June marks the beginning of summer in Golok, a Tibetan Autonomous Prefecture within China’s Qinghai Province, when local nomadic herdsmen move up to the higher grasslands in search of the rich summer pastures. After the harsh, lean winter (temperatures in the highlands can plummet to -30°C, -22°F), the summer is a time of relative abundance as the families’ dri (Tib: འབྲི།), female yaks, begin to produce an abundance of rich milk. At an average elevation of 14,000 feet, the Qinghai-Tibet plateau is the highest in the world. An enormous expanse of grassland situated on the Eastern edge of the Himalayas and dotted with turquoise lakes, the plateau is only sparsely populated, with less than two inhabitants per square kilometer, by a few remaining Tibetan pastoralists who scrape out a living during these few months of warm weather.

Dopo il rigido e magro inverno (le temperature possono precipitare fino a -30°C) l’estate è una stagione di relativa abbondanza con le dri (Tib: འབྲི།), le femmine degli yak, che iniziano a produrre latte ricco ed abbondante. A un’altitudine di 4000 m., l’altipiano del Qinghai-Tibetano è il più alto del mondo: un’ampia distesa di praterie ai bordi orientali dell’Himalaya, punteggiata da laghi turchesi; scarsamente popolato, (meno di due abitanti per chilometro quadrato) dai pochi pastori tibetani rimasti che si destreggiano durante i pochi mesi di temperature miti.

Perhaps no place on earth seems further from Golok than the bustling streets of Manhattan, yet in the past years, through a partnership with the local community in Golok, and the Slow Food Foundation for Biodiversity—an international organization working to promote agricultural biodiversity and traditional food products— Trace Foundation has managed to bring something of Golok to the Big Apple: its cheese. In 1998, we began working with local nomadic communities to help them find a sustainable way to cope with the changing economic landscape of Western China, while enabling them to maintain traditional means of subsistence. The solution appeared in 2001, in the form of The Snowland Yak Cheese Factory. Located near the site of summer grazing-lands, the factory buys excess milk from the local nomads, providing them with cash to buy necessities such as tea and tsampa (Tib: རྩམ་པ།), roasted barley flour, a staple of the traditional Tibetan diet. Through a partnership with Slow Food Foundation for Biodiversity, the cheese

factory has, for the past four years, brought their product, a semihard cheese, to a variety of international events and food expositions. Now, having appeared on the Chinese market, the Snowland Cheese Factory is pushing its way into the U.S. The factory has managed to do far more than simply provide a market for nomadic dairy products. From the very start Trace Foundation had a larger goal. Working together with Jigme Gyaltsen, a senior monk at the nearby Ragya Monastery, the Cheese Factory is an income generating venture that will direct its future profits to the Jigme Gyaltsen Welfare School, which provides free education to over seven hundred nomadic children. With this project, we have tried to explore an innovative solution to provide local communities with the means to not only survive amidst the changing world of the newly global economy, but to vastly improve their long-term economic outlook through education and to do so sustainably, with a focus on traditional ways of life.

Trace Foundation wishes to thank all those who made this project possible and who continue to work towards the responsible development of the Golok Tibetan Autonomous Prefecture. Ora, dopo essersi affacciato sul mercato cinese, il caseificio Snowland preme per entrare sul mercato americano.

Il caseificio è riuscito a fare molto di più che creare un mercato per i prodotti caseari dei nomadi. Fin dall’inizio la Trace Foudation aveva un obiettivo molto più grande: lavorando fianco a fianco con Jigme Gyaltsen, monaco del vicino monastero di Ragya, il caseificio è un’impresa il cui scopo è produrre profitti per sostenere la scuola privata di Jigme Gyaltsen, che offre un’educazione gratuita a più di 700 bambini nomadi. Con questo progetto abbiamo cercato di identificare una soluzione innovativa per offrire alle comunità locali non solo di mera sopravvivenza a fronte dei continui cambiamenti dell’economia globalizzata ma anche il modo per migliorare la loro prospettiva economica tramite l’educazione garantendo la sostenibilità con la particolare attenzione ai modi di vita tradizionali.

La Trace Foundation vuole ringraziare tutti coloro che hanno reso possible questo progetto e che continuano a lavorare per uno sviluppo responsabile della prefettura autonoma tibetana di Golok.

Messaggio del presidente internazionale Slow Food Il presidio del formaggio di yak è un presidio Slow Food piuttosto originale, perché a differenza di tutti gli altri non protegge specificatamente un prodotto o un pezzo di biodiversità in via di estinzione, ma protegge una comunità, un’economia locale.

Il formaggio di yak infatti non è un prodotto tradizionale, ma piuttosto una brillante idea per sfruttare meglio le eccedenze del latte e generare guadagni addizionali attraverso un prodotto ottimo. È un esempio di come un’azione, semplice, orientata al buono al pulito e al giusto, se coordinata a livello locale può trasformare le prospettive future di un’intera comunità. È un esempio di come la strategia dei presidi non sia un modo per rimpiangere il passato e cercare di tenerlo vivo a tutti i costi, ma piuttosto un intervento creativo, che cerca di coniugare gli antichi saperi e i vantaggi della modernità, la dimensione locale con lo scambio a livello globale.

Il valore sperimentale di questo progetto è dunque, se possibile, ancora maggiore rispetto a tanti altri, e al plauso per chi lo sostiene in maniera lungimirante, si aggiunge la curiosità di vedere fin dove ci potrà portare, diventando sicuramente un nuovo modello da seguire e applicare in altri contesti geografici e culturali.

Message from the Slow Food International President The yak cheese presidium is a rather unique Slow Food Presidium, because, different than all the other projects, it is not safeguarding a specific product or a piece of biodiversity that is under threat of extinction, but is protecting a community, a local economy.

Yak cheese is not a traditional product, but a brilliant idea to make the most of the excess yak milk and to produce extra income by selling an excellent product.

It is an example of how a simple action that follows the principles of what is good, fair and clean, together with coordination at the local level, can change the future prospects of a whole community. It is also an example of how the presidia strategy is not aboutnostalgia for the past and finding ways to keep it alive at all costs, but is, rather, about creative interventions that seek to combine ancient knowledge and modern advantages, the local dimension at the global level.

The experimental value of this project is therefore, if possible, even bigger than all the others. Let me express my admiration for those who are supporting this project with such foresight, together with the curiosity to see where it might take us. This project will surely become a new model to be followed and applied in other geographical and cultural environments.

Message from Jigme Gyaltsen, the Principal of the Jigme Gyaltsen Welfare School: First, I would like to sincerely thank Trace Foundation, the Slow Food Foundation, and all the supportive people who are involved in this project.

The origin of the Cheese Factory The purpose of the factory is to provide free schooling to those from Tibetan areas who did not have educational opportunities. The unique quality of this project is that it allows Tibetan herdsmen, parents, and students to take full advantage of the distinctive natural resources in their regions, and to develop a circulating and sustainable economic model in the areas where they come from. It is a development model that maintains the local characteristics of the highlands while at the same time embodying global economic features.

Because of Andrea Soros Colombel, the President of Trace Foundation’s direct support and enthusiasm, this project was implemented in 2001 and has been developing successfully ever since.

Trace Foundation’s Project Officer, Ethan Goldings at first and then Project Manager Paola Vanzo, have directly managed this project. It is thanks to them that we have been able to establish an extensive international network: exhibitions, shows, visits, studies, and training were held in San Francisco and New York in the United States, and Turin in Piedmont and other places in Italy. These activities have enabled us to establish a strong basis for a high-level of development for this project.

Messaggio di Jigme Gyaltsen, direttore della Jigme Gyaltsen Welfare School: Vorrei innanzitutto ringraziare sinceramente la Trace Foundation, la Fondazione Slow Food per la Biodiversità e tutti coloro che hanno sostenuto questo progetto.

Come è nato il caseificio L’obiettivo del caseificio è quello di offrire un’istruzione gratuita ai tibetani che non hanno avuto l’opportunità di ricevere un’educazione.

La qualità unica di questo progetto è che permette ai pastori, ai genitori e agli allievi tibetani di trarre il massimo vantaggio dalle risorse naturali caratteristiche delle loro regioni e di sviluppare un modello economico sostenibile nelle zone da cui provengono. Si tratta di un modello di sviluppo che mantiene le peculiarità locali dell’altipiano ma al contempo incorpora caratteristiche economiche globali.

Grazie al sostegno ed entusiasmo di Andrea Soros Colombel, Presidente della Trace Foundation, questo progetto venne implementato nel 2001 e da allora sta proseguendo con successo.

Lo staff della Trace Foundation, Ethan Goldings agli inizi ed in seguito Paola Vanzo, si sono occupati direttamente del progetto ed è grazie a loro che abbiamo potuto stabilire una vasta rete internazionale di contatti: fiere alimentari, mostre, visite, approfondimenti e corsi di formazione tenutisi a San Francisco e New York negli Stati Uniti, a Torino in Piemonte ed in altre località in Italia. Queste attività ci hanno permesso di formare una solida base per un eccellente livello di sviluppo del progetto.

I would also like to thank the Slow Food Foundation. It was Carlo Petrini, the President of the Slow Food Foundation, whose enthusiastic support enabled our cheese to step into the international arena with its starting point in Italy, the “Cheese Kingdom”. As an educator who has been making efforts in Tibetan free schooling for decades, I sincerely believe that the success of the cheese project will improve the standards of the education and living environment of the school tremendously. We will be able to enroll more school drop-outs, hire high-quality teachers, and most importantly, the successful operation of the project can inspire students to understand a plain truth: Knowledge can change life, and knowledge can bring development.

Slow Food and the Presidium Slow Food ed il PresÌdio

The photograph of a Tibetan woman, smiling as she milks a yak in brightly colored traditional clothes and headgear, has become a symbolic icon of Terra Madre. Its symbolic quality isn’t due to the act of milking, even though the sight of a woman contending with the luxuriant black fleece of an animal we find strange and vaguely disquieting is certainly sufficiently exotic to grab our attention.

Milking is the act which brings us closest to domestic animals. It expresses the incredible acquiescence of an animal, be it a cow, sheep, goat or yak, as in this case, which consents to give its milk to humans who in exchange look after it, feed it and in some cases protect it. Milking is an almost sacramental part of the ancient and long-standing process of domestication. A buffalo, a Maremma cow or a yak greatly outstrips us in size, toughness or physical strength, but for thousands of years they have submitted to being milked, accepting an unspoken agreement to cooperate. And this happens everywhere, with the same gestures, from Armenia to Vermont, from Bangladesh to Normandy. So it isn’t the act which makes the image so intriguing, it is the context. Seeing this ancestral practice carried out among soaring peaks, immense wide open spaces and environmental conditions which in winter are hard to survive. Only thanks to specialization and genetic selection can yaks cope with the harshness of life on the Tibetan plateau, where temperatures plummet to -30° in winter and the grass lies buried under meters of snow which the animals have to dig through in order to feed. This is where the monastery school of Ragya is located and where an enterprising monk, Jigme Gyaltsen, decided to help the nomadic people by providing education, assistance and a possible economic resource. Economic aid had to be based on the essential raw material of the land, yak’s milk. The milk was normally transformed by shepherds and assured their survival. Would it be feasible to process surplus milk and produce marketable cheese?

La fotografia in cui si vede una donna tibetana, in abiti coloratissimi, tipici del luogo e con una sorta di sombrero in capo, che munge sorridente uno yak, è diventata una sorta di icona, un simbolo di Terra Madre. L’elemento simbolico non consiste nell’atto del mungere, anche se la visione della donna che si fa largo tra il vello rigoglioso e nero di un animale per noi insolito, vagamente inquietante, quale lo yak è certamente sufficientemente esotico per destare meraviglia. La mungitura è il momento di maggior vicinanza tra l’uomo e l’animale domestico. Esprime l’incredibile acquiescenza dell’animale, sia esso vacca, pecora, capra o yak, come in questo caso, che consente di donare il suo latte all’uomo che in cambio lo accudisce, lo nutre, in certi casi, lo protegge. La domesticazione trova proprio nella mungitura il momento topico, direi quasi sacro, di questo legame antico e consolidato. Una bufala, una vacca maremmana, uno yak, ci sovrastano per dimensioni, rusticità, possanza fisica, eppure si sottomettono da millenni alla pratica della mungitura rispettando un patto inespresso di collaborazione. E questo succede ovunque, con gli stessi gesti, dall’Armenia al Vermont, dal Bangladesh alla Normandia. Dunque non è l’atto che ha reso l’istantanea tanto intrigante: è il contesto. E’ vedere questa pratica ancestrale esercitata tra montagne vertiginose, spazi immensi, in situazioni ambientali che sfiorano, come d’inverno, l’invivibilità. E solo la grande specializzazione che la selezione genetica ha conferito agli yak consente loro di reggere la durezza della vita sugli altopiani del Tibet, dove nella brutta stagione il termometro precipita a -30° ed il pascolo giace sepolto sotto metri di neve, neve che gli animali debbono scavare per potersi alimentare. In quel ambiente nasce l’esperienza della scuola-monastero di Ragya dove un monaco intraprendente, Jigme Gyaltsen, decide di aiutare quelle popolazioni nomadi fornendo loro istruzione, assistenza e una possibile risorsa economica. L’aiuto economico non poteva che svilupparsi a partire dalla materia prima fondamentale di quelle terre, il latte di yak. Latte che viene normalmente trasformato dai pastori e che garantisce loro la sopravvivenza. Era pensabile favorire

Slow Food received the request: can you help us with this? A partnership was formed between the Slow Food Foundation, the Trace Foundation and the Jigme Gyaltsen Welfare School, to undertake a collaborative project which aimed to produce a good quality cheese which respected its origins and could be sold on the western market. We felt there was an initial issue to address however: was it right to transplant alien production practices to this context and create an “international” product? If we look at the philosophy underlying Slow Food Presidia the answer would have to be “no”: a Presidium aims to promote historic local products, respecting traditional knowledge and local practices. But we felt that the ethical value of Trace Foundation’s proposal could for once outweigh theoretical rigidity: we know that sometimes theoretical purity can condemn one to die, while even a small increase in income can completely turn around the lives of such disadvantaged people. So the Yak Cheese Presidium was created and there followed a succession of trials, experiments, veterinary and technical visits, and the involvement of monks and local cheesemakers in events and presentations promoting the project in various countries around the world. As new solutions emerged, new problems did too, including the completely unexpected European ban on importing cheeses made in China. This ban has certainly made it more difficult to carry out the technical and commercial support that Slow Food had planned. But the process is under way: after various trials cheeses are being aged, and the herders and monks have high expectations. It would truly be small-minded and uncharitable to stop now.

We need to promote widespread support and participation for this project, particularly in the United States, where it is possible to import the cheese. Easier said than done obviously, but the Slow Food and Terra Madre networks need to show what they can do: if they cannot demonstrate real practical solidarity, they are not proper networks but just nice abstractions.

una lavorazione delle eccedenze di quel latte per ottenere formaggi commercializzabili?

Dopo varie esperienze la domanda è arrivata sul tavolo di Slow Food: potete aiutarci in questa impresa? Di qui nasce la collaborazione tra la Fondazione Slow Food, la Trace Foundation e la scuola privata di Jigme Gyaltsen, una collaborazione che aveva ed ha come obiettivo la realizzazione di un cacio buono, rispettoso di quel contesto e vendibile sui mercati occidentali. La questione aveva per noi un nodo da sciogliere preliminare: era corretto trapiantare in un contesto come quello una pratica produttiva estranea alla cultura locale, realizzare un prodotto “internazionale”? Se si guarda alla filosofia che sta alla base dei Presìdi Slow Food la risposta avrebbe dovuto essere negativa: un Presidio vuole valorizzare produzioni locali, storiche, rispettando il saper fare tradizionale e le pratiche del luogo. Tuttavia ci pareva che il valore etico della proposta formulata dalla Trace Foudation potesse prevalere per una volta sulla coerenza teorica: a volte, lo sappiamo, di coerenza si può morire, mentre un sia pur piccolo reddito aggiuntivo per popolazioni tanto svantaggiate, può rappresentare una svolta esistenziale. Così nasce il Presidio del formaggio di Yak e seguono tentativi, esperimenti, visite di veterinari e di tecnici, partecipazione dei monaci e dei casari locali ad eventi e manifestazioni, presentazioni del progetto in vari paesi del mondo. E nascono anche nuovi problemi: come quello, assolutamente imprevisto, del divieto di importazione per formaggi made in Cina (stiamo parlando di Tibet cinese per l’appunto) in Europa. Un divieto che ha certamente reso più difficile l’azione di promozione e sostegno commerciale che Slow Food aveva preventivato. Ma ormai il processo è avviato, i formaggi, dopo vari tentativi, sono in stagionatura, le aspettative dei pastori e dei monaci sono alte. Sarebbe veramente ingeneroso fermarsi adesso: dunque abbiamo bisogno che attorno a questo progetto si coalizzi un sentire diffuso, una comune partecipazione, da attivare soprattutto negli Stati Uniti, dove è possibile esportare il formaggio.

Più facile a dirsi che a farsi, ovviamente: ma se le reti che fanno capo a Slow Food ed a Terra Madre non servono anche a questo, ad una solidarietà reale, fattiva, non sono reti, sono belle astrazioni.

About AVeC-pvs The Veterinary Association for Cooperation with Developing Countries (AVeC-pvs), comprised of veterinarians, agronomists and experts in dairy farming, implements projects and offers consulting services in the fields of animal husbandry and health, sanitary food production, and food production and agriculture in general.

AVeC operates throughout the globe, in such countries as Ethiopia, Tanzania, the Democratic Republic of the Congo, Ecuador, the People’s Republic of China and Libya. In cooperation with local governments, private entities, and nongovernmental organizations, the projects of the association promote sustainable development through the use of locally available resources with the long term goal of achieving economic independence for local communities in the developing world.

While AVeC’s projects are primarily within the sectors of livestock production and agro-forestry, they also have important implications in the fields of human health, welfare, education and training. In particular, in the rural socio-economic context, respect for local culture and the protection of natural heritage are also fundamental requirements for achieving long term success in sustainable development.

Although AVeC manages and runs its own development projects, in countries faced by greater challenges, such as the Democratic Republic of the Congo, they undertake short-term consulting projects to provide guidance during the planning stage of development projects, and to address specific needs which emerge in the course of ongoing projects.

AVeC is the technical partner of Trace Foundation and the Slow Food Foundation.

Trace Foundation’s first collaboration with AVeC-pvs occurred during the course of the Tibetan Cheese Project in Golok Prefecture on the Qinghai-Tibetan Plateau and had as its goal the creation of

a high quality product with good organoleptic characteristic. The challenges were overwhelming; working in an extremely forbidding environment with only the simplest of processes and no help from costly equipment. Yet, today the small Snowland Cheese Factory is going strong, and is now able to carry out high quality control measures and apply technological procedures on par with the West.

Our efforts are now aimed at assisting local nomadic families and protecting the health of their herds, so that they can derive the maximum profit from their animals while protecting the fragile environment of the plateau.

Our work on the Qinghai-Tibetan plateau has created strong bonds not only between Trace Foundation’s project partners, but also with the local community, which by now goes far beyond just technical assistance. We have taken up the future objectives of the project and, more generally, the effort to safeguard the culture and traditions of the nomadic population of the plateau.

AVeC-pvs L’Associazione Veterinaria per la Cooperazione con i Paesi in Via di Sviluppo (AVeC-pvs), che riunisce veterinari, agronomi ed esperti del settore lattiero–caseario, implementa progetti e fornisce servizi di consulenza nei settori zootecnico, veterinario, di sicurezza degli alimenti ed agro-alimentare in genere.

AVeC ha operato ed opera in vari paesi nel mondo quali l’Etiopia, la Tanzania, la Repubblica Democratica del Congo, l’Ecuador, la Cina e la Libia. Cooperando con i governi locali, enti privati ed organizzazioni non governative, i progetti dell’associazione promuovono lo sviluppo sostenibile basato sull’utilizzo delle risorse disponibili sul territorio, con l’obbiettivo dell’indipendenza economica a lungo termine.

Le azioni dell’AVeC si esplicano negli ambiti delle produzioni animali ed agro-forestali ma hanno anche importanti implicazioni nei campi della sanità umana, del benessere, dell’educazione e della formazione. In particolare nel contesto socio-economico rurale il rispetto della cultura locale e la tutela del patrimonio naturale sono pure requisiti fondamentali per promuovere uno sviluppo sostenibile a lungo termine.

Benché AVeC gestisca in proprio alcuni progetti di sviluppo, anche in paesi difficili quali la Repubblica Democratica del Congo, sono privilegiate consulenze a breve termine finalizzate a risolvere specifiche esigenze di progetti in corso o in fase di studio.

La nostra prima azione nell’ambito del progetto di caseificazione nella prefettura di Golok sull’altipiano del Qinghai-Tibetano ha avuto per scopo la realizzazione di un prodotto di alto livello qualitativo e con buone caratteristiche organolettiche. La scommessa è stata vinta in quanto, operando in un contesto ambientale estremo, con procedure semplici e senza l’ausilio di apparecchiature costose, il piccolo caseificio Snowland riesce ora

17 ad effettuare validi controlli di qualità e ad applicare procedimenti tecnologici di livello occidentale.

Ora i nostri sforzi sono finalizzati alla tutela delle mandrie dal punto di vista sanitario ed all’assistenza alle famiglie nomadi, affinché possano trarre il massimo profitto dai loro animali nella salvaguardia dell’ambiente della prateria.

Il nostro lavoro sull’altipiano tibetano ha creato dei legami molto forti con i partners e con le comunità locali, che ormai vanno molto al di là di un appoggio tecnico, ed abbiamo fatti nostri gli obiettivi futuri del progetto e più in generale lo sforzo per la salvaguardia della cultura e delle tradizioni delle popolazioni nomadi.

Why Cheese?

It is within this framework that the idea of producing cheese came to life in 1998. Ethan Goldings, then a Senior Program Officer with the Foundation, trekked off-road to ask nomads about their daily lives, priorities and needs.

The trip revealed a deep-seated pride in centuries-old pastoral traditions coupled with a clearly perceived need to adapt to chang​ ing economic and social conditions on the plateau. Simply put, they wanted a product that they could sell for cash. Ethan traveled to Nepal to study similarly situated communities, and determined there that cheese production could provide a solution to challenges faced by Tibetan nomads. The foundation then hired master cheese maker Tashi Kumar Lama, who had learned how to make cheese from the Swiss, to teach the people his trade.

In 2001, at the time of Tashi Kumar Lama’s first trials and trainings on the Plateau, Trace Foundation was impressed with the vision and dedication of Jigme Gyaltsen, a senior monk from the renowned Ragya monastery in Golok Prefecture and the founder and headmaster of the Jigme Gyaltsen Welfare School.

Jigme Gyaltsen and Trace Foundation formed a partnership with the goal of building a small cheese factory. The result was the Snowland Yak Cheese Factory, just one-and-a-half hours drive from Ragya Monastery and the production of the Ragya Yak cheese made from the milk of the dri, the female of the yak. The factory lies at the junction of three magnificent valleys where local Tibetan herders bring their animals for summer pasture. There, the yaks forage on more than sixty indigenous species of wildflowers and grasses, and produce fragrant milk that has twice the fat of cow’s milk, making it ideal for cheese production.

It took several summers of hard work on the plateau for Jigme Gyaltsen and Trace Foundation to convince the nomads that selling milk directly to the cheese factory could increase their incomes. Their experience had been that virtually all of the fresh products they produced would spoil before they could complete the long horse ride to market. Selling the milk to the small nearby cheese factory offered them a good opportunity to earn income.

It was continued dedication to the idea of using traditional, local yak dairy products to produce the Tibetan Yak Cheese that formed the basis of a further collaboration with Slow Food Foundation for Biodiversity in the form of the Tibetan Plateau Yak Cheese Presidium.

Established in 2004, the Presidium is an economic development project designed to improve the quality of the Tibetan Yak Cheese and establish market-viable systems for international distribution.

Three summers with master cheese makers from Italy and Switzerland enabled local cheese makers to incorporate a wide variety of European techniques into the traditional Tibetan cheese making process. The result was a hard mountain cheese with an aroma reminiscent of an aged pecorino and a clean flavor that finishes with mild herbal and grassy notes. The Presidium now works with about 35 yak herders and a dozen cheese makers on the QinghaiTibetan Plateau to identify ways in which their local products can be developed into sustainable sources of income. The sale of milk has the added benefit of increasing the productivity and value of nomadic Tibetan yak herds.

In 2004, a small group from the cheese factory accompanied by Paola Vanzo of Trace Foundation participated in the internationally renowned food fair Salone del Gusto in Turin and Terra Madre, a world meeting of foods communities. The cheese was met with great success, was featured in articles by several newspapers and was profiled on national TV. During this first visit to Italy, Jigme Gyaltsen, the Trace Foundation representative and the rest of the team visited several cheese factories in Piedmont

In May 2006 the cheese was presented during the “Yak Cheese Week” event organized by Trace Foundation in collaboration with the Slow Food New York office. The opening was attended by more then 250 people—academics, Slow Food members, cheesemongers and professionals in the field. Jigme Gyaltsen had the opportunity to observe the reaction of the potential US market to the “Tibetan” taste of the cheese produced by his cheese factory.

During the week Jigme Gyaltsen visited some schools exchanging experiences and views with young American students.

In October 2006, the Presidium team, including Jigme Gyaltsen, Paola Vanzo, Xiamba, Guru (a second head cheesemaker and paraveterinarian), together with Lebu, the Tibetan cook and wife of one of the cheesemaker, attended the Salone del Gusto and Terra Madre for a second time. Together with Serena Milano and Federica Tomatis from Slow Food, a series of meetings were organized to try to push into the US market, the only viable option due to European trade restrictions.

In the summer of 2007, Andrea Dominici and two colleagues, Silvia Dalmasso and Umberto Vesco from Turin University, along with Paola Vanzo and Roberto Colombero from Agrilab worked with the Tibetan team to build upon the first round of the veteri narian training, to conduct an epidemiological study of the yak herds and to run some tests on the possibility of producing raw milk cheese.”

It is the hope of the nomads, Jigme Gyaltsen, Slow Food and Trace Foundation that the nomads’ traditional way of life can be maintained as long as possible despite modern pressure for them to settle in one location and to fence their herds. The Jigme Gyaltsen Welfare School makes education a reality for many who previously could only dream of having such an opportunity. The Snowland Cheese Factory provides a prime example of how a scattered community can sell a sustainable product while maintaining its traditions and avoiding exploitation by external markets. All of the activities thus far undertaken have, along with consistent community support, served to reinforce the value of the nomadic way of life and Tibetan traditions for years to come.

The Foundation, a non-profit body, works to promote sustainable agriculture that respects the environment, the cultural identity of local people, and promotes animal well-being. The Foundation believes in the rights of single communities to determine what they will cultivate, produce, and eat.

Founded in 2003 with the support of the Region of Tuscany, the Slow Food Foundation for Biodiversity organizes and funds projects that defend our world’s heritage of agricultural biodiversity and gastronomic traditions: the Ark of Taste, the Presidia and the Markets of the Earth.

These projects are being developed in over 42 countries (from Switzerland to Guatemala) on 5 continents, but the most significant economic contribution occurs in the world’s less-developed nations, where conserving biodiversity means not only improving the quality of life, but saving lives.

In particular, Presidia support small-scale high quality productions that are under threat of extinction, increase territorial value, recover professions and production techniques, and save native breeds and traditional fruits and vegetables from extinction. Presidia work directly with the producers, offering assistance to improve the quality of the products, facilitating exchanges among producers from different countries, and searching for new commercial outlets (local and international).

In Italy there are around 200 Presidia that safeguard a variety of products: from the Burlina cow to the potato bread of Garfagnana. With more than 100 International Presidia, in 42 countries, the Slow Food universe has spread throughout the world’s biodiversity: from the Malaysian barrio rice to the Tibetan Plateau yak cheese.

La Fondazione Slow Food per la Biodiversità Per difendere la biodiversità alimentare e le tradizioni gastronomiche di tutto il mondo; per promuovere un’agricoltura sostenibile, rispettosa dell’ambiente, dell’identità culturale dei popoli e del benessere animale; per rivendicare la sovranità alimentare, ovvero il diritto delle singole comunità di decidere cosa coltivare, produrre e mangiare, il nostro movimento si è dotato un nuovo strumento operativo: la Fondazione Slow Food per la BiodiversitàONLUS. Nata a Firenze nel 2003, grazie al sostegno della Regione Toscana, la Fondazione Slow Food per la Biodiversità promuove un’agricoltura sostenibile, rispettosa dell’ambiente, delle tradizioni e dell’identità culturale dei popoli, attraverso i suoi progetti: l’Arca del Gusto, i Presìdi e i Mercati della Terra.

Questi progetti sono realizzati in cinque continenti, ma l’impegno economico più importante è legato al sostegno dei paesi più poveri, dove difendere la biodiversità non significa soltanto migliorare la qualità della vita, ma garantire la vita stessa di intere comunità.

In particolare i Presìdi sostengono le piccole produzioni eccellenti che rischiano di scomparire, valorizzano territori, recuperano mestieri e tecniche di lavorazione tradizionali, salvano dall’estinzione razze autoctone e antiche varietà di ortaggi e frutta. I Presìdi coinvolgono direttamente i produttori, offrono l’assistenza per migliorare la qualità dei prodotti, facilitano scambi fra Paesi diversi e cercano nuovi sbocchi di mercato (locali e internazionali).

In Italia sono circa 200 e tutelano i prodotti più disparati: dalla vacca Burlina al pane di patate della Garfagnana. Con gli oltre 100 Presìdi internazionali, in 42 paesi, l’universo di Slow Food si è allargato a tutta la biodiversità del mondo: dal riso bario della Malesia, al formaggio di yak dell’altopiano tibetano.

Since its founding in 1994, the Jigme Gyaltsen Welfare School has enjoyed an excellent reputation amongst Tibetans. A model for Tibetan education, from an initial enrollment of 10 students, it now functions at full capacity by offering free classes to over 700 nomad children. With many graduates progressing to higher education or choosing to serve as teachers in other nomadic community schools, the educational benefits to local communities from the Jigme Gyaltsen Welfare School are already being realized.

While Jigme Gyaltsen managed to run his school for years solely through soliciting private and government funding, expanding enrolment increased running costs so much that it became nearly impossible for him to keep up with the growing demand. As a donor, Trace Foundation had supported a number of projects related to the Jigme Gyaltsen Welfare School including training in teaching methodology, building classrooms and a student kitchen, providing library books and paying teacher and staff salaries.

With costs continuing to rise, it became clear to both Jigme Gyaltsen and Trace Foundation that a sustainable solution was needed to reduce dependence on external donors. This need resulted in a closer collaboration between Jigme Gyaltsen and Trace Foundation to find a viable income generation activity that could sustain the school and also benefit the nomadic families of the area.

Cheesemaking became the viable solution of choice as nomadic families have always relied upon the yak, known to Tibetans as the “treasure of the plateau,” an animal that has sustained nomadic life for centuries.

While developing yak cheese for market, Jigme Gyaltsen began working on another important idea, one he considered his duty as an

Modello per l’educazione tibetana, aprì i battenti con 10 iscritti e funziona adesso a pieno ritmo offrendo lezioni gratuite a oltre 700 bambini nomadi. Grazie al fatto che molti studenti di questa scuola passano all’istruzione superiore o scelgono di servire come insegnanti nelle altre scuole della comunità nomadica, i vantaggi che le comunità locali hanno ottenuto dall’istruzione della Jigme Gyaltsen Welfare School si sono già fatti sentire.

Per diversi anni, Jigme Gyaltsen è riuscito a gestire la sua scuola solamente attraverso la raccolta di finanziamenti da parte di privati e del governo, ma l’incremento del numero degli iscritti ha talmente aumentato le spese di gestione che era ormai divenuto quasi impossibile riuscire a rispondere alle esigenze crescenti. In quanto donatore, la Trace Foundation ha sostenuto molti progetti connessi con la Jigme Gyaltsen Welfare School, tra i quali i corsi di formazione in metodologia dell’insegnamento, la costruzione di aule e di una mensa per gli studenti, il rifornimento di libri per la biblioteca e la retribuzione dei salari degli insegnanti e del personale.

Con il continuo aumento delle spese, risultò chiaro sia per Jigme Gyaltsen sia per la Trace Foundation che serviva ricorrere a una soluzione sostenibile al fine di ridurre la dipendenza dai donatori esterni. Questa esigenza porta a una più stretta collaborazione tra Jigme Gyaltsen e la Trace Foundation nella ricerca di un’attività che generasse un reddito in grado di sostenere la scuola e recare al contempo dei vantaggi alle famiglie nomadi della zona.

The monastery where the Jigme Gyaltsen Welfare School is located could only provide training for boys, so he worked to create a companion school for girls to be built at the foot of a beautiful holy mountain in Jungu County. In 2003, Trace Foundation donated the necessary funds to A.S.I.A.-Onlus (Association for International Solidarity in Asia) an Italian nonprofit to build The Prairie Talent Girls’ School which opened its doors to 90 girls in October 2005.

Profits from the cheese sales are used to fund Jigme Gyaltsen’s schools for nomadic children, which use a unique curriculum that integrates traditional Tibetan teaching and debating methods with contemporary subjects. Purchasing fresh dri milk from local pastoral families provides these families with a source of important additional income that allows them to make decisions about the continuity of their pastoral lifestyles, not out of dire necessity, but out of genuine choice.

Providing education to children in a nomadic pastoral community is a challenge due to the labor intensive and mobile nature of their traditional lifestyle. The illiteracy rate among women is as high as 70% in some areas. Families are especially reluctant to send their children to state-run schools in far away urban centers for fear this will alienate their children from their home communities. Jigme Gyaltsen has offered a valuable solution by building schools close to nomadic communities and offering a Tibetan-centered curriculum that teaches both traditional and contemporary subjects. It is no surprise that the schools are extremely popular with the nomadic families in the region.

Mentre sviluppava la produzione di formaggio di yak per il mercato, Jigme Gyaltsen ha cominciato a dedicarsi a un’altra iniziativa molto importante, da lui considerata un suo dovere in quanto educatore.

Poiché il monastero in cui è situata la Jigme Gyaltsen Welfare School poteva dare un’educazione soltanto ai bambini, egli si è impegnato nella creazione di una scuola equivalente per le bambine, da costruire ai piedi di una bellissima montagna sacra nella Contea di Jungu. Nel 2003, la Trace Foundation donò i fondi necessari ad ASIA-Onlus (Associazione per la Solidarietà Internazionale in Asia), un’organizzazione italiana senza fini di lucro, per costruire la Scuola per le Bambine di Talento della Prateria, che aprì le porte a 90 bambine nell’ottobre del 2005.

I ricavati dalla vendita del formaggio sono utilizzati per finanziare le scuole di Jigme Gyaltsen per i bambini nomadi, le quali seguono un programma particolare che integra i metodi tibetani tradizionali dell’insegnamento e del dibattito con le materie contemporanee.

L’acquisto di latte di dri fresco dalle famiglie di pastori locali fornisce loro un’importante fonte di reddito aggiuntivo che offre loro la possibilità di decidere liberamente se continuare il loro stile di vita pastorale, che diventa una scelta vera e propria e non una mera necessità.

Dare la possibilità di istruzione ai bambini in una comunità di pastori nomadi è una sfida resa ancora più difficile dal lavoro intenso e dalla natura mobile del loro stile di vita tradizionale. In alcune zone, il tasso di analfabetismo tra la donne arriva a raggiungere il 70%. Le famiglie sono riluttanti a mandare i figli nelle scuole gestite dallo Stato, che sono situate in centri urbani lontani, per paura che questa situazione allontani i loro bambini dalle comunità a cui appartengono. Jigme Gyaltsen ha offerto una soluzione practicabile aprendo delle scuole vicino alle comunità di nomadi e offrendo un programma di studi di interesse tibetano, che insegna materie sia tradizionali che moderne. Non sorprende quindi che tali scuole siano particolarmente apprezzate dalle famiglie di nomadi della regione.

the Environment and a short account of nomadic life

The Tibetan Yak Cheese is produced on the world’s highest plateau, the Qinghai-Tibet Plateau, with an average elevation of over 14,000 feet. This rugged terrain is interspersed with soaring mountain ranges, turquoise expanses of salt-water lakes, and harsh tundra.

At its southern and eastern edges lie delicate grasslands where nomadic Tibetan communities raise yaks, sheep, and goats as the mainstay of a pastoral lifestyle they have maintained for countless centuries.

At the center of these grasslands is a unique region called Golok, holding the source of the Yellow River and the sacred Amnye Machen Mountain, which soars to a height of over 20,000 feet, and is home to the protector deity of the Golok region. Not far from Amnye Machen is Ragya Monastery, sitting on the banks of the Yellow River and flanked by the emerald greenery of the Tibetan grasslands. This 18th-century monastery, founded on the advice of the Seventh Dalai Lama, is the home of the boys school funded

by Jigme Gyaltsen. As the school is built on monastery land, girls cannot attend it and this is why the newly built Prairie Talent Girls’ school was constructed in a nearby county.

The most remote valleys of the Golok prefecture are still in pristine condition, and the nomads live in a traditional way, with all its accompanying hardships such as isolation and distance from any public services.

The valley where the Snowland Cheese Factory is located is the main route through a large basin containing many complex lateral valleys.

Il formaggio di yak tibetano viene prodotto sull’altopiano del Qinghai-Tibetano, il più elevato del mondo, con un’altitudine media di oltre 4.200 metri. Il terreno irregolare è inframmezzato da elevate catene montuose, da turchesi distese di laghi d’acqua salata e da un’aspra tundra. Ai suoi limiti meridionale e orientale si estendono pascoli delicati dove le comunità tibetane di nomadi allevano yak, pecore e capre, il sostegno di uno stile di vita pastorale che si è preservato per innumerevoli secoli.

Al centro dell’altipiano vi è una regione unica chiamata Golok, luogo d’origine del Fiume Giallo e della montagna sacra Amnye Machen, che raggiunge un’altezza di oltre 6.000 metri ed è la dimora della divinità protettrice della regione di Golok. Non lontano dalla Amnye Machen vi è il Monastero di Ragya, affacciato sulle rive del Fiume Giallo e fiancheggiato dal verde smeraldo dei pascoli tibetani. Questo monastero del Settecento, fondato dietro consiglio del Settimo Dalai Lama, è la sede della scuola per bambini istituita da Jigme Gyaltsen. Ma poiché l’instituto è situato nell’area di un monastero, le bambine non possono accedervi, e per questa ragione è stata appena costruita la Scuola per Bambine di Talento della Prateria in una contea vicina.

Le valli più remote della prefettura di Golok sono ancora incontaminate e i nomadi vivono in modo tradizionale con i disagi che questa condizione comporta quali l’isolamento e la lontananza da qualsiasi struttura assistenziale.

La valle in cui è situato il caseificio Snowland è l’arteria principale di un ampio bacino idrografico in cui confluiscono innumerevoli valli laterali sorprendentemente articolate.

Unlike other nomadic areas where a significant deterioration in grassland quality is evident, the pastures here, though varying according to the year, are still rich and maintain all the characteristic biodiversity of the Tibetan plateau’s ancient grasslands. The valley does not have a well-defined village and families are mainly scattered in isolated houses, sometimes in small groups, while the high altitude valleys are kept for summer pasture. The main source of sustenance for the population is yak and sheep farming.

The yak (Bos grunniens) is a symbolic animal for the nomadic people and they depend on it for their survival.

The female yak, properly called the dri, gives milk year round.

Rain, blizzard, or shine, women will rise in the morning to milk, make yogurt, and churn butter. While the summer months see plentiful milk, the winter months are lean. Because of this, the families rarely consume fresh milk in winter. Instead, they produce dairy products such as butter and a candy-like, sun-dried cheese called chura (tib. ཆུར་བ།) that can be stored for the winter months and traded in village markets for other needed goods, such as tea and the Tibetan staple, tsampa. Apart from providing milk, yaks are essential for their meat, their fur is used to make the traditional black tents, their dried dung is the only available fuel and they are a valuable means of transport for household goods and tents during transhumance.

Yaks are amazingly well adapted to the harsh environment, and have developed several impressive abilities which allow them to thrive in the harsh environment of the plateau. As food is only readily available for a few months a year, growth and development take place gradually, with teh yak reaching sexual maturity only at five years of age. They can further survive the long hard winters without any additional feed, by grazing on dry plants under teh snow and moving to more windswept areas where snow does not accumulate. Reproduction is also regulated by the environment, as females will not calve in leaner years.

A differenza di altre aree nomadiche in cui è evidente un progressivo deterioramento della prateria, qui i pascoli, pur variando a seconda delle annate, sono ancora ricchi e conservano tutta la biodiversità caratteristica delle antiche praterie dell’altopiano tibetano.

Nella valle non esiste un villaggio delimitato ma le famiglie sono prevalentemente disperse in case isolate, talvolta in piccoli gruppi, mentre le valli in quota sono riservate al pascolo estivo. La fonte di sostentamento principale di tutta la popolazio-ne è l’allevamento dello yak e delle pecore.

Lo Yak (Bos grunniens) è l’animale simbolo delle popolazioni nomadiche dal quale dipende la loro sopravvivenza.

La femmina di yak, che si chiama dri, produce latte tutto l’anno, e che ci sia sole, pioggia o tormenta, le donne si alzano ogni mattina a mungere e fare yogurt e burro. Mentre nei mesi estivi si produce latte in gran quantità, d’inverno la produzione è scarsa, ed ecco perché nei mesi invernali di rado le famiglie consumano il latte fresco, ma al suo posto producono prodotti caseari come il burro e del formaggio duro seccato al sole (chura), che si conserva durante i mesi invernali e viene commerciato nei mercati dei villaggi con altre merci, come il tè e la tsampa. Oltre a fornire il latte, lo yak e’ fondamentale per la sua la carne, con il pelo vengono tessute le tradizionali tende nere, le sue feci essiccate sono l’unico combustibile disponibile ed è inoltre un prezioso mezzo di trasporto per tutte le masserizie e le tende stesse durante la transumanza.

E’ un animale che ha una notevole integrazione con questo ambiente così rude ed ha sviluppato delle forme di adattamento sorprendenti. Raggiunge la maturità sessuale non prima dei cinque anni in quanto, essendo i mesi in cui il nutrimento è buono molto pochi, la crescita non può che essere distribuita in più anni. E’ naturalmente adattato a sopravvivere al lungo inverno senza che gli venga fornito nessun alimento supplementare, ma semplicemente cercando sotto la neve i vegetali secchi o frequentando le aree più battute dal vento in cui la neve non si ferma al suolo. Anche i tempi della riproduzione sono scanditi e regolati dall’ambiente: le femmine possono partorire tutti gli anni o ad anni alterni a seconda della ricchezza del pascolo.

Quella nomadica è una società in cui la donna regge il peso delle operazioni più faticose della giornata: oltre alla crescita dei figli e la gestione della casa sono di sua esclusiva competenza la mungitura e la trasformazione del latte.

Anche la preparazione del combustibile effettuata spalmando lo sterco degli yak sul terreno, raccogliendolo ed accatastandolo in modo caratteristico una volta essiccato, è un pesante compito deputato alle donne. La sopravvivenza ai rigori invernali è legata ad un’adeguata scorta di combustibile.

In nomadic societies, the women bear the burden of many onerous tasks: apart from bringing up children and managing the household, they have exclusive responsibility for milking animals and producing dairy products.

Another demanding task women have to perform is to prepare fuel by spreading yak dung on the ground to dry, then collecting and stacking it. Survival through the hard winters depends on adequate supplies of fuel.

Despite the hard conditions, the nomadic herders show considerable humanity, tolerance and acceptance. The nomads have a profound connection to and religious respect for their land and all beings that live on it.

Wild animals are never seen as competitors but as an integral part of the environment: marmots, vultures, deer and even wolves are respected and admired. Unfortunately, the devastation of the plateau’s herds of native wild ungulates--such as the Tibetan Antelope, or Chiru (tib. གཙོད།)-by poachers has made life difficult for nomadic herders as predators increasingly seek out their livestock to replace dwindling alternative food sources.

Recent trends have brought further pressures that challenge the continuation of this traditional lifestyle. Nowhere are these pressures so great as in the Golok region, because of its location at the source of the Yellow River. Concerns about overgrazing and ecological degradation in other parts of China have been translated into restrictions in herd size, fencing of open grasslands, and relocations of nomadic communities. Adding to this are the pressures of modernization that often devalue traditional beliefs and ways of living. Perhaps one of the greatest challenges is finding a viable way for pastoral communities to maintain essential aspects of their traditional lifestyle while improving their ability to provide for themselves in the modern context.

Nonostante le difficoltà i pastori nomadi hanno un elevatissimo grado di “umanità”, tolleranza ed apertura. Hanno un legame profondo ed un religioso rispetto per la loro terra e per tutti gli esseri che la popolano.

Gli animali selvatici non sono mai visti come dei competitori ma come parte integrante dell’ambiente: le marmotte, gli avvoltoi, i cervi ed anche i lupi sono rispettati ed ammirati. Purtroppo altri hanno pensato a decimare le mandrie di ungulati selvatici rendendo onerosa la convivenza con i predatori che sono costretti a predare le mandrie e le greggi.

Fino a quando le mandrie potevano spaziare su immense distese si era in una situazione di perfetta integrazione tra ambiente ed attività pastorale.

Tuttavia, gli sviluppi recenti hanno causato delle forti pressioni che sfidano la continuazione di questo stile di vita tradizionale. In nessun altro luogo queste pressioni sono forti come nella regione di Golok, a causa della sua vicinanza con la sorgente del Fiume Giallo. Le preoccupazioni riguardo l’eccesso di pascolamento e la degradazione ecologica in altre parti della Cina hanno portato a delle restrizioni nelle dimensioni dei greggi, alle recinzioni obbligatorie dei pascoli aperti e alle rilocazioni delle comunità nomadiche. Oltre a ciò, le pressioni della modernizzazione spesso svalutano le credenze e i gli stili di vita tradizionali. Forse una delle sfide maggiori per le comunità pastorali è quella di trovare un modo per mantenere degli aspetti essenziali del loro stile di vita tradizionale, migliorando al contempo la loro capacità di mantenersi nel contesto della modernità.

E’ proprio a causa di questa necessità che il caseificio Snowland gioca un ruolo molto importante.

It is because of this great need that the Snowland Cheese Factory plays an important role.

One of the reasons for setting up the Snowland Cheese plant was to add value to the traditional practice of migrating to summer pastures. This is an age old ritual which is repeated each year and is the essence of nomadic life. The families, with their animals and everything they need to survive, travel dozens of kilometers over treacherous terrain punctuated by river crossings and cliffs to reach their summer pastures.

The herd will only remain for one and a half to three months at this low altitude by their very survival depends upon this short time. The pastures revive and feed the animals, enabling them to produce milk and accumulate fat reserves for the long winter.

This is a magical world, abounding in values, culture and ageold traditions, but situated in a country with staggering rates of growth and change.

It might be unfair and selfish to wish it could remain isolated from progress, but it would be disastrous to lose such an enormous cultural heritage.

It is a cultural heritage which is not only composed of scholarly texts and culture but finds living expression in daily rituals. One hopes that the search for a fair balance between “progress� and tradition is not a utopian quest and that the culture need not inevitably slide away and disappear into memory.

La permanenza in quota va da 1,5 a tre mesi per gli alpeggi più bassi ma in questi pochi mesi si gioca tutta la loro sopravvivenza: la prateria rivive e fornisce alle mandrie alimento prezioso in grado di far produrre latte alle dri e di accumulare riserve nutritive per affrontare il lungo inverno.

E’ questo un mondo magico ricco di valori, di cultura, di tradizioni millenarie che è collocato in un paese con dei ritmi di crescita e cambiamento vertiginosi.

Forse sarebbe ingiusto ed egoista volere che resti fuori dal progresso, ma allo stesso tempo sarebbe disastroso perdere un così vasto patrimonio culturale.

Patrimonio culturale che è fatto non solo di testi e cultura “dotta” ma di vita vissuta nei suoi riti quotidiani. La speranza è che la ricerca del giusto equilibrio tra “progresso” e tradizioni non sia un’utopia che debba necessariamente e lentamente perdersi nei ricordi e soccombere .

Mountains, grasslands, animals and people have always been the elements constituting traditional nomadic life and yak herding in Golok prefecture. Nature, culture and products interact to create a micro-environment of enormous social and cultural importance.

Tibetan nomadic peoples obtain their main source of sustenance through the use, but not exploitation, of high-altitude pastures by yaks. Yaks are used for all the products they can provide, particularly meat and milk. Producing and safeguarding transformed milk products is therefore of vital importance in supporting the activities of Tibetan nomads.

According to local nomads, the area supplying the Snowland Cheese Factory still retains the characteristics it had decades ago.

The pastures where animals graze at altitudes over 14,000 feet nurture a range and variety of plants and flowers equal to any in the world. The richness of these pastures is a decisive factor in producing milk with unique qualitative, sensory and technical qualities.

Milking is traditionally carried out twice a day, exclusively by hand, using wooden or metal buckets for collection. The calf is first brought to its mother so it will begin to suckle—this helps milk to be more readily released—and is then removed so the dri (female yak) can then be milked. The calf is finally returned to the mother so it can finish the milk remaining in the udder. Modern understanding of animal husbandry methods confirm that this traditional practice of sharing the milk and letting the calf suck the residual milk from the udder is the most effective for keeping the udder healthy, strong and protected from infection and disease during milking, thus also contributing to the hygiene of the milk.

Montagna, pascoli, ambiente, animali, uomini: questi da sempre sono gli elementi che compongono le millenarie attività della vita nomadica e dell’allevamento degli yak nella Prefettura di Golok e non solo. Natura, cultura e prodotti si integrano nella costituzione di un micro-ambiente di enorme importanza sociale e culturale.

L’utilizzo (e non lo sfruttamento) dei pascoli di altura è alla base della principale fonte di sostentamento delle popolazioni nomadi tibetane: lo yak. Lo yak è utilizzato per tutti i prodotti che è in grado di fornire all’uomo, in particolare la carne ed il latte. La produzione e la salvaguardia dei prodotti di trasformazione del latte è quindi di grande importanza per la salvaguardia di tutte le attività dei nomadi tibetani.

Il territorio su cui insiste il Caseificio Snowland presenta ancora, secondo le testimonianze dei nomadi locali, le caratteristiche che possedeva decine di anni fa. I pascoli che forniscono nutrimento alle mandrie, situati ad altitudini di 4.000 m s.l.m. ed oltre, sono caratterizzati da una biodiversità in specie vegetali ed essenze floreali fra le più ampie e variegate del pianeta. La ricchezza dei questi prati contribuisce in maniera determinante a produrre un latte dalle caratteristiche qualitative, organolettiche e tecnologiche, uniche al mondo.

La tradizione vuole che la mungitura venga eseguita esclusivamente a mano, due volte al giorno, utilizzando come recipienti per la raccolta secchi di legno o metallo. Freshly collected milk is traditionally drunk in tea, or left to ferment in a warm place for a few days to obtain a fermented milk similar to yogurt, or skimmed to produce butter (the famous yak butter, kept for many months inside a sheepskin and used for cooking or burned as candles inside temples). The skimmed milk is then used to produce a cheese called chura. It is not put in a mold but crumbled and left to dry in the sun for several days, resulting in hard granules of various sizes; chura is used to prepare tsampa, a high energy food mainly eaten for breakfast, which consists of milk tea, barley flour, butter, sugar (sometimes) and chura.

The Snowland Cheese Factory has been set up to produce cheeses which can be transported without needing to be conserved at low temperatures: i.e. semi-hard or hard cheeses with medium to long aging. The characteristics of the cheeses, however, must still faithfully reflect the quality of the milk produced in these valleys.

The nomads grazing their animals in local valleys can bring their milk to the cheese factory. Each nomad is responsible for transport and, twice a day after each milking, will travel by horse or motorcycle along dirt roads and mule tracks to the factory.

A laboratory area has been set up in the cheese factory—inevitably somewhat basic but perfectly functional—to carry out the tests needed to check the freshness of the milk brought by each nomad (it also performs analytical tests for the processing operations). Each individual milk delivery is rigorously tested and if it doesn’t satisfy freshness and hygiene requirements, it is not accepted.

Di consuetudine il latte munto viene utilizzato come bevanda mescolato al te’, oppure viene lasciato fermentare per alcuni giorni in luogo caldo ottenendo un latte fermentato simile allo yogurt, o ancora è scremato per produrre il burro (il famoso burro di yak, conservato per lunghi mesi all’interno delle pelli di pecora ed utilizzato in cucina, oppure bruciato nei lumini sacri all’interno dei templi). Con il latte scremato si produce una specie di formaggio, la ciura, che non viene messo in forma bensì sbriciolato e lasciato ad asciugare al sole per diversi giorni, dando origine a granuli di diverse dimensioni particolarmente duri; la ciura viene usata nella preparazione della tzampa, un piatto particolarmente energetico, consumato prevalentemente a colazione, a base di te’ al latte, farina di orzo, burro, zucchero (a volte) ed appunto ciura.

Il Caseificio Snowland è nato con l’obiettivo di produrre formaggi che potessero essere trasportati senza bisogno delle temperature basse del trasporto refrigerato, quindi formaggi a pasta semi-dura o dura a media o lunga stagionatura. Contemporaneamente, però, i formaggi prodotti devono portare con le loro caratteristiche fedele testimonianza delle qualità del latte prodotto in queste valli.

for processing. All the operations are carried out manually by specially trained Tibetan men and women. The milk is heated on a direct fire (fuelled in traditional fashion by dried yak dung), the curds processed by hand, acidification carefully monitored, and the cheese paste extracted manually and placed in metal molds to drain and mature. When they are ready, the forms are salted in brine and then taken to the maturing room, where they are turned, washed with water and salt, scraped, checked and monitored to ensure that the slow and delicate aging process proceeds as required.

This summary shows how the mountains, grasslands, animals and people live and work together. What they create in this Tibetan valley is not only a food chain but a sociocultural micro-environment, where milk—one of the symbols of life—is a major component, along with its main product, cheese.

Nel caseificio è stato allestito un locale-laboratorio, necessariamente un po’ rudimentale ma perfettamente funzionale, che consente di effettuare tutte le prove necessarie per verificare la freschezza del latte consegnato da ogni nomade (oltre a diverse analisi per impostare e monitorare le operazioni di trasformazione).

Ogni singola consegna di latte viene quindi rigorosamente testata e, nel caso in cui non soddisfi i requisiti di freschezza e salubrità, non viene accettata.

La massa di latte raccolta dopo ogni mungitura viene scremata parzialmente (la panna ottenuta viene utilizzata per la produzione di burro tradizionale) ed immediatamente inviata alla lavorazione.

Tutte le operazioni vengono svolte manualmente, da donne e uomini tibetani appositamente formati. Il latte viene riscaldato a fuoco diretto (fuoco ottenuto, come da tradizione, da sterco di yak essiccato), la cagliata lavorata a mano, l’acidificazione della cagliata monitorata con precisione, la pasta del formaggio estratta manualmente e messa in forme di metallo a spurgare e maturare. Una volta pronte le forme vengono inviate alla salatura in salamoia, per poi passare al locale di stagionatura dove vengono rivoltate, lavate con acqua e sale, raschiate, controllate e monitorate per assicurarsi che la lenta e delicata maturazione della pasta avvenga secondo i tempi ed i modi voluti ed esatti.

Questi sono, sinteticamente, i modi in cui la montagna, i pascoli, l’ambiente, gli animali e l’uomo vivono e lavorano insieme, creando in questa vallata tibetana non solo una filiera agro-alimentare, ma soprattutto un micro-ambiente naturale e socio-culturale che vede tra le sue espressioni più tangibili il latte, uno dei simboli della vita, insieme al suo prodotto principe, il formaggio.

Il lavoro delle famiglie nomadi sui pascoli e del personale del caseificio porta alla nascita di alcuni prodotti diversi, la cui punta di diamante è senza dubbio il Tibetan Semi Hard Cheese, formaggio PresÏdio Slowfood.

The work of nomad families on mountain pastures and staff at the cheese factory has led to the creation of various products, chief of them undoubtedly being Tibetan Semi Hard Cheese, a Slow Food Presidium product.

Il Tibetan Semi Hard Cheese è, come dice il nome, un formaggio a pasta semi dura, che diventa dura e tende a formare una leggera grana col prolungarsi della stagionatura.

As its name indicates, Tibetan Semi Hard Cheese is a semi-hard cheese which becomes hard and tends to granularity with increasing aging.

Il latte di partenza viene parzialmente scremato portando il contenuto di grasso al 3,3-3,5%, in quanto un contenuto in materia grassa più elevato influenzerebbe negativamente le caratteristiche del formaggio stagionato. La cagliata ottenuta dalla coagulazione del latte viene sottoposta a semi-cottura per esaltarne l’asciugatura, dopodichè viene estratta e messa in forma. I formaggi nelle forme vengono pressati per asciugarne ulteriormente e compattarne la pasta, poi vengono salati in salamoia e passati nel locale di stagionatura. Su ogni singola forma viene impresso il numero del lotto di produzione, in modo che in qualsiasi momento si possa risalire al giorno ed al momento della giornata in cui un determinato formaggio è stato prodotto. Il lungo e delicato periodo della stagionatura prevede continui rivoltamenti, lavaggi delle croste con soluzioni di acqua e sale, controllo scrupoloso dell’evoluzione di ogni forma.

Ma è soprattutto il tempo, unito all’adeguata circolazione naturale di aria alle corrette condizioni di temperatura ed umidità, che con il suo lavoro lento e costante riesce a condurre questi formaggi alla giusta fisionomia, all’adeguata maturazione di struttura, gusti ed aromi. In una parola: ad esprimere la loro personalità.

The starting milk is partially skimmed, bringing the fat content to 3.3-3.5%, since a higher fat content would adversely affect the characteristics of the aged cheese. The curds obtained after the milk has coagulated are semi-cooked in order to enhance drying, before being extracted and placed in molds. The cheeses are then pressed to dry them further and make the paste more compact.

They are then salted in brine and taken to the maturing room. A batch number is stamped on each form to ensure that at any time it is possible to trace the day and time when a particular cheese was produced. The long and delicate aging process involves continuous turning of the cheese, washing of the rind with brine and water, and careful control of the aging of each form. The slow and continuous effect of time, together with adequate natural air circulation, correct temperature and humidity brings this cheese to its proper texture, flavor and aroma in a true expression of its personality.

Tibetan Semi-hard Cheese requires slow aging and only begins to express its character after six months of aging but it continues to evolve, showing optimum quality after 12 months or even longer.

Al taglio la pasta è di colore paglierino scuro o giallo, a seconda della qualità delle essenze foraggiere brucate degli animali (sono infatti i carotenoidi, sostanze pigmentanti contenute in quantità diverse in ciascuna specie botanica, a conferire al latte, e di conseguenza al formaggio, un colore giallo più o meno intenso). La struttura è compatta e consistente, con un’occhiatura minuta ed uniformemente distribuita, tipicamente granulosa per i formaggi con più di dodici mesi di stagionatura (formaggi questi che si prestano molto bene anche ad essere grattugiati).

Il gusto e l’aroma sono intensi e decisi, sapidi ma mai piccanti, con una preponderanza di sentori di latte (di dri!), di burro ed erbaceo nei formaggi più freschi, sentori via via sostituiti dagli aromi evoluti derivanti dalla stagionatura prolungata. Il complesso aroma del formaggio stagionato è infatti il risultato dell’equilibrio da un lato fra le numerose e variegate componenti aromatiche derivanti dalle modificazioni delle peculiari molecole proteiche e grasse del latte di dri, dall’altro quelle provenienti direttamente dalle erbe scelte e brucate dagli animali al pascolo. Queste componenti (alcoli, esteri, aldeidi, ecc.) si affinano e si armonizzano grazie alle caratteristiche particolari dell’aria a 4.000 metri d’altitudine, dando origine a nuove e più complesse sensazioni, che richiamano in particolar modo le erbe aromatiche essiccate (in alcune forme è percepibile un netto sentore di artemisia) e la frutta secca (noce e nocciola tostata soprattutto).

cheese, more or less intensely yellow). It has a uniform, dense texture with minute uniformly-distributed eyes, and has the granular consistency typical of cheeses aged for more than 12 months (these cheeses are also very good for grating).

The flavor and aroma are intense and clean, full-bodied but never spicy, with a preponderance of milky notes (of dri!), butter and grasses in the fresher cheeses, which are gradually replaced by more developed aromas with longer aging. The complex aroma of the aged cheese is the result of many varied aromatic components from the breakdown of specific protein and fat molecules in dri milk combined with compounds in the pasture grasses which have been directly ingested by the animals. These components (alcohols, esters, aldehydes, etc.) are refined and balanced through the characteristics of the high altitude air at 13,000 feet. New and more complex sensations are created, recalling dried aromatic herbs (some cheeses exhibit distinct notes of artemisia) and dried fruit (in particular toasted walnuts and hazelnuts).

A range of both semi-aged and fresh cheeses have been produced in an attempt to satisfy local consumer tastes and also to differentiate the products offered.

Mozzarella type cheeses have been well received (their flavor resembles buffalo mozzarella), as have the soft cheese (a small sized soft cheese made from whole milk, aged for about three weeks and flavored with wild herbs from the area), a primo sale (fresh soft cheese made from whole milk), a Caciocavallo type cheese smoked using the wood from local bushes, fresh ricotta, and a toma type of cheese (uncooked, soft or semi-hard, using partially skimmed milk and aged for about two months).

Per differenziare la produzione, ma soprattutto per tentare di soddisfare i gusti dei consumatori locali, sono stati anche prodotti diversi altri formaggi sia semi stagionati che freschi.

In particolare buona soddisfazione hanno dato le produzioni di formaggio tipo mozzarella (dalle caratteristiche gustative che richiamano la mozzarella di bufala), di soft cheese (formaggio di piccole dimensioni, a latte intero e a pasta molle, stagionato circa tre settimane, che è stato anche aromatizzato con erbe spontanee della zona), di primo sale (formaggio fresco a pasta molle da latte intero), di formaggio tipo caciocavallo affumicato con legna di arbusti della zona, di ricotta fresca, di formaggio tipo toma (a pasta cruda, molle o semi-dura, da latte parzialmente scremato, stagionato circa due mesi).

ANIMAL HEALTH and product quality SANITA’ DELLE MANDRIE e qualità del prodotto by/di Andrea Dominici, Silvia Dalmasso and/e Umberto Vesco

If you want a wholesome and high-quality dairy or cheese product, healthy animals are essential. A fact-finding study was started in summer 2005 to determine the state of health of animal herds and the extent of veterinary services in various parts of the Tibetan plateau, including the area of interest. It was immediately evident that more widespread veterinary services were needed, particularly in poorer areas.

A course was therefore organized to run from 2006 to train veterinary technicians in managing the health of herds and applying epidemiology to food safety. The students were children of nomads who had previously had basic training in traditional medicine. One of them is also a cheesemaker at the Snowland Cheese Factory and now supervises at close hand the hygienic and health aspects of the cheese production. In a situation where herds are raised in a semi-wild state and unaccustomed to any type of intervention, it is not easy to carry out control programs.

In 2005, experts vaccinated a herd of yaks and a flock of sheep, realizing at first hand how difficult it was to carry out this type of operation on a large scale. To resolve the problem an enclosed corral with a forced passage has been constructed near the cheese factory. Most of the herds moving towards summer pastures pass close by the cheese factory so it is in a strategic position. During summer 2007 the enclosure system was tested with excellent results.

In 2007, a collaborative project was set up between Trace Foundation, AVeC-Pvs and the Faculty of Veterinary Science at Turin University, and as part of this partnership, two of our experts carried out a study on the health of animal herds in July 2007. This work highlighted some important health issues adversely affecting product quality. Parasite diseases are a particular problem whose dramatic increase is probably due to the adoption of sedentary farming. Management initiatives have been formulated to deal with this based on rational rotation of pastures and pens; therapies based on locally available medicinal drugs were evaluated for treating acute cases. This information was passed on to the veterinary technician working as a cheesemaker at the factory. The work of the veterinarians also involves assessing the potential health risks for consumers of Snowland Cheese in order to ensure that processing methods result in completely safe cheeses that meet the highest hygiene and food safety standards.

In the future, we aim to work more closely with local veterinarians who use traditional Tibetan medicines so as to minimize the use of Western medicinal products.

Requisito indispensabile per la salubrità di un prodotto lattiero caseario è la sanità del bestiame. A partire dall’estate 2005 è stato condutto uno studio conoscitivo sullo stato sanitario delle mandrie e sull’assistenza veterinaria in varie aree dell’altopiano tibetano tra cui l’area di studio. Una necessità subito evidenziata è stata quella di disporre di una assistenza veterinaria capillare anche nelle aree più disagiate.

A questo proposito a partire dal 2006 è stato realizzato un corso di formazione per tecnici veterinari in gestione sanitaria delle mandrie ed epidemiologia applicata alla sicurezza alimentare. Gli studenti erano figli di nomadi che avevano precedentemente avuto una formazione di base in medicina tradizionale. Uno di loro è anche casaro presso il caseificio Snowland ed ora è colui che segue da vicino gli aspetti igienici e sanitari della produzione casearia. In un contesto in cui le mandrie sono allevate allo stato semibrado ogni tipo di controllo che implica un approccio con animali non abituati a nessun tipo di manipolazione non è di facile realizzazione.

Nel 2005 nostri esperti hanno vaccinato una mandria di yak ed un gregge di pecore rendendosi personalmente conto della difficoltà di realizzare questo tipo di operazioni su larga scala. Per risolvere il problema nei pressi del caseificio è stato realizzato un recinto di contenzione con un passaggio obbligato. Gran parte delle mandrie in transito verso i pascoli estivi passa vicino al caseificio che si trova quindi in una posizione strategica. Nel corso dell’estate 2007 il sistema di contenzione è stato collaudato con ottimi risultati.

Nel 2007 è nata una collaborazione tra Trace Foundation, AVeC-Pvs e la Facoltà di Medicina Veterinaria dell’Università di Torino. Nell’ambito dalle partenariato nel luglio 2007 due nostri esperti hanno condotto uno studio sulla sanità delle mandrie. Nel corso del lavoro sono state individuate alcune importanti problematiche di tipo sanitario che causano perdite alle produzioni. In particolare sussistono problemi di parassitosi che verosimilmente sono esplosi con la sedentarizzazione dell’allevamento. Per il loro contenimento sono state formulate delle indicazioni gestionali che si basano su una razionale rotazione dei pascoli e degli stazzi e per il trattamento dei casi acuti sono state valutate delle terapie basate sulla farmacopea disponibile localmente. Tali indicazioni sono state fornite al tecnico veterinario che lavora come casaro presso il caseificio. Il lavoro dei veterinari è stato anche improntato a valutare i potenziali rischi sanitari per il consumatore del formaggio di Snowland per realizzare una lavorazione che consenta di produrre un formaggio pienamente sicuro e rispondente ai migliori standard igienico-sanitari.

E’ nostro obiettivo per il futuro lavorare con maggiore sinergia con i veterinari locali che usano le medicina tradizionale tibetana in modo da tendere a ridurre al minimo l’utilizzazione di farmaci della medicina occidentale.

I have been involved in this project since 2003 when I took over from my colleague Ethan Goldings. I have watched the project grow to international fame while remaining deeply rooted in the unique traditions, culture and environment of the Qinghai-Tibetan Plateau.

Over the years, we have collaborated with a variety of experts—from cheese makers to veterinarians—coming form different corners of the globe. It has been truly an amazing experience to work with these people and to bring some of them all the way to the small cheese factory high up on the Tibetan grasslands. I still recall the day I traveled from Lhasa, where I was based at the time, to Bra’—the home town of the Slow Food Movement—with a piece of the Tibetan cheese that was being produced at the time. A friend, Romeo Orlandi, who had collaborated with Slow Food while working as Director at the Italian Trade Commission office in Beijing, introduced me to the Slow Food team. I met Piero Sardo, Serena Milano and Anya Fernald. I told them that I had a good story, a cheese with great potential and a committed group of people that believed in what they were doing but needed their help in achieving good quality. I told them I would not leave until I received a positive answer. After listening for a long time, they embraced the idea; and it took only few days to decide on the beginning of our collaboration that continues today. As you read the story in the following pages, with its difficulties and its successes, it is our hope that you not only enjoy the story, but that you will learn more about Tibet, the land and its people; and, of course, you will feel the urge to go out wherever you are and buy a piece of this unique product, add it in the menu of your restaurant or have it in your shop, if that’s your trade!

I want to thank the entire team of Slow Food Foundation for Biodiversity who believed in us and created an International presidio from our cheese even though it did not fit all of their criteria. Federica Tomatis worked very hard to ensure that we could participate at each of their events and spent months in organizing each phase of the project with me. Without her the Presidium would not have made it to Italy.

The array of cheese experts: from Tashi Kumar Lama, who spent long periods of time over the years training the local cheese makers, learned to speak Tibetan to make sure he could pass on his knowledge and really became part of the family, to Hernst Holenstein, the first European expert who taught them the different qualities of the alpine cheese. Andrea Adami who, despite the short period of time spent at the factory, became a brother to the young cheesemakers; and to date, is the first one to turn up each time we need to set up our booth at the events in Italy. Roberto Colombero the cheese expert who taught them how to make a kind of Piedmont Toma, more suitable for the Asian market.

Massimo Mercandino and Massimo Nurisso took upon themselves the hard task of turning the entire production around, trained the local cheese makers in almost every aspect of the cheese production from testing the milk on arrival to how to recognize defects and problems during the aging period. Massimo Nurisso, who spent the longest time living with the nomads, has been an excellent teacher that almost never lost his patience, not even in the middle of the cold nights after hours spent waiting for the acidity to reach

Massimo Nurisso è colui che ha trascorso più tempo fianco fianco ai nomadi. E’ stato un maestro eccelso che quasi mai ha perso la pazienza, neppure durante le lunghe notti fredde trascorse ad aspettare che l’acidificazione raggiungesse il livello corretto. E’ soprattutto grazie a lui se i casari locali hanno acquisito le conoscenze che oggi permettono loro di produrre il formaggio senza aiuti di esperti

the correct level. It is mainly thanks to him if the local cheesemakers have acquired the skills that enable them to produce the cheese today without external help. Both Massimos took care of the group when we traveled to Italy, stayed with their family and organized very interesting visits to different cheese factories in Piedmont and Valle D’Aosta. Thanks to Massimo Mercandino, we met President Adriana Vierin who became a great supporter and convinced the regional government to become a co-sponsor of the project.

And then the veterinarian came. Andrea Dominici traveled with me to remote nomadic families’ tents to interview the nomads about their life, their needs, and their animals. He went on to assist Trace with other veterinarian interventions and put together a training manual for nomads and para-veterinarians with the help of Cristiano Longo. Andrea returned to Tibet a few times to check on progress, assisted with building a corral, and trained the nomads in herds management and animal health. His knowledge combined with his positive attitude made him a perfect match for this venture. This year, he brought with him two colleagues, Silvia Dalmasso and Umberto Vesco, who spent one entire summer collecting and analyzing specimens for the epidemiological study. Thanks also to Luca Nicolandi from AVeC-pvs for his support.

Master Cheesemonger Daphne Zepos from the US volunteered her time and energy to help the project with her insightful knowledge of the US market. She even made a trip to Golok with her husband to see if she could find other ways to help.

Lois Conner, a leading photographer from New York, and a friend who traveled extensively in Tibetan areas over the last twenty years, traveled to Golok with me one summer and took wonderful shots of the landscape and the cheese production that were exhibited during the Yak Cheese Week in New York in May 2006.

Andrea Cavazzuti, an Italian videographer based in China shot a short documentary on location amongst so many difficulties that I think he will remember his journey for a long time.

My colleagues at Trace that listen to all the stories from the grassland year in and year out, but nonetheless shared my workload and also made sure that we could carry on with one of the most complicated projects I have ever experienced.

To Andrea Soros Colombel and Enrico Dell’Angelo, the President and Executive Director at Trace, for convincing (volunteering actually) me to take this on and for believing each time I said “just another trip and we will overcome all the challenges”.

Last but not least, Jigme Gyaltsen and the cheese makers. In Jigme Gyaltsen I found a dedicated and knowledgeable working partner, a person for whom I have the greatest respect despite our sometimes different point of view, and a great traveling companion. Our events in Italy would not have been the same without his energy and humor. A special thank to Xiamba, the Head of Production for his commitment and hard work and for never giving up. In each of the 12 cheesemakers, I found passion, pride, and with some of them, a long lasting friendship. Each trip to the cheese factory is like visiting a second home.

To each one of these people I extend my appreciation, and my heartfelt thanks for making Trace’s journey an incredible one.

Sia Mercandino che Nurisso si sono presi cura del gruppo quando siamo stati in Italia, siamo stati ospiti delle loro famiglie e ci hanno organizzato una serie di visite a realtà italiane di caseificazione in Piemonte e Valle D’Aosta. E’ grazie a Mercandino che abbiamo conosciuto il presidente Adriana Vierin, poi sostenitrice del progetto e colei che ha convinto la Regione Valle D’Aosta a co-finanziarne una parte.

E poi è arrivato il veterinario. Andrea Dominici ha viaggiato con me a visitare remote tende di famiglie nomadi per intervistarli sulla propria vita, le loro necessità e le loro mandrie.

Andrea ha proseguito assistendo la Trace con altri interventi veterinari e ha compilato un manuale di formazione per nomadi e para-veterinari con l’aiuto del collega Cristiano Longo. Andrea è tornato più volte in Tibet per monitorare i progressi del progetto, ha partecipato alla costruzione di un recinto per la vaccinazione e formato i nomadi nella gestione delle mandrie e della sanità animale. Dalla sua conoscenza, unitamente al suo atteggiamento positivo, è scaturita una combinazione perfetta per quest’impresa. Quest’anno ha portato con sè due colleghi, Silvia Dalmasso e Umberto Vesco, che hanno trascorso un’intera estate raccogliendo ed analizzando campioni per uno studio epidemiologico. Grazie anche a Luca Nicolandi dell’ AVeC-pvs per il suo sostegno.

Daphne Zepos, la “mastra formaggiara” per eccellenza, ha offerto il proprio tempo e energia per aiutare il progetto con la sua profonda conoscenza del mercato americano. Ha fatto addirittura un viaggio a Golok con il marito per esplorare altri modi di aiutarci.

Lois Conner, una nota fotografa di New York e un’amica, ha viaggiato per più di vent’anni nelle zone tibetane ed è venuta con me a Golok un’estate. Le sue bellissime foto del paesaggio e della produzione di formaggio sono state esposte durante l’evento “La settimana del formaggio di Yak” svoltasi a New York nel maggio 2006.

Andrea Cavazzuti, documentarista italiano che vive in Cina ha girato un documentario nella zona del caseificio fra così tante difficoltà che credo ricorderà la sua avventura per lungo tempo.

I miei colleghi alla Trace Foundation hanno sopportato, loro malgrado, anno dopo anno le mie storie della prateria, ma hanno anche sempre condiviso il mio lavoro e hanno fatto sì che potessi continuare ad occuparmi del progetto più complicato nel quale sia mai stata coinvolta.

Ad Andrea Soros Colombel e Enrico Dell’Angelo, rispettivamente Presidente e Direttore Esecutivo della Trace Foundation per avermi convinta (a dire il vero per avermi ‘arruolata’) ad accettare questo progetto e per continuare a credermi ogni volta che dico “ancora un viaggio e supereremo tutte le difficoltà”.

Alla fine, ma non di minore importanza, Jigme Gyaltsen ed i casari tibetani. In Jigme Gyaltsen ho trovato un partner lavorativo estremamente preparato e assolutamente dedito, una persona per la quale ho il più grande rispetto nonostante i diversi punti di vista che a volte abbiamo, ed un grande compagno di viaggi. I nostri eventi in Italia non sarebbero stati gli stessi senza la sua energia e il suo buon umore.

Un grazie speciale a Xiamba, il capo produzione, per il suo impegno e per non aver mai gettato la spugna. In ognuno dei dodici casari ho trovato passione, orgoglio e con alcuni di loro si è formata un’amicizia che durerà per sempre. Ogni viaggio al caseificio è come tornare in una seconda casa.

Ad ognuno di queste persone esprimo la mia stima e la mia gratitudine per aver reso incredibile l’avventura della Trace Foundation.
