A Little About Us


Yoav Deckelbaum I was born in Montreal Canada to a Jewish Canadian father and a Moroccan Jewish mother. As a child we moved to Israel where I grew up on a small village in the mountains of Jerusalem. Both my parents where great cooks, each in their own style, but growing up next to my Moroccan grandmother defiantly gave me my biggest inspiration in the kitchen. After my army service I went back to Canada to study acting. I lived in Toronto for 7 years where I worked as an actor both in the theatre and on film. When I was 28 I decided to make a career change and I move back to Israel. I met my wife Ruth in Tel Aviv, and today we live an agricultural village on the coast of Israel. We have three beautiful children, a dog and a fish pond with gold fish in our garden.


How did It All Start At the age of 28 I decided I would like to make a career change and become a pastry chef/baker. I could not afford to go a pastry school since I was newly married and was expecting a new born son. I decided to go and work as a baker on the night shift in one of the leading bread artisan bakeries in Israel (Lehem Erez). That is where I learned hands on the art of baking and shaping breads. In the next 2 following years I worked in different restaurants and pastry kitchens. During these years my salaries where insufďŹ cient and so I had to get a second job. Luckily, I got a job as a chef in a leading catering company in Israel. The owner of the catering company was not happy with desserts he was buying and so he asked me if I can make better ones? I immediately said that I can, I rushed back home to prepared the dessert tasting. The following day he loved the desserts and asked me if he can start buying them from me? I told him that I would love to, but there is only one problem, I do not have a kitchen nor do I have equipment. He then told me that he will pay for all the kitchen equipment I would need, and that I would pay him back later on.


My first pastry kitchen was a 36 square meter wooden shed in the middle of a sweet potato field in my village. I also called it the "Lab", this is where I conducted all my experiments since I did not have enough training, a lot of my desserts where created by trial and error. I spent the next five years in the shed developing desserts and especially developing different ways to produce a lot of desserts in minimum time since I was working alone. As time passed and my customers expanded I could afford hiring an assistant. As my small business was growing I decided it was time to fly to France and get proper training. In 2006 I went to “Lenotre” high international end pastry school, which is considered one of the top pastry schools in the world. From that year on I still go every year to a different mentors/school around the world to learn more and hone my skills.


About Our Company Today


"Deckelbaum" is a family business run by my wife Ruth who is in charge of the back office and me who in in charge on the production. We build a new high standard pastry kitchen located in the industrial area of Emek Hefer where we also have a small shop. Our company produces premium high end desserts and chocolates to various customers in Israel and abroad. Some of our clients include; El Al airline company (first class), Hotel Bereshit, Hotel Yaarot Hakarmel, premium catering companies “Paul Assenhaim”, “Taam Vazeva”, “Braaf”, “Mazal Tale” and various restaurants. Our desserts are served on different occasions to the prime minister of Israel and in the banquet hall of the Israeli president. Some of our desserts are exported to Europe. Elfenbein-Café in berlin, the Aalsmeer flower auction in Holland. In 2014 we shipped desserts to Cyprus for a big fancy wedding. Yoav has been invited on several occasions abroad to produce desserts for lucrative events, weddings and parties. In 2012 we were commissioned to the “Inter-continental park lane” in London to make the dessert to a private event. In 2013 Yoav was invited to make the desserts for a wedding in Zurich, Switzerland. We work with the top wedding planners and event produces in Israel such as KBY (koby bar Yehuda), Sky productions and Dror Golan.

Our vision of the new London Branch


We would like to open an innovative, leading premium patisserie, using only the best of ingredients. We will also have a healthy range of products using organic ingredients, spelt our and whole wheat grains. We would like to provide services for the local business around our branch such as, cocktail parties, company meeting, corporate events, trade shows. Our shop will be open to the public and people will be able to buy our cakes, sweets, sandwiches, confectionary chocolates on the premises or could be delivered to their home via our internet site.
