THE CoSy AuTumN Another summer has passed and we who live here on the sheep is lands are preparing for winter. For us autumn is, in many ways, synon ymous with mountains and sheep drives. Men and women drive flocks of sheep down autumn hills to fill the meat stores for winter. The wafting aroma of cured lamb simmering on the stove is also characteristic of autumn and win ter here in the Faroe Islands. The meat, which we for centuries have fermented and cured, has now also caught the attention of the wider world. Fermenting is as natural to us Faroese, as the autumn storms that pound our shores every year. And it is precisely the fermenta tion process that has caused such a stir among culinary enthusiasts worldwide. The Faroese Food and Veterinary Authority has launched an exciting research project, which seeks to identify the unique Faro ese bacteria that give Faroese food its delicious fermented flavour, ræst. And perhaps these bacteria are even good for our health? You can read all about it in this edition of Atlantic Review.

On the subject of sheep and meat, we joined Tjørnuvík locals out to Stakkurin to gather flocks for the slaughter. The sheep from Stak kurin north of Tjørnuvík are said to be especially flavourful and plump. And every year a large group heads north to Stakkurin for the sheep, which are then auctioned off. The money collected is channelled to worthy causes in the village. So lean back and enjoy the captivating pictures and stories from Tjørnu vík, perhaps it will make you want to join in? And sticking to the same topic, it was precisely Faroese food that was in focus when the Nordic Food Award Embla was handed out for the first time in August. Three of the awards came home to the Far oes, and we can all rejoice in the success of Faroese gastronomy. You can read about the award and meet one of the recipients later in the magazine. But it is not all about food. This was also a summer of sport for the Far oes. The Faroe Islands participated,

as is customary, in the Island Games, which took place in Got land this year. Our athletes and trainers returned from the games with 87 medals, a new record for these outstanding representatives of our little nation. Our U21 hand ball squad became the first Faroese team ever to reach a world champi onship eight finals, which this time took place in Algeria. Although they did not return with a medal it is still quite an achievement, which contributes to placing the Faroe Is lands on the global map. This also confirms that Faroese sport is blos soming and makes its mark beyond our borders. There is an article about the U21 squad and the feat in Algeria on page 16. Each season has its unique charms. Síðan tíðliga í nítiárunum hevur eitt av best umtóktu ferðamál unum í Føroyum verið Klæm intsgjógv í Hesti. Innan fyri Klæmintsgjógv er eitt rættiliga stórt helli við eini urð. Sum 10 ára gamal var hann eina útferð í Stóru Dímun við Poul Egilsnes, sum var hov meistari á Smyrli tá. Stórir klettar lógu í urðini í Stóru Dímun, so teir báðir noyddust at hjálpast at at sleppa upp um klettarnar og niðaná. Sólin bakaði hendan dagi, og tað uddi av fugli. Henda náttúruuppliv ingin var so góð og so sterk, at hon setti seg í minnið hjá Birgiri Enni fyri lívið. Áhugin fyri ferðavinnuni stavar mill um annað frá túrinum í Dímun. Sum kavari hevur Birgir Enni arbeitt í flestu bygdunum í Føroyum. Hann hevur eisini arbeitt sum kavari í Noregi og í Grønlandi. Í 2015 vann Norðlýsið við Birgiri Enni “Vestnorden Tra vel Award” fyri sítt arbeiði í føroysku ferðavinnuni. Tað var fyrstu ferð, hesin heiðurin var latin, og Birgir Enni varð valdur sum fyrsti vinnarin. Næsta ætlan hansara er nýggja gonguleiðin úr Hestbygd í Klæ mintsgjógv. Birgir Enni vónar, at tann ætlanin verður veru leiki í 2020.

Ætlanin er at skipa fyri tiltøkum heilt har inni í Klæmintsgjógv. Har eru einir 30-40 favnar upp til hválvið.

WAlKINg To KlæmINTSgjógv The wooden sail ship Norðlýsið has been taking people out to Klæmintsgjógv with captain Birgir Enni at the helm since 1989. On the captain’s initia tive, this great ocean cave has become a regular concert ven ue, even though it is accessible only by boat. “The sound in the great cave is unique. Music mixed with the murmur of waves, birdsong and the sighing wind is so unfathomably beau tiful that it is difficult to put into words. You have to experi ence it,” says Birgir Enni. Alas, it is the weather that de cides if you get to experience it or not. Visitors have to enter the cave in small boats, which is only possible with the right wind direction and speed cou pled with favourable tide and currents. Birgir Enni would therefore like to offer excur sions by foot from Hestur vil

Faroese architect Ósbjørn Jacobsen is one of the creative forces behind the Harpan con cert hall in Reykjavik. That is where the captain met him and shared his plans. Though the architect was very wary of marring the landscape, he was immediately fascinated by the idea.

This idea also has the potential to make a tangible difference to the community on Hestur island by bringing more visi tors and more life to the vil lage. It could spark other initia tives such as excursions or food ventures. Food, particularly fish and seafood, is another speciality of captain Birgir Enni. As a diver, he has often prepared his own catch and has introduced the Faroese to a host of seafood, like urchins. His fish soup is world famous and in 2015 Norðlýsið and its captain received the Vestnor den Travel Award for his con tribution to Faroese tourism. But he is not resting on his lau rels, and hopes that his new route to Klæmintsgjógv will be open in 2020.

In the old days the Faroese did not want to spoil nature either, particularly not our bird cliffs, but, when needed, they did tol erate the use of eyebolts. In or der to reach Klæmintsgjógv on foot, paths along the bird cliffs will have to be created. The ar chitect is planning to use the bolts that have been used for centuries, so that, should the project prove unsuccessful, any remnants of the built paths

THE FEAT IN AlgErIA The crowd is jubilant, some even shed a tear as they em brace the players. The Faroe Islands just beat Finland, which means that the U21 team has qualified for the handball world championship in Algeria. It is a virtually unimaginable feat for a country of 50,000. But the sixteen players were not quite so surprised, captain Helgi Hoydal says, “We never turn up to a match just to be there. We always want to win. What has come over us players is special, because we have let go of the fear.” The seeds of this achievement were sown many years ago. The U21 players have played against each other since they were little boys. A group of parents spotted exceptional talent in their generation and decided to pay for elite training with the best coaches in the Faroe Islands. The early rivalry had to be overcome though to consolidate the troop, but now the captain says that he thinks of his teammates as brothers.

The whole country was gripped by handball fever during the championship in July, in spite of handball being a traditional winter sport. Crowds gathered to watch the matches on big screens, first back to back vic tories against Chile and South Korea, then a loss against Nor way and then the greatest chal lenge of all Germany. It was 35 degrees in Algiers that day. The players prepared in silence, but before they went out the captain reminded his squad, “They may be stars, but we have game too. Remember that we are playing for the Far oes, our flag, and all those who helped us here. This is a privi lege. (...) If we give it our all I have no doubt that those who see this match around the world will know what the Far oe Islands are and what they stand for.” And they did show the world; by half time they were in the lead and kept pace with the Germans for 50 min utes. Though they ultimately lost, they earned the respect of the German stars and went on to loose only 2623 to the French world champions.

The young squad left Algeria with great belief in itself. Helgi remarks, “I am still young so I cannot say concretely when this will benefit me in future. But I know that it will. I have learnt to believe in my strengths as a person. (...) noth ing will prevent me from using my talents to do my very best. If we do we often succeed, I have learnt that much.”

Føroyingar vóru tilnevndir í fýra av teimum sjey flokkunum: Matsamskiftarin, Matferðamál, Rávøruframleiðarin og Mat handverkarin. Tilnevndu før oyingarnir vóru Gutti Winther, Heimablídni, Dímunargarður og Leif Sørensen.

Sjóneykuna á tað norðurlendska Embla virðislønin varð latin á samkomu á ráðhúsinum í Keyp mannahavn í august í sambandi við ráðstevnuna “Better food for more people” hjá danska Umhvørvis og matmálaráð num. Dentur varð lagdur á, at tey, ið vóru tilnevnd, “eru við til at seta lit á norðurlendska køkin og sum heild gera meira burtur úr matgerð. Tey borð reiða norðurlendska køkin á einum silvurfati og geva okkum øllum hug til meira.” Súsanna Sørensen frá Visit Faroe Islands og Janus Vang stjóri á iNOVA sótu í dóms nevndini umboðandi Føroyar, eins og hini londini sjálvandi høvdu sínar dómsnevndarlimir.

EmblA THroWS HEr ArmS ArouNd THE FAroES The Embla Nordic Food Awards, named after the first woman in Norse mythology, were awarded for the first time in August. The awards, spon sored by the agricultural socie ties in the Nordic countries, were given in Copenhagen in conjunction with the confer ence, “Better Food for More People.” The nominees had to have made significant culinary and aesthetic contributions to Nordic cuisine. The Faroe Is lands were represented in four of the seven award categories. Súsanna Sørensen of Visit Far oe Islands and Janus Vang, di rector of iNOVA, were the Far oese members in the award committee. On the day before the award ceremony, the com mittee members presented the nominations from their re spective countries. On basis of set criteria, such as sustainabil ity, originality and Nordic character, the members rated each nominee on a scale from 1 to 8. Sørensen notes that the presentations of the Faroese nominees went very well. Peo ple were especially interested in Heimablídni (“Home Hospi tality”), a Faroese initiative, where visitors can book a meal in a Faroese home. “I felt good about it,” she says but adds, “you never know which way it will go since the other nomi nees were excellent as well.” The awards were presented 34

during a festive ceremony at which all the nominees were present. And at the end of the evening, the Faroe Islands stood as the clear victor, win ning three of the seven catego ries. “I’d never expected we would receive three wards. I just thought, we are quite cool, we have something fantastic on offer,” says Súsanna Sørensen. The three winners were the farm Dímunargarður (Food Pro ducer 2017), the chef Leif Sør ensen (Culinary Artisan 2017), and the food initiative Heima blídni (Food Destination 2017). Anna and Óli Rubeksen from the village of Velbastaður rep resented Heimablídni. They are farmers and initiated Hei mablídni five years ago. True to Faroese culinary tradition and following the Nordic Food Manifesto, most of their ingre dients come from their own farm, and the rest, as far as pos sible, is sourced from else where in the Faroes. If you book a meal with the Rubeks ens, you will be served five courses paired with Faroese beer and rhubarb juice. The dishes vary but fresh lamb is always on the menu. Hospitality and food stories are at the core of Heimablídni. “We enjoy this and find it ex citing ... and our foreign guests appreciate the opportunity to

visit a normal Faroese home and see how we live,” says Anna. The Rubeksens were over joyed when they received their award. “We had hoped to win but knew the competition was tough. So, it was simply amaz ing. And that the Faroes re ceived three awards made it the experience of a lifetime.” The Embla awards are given every other year and will be awarded again in 2019. The awards are supported by the Nordic Council of Ministers in order to strengthen a common Nordic culinary identity and culture as well as to promote Nordic food internationally.

Eina ferð um árið í september mánaði fleirfaldast talið á teim um 60 íbúgvunum í Tjørnuvík. Tá fara menn og kvinnur út í Stakkin, tann 133 metra høga stakkin norðanvert bygdina, eftir seyði. Dagurin er nógvu seinastu árini vorðin ein hátíð ardagur í bygdini, har fólk vitja frá nær og fjar Ella: úr øllum heraðshornum fyri at sleppa við. Áhugin fyri túrinum hevur verið støðugt vaksandi seinastu

árini. Fyri eini 20 árum síðan vóru tað vanliga 3040 mans – og ja, mans, tí konufólk vóru sjáldan við – ið fóru út í Stakkin eftir seyði. Nú er ikki óvanligt at upp ímóti 150 fólk, bæði kvinnur og menn, eru við á túrinum. Tá ið seyðurin er komin heim í bygdina, verður skipað fyri upp boðssølu. Fjallfólk savnast við bygdarhúsið, áðrenn farið verður til gongu. Dagurin byrjar kl. 7.30, og gongst eftir vild, eru fjallfólkini aftur beint eftir middag. Luttakaratalið er ofta oman fyri 100 fólk. People meet by the village hall before commencing their journey. The day starts at 7:30 a.m., and if all goes according to plan, everyone will be back in the village just after noon, around 12:30-1:00 p.m. Often more than one hundred people join the trip.

Once a year, in September, the small village of Tjørnuvík with its 60 yearround inhabitants, swells up to several times its own size. It is time to fetch the sheep grazing on the flat roof of Stakkurin, a 130metretall sea stack north of the village. More recently, the day has grown into quite the celebra tion, many visitors flocking to the village to join in the festiv ities. The interest to accompany the villagers on their annual trip to Stakkurin has grown steadily over the past few years. Twen ty years ago, there were nor mally about 3040 men—yes, only men—who went to Stakk

In the old days, Stakkurin was reached by sea; it was only reachable in ideal weather conditions since the currents around Stakkurin are strong and the sea can be rough. Af hensyn til den ikkeheltså Færøernekyndige dvæler vi først kort ved Færøernes natur. For det er nemlig naturen, der leverer råvarerne, og det er vinden, luftfugtigheden og temperaturen i samspil, der bagefter mørner kødet som i en naturlig fermenteringscentral. Når fårene i oktober drives ned fra bjergsiderne til slagtning, ender de i tørrehusene (på fær øsk: hjallur), og så begynder en – lad os sige – karakteristisk lugtende bakteriefest, hvor det ferske fårekød langsomt fer menteres. – Fårekroppene hænger fra loftsbjælkerne i tørrhuset og lader sig modne og tørre af de kolde og salte færøske vinde. Kødet er dækket af et tyndt hvidt lag skimmel fra mikroor ganismer (bakterier og svam pe), som giver smag til det tør rede kød, og som samtidig er hele nøglen til at forstå denne særlige færøske specialitet, forklarer Debes H. Christian sen fra den færøske fødevare styrelses laboratorium i Tórs havn. Han og kollegerne Petra E. Petersen og Jógvan Páll Fjall bak samt inspirator/facilitator Jóhan Morgensen kører et mi krobiologisk/genetisk projekt, som har arbejdsnavnet ”Den Færøske Skærpekødsbakterie”, og som i første omgang har til formål at identificere og karak terisere de bakterier, som har betydning for en naturlig fer mentering af fårekødet – hvil ke bakteriestammer er det helt præcist, der er i det færøske fermenterede kød, og kan nog le af dem karakteriseres som

Det første stadie er visnað, hvor kødet så småt begynder at fermentere. Andet stadie er ræststadiet, og her er kødets umamismag på sit højeste. Ræstkødet betragtes da også som en stor delikatesse, det koges til suppe (súpan) sammen med forskellige grønt sager og spises sammen med

kogte kartofler – blandt andet som en del af traditionel, fær øsk julemad. Ræststadiet ind træffer som regel efter et par måneder i tørrehuset (fra okto ber til december) men kødet skal altså på dette tidspunkt i processen stadig tilberedes, før det kan spises. Efter fem til ni måneder – for voksne får op til et år indtræf fer turtstadiet, hvor kødet er blevet næsten helt tørt med en

konsistens, som minder om vellagret spansk skinke må ske en smule blødere. Nu er det endelig blevet til det skærpe kød eller skjerpikjøt, som fæ ringerne værdsætter så højt. Modsat ræstkødet spises skær pekødet, som det er, skåret i tynde skiver, gerne på et styk ke rugbrød med smør og salt. Det passer nogenlunde med, at man kan begynde at spise skærpekød fra omkring april,

Mikrobiologi kræver omhyggeligt kontrollerede omgivelser

men mange lader det hænge længere. Derved bliver det hår dere og hårdere i takt med, at fugtindholdet yderligere redu ceres.

Hvilke bakterier skal der eksempelvis til for at give den karakteristiske lugt og smag? Er der måske også sundheds mæssigt gavnlige bakterier på spil? – Tidligere har man mest holdt øje med risikoen ved den ukon trollable bakterieproces. Siden 1988 har vi haft ni tilfælde af botulisme og to dødsfald, hvil ket er signifikant, som man si ger i vores verden, og meget højt for så lille en nation. Men 54

denne gang kigger vi mere bredt på det hele, siger projekt leder Petra E. Petersen. Hun har sat sin forskerkrog i tørre husenes fårekroppe forskellige steder på øerne, tager prøver af kødet undervejs og holder øje med alle bakterier. Prøverne bliver taget umiddelbart efter slagtning og igen efter ca. 1, 3 og 5 måneder. Isolering og identi ficering af bakterierne foregår både med klassisk mikrobiologi (dvs. med selektive metoder med bakterier, som lader sig dyrke) og med Next Generati on Sekventering, DNAsekven tering, som kan identificere alle mikroorganismer i kødet, også dem, som ikke lader sig dyrke via de traditionelle me toder. Foreløbig er der fundet omkring 90 forskellige bakteri er i kødet, langt flere end med de klassiske mikrobiologiske metoder, så perspektiverne er meget spændende.

– Fermentering er lige nu på al les læber, fordi det er godt for tarmsundheden. Der har været enormt fokus på de sunde pro biotiske bakterier i fermente rede grøntsager, fordi de styr ker immunforsvaret i mave og tarm. Det bliver interessant at se, om der findes lignende sun de bakterier i fermenteret kød. Selvfølgelig kunne det være spændende, hvis der viser sig ligefrem at være tale om en særlig færøsk bakterie, siger Petra E. Petersen og fortsætter: Det er en kompleks proces. Noget tyder sågar på, at proces sen skydes i gang af ’stambak terier’, der allerede findes i miljøet i hjallen, når det friske dyr bliver hængt op. Lidt som en surdej. Så processen foregår som et sammensurium af både vind og vejr, dyret selv, hud bakterier fra dem, der håndte rer fårekroppene, tørrehusets indeklima og…

Blandt de mange bakterier er der også nogle, der hører til de kendte gavnlige arter, bl.a. mælkesyrebakterier, som lo ver godt for sundheden. De har nogle af de gode egenskaber, vi kender fra probiotiske bakteri er i fermenterede grøntsager, samt yoghurt og andre syrnede mælkeprodukter. Glukosen i musklerne på dy ret begynder at omdannes til mælkesyre, i det øjeblik dyret bliver slagtet. Det får pHvær dien til at falde, og fermente ringen begynder. Udover de sunde mælkesyrebakterier be tyder fermenteringen, at føde varen på sin vis allerede er lidt fordøjet, så næringsstofferne er lettere at optage for organis men. Det med sundheden er meget spændende, men det er et nyt perspektiv for os. Det har ikke været den, vi traditionelt har

haft i tankerne, når vi har fer menteret. over færøsk ræst kød og fisk. ”Ræst” kommer af ”ræsa”, det færøske ord for at fermentere. Mens fermenteringsbølgen ramte de fineste restauranter i København, New York og Tokyo med kraut og andre sun de, gærede og syltede grøntsa ger og frugter, trak man på smi lebåndet i det færøske køkken. På Færøerne har man nemlig altid fermenteret kød og fisk. ”Vi er aldrig holdt op”, som Kåri Kristiansen siger. Hans fuldskæg og lange, bølge de hår gør ham autentisk og hip. Han passer i sammenhæn gen. Præcis som designerne Guðrun og Guðrun, der har gjort færøsk hønsestrik til en cool luksusvare, serverer han gammeldags færøsk mad med sit personlige twist.

Terroir* er normalt et udtryk, der forbindes med vinproduk tion, men det er superaktuelt i forhold til skærpekød. Ikke kun vil kødet smage forskelligt alt efter, hvor på øerne dyret har levet sit liv. Det har også betyd ning, hvor tørreskuret befinder sig – en kilometer i den ene el ler den anden retning, højt oppe eller længere nede, det kan være nok til, at den træne de gane kan kende forskel. Og hvor den enkelte fårekrop hænger i tørreskuret – om det hænger forrest eller bagest i forhold til vindens retning. Så kom til Færøerne, min ven. Om det gælder natur eller mad, så er her rigeligt at sætte tæn derne i. * Fransk udtryk for en bestemt lokalitets (terroirs) særlige geografiske, geologiske og klimatiske forhold, som vil præge fx en druesort med “lokale” karakteristika.

SuMMARy

THE FAroESE bug The Faroe Islands are conta gious. The mesmerizing pano rama lures visitors back again and again, but perhaps there is also another bug at play. The Faroese Food and Veterinary Agency is currently using tra ditional sampling and cultures along with DNA sequencing to research the bacteria involved in the fermentation of Faroese sheep meat. They want to identify the strains and find out if they have any health pro moting properties, like the pro biotic bacteria in sauerkraut or kimchi. The fermentation process is rooted in Faroese nature, it is the interplay between briny wind, humidity and tempera ture that matures and cures the meat as it hangs in a hjallur, a drying house that lets wind in through gaps between its wood en planks. The meat is gradual ly covered in a thin white layer 58

of mould from microorganisms that flavour the dry meat. There are three stages of, well, decomposition. The first is vis nað where the meat is starting to ferment. The second is ræst, and this is when the meat’s um ami flavour peaks. It is a great delicacy boiled in soup or roasted with potatoes. After up to a year the meat is considered turt, it is completely dry with a texture reminiscent of well cured Iberian ham, for exam ple, the meat is then called skjerpikjøt, and is very popular in slices on rye bread. The Faroese forefathers did not choose to ferment for health reasons, they needed to pre serve food and did not have much salt available to them. However, Petra E Petersen, one of the researchers at the Food Agency, recalls hearing as a child that eating ræst fish was

good for children with an upset stomach. Perhaps we will soon have a scientific explanation for that claim. Regardless of the science be hind it, ræst is a staple of Faro ese cuisine. There is now even a Restaurant Ræst where head chef Kári Kristiansen prepares a menu built around ræst meat and fish. Fermentation was re cently all the rage in fine din ing from Tokyo to New York, but as the chef says in the Faroe Islands ”we never stopped” fermenting and connoisseurs can taste where meat is from on the archipelago, where it was dried and even where it was located in the drying shed. So come to the Faroe Islands, whether you are looking for nature or culinary experience, they offer plenty to sink your teeth into.

Klaksvík

Føroya næststørsti býur og landsins fiskivinnu høvuðsstaður. Fiskurin, sum speglast í býar merkinum, og húkurin í rundkoyringini tala fyri seg. Men lat teg ikki lumpa; fiskivinnan er bert ein partur av øllum tí, sum Klaksvík hevur at bjóða. Í Christianskirkjuni, sum er bygd við íblástri úr Kirkjubømúrinum og føroyskari neystabygging, kanst tú njóta altartalvuna “Stóra kvøldmáltíðin” eftir Joakim Skovgaard, og í kjallaranum sært tú eitt stórsligið listarverk í eyðmjúkum kørmum. “Jesus úr Nasaret” eftir Edward Fuglø og Sjúrð Sólstein varð latið Christianskirkjuni í gávu, tá ið kirkjan fylti 50 ár í 2013. Norðoya Fornminnissavn heldur til í Einahandils húsunum frá 1838, og her finnur tú arbeiðs amboð, søgur og forvitnisligar lutir frá farnum tíðum. Einahandilin varð avtikin í 1856, men húsini standa so at siga óbroytt. Veggirnir osa av søgu – so nógv, at tað sigst spøkja í gamla handlinum. Er mentanartostin ikki svalaður enn, er upplagt at vitja Føroya Bjór. Veðrurin er ímyndin av fyritøkuni, sum í 129 ár hevur bryggjað føroyskt

Klaksvík hevur bæði trygga havn og nógva mentan. Sambært klaksvíkingum sjálvum og helst eisini 102 ára gamla staðbundna blaðnum Norðlýsinum – er Klaksvík eisini vakrasta og besta stað í verðini. Gongutúrurin eftir kær leiksgøtuni niðan á Háls og longur niðan á Klakk er einfaldur, og útsýnið úr erva er brøttu brekk una vert. Kanska kemur tú enntá í prát við ein rennara, hundaeigara ella bónda, sum kann geva tær nýggjan íblástur til støð at leita til á vegnum. The second largest city in the Faroe Islands and its fisheries capital. The fish emblazoned on the town emblem and the giant hook adorning the roundabout speak for themselves. But rest as sured that fisheries are only one element of all the charms Klaksvík has to offer. Christian’s Church was designed with the Kirkju bøur wall and Faroese boathouse architecture in mind. Here you can take in the altarpiece The Last Supper by Joakim Skovgaard, and in the

basement you will find another grandiose work of art in humble settings. Jesus of Nazareth by Ed ward Fuglø and Sjúrður Sólstein was a gift marking the 50th anni versary of Christian’s Church in 2013.

Kalsoy

The Norðoya Fornminnissavn mu seum is housed in the old Royal Monopoly Store that dates back to 1838, and here you will find tools, stories and curiosa from a time gone by. The Danish Royal Monop oly ended in 1856, but the premis es remain practically unchanged. These walls are steeped in history, so much so that the old store is said to be haunted.

The ram is the hallmark of the brewery that for 129 years has been crafting Faroese beer and soft drinks. At its new store you will gain insight into the histo ry and current activities of the family brewery, which now also produces whiskey. Klaksvík is a safe haven rich in cul ture. According to the local klaks víkingar, and probably also the 102yearold local paper Norðlýsið, Klaksvík is also the best and most beautiful spot in the world. The walk along lovers’ path up to Hálsur and further up to Klakkur is easy, and the view from above is worth the steep hillside trot. Along the way you might even strike up a conversation with a runner, dog owner or farmer, who can offer fresh inspiration for further places to visit during your stay.

Er ein løta at bíða eftir ferjuni Sam á Syðradali er ein tráða hent at hava, tí Syðradalur er eitt satt paradís hjá teimum, ið vilja sleppa á seiðaberg. Fólk á Syðradali bera orð fyri at vera serliga sterk, tí tey hava etið livur og nógvan seið, sum fæst fram við landi og suður í Galvin, sum er av bestu seiðaplássum í landinum. Fert tú á seiðaberg, minst so til bjargingarvest og góðar skógvar. Tað rekur hart fram við landi.

Kalsoy is a spellbinding and wild place. For centuries the Far oese have known the legend of the selkie, who so mesmer ized the boy from Mikladalur that he stole the hide she shed on the night of the Feast of Epiphany, when the seals come ashore to dance in their human form. Today her statute towers in majestic surroundings at Stórakneys in Mikladalur, where you can experience her allure yourself. Out on 100 you can take in the view of Kunoy, the selkie and the village; this is also the perfect spot to stop and listen to the legend of the selkie. It is said that the place earned its name after 100 men were pushed over its edge, but today it breathes nothing but scenic tranquillity. Above the road is the rock Glaðingarsteinur. In the old days people from Mikladalur would light bonfires here in order to communi cated to Kunoy that they had sighted a pod of whales. North of Mikladalur you will find Trøllanes, and north of Trøllanes you will find Kallurin. On the hike north to Kallurin an enchanted world opens up before your eyes, and on a clear day you will hardly find a better view than this any where in the world. While you wait for the ferry Sam in Syðradalur, a fishing rod will come in handy. Syðradalur is a true paradise for those who want to fish from the shore. The locals are said to be especially strong, because they eat so much liver of coalfish caught along the shore and south towards Galvin, one of the best places to catch coalfish in the whole country. If you do decide to go fishing, remember your life jacket and wear sturdy shoes. The currents along the shore are very strong.

Kunoy

Kunoyarnes er ikoniskt fyri flestu mynd irnar av Klaksvík, hóast býurin og nesið ikki eru á somu oyggj. 350metra langa byrgingin millum Strond og Haraldsund knýtir Kunoynna og Borðoynna saman, og Kunoyggin er høvuðsorsøk til, at vit kunnu kalla Norðoyggjar fyri hávaksnar. Seks av Føroya tíggju hægstu fjøllum eru nevniliga á Kunoynni. Høgu tindarnir gera oynna vakra, og á veg niðan í viðarlundina í Kun oy fert tú kanska at kenna teg evarska lítlan, umgirdur sum tú ert av høgum klettum. Viðoy

Tveir tunlar, ein byrging og ein tunnil afturat í beinan norðan úr Klaksvík, so ert tú á Viðareiði, sum er Føroya norð asta bygd. Villingardalsfjall er eitt hædd arpunkt á Viðareiði, bæði so og so. Við sínum 841 metrum er Villingardalsfjall hægsta fjall í Norðoyggjum og trið hægsta í Føroyum, og útsýnið úr erva er eisini ein makaleys uppliving. Vakrar løtur eru eisini at finna Uppi á Váli, har tú um summarið kanst njóta víða gitna sólsetrið og útsýnið yvir Kunoy og Borðoy, ella Uppi við garð, har útsýnið er yvir allar seks norðoyggjar. Hygg vestureftir, og tú sært Múlan á Borð oynni og Kunoy og Kalsoy. Snara tær eystureftir, og tú sært Fugloy og Svínoy. The Kunoy headland is an iconic feature of most images of Klaksvík, even though the village and the headland are not on the same island. The 350metre long dam between Strendir and Haraldsund links Kunoy and Boroyð, and Kunoy is one of the main reasons why we can call the Northern Islands tall. Six of the ten tallest mountains in the Faroes are on Kunoy. The towering summits make this a scenic island and on your way up to the park in Kunoy you may well feel tiny surrounded by the imposing mountains. Then, once you step through the park gate, you enter an entirely different universe. Here you can soak up the peaceful atmosphere and perhaps gather enough energy to climb the massive Eggjarsteinur rock. Another unique and poignant experience in Kunoy is to explore the deserted village Skarð, which was abandoned almost 100 years ago. In 2013 a memorial sculpted by Hans Pauli Olsen was erected in Skarð.

Head through two tunnels, a dam and then another tunnel due north from Klaksvík, and you will reach Viðareiði, the northernmost village in the Faroe Islands. Villingardalsfjall is a high point in Viðareiði, in several senses. At 841 metres Villingardalsfjall is the tallest mountain in the Northern Islands, and the third highest in the Faroe Islands; the view from the summit is a superb experience. You will also find breathtak ing vistas Uppi á Váli, where you in sum mer can take in the famous sunset and panorama of Kunoy and Borðoy; as well as Uppi við Garð, from where you can see all six of the Northern Islands. Look west and you will see Múli on Borðoy, as well as Kunoy and Kalsoy. Turn to the east and you will see Fugloy and Svínoy.

Minute and remote in the north easternmost corner of the archipelago, still, both Svínoy and Fugloy are worth a visit. There are not many permanent local residents, but they love their islands and have many favourite spots to share. In Hattarvík on Fugloy they recommend the vantage point á Bakka, where you get a sense of standing at the edge of the world. Head to the centre of the bay where the surf has been crashing against the cliffs for centuries. In front of you is the ancient landing place, where the locals would toil to pull ashore incoming boats and their cargo. You get a glimpse of Svínoy, but otherwise the horizon is endless. There is a view of Múlabakki to the left and on the right you see the harbour and Trøllagjógv ravine.

EPIC FAroE ISlANdS I grew up with stories of the Faroese landscapes from my mom and her parents who lived up there back in the 50s. little did I know that I one day would explore this hidden treasure of the Atlantic ocean. before going to the Faroe Islands I expected to see something like Iceland, where I’ve been on several occasions. I was surprised to see how special and unique the Faroes are. The epic and overwhelming vistas and the tall and deadly cliff walls make for a rough, raw and authentic experience, where the feeling of returning to the roots of humanity creeps in on you every time you turn your head to take in the surroundings. Here time stands still, while the wheels of the modern world keep turning. my photography mirrors my passion for fantasy novels, movies and computer games. I’m not striving for realism, but I’m not trying to avoid it either. I consider myself an artist, not a documentarist, which gives me the creative freedom to pursue the images I want and to create the art I love. Post processing is an essential part of the journey, which starts as I board the plane and ends with printing, framing and hanging the pictures. Sunnudagsland (Sunday Country) is set in the village of Vestmanna in the Faroe Islands, where Sissal Kampmann was born and raised. After spending 24 years away, she recently returned to the village to stay a while. Her return home pro vides the context for this collection, the title of which refers to killing time on boring Sundays at the fringe of the world. Yet Sunnudagsland also refers to the special state of loneliness, boredom, and existential crisis that the poetic narrator seems to find herself in. Sunnudagsland is a sober and melancholy work about longing and being an outsider, as conveyed in its descriptions of futility and slow but inevita ble decay. It is a phenomenology of decay: several 86

of the poems centre on the neglect and stagnation in the village, with memory flashes of the life that once was. The descriptions are marked by a pro found sense of aliena tion, even from the fa miliar. The time, the landscape, and the weather are recorded in minute detail by the poet narrator, who notes dryly and selfdeprecatingly that she is a woman who studies the weather forecast several times a day.

In this reality, I fry the hearts of lambs. Here in my new home, in my new skin, I slice them into small pieces. I remove the sinews and clotted blood. I leave the fat intact and watch them curl up in the sizzling oil. I see their final throes, as life ebbs out of them, blend with onion, salt, pepper and a faint ray of sunlight nearly obscured by a cloud over the dam. The cat eats from her bowl. Noisily. She has blue eyes. The man lies napping. Quietly. He has blue eyes. The mountains are peeking into the kitchen. I keep stirring but turn down the heat. No one likes scorched hearts. William Heinesen (1900-1991) is best known as an author, one of the great in Nordic literature. He saw his art as nothing but drawing pictures, but there is more to it. Pastels dominate the early works, which motifs are the romantic ambience of Faroese mountainscapes, phantasies from local folklore and satirical social commentary. During his last decades, his paper cuttings blossomed, where fabulation, decoration and a love for colour are united. His magnum opus is the decoration of a municipal school in his hometown, Tórshavn.

Ingálvur av Reyni (1920-2005) varð tann fyrsti abstrakti málarin í føroyskari list. Ígjøgnum sítt langa lív eydnaðist honum at endurnýggja seg sum fáur við franskari list sum leiðarstjørnu. Ein litføgur naturalisma varð á leið 1960 skift út við heldur daprar kubistiskar málningar. Frá 1980-árunum kom ein abstrakt ekspressionisma í einum svørtum og dramatiskum úttrykki, sum snýr seg um náttúru og menniskja, kropp og litevni. Heimafturkomin eftir útbúgving í Danmark livdi og virkaði Ingálvur av Reyni alt lívið í Havn. Ingálvur av Reyni (1920-2005) was the first Faroese abstract painter. During his long life and with French art as his leading star, he was able to renew himself as few others can. A colourful naturalism was replaced with a dark, brooding cubism around 1960. An abstract expressionism, dominantly black and dramatic, dealing with nature and people, body and colour, followed in the 1980s. After returning home on finishing his education in Denmark, Ingálvur av Reyni lived his whole life in Tórshavn.

Elinborg Lützen (1919-1995) var tann fyrsti og leingi tann einasti grafikarin í føroyskari list. Henni dámdi best at arbeiða við linoliumsskurði, og úr tí fekk hon gandað eitt ríkidømi við ymiskari skurðtøkni og avbrigdum av svørtum. Frá ekspressionistiskum ævintýramyndum flutti listakvinnan seg yvir í klassiskt úttrykk við myndevnum úr bygdum og gerandisdegnum. Seinni fór hon yvir til surrealistiskar gyklmyndir úr einum duldarfullum undirheimi, ofta niðansjóvar: Føroyar undir vatnskorpuni. Listakvinnan livdi og arbeiddi meginpartin av lívi sínum í Klaksvík. Elinborg Lützen (1919-1995) was the first and for a long time the only Faroese printmaker. Her favoured technique was the linocut, from which she elicited great riches with a varied cutting technique and black tones. From expressionistic fairy tale pictures, she moved over into a classic expression of motifs of villages and common life. These were followed by surrealistic phantasies of a mythic underworld, often under-sea: Submarine Faroes! The artist lived and worked for most of her life in Klaksvík.

Ruth Smith (1913-1958) er koloristurin í fyrsta føroyska málaraættarliðinum. Fyrst og fremst var hon impressionistur, sum eymliga lýsti, hvussu litir koma til lívs í ljósi. Ein sterkur og livandi málingarháttur ber samstundis boð um eitt sinni við spenningi í. Á tann hátt vórðu náttúra og sinnalag bregdað saman í eina hægri eind í hennara list. Eftir lokna útbúgving í Danmark búsettist Ruth Smith saman við húskinum í Suðuroy. Sum listafólk livdi hon í einingi, og hon andaðist brádliga undir umstøðum, eingin kennir til fulnar.

Ruth Smith (1913-1958) is the colourist among the first generation of Faroese painters. An Expressionism with a fine sense of portraying the play of colours in light was her point of departure. An intense and expressive painting style is at the same time a testimony to a tense disposition. In this way, nature and mind meet in her art in a higher unity. On finishing her education in Denmark, Ruth Smith settled with her family in her home island of Suðuroy, where she lived as an isolated artist and died unexpectedly under unsolved circumstances.

Sámal Joensen-Mikines (1906-1979) er tann fyrsti veruligi, føroyski listamálarin. Hjá honum fær listin sína egnu rødd við havi og bygd, jarðarferð og grindadrápi, ið verða lýst í máttmiklari ekspressionistiskari naturalismu stundum við ávirkan úr romantikki og symbolismu. Inn í ávirkanina frá Edwardi Munch leggur hann eina stranga og náttúruvakra tyngd í eitt egið – og føroyskt úttrykk. Mikines varð útbúgvin í Danmark, har hann búði meginpartin av lívinum, og har fekk hann eisini tilnevnið eftir oynni, har hann vaks upp. Sámal Joensen-Mikines (1906-1979) is the first major painter in Faroese fine art. In him Faroese art gains its own voice; ocean and villages, funerals and whale hunts are depicted in a forceful expressionistic naturalism that encompasses both romantic and symbolic touches. He combines an influence from Edward Munch with a tight objectivity and weighty quality in a personal – and Faroese – expression. Mikines was educated in Denmark, where he also lived for most of his life and where he received his nickname, a reference to his home island, Mykines.

LOCATION AND SIZE Situated in the heart of the Gulf Stream in the North Atlantic at 62°00’N, the Faroe Islands lie northwest of Scotland and halfway between Iceland and Norway. The archipelago is composed of 18 islands covering 1399 km2 (545.3 sq.miles) and is 113 km (70 miles) long and 75 km (47 miles) wide, roughly in the shape of an arrowhead. There are 1100 km (687 miles) of coastline and at no time is one more than 5 km (3 miles) away from the ocean. The highest mountain is 882 m (2883 ft) above sea level and the average height above sea level for the country is 300 m (982 ft).

HEALTH INSURANCE Citizens of Nordic countries and Great Britain are covered under their respective public health plans while in the Faroes. Residents of other countries will need to acquire their own traveller’s health insurance. BANKING HOURS Banks in major towns and some villages are open from 9:30 to 16:00 weekdays. All banks are closed on Saturdays and Sundays. Secure Automatic Teller Machines (ATMs) are available from 6:00 until 02:00 every day. BUSINESS HOURS Most shops are open from 10.00-17.30. On Thursday and Friday many are open until 18.00. Shops close on Saturday at 14.00. SMS shopping centre in Tórshavn is open until 18.00. Most shops are closed on Sunday. Kiosks, petrol stations and most bakeries do not close until 23.00, also on a Sunday.

CLIMATE The weather is maritime and quite changeable, from moments of brilliant sunshine to misty hill fog, to showers. The Gulf Stream encircling the islands tempers the climate. The harbours never freeze and the temperature in winter time is very moderate considering the high latitude. Snowfall occurs, but is shortlived. The average temperature ranges from 3,5°C in winter to 12°C in the summer. In sheltered areas, the temperature can be much higher, but the air is always fresh and clean no matter what the season. POPULATION The population is 48.704 (1st January 2015). More than 20.000 people live in the metropolitan area which comprises Tórshavn, Kirkjubøur, Velbastaður, Nólsoy, Hestur, Koltur, Hoyvík, Argir, Kaldbak, Kaldbaksbotnur, Norðradalur, Syðradalur, Hvítanes, Sund, Kollafjørður, Signabøur and Oyrareingir, while about 4,600 people live in Klaksvík, the second largest town in the Faroe Islands.

POSTAL SERVICES The main post office in Tórshavn is open Monday to Friday 09.00- 17.00. Village post offices have shorter opening hours. Please note that all post offices are closed on Saturdays and Sundays.

FORM OF GOVERNMENT Since 1948, the Faroe Islands have been a self governing nation of the Kingdom of Denmark. It has its own parliament and its own flag. It is not, however, a member of the European Union and all trade is governed by special treaties.

TRANSPORT A well developed transport network makes it easy to travel around the islands. Timetables for the helicopter, buses and ferries can be found in all travel and tourist offices, as well as on board all ferries and in the hotels.

LANGUAGES SPOKEN Faroese is the national language and is rooted in Old Norse. Nordic languages are readily understood by most Faroese, and English is also widely spoken, especially among the younger people.

CAR HIRE It is possible to hire a car at the airport in Vágar, in Tórshavn and several other places around the islands. For more information, contact the tourist offices.

RELIGION Religion plays an important part in Faroese culture and over 80% of the population belong to the established church, the Evangelical-Lutheran. 10% of the population belong to the Christian Brethren (Plymouth Brethren).

MOUNTAIN HIKING Due to the changeable weather, it is advisable to take a map and warm clothes. Never go alone. CURRENCY As a self-governing region of the Kingdom of Denmark, the Faroese government prints its own currency, the króna, although Danish coins are used. The exchange value is equivalent to the Danish krone. TIME DIFFERENCE The local time is GMT, which is one hour behind CET (Denmark - Norway - Sweden).

INDUSTRY The fishing industry is the most important source of income for the Faroes. Fish products account for over 97% of the export volume. Tourism is the second largest industry, followed by woollen and other manufactured products.

Søgan um Atlantic Airways Atlantic Airways fleyg sín fyrsta túr millum Føroya og Danmark 28. mars í 1988. Tað var tó ikki nøkur løtt uppgáva at loysa Atlantic Airways úr lagdi. Raksturin gav hall fyrstu árini, og tá búskaparkreppan í Føroyum av álvara fór at gera um seg í 1992, var eginognin hjá felagnum horvin. Tey ringastu kreppuárini eydnaðist ikki at fáa Atlantic Airways at geva avlop, men gongdin vendi. Í 1995 hevði felagið á fyrsta sinni avlop á rakstrinum. Hetta árið varð virksemið spakuliga víðkað til eisini at fevna um flúgving til Íslands. Felagið átók sær at standa fyri hesi flúgving í samstarvi við Air Iceland. Árini eftir gekk skjótt hjá Atlantic Airways. Í 1998 gjørdi Atlantic Airways av at leiga eitt flogfar afturat og við tveimum flogførum bar til at víðka flúgvingina uppaftur meira. Fyrst varð túratalið millum Føroya og Danmark økt. Í 1998 fór felagið at flúgva til Skotlands og í 1999 eisini til Noregs. Víðkaða flúgvingin fekk stóra undirtøku millum manna og farið varð til samráðingar um keyp av nýggjum flogfari í oktober 1999. Sáttmáli varð undirskrivaður við British Aerospace um nýtt flogfar. Síðani hevur Atlantic Airways víðkað nógv um talið á flogførum og fráferðum. Í dag eru eru trý flogfør og tvær tyrlur í flotanum. Í januar 2008 undirskrivaði felagið sáttmála við Airbus um at keypa nýtt flogfar av slagnum A319. Flogfarið varð sett í flúgving í 2012, og stutt eftir varð farið at flúgva beinleiðis til Barcelona. Sama árið vann felagið Airline of the Year-heiðursløn á aðalfundinum hjá “European Regions Airline Association” í Dublin í Írlandi. Føroya landsstýri einskildi í 2007 ein triðing av Atlantic Airways, og felagið varð tá skrásett á virðisbrævamarknaðinum, men í 2014 samtykti Løgtingið eftir uppskoti frá landsstýrinum at keypa einskilda triðingin aftur frá privatu partaeigarunum, og landsstýrið eigur nú aftur alt felagið.

Atlantic Airways’ first flight was from the Faroes to Denmark on 28 March 1988. It was no easy task, though, to get the airline off the ground. Operations ran at a deficit during the first years, and in 1992, as a devastating economic crisis in the Faroes peaked, the company’s equity was gone. During the worst years of the economic crisis, it was impossible for Atlantic Airways to turn a profit. But then the winds changed. In 1995 the company had its first year in the black. That year, the airline had slowly started to expand its operations with regular flights to Iceland, sharing the route with Air Iceland. During the following years, the company developed swiftly. In 1998 Atlantic Airways opted to lease a second aircraft. With two planes in the fleet, routes could be expanded significantly. First the frequency of flights between the Faroes and Denmark was increased. Then, the airline started flying to Scotland in 1998 and to Norway in 1999. The expanded routes were well received. In 1999, therefore, the company commenced talks with British Aerospace and signed a contract for the acquisition of a new aircraft. Since then Atlantic Airways has purchased additional aircrafts and continued to increase the number of flights. Today, there are three planes and two helicopters in the fleet. In 2008 a contract was signed with Airbus on the purchase of an aircraft of the type A319. The plane was added to the fleet in 2012 and soon thereafter began to fly directly to Barcelona. That same year the company won the Airline of the Year prize at the annual meeting of the European Regions Airline Association held in Dublin, Ireland. The Faroese government privatised a third of Atlantic Airways in 2007 and the company was listed on a stock exchange. In 2014, however, the parliament passed a government bill to repurchase the third of the company that had been privatised. Today, the Faroese government is the sole owner of the airline.
