YOKOCHO Cross-section of Nightlife

What is Yokocho

Cheap, but delicious! A maze of narrow alleys and fantastic shops appear one after another. That is Yokocho. Yokocho literally means “alleyways off the main street” and includes the small pubs and bars that are found on these narrow streets. There are many yokocho in Japan. In Tokyo, popular ones include Omoide-yokocho (Shinjuku), Hamonika-yokocho (Kichijoji), Nonbei-yokocho (Shibuya), Ebisu-yokocho (Ebisu), Yurakucho Sanchoku Inshokugai (Yurakucho), and many alleways in Shimbashi even though the names do not include “yokocho.” In Osaka in western Japan, Janjan-yokocho (Shin-Sekai) and Hozenji-yokocho (Dotonbori) are the most well known.

Explore Yokocho

The narrow streets are adorned with red lanterns and the neon signs of the yokocho. The retro, nostalgic ambience puts you in a time slip to about 50 years ago. Yakitori shops, kushiyaki (skewered dishes) shops, izakaya (Japanese pubs), bars, yoshoku (Western-style dishes) restaurants, and others line the streets. The

shops are packed with the regulars and company workers on their way home. Take a swig of beer while eating your favorite dishes, such as yakitori, oden (Japanese pot-au-feu), kushiyaki, and stewed meat! In addition to the traditional shops, in recent years, stylish French or Italian restaurants are also found in yokocho as part of the yokocho boom in Japan.

Have Fun at Yokocho

Yokocho are full of shops with cheap but delicious dishes that make everyone want to go “barhopping,” called “hashigo” in Japanese. Yes! This is one of the pleasures of yokocho. Going around to several shops is the way to enjoy yokocho so don’t fill up at the first stop even though the food is delicious. There are a variety of shops in one yokocho, so be sure to try the different tastes. Cheerfully mingle with the locals and shop masters while enjoying the food and the conversation! If you want to experience traditional nightlife in Japan, one of the many yokocho is the place to go. Drop by, have a tasty bite or a drink or two and experience the energetic, chaotic yokocho!

Gotochi Local Ramen

Prefecture) is one of the three major ramens in Japan along with that of Tokyo and Sapporo (Hokkaido). When eating Hakata ramen, don’t eat the whole soup and leave some for the second refill (kaedama). The origin of Tonkotsu Ramen is Kurume (Fukuoka Prefecture). Its soup is extremely rich with a unique and particular smell. Kumamoto Ramen (Kumamoto Prefecture) is ramen with garlic-based seasonings such as “ma-yu” (sesame oil with fried garlic), fried garlic chips, etc. to add an extra flavor. The ideal would be that you’d go and visit each region to get to know the area and enjoy its ramen. But if it is difficult, you can enjoy ramen from all over the country at Shin-Yokohama Raumen Museum (Kanagawa Prefecutre). Enjoy ramen! http://www.raumen.co.jp/

Ramen is a Chinese-style noodle dish created by Japanese. Some even call it a national dish, and you can find someone eating it anytime and anywhere. Based on a noodle dish in China, ramen was created with original Japanese arrangement and spread to all regions of the country. As gained popularity all over the country, local people in each region added their own unique seasonings and flavors. As a result, many kinds of unique local ramen, which is usually called “Gotochi Ramen,” have been invented throughout the country.

Popular Gotochi Ramen Hokkaido Each city of the three major cities in Hokkaido – Sapporo, Asahikawa and Hakodate – is one of the most best-known places for ramen in Japan. Sapporo is the original place of miso ramen. Asahikawa Ramen boasts a rich soy sauce soup from abundant seafood ingredients, and the soup’s surface has, deliciously, an oily film because of the rich soup. On the other hand, Hakodate Ramen is a simple salt flavored ramen.

Tohoku Region Kitakata (Fukushima Prefecture) is a town famous for old storehouses. Kitakata Ramen has thick and flat noodles with rich soy sauce soup made with clear water and local, delicious soy sauce. Some ramen shops open from 7 a.m. early in the morning.

Kanto Region The secret of Sano Ramen (Tochigi Prefecture) is the climate of dry winter and humid summer, which is a typical inland climate, and clear water of Benten Pond, which has been selected as one of the 100 Best Waters in Japan. dles with clear soy sauce soup made with pork bone or chicken stock. “Ie-kei” Ramen of thick hard noodles with rich soy sauce soup based on pork bone broth was originated in Yokohama (Kanagawa Prefecture) in the 1970s and widely spread throughout the country.

Chubu Region Hida Takayama Ramen (Gifu Prefecture) is known for its typical Japanese bonito broth soup with soy sauce directly added into it, as well as for its thin noodles. Toyama Prefecutre has “Toyama Black,” which is ramen with black soup.

Kansai Region Kyoto Ramen is characterized by the thick greasy soup. Wakayama ramen has a rich soy sauce soup.

Shikoku Region Tokushima ramen’s soup is made of broth taken from pork bone and soy sauce. It is served with ribs as a topping, and some people eat it with a raw egg dropped in.

Kyushu Region The basic soup for Kyushu Ramen is called Tonkotsu, white soup with its broth taken from pork bone. Hakata Ramen (Fukuoka

K

aminoyama Onsen in Kaminoyama City, Yamagata Prefecture, has origins dating back to 1458 when, according to legend, a traveling monk saw a crane had recovered and flown away after soaking its wounded leg in a hot spring in a marsh there. In the town there is a stone where that the crane was said to have rested, the birthplace of the hot spring resort. The town flourished as an inn town in the Edo era (1603–1867) and was one of the three famous hot spring resorts in the Tohoku area, the northern region of Honshu mainland. There are a number of hot springs—Yumachi, Tokamachi, Shinyu, Takamatsu, Hayama, and Kawasaki—collectively referred to as Kaminoyama Onsen. With its abundant hot spring water, the town is home to seven public bathhouses and five foot bath facilities. The area around Shinyu and Yumachi prospered as a castle town around Kaminoyama Castle

(built in 1535) and still retains some of the old storehouses and mansions. Takamatsu and Hayama are on a quiet hill away from the center of the town with great views of the Zao mountain ranges. The area is dotted with shrines and temples which add to the traditional atmosphere. Kaminoyama Castle was considered a great castle in the past. Now, only the ruins including moats and stone walls remain and the reconstructed building is used as a library. From the top of the tower is a splendid view of the Zao Mountain Range and Kaminoyama City. Stroll around buke-yashiki district to get the atmosphere of an old castle town. Kaminoyama is famous for the cherries that are representative of Yamagata Prefecture. The best season for cherries is from mid-June to mid-July and cherry picking is available during the season. Takizawa House in the old inn town Narageshuku was where lords, their families, and retainers lodged or stayed for a rest in the past. The emerald green crater lake Okama in Zao is worth visiting.

Basic Japanese Home Cooking

Let’s learn from a veteran Japanese housewife!

Kenchin-jiru Japanese vegetable soup Ingredients (serves 4) 1/2 block (about 150–200 g) momen (firm or “cotton”) tofu 1 sheet abura-age (deep-fried tofu) 50 g daikon (white radish) 50 g carrot 10-cm long burdock root

3 pieces satoimo (taro root) 3 dried shiitake mushrooms that have been soaked in water overnight 1 tablespoon sesame oil 5 cups dashi soup made from a 10-cm piece of dried kombu (kelp) soaked in water overnight

Cooking directions:

1 tablespoon sake 1 teaspoon salt soy sauce 5-cm piece of naganegi (leek) shichimi (chili pepper)

To drain the tofu, you may

place the wrapped tofu on a tray, put a weight on it, Wrap the tofu in a paper towel, place it and place the tray at an angle so the water runs out in a strainer, and drain it weighted down onto a kitchen towel. for 20 minutes using a small plate as a weight.

Pour boiling water over the abura-age in a strainer, while turning it over to remove the oil on the surface. Cut the daikon, carrot, and abura-age into 3-cm rectangles. Peel the satoimo and cut it into bite-sized pieces about 5 mm thick. Wash the burdock with a scrubbing brush, scrape off the skin with the back of a knife, slice it into 1-mm pieces, and soak the pieces in a bowl of water for 10 minutes to remove the bitterness. Remove the stem from the rehydrated dried shiitake and slice them. By hand, break the drained tofu into bite-sized pieces. Set the tofu aside until the surface of the tofu becomes dry and the kitchen towel has soaked up the water from the tofu.

Chop the naganegi into thin coin-shaped pieces. Thinly slice the naganegi. Add the 5 cups of dashi soup and the water used for rehydrating the dried shiitake to the pot. When the soup starts boiling, turn the heat to low and simmer for 20 minutes. Add the sake and salt to the pot, turn off the heat, and add soy sauce to taste. Pour the soup into a soup bowl, add some chopped naganegi on top, and sprinkle it with some shichimi. Remove any soup scum that comes to the surface. It should be done several times during the 20 minutes - Cut all the ingredients into almost the same sized pieces so they will cook evenly. of simmering.

Tips:

- In order to keep the aroma of burdock, leave a bit of the skin on. Change the water once while soaking the burdock. - Do not throw away the water used for rehydrating the dried shiitake. It can be used for simmering the ingredients later. - Break the tofu by hand instead of cutting it by knife. The rough edges soak up the flavor better. - Stir-fry the tofu first. Add each of the other ingredients one after the other while stir-frying so that the temperature of the pot remains consistent.

Make sure to turn off the heat before adding soy sauce so that the soup has the fragrance of the soy sauce as well as the flavor.

Instructor: Kazuko Karasawa I learned cooking from my parents, who ran a Japanese restaurant, and my grandmother, who lived to be 100 years old. As a housewife, I've been cooking for 18 years. I like cooking everyday, taking care of my family’s health.

I think kenchin-jiru is a healthy dish because of the many vegetables in it. I am going to cook it for my husband tonight!

JR Kanto Area Pass (www.jreast.co.jp/e/kantoareapass/) is a discounted pass for unlimited rides in Tokyo and the surrounding Kanto area. Valid for three days, the pass is good for unlimited rides using reserved seats on ordinary cars on Shinkansen (bullet trains), limited express and other trains. Prices are 8,000 yen (Adults), and 4,000 yen (Children).

Japanese taxis can be found at the exit to every train station in the country or alternatively hailed on the streets. The red sign visible through the windshield of the car: “空車” (kusha) means it is vacant and available for hire but when the sign reads “賃走” (chinso), it is unavailable. The back door on the left side will open and close automatically so be careful not to stand too close! (All the other doors are operated manually) Rates vary depending on the taxi company but usually start at a fixed rate of 710 yen (in Tokyo) for the first two kilometers. The rate system is shown inside the taxi and receipts can be issued. In urban areas, you can usually pay by credit card for a taxi. If credit cards are accepted, a taxi has a sticker showing this on the window.

Bus 巴士 Long-distance buses in Japan are run by numerous companies including JR. Buses are generally more economic than traveling by plane or train but do take longer and can be affected by traffic jams at busy times of the day or night. Local buses run all over Japan as well as in the major cities and sometimes English instructions or stop announcements are used but this is not the case everywhere. We would recommend you ask drivers to remind you of where you must disembark prior to setting off.
