We’ve focused on activities with children before, but you are now reading the first issue of Mini dedicated entirely to kid-friendly travel, hotel and restaurant recommendations. We were thrilled to visit the Four Seasons New York in February to find a multitude of children’s programs and amenities offered for Minis— petite bathrobes, Dylan’s Candy Bar cart, and in-house babysitting service. The Four Seasons New York wins the Mini award for Best Family-Friendly Locale as every detail was put in place to make certain young guests enjoy their stay and parents enjoy an easy, even relaxing travel experience. In the past few seasons, the Serena and Lily brand has introduced a number of new categories, including bath, outdoor, and fabric and paint. This spring, the design duo launch a collection of window panels, art, and KidShop— a catalog to showcase the patterns, colors, and signature style of children’s products that the brand is known for all in one place. We caught up with the founders of the brand to chat favorite pieces for the new season and the perfect products to update your home during your rounds of spring cleaning. ACCORDING TO LILY

MINI When Pamela Druckerman moved to Paris, she didn’t aspire to become a French parent. Parenting in the City of Light isn’t an aspect of the culture as renowned as say, French cheese or fashion. It has that certain je ne sais quoi that even French parents insist is nothing special. Yet when Druckerman began to raise her first child abroad (the former Wall Street Journal reporter was previously based in Sao Paulo, Buenos Aires, and New York), she began to notice how French children didn’t push away the grown-up foods of fruits and vegetables, nor did they throw tantrums at restaurants or city parks when it was time to go home— they even slept throught the night as infants! The secret is in the location, or so it may seem in the mindset of the Parisian parents who entertain the idea that they are not at the constant beck and call of their children.

Armed with the philosophy that choosing a parenting technique before the child is even born is almost expected of American parents today. And yet Bringing Up Bebe tells the tale of what happens when French parents let nature run its course, allowing their children to, gasp, play on their own at the playground without hovering. “I’ve never seen a French mother climb a jungle gym, go down a slide with her child or sit on a seesaw... For the most part, except when toddlers are just learning to walk, French parents park themselves on the perimeter of the playground or the sandbox and chat with one another,” wrote Druckerman. French child-rearing is described as every bit as laissez-faire as strolling the Parisian streets in the afternoon, avec baguette. Parents in France do not allow themselves to become obsessed with their children, instilling in them the deep thought that parents have needs too. It’s a “help me, help you” mentality, and from what Druckerman writes, they seem to understand it.

French women do not negotiate with their little ones, feed them excess sweets or the converse, obsess over maintaining an organic, raw, or vegan diet. They do not spend hours hauling their children from soccer to ballet to create well-rounded individuals nor do they run a short-order kitchen if one requests chicken nuggets and the other, buttered noodles. “Of course, French parenting wouldn’t be worth talking about if it produced robotic, joyless children,” Druckerman states. “In fact, French kids are just as boisterous, curious, and creative as Americans. They’re just far better behaved and more in command of themselves.” While parenting does not come with an instruction manual, the French give curiousity priority in bringing up their children. They allow them to explore the world and discover their environment at their own pace instead of forcing them into strict schedules and hobbies. PetitNest opens up a child’s world by offering the full spectrum of the color palette for their room.
From her years working as a fashion model in around the world, Lonni Paul developed an eye for understated elegance and taste for luxurious comfort. It was this Los Angeles native’s worldly experience in clean lines, color, and texture, that ultimately landed her a position as a finalist on HGTV’s Design Star, chosen from over 10,000 designers. Now a mom to 7-year-old twins Sophie and Jett, Paul happily juggles life as a busy parents, furniture designer of the PetitNest collection, and continues to style chic, modern spaces for the stars. MINI: Have you always been interested in
design? When did you know you wanted to be a designer?
LONNI PAUL: I’ve always loved design and
fashion. I was so fortunate to model in Europe for many years and the beautiful architecture had a big impact on me. I started building spec homes and attending UCLA Architecture and Interior Design program. People would ask me to do their interiors because of the spec homes and finally one day there was a home I couldn’t pass up so I said yes! MINI: What are some of your favorite de-

porate a sofa. I’ve been doing that for years. It’s such a great piece in a nursery because Dad and siblings can join in while mom’s in the glider. It makes the nursery a family space. MINI: What advice do you have for parents de-
signing a nursery?
LONNI PAUL: I think it’s really important that the
nursery be an extension of the design aesthetic you have in the rest of your home. The nursery should flow with the home. Colors can be anything from subtle and soothing to fresh and bright.

MINI: What is one misconception that parents
have in designing their children’s spaces?
LONNI PAUL: That they need to have bright colors
for the child to be stimulated. There are so many toys that stimulate our kids, I think it’s great to see a nursery that’s done in calming tones. Bring out the toys for playtime! Don’t forget scale. For instance, in a playroom make sure everything is reachable that you want your child to be able to get to easily. MINI: How did you decide to design your chil-
dren’s spaces? What was your inspiration?
LONNI PAUL: My twins are seven now, so I just
did makeovers in their rooms. My son Jett is into robots. I painted horizontal stripes in different widths on the wall in blue, green, and white. The headboard is a very techlooking, blue polyurethane. I painted his old white desk orange for a great pop of color in the room. Artist Brady Smith painted the most awesome huge robot painting that I have hung over a teal blue love seat (made from mock mohair, sunbrella fabric). His dresser is the Odile from PetitNest which is a geometric design. My daughter Sophie loves pink and what girl doesn’t? She has a custom headboard I designed for PetitNest out of our fabric. She also has a custom duvet cover and love seat all from an upcoming PetitNest toddler line. She is really girly so I have some fluffy white and sparkly pink throw pillows on a custom designed PetitNest Chanel pink sofa and a white flokati rug. She has the Sophie dresser from my line in her room too which I designed and named after her. MINI: Tell us about PetitNest. How did the col-
lection come to be?
LONNI PAUL: PetitNest is a line of eco-friendly
children’s furniture made entirely in the USA. I use No-VOC paint and everything is formaldehyde-free. I started the company while I was designing Tiffani Thiessen’s nursery for her daughter Harper. We kind of joked around that it would be great to have our own line of kids furniture because we couldn’t find anything we loved. Six months later, I’d designed six collections and we were on our way. Tiffani is bi-costal, so it was too much for her to continue. I’m running it on my own now and loving it!

In the world of children’s furniture, the Million Dollar Baby brand family dares to design outside the walls of ballerina wallpaper and dinosaur prints. For MDB, children’s furniture should be elegant, fun, functional, and yes, fabulous. Tracy Fong, the Creative Director and Vice President of Sales and Branding at the MDB Family, tells us more about the story behind the company. “The MDB Family started in 1990 with one crib, the Jenny Lind, and one goal, to make stylish children’s furniture that was up to our standards of perfect safety,” Fong said. “At MDB, we believe in providing peace of mind to parents.” Since the Jenny Lind, MDB’s family has grown into quite the beautiful bunch from design styles twinkling with modern charm to timeless heritage pieces built with style and solid construction. “We now have six brands: Davinci Baby, Million Dollar Baby Classics, Franklin & Ben, Nursery Works, Ubabub, and Babyletto,” said Fong.

While each brand offers a different take on everyday fab-design, it’s where MDB’s products end up that is important to Fong. “ What I find rewarding is knowing each piece of furniture goes into loving homes,” Fong told Mini. “It’s creating something special for each family with a baby on the way. We are also a company that prides itself on a strong family founda-
tion. It’s our mission to improve and enhance the lives of families worldwide every day.” Fong describes her personal style as edgy yet comfortable. and the rockers are incredibly comfortable,” Fong said. “That’s where the rubber-meets-the-road for our design team. It has to look good, feel good, and exceed every safety standard. Don’t you wish high heels were made with that credo?” Mini also asked Fong to clear the water of some of the biggest children’s design-space misconceptions. “We have all seen enough dinosaur
sheets and race car beds to last a lifetime,” she said. “Why not design a sophisticated space for a child that has unexpected twists? Like a chandelier filled with love letters in different languages by Ingo Maurer or neon colored accents. Your baby is more than priceless, and that means giving them the best. It just so happens that the best in safe, quality decor is also incredibly stylish.

MINI: Let’s talk about your blog, Maternal-
ly Chic. What inspired you to create the blog and what types of content do you focus on?
PIPPA VOSPER: I had the idea for Maternally
Chic when I was three months pregnant. I knew I wouldn’t want to stop being active and involved in the fashion industry while on maternity leave; I also wanted a challenge. I had so much energy and inspired thoughts throughout my pregnancy. While pregnant, I showed how to wear non-maternity clothing throughout the nine months. It was a way to show you could still wear Givenchy, Chanel, Alaia, and the like by choosing the right pieces. Since giving birth to my son, I now focus on chic mommy looks, beauty products, and children’s clothing.
MINI: How would you describe your style?
Have you seen it change since you’ve come a mom?
PIPPA: My style is very simple and chic, al-
most French-inspired I would say. Before pregnancy, my wardrobe was just rails and rails of black. Through my pregnancy and postpartum, I introduced color to my wardrobe— something I am still pleasantly shocked by.
MINI: Where are your favorite places to
shop for yourself and baby in your part of the world?

PIPPA: I am a huge fan of Harrods— the
children’s department is enormous with everything you could possibly need. I find I can buy everything from beauty to sportswear to designer clothing in one trip.
MINI: What do you dress the baby in most
often now? PIPPA: I am very much a fan of classic children’s style.
For me, Bonpoint has the most beautiful childrenswear and I would happily dress my son in Bonpoint until a time when he is able to buy his own clothing.

PIPPA: The very outdated concept that during
pregnancy you should only wear jersey and oversized sweaters. I see it all the time and there are so many clothing options available for every taste and size. My tips for dressing the bump are simply to stick to your usual style, just spend a little time finding options that you can wear now that your shape is changing.

PIPPA: My son is an extremely happy little
boy who is progressing well, so whatever I am doing is working! I take meetings two days a week right now and he comes with me during the day. My fiance and I agreed to having a nanny once he reached a year old. The other days we swim, attend music classes, play at home, and just enjoy our time together. As long as my child is happy and progressing well, then everything else will fall into place.

Powerhouse jewelry designer Jennifer Fisher began with a simple dog tag chain and has since transformed her line into a bevy of must-have pieces for all INTERVIEW BY KAITLYN KIRBY
A native of Santa Barbara, California, Jennifer Fisher began her career in fashion as a wardrobe stylist for feature films, television shows, and commercials. Yet after ten years of dressing some of the biggest stars in Hollywood, Fisher met her husband and decided to head east to New York to start a family. The couple’s first child was born and the new mom expressed a desire for a stylish piece of jewelry marked with his name— however, no unique items could be found. Fisher then took it upon herself to design a simple dog tag charm stamped with her new son’s name, which she wore on a long, thick link chain. After friends and family began requesting their own custom pieces, Jennifer Fisher Jew-

JENNIFER FISHER: I am constantly inspired by liv-
ing in New York and traveling with my family. My inspiration for Spring ‘14 is coming from my last trip to Mexico.
MINI: Do you think your
daughter, Drew, will grow up to be a fashionista just like you? What does she wear most often now?
JENNIFER: She is going to go
one way or the other. Right now, she is going through a tomboy phase— probably because that’s how I tend to dress. But she is really into Ash wedge sneakers. She has a bunch of colors and wears them with neon cords and a cool rock tee.
MINI: How would you define
your son Shane’s style these days?
JENNIFER: Please, my son is a walk-
ing Lakers, Heat, Knicks and Nets ad! All he wears are jerseys and sweats. It kills me, but last week was a victory because I got him in skinny jeans.

has the most amazing personal style. I don’t design pieces for her, but for women who want to express themselves individually. MINI: You’re also a mom! Has your style changed
at all since motherhood?
JENNIFER: My style has simplified since
becoming a mother. I must be able to dress in five minutes and for day to night, so my style is a bit more utilitarian. I feel if it’s casual with an edge, it translates well.

Designer Lela Rose has a knack for matching whimsy and elegance with brilliant colors and handcrafted details in her work. Her Spring 2013 collection centers on the duality between lightness and mass, fragility and permanence, as seen in the works of American artist Jim Hodges. It is his colorful and simplistic pieces that influenced Rose’s design of her beautiful floral embroideries and voile prints, paired with metal necklines and touches of lace. Rose, a mother of two, remains true to her aesthetic each season, continuing to produce pieces for the modern sophisticated woman layered with the ethereal spirit of effortless chic, despite her busy family schedule.

We eat together as a family and often have time for a card game after dinner. Then it’s off to bed just to start it all again at 7 AM the next day.

LELA: I do wear a sunflower yellow silk sport jacket
from Spring 2013 quite often as I can wear it with pants, dresses, jeans, anything really. It is a very versatile piece that finishes any look to make it polished and put together. MINI: You’re also a mom! Has your style changed at all
since motherhood?
LELA: My style has not changed since having kids. I
have always liked getting dressed, even on weekends, as I feel like I am more prepared for the day that way. I love that my daughter also wears dresses or skirts now and hope this is something she will continue. I have always believed that if you look good, you feel good. MINI: Do you think your children will grow up to be
fashionistas just like you?
LELA: I do not think there is much hope for my son to
go into fashion. His wardrobe consists of camouflage and cowboy boots. My daughter does love the whole idea of fashion and all of the hoopla that surrounds it. She is perfectly happy to wear a dress or skirt every day and is usually clad in my favorite color, citrine. MINI: What are your tips for looking great on little
time?
LELA: The dress— one zip and then done. I love to ac-

Sitting down with stars like Angelina Jolie, George Clooney, and Beyonce and jetsetting to events like the Oscars and the Cannes Film Festival are just a few of the tasks the job throws her way. In this exclusive, the correspondent for Entertainment Tonight allowed Mini the chance to interview her and answered the most pressing, parenting-related questions— definitely not the usual for this red carpet TV mama. Anderson leads a glamorous life and her leading role as mom to daughter Kate is one that drives her day to day.

MINI: Happy Spring! Let’s get started talking about
your glamorous, busy life! How do you balance career and motherhood?
MINI: What are your favorite aspects of your job?
BROOKE ANDERSON: Gratefully, very messily, and

with a sense of humor. It’s a day to day effort. I strive to keep consistency in my daughter’s life, so it’s important my husband and I stay organized when it comes to her schedule.

They’re wonderful examples of strong, talented women in the industry who aren’t afraid to be themselves.
MINI: Do you think she will grow up to be a fash-

ings, showered, dressed, and tip-toeing out the door by 5:30, carrying (and dropping) my bags and breakfast while on a conference call with show producers at the same time. My husband takes care of morning duty and school drop off with Kate while I’m able to spend the afternoon with her. On the weekends, waking up at 6:30 AM with my daughter feels like I’m sleeping in! We do ballet, soccer, and family activities including the beach on sunny days.
MINI: We all know moms have little time in their busy
schedules. What are your tips for looking great on little time? BROOKE: A good moisturizer and sunscreen are essential.
If I have just a couple minutes for makeup, I do mascara and a little eyeliner to open up my eyes and a bright lip pops and inspires me to face the day with confidence and a little attitude. For clothes, make sure you have really great, high quality basics to build on and don’t spend a lot of money on trendy items.
MINI: How has your life shifted to accommodate parent-
hood? Have you seen changes in your home, your wardrobe, your social life? BROOKE: The toddler birthday party circuit, park play
dates, and pretend tea parties constitute much of our social life, though I also believe it’s critical to carve out time with my husband and with my girlfriends.
MINI: What surprised you most about parenthood? BROOKE: Childbirth included some eye opening situa-
tions to say the least, but I mostly heard the expression “You’ve never experienced love like this” and that is so true. The love I have for my child is unbreakable and untouchable.

meals at dinner or are more active, like surfing in the summers. I think empowering children is important, and setting the right role model. I do what I say I’m going to do, and I’ve always made good choices in my life, so they trust me.
MINI: Are there certain foods you are surprised your
children love?
KELLY: My youngest eats exactly like me. She loves veg-
gies and will take carrots out of the fridge and choose breakfast bars over candy bars. It’s a question of your taste buds. Some like salt and some like sugar. My oldest gravitates towards salt.
MINI: Give us a glimpse into your life. How do you be-
gin each morning and end each day?
KELLY: I begin every morning with oranges and a green
juice. My youngest daughter is starting to like the green juice too. After they go to school, I always take my vitamins and I either workout and study or I get ready for work appointments. Everyday is different. It’s kind of frustrating, but exciting too.
MINI: With your busy schedule, what do you always
make time for? Do you have a routine that you try to stick to with your kids? KELLY: I definitely try to eat with my girls as much as
possible and pick them up from school when I can. I am a single mama bear so it’s only me 24/7. I’m trying to instill good values while showing them it is OK to work and take care of your family.
MINI: Are you into healthy cooking as well? KELLY: I do like to cook and I love to make food with
my girls. It’s like a science experiment, and there is nothing wrong with making mistakes in the kitchen. I always tell them, “there is always cereal.”

MINI: It’s finally spring! Are there
certain colors, pieces, or patterns you’re excited to start wearing this season or locales you’re excited to visit? KELLY: I love colored lace, gold
high heels, and white anything. The mod 60s look is hot, and the minimalist look from Marc Jacobs is clever and sexy. I’m looking forward to spending time in the Hamptons with my new relaunch of my first book In the Spirit of the Hamptons.
MINI: Moms are always running
low on time. Tell us, what are your simple steps to great style? KELLY: I always say, you should
wear what you love. If you love tees, wear them and throw a blazer over them for a chic look. Style is about the life you live, not about trends. I prefer a girl who has a strong sense of herself, rather than a girl who’s trying to wear a trend. We are not supermodels, we are women with amazing lives, so let’s show them off. MORE FROM

MINI: What is your earliest fashionista memory? Have
you always loved fashion?
MARISSA KRAXBERGER: When I was young I didn’t like
to wear the same outfit too often, I would make these calendars and plan out my looks for an entire month of school. I think I am still a little the same, except that now I can keep track in my head.
MINI: What do you love most about working at Oscar
de la Renta?
MARISSA: It is really hard to pick one thing. I feel really
lucky to work for one of the most talented designers in the history of fashion. I really love the range of products I get to work on— everything from readyto-wear campaigns, home collections, fragrances and childrenswear. Probably, my favorite part of my job is running the blog, George and Ruby, because I get to integrate my family life into my work life in a really fun way. How did it start? What does it focus on?
MARISSA: We started the blog because we wanted to
generate awareness of our childrenswear collection in an authentic way. When we launched the blog, we wanted to create a social media presence from a mom’s point of view, also sharing my adventures as a mom living in New York and working in the fashion industry. Our CEO wanted be to be personal and help mothers with tips and how-to’s, without being overtly promotional. As the Head of Creative for the brand, I focus on all aspects beyond childrenswear so it is natural for me to incorporate more of a lifestyle approach into the blog.

Ruby blog?
MARISSA: I love telling visual stories. I am not a great
writer, but I do think the images are even stronger when there is a story with them so I have set my worrisome ego aside and continued to write. I was already blogging the lives of the kids on Tumblr to share with friends and family, so this was an easy transition. Now I work on three blogs— I guess that means I really love blogging! MINI: What style advice do you have for moms or
moms-to-be?
MARISSA: I advise moms to embrace the bump. I
loved being pregnant. I think if you feel confident, it shows and you look better. I think the misconception is that you have to wear maternity and I don’t think that is true. I hardly shopped maternity. I invested in a couple of key maternity items: pants, jeans, leggings and spanx! MINI: How do you envision your children’s style in
the future?

MARISSA: I am afraid of what they will be
inheriting from a mom in the fashion industry! I hope that I teach them well about mixing great pieces with inexpensive trendy pieces. I think they both will grow up with an appreciation for fashion and well made clothes; I am thankful for that. The little lady already has a love for tulle skirts and jewelry… I am sure lace will be next— my favorite! MINI: What are your simple steps to great
style or easy and chic ways to dress up an ensemble? MARISSA: I think eyeliner, mascara and
blush cover a multitude of sins AKA no sleep from crying babies. I love wearing wedges on the weekend. Adding height to a look always makes me feel more put together. Accessorize. You can wear a t-shirt and jeans, but by adding a necklace, a brooch, or some big earrings, you now have a chic ensemble.
Plenty of things keep you up at night. Shopping for your kids shouldn’t be one of them.

But when she’s not rubbing elbows with the crushworthy on the red carpet, this TV mama has two big fans of her own at home— her sons Austin and Arion. Including her husband of just over a year, Rhys, and the special relationship maintained with her exhusband and his wife, Sadler tells Mini in this exclusive cover story that her modern family “is now complete.” MINI: We all know you from E, but what our
readers may not know is that you’re a mom! What do you love most about motherhood? CATT SADLER: I love the true miracle of moth-
erhood. There are no two creatures that I feel closer to, more connected to, than my boys. It is a privilege and opportunity to help them grow, learn, and develop into the unique people that they are. Of course, they’re constantly teaching me— so the relationship is definitely a glorious two-way street. MINI: You truly have a modern family. Tell us
about that the dynamic that emerged when you married your husband, Rhys.
CATT: Today our family is complete. My hus-
band of just over a year, Rhys, and I maintain a very close and special relationship with my ex-husband Kyle and his wife Sarah. For the sake of the kids, we’ve created a very positive, open, loving environment. There’s a lot of back and forth between both us and them, so in the spirit of forgiveness and a desire to move forward for our children, we pledged to all be in the parenting roles together as a cohesive unit. The boys don’t deem divorce a dirty word because they’ve never been exposed to resentment, tension, or uncom-
fortable situations. As adults we’ve worked very hard to create a safe place for the boys amongst all of us. We go on vacations together, spend holidays together. Don’t get me wrong, it isn’t always absolutely perfect, but we have made a conscious choice to make the best of it. I get a lot of wonderfully positive feedback from teachers and coaches. The boys seem to be thriving and that makes me completely happy. MINI: With such a busy schedule, how do you
manage work and motherhood? What are the keys to keeping the balance and making time for both? CATT: The key is an error-free iPhone calendar
and an iron-clad support system. I wouldn’t be able to pull off my career if it weren’t for the help of Rhys, Kyle, and Sarah— or my assistant who fills in the gaps on the shuttling to basketball, baseball, piano, and beyond. But for me, the balance has always been about being present. When I’m with my kids, I do my best to keep my phone at bay. We are talkers in my family so I’m always “checking in” about their day, their friends, their schoolwork. I just genuinely enjoy my boys so much that when I’m with them, to be brutally honest, I couldn’t care less about what Lindsay Lohan is doing or the status of Kim Kardashian’s divorce. Who knows, maybe that has stagnated my career, but I can live with that. I’ll never regret having missed any key moments with my kids.
MINI: Let’s talk style. How has your style
evolved since becoming a mom?
CATT: I’m a denim girl through and through. I
was before becoming a mom and that hasn’t changed since.

Some days I swear my kids’ pants are painted on. LOL. Oh, and last but not least, they can’t seem to get out the door without their Nike Elites.
MINI: What are your favorite ways to spend time with
your boys?
CATT: My boys are both athletic so I love attending their
games and cheering them on that way. It’s so rewarding to see them evolving as little people and it’s important for me to be there showing support. We ride bikes to our local neighborhood village, Larchmont, quite a bit. A fun night for us is going to one of our favorite Korean BBQ spots or sushi. Their spring break means Mom gets a spring break! Barbados might be our destination next month and I couldn’t be more excited.
MINI: How would you describe your personal style? How
MY MOMMY MUST-HAVES ARE . . .

That carries over to my home in the sense that nothing is too fussy. It’s modern with clean lines. Contemporary but comfortable. The greatest compliment I get when people visit is they feel like they’re at the spa. It’s pretty Zen at my place. I’m also acutely aware of lighting. My spirit is warm and therefore my home should give that same vibe.

CATT: My mornings are usually spent getting the
boys off to school. After that, I have about an hour to sift through my inbox, shower, check in with the hubby about our day, and then take off for E. Mornings at E are spent reading or re-
writing scripts, scouring the internet for the latest entertainment news, visiting the voice-over booth to track my stories for the day, updating my social media platforms, and finally hair and makeup. The afternoon is spent in a quick fitting and then on set shooting my portion of E! News. I’m usually wrapped by 4 PM. MINI: It’s finally spring! What colors, trends,
pieces, or patterns are you loving right now? CATT: I’m still loving the ideas of mixing prints
and all of the florals. I’m not overly feminine in my dress, but I’m digging the floral prints for spring. My lighter shades of Siwy Denim will make a comeback and my cut off Ksubi denim shorts will as well.

AVOCADO CAESAR DRESSING
I love a good homemade Caesar dressing, but using a raw egg, especially while pregnant, is not recommended. This Caesar solves the egg problem by subbing in avocado. You get a creamy dressing that's not only delicious, but rich in folic acid, potassium, vitamin C, and vitamin B6, all of which are important prenatal nutrients. Prep Time: 5 minutes Serves: 6 to 8 (makes about 11⁄2 cups) 1 Hass avocado 1⁄3 cup extra-virgin olive oil, plus more if needed 1⁄4 cup grated Parmesan cheese 2 tablespoons red wine vinegar 1 tablespoon fresh lemon juice 1 or 2 garlic cloves, peeled 3⁄4 teaspoon Worcestershire sauce 1⁄4 teaspoon coarse salt 1⁄4 teaspoon freshly ground black pepper Cut each avocado in half lengthwise. Remove the pit from the avocado and discard. Remove the avocado from the skin, and place the avocado flesh in a food processor bowl. Add the olive oil, Parmesan, vinegar, lemon juice, garlic cloves, Worcestershire, salt, and pepper. Pulse for 1 to 2 minutes, until smooth and creamy. Adjust the salt and pepper if needed. Use immediately, or refrigerate for up to 3 days. VEGETARIAN AVOCADO SUSHI BOWLS
Since sushi is basically a no-no while pregnant, how about creating something that satisfies the craving without breaking any rules? This sushi bowl combines avocado, sushi rice, tons of chopped veggies, and a great asian dressing that you’ll love. Prep Time: 15 minutes Cook Time: 15 to 20 minutes Serves: 4 1 cup sushi rice 1 Hass avocado 1 cup shredded green cabbage (savoy recommended) 1⁄2 cup chopped red bell pepper 1⁄2 cup thinly sliced carrots 1⁄4 cup finely sliced scallions 3 tablespoons chopped fresh chives 3 tablespoons soy sauce 2 tablespoons rice vinegar 1 teaspoon sesame oil 1 teaspoon honey Cook the sushi rice according to the package directions. Transfer it to a large bowl. Cover the rice with a slightly damp kitchen towel and set aside. Cut the avocado in half lengthwise. Remove the pit from the avocado and discard. Remove the avocado from the skin, and cut the avocado into 1⁄2-inch dice. Transfer to a large bowl. Add the cabbage, red bell pepper, carrots, scallions, and chives to the avocado and toss to combine. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and honey. Fluff the sushi rice with a fork. Add the chopped vegetable mixture and drizzle with the prepared dressing. Divide among bowls and serve immediately.
SWEET POTATO BURGERS
These burgers are stuffed with sweet potatoes, beans, and topped with avocados, so you’re getting 3 super foods at once, plus lots of protein and fiber needed for expectant moms. Prep Time: 15 minutes Cook Time: 8 to 10 minutes Serves: 4 1 cup peeled and diced sweet potatoes 1 15-ounce can cannellini beans, rinsed and drained 11⁄2 cups panko bread crumbs 1 large egg 2 tablespoons grated Parmesan cheese 1 tablespoon grated lemon zest 1 teaspoon coarse salt 1⁄2 teaspoon freshly ground black pepper 1⁄2 teaspoon sweet paprika 1⁄2 teaspoon dried oregano 2 tablespoons extra-virgin olive oil 4 hamburger buns, sliced and toasted 2 Hass avocados Assorted toppings, such as red onions, roasted red bell peppers, microgreens, Dijon mustard, lettuce, sun-dried tomatoes, and/or caramelized onions Bring a small pot of water to a boil. Add the diced sweet potatoes and cook until fork-tender, 5 to 7 minutes. Drain the sweet potatoes and transfer to the bowl of a food processor. Add the cannellini beans, bread crumbs, egg, Parmesan, lemon zest, salt, pepper, paprika, and oregano. Pulse for 1 minute, until everything is fully incorporated and smooth. Remove the sweet potato mixture from the food processor and divide it into four 4-ounce portions. Form each portion into a patty to fit your preferred burger bun. Heat the olive oil in a large skillet over medium-high heat. Add the sweet potato patties to the hot oil and cook until golden brown, 4 to 5 minutes per side. Transfer each patty to a burger bun bottom. Cut each avocado in half lengthwise. Remove the pit from the avocado and discard. Remove the avocado from the skin, and cut the avocado into thin strips. Top each sweet potato patty with one-quarter of the avocado strips. Add additional toppings as desired and top with the top half of the bun. Serve immediately.

Tropical Avocado Salad
Not only is this salad super healthy, but it’s loaded with avocados which pack a nutritious punch and mangoes loaded with vitamin A. Prep Time: 15 minutes Serves: 4 to 6 2 Hass avocados 1 ripe mango 3 cups arugula 1⁄2 English cucumber, cut into half-moons 1⁄4 red onion, thinly sliced 1 jalapeño chile pepper, seeded and sliced 2 tablespoons fresh orange juice 2 tablespoons champagne vinegar 1⁄3 cup avocado oil (extra-virgin olive oil may be substituted) 1 teaspoon coarse salt 1⁄2 teaspoon freshly ground black pepper Cut each avocado in half lengthwise. Remove the pit from the avocado and discard. Remove the avocado from the skin, and cut it into medium dice. Set aside. Using a vegetable peeler, remove the skin of the mango. Using a sharp knife, slice the wide flat part of the fruit off the pit. Repeat this process for the other side of the mango. Transfer the 2 mango slices to a cutting board and cut into 1⁄2-inch pieces. In a large bowl, combine the arugula, mango, cucumber, red onion, and jalapeño and toss gently to combine. Add the diced avocado. Set aside. In a small bowl, combine the orange juice and vinegar. Slowly stream in the avocado oil while whisking together to form the dressing. Season with the salt and pepper. Drizzle half of the dressing over the salad and toss.
