T
he Tohoku region bore the brunt of the huge earthquake and tsunami that struck eastern Japan on March 11, 2011. Although there was massive damage from these twin disasters, the region has been steadily moving ahead with reconstruction over the past months. The Tohoku Shinkansen highspeed rail line has resumed regular service, and the region and its people are eager to welcome tourists once again. In June of 2011 the city of Hiraizumi in Iwate Prefecture was registered as a UNESCO World Heritage Site. With the arrival of spring and the cherry blossom season, why not plan a trip to northern Tohoku, whose three prefectures (Iwate, Aomori, Akita) we introduce below.
Iwate Prefecture Iwate Prefecture is just 2.5 hours from Tokyo by the Tohoku Shinkansen. At Ichinoseki Station, switch to the JR Tohoku Line and arrive in Hiraizumi in about ten minutes. The city of Hiraizumi was built by the Oshu Fujiwara Clan in the late 11th century and flourished for about a century. The zenith of Hiraizumi’s prosperity came during the rule of the third-generation head of the Fujiwara Clan, Hidehira, and during this time Hiraizumi was considered to be a
rival of Kyoto in terms of cultural sophistication and wealth. Traces of its legacy as a seat of the Pure Land sect of Buddhism can be seen and felt even today. Chuson-ji Temple is said to have been founded in 850 by the Buddhist priest Jikaku-Daishi, but it was greatly enlarged by the first head of the Oshu Fujiwara, Kiyohira, in the early part of the 12th century. The approach to the temple is lined by majestic cypress trees more than 300 years old. Konjiki-do Hall (Golden Hall), established in 1124, is the only remaining original structure among the many halls built during this period. The whole surface of the hall is covered in gold leaf, and within the hall are enshrined a large number of intricately carved and gilded Buddhist statues and golden altars. The extensive temple precincts are home to some 3,000 national treasures and important cultural properties. Motsu-ji Temple in its glory days could boast of splendor even greater than that of Chuson-ji. The temple building was completely destroyed by fire, but its restored Buddhist Pure Land stroll garden is considered one of the finest examples of its type. The remains of Kanjizaio-in Temple, of Muryoko-in Temple, and the Mt. Kinkei are among the other interesting sightseeing spots in the area. For getting around, rent-a-cycle is a good option.
The surrounding countryside offers some fine scenery. Of particular interest are the two gorges of Geibikei and Genbikei. Geibikei (to the east) is a dramatic river gorge of the Satetsu River extending for 2 km with the cliffs of the gorge soaring 30 m to 100 m in height. Rides are available on flat-bottomed boats, and the scene is like a traditional ink painting. Genbikei (to the west) is another popular river area with cliffs naturally carved by erosion by the swift current of the Iwai River. There is a walking path along the 2 km gorge and the views of the cliffs and strangely shaped rocks are dynamic. Kitakami City Tenshochi Park is a famous cherry-blossom viewing place. About 700 cherry trees line the banks of the Kitakami River along a 2 km stretch. During the peak blossom period, from mid-April to early May, an annual Cherry Blossom Festival (Sakura Matsuri) is held, and people can enjoy the scenery by riding on a river excursion boat or hiring a rickshaw. At the Michinoku Folklore Museum in the park, visitors can see interesting originals (transferred to the site) or replicas of traditional private houses, merchant houses, and samurai mansions. Hanamaki is the birthplace of the celebrat-

(“Ihatov” is a fictional place name that appears in many of Miyazawa’s stories; it is a play on “Iwate.”) Hanamaki is also known as an onsen hot spring resort. Hanamaki Onsenkyo (hot springs village) has several onsen inns each with their own distinctive atmosphere. An overnight stay at one of them would be a good idea if you visit Hanamaki. Morioka City is the capital of Iwate Prefecture. In former times it flourished as a castle town and today it is a quiet, calm, and green city, pleasant to explore on foot. Around the eastern side of the Nakatsu River there are some historical buildings of interest, including Kamasada famous for Nambu Tekki cast ironware, Moriku Shoten, a shop dealing in bamboo baskets and strainers and nicknamed "Gozakyu" by locals, and Himekuri showcasing craftworks of artists who live in Iwate. Nambu Tekki ironware may be a good souvenir. This area, Konya-cho, flourished based on its dyeing industry in the past. In those days many warehouses lined the street, but only one remains now. Issaryo is a gallery and café using a renovated warehouse. Kogensha in Zaimoku-cho

The incline of the plateau is moderate, so it is a good place for trekking even for beginners or people of a certain age. The view of Hachiman-numa Pond and the surrounding wetlands from the Hachimannuma Observatory is splendid. In winter, excellent skiing is available. Hachimantai is also famous for its many and excellent onsen. Appi Plateau, which stretches from the Hachimantai Plateau, boasts one of the largest ski resorts in Japan, as well as a stock ranch. The Rikuchu-kaigan Coast is known for the rugged picturesque beauty of its saw-toothed coastline. If you take the excursion boat from Jodo-ga-hama, you can enjoy striking views of clean-cut cliffs and strangely shaped rocks. From the top of Kitayama-zaki Point, where the cliffs soar to a height of 200 m, you can get a majestic sweeping view of the Pacific Ocean. At Ryusendo, one of the three big stalactite caves of Japan, you can experience the mysterious world of a large underground lake.

Aomori Prefecture In spring, the beautiful color contrast between the green pine trees and the pink cherry tree blossoms along Kanchogai-dori Avenue in Towada City is like a painting. The Towada Art Center – where a colorful horse statue at the entrance greets visitors – offers exhibits of both art and architecture. The works of Yayoi Kusama in the Art Square are noteworthy. At Hakkoda, on April 1 as roads are opened after the winter closure, “snow walls” can be seen along Route 103 between Suka-yu Onsen and Yachi, a remarkable sight to see. In this area, though April may theoretically be spring, there is still plenty of snow on the ground and you can enjoy skiing or a snow hike. “sennin-buro,” or “thousand person bath” – a good place to thoroughly relax and warm your body after a day’s activity, as is also Tsuta Onsen near Oirase Keiryu valley. At Aomori City, just next to Aomori Station you will find “Nebuta House Warase,” where nebuta, huge colorfully painted paper lanterns carried on large floats in the annual summer Nebuta Festival, are on display. A-FACTORY in the bay area consists of apple-based workshops alongside a market and restaurants selling Aomori-produced food, which you can sample. You can also observe and learn about the brewing of cidre (an apple alcohol drink). The permanent exhibition at the Aomori Museum of Art has a rich collection of artworks produced by artists from Aomori and displays a huge "Aomori-ken" dog statue. The Munakata Shiko Memorial Museum of Art is devoted to the life and works of the famous modern woodblock artist Munakata, a native son of Aomori. If you want to find out about Aomori's ancient history and culture, be sure to see the Sannai-Maruyama Site, the impressive remains of The Towada Art Center
a Jomon-era village from 4,000-5,000 years ago. It is one of the largest Jomon sites in Japan. Hirosaki Park is one of the most famous cherry blossom sites in Japan. The Hirosaki Cherry Blossom Festival takes place in the park – the former Hirosaki Castle grounds – every year from mid April to early May. There are some 5,000 cherry trees in the park. Hirosaki was a frontrunner in adopting aspects of Western culture in the late 19th century and many Western-style structures can still be seen here and there in the city. You will also see a lot of apple pie shops, as the city and area are well known apple producers. In the distance stands the beautiful and imposing Mt. Iwaki, also known as the “Mt. Fuji of Tsugaru.” (Tsugaru is the old name for Aomori.) Cherry blossoms around the mountain are beautiful and also worth seeing. At the Tsugaruhan Neputamura you can see displays of elegant fan-shaped neputa lanterns. For nighttime entertainment, dropping in a Japanese-style izakaya pub and catching a live Tsugaru-shamisen performance would be an interesting experience. The nearby Aoni Onsen in Kuroishi City is known as a quiet hot springs inn in the mountains that still uses old-style lamps.

The Oga Peninsula jutting out sharply into the Sea of Japan offers dynamic scenery of oddlyshaped rocks and sheer cliffs, and also a splendid evening view of the sun setting and sinking into the sea. It is also famous for traditional “Namahage” ritual on the night of December 31. Two namahage (gods) wearing a scary, demonlike mask go around to houses, and stamping and stomping around, loudly threaten to drag away children who are lazy or spoiled. Not a few of the smaller children break into tears of fear. At the Namahage Museum, the various types of namahage masks and costumes are on display. The Kanpusan Observatory affords sweeping views of the Sea of Japan. At Ogata Village, which is one of the largest land reclamation places in Japan, there is an 11 km long Sakura/ Nanohana Road (road of cherry trees and rape blossoms). From late April to early May the color contrast makes for wonderful scenery. The Kanto Matsuri Festival, one of the major festivals of Tokoku, takes place in Akita City every August. At night, as many as 250 performers use long bamboo poles to hoist aloft and balance – on their foreheads, hips,

Kakunodate was founded as a castle town in 1620. It is famous for retaining even today samurai residences and traditional street blocks from those days long gone by. Like Hirosaki, it is one of the premier cherry blossom-viewing places in Tohoku. In spring, the color contrast of the traditional black residential walls and the pink blossoms of the dropping cherry trees makes a striking scene. In the samurai house district there are some 400 cherry trees of the dropping variety and some of them are aged 300 years or more. Also, along the Hinokinai River, 200 cherry trees of the someiyoshino type form a cherry blossom tunnel on the banks of the river.

Tohoku comes alive in summer with many exciting festivals. In August Morioka holds the Morioka Sansa-odori Festival, Aomori the Aomori Nebuta Festival, Hirosaki the Hirosaki Neputa Festival, and Akita the Akita Kanto Festival. This year in May Morioka will host the Rokkonsai (six spirits festival), a new festival that brings abbreviated versions of six major Tohoku festivals together in one venue.
Lake Tazawa is Japan’s deepest lake with a depth of 423.4 m. It is famous for its deep cobalt blue color. You can enjoy the lake either by taking an excursion boat or by cycling around it on the cycling trail.
Famed local foods and food products of Iwate include maesawa-gyu beef, tankaku-gyu (shorthorn) beef, hakkin-ton pork; sea foods abalone, sea urchin, and oysters; and delicious apples and other fruits. Morioka is famous for its noodles: reimen chilled noodles, jaja-men, and wanko soba are best known. Aomori’s representative foods include Hachinohe-senbei soup, Towada-bara-yaki (sautéed beef and vegetables), Aomori ginger-miso oden, Kuroishi tsuyu (soup)-yakisoba, as well as many so-called “B-class local gourmet” dishes. Shizuoka Prefecture (Western Region) Hamamatsu Castle
Shizuoka Prefecture vol.4
Lake Hamana and Kanzanji Onsen Resort
A
trip to western Shizuoka Prefecture offers the opportunity to enjoy a beautiful lake, lovely seasonal flowers, delicious dishes, and attractive historical sites.
Hamamatsu City Hamamatsu City (population 800,000) is central to western Shizuoka Prefecture. The symbolic Hamamatsu Castle, built in 1504, has the nickname “the castle of success” because Tokugawa Ieyasu (1543-1616) lived in the castle for 17 years and later became the founder and the first shogun of the famous Tokugawa shogunate. The castle is surrounded by many trees and greenery and famous for its cherry blossoms in spring. The view from the castle tower is a panorama of the entire city. With the head offices of well-known manufacturers such as Yamaha and Kawai pianos, Hamamatsu City is also known as a producer of musical instruments. The Hamamatsu Museum of Musical Instruments, located near Hamamatsu Station, has exhibits of musical instruments from all over the world. Some instruments are even available for visitors to try
out – a good chance to play some unique and unfamiliar instrument. Lake Hamana, in the western part of Hamamatsu City, is the 10th biggest lake in Japan. This slightly salty lake is good for raising eels and oysters and the farming of seaweed. Visitors can enjoy fresh seafood dishes at eateries around the lake. Feel the pleasant breeze of the lake by cycling around the lake on a bike from one of the seven cycle rental terminals. You can start and finish your cycling tour at any of the terminals. recommended by local people such as a tsukudani (food boiled in soy sauce) factory and a mandarin orange grove. Have the fun of picking your own in a group. The Shizuoka Rofu Corporation, located about 5 km south from Kanzanji Onsen, offers a hands-on workshop where you can dye washi (Japanese paper) towels (500 yen/towel). The towels made of fragile paper are surprisingly strong. The secret is the weaving technique, and you can experience it firsthand at the workshop. Your hand-dyed towels are unique souvenirs and light and easy to take home to friends. The washi towels are soft on your skin and, due to the unique weaving, have excellent foaming ability, and make perfect washcloths. There are many historical places in the city. Ryugashi-do in the Inasa-cho area in the north of Lake Hamana is a limestone cave 400 meters long. The cave was formed over 250 million years ago and has a mystical atmosphere. A 30-minute cave expedition is an extraordinary experience which includes a huge waterfall and bats! Ryotan-ji Temple, located south east of Ryugashi-do cave, was established in 733. On the grounds of the temple is a Japanese garden designed by Kobori Enshu (1579-1647), a renowned tea master as well as a garden designer, in the early Edo Period (1603-1867). The garden showcases beautiful flowers from every season, such as satsuki azaleas in spring and the red leaves of the dodan azaleas in autumn. Enjoy the great garden with all five senses sitting at a veranda and relaxing with the touch of a pleasant breeze on your cheek while listening to the birds sing.
Fukuroi City Located about 20 km east of Hamamatsu, Fukuroi City is known for the following three historical temples, collectively called Enshu Sanzan. Hattasan Son-ei-ji Temple, established in 725, has long been the place for people to worship the Kannon Goddess with her powers to repel

evil. Try the specialty yakuyoke dango (dumplings for repelling evil) on your visit. Iozan Yusan-ji Temple, established in 701, is worshipped for its ability to be the guardian of the eyes and for curing eye problems. The three-storied pagoda in the temple ground has beautifully-angled roofs and a well-balanced framework. Banshozan Kasuisai Temple, established in 1401, is famous for its flowers – the 60 kinds of over 2,000 peonies in spring, sagiso (white egret flowers) in summer, and the red and yellow leaves in autumn. This temple also offers opportunities to experience Zen, such as meditation, sutra transcribing, and vegetarian cooking, to the general public. One-day courses are offered as well as two-day courses with temple-lodging on weekends. This course starts on Saturday evenings and includes meditation, sutra transcribing, vegetarian cooking, sutra reading, and working together with an ascetic Zen monk. Leave your everyday life behind and free your mind from everything in the intense atmosphere of a Zen training hall. After the course, you may be surprised to find a "new you."

Asakusa is the most famous traditional district in Tokyo because of its warm, nostalgic atmosphere. It is home to many traditional restaurants, sweet shops and various other shops. Senso-ji Temple is the oldest temple in Tokyo, founded in 628. Sanja Matsuri, one of the many well-known festivals held at the Asakusa Shrine, takes place every May and fills the air with excitement. Nakamise is a shopping mall continuing for about 250 meters from Kaminarimon Gate to the main grounds of Senso-ji Temple with nearly 100 souvenir shops and restaurants. New and old kimono, traditional accessories such as obi (kimono sashes), folding fans and other unique Japanese items can be found as well as traditional Japanese snacks including the "Kaminari Okoshi" Asakusa specialty crispy rice snack, various types of rice crackers, rice dumplings, and wafers with bean jam filling.
The big red lantern is a landmark. Asakusa was the cultural and entertainment center of Edo (old name of Tokyo) during the Edo period and so there are many traditional restaurants. Asakusa Imahan is a well-known sukiyaki restaurant established in 1895 serving high quality Kuroge-Wagyu (black Japanese beef). Daikokuya was established in 1887 and is famous for its generous servings of tempura domburi, a bowl of boiled rice topped with flavorful Japanese-style battered and fried prawns. Asakusa Umezono has been serving Japanese sweets for 140 years. Many of the other restaurants are also sure to satisfy. Various events take place in this area throughout the year that include the Cherry Blossom Festival, Sanja Matsuri, Hozuki Ichi (Winter Cherry Fair), Sumida River Fireworks Festival, Samba Carnival, and Hagoita Ichi (Battledore Fair). It's a great place for strolling around or, for an elegant experience, tour the town by rickshaw. Sumida Park along both banks of the Sumida River is famous for cherry blossom viewing. The contrast of cherry blossoms with the TOKYO SKY TREE is picturesque.

Starting from Tobu Hikifune Station or Keisei Hikifune Station, you can stroll around Jizozaka-dori Shopping Street with its old downtown atmosphere. Fairs are held on days with 4, including the 4th, 14th, and 24th, of every month. Mukojima Hyakkaen Garden is a flower garden that was created in the Bunka and Bunsei eras (1804-1830). Writers and artists used to enjoy looking at flowers while writing poems and songs. You can see the tower above trees in the south from the shore of the pond. From the garden, go through narrow alleys to Shirahige Shrine. You can try kibidango (millet dumplings) at Kibikoya and kusa-mochi (green Japanese rice cake) at Jiman-Kusamochi in this area. Hatonomachi-dori Shopping Street has been serving local shoppers for about 80 years, and was not destroyed in the Great Tokyo Air Raids of WWII. This street has a width of only three meters, which is the same as that before the war. You will see wooden buildings and old alleys from the early 20th century. The number of fashionable cafés, galleries, and studio shops which utilize old buildings and houses, such as Café Koguma opened in 2006 in a renovated drug store first built in 1927, has been recently increasing, making this a popular tourist and art spot. After going through Hatonomachi-dori Shopping Street, you may want to go a little further to visit Mukojima and the Sumida River before heading back to the Hikifune Station area. This has been a popular area among writers and artists since the Edo Period. The Sumida River is famous for beautiful cherry blossoms on both banks. Mukojima used to flourish as a hanamachi (a geisha district with Japanese restaurants) from the 17th century to the early 20th century. Sumida Park baseball field is known as a place where Sadaharu Oh, former pro baseball player of the Yomiurri Giants who holds the world record of 868 home runs in his career, used to play when he was a boy. Kototoi-dango is a confectionary famous for its three-colored small dumplings, and Chomei-ji Sakuramochi is a famous shop for sakura-mochi (cherry blossom mochi), which was invented by the store founder, using salted cherry tree leaves from the nearby banks of the river. (Reservations are required and only takeout is available in March and April.) Chomei-ji Temple is known in the famous episode that, when Tokugawa Iemitsu, the third shogun of the Tokugawa shogunate, had a stomachache during hawking, he drank the water from the well at the temple, and recovered. In the grounds of the temple, there are about 60 stone monuments inscribed with haiku poems, including one about snow view-

Sakura-bashi Bridge is the only pedestrianonly bridge on the Sumida River. While walking on the bridge, you can enjoy beautiful cherry blossoms on the banks in spring. Mimeguri Shrine enshrines the deities Ebisu and Daikoku, both of whom are one of the Seven Gods of Fortune. Ushijima Shrine’s cow statue is said to cure illnesses and problems of people if they touch and rub the cow at the same parts as their affected areas of the body. The area also includes various unique shops and stores: Seasonal Fresh Juice Kado, Maneki-ya popular among geisha and women for Japanese accessories, and Saitamaya Koume, famous for Koume-dango dumplings. Now, go back to the Hikifune Station area. Edokibashi Daikokuya is a chopstick-specialty shop with about 200 kinds of chopsticks. Go along Hikifune Takara-dori Street to
the southwest, cross the railroad crossing on the Keisei Oshiage Line, and you will be in Kyojima 1-chome. Go further, and you will be in Kyojima 2-chome and 3-chome. You may notice that this area is somehow different from adjacent areas. This is because while this region is known to have been heavily damaged in the Great Tokyo Air Raids in 1945, this Kyojima 1-chome to 3-chome area was miraculously undamaged. Therefore, this Kyojima area still has the streets of the older times, which were lost in other surrounding areas. Although the 1-chome area is under the process of redevelopment, the 2-chome and 3-chome area still retain old buildings from before the war, and some private shops are located here and there among residential houses. This area is like a maze with winding narrow alleys, so you may often be lost even though having a map. If so, you can stroll around in the maze freely with the tower as a landmark. aike Onsen is in Yonago City in the west part of Tottori Prefecture. This hot spring resort on the beautiful coast with white sands and green pines overlooks the Sea of Japan. A fisherman discovered the spring of hot water under the sea in 1900, the origin of Kaike Onsen. It has a relatively short history compared to other hot spring resorts in Japan but, with its 30 accommodation facilities, is the largest one in the San-in Region, the southwestern area of the main island of Japan. There are 19 hot springs gushing water at temperatures of 63 °C to 83 °C that is good for neuralgia, rheumatism, chronic skin diseases, chronic women’s diseases, and others. Because of the benefits, Kaike Onsen has recently been of interest as a spa resort for health and beauty. And many enjoy the beach in summer. A hot spring resort where people can walk directly from their hotel to the beach is a rare treat in Japan. Also, the first triathlon event in Japan was held there in 1981 and has been a July event every year. Visitors are always impressed with the beauty of the rising and the setting of the sun in this area. Sakaiminato City, adjacent to Yonago City, is famous as the “Yokai (specter) Town.” There are 139 bronze statues of yokai, characters in the comic “Ge Ge Ge No Kitaro” by Japan’s renowned cartoonist Mizuki Shigeru, along The Mizuki Shigeru Road. Basic Japanese Home Cooking
Let’s learn from a veteran Japanese housewife!
Futomaki Sushi Thick Sushi Roll
Ingredients (serves 4) 4 sheets of nori seaweed (usually about 20 cm by 20 cm) Sushi rice 3 cups rice 3 cups water 3 tbsp sake 5 cm by 5 cm piece of konbu (kelp) Vinegar mixture for sushi rice 2 tbsp sugar 1 tsp salt 1/3 cup rice vinegar
Filling for sushi roll Kanpyo and mushroom 4 dried shiitake mushroom 30g kanpyo (dried gourd shavings; nonchlorinated is best) 2 tbsp sake 2 tbsp sugar 2 tbsp soy sauce Carrot 1 carrot 1 cup dashi stock [1] 2 tbsp sugar Salt, as needed
Cooking directions: 1. Sushi rice Cook the rice with the water, kelp and sake [2]. Mix all of the vinegar sauce ingredients listed in (Vinegar mixture for sushi rice). Wash the handai (a large wooden bowl for sushi), or a vat, and dry with a clean cloth. When the rice is cooked, let it sit covered for an additional 5 minutes. Transfer the hot rice into a handai or vat, and sprinkle the vinegar mixture evenly over it.
att. Recipe
Mix in the vinegar mixture with a wet spatula. First, roughly stir by turning clumps of rice upside down; next, use a slashing motion and then spread out the rice to evaporate the excess moisture. To avoid making gruel, blend in the ingredients with few movements and in the same direction.
Mixing in the vinegar mixture is more like sending air to grains of the rice, and not vigorously stirring.
Cover with a sarashi (bleached cotton cloth) and cool to body temperature.
2. Filling Rinse off the kanpyo. Put it in just enough water to cover and soak overnight. Squeeze the moisture out and cut into pieces slightly longer than width of the sheets of nori. Save the water to use for cooking other ingredients. Sprinkle with 1 tbsp salt, rub well, and then rinse off the salt.
Soak the dried mushrooms in water overnight. Remove the stems from the mushrooms. Save the water.
Put the kanpyo and mushrooms in a pan and add 1/2 cup water from soaking the kanpyo and 1/2 cup water from soaking the mushrooms. Cook over medium heat until soft. Add the sake, cook for 5 minutes, add the sugar, cook 1 minute, and add the soy sauce. Cook over medium heat to reduce the liquid and simmer over low heat until the liquid is gone. Remove from the heat and set aside to cool. Lightly squeeze the mushrooms and cut into strips. Peel the carrot and cut into 4-cm long strips. Cook them in the stock with sugar, and salt over medium heat until the liquid is gone. Make atsuyaki tamago (rolled omelet) [3]. Cool and cut into strips, about 8 mm square, the same in length as the width of a sheet of nori.
24 att. JAPAN Spring/2012
Cucumber 1 cucumber Salt, as needed Atsuyaki tamago 3 eggs 2 tbsp dashi stock 2 tbsp sugar 1/4 tsp salt 1 tbsp sake 2 tbsp mirin 1/4 tsp soy sauce Salad oil
Rub the cucumber with salt. Cut into 4 long sticks, about 1 cm square. If the cucumber has many seeds, remove them with a knife. 3. Rolling the sushi in the nori Previously, moisten and wring out a cloth[a] using 1/2 cup water with 1 tbsp vinegar in a bowl[b]. On the makisu (sushi mat), place the sheet of nori face (shiny side) down. Spread 1/4 of the sushi rice over the nori evenly. Leave 2 cm at the end uncovered. Wash your fingers in the water[b] and dry with the cloth[a]. On the rice, place the omelet sticks, kanpyo pieces, mushroom slices, carrot sticks and cucumber sticks.
att. Recipe
Keep in mind not to spread the rice on too thick and do not push hard when spreading.
Carefully begin to roll up the mat, making sure the edges of the nori are brought together, then continue rolling. Gently squeeze while rolling to make a nicely shaped roll. Leave it to set in the roller mat for about 5 minutes, then gently remove the mat. Cut the sushi roll into 2-cm portions. Repeat the same process for the other 3 rolls.
Tips: -For sushi, cook the rice with a little less water to make it a little harder than normal. -Kanpyo is a preserved food, rich in potassium, made from the fruit of the bottle gourd. It is usually sold in about 2-meter long strips. -Handai is a traditional wooden bowl, good for absorbing moisture. -Sarashi is a bleached cotton cloth. A cloth of 100% cotton such as a tenugui, or a 100% hemp cloth can be substituted. -If you don’t have makisu (a sushi mat), a double layer of cling wrap can be used to roll the sushi. -When cutting the sushi roll, wipe the knife with a wet cloth after making each slice to prevent rice from sticking to the blade. -Other ingredients, such as cooked conger eel, are also delicious in a sushi roll.

This sushi roll is delicious and seems very healthy. It is good for my son’s bento (box lunch)!
Instructor: Kazuko Karasawa I learned cooking from my parents, who ran a Japanese restaurant, and my grandmother, who lived to be 100 years old. As a housewife, I've been cooking for 18 years. I like cooking everyday, taking care of my family’s health. Student: Laetitia Ogawa I was born in France and grew up there. I married a Japanese man. Because Japanese food is good for the health and my son and husband both like it very much, I want to master Japanese recipes.

Japanese taxis can be found at the exit to every train station in the country or alternatively hailed on the streets. The red sign visible through the windshield of the car: “空車” (kusha) means it is vacant and available for hire but when the sign reads “賃走” (chinso), it is unavailable. The back door on the left side will open and close automatically so be careful not to stand too close! (All the other doors are operated manually) Rates vary depending on the taxi company but usually start at a fixed rate of 710 yen (in Tokyo) for the first two kilometers. The rate system is shown inside the taxi and receipts can be issued. In urban areas, you can usually pay by credit card for a taxi. If credit cards are accepted, a taxi has a sticker showing this on the window.

Japan is covered in a rail network that reaches to almost every corner of the archipelago. Most are owned and run by the Japan Railway (JR) system and the world famous “Shinkansen” bullet train is of course one of the fastest and most enjoyable forms of land transport anywhere – the distance between Tokyo and Osaka being covered in just 2hrs 30 mins on the fastest line.

Long-distance buses in Japan are run by numerous companies including JR. Buses are generally more economic than traveling by plane or train but do take longer and can be affected by traffic jams at busy times of the day or night. Local buses run all over Japan as well as in the major cities and sometimes English instructions or stop announcements are used but this is not the case everywhere. We would recommend you ask drivers to remind you of where you must disembark prior to setting off.
