Dear Aurora Cooks Guests, We are so excited to welcome you back into our Expo and Central teaching kitchens! We have loved cooking with you virtually this past year and want to say a big “thank you” for supporting our virtual cooking program. Aurora Cooks will be hosting youth summer camps in July, so we will be offering limited in-person cooking classes and will be taking a break from virtual classes. Aurora Cooks LIVE will resume in August and we can’t wait to welcome back our virtual cooking warriors! Below are the changes we have made to our in-person classes: • Per the state mandate, fully vaccinated individuals may attend class without a mask; unvaccinated or partially vaccinated individuals must wear a mask. • Smaller class size • No shared equipment or food • Adult 15+ & 21+ classes are priced per pair (2 people) • To-go containers will be available to consume food at home, if desired Our cooking classes are designed to develop age-specific skills, promote community, demystify scratch cooking across cultures, and promote fruit and vegetable consumption. JAMAICAN JERK CHICKEN WITH CHILES AND LIME By: Kirsten Hall

Make a week night dinner a trip to the islands with this quick, flavorful and spicy chicken dish from our Why is the Rum Always Gone Class.

INGREDIENTS: 1 teaspoon whole allspice 4 cloves 1 cinnamon stick 1 cup green onions chopped 1⁄4 cup soy sauce 1 lime, juice and zest 2 serrano pepper or scotch bonnet 2 tablespoon rice vinegar 1 tablespoon molasses 2 tablespoon avocado oil 1 tablespoon thyme 1 tablespoon brown sugar 2 teaspoon kosher salt 2 clove garlic 1 tablespoon fresh ginger 1⁄2 teaspoon nutmeg 8 pieces chicken, drums

DIRECTIONS: 1. Preheat the oven to 450°F. Line a baking dish with foil. 2. In a small dry skillet over medium heat, toast the allspice, clove and cinnamon until fragrant or 2-3 minutes. 3. Transfer the toasted spices to a spice grinder and finely grind. 4. In a blender or food processor, combine the ground spices, scallions, soy sauce, lime juice and zest, chiles, vinegar, molasses, brown sugar, salt, garlic, ginger and nutmeg, and process until smooth. 5. Place the chicken and marinade into a zip top bag. Seal the bag and massage the marinade into the chicken making sure the chicken is covered in marinade. Set aside to marinade for at least 30 minutes or up to overnight. 6. Place the chicken onto the prepared baking dish. Spoon the extra marinade over the top of the chicken. Bake until the chicken reaches 165°F and is cooked through and golden.

Celebrate Independence Day making these cute and tasty patriotic tarts.

INGREDIANTS: 6 ounces cream cheese, softened 2/3 cup powdered sugar 2 tablespoons heavy whipping cream 1/2 teaspoon vanilla extract 1 sheet frozen puff pastry, thawed 1 cup blueberries 1 cup raspberries 1 egg, beaten

DIRECTIONS: 1. Preheat the oven to 425°F. Line a baking sheet with parchment paper. 2. In a medium bowl, combine the cream cheese, powdered sugar, heavy cream, and vanilla. 3. Cut puff pastry into 6 rectangles. 4. Spread each rectangle with generous layer of the cream cheese mixture, leaving a ¼-inch border. 5. Mound the blueberries and raspberries over each pastry, pressing them into the cream cheese to adhere slightly. 6. Fold the edges of the pastry inward to enclose. Crimp the edges with a fork and brush with beaten egg. 7. Transfer to the oven and bake for 15-20 minutes or until the pastry is golden. 8. Serve and enjoy!

The last 15-20 minute will be reserved for enjoying the delicious meal the budding chefs have worked so hard to create.
