FROM THE EDITORS At the time of press, the Mueller Report was finished, but not yet released to the public. Our dear leader is basking in the glory of “no collusion.” We understand this might be upsetting for our readers, the delicate Austin snowflakes that you are. Fret not, a new guide is in your hands, fresh off the press (unless you are reading this in June). This issue won’t right the wrongs in this hell world, but hopefully it makes you smile, maybe laugh (possibly). Perhaps you will learn something (not likely). As you might remember, in our last issue we said goodbye to Chris Troutman and Shawn Phillips, so they could pursue their dream of opening Lubbock’s finest brew pub/electric scooter charging station. Well, with the exit of Chris and Shawn from the ABG campus, we were a bit short handed. We needed a little help from our friends. We don’t have many friends, so we first turned to our wives, Sarah and Sofia, and asked them to write a listicle on spots to swim and drink fresh beer nearby said spots (p.22). This summer is gonna be a scorcher, so keep this close at hand. Rob Hill stepped up next and explored the local flagship brands and beers we’ve grown up with, craftwise (p.28). To save us from looking like two lost dads on Rainey Street, our buddies Caroline, Carlos, and Grady joined us for Beer & Loathing (p.32). Also, don’t skip Over a Pint with John Staples of Fairweather (p.16), Ask a Brewer with a bunch of brewers who love/hate us (p.10) and Brewer’s Brain with Sheila Garcia of Hops & Grain (p.12). In February, the Texas Craft Brewers Guild and the Beer Alliance of Texas announced a promising stakeholder agreement of a proposed new version of a bipartisan bill that supports beer-to-go from manufacturing breweries. The bill would allow taproom visitors to buy up to 576 ounces (aka two cases) of beer per day from a brewery tasting room for off-premise enjoyment, meaning Texas would no longer be the only state to deny patrons and craft brewers the pleasure of a beer-to-go transaction. The Wholesale Beer Distributors of Texas, who represent the state’s large$t distributor$ has refused to endorse the bill and are trying their best to hamper success for
Texas craft brewers. As of press time, the bills had not made their way through the House or Senate committees and the legislation appears stalled out (see Austin Chronicle's “Follow the Money, Find Beerto-Go’s Largest Opponents” for all the shady business). Follow @CraftPAC online and keep your fingers crossed that by next issue we can take out that “Beer to Go” category in the back of the book brewery listings. Upon the successful launch of the third Pinthouse Pizza in Round Rock and anticipation of a fourth project, Director of Brewing Joe Mohrfeld announces a 2020 presidential campaign. He’s running as a third party candidate on the platforms to decrease bitterness in beers, reach across the aisles in the name of collaboration brews and make hockey "America's Pastime." Shannon Wynne, founder of Flying Saucer Draught Emporium, pens an opinion piece, taking sides against the Texas Craft Brewers Guild in the beer-to-go fight. Oh wait, this shit really happened.

NEWS CONTINUED . . . manufacturer of their brewing equipment for their San Antonio expansion filed bankruptcy. The brewery may resume operations one day, but for now they’re as quiet as a West Texas Tuesday. With the closure of NLand Surf Park has also come the end of NLand Brewing. The beers were good, but location and hours prohibited us from getting to take advantage of Todd’s offerings. More recently, North by Northwest Slaughter, the company’s second location, closed their restaurant and brewery. The original Arboretum location will keep on chugging after 19 years, and production brewing for those accessible cans will be contracted out of Circle. Opal Divine’s Marina on North Mopac closed in April. The nearly 20 year brand, who opened their first location on west 6th, have been long-time supporters of Austin and Texas beer. Opal Divine’s Austin Grill in the Best Western at I-35 and Oltorf remains open. WELCOME We told you to look out for Roughhouse Brewing in the last guide, and darn it if they weren't open as fast as we could get down there. Out of San Marcos, the brewery offers crisp, farmhouse ales in a barnhouse and rustic setting, complete with food. A little further out, Bear King Brewing opened this past winter in Marble Falls. Stop in (or drive out) for some classic ales, pub grub and trivia night. Just in the nick of time to make the news, Hedgehog Brewing (originally Hedgehog Bottle Shop & Barrelhouse when first announced in 2015) put their first beer out in the Austin market. Closer in, Central District Brewing, a brewery still in planning, opened across the rail tracks from the Convention Center. Brewing operations are still to come, but you can trolly in now for some less distributed Southern Heights, Brewtorium and Pinthouse beers, among others. Hops & Grain opened their longanticipated second (and larger in charger) location in San Marcos in March. If you live

south, are on the way to SA or just want something different, go grab a pint. In more Austin news, after much rumoring, the original location at the end of 6th Street will remain in place. While lowering their footprint, the brewery has some exciting upgrades in store. It’s here! Pinthouse Pizza Round Rock (fancy? Flagship? Its’ nice, y’all) opened in February with a massive bar, new limited can releases, atrium (why?) and custom foosball and bubble hockey games. Don’t relax too much nerds, a fourth (and previously reported) expansive location (with a slightly different concept) is coming next to a location off 71 just east of 290. MOVING ON UP Last Stand, the beer in the cider/beer/ spirits stop on Fitzhugh, has announced a closer in second location at The Collective on South Congress. They have hopes of opening this upcoming winter. WE'VE GOT AN EYE ON YOU Nomadic Beerworks is still in planning, and probably close to opening in south Austin (just off South Congress north of 71). Family Business still plans to open a second location at the St. Elmo Public Market as a “test lab,” in addition to their outside the city limits offerings. Leanderites, just wait to quench your thirst. Humble Pint and 5th Element Brewing are all still working towards opening soon.

NEWS CONTINUED . . . Further west, Dripping Springs is awaiting the opening of Bell Springs Winery’s brewery, Ghost Note on Ranch Road 12, Backroads Brewing and Beerburg Brewing on Fitzhugh. Keep your fingers crossed! Compadre Brewing is taking over the space left empty by Idle Vine and opening in early May. Want to keep it local? Watch for the previously mentioned Hop Squad (north Austin), Central Machine Beerworks, Batch Beer & Kolaches brew pub (east Austin), and Hold Out (downtown). GO LIGHT OR GO HOME Real Ale Brewing Co., who just celebrated their 23rd anniversary, continues surprising beer drinkers. They just released a light beer <shocked face emoji>. A lot of beer geeks may scoff at this, but Real Ale wanted an answer for this question: “Do y’all have anything lighter than Firemans #4?” Enter Firemans Light, a 4% light lager. This gateway beer for gateway beers is available year round. Speaking of light lagers, ABGB and Live Oak joined forces to create Bushwick Pils, a 3.9% Czech-inspired pilsner. It’s only available on Draught at ABGB. FRESH LOOK FIfteen-year-old Independence Brewing came back to school this winter with a fresh new (and vintage) look. Watch for new cans and top handles to start making their way across town this spring.

PINK BOOTS The Pink Boots Society, an organization by/for women in the beer industry, held their bi-annual conference this January in Austin. With over 100 women from all over the country and even a few international attendees, the conference explored technical beer (sensory, off flavors, etc.) and business/marketing topics. Clearly there is opportunity for women to expand within the beer industry and with their expansion hopefully bring more women into the beer-fold. PINK BOOTS CONFERENCE

But the purposefully marketing the low calorie and low alcohol content IS new, in craft beer at least. See Firemans Light. There it is. One. One beer from a brewery like Real Ale, with its power and influence in Texas craft beer constitutes a trend. Well, we will see.

WHAT’S UP AUSTIN AND SURROUNDING areas?! It’s an honor to share my thoughts with y’all as we have now grown to upwards of 70 operating breweries and brew pubs in this great area! To think Hops & Grain Brewing was the 6th brewery to open/ operate in fall of 2011, and again, now 70+—we’ve come a long way… but as they say, we’ve still got a long way to go! Diversity and inclusion are two words that we hear often these days. And to be honest, these words get me excited! Excited because I know I’m about to learn. I’m not sure if everyone shares that sentiment with me, but hopefully you will after reading my award-winning article; ok, it’s not an award winning article, but hopefully that added some excitement for you to keep reading… I digress. Despite the fact that I’m a woman, who happens to be Hispanic and lesbian, which definitely makes me a diverse individual—I can still learn daily how to be more inclusive to all and create a more diverse workspace/taproom/staff, etc. These two words are often combined, yet are equally different. Two words that are more important today than ever… let’s start by defining them: According to the Merriam Webster Dictionary (is there any other?), diversity by definition is the condition of having or being composed of differing elements. Inclusion is a relation between two classes that exists when all members of the first are also members of the second—essentially meaning, including ALL in ANY event. As craft brewers, this could be welcoming all people to our taproom with the same excitement and warmth. Or hiring a staff that represents a myriad of genders, nationalities, sexual identification, and age,

etc. This can also mean changing how we speak, or connect with others through our social media channels and in person. Recently I had a healthy discussion (in text) over the focus of changing the use of the term ‘cellarman’ to Cellar Operator. Yes, I know this term has been used for decades, and technically we all know that this position can be held by a man or woman. However, if we don’t begin to make these changes, however slight, how are we ever going to get close to offering true inclusion to all? Some may think this is a small change and not really necessary or a step in helping with inclusion. Some may even say it’s annoying to edit terminology that has been used by many previous brewers for years. But my point in sharing this example is to say that it does EXACTLY that—it shows anyone that is reading the job posting that you care about being

inclusive simply by posting the position as Cellar Operator. Yup, it’s that simple. Not everything is that simple though. I always wonder how many women work in craft beer in Austin. Specifically, how many women work in PRODUCTION in craft beer. I also wonder this for people of color, and over the age of 45. These 3 classifications in Austin, based on the 2018 U.S. Census are: 49.4% Female 49.7% consider themselves nonwhite (African American, Asian, American Indian, or Latino *no stat on 45+ Austinites, however the median age is 32.7
As we all know, our current breakdown of craft beer employees does not match the first two percentages listed. Based on the median age though, I’m guessing we are spot on! But we don’t have women or people of color apply, so how are we supposed to hire them? To that statement, I ask you to think about the events you offer in your taprooms and support in the community. Are you holding events that would be welcoming to these groups? Have you researched your local community to find anyone that represents these groups and invited them in to learn about your brewery? There are plenty of women-focused beer groups from the National non-profit organization, the Pink Boots Society, to local social women-focused craft beer groups: Girls Pint Out, Beer Necessities, and the Austin Women’s Beer League to name a few. Hosting these groups shows that you want to connect and welcome women to your taproom. While there doesn’t seem to be craft beer focused groups for people of color, there are most certainly community groups that are focused for people of color. At minimum, there are Chambers of Commerce for every background classification. Dig a bit deeper within your community and you’re sure to find many more organizations to reach out and invite to your taproom. Once you connect with these groups, invite them to meet in your taproom. Offer to provide them a private tour and share

your story. We are lucky to live in such a great city that supports small businesses the way our fellow Austinites do. Appreciate that support and do your part to reach out. As you make these connections and build relationships with those who live in your local community, you’ll learn more and hopefully open doors to others who have wanted to join the craft beer industry. Now, of course, creating an environment that is diverse and inclusive doesn’t just happen overnight. It’s a constant work that should be authentic to who you are as a brand, and as a person. We should all strive to hire staff that also supports our shared values and beliefs, which extends that authentic side of connecting with those in your community. The biggest thing to understand is that there WILL be uncomfortable conversations. I truly believe, especially with this topic, you are not growing or learning if you aren’t having uncomfortable conversations. This doesn’t mean a yelling match full of disagreement and fingerpointing. This means a civil discussion that brings up issues that are not easily discussed. This means connecting with fellow breweries and your counterparts and asking to have a sit down conversation. Be prepared to share and have an open conversation as to how we can all be better about making a more diverse and inclusive craft beer community in Austin and the surrounding areas. Diversity and inclusion should be something we all strive for, not to achieve but to continue to grow and improve over time. Working together to partner and support our community as a whole will help us provide better work environments for our employees and taproom experiences for our customers. This is a process that does not have an end goal, because it should always be improving and moving forward. ABG: What are we drinking right now? John: We’re drinking Marge’s Van. It’s a variation of our Smell the Van, which is packaged, and on draft, and actually our most popular cider. This is a variation where we fortify it with brandy that Revolution Spirits made out of our cider and it's infused with Texas citrus. It's eight and a half percent, and it's a sneaky screamer. More importantly, what are we drinking from? You were drinking it out of a porron. So the vessel is kind of like a Spanish wine bong. It acts as a decanter. It erodes the beverage and then it has a spout where you can hold it out and essentially let it shoot into your mouth. It's not like bonging speed, like a beer bong or something. You can be as discreet as you want. You can choose your party, you can choose your destiny as it were. How long have you guys been open here? We've been open since Black Friday of ‘17, so I guess we're approaching a year and a half. You opened in 2017, when did you first start thinking about doing this? We started thinking about opening up a cidery in 2013. We were thinking about it very aggressively. That's the year that we got incorporated. We knew that we wanted to do this and we started saving right away not really knowing what the financial need would be at that time.

Once you got started, you guys built out the space yourselves? Yes and no. We did a bunch of stuff ourselves, you know, but we couldn't do any electrical or plumbing or anything like that. Michael's (Gostomski White) mostly the handyman. We did the floors, we painted the walls. I mean, installed a draft line. We built a cold room, plumbed around glycol. But it's not as complex as starting a brewery. You don't need a boiler room. You know, we knew a few things. I helped out at St. Elmo with their build outs so I caught glimpses of some Austin code stuff that like helped us sort of avoid some like weird shit. So some people might be like, “Alright Austin Beer Guide, why are you talking to them?”, there’s tons of breweries in his town… I'm asking myself the same thing.

But I think our community just kind of gravitated towards you guys. I mean, one your space is great, your location's great, your branding is great, ciders are great, but I think it’s your attitude that has made it immediately accessible to dopes like us to come hang out. So can you tell us how you navigate that? Because you feel very beerish, but you're not beer. Yeah, totally. Well, you know, we come from like a very beer-ish consumer standpoint. I mean that is, you know, where a lot of our interest was for a very long time and cider was the category with the most opportunity. And we knew that it would be lower capital input. Not saying that we could have started whatever we wanted, but you know, the attitude is that there's a lot of symbiosis between the product. The design and just who Mike on I are as people. We used to be roommates. We both love cooking. We both love hosting, take a lot of pride in throwing parties. You know, are both very generous by nature. And it's just fun and, for a very long time, I've been trying to have fun food and beverage pairings. From the first house that we lived in where we started making cider. Pause. Our designer, the relationship with Paul (Windle) presents a very unique opportunity to really sink our teeth into the viewers’ mind. You're looking at the statistics when you're in retail, like a typical heavy grocery store setting, your skew gets three seconds of eyes. So Paul’s style is just so unique and it's so illustrator forward and he's more of an illustrator than a designer. And so we just wanted to max it out as our method of advertising. Really advertising from the inside out. And it's like, how do we get these cans that we've put so much effort into, into the right places just so people start seeing it. You know, his artwork... there's a lot of texture there and there’s a lot that resonates with me personally from just being in high school and college with Paul and just like being fucking weird. And there was a lot of weirdness that had nothing to do with any sort of drugs or alcohol. We just wanted to make skateboards. I drove this really shitty Saturn SL and we turned it into like, it was white, and we turned it into a NASA spaceship and just structured all this weird stuff. We would just drive around like listening to static radio stations. So there, definitely just wanting to be loud and just wanting to be noticed but be taken seriously in a very not serious manner. That sort of like comes back to it (the packaging). It's sort of just this fun, strange utopia where it is a party. And then that is communicative with just a bunch of like... there's not a better word than sessionable, it's higher ABV than what session is, but it's crisp and dry. So yeah... crushers, slammers, gulpers, whatever you want to call it. It's just stuff that you can take down. And this is just

a hot climate. Our initial tag line for the whole thing was “climate appropriate beverages” and that was just like, you know, when you have to download whatever bullshit “how to write your business plan” software. They make you like answer all these annoying questions and it's like, well, all right, we're trying to make a dry cider because it's hot out and the other cider is sweet, or it’s too dorky. That really is the meat of the matter. There's a lot of really cool cider out there that is presented in a way that isn't really approachable to many people. Either it's going to be large format and really expensive or it's going to be like really dorky and showcase some category or some hybrid or some weird niche thing that everyone's like, “what the eff?” People just want to have fun, they want some good juice that they can dome mindlessly on said patio in Austin. Wait, did you ever go to class in college? You were making cars, you were... Yeah, I enjoyed college. I was a Spanish Translation major at UT Arlington. But then that led me to getting a job in northern Spain and drinking a shit ton of cider. We'd go over there and that's when I really caught a glimpse of like sticky floors, people fucking throwing the glasses on the ground, porrons, opening up barrels and puncheons and aerating it into the glass like that or just taking it straight to the face. I don't know that they don't call them Baby Boomers in Spain because they were on the other side of that predicament. But people of that age group. Fucking raging. And I was just like, this is sick. And then you like come over here and it's just like, this is something you've never heard of and it's $20 and you're totally rolling the dice. We just want something basic and that we can drink a ton of. So, you can take offense to this if you want. At first it sounds like you just wanted to look for somewhere that there was an opportunity and you just opened a business. But when you talk about that, it's not just that. You have a history with the drink and the culture itself. It's both. This is a labor of love through, through. Do we want to make a lot of money? Absolutely. But you know, it's a labor of love. The Spanish cider culture is super, super cool. Spanish wine culture's super, super cool. Wine culture in general is super, super cool right now and getting more fun and exciting every day. And so it's like, you know, we took this route that was like really, really beery. We're using ale yeast, were fucking with saisons, we’re dry hopping stuff. Like dry hop ciders, it makes so much sense. You know, it does really here in the taproom, but it's not our top performer in retail. We're still figuring that out. But I mean, we're pushing through it. It's going to catch on and we

want it to. But then we have like things like PetNat, we have things like porron you know, we have like a bunch of natural wines that change every three weeks. And so we really are in this like wild west of honest intentions and ambition in between an emerging category that's growing and in a really weird direction with this kind of wine cooler boom that you see with some of the larger brands and hard seltzers. And then we're also mimicking beer trends. We've gravitated towards like a lot of Southern Hemisphere hops that people are hopping lagers and hazy pale ales. These are things that work well with the fruit that we're working with. That goes exactly with what I was going to ask about. Yeah, you’re beer in spirit, but you’re actually beer-ish in execution because of things like playing with the dry hops… And then cans. And then also shotgunning said cans. You have done one collaboration so far with St. Elmo, if you want to talk about a little bit about that. Yeah, there's more coming. We just started talking about it. It'll be a lot different. Bryan’s (Winslow, St. Elmo co-owner) wife and my wife were college roommates. So when I was first dating my wife and Bryan and Amy were dating, we would hang out a lot. That's when he was like a cellarman at Austin Beerworks; just graduated from the packaging volunteer squad. We were just bev boys and he would do three brews at Beerworks, come home and fucking fuck up a homebrew and he'd brew like four things in a day, and then he'd, you know, make a chicken coop. An extremely industrious dude. I've gotten a lot of advice from him and he's helped sort of steer our process for fermentation and stuff. So I have immense respect for him. And then I was like, well, I want to start this cider thing and we started playing. Then we had that Graffiti that we released last year and got a very epic cease and desist from Sherwin-Williams. Uh, we got two C&Ds actually, but different story… But, it’s going to be totally different. It's not going to be Graffiti anymore because that was just like, that was perfect because we made the can and that's about it. You know, Sherwin-Williams, like shit themselves over that. But this one, the name is TBD, but it's going to be like a really different direction. TBD, that’s a good name. Yeah. TBD is going to get all the badges on all the websites.
We went off track and John proceeded to do a really good Bryan Winslow impersonation. Ask him to see it next time your slamming some ciders at the taproom.

Alright, well, I think we got enough. I mean, well actually our glasses are starting to get kind of low and you mentioned the Pet-Nat a couple of times so let’s go get one of those. That presents a nice segue. So, we have all of these like modern ciders that are really dry. They're using culinary fruit, moderate acid, zero sugars. We're hopping it. We're adding peppers. We’re adding gin botanicals. We’re relying on a lot of end of fermentation infusions to make these different skews that we're offering in 12 ounce, four packs. And that's the volume, and that is somewhat representative of beer trends. Beer people are gonna gravitate towards the packaging. Pet-Nat. I mean, that's a really old style of sparkling wine production, where it's a bottleconditioned cider essentially. When you're making champagne, the fermentation ends and then you will add yeast and priming sugar to the bottle, it referments in the bottle. And then you'll disgorge and top off and that's it. Disgorging is storing it upside down so the yeast packs into the bottom and then you freeze it and then you pull it out and it all condenses and you have this like yeast ice puck that just shoots out. You put your thumb over it, some people do it underwater. Then you top off with finished cider of the same fermentation and that's how we do it. So it is much more of a wine process. And Pet-Nats are very trendy in the natural wine movement that is proliferating in a very lovely way, in my opinion. It’s juice in a bottle. Instead of bottling at the end of fermentation, you're bottling when it's at like one degree brix. That fermentation is completing in the bottle, you know, hence the sediment. Pet-Nat is a hyphenated French term that stands for Petia natural. It just simply translates to a naturally sparkling cider. For this, we're finally getting into organic heirloom apple varietals. Those are going to have a much richer tannic structure, much more wine-like. We serve them out of stemware, five ounces of course, things like that. Getting distribution at limited retail. We have it in 10 accounts and we've cut that off. There's only three retail accounts where you can get that: Sunrise (Minimart, on Anderson), they have like one of the dopest selections in Texas, Quickie Pickie first and then Whip In. And then we just have like, you know, a slew of restaurants that we’re kind of already homies with. It's all what we call sexy accounts. So sexy accounts and a couple of sexy retail spots and it's cut off. We run a special on it on Fridays, our bottles are 18 bucks. So, let me go grab one.

Are you a planner? Fabulous, then make those reservations months in advance to assure entry into Hamilton Pool. Oh, and keep your fingers crossed the bacteria levels are in check so your experience extends beyond the short hike in and out. High bacteria = no swimming, bummer. Regardless, Hamilton Pool is a beautiful grotto to behold, and hopefully swim in. Since reservations are required, it shouldn’t be overly packed and you (no dogs) can enjoy a morning or afternoon of swimming. Not a planner? High bacteria levels? Forgot to leave Fido at home? Don’t lose your shit—just retrace your steps down Hamilton Pool Road about a mile and turn into Reimers Ranch Park. Known best for rock climbing and mountain biking, you’ll also find some good places to dip in the Pedernales river.

23 Okay, you swam, and maybe hiked a little, now head back down Hamilton Pool Road and quickly you’ll find Family Business and Nate Seale’s beers. Here it’s easy to keep that outdoor-nature-vibe going as you hang out on their spacious patio or shaded picnic tables. Throw the kids in the gated playground area (so smart) and enjoy some grub from Jep’s Southern Roots, their on-site Cajun food trailer. The natural go-to is the Hamilton Pale Ale, but hey, they’re about bringing family together, so everyone is sure to find a match... and even Fido is welcome.

Another well-known watering hole outside of Austin proper resides in Wimberley. You’ll need reservations to get in during peak season, and be prepared to haul your stuff a ways from parking into the preserved park/swimming area. The creek at Blue Hole is shaded by impressive cypress trees, so not only is it chilly, but there’s very little sun shining through to warm you up (our advice: go when it’s really hot so you can’t wait to take a dip). Feeling adventurous? Take a chance on the rope swing. Although your dog isn’t allowed, picnics and kids are, so come prepared to warm back up on the lawn and relax a while. After your reservation is expired, or you feel like you’ve got your money’s worth, take Ranch Road 12 south to Middleton Brewing. Middleton offers outdoor, indoor, and rooftop options and is family and dog friendly. In fact, don’t go if you don’t like dogs—there are a lot. They typically have a Slingin’ Sliders on site for you dummies who didn’t take our advice of packing a picnic, and if you stay late enough, your extended drinking may be rewarded with some live music.
Jacob’s Well + Vista Wimberlinians are lucky to have not one, but two ‘grammable, natural swimming holes. Jacob’s Well, a consistent 68 degree artesian spring, is pretty small but fabulous for soaking your hot feet as you sit on the ledge, or for making a big splash as you launch off the rocks into the submerged cave. We only recommend this hole for brave big kids and

24 adventurous adults who will take advantage of jumping into the cold water, otherwise you’ll get your picture, pretend you had an amazing time (when in reality you dipped your toe in, shrieked it was too cold and complained that it was too crowded) then leave to get your beer on. So after you get that ‘gram, head to Vista for an equally photo-worthy taproom and views. Avoid getting derailed by the wineries along the route or the smells wafting out of the Salt Lick. You’ll be rewarded with the likes of the sessionable Adair Kolsch, delicate Le Saison Farmhouse Ale, or their ever-changing board that seems to always include something new or barrel-aged. At Vista, you’ll find bountiful outdoor space, picnic tables, swings and a playscape, delicious offerings from their grill, and if planned correctly, a perfect hill country sunset to cap your day.
Georgetown Blue Hole + Rentsch Pinthouse Round Rock not far enough north for you? Head further up I-35 to Georgetown’s Blue Hole, a lagoon on the south fork of the San Gabriel river. There’s a bit of free parking close to the popular El Monumento restaurant, so plan to go early and bring your big ‘ol tube if you’re willing to risk injury on the natural limestone slide (when the water’s flowing). This swimming hole has something for everyone—deep enough to jump in on one side of the dam, and great for cooling off your feet on the other. Once you’re ready to leave the other river rats behind and have worked up a good thirst, a short seven minute drive will get you to Rentsch Brewery. First, grab a refreshing Blonde or Hefe (or Radler if you’re feeling fancy), then cool off under their large shade tree and big mister fans—it’s hot y’all. But don’t feel guilty, they brew their beer using 100% renewable energy... so surely their A/C and fans are powered the same way?
Barton Springs + ABGB Ahhhh, Barton Springs—the obvious choice for locals and tourists alike. Open yearround, this spring-fed, freakin’ cold pool has 900 feet of blue water, a diving board for

you to make a fool of yourself, and sprawling lawns begging you to spread out and sunbathe (tops optional) or doze in the shade. And what goes best with a classic Austin swimming hole? Classic, no, institutional ATX brewers: Amos and Swifty, now complemented by Kim, who produce award-winning lagers to enjoy in the ABGB biergarten, a quick drive south down Lamar to Oltorf and across the tracks. Bring your dog, order a pie, enjoy live music... this is Austin y’all. What’s more is ABGB’s Hell Yes Project lends a hand (lots of hands) in keeping Barton Springs clean, so order another Hell Yes or Rocket 100—it’s like patting them on the back for all their hard work while quenching your thirst. Win-win.
McKinney Falls + Live Oak & Hi Sign McKinney Falls State Park, located just west of the airport, has two swimming areas: the Upper and Lower Falls. The Upper Falls is definitely more exciting. Planning to take a jump in? We recommend doing some exploration of what’s below beforehand to keep safe from submerged rocks—don’t be a dumbass. You won’t be able to enjoy that beer later if you crack open your skull or break your leg. Choosing to play it safe? Head to the Lower Falls. Afterward, a quick drive will get you to one of Austin’s oldest running breweries, Live Oak. The expansive biergarten can yield a long, long..long afternoon of drinking, and possibly a game of disc golf (if you’re into that). Not to mention, who doesn’t want a Hefe on a hot summer day? Still not ready to go home?
QUICK DIPS Deep Eddy + Hold Out Deep Eddy is another of Austin’s amazing swimming holes. Actually the oldest swimming pool in Texas, spring-fed waters make this a cold spot that’s perfect on one of the 100+° days we’re sure to have. If you want to get a workout in, swim some laps...or if you’re lazy like us, wade in via the beach entry or go all-in for plunge in the deep end. You can dry off on that scooter ride down Lake Austin/5th to Better Half for some cauliflower tots and a “patio pounder” from Hold Out Brewing…well, eventually.
Ramsey Pool + Draught House Keep it simple. Head to Ramsey’s free neighborhood pool for some splashin’ around. Once you’re done cooling off, walk around the corner to Draught House and enjoy their shady beer garden and a pint of fresh house beer. Saturdays are a win-win for freegans: swim for free, then hit up DH around 5:00 for free bratwurst.

Blanco River + Real Ale Leave the city behind and head west my friend... west about an hour to Blanco River State Park, right along Highway 281. Come prepared to float, kayak, or swim... but bring something to wear on your feet if you’re the “eww, what was that?” kind of person or just don’t want to bust your ass walking across the dam. The park offers kayaks for rent, otherwise you’re on your own to enjoy the river, which includes bountiful picnic tables, grassy areas, and shade for relaxing. Afterward, grab a fresh draft at Real Ale, just a few short miles back up 281. Of what? Rio Blanco pale ale, obvs, or stick to one of our refreshing favorites: Hans’ Pils. While you’re there, pick up a big green Hans’ tube for your next river outing, and be sure to enjoy some free classic arcade games on the brewery overlook.
Bull Creek + Austin Beerworks If you slept in too late to make it out-of-town, Bull Creek can help you escape the heat and satisfy your need for a dip. As long as there’s water flowing, bacteria levels should be in check. Near the southern entrance there are some good jumping rocks if the water levels are high enough. There’s also a well-worn natural rock slide for the kid in all of us. Some sections can get crowded by the afternoon, but don’t worry... in no time you can be at Austin Beerworks sipping one of their summertime must-have beers, Einhorn, or another of their taproom only seasonals. ABW is a family-friendly place that knows how to party and offers endless fresh buttery popcorn in their taproom. Grab a bite from their food truck, CAN-tina, to round out your afternoon. Maybe even pick up a new tank, hat, or sunnies to rep this quintessential Austin brewery.

Hippie Hollow + Oasis Here’s the cold hard truth: I grew up hearing about Hippie Hollow, but haven’t actually been there. But go, clothing is optional, I’m sure it’s a lovely swim... and especially refreshing if you do it sans suit. Rock that dad bod. Afterward, hit up Oasis Texas Brewing (not to be confused with The Oasis—unless you want overpriced queso). Here you can enjoy the view while enjoying the brew (ooh, that’s catchy). Grab a Meta Modern Session IPA or Luchesa Lager, along with some food from their Craft Kitchen, then post up—seriously, like you’re Dennis Rodman, desperate for the rebound—so you can score a clear line of site for that money sunset. (For you kids, Dennis Rodman was a basketball player before he became our unofficial ambassador to North Korea.)
Barton Creek Greenbelt/Sculpture & Twin Falls + St. Elmo The Barton Creek Greenbelt hikes to Sculpture and Twin Falls are two (overly) popular routes to some nice waterfalls... if Austin’s had any recent rain. If not, you will sadly hike out and be greeted by a couple of fat, hungry mosquito pits. When it’s flowing, these are some nice swimming areas with waterfalls, rocks for jumping, or areas to just sit and soak in the sun. Remember, this is a hike, so leave the flops at home and opt for something more substantial. Once you’ve had your fun in the sun, head over to St. Elmo for a refreshing and super crushable Carl Kolsch. Ready for more? With a solid and constantly changing board, we guarantee you won’t be disappointed. Their permanent food truck, Soursop, has rich, flavor-packed pan-Asian dishes... and when they say spicy—believe it. While you’re drinking and mowing down some wings, pick up a board game to pass the time, relax outside with your pup, or plan to hit up their Grassy Thursday, a sure hit.

I HAVE A WEIRDLY VISCERAL MEMORY FROM the early 2000s of walking through Club DeVille, down on Red River, all red vinyl and wood, now metamorphosed into Cheer-Up Charlie’s, and going to the bar. There were only four tap handles, all standard stuff, but there would be that red handle, with the bicycle cog on it. My understanding and appreciation of beer had just recently turned a corner. I had begun peering into the fridge at G&S Lounge, and poring over beer menus at the few places that had extensive tapwalls. As a lifelong Austinite, seeing that tap handle, and ordering that beer, I felt no small measure of pride. We make that. It comes from here. A few years later, I remember meeting a brewer from Deschutes at the original Gingerman. He said that (512)’s Pecan Porter was one of the best he’d had. I didn’t know a lot about Oregon beers, but I knew there was a lot of beards and flannel and I liked Deschutes, so I figured he probably knew his stuff. That’s right, we do that. It even has our area code, right there on the tap handle. In turn, the pride felt from those local “hits” drove many of us further into what those breweries, and others, had to offer, deeper into the true heart of beer itself, and we became the patrons, and sometimes the brewers, of the boom of local breweries. Today, breweries produce a potentially baffling array of beers. As I sit at Pinthouse Pizza’s OG Burnet spot, there are 17 beers on the board. They run the gamut from a lager, to seven different IPA’s, an IPL, three pales, a porter and a stout. That’s in addition to 25 guest beers. But most successful breweries have a hit, a brew that draws people in, carries the load, sustains the business, gets them onto taps and shelves, allows their brewers to branch out, experiment, and refine. Far from being aging pioneers, our local legends are still pulling the weight, and the model continues – the great breweries most often survive, and thrive, on the one brew that

carries their standard forward into battle. Austin Beerworks started in 2011, with something to emulate. “We wanted to have a flagship, for sure,” says co-owner Michael Graham. “The most successful model at the time was Firemans #4. At the time, that was the kind of beer you needed to make.” When Brad Farbstein bought Real Ale Brewing from the Connor family in 1998, it was subsisting on Full Moon and Rio Blanco. In Farbstein’s first year, he doubled annual production from 150 barrels to 300, but it still wasn’t enough to make the maths work for the bottom line. “Selling craft beer in the 90s was an uphill battle,” Farbstein says. “If there was a multi-tap bar, it was all Bud Light, Coors Lite, and if they were fucking crazy, they had Shiner Bock on.” In 2002, Full Moon was still their top seller, in 22oz bottles, a tough sell at the time. Rio Blanco Pale was their first 12oz release, leading to a local craft beer go-to of the time: the Real Ale variety six-pack: two Rios, two Full Moons, two Brewhouse Browns. Then, Real Ale brewed their fourth beer, a simple blond ale, actually, an early SMASH, with just a honey-sweet two-row Rahr malt and Crystal hops. Farbstein met Greg Munday, builder of Firemans Cruzer bikes, at a Super Bowl party. One day they got together. Farbstein had a red tap handle in his car. Munday had a spare sprocket. They bought a number “4” you’d put on the front of your house, and screwed it all together. The iconic tap handle, inextricably tied to the beer, and the brand, and Austin beer history, was born. 17 years later, Firemans #4 is still Real Ale’s dominator – still half the production, still half the sales. Still the blueprint. “Firemans is people’s go-to. We know our consumers buy a lot of other brands, but they always come back to have a six-pack of our beer… People are growing tired of the Russian Roulette of taking six-packs off the shelf when they just want something they

can count on.” Dusan Kwiatkowski, Live Oak’s head brewer, echoes Farbstein’s memory of the early struggles. “In 1997, it was tough just convincing bars to buy a keg out of a van.” Live Oak wasn’t seeking a champion. Kwiatkowski says they just wanted to duplicate certain European styles “as best as possible… then just sell that.” But, “Pilz was the reason for starting Live Oak. It’ll always be our flagship. “But it’s no illusion that we’re known for Hefe.” A running thread through conversations with brewers is that intentions, plans, and assumptions mean little in the face of what it turns out the drinking public actually wants… and maybe just a little luck. The Yiddish saying, Mann tracht, un Gott lacht, might’ve been first uttered by brewers: “Man plans, and God laughs.” “It wasn’t anticipated for Hefe to be numero uno…,” Kwiatkowski says. “Nobody wanted or was ready for Hefe back then, so it was a slow start as a seasonal, but people started realizing that it tasted good and you could drink a lot of it. The Bavarians already did the proof-of-concept legwork for us over the last 1,000 years, we just had to worry about making it that good.” Almost a decade later, (512) Brewing launched with their Wit and Pale, but their IPA was quickly their biggest hit. Founder Kevin Brand says that their IPA “defined who
we are, because no one else was brewing that style in this region, and the ones that were available weren’t very hoppy, or big, or dry-hopped, or interesting.” (512) IPA is still half of their sales, but Pecan Porter still grabs 25% of (512)’s sales. “Pecan Porter was our first seasonal, but as soon as I tasted it, it was permanent,” remembers Brand. “It, too, defined us as a brewery – one with big, flavorful beers that risked offending people looking for their dad’s beer they stole from the hot garage in high school.” While local pioneers needed flagships to break into a market dominated by Buds, Millers, Coors, Lone Stars and Shiners, breweries that emerged in the brewery explosion of the last decade still need signature brews to lead the charge. Knowing that, the four guys at ABW made a choice. “Peacemaker was the closest thing to [Firemans] that we could conceive of,’ says Graham. “The other beers, we just sort of made for ourselves.” Still lovingly-crafted, Peacemaker was built to be the hero. Pearl Snap, Fire Eagle, and Black Thunder were the salable indulgences of their passions. Again, with the planning and the laughing. “We sold our first beer in May 2011. By July, Pearl Snap had turned out to be our number one seller, and it’s stayed that way ever since. That was a good lesson – you make something for yourself, just the way

But tasting the beer is a surprise, and it comes in at 110 calories, 5.5 carbs, compared to a market-leader with 110 calories and 6.6 carbs, from a big brewer that currently boasts about not using “corn syrup”. “Firemans Light is one of our biggest plays ever,” Farbstein says. “Light beers are very complicated to make, because there’s nothing to hide behind – you nail it, or you don’t. “We’re excited about introducing a light beer made by a craft brewery, because we’re interested in disrupting the light beer space. As interested as the big boys are in portraying themselves as craft brewers and disrupting a lot of independent, family-owned businesses, we’re looking at disrupting something they hold very dear. They always felt they were immune from craft brewers entering that space.” The emotional attachments breweries and their owners have to their flagships vary. Asked whether he wants Firemans to always be Real Ale’s king, Farbstein says, “The market will do what the market will do. I just want Real Ale to remain relevant. I think Axis could quickly gain that same notoriety, and we believe that Firemans Light could be twice as big as Firemans.” Sometimes, hard choices have to be made. Graham talks about the decision to swap out one of ABW’s core four beers, beloved by the owners, employees, and fans alike – Black Thunder – with Flavor Country. “By the time we actually did it, it was an easy decision. Emotionally, it was tough – like putting your dog down. You know it’s something that needs to happen, but it still doesn’t make it any easier. But, I’m glad it worked out the way it did. We bring it back as a seasonal, which is where I think it belongs, and it’s something to get excited about. And in the first two months of Flavor Country sales, it sold more than Black Thunder sold in the previous year. So, it was a good business move, and I think it gives Black Thunder a better place to exist. “We’re always wanting to give the customer what they want. Having a flagship is a rare thing. There’s no formula to making one. We don’t want to put all our eggs in the Pearl Snap basket – I’d love to find a new brand that would take over the number one sales spot. Staying relevant and staying new and staying fresh and exciting is extremely important.” Or, as Kwiatkowski says… “it’s whatever the people want, man.”

you like it, that resonates a lot more than something that you think other people are gonna like.” Pearl Snap consistently hovers between 40–50% of sales, and the green tap handle has become as iconic as Firemans, or (512)’s wooden prisms, or Live Oak’s rustic wood handles. “You can’t design that, it just sort of happens, and you have to be able to react, and take advantage of it.” As of this writing, Pinthouse has only very recently packaged three beers in very limited quantities and with on-site distribution at one pub only. They’re a brew pub with pizza that I feel safe taking both my New York and Chicago friends to try. Co-owner Ryan Van Biene says, “While I’d love to say that the beer supports the business, it’s really the food that drives our business. The food drives the revenue that lets us play with crazy amounts of hops and experiment with how we improve, expand, and innovate.” But for the brewery side, there needed to be a leader. “We never set out to brew a true flagship, but we knew that the IPA, Man o’ War, would likely become the flagship… and it did,” says Joe Mohrfeld, co-owner and Director of Brewing. “The idea early-on was to focus on four beers, and whichever started to take off, we would focus on. I modeled this after how Surly approached the market early on, and still think it’s a good approach, because you’re able to more organically find your place in the market. “Early on, Man o’ War was 50% of what we brewed, and it helped us attract a following for our IPAs early on, which allowed us to take regulars on a journey through our other IPAs.” But, the currents and swells of the sea also often yields new kings, and today, their king is undoubtedly Electric Jellyfish. “Our only goal for [Electric Jellyfish] was for it to be the mainstay IPA at Lamar when it opened,” Mohrfeld says. “We had no idea it would become what it has. A year after opening Lamar, we started slowly distributing limited draft around town, and Electric Jellyfish was what those accounts wanted.” Now, Jellyfish accounts for 65–70% of Pinthouse’s production volume, brewed at all three locations. The future will always come. Trends shift, competitors emerge (and fade). As my high school drama teacher used to say, “If you sit on your laurels, you get butt rash.” For this interview, I met Farbstein at

Brand, though, wears his heart on his sleeve for Pecan Porter, saying quite plainly and decisively, “A clear sign I’m out of the brewing industry will be if you hear about the end of Pecan Porter. This is beer I love to drink and that made the brewery what it is. The earliest it will end is when I end.” I’ve heard complaints that profuselyexpansive brewery offerings feed a compulsive, ever-accelerating, Gotta Catch ‘em All, Pokémon-collector mentality. Like digitaldelivery music, the price of convenience and the flood of choice is arguably shorter lifespans for music that becomes mere files more easily lost on our culture’s terabyte hard drives. With the demand on artists for new product, the public’s appreciation of quality, technique, and uniqueness might suffer. But music has come around. Vinyl has been gaining market share by double digits, while CD’s and downloads plummet. Beer may mirror that trend. In the course of writing this at Pinthouse, Cotton and Julian have brought me a Man o’ War, a Green Battles, a Bearded Seal, and, I would have had a new brew, Fumbling Dexterity, but it’s gone. (Yes, that’s a good deal of beer, but it’s my process, man…). I like knowing Man o’ War is there, though. It got me here, years ago. The Austin classics, old and new, the hits, or at least the beers that drew us in, persist, and continue to form a foundation. They are the dense core, the stars around
which the fortunes and legends of breweries, an entire local industry, and a community, revolve. The past is prologue. They’re always there to come back to and appreciate, like those evenings where I ditch the iPhone, and go over to the cabinet of vinyl records. Beyond disputes about vinyl’s sound, for me and many, it’s about the ritual, the mindfulness of selection, the process of the experience – it’s undeniably richer than Spotify. I can see the album art, and read the liner notes, see who played what, who wrote which tracks, who quietly played in recording sessions, like Clapton playing bass on a song or two on Phil Collins’ Face Value. Many nights, I’ll run my finger across the spines. I feel how many artists owed something to others, recognize how a great album supported an artist’s or band’s experimentation, made their later albums possible. Sometimes, I almost even lament that my vinyl collection has grown past the handful of albums I first bought. As much as I love the variety and career arcs, all the new, the great variations and experiments, I’ll land on one that feels like an old friend, that brought me to the artist, and everything else they had to offer, in the first place: Songs from the Big Chair, Station to Station, Purple Rain, Badmotorfinger, Listen Without Prejudice. I’ll drop the needle, open up something cold, local, classic, still beautiful, and I am more in touch with why I love music, and the beer in my hand, than ever.

it to Craft Pride unscathed with the closest scooter-to-car accident coming as I took a victory lap for a photo. Carloline had just beaten us and were barely a swig into their River Beers. Townies to tourists, empty nesters to recent grads, date night to girls night…they were all there. We worked our way through the undecideds at the bar to grab a St. Elmo Carl and Family Business Hamilton Pale before joining the crew on the front patio. It really was the best place to be as dusk approached, at the intersection of optimism and regret as day drinkers dragging their feet passed wide-eyed party peeps ready for the night. At one point, we spotted some guy looking like Pauly D (world famous DJ and Jersey Shore cast member), and as Carlos whispered to check him out, he and Aaron locked eyes while the rest of us tried to play it cool. Too late. We hurriedly started up a conversation and darted looks in all directions, hoping our night wasn’t ending here with a story of how Aaron got beat up on Rainey. Just as we let down our guard, he was coming back the other way, quickly approaching the Craft Pride entrance with a solid bro stance. Our sips got bigger we couldn’t match his testosterone. But at the last minute, he proceeded to another destination. In this time we learned that Aaron had watched all episodes of Jersey Shore, including the 2018 reunion in Miami. This is where if he were a good contributor he would have thrown in some Snookie references. While waiting, and waiting, and waiting for Carloline’s Via 313, we grabbed two Vista brews (the Alt was especially good) and soon hit the street knowing we’d need to pick up the pace. We didn’t make it far. Only next door in fact, as we popped into a chiller Javalina to wait for our soon arriving guest. We ordered a round of the drink of the day, a Wild Turkey shot, but apparently they were out (or the bartender wasn’t in the mood). Ice cold Modelo Especial tall boys it was, and just as we settled into our seats our surprise guest for the evening Brew&Brew/Better Half/Hold Out co-founder and El Camino owner Grady Wright graced our presence. We were glad to pick up a fifth, but felt bad when we learned he popped a tire on the way over and his bike was locked up somewhere near the Convention Center overnight. But that does not stop a determined man like him. This was a quick pit stop, so after exchanging pleasantries we chugged what was left of our Mexican lagers. Next stop - Banger's! Everyone visiting

Austin has seen Banger's on the listicles when planning their trip, and they were ALL there, getting the full Texas experience with a country cover band front and center. Protip at Banger's is to order at the bar. You’ll reduce your time from door-to-beer and be ready in case whatever you had your craft heart set on has blown. But, with their recent expansion, a small wrench is thrown into the plan. The new outdoor bar has 101 taps, all completely different from what’s on the original 106. Three of us headed for the new space for a round of Real Ale and Hops & Grain pales and went upstairs for a bird’s eye view of the crowd. Soon, Aaron and Caroline joined us with a bottle of Orval because #OrvalDay. In the midst of a lot of mindless chatter, we tried to get Carloline to dance to a cover of Brooks & Dunn’s 1992 hit “Neon Moon.” Sadly, I think our ask was one beer too early. A song or two later, we realized Aaron was nowhere in sight, and I quickly assessed the situation…stein time! And like that, he appeared with 34 ounces of Firestone Lager. We were all empty, and as much fun as we were having (because for real, Banger's is a party on a Saturday night), we did have a quasi-agenda to tend to. We played a game of pass the stein, slugged down that lager and were off. Finally, Grady escorted us into a janitor's closet Little Brother, a coffee/beer/shot/ cocktail/vintage VHS video bar serving up “solid bevs” in the bottom of the Millennium building. Thankfully the (as in the only) four seats were open so we posted up and let Brother Wright take the wheel. Four shots and a Pearl chaser later, we were hitting our stride. We watched the nightlife bustle from the LB window, took a bunch of ‘grams and soaked it all in. Fully warmed up, we now slowed down long enough to enjoy their specialty: house-made canned cocktails. Carloline, Aaron and I opted for their take on a Margarita while Grady went for the one that comes topped with a gummy shark. Here’s where we learned that there’s some Beautiful Mind equation to how many gummies are needed a night and even if you’re 2018 ABG personality/advocate of the year, you ain’t getting one unless you get THAT drink. As much fun as we were having, with three drinks down, it was probably time to move on. Problem. Earlier I had spotted the Little Brother van parked just outside and asked if

we could go drink in it. Van party? How could Grady say no? We grabbed some Banquets, closed out and headed to the van. (Ed. note: don’t ever take your alcoholic drink outside Little Brother without permission. Not cool. It was for the sake of the story.) There are moments in a night where everything feels fast and forever all at once. This was the van. We did photoshoots outside the van. We kicked the tires and acted like we knew about vans. We ooh-ed and aah-ed at the close color match of the van to our Coors Originals. We pretend to drive the van. We found some stale (Haribo) gummies in the van. We did all the van things. And drank our beer. At this point we may or may not have said goodbye to Grady, all I know is he didn’t make it to the end of the block as we moved onto Anthem. Caroline had sold us on Anthem for their frozen Tiki drinks knowing we may be at the end of the line with beer. Before we could even make a selection the bartender greeted us with gratis sake shots. Saturday night special? With the cooling spring night I opted for a Hans’ while the other three went for the signature icee drinks. Back to the patio again. We took some photos and soldiered through our drinks, but the conversation was light. Six+ hours drinking together will do that to ya’. Sure, there were a baker’s dozen of bars we could still hit, and if we were doing true Beer and Loathing Gonzo journalism, we would have immersed ourselves into the rest of the Rainey experience. But remember, we’re easing back in after a long off-season. This was our spring training, if you will. So we bid adieu to Carloline and staggered to our final destination: IHOBP. Pre-midnight I-35 IHOP is a sad place. Take your pick of table, they're all mostly open. An order for a carafe of coffee and some off-menu chicken fried steak and eggs were placed (that's for you, Grady). Not sure why that’s not on the menu, but after struggling to find it in print, both the waitress and Aaron were impressed with my ordering abilities. We put down what we could, packed up the pancakes for the kids the next morning (sorry I left mine in the Lyft, Micah) and called our ride as the clock struck midnight and the more spirited patrons slowly trickled in. We left a lot behind on Rainey, like anything on the west side of the street, but left knowing that it’s easy to beer (and more), and it’s just as easy to loathe (CFS+2 eggs+hashbrowns+salty waitress). Oh yeah…Grady, did you get your bike?

Kevin Brand moved back to Austin from California in early 2008 and began brewing beer that summer. The initial lineup was the Wit, Pale, and IPA, but quickly added the Pecan Porter. Currently (512)’s beers are only available on draft but they have had some special releases in bottles.
Award-winning brews (and pizza) in south Austin. It’s no wonder they were named Best Large Brewpub in America at GABF (3x!).

Austin Beerworks is a collection of four friends, Michael, Will, Adam and Mike, who raised an impressive production brewery and cannery in 2011 (with a proper taproom added in ‘17). BREWERY SNAPSHOT Kris Gray and Zack Fuentes launched Lake Austin Ales in September of 2018. They started with just two beers: an IPA and a DIPA, both juicy and fruity. They also began contract brewing (at Celis) out of the gate. Plans for a brewery and taproom of their own are a little ways down the road.

Bull Creek has been brewing small batches since 2011 and distributing in small amounts. In 2014 they began a major brewery expansion so they could eventually distribute to a larger area. Grab the kids and get out of town.
Jensen and Danneel Ackles and fam had celebrity cred, but needed a brewer with some real brewing cred. Nate Seale fit the bill. Nate returned to Austin to create more great Austin brews.

One of the oldest breweries in central TX, Real Ale has been in operation since 1996. In 2006 they moved to a new facility just outside downtown Blanco.
Opened in early 2015, Red Horn concentrates on fresh-brewed beer and fresh-roasted coffee. Stop in for a pick-me-up or a knock-me-down. A small menu of food is also available.
