Fascinating Food in Aomori, Hakodate, and Iwate 青森、函館、岩手食之魅力

Aomori 青森

Surrounded by the Tsugaru Strait, Japan Sea, and Pacific Ocean on three sides, Aomori Prefecture is one of the biggest producers of seafood in Japan. Famous Oma tuna, Aomori City 青森市 branded tuna caught by pole-and-line fishing, the largest landing of squid in Japan, and Hachinohe-mae oki saba, branded mackerel caught off Hachinohe, are caught around there. The Port of Hachinohe is a major fishing port. Hachinohe-mae oki saba, which is caught at the northernmost mackerel fishing area in Japan, is said to be the fattiest mackerel in Japan. It is said that the content Hachinohe City of crude fat rises when the ocean temperature drops to 18 degrees Celsius, so the mackerel here has a higher crude 八戶市 fat content than other mackerel. Aomori’s scallops farmed Hirosaki City at Mutsu Bay have thick muscles, offering a flavorful taste 弘前市 with mild sweetness. Surf clam is characterized by a unique sweetness like milk. Don’t miss enjoying sushi with fresh seafood in this area.

Aomori is also famous for producing high-quality agricultural and farm products. Enjoy the flavor and texture of deep-fried whole garlic with the skin and butter-sautéed naga-imo (Chinese yam). Aomori shamorock is a hybrid of Gemocock and Barred Plymouth Rock, and you will love the rich flavor and chunky texture. Hirosaki is known as the largest producer of apples in Japan. In the city, about 50 confectionery stores offer various kinds of apple pies. Ramen is another specialty in Aomori, including Tsugaru niboshi (dried-sardine-based soup) ramen and miso-curry-milk ramen with a perfect combination of milk, miso, and curry in the soup. Once you try them, you will want to eat them again and again. Among various traditional dishes in Aomori, Ichigoni is simple but probably the most luxurious dish, with sea urchin and abalone in clear soup. Hotate Kai-yaki Miso is a dish using a scallop shells as a container for cooking scallops with fluffy eggs and miso. Igamenchi is a popular homemade dish of small pan- or deep-fried squid paste with small pieces of vegetables including carrots and onions.

Hasshoku Center is a huge market filled with shops selling fresh seasonal seafood. Among the variety of shops, Shichirin-Mura uniquely offers a place where you can grill seafood you bought at the market on charcoal. Another food culture of Hachinohe is yokocho alleys. They are lined with lots of restaurants and pubs, creating an enjoyable atmosphere for drinkers making the rounds. 日本八食中心是一所提供當季新鮮海產的巨大市場。在市場內的七厘村，可將採買的食材，現場炭烤享用。八戶有多達 8 條橫丁，餐飲店鱗次櫛比，可享受光顧各式居酒屋的樂趣。

Fascinating Food Hakodate Morning Market bustles with lots of people from very early morning. At a stocked fishing hole, you can enjoy not only fishing for squid but also eating fresh sashimi of the squid you catch. Donburi Yokocho Market is lined with many diners and sushi restaurants, where visitors enjoy fresh-sashimi don-buri and sushi. Hakodate is also famous for shio (saltbased soup) ramen. Its clear soup is incredibly rich and delicious. Hakodate citizens love Lucky Pierrot, a hamburger shop serving very unique burgers, including the most popular Chinese Chicken Burger with three pieces of kara-age (deep-fried chicken) and Ika-odori Burger with deep-fried squid (available from May to October). Another unique food item in Hakodate is Yakitori-bento sold at Hasegawa Store convenience stores. It is called yakitori, which refers to grilled chicken, but Hasegawa Store’s Yakitori-bento has grilled pork.

函館早市裡活力十足的吆喝聲此起彼落，一早便是熱鬧喧囂的光景。到市場的水槽體驗釣花枝吧。現場還能為您將釣到的花枝製成生鮮切片。蓋飯橫丁市場內也有多家食堂與壽司店，您可在此大啖生猛海鮮蓋飯與壽司。函館的鹽味拉麵遠近馳名，澄淨透明的湯頭是極度美味之絕品。而說到函館市民喜愛的漢堡專賣店，則不可不提「LUCKY PIERROT」。這裡最受歡迎的餐點為內附三塊炸雞的中式雞肉漢堡。還有夾著花枝炸排的花枝舞漢堡（5 ～ 10 月供應），別處絕對品嚐不到。另外，「Hasegawa Store」的串燒烤雞便當也是函館特色美食之一，雖說是「串燒烤雞」，實際上卻是「豬肉」呢。

Toi’s tuna with its high quality is very popular. Bluefin tuna from Oma in Aomori Prefecture is probably the most famous in Japan. Oma and Toi are only 20 kilometers apart, and tuna from both areas are caught at the same fishing grounds, Tsugaru Straits. Most of the landings at Toi Port are sent to Tokyo, Osaka, Sapporo, and other cities all over Japan. 戶井鮪魚以高度的品質廣受歡迎。黑鮪魚中，雖以青森縣的

Starting in 2004, this biannual event involves the restaurants and cafes in the area becoming “Spanish bars,” and visitors purchase a set of five tickets and enjoy drinking and eating at the restaurants and cafes serving one drink and a dish of various pinchos, Spanish snacks, per each ticket. About 5,000 sets of tickets usually sell out at every event. The Western district has many restaurants and cafes operating in historical buildings, creating a special atmosphere for enjoying food and drink. The event is held one day in April and September, respectively.

The three great noodle dishes in Morioka are Wanko-soba, Morioka Reimen (a cold Korean noodle dish), and Morioka Jajamen (originated from a Chinese noodle dish). Morioka Reimen is, unlike other reimen dishes, characterized by pure white noodles made without soba (buckwheat) flour. The rich clear beef-based soup and kimchi (spicy Korean pickles) creates a perfect harmony. Wanko soba is a competition-like eating of soba noodles served in mouthful portions. You have a small empty bowl, and your server keeps topping up your bowl rhythmically with a portion of noodles while cheerfully calling out encouragement. You are expected to eat each serving in one bite. Jajamen is a unique noodle dish, serving flat noodles topped with special nikumiso (miso-based meat paste),

strips of cucumber, grated ginger, and some vinegar and chili oil, without soup. 碗子蕎麥麵、盛岡冷麵、盛岡炸醬麵，堪稱盛岡三大麵。盛岡冷麵與其他地區的冷麵不同，以未使用蕎麥粉的純白麵條為特徵，和濃郁的牛骨湯及泡菜十分對味。碗子蕎麥麵是一口一碗，以食用碗數一較高下。蕎麥麵會在服務人員的招呼聲中，巧妙輕快地被倒入碗中。試著順應那股節奏，咕嚕一口吃下麵條吧。炸醬麵是燙過的扁烏龍麵，加上特有的肉味噌、小黃瓜、薑末，再以醋與辣油拌勻，是一道風味獨特的麵。

Iwate Tankaku-gyu beef is healthy red meat with less fat, offering a perfect harmony of texture and flavor. Maezawagyu beef is high-quality meat with intense marbling. Hakkinton pork, literally meaning “platinum pork,” is famous for the smooth and tender texture. Iwate Saisaidori is a unique brand of “vegetarian chickens” which are raised only on plant protein-based feed, mainly grains. Iwate has been actively involved in farming oysters since the old days. Visitors can enjoy plump, succulent oysters from early November to early May at some places in the area, such as Sanriku Yamada Kaki-goya restaurant and Ryoshi no Kakigoya restaurant. Iwate’s Sanriku coast is also famous as a producer of abalone, a by-word for expensive food ingredients. Autumn is the season of sanma (saury). Enjoy grilled fatty sanma in a nice autumn breeze. Iwate is also the biggest producer of salmon in Japan. 岩手短角牛為脂肪較少，健康取向的紅肉，口感扎實並保有肉類原有的風味。而高品質的前澤牛屬於油花細膩的霜降牛肉。白金豬，肉質柔軟圓潤。岩手菜彩雞則是以富含穀物的植物性蛋白質所飼養的素食雞。

The third holding of The Tour de France Saitama Critérium will take place on Saturday, October 24, 2015. As its name indicates, the race has the same prestige as The Tour de France, the world’s most prominent cycle road race, which is broadcasted in about 190 countries of the world. You will have a great opportunity to enjoy the spirit, message and fascination of The Tour de France without leaving Japan. The superstar road race cyclists of The Tour de France 2015 will gather to stage exciting races in the city. The 3.1 km circuit course is set up right in Saitama Shintoshin area, which is filled with high-rise buildings. “Critérium” is a bike race held on a short course often in an urban setting where cyclists compete over multiple laps. Female sprinters and para-cyclists will participate in the individual time trials that will take place prior to the main race. Come and experience an extraordinary speed and drive up close! 8

今年是第 3 次以世界最頂尖的公路自行車賽「Tour de France」之名舉辦活動。這場『2015 Tour de France 環埼玉自行車賽』將於 10 月 24 日（週六）舉行。在日本就可如實體驗到，在全球約 190 個國家越洋現場直播的 Tour de France 品牌下，所展現的價值、內涵以及魅力。今年的 Tour de France，將有歷年活躍於本大會的超級選手眾星雲集，展開一場激烈的賽事。賽段選址在埼玉新都心的高樓層大廈群中。選手們將繞行 1 圈約 3.1 ｋｍ的路線。這種以市區街道等短距離的繞行路線為設定，反覆環繞此路線的公路自行車賽，就是『Criterium』。另外，女性或身障自行車選手，也可參加比繞行主賽先舉行的個人計時賽。讓我們一起近距離體驗，非日常的速度感與震撼力吧！

a r a M l a n o i t a n r e t n I a m a t i a S 1st The Tokyo International Women’s Marathon was the world’s first women’s marathon, which was first held in 1979. The competition has produced excellent runners such as Naoko Takahashi, the gold medalist in the Sydney Olympics, and Mizuki Noguchi, the gold medalist in the Athens Olympics. It was replaced by the Yokohama Women’s Marathon in 2009 but the competition still remained a great marathon for elite female runners from all over the world. This prestigious marathon will take place in Saitama City in 2015. One of the beauties of Saitama, a large city with 1.27 million residents, is its vast green zone called “Minuma Tambo” located only 2-3 km from the city center. The runners start at Saitama Super Arena and run through the city while enjoying both the urban and bucolic scenery that make Saitama City an attractive place. The last part of the course is located in Kyu-Nakasendo, one of the historical Edo Five Main Roads: here the race will approach its climax with a roar from the spectators. Let’s greet the athletes with rousing cheers! In Urawa, a town that thrived as a posting station of Nakasendo in the Edo period (1603-1867), there are many famous eel restaurants which pass on a culinary heritage. One suggested route to the Tateyama Kurobe Alpine Route is from the Toyama Prefecture. Go to the Hokuriku Shinkansen Toyama Station and take the Toyama Chiho Railroad bound to the Tateyama Station, which is the gateway to the Tateyama Kurobe Alpine Route.

Near Tateyama Station is the Shomyo Falls, the tallest waterfall in Japan. It is designated as a national natural monument. Witnessing the cloud spray of water dropping at 350 meters is a powerful experience. 立山站的附近有以日本第一高度落差 350 公尺為傲的國家天然紀念物──稱名瀑布。冉冉上升的水氣與向下宣洩的磅礡流水，震撼力十足。

Next, take the cable car from the Tateyama Station to Bijodaira. Then take a bus from Bijodaira to Murodo. If you want to experience autumn foliage in the mountains, stop by Midagahara. It is an alpine plateau located at an altitude of approximately 1,600 to 2,100 meters, stretching 3 km north to south and 9 km from east to west. In early October visitors can enjoy mountain trekking and the surrounding majestic autumn colors of the mountains.

There are various trails, paths, and sites that you can explore in Murodo, such as the Murododaira lava plateau, and Mikurigaike pond, a crater lake that is known as one of the most beautiful ponds in the Northern Japanese Alps. Next, board the trolley bus through the Tateyama tunnels from Murodo to Daikanbo. Then take the ropeway from Daikanbo to Kurobedaira. The views from the ropeway are breathtaking. The autumn foliage of Tateyama are truly spectacular.

Board the trolley bus from Kurobe Dam to Ogizawa, the last stop of Tateyama Kurobe Alpine Route, in the Nagano Prefecture. Ogizawa is surrounded by Ushirotateyama Mountains, and its autumn foliage in the mountains reaches its peak from the middle to the end of October. Travel to the Tateyama Kurobe Apline Route is possible via the opposite route mentioned above, which starts from Ogizawa through the Toyama Prefecture.

For 1,200 years the Shiobara Hot Spring Area has been one of the most well-known hot springs in all of Japan. It has been loved and used by the Imperial Family, and distinguished Japanese writers. There are eleven different hot spring areas in the valley, including hotels, Japanese inns, and rustic open-air baths. Located in a deep silent mountain valley, Itamuro Hot Spring has been known for its therapeutic bathing water for over 900 years. The water is called Shimotsuke’s medicinal bath. (*Shimotsuke is the ancient name of the area.) The hot spring town along the Yukawa River still keeps the atmosphere of an old Japanese hot spring town. Hot spring water containing various components will warm your body from deep inside and is considered to help heal a variety of aliments and help to restore one’s health. You can experience the Tsuna no Yu (Rope bath), a unique way to bathe dating back from ancient times. You hold a rope in a bathtub and sink your standing body into deep water. The spring water quality of the Unazuki Onsen is classified as a simple hot spring and mild alkaline level. The spring water is colorless. Since ancient times the spring has been known for replenishing the skin. The hot spring fountain that is located in front of the Unazukionsen Station is a landmark for the town, representing it as a hot spring district. Unazuki Onsen is great for making one-day trips, visiting the town and local public footbaths and onsens. The Yamabiko Observatory is a great place for taking photographs of the entire town. Unazuki Onsen attracts visitors with each season. Autumn is the time when visitors can enjoy the breathtaking beauty of the leaves changing colors in the mountains. Surrounded by snow-covered mountains, winter in Kurobe is the best season to taste yellowtail caught from Toyama Bay. Spring is the best season to relish in the exquisite beauty of the green buds and wild plants. It is also the season for catching the firefly squid. Feel the cool breeze in summer and enjoy the broad velvet shrimp, for which Toyama Bay is the only place in Japan where you can fish for them. If you visit the secluded Kurobe gorge, take the Kurobe Gorge Railway, commonly known as the Kurobe Gorge Trolley Train. The train operates between the Unazuki and Keyakidaira stations. One of the Trolley stops takes you to the secluded area of the Kuronagi Onsen, which is the source of the hot water in the Unazuki Onsen area. Approximately 7 km long hot water pipes carry the hot water. The views of the valley from the Trolley window are spectacular. Crossing over a steep valley, the view from the Atobiki Bridge offers one of the best exhilarating views from the Trolley. The area surrounding the Kanetsuri Bridge is a popular sightseeing destination site, and which is known for its beautiful Japanese maple trees. You can also see Mannen-Yuki (literary means ten thousand year old snow), a semi permanent snow bank. The last stop is the Keyakidaira Station, which is known as a power spot. You can feel the energy from the surrounding nature.

Vinegared Rice for Sushi (1 cup of rice) 1 cup (180g) freshly cooked rice 1 tablespoon rice vinegar 1 tablespoon sugar (A) 1/2 tea spoon salt For Sushi Roll (1 sushi roll) 150g vinegared rice 1/4 avocad 1/6 (10cm) cucumber 1 ½ crabsticks (imitation crab) 1/2 sheet nori (seaweed) Fresh salmon fillet - cut into 1cm-thick and10cm-long strips White sesame seeds – proper quantity as needed

Cooking Directions Vinegared Rice for Sushi

1 Drizzle (A) over the warm rice while using a hand fan to cool down the rice. 2 Mix the rice and (A) with a rice paddle and fan the rice with a handy fan. Use a cutting motion and be careful not to bruise or crush any of the rice grains. Continue fanning until the rice cools down to body temperature. Sushi Roll

3 Cover a bamboo mat with plastic wrap and evenly spread the vinegared rice crosswise onto the plastic wrap, which corresponds to the size of the half sheet of nori. 4 Place the half sheet of nori onto the vinegared rice. 5 Place the fillings on the edge (towards you) of the nori sheet, lengthwise. Firmly roll the bamboo mat without including the plastic wrap. 6 Cut the roll into the desired sizes. 7 Sprinkle the roll with the white sesame seeds. Japanese Liquid Measures: 1 cup = 200 ml = 6.76 fl oz 1 tablespoon = 15 ml = 0.5 fl oz 1 teaspoon = 5 ml = 0.16 fl oz

I enjoyed the atmosphere of the cooking class! The chief's instruction is very easy to understand and I was happy to learn tips of the rice cooking for the sushi which I didn’t know before. I think such lessons give good explanations of the Japanese culture as well.

Japan is covered in a rail network that reaches to almost every corner of the archipelago. Tokyo Furii Kippu（東京フリーきっぷ）(www.jreast.co.jp/e/ pass/) is available for use on JR lines (inside Tokyo’s 23 wards), subways, and the Toei Bus service for one whole day – ending at midnight – at a charge of 1,590 yen. JR Kanto Area Pass (www.jreast.co.jp/e/kantoareapass/) is a discounted pass for unlimited rides in Tokyo and the surrounding Kanto area. Valid for three days, the pass is good for unlimited rides using reserved seats on ordinary cars on Shinkansen (bullet trains), limited express and other trains. Prices are 8,300 yen (Adults), and 4,200 yen (Children).

Japanese taxis can be found at the exit to every train station in the country or alternatively hailed on the streets. The red sign visible through the windshield of the car: “空車” (kusha) means it is vacant and available for hire but when the sign reads “賃走” (chinso), it is unavailable. The back door on the left side will open and close automatically so be careful not to stand too close! (All the other doors are operated manually) Rates vary depending on the taxi company but usually start at a fixed rate of 730 yen (in Tokyo) for the first two kilometers. The rate system is shown inside the taxi and receipts can be issued. In urban areas, you can usually pay by credit card for a taxi. If credit cards are accepted, a taxi has a sticker showing this on the window.

Shinjuku Robot Restaurant: Take a walk (OK, a seat) on the crazy side Leaving the Robot Restaurant at Shinjuku’s Kabukicho, one thought was buzzing through my head that a visit should be mandatory to all tourists, especially the short term travelers. Besides being crazy fun, the Robot Restaurant offers perceptive visitors many insights in several deep aspects of the way the Japanese see themselves and the world. Those insights, from references to the indigenous Shinto religion and the medieval and early modern periods, to the way technology is perceived and the cornucopia of influences which makes today’s Japan. From the lounge band in the waiting area to the show dungeon through the unbelievably colorful stairwell, you see Japan at one of its most flamboyant place, where the only thing similarly flamboyant would be the matsuri, folk festivals. But one can argue that those festivals are too Japanese-centric to make sense to tourist. Taken into account its international popularity and its hospitality to non-Japanese, it is one of the most “tourist friendly” places in the city. The show itself is hard to describe. A unique 90-minutes experience featuring not only robots but also mythological creatures, pretty girls, laser shows, music, dance and some audience participation. It is jampacked with action and all kinds of audio/visual stimuli that, when it is over, you wonder how the time flew so fast – which is all that matters. As for the rest, the food is standard sushi-bento boxes, drinks are beers and soft drinks at the show area (in the lounge there are other stuff too). The program changes frequently, so you have a reason to come again. Do all these worth for ¥8000/$70? You will do your own judgment but for me, definitely! G.M. (Greece)

坐落於新宿歌舞伎町的機器人餐廳（ロボットレストラン）是最近相當受到歐美遊客歡迎的主題餐廳。特殊的裝潢與炫目的霓虹燈，充分展現了歌舞伎町的特色，個性十足的主題更使之成為來到日本最值得造訪的新地標之一。在餐廳內除了可以悠閒地用餐外，最重要的是可一邊觀賞表演。從熱血的機器人擂台到有如特攝影集般的小型短劇等等，內容相當豐富多彩。其中還有融合了日式風格的視覺系舞蹈「女戰」也非常值得觀賞。當然連貫整場表演最重要的就是這個餐廳的主題 ― 機器人，有些酷炫可愛，有些則巨大到讓人疑惑他們是如何搬進來的，當然也有一些風格獨特，呈現出難以言喻的特色。除了機器人以外，既然位在歌舞伎町，當然就不可有損歌舞伎町的招牌。因此演員或服務人員多是亮眼的帥哥美女，這應當也是此餐廳的特色之一。雖然現場空間稱不上寬敞，卻也展現了日本活用空間的能力。就表演規模而言，幾乎可說是將遊樂園裡的遊行隊伍搬到了餐廳裡，相當具有魄力。此外，由於近年有大量歐美遊客登門造訪，餐廳內不但是英文菜單或能以英語溝通的服務員樣樣俱全，甚至連表演都以英語為主。因此，不懂日文的人也無須擔心。當然，以表演的內容而言，即使聽不懂也不會有任何影響，遊客可輕鬆觀賞。這裡雖然名為餐廳，性質上卻較偏向是劇院。但一般的劇院除了門檻較高以外，若是不懂日文也讓人難以盡興。在這裡除了用餐還能同時觀賞表演，現場氣氛更是令人激昂興奮，想必能為日本旅遊的夜生活添增不少新的色彩。因此，若有機會來到歌舞伎町，請務必來趟機器人之旅，來看看日本的創意、來體驗一下不一樣的餐廳！ S.S.（台灣）
