HOSPITALITY & ENTERTAINMENT BACKGROUND// JOSH: Teaming up with the well established Bento Group, I’m currently Operations Manager and Assistant Creator to the menu for Kasa Tapas and Raw Bar located in Downtown Orlando on the corner of Orange Ave and Church Street. I started out been a frontman/songwriter for numerous bands including the band BMT that achieved a record deal with Maverick Records. Currently I’m in the Orlando based modern alt rock band Fell On Deaf Ears that I cofounded with London native Diamond Duggal. I’m a Culinary graduate who studied many styles of cuisines, yet focused on sushi for the last 9 years. In 2012 became a Celebrity Chef by competing on the Food Network’s #1 show Food Network Star Season 8. YOU HAVE A WEALTH OF INDUSTRY EXPERIENCE BUT WHAT INFLUENCED THIS VENTURE// JOSH: Well, number one, coming in with an amazingly talented chef Shawn Kaplan as my biz partner and teaming up with David and Tammy from the Bento Group has almost been a match made in heaven. We both come from a ground roots belief. Work hard, think outside of the box, take care of your own. We don’t always have to see eye to eye, but if the final stretch is for the same trophy and for the best of the brand, that’s all that matters. It’s so similiar to being in a band. Several opinions and passionate view points that put aside their egos to make a ground breaking vision like Kasa a success. HOW DOES A COMPANY LIKE BENTO GROUP HELP IN THE DEVELOPMENT OF NEW CONCEPTS// JOSH: The Bento Group is young spirited, incredibly driven, brilliant minds that have no ego. It is rare to find a group of people that despite all their success are still open for suggestion, critique and ideas. They are open to it because they want to do what is best for the vision, not for what is best for their own personal gratification. We have been blessed to have this experience to open in such a supreme location such as the corner of Church and Orange Ave. Curved glass encompases the entire front of the restaurant with a clean palate of fine wood, marble and steel. A clear shot from the street to that amazingly organic raw bar and open kitchen. Such a welcoming vibe not only visually but from the gifted staff that we have on hand. I don’t believe we are lucky to have them. I believe we attracted the right people to help nurture growth of our vision. HOW DO YOU SCOPE OUT NEW CONCEPTS TO STAY CREATIVE FOR THE ORLANDO SCENE// JOSH: It’s definitely been an evolution. It starts in our crazy heads and then seaps into the pages of research. Diving deep into recipe books from around the world, combined with my travels from all over the globe. I was just in Papau New Guinea and the Antarctic this past January. Visiting Israel and Africa, Europe and Asia, we take personal loves and passions from those cultures. Especially the wonderous flavours, spices and traditions, to then transpire down to the dishes you can find here in your backyard without needing a passport. Let us be your tour guides. THOUGHTS ON DOWNTOWN’S EXPLOSION// JOSH: I would say the Downtown dining scene has come a long way but still has far to go. Major movement to the growth and progression of the Downtown scene has been attributed to several things such as having a pro basketball team with a new arena. Also the restaurant groups that have opened several new and stylish bars, lounges and dining establishments. The facelift that Church Street, surrounding Lake Eola real estate and high rises and the immense growth of UCF attracts younger, more driven professionals to this area that demand more quality hang outs.

Time offers a definitive landmark to reminisce and reflect on memorable moments in life and culture. With the Orange Avenue Sessions, we’re excited to be discussing the musical heritage of the Orlando scene, along with presenting live performances celebrating landmark dates for the artists. Big10-4 made an immediate splash on the UCF scene about a decade ago, packing bars like Janey Mack’s, Devaneys Too and others, while frontman Dan Verduin performed at open mics and cover nights. A handful of tracks, presented in EP fashion, caught on in the dorms, bars and frat houses, helping the band to boast a passionate following, that soon ventured downtown to The Social, out to the House of Blues, Spring Breaks on the coast and wherever they jumped on stage. We’re rewinding time with brothers in sound, Dan and Matt Verduin, and bringing it to the present with the first Orange Avenue Sessions showcase with BIG10-4 celebrating a decade of making noise on Sat, Nov 16th at The Social.We sat with Dan over a beer this past month and did some reflecting. Before bands were Facebooking, Instagramming and Youtubing their tunes and marketing their shows, you guys had already established a following that boasted lines down the block at The Social. It doesn’t happen that often on the local level, what were some of the avenues you attacked to gain a loyal audience? It started with an acoustic guitar and a side of a bed. It escalated from open mic nights, to college bars, to downtown clubs, to opening acts. We rehearsed long hours and found dedicated bandmates. What we did best was believe that it was right, that the lyrics had a message. Our live show was all we had, so we set up in places that were not known for it. We pushed boundaries, stayed up later, talked longer, drank deeper, shook more hands, remembered names, and prayed they remembered ours. We went to other cities, slept on couches, shared feelings, jammed out, and argued passionately. We created a team that believed in each other and our songs became a soundtrack. Your EP fell into the hands of reps at Universal Republic, Atlantic, Capitol among others, and the showcase at FMF at Backbooth for a full house of industry landed you on Universal, making a record with Matt Wallace(Maroon 5) in LA and then touring nationally. What were some of the wake up calls of the major label experience, for artists going down that road now? It’s been a great ride and we feel privileged to see and to do what we’ve done, from LA to NY to FL. When it comes to the business side of music, you should never feel comfortable or be able to say you made it, because it is business after all. unless it’s obvious. The wake up call was selling out the Social, where I had seen so many of my favorite bands play before us. Sharing that moment with our friends and fans that have worked to hard spreading the word, was amazing. Having one of my favorite artists call me to talk about recording was also a great moment. You guys were supporters of Matchbox Twenty(Tabitha’s Secret), My Friend Steve, 7Mary3 among others early on. What was that vibe like a decade ago when local acts were on the charts and paving the way? We always tried to follow in their footsteps of the great Orlando acts. Whether it was the social, HOB, FMF, or Earthday Birthday, we set our goals as the same. If they were on a radio station, we wanted that stations attention. If they were in the the building, we were trying to hand them our songs. We were in their front rows, we knew who they recorded with, and we asked them to our show. With the internet and mobility transcending the local word of mouth concept, as a spectator and participant, how do you view ‘the scene’ and the younger artists, do they seem to have the coherence and same community? It’s all relative. The scene is what they make it and the scene was was we made it. We had fun, worked with great friends and artists, and will continue to the same.

You guys are playing the 10 year celebration at The Social, what were some of the more memorable moments on stage? This a great town for venues. From playing on stage at the HOB with 7mary3, to opening up at my alma mater with Something Corporate at the UCF arena, to FMF with Better than Ezra, we’ve checked a crap load off our list! Best place to preparty for a Big10-4? Devaney’s Too, Cleos, Finn Henrys,Wall Street! Best place to postparty? A place of off of Crab Apple in Tallahasee, or that Frat House in Gainesville. How would you assess your decade of music? It’s been a great ride. I’ve partied, celebrated, and played in cities with my brother and the best of friends. Slept in Walmart parking lots, truck stops, and front yards. We’ve played for national acts, two people, and our talented friends, and always gave everything we had. It’s always been about the words and the people who believe in them. We have made amazing friends on this journey and look forward to seeing them all soon. Axis (Rick and Sean) have always been great to us, so thank you!

With the University of Central Florida (Golden) Knights currently at the front of the pack of the American Athletic Conference, a lot of us UCF fans are doing what we’ve always done better than any other fans in college football – we’re getting way ahead of ourselves. In fact, my imaginary aXis email inbox was flooded with questions this week regarding which bowl games the Knights could eventually play in depending on how the rest of this season pans out, so I thought that I’d take this moment to break down the AAC-affiliated bowls and offer my prediction on where we end up. Whatever you do, don’t go making any travel plans based on what I’ve written right here, only because I don’t want all of the good hotels near the strip clubs getting booked before I can sell my neighbor’s Blu Ray player for travel money. But here are the bowls that we’re looking at with my hopes, dreams, prayers and casual hatred included.

Sugar Bowl (New Orleans)

I’m not a religious sports fan, but if there are sports gods up there pulling the strings for our favorite teams to reward and punish us accordingly, please f*cking let us win out and get a bid to the Sugar Bowl this year. We deserve it for all that we’ve been through, and while I know that we’d be unbearable and so amazingly, undeservedly arrogant if this happened, I really just want a reason to go to New Orleans and act like I’m 23 again. If you want to make sure it’s balanced, make us play FSU or Oregon so the Knights will probably end up looking worse than NIU last year. Just let me go to New Orleans, please and thank you.

Russell Athletic Bowl (Orlando)

Honestly, if UCF doesn’t win out, take the AAC and earn the at-large BCS bid, we could do a lot worse than having to stay in Orlando and enjoy a game at the Citrus Castle. In fact, I kind of miss those old days of playing at the Puke Palace and having to play my favorite game of “No Eye Contact” while I man the grill and ignore the homeless people that beg me for food. Look, smelly bros, if you wanted food so badly, you shouldn’t have spent your money on cigarettes and/or medicine. I know that sounds harsh, but tough love is the only thing that will save this city.

Belk Bowl (Charlotte)

Charlotte is a pretty nice city. I haven’t been there in close to a decade, but I always remember it fondly. What I don’t like about Charlotte, though, is getting there, as I also recall the drive from Orlando to Charlotte to be very boring and filled with many farts. Obviously, I’m not blaming that on the city itself, but I am blaming it on the cities that are on the way to Charlotte. If you had better food available along the way, I wouldn’t have to suffocate from my friends near-crapping their pants.

Pinstripe Bowl (Bronx)

If there’s a way that I could be transported into Yankee Stadium for this game and then immediately transported out of the stadium once it’s complete – preferably to see my friends at Rick’s Cabaret – I would be more than happy with this as a second or third bowl option. However, since that sort of scenario is physically impossible – my previous attempts at teleportation and time travel have come up short, thanks to the meth being too weak – I don’t think I’ll make it to this one.

BBVA Compass Bowl (Birmingham)

Have you ever been to Birmingham? If not, close your eyes and imagine the most boring place in the world with absolutely nothing to do other than step outside your motel room and play, “Guess the smell.” Now imagine that place is 100-times more boring than you’ve already imagined it, and you’ve got Birmingham nailed. The only way I’d go to Birmingham is if I was guaranteed a UCF win and Kate Upton served as my seat cushion.

Liberty Bowl (Memphis)

Never. Never again will I travel to Memphis. One time was all I ever needed, and that loss to Mississippi State had nothing to do with the actual trip experience. I’m sure everyone who went to see UCF beat Georgia in Memphis had a blast and would go again and again, but that city was not meant for me, no matter how much BBQ you throw at my fat ass.

Beef O’Brady’s Bowl (St. Petersburg)

Here’s the thing – if this is the bowl that UCF ends up playing in, it means that the Knights lost at least four of their remaining games. If that happens, I’m going to catch a ride with any of my friends who are going to the game and have them drop me off at Mons Venus so I can drown my sorrows in the parking lot before I go in and get 400 lap dances from Cinnamon and the gang.

Burnsy’s bet? BCS Bowl or bust, bitches.
