The
Best of the
Best
Atlantic City’s restaurant renaissance brings with it food from all over the globe By Mike Pritchard
A
tlantic City’s seaside location, nestled among rich bays and between major seafood markets in New York and Philadelphia, has always made the resort a seafood lover’s paradise. Local diners can recite endless litanies of the perfect recipes for Atlantic black bass, soft-shell blue claws, weakfish and little necks. Combined with the simple fare of the area’s boardwalks and an occasional steak shipped in form New York, the city’s dining landscape was steeped in tradition and local fare. But that was then. A look at the city’s fine-dining options can now take you around the country without ever venturing away from the comfort of your bread plate. Dungeness crab from the Pacific Northwest, halibut and king crab from the Bering Sea, Kobe beef from Japan, clams and muscles from the Gulf of Mexico and everywhere else bivalves are harvested. As the city’s restaurant choices have multiplied, so has the procession of trucks bringing delicacies from around the world into the city. “I think one of the reasons you’ve seen this is because of the amount of top chefs who have come into the city,” says Brian Brennan, spokesperson for the Borgata, which offers several gourmet restaurants at its property. “They’ve come into the city offering a lot of signature dishes that they’ve brought with them. They want specific ingredients to complement those dishes.” At Wolfgang Puck’s American Grille at the Borgata, for example, sautéed Florida grouper nestles against sweet Jersey-corn soup on the menu, a mixture of New Jersey’s best with specially brought-in ingredients. Michael Schulson’s new Izakaya offers Kobe beef specialties alongside yellow-fin tuna and Alaskan king crab. At the Borgata’s Sea Blue, din-
ers can experience seafood ranging from Gulf prawns and Virginia clams to Dungeness crab cakes. For a special treat, the restaurant offers Iranian, Russian and Siberian caviar. Also expanding the area’s choices are the number of upscale chain and steakhouses that have come into the resort. From Ruth’s Chris Steak House’s Midwestern beef to Phillips Seafood’s Chesapeake crab cakes and rainbow trout Almandine, Atlantic City diners can taste regional specialties from around the country. Some of the new cuisine, however, embraces regional specialties while combining them with international styles. Moon at Dynasty, at the Trump Taj Mahal, for example, offers two special sushi rolls with a local flare. The Margate roll features smoked salmon and cream cheese while the Jersey Shore roll features Old Bay seasoned shrimp. The final ingredient in this smorgasbord is the infusion of legendary restaurants into the scene, such as the new Patsy’s at the Atlantic City Hilton or the Italian cuisine of Il Mulino New York at the Taj Mahal. The Quarter at the Tropicana offers New York’s Palm restaurant and the legendary Carmine’s. These restaurants and others, bring Manhattan’s tradition of top-notch dishes to the Atlantic City scene. The city also boasts four restaurants from the Stephen Starr company of Philadelphia, including The Continental and Buddakan at The Pier Shops at Caesars and Chelsea Prime and Teplitzky’s at the newly opened Chelsea Hotel. Each brings with them the best of the Philadelphia restaurant scene. While southern New Jersey will always be home to fine Atlantic seafood and sweet New Jersey produce, a dining trip through Atlantic City can now take anybody home. Wherever home may be. n
