The good news is that venous insufficiency is easy to diagnose with a simple, doctor's office-based ultrasound and also easily treated in the office. Best of all, treatment is frequently covered by insurance. Venous insufficiency is treated with laser therapy called EVLT. A small needle is placed in the diseased vein and a laser that produces heat closes it and forces blood to be re-directed into the healthier veins in the leg. Pain control comes through a local topical anesthesia like a dentist would use. Some providers offer IV relaxing medicine; make sure to ask in advance if this is the case at the location you consider for treatment. The procedure takes only a few minutes and people are up and walking immediately afterwards, with mild bruising and achiness commonly experienced for a day or two after the procedure. The results are immediate and the relief the treatment brings is remarkable.
Dr. Michael A. Nelson is a vein disease expert and has performed thousands of EVLT procedures. Dr. Nelson provides these services at ProActive Heart & Vascular in Germantown.

Rabbi Micah D. Greenstein TEXT BY LESLEY HARRIS COLVETT PHOTOGRAPHY BY JOHN TERRY, FOREST HILL PHOTOGRAPHY
Rabbi Micah D. Greenstein, senior rabbi at Temple Israel, is a notable fixture in the Memphis community, inspiring others through faith and hard work. At Home Memphis & Mid South chatted with Rabbi Greenstein about his family, his life of service and his hopes for Memphis.
W
here did you grow up and attend school?
As a rabbi’s kid, we moved from my Massachusetts birthplace to Ohio and then Jacksonville, Florida, where I graduated high school. I attended Cornell University and the Kennedy School of Government at Harvard University before five years of rabbinical school in Jerusalem, Los Angeles and Cincinnati.
What led you to become a rabbi? To be with people at the most critical junctures in their lives is a privilege...to keep alive this precious faith family known as the Jewish people is an honor. I see Judaism and my rabbinic calling as a meaningful roadmap for the building of a better world.
26 | At Home Memphis & Mid South • June 2016
What has been your greatest honor to date? Serving as senior rabbi for Tennessee’s largest and oldest synagogue (Memphis’s Temple Israel) is the highest honor, but two others come to mind. In 2005, I was selected as preacher for Tennessee’s Major State Day at the Washington National Cathedral, and just a few months ago, I was elected to the National Board of Directors of the NAACP.
What has been your greatest achievement to date? By far, my greatest achievement was marrying Sheril Grassgreen of Montgomery, Alabama, and raising the three children who are always at the center of our lives, Cara (24), Jake (21) and Julia (17).
Favorite hobbies? Running marathons from Honolulu to Boston, playing tennis with Jake when he’s home from college, reading my oldest daughter’s blog Caramelized, and doting on Julia, our youngest.
Why Memphis? What do you enjoy most about living in the Mid South?
at home with
first Judeo-Christian journey to Israel with senior pastors of large Mid South congregations, transcending racial and denominational lines. More importantly, whenever the religious voice of Memphis is needed to support public education, condemn violence or simply bring people together, we do that interfaith work as well as any city in America.
Favorite places to travel?
Memphis is a city with a soul. Within Memphis is the third poorest ZIP code in America, yet this city is still the second most charitable per capita in the nation. I know Memphians who could live anywhere but have chosen this city where one person, idea or cause can make a major difference in the lives of others.
The Ramon Crater in Israel for its history and serenity, Phnom Penh, Cambodia, for its courageous and resilient people, and wherever out-of-town friends and family live.
What do you enjoy most about being a rabbi?
My hope for Temple Israel is to continue being a force for goodness not only for the Jewish community but for Memphis as a whole. My hope for Memphis is the cultivation of a new spirit of togetherness in addressing poverty, violence and access to quality education.
I love prayer and helping people, and sometimes marvel that I actually get paid for a life of service! I also enjoy stirring people to action instead of withdrawing from the problems and challenges God is waiting for us to address.
Please tell our readers more about your involvement with other faiths throughout the community. Memphis is a national model for interfaith relations, from the high-profile Calvary Lenten Series, which brings religious leaders together from across the faith spectrum, to other impactful interreligious dialogue gatherings with Christian, Muslim, Hindu and other faith leaders. What are your hopes for Temple Israel and the city of Memphis?

A Perfect Blending of Personalities When Stephanie and Brent Singley wanted to update the flow of their home, they turned to Becca Gaines for help. Text by Ruthie Hall | Photography by Steve Roberts
The Singleys' desire was to make the living room the focal point of their home activities. Before the renovation, that simply wasn’t possible; an awkward bar cut off the flow between the living room and kitchen. A cased opening was not only a distraction, it afforded visitors a view from the foyer into the laundry room—not always a pleasant sight. Since the living room was intended to be the functional center of the house, partly because it was larger and taller than any adjacent space, the Singleys decided to renovate. Gaines helped to transform the room into a cozier space, while avoiding the potential of too many focal points. She leveraged the various traffic patterns through the room by widening the opening 28 | At Home Memphis & Mid South • June 2016
into the kitchen. Eliminating the bar counter and replacing the old popcorn ceiling with painted wood planks helped to accomplish the more open feel of the room. Says Gaines, “The living room renovation portion of the Singleys’ home only took six weeks, but we enjoyed working our way around the house updating furnishings for about two years. We spent a few more weeks on minor renovations in their bonus room, and when Stephanie and Brent found out they were expecting baby Sage, our focus turned to creating a joyful space to celebrate her long-awaited arrival. Since then, Stephanie and I are always up to something around this house.”
The living room is full of one-of-a-kind treasures. A large antique armoire and sideboard mediate the scale of the high ceilings with the two smaller slip-covered loveseats that form a cozy central seating group. The loveseats and modern slipcovered wingback chairs are centered on the fireplace and a French armoire from the 1780s that secretly houses a large TV and lots of toddler toys.

A non-traditional coffee table in the playroom is perfect for game night or Bible study. The homeowners and the designer made sure to keep many aspects of the house the same. That desire for continuity included one of Gaines’s favorite features, the brick floors in the sunroom. The bricks are as old as the home and have the character and look to prove it. Gaines explains, “One great design challenge we faced was figuring out how to maximize the usable space in the bonus room, with so many low, sloped ceilings. This project started with some small adjustments to the paint and trim work and ended with very carefully designed furniture pieces. The sectional was custom designed and built for this space, to fit snugly around the far half of the room, providing maximum seating and floor space for little ones to play. The TV is on a telescoping arm, to be viewed from anywhere in the room, and all TV equipment is hidden in a vented alcove behind a custom iron grate door.”

home feature " The living room is full of one-of-a-kind treasures."
Gaines and the Singleys put much consideration into transforming the living room from an awkward, seldom-used space into a cozy and inviting environment. The room that has become a central gathering place for the busy family includes a unique seven-foot-tall clock face. The home exudes a perfect blend of the couple’s different personalities. Stephanie, who owns Bella Vita, The Back Room and Itty Bitty Bella, is drawn to things both natural and glamorous while Brent loves the outdoors and a refined rustic look. Gaines incorporated design elements that reflected both styles into each room, creating a unique ambiance that turns the house into a fun and comfortable living space.

One of the most remarkable aspects of the renovation is the number of local artisans and craftsmen who played a part in it. Gaines commissioned a number of custom iron pieces, from lights to tables to stair railing, most of which are very simple and streamlined to balance the more traditional antiques and ornate elements. The antiques that grace every room are often used in new and unique ways. Most of the artwork throughout the home is by Emily Ozier.

Outdoor living spaces have become the most popular part of the home over the past few years. Experts agree that time spent outdoors can enhance your quality of life, add value to your home and increase your options when it comes to entertaining and quality family time.
42 | At Home Memphis & Mid South • June 2016
At Home Memphis & Mid South magazine chatted with Mike Omar, owner of MorGreen Nursery and Landscape in Collierville, TN. Omar says that fire pits, including gas ones, are an asset in many homes around the Mid South. “Fire pits are used yearround, mainly October until April, and during the summer you can turn them into an interesting little vista for seating/ entertaining by building a top to cover the pit. Omar points out that it is important to invest in good outdoor furniture that will last for years and give homeowners peace of mind that they won’t have to replace it any time soon. MorGreen partners with Jack Wills Outdoor Living, a comfortable, high-quality outdoor furniture line based in Tulsa, OK. Another great item homeowners are enjoying in their outdoor living space is an evo grill. “The evo grill is like an outdoor Benihana where you can cook stir fry,” says Omar.

A Chat with Interior Designer Alexandra Lauren Text by Jordana White | Photography by Kristen Elizabeth Photography
Interior designer Alexandra Lauren knows clients want highimpact design, but they don’t always want to start from scratch when it comes to redecorating. She recently sat down with At Home Memphis & Mid South to share the design tips and secrets that helped her update client Ann-Marie Kelley’s Jackson, TN,
What was the overall objective for this home update? During my initial consultation I found that the house felt dark and dreary, despite its rich color scheme. It didn’t reflect my client’s sunshiny spirit. My goal with Ann-Marie, and all clients, was to lighten and refresh the overall design scheme while creating a home that’s true to the owner’s personality.
How can natural light freshen up your home? Window treatments make a HUGE difference. When I started redoing Ann-Marie’s living room, her windows had both blinds and draperies. We moved the living room draperies into the kitchen, letting us scrap those blinds, too. 50 | At Home Memphis & Mid South • June 2016
Blinds are easy and practical to use, but, even when fully open, they limit the amount of light that comes into a space. To me, they’re pretty much dust-collecting shelves that block your window. More often than not, they are heavy to lift and tend to have mishaps with lever mechanisms. Simply put: I am not a fan! When we took away the living room blinds, things immediately got brighter. Next, we added new rods that extended well above the window frame and custom draperies that ran 10 inches past each window edge, creating the illusion of wider, taller windows. In my opinion, decorative yet functional draperies are always the way to go: they allow a window to let in all of the natural light during the day but can still be drawn for privacy as needed.
When refreshing a home, what do you do with existing furnishings? You don't have to scrap all your furniture to make a high-impact transformation. Simple tweaks can change the look and feel of a room, meaning you can purchase fewer new items. In Ann-Marie’s home, I changed the hanging direction of existing artwork from horizontal to vertical, highlighting her ultra-high ceilings. We kept her existing console, adding two candle-shaped wall sconces for relaxation, visual symmetry and to help frame the artwork. Unfortunately, her rug wasn’t that big, which was a problem—an undersized rug makes a room feel smaller. We brought in a larger rug that pulled in hues from her artwork, amping them up a notch. We replaced a standard fan light fixture with a stylish two-tiered ceiling pendant, adding light and drawing attention to those tall ceilings. The result was a brighter room that, with minimal spending, felt endlessly more spacious.
What simple change can readers make to create a similarly impactful update? One of my favorite updates is swapping out basic master bathroom mirrors for elegant pairs packed with personality. You can completely transform a room with a signature piece that grabs your attention and upgrades the entire space’s style.
What is your number one rule for home design? The devil is in the details. Keeping a consistency throughout the home creates harmony and flow. I picked up the nail trim detail on Ann-Marie’s console and carried it through to her new kitchen barstools and her ceramic coffee table vases. The nail trim detailing, photography of running horses and a sculptural horse figurine added a hint of cowgirl swagger and style throughout the home.

Blue Star Ranch
an Unforgettable Getaway
I
n North Carolina’s Blue Ridge Mountains travelers can find any number of retreats for rest and relaxation. One offers a unique equine experience and a renewed sense of purpose. Located between Cashiers and Highlands, NC, is Blue Star Ranch. The ranch is the brainchild of Memphians Dr. Trish and Carl Ring. After a series of life-changing events, Trish, a therapist for over 20 years, was inspired to restore disparate land plots to create a haven for people seeking a return to nature and a refreshed meaning in their lives.
Blue Star and its unique RingLeaderTM Equine Coaching Program are the results of that inspiration. RingLeader Equine Coaching is an experience that gives clients a real, in-the-moment understanding of how they communicate, relate, feel and use their personal power. All of the work with horses is groundwork; no riding is involved. Each participant is paired with a horse to work inside a round pen, giving commands based on the coach’s instructions, then observing how their equine partner responds. The basic principle of the RingLeader program is that whatever happens in the pen is a “mirror” of what is happening somewhere else in the participant’s life. Coaches help guests alter their communication patterns until their horse responds properly. According to Christine Brouthers, director of marketing and 54 | At Home Memphis & Mid South • June 2016
Text by Megan Murphy, photography submitted by Blue Star Ranch programming at the ranch, “Trish had been to some equine coaching workshops and she felt drawn to do the work. She trained with a horse whisperer in California, recruited Ali Smallpage to design the equestrian program, and searched the Southeast for horses with lively but gentle personalities that would be good partners with clients in equine coaching.”

Themed, multi-day group workshops include Relax, Revive, Reset: Enjoy Your Teenage Daughter (June 15-16), Finding Space in Your Life for Yourself: A Retreat for Professional Women (July 11-13), Unleash Your Inner Super Power: A 3-Day Retreat on Creativity (August 1-3), and Stars, Shadows & Dreams: Embracing Your Archetypes of Change (September 26-28). Most sessions are geared toward ages 15 and up, but Blue Star staff can custom design programs to cater to younger participants. The ranch is open from May to October. Although there is no housing on site, the surrounding area boasts a variety of lodging options. A City Full of History BELFAST, NORTHERN IRELAND, IS A BEAUTIFUL CITY RICH IN HISTORY. THE SITE ON WHICH BELFAST WAS DEVELOPED DATES TO THE BRONZE AGE. THE CITY PROPER WAS FOUNDED IN THE 14TH CENTURY AND IS STILL SURROUNDED BY A 5,000-YEAR-OLD HENGE.

Dunluce Castle The city is a museum lover’s dream with a wide variety of galleries including Titanic Belfast, the Irish Linen Center and Lisburn Museum, the Ulster Museum at the Botanical Gardens filled with 15th-century art, and the Crumlin Road Gaol. As in other large cities, traffic in the center of Belfast is congested and parking is almost nonexistent. Walking and using the Translink public transportation system of buses and trains are the best ways to get around. The hop-on hop-off sightseeing trolleys are another convenient way for visitors to orient themselves to Belfast. From the Hilton Belfast, centrally located in the middle of the City Center, it’s only a short walk to City Hall, an ornate 19th-century edifice that stretches for blocks. Guides give daily free tours of the stunning interior. The exterior of the Titanic Belfast, designed to look like the bow of an approaching ship, is awe inspiring. Located on the dry dock where the Titanic was built, the museum’s galleries are stacked the same way the ship’s decks were. Standing in one of the galleries guests get a sensory perception of noises that would have come from the ill-fated liner’s engine room. Exhibits not only tell about the building of Titanic but also show what a boomtown Belfast was in the 19th century. Back then Harland and Wolff, the builders of the great ship, employed thousands of people. Belfast’s docks were the largest in Ireland with more than 6,000 men working them at any given time. The most extensive rope works factory in the world was here. Textile mills spinning flax for linen ran 12 hours a day six days a week. A train ride to nearby Lisburn provides stunning views of the valley along the Lagan River. The Irish Linen Center and Lisburn Museum is housed in a 17th-century market building. The exhibit “Flax to Fabric,” with several types of antique looms on display, shows the step-by-step process of linen making. A hundred years ago 180,000 pounds of linen were shipped yearly from Lisburn.

travel Another part of Belfast’s history is the Troubles, the 30-year conflict between Republicans and Loyalists that plagued the city from 1968 to 1998. Nowadays bus, walking and taxi tours explore the West Belfast neighborhoods where much of the Troubles took place. The people and events of that time are memorialized in public murals. Despite the common misconception that Irish food is bland, the fare in Northern Ireland is more than boiled beef and potatoes. Chefs in Belfast have embraced the farm-to-table experience. Pubs, tea houses and restaurants around the city offer interesting and delicious menus. McHugh’s Bar and Restaurant, a neighborhood pub, serves incomparable fish and chips. George's of the Market, known for fabulous brunches, does not disappoint. One taste of the eggs Benedict with smoked salmon reveals why the restaurant was awarded Best Brunch in Belfast. Several bus touring companies offer day trips along the Causeway Coastal Route, but visitors eager to sightsee at their own pace should hire a car. This is the heart of Northern Ireland, the Glens of Antrim dotted with medieval villages. Carrickfergus is home to a stunning 12thcentury Norman castle, Kilroot, where Jonathan Swift, author of Gulliver’s Travels lived, as well as the magnificent gardens of Glenarm Castle, home to the Earls of Antrim for 400 years. Traveling the Causeway Coastal Route can be a full day trip or a side journey of several days. The village of Bushmills makes a good home base from which tourists can easily take the Translink Causeway Rambler to the Giant’s Causeway and Dunluce Castle. Accommodations in Bushmills range from the large and luxurious Bushmills Inn to the cozy Lismar Bed & Breakfast to small self-catering houses such as Bushmills Thatched Cottage and the Village Cottage. At Carrick-A-Rede a rope bridge spanning the ocean between two cliffs bids visitors to overcome their fear of heights. Other destinations not to be missed include Ballintoy, where scenes from Game of Thrones have been filmed, and Portrush with its sandy beaches. June 2016 • athomemms.com | 63

Bushmills Distillery has been in operation since 1608 when King James I signed a grant allowing a distillery on this site. The whiskey is still made the same way it was in King James’ day, with water from the surrounding streams and Irish barley. Even though Bushmills is a working distillery, tours are given every day, at the end of which guests are offered a drop of Irish whiskey. The Giant’s Causeway, a UNESCO World Heritage Site, is home to 40,000 basalt polygonal columns and rolling green hills. Local legend claims that it was carved out by a giant named Finn McCool. Exhibits in the Visitors Centre reveal the real reason: cooling and shrinking of lava flows over 60 million years ago. The Visitors Centre itself is a thing of beauty rising from the earth and sloping with the hills. Its grass roof affords panoramic views of the Coastal Route. The terrain is rugged and varied with walking trails that the National Trust has graded from easy to challenging. With its 30-foot towers and stark ruins against a backdrop of the Atlantic Ocean, Dunluce Castle is dramatic. Written records show the castle was built in 1513 by the MacQuillian family. As with many other castles in Northern Ireland, it was besieged, going back and forth between owners until the McDonnell clan claimed Dunluce. The family still owns the castle. A Portrait of the Portraitist: Marc Shea’s Nationally Acclaimed Realism
arts
Text by Connor Bran | Photography courtesy of Marc Shea
Marc Shea, a national award-winning artist, paints exquisite portraiture in a variety of formats, sizes and mediums. A Memphis native, Shea was an architectural designer for over a decade after receiving a degree from the University of Tennessee. Though he had always enjoyed making pencil drawings of houses and doing charcoal portraits, and had studied painting in Nashville and at the University of Memphis, a corporate layoff in 1990 provided Shea “an abrupt incentive” to become a full-time artist. “Fortunately,” he says, “I was at work on my first oil [painting] commission when the layoff struck, and if I could just get it finished up I’d be able to go on eating for a few more months. My client’s wife liked her paintings enough to offer to act as my agent, and she proved to be a wonder worker in those early years. I’ll always be grateful for her help. I’ve been at it ever since.” Since childhood, Shea has been fascinated with the versatile nature of faces—specifically their varying structures, expressions and emotions. Trying to capture a personality with something as basic as a drawing provides the artist an “irresistible challenge.” The drive to meet that challenge explains Shea’s aptitude for aesthetic realism; the ability to accurately express reality competently has always appealed to him more than any other artistic style.
Shea’s breathtaking portraits have garnered him national acclaim and the top spots at highly competitive juried contests. Shea was “stunned and thrilled” to be awarded the top prize in the National Portrait Competition in 1996; in 2006, he won first place in the Portrait Society of America’s Members-Only Competition. In regard to his aesthetic influences, Shea says, “Like a good many portraitists, I’ve long been dazzled by the technical skill of Gilded Age titans like Sargent, Boldini, Zorn—men who could toss off a painting as easily as the rest of us toss off a signature. Contemporary artists who’ve had a strong influence on me include John Sanden and Richard Schmid.” Shea is also influenced by the influx of younger artists on YouTube, whose stylistic verve and videos perpetually amaze him. Playing guitar, fishing and yard work occupy Shea’s free time away from the easel. The call to create, though, is strong. “There’s always drawing. Nothing like an hour of drawing to serve as a natural sedative for me,” he admits. While Shea’s award-winning, full-scale portraiture is his main line of work, the artist is hopeful that the market for quick, simple head studies in oil will continue to grow. “I like what I’m doing,” Shea reflects, “Immersing myself in a session of drawing or painting has a mesmerizing hold on me.”

is the month to honor the fathers and special men in our lives, and there’s no better month to do so, as the weather welcomes an outdoor gathering. Wedding and event planner Gracie Leathers hosted a backyard celebration perfect for honoring that special man. June 2016 • athomemms.com | 81
entertaining The Theme
The theme for this backyard party was a Father’s Day cookout. “I wanted to create a space that both men and women could enjoy equally and appreciate. I also wanted everyone to feel relaxed and just enjoy the beautiful summer evening,” says Leathers.
The Inspiration
The inspiration was the special men in the designer’s life. “We thought about what they like to do and how they like to spend their time. We incorporated items representing these things into the décor details...the shotgun shell napkin holders, coasters with logos of their favorite beers, florals placed in beer cans and growlers, and also a growler station with their favorite local beers,” she says.
Set the Scene
“I set the scene by creating different points of interest throughout the backyard. We set up the tables outside in an open green area next to the grill so guests could have a place to sit and mingle and relax without feeling crowded. I also placed a growler station and seating area with desserts toward the back of the yard to create another space where guests could enjoy something new apart from the main food and seating area,” Leathers says. According to Leathers, a cornhole game is a fun and easy way to keep the party going. She set up the game boards in the garage to create a space that did not interfere with the dining and seating areas.
Decor
Leathers tried to keep things casual and functional since it was a backyard cookout. However, she still wanted the decor to look clean, welcoming and inviting.”I tried to mix masculine and feminine pieces to keep things interesting for the guys but to also please the women at the same time. We did this by using neutral colors, placing florals and beer cans together, using shotgun shells against pretty plating, and by hanging twinkle lights (which we know every girl loves) right where all the grilling action was taking place,” she says.
Color Theme
Leathers says since the party was outside, she didn't have to add a lot of color. “With so much in bloom, I just stuck with natural linens and plating and also some very nice wooden chairs. I let nature do all the talking! I did love the colors Ashlye McCormick used for the floral arrangements. They were so pretty but not too frilly so they perfectly fit the theme of tying in male and female interests. I love how she used the artichokes!” Leathers adds.

Host Your Own
Leathers’ advice is to think of the guest of honor and what he enjoys. “I know my dad likes to get together with friends but he wants it to be easy and casual and relaxing. Think of what the person you are celebrating enjoys doing in his spare time and try to incorporate those things into the decor or food,” she recommends. “My dad loves local beer and grilling out so I incorporated those things into the party with the growler station, cookout theme and Wiseacre beer cans for floral vases. “Also think about how that person would want to feel during the event,” she continues. “Do they want to feel like they are the honored guest at a fancy party or would they rather just chill out and be more casual and relaxed? My dad is all about being low-key which is why we went with a laid-back yet pretty backyard party.”

Grilled Chicken Salad with Asparagus and Blue Cheese Excerpted from Simply Grilling by Jennifer Chandler PHOTOGRAPHY BY JUSTIN FOX BURKS FOOD STYLING BY JENNIFER CHANDLER
"This is my fun twist on chicken salad. Colorful and flavorful, it’s a one-dish meal that’s my go-to for when I need to make lunch for a group or to take on a summertime picnic." 4 boneless, skinless chicken breasts (about 1 pound) 5 Tbsp. olive oil, divided 6 Tbsp. Dijon mustard, divided 1 bunch (about 1 pound) asparagus, tough, woody ends snapped off and discarded 1/2 cup thinly sliced red onion (1 small onion) 1/2 cup thinly sliced red bell pepper (1 small pepper) 1/2 cup thinly sliced yellow bell pepper (1 small pepper) Vegetable oil, for grill grates Kosher salt and freshly ground black pepper 1/2 cup crumbled blue cheese or Gorgonzola cheese 86 | At Home Memphis & Mid South • June 2016
In a shallow nonreactive dish just large enough to hold the chicken in a single layer, stir together 2 Tbsp. of the olive oil and 4 Tbsp. of the mustard. Add the chicken and toss to coat. Cover, place in the refrigerator and marinate for 30 minutes. While the chicken is marinating, prepare the vegetables. Cut the asparagus into 2-inch pieces. Over high heat, bring a medium pot of salted water to a boil. Add the asparagus and cook until vibrant green and crisp tender, 1 to 1 1/2 minutes. Drain the asparagus and rinse with cold water to cool. Reserve. In a large skillet over medium-high heat, warm 1 Tbsp. of the oil until a few droplets of water sizzle when carefully sprinkled in the pan. Add the onion, red bell pepper and yellow bell pepper. Cook, stirring frequently, until the vegetables are soft, about 5 minutes. Set aside to cool. Heat a clean grill to medium-high with the lid closed for 8 to 10 minutes. Lightly brush the grates with oil. Generously season the chicken with salt and pepper. Place the chicken on the grill. Close the lid and cook, turning once, until no longer pink in the middle, 6 to 8 minutes per side. Remove the chicken from the grill and let rest for 5 minutes. Slice thinly against the grain. Set aside to cool to room temperature. In a large bowl, toss the chicken with the asparagus, red onion, red bell pepper and yellow bell pepper. Add the remaining 2 Tbsp. of oil and 2 Tbsp. mustard and toss to coat. Add the crumbled blue cheese and toss. Season with salt and pepper to taste. Serve chilled or at room temperature. Serves 4 to 6.
Do-ahead: This dish can be prepared and assembled the night before. Store covered in the refrigerator until ready to serve.

TAKING THERAPY BY THE REINS
David and Head Instructor Sara Bryant
TEXT BY RUTHIE HALL PHOTOGRAPHY SUBMITTED BY SOUTHERN REINS
“Our goal is to focus on the abilities of our participants, and our hardworking team of therapy horses and ponies help them achieve, aspire and amaze.” Noelle and Candy
Imagine loving horses and wanting to learn as much as you can about them. Imagine having those desires but not being able to use conventional methods to do that. Combine a love for people with disabilities with a love for horses and you will find Southern Reins Center for Equine Therapy. "Southern Reins is a place where miracles happen" says Jill Haag, executive director. "Our program focuses on the abilities of our participants and on the backs of our therapy horses and ponies, disabilities disappear and smiles are contagious. It is truly magical." Southern Reins was founded last July to serve disabled people in Mississippi, Tennessee and Arkansas. Located on Panther Creek Ranch in Nesbit, MS, the facility includes a beautiful 12-stall barn, a lounge, an outdoor riding arena and lush pastures. Year-round activities include therapeutic riding and barn lessons in both group and individual formats. Soon, equine facilitated mental health treatment and hippotherapy (a physical, occupational or speech and language therapy treatment strategy that utilizes equine movement) will also be offered. Next month children ages five to 17 will fill the center during two week-long camps. Participants will enjoy mornings filled with barn lessons, riding lessons and crafts. Horses have an uncanny healing relationship with most people, as Kirby Floyd, chairman of Southern Reins, knows well. “A horse does something magical for a person’s soul. I have witnessed the healing power of the relationship with a horse again and again, and I want to share this program with others so they, too, may receive this wonderful gift," Floyd 98 | At Home Memphis & Mid South • June 2016
explains. “God uses animals to teach us great and valuable life lessons—if we will just take the time to listen.” Vice chairman Courtney Smith uses her special education degrees and her love and knowledge of horses to create programs for the center, which she describes as “a dream come true.” Smith shares her belief in the power of the relationship between horses and people with other ranch staffers who devote their lives to connecting horses with children in the Mid South. As with any therapeutic animal facility, the program at Southern Reins only works as well as the horses. With names like Otie, Teddy, Candy, Gwen, Izzy and Boomer the ranch’s equine staffers are an important factor in the program’s success. With such a hard-working group of people and wonderful horses, Southern Reins makes a huge impact for the greater good of the local community.
