The 11th Annual Hotel, Restaurant, and Tourism Weekend highlights the novelty and talents of the people that make this place a remarkable one. It is also an opportunity to raise the quality of services that the participating hotels and restaurants have to offer. Accommodation and food outlets are important sectors of travel and tourism, as these are at the forefront of the hospitality industry. As two of the first establishments that tourists interact with, they have a significant influence in making the experience more memorable and fun. In the past 10 years, we have stood witness as the best in the gastronomic arts show off their talents to tease our senses. Today we are even more anxious to view, taste and feel the new creations which will come out in this event. We are most especially eager to learn who will be crowned the best in the various categories in the three day spread of activities. They are indeed the pillars of our country's food industry. Rice is the most important crop to small farmers who grow it on thousands of hectares throughout the country, and to the many landless workers who derive income from working on these farms. As we gather to celebrate together, it is my wish, that more opportunities be created to promote the products, skills, and ingenuities of our farmers, through the annual competition of professionals and students. I am extending my warmest greetings to the Hotel and Restaurant Association of Baguio (HRAB) for its annual 11th Hotel, Restaurant Tourism Weekend on September 11-13, 2014. It is truly an honor to be a part of this festive occasion. Through the years, the HRAB and the City Government of Baguio came up with events to provide an opportunity for both students and professionals from the hotel, restaurant and tourism industries all over the country to learn, gain exposure and foster camaraderie through a series of competitions, seminars and display of culinary and hospitality skills. I salute the efforts of HRAB's organizers and those who took part in the success of events these past years such as the Largest Wedding Cake Part II, Largest Fried Rice in 2011, Pasta Festival in 2010, Largest Pizza in 2009, and the like. These activities didn't fail to attract tourists. This year's theme: “A Tribute to our Farmers – Rice and Shine 2.0” is a way to recognize and give credit to our Filipino farmers who are the major players of the agriculture industry. Agriculture is among the main pillars of the Filipino society. As an Asian country, rice as the main means of subsistence and as our staple food has a central role in the Filipino's daily diet. Farmers perform a crucial role in the Philippine society. They till the land and restore its vitality. Unlike in other countries, being a Filipino farmer entails numerous setbacks which include capital shortage, high cost of inputs, pest and diseases as well as limitations in the irrigation system and facilities. Despite this situation, they work every single day to produce the food served on our tables. Their perseverance is truly inspiring. I leave you with this inspiring quote: “My grandfather used to say that once in your life you need a doctor, a lawyer, a policeman and a preacher but every day, three times a day, you need a farmer.” – Brenda Schoepp As we look forward to more years for HRAB, I pray that you prosper and grow in your dedication to working for the glory of God and as the City of Baguio's tourism leader and partner. The tourism industry is particularly challenged by the accelerated globalization of social processes. By directing its attention to standards, practices and developments abroad, the HRAB demonstrates its awareness of the importance of this trend, while it still supports the local rice farming sector as a valuable assest for the Filipino people. We need to explore more and more possible opportunities where local farming can thrive in a global society, since agriculture will be an essential component of a healthy society. HRAB's “A Tribute to Our Farmers—Rice and Shine 2.0!” this year underscores the unique contribution of Filipino farmers to the dynamic transformation of Filipino food culture. Saint Louis University has consistently supported initiatives to promote tourism in the city of Baguio, including through its own school program offering. Creativity and motivation are key concepts in the social and economic development of a society. Both concepts can become drivers of people's potentials. The program scheduled by the HRAB this year aims very well precisely at promoting these concepts, especially through the regional competition and the offering of networking opportunities with established brands and suppliers. Finally, HRAB's initiatives to reinforce the image of our beautiful city in other parts of the country and abroad can never succeed without a concerted effort by all stakeholders. I believe that the project of HRAB is a very relevant step into this direction, which deserves unwavering support. Let there be more to come!

For 11 years, the Hotel, Restaurant, and Tourism (HRT) Weekend, organized by the Hotel and Restaurant Association of Baguio (HRAB), has proven itself to be a significant occasion to look forward to as it does not merely provide an avenue for learning, creativity and competitiveness in the hospitality industry, but also an event that has incessantly contributed in the growth of the local tourism industry. The remarkable yearly outcome of this private sector-led and government-supported event has caused the City Council of Baguio to approve a resolution designating the HRT Weekend held every September as the “HRAB Week of the City of Baguio”. In addition, the 2014 HRT Weekend's innovative and distinct activities were recognized as component in the celebration of the 105th Charter Anniversary of the City of Baguio that began last September 1. HRAB will continue solidifying its partners with the local government and continue elevating the activities of the HRT Weekend to greater heights for the enhancement of the hospitality practitioners at the same time endeavoring to unparalleled events that will expand the local tourism industry. Warmest greetings from the 8th National Food Showdown 2014! For the past 11 years, we have made our annual trek to Baguio in order to heed HRAB's request for us to bring up professional judges to assess and grade the numerous competition entries during the annual HRT Weekend. Many participating establishments like hotels, restaurants, tourism schools and universities come from many provinces in central and northern Luzon to congregate in Baguio every September. Likewise, our judges take time out from their busy schedules to share their wisdom and work experience with the competition participants. Our team of judges travel to Luzon, Visayas and Mindanao preaching our gospel for excellence. And like guardians watching over their wards, we have seen how the tourism landscape in the provinces has grown. Through the National Food Showdown's Regional Chef Wars competition, Luzon, Visayas, Mindanao and NCR come together in friendly culinary battle to showcase their regions' skills in cookery. This cannot happen without support from our valuable friends Hotel and Restaurant Association of Baguio (HRAB), Hotel, Restaurant, Resort Association of Cebu (HRRAC), Hotel and Restaurant Association of Negros Occidental (HRANO) and Cagayan de Oro Hotel and Restaurant Association (COHARA). The President's Report The Future beckons on the horizon The next wave of professionals in hospitality, culinary and tourism sector who will eventually take their place and carve their own niche in the industry, are in our midst. At the helm of our evolving industry are pools of young untapped talent, beaming with potential just waiting to be unleashed. The 11th Annual Hotel, Restaurant and Tourism weekend provides the avenues of opportunities for these multitude of vibrant and fresh genre. And what better way to revel in this year's HRT weekend, but to highlight and pay homage to their unquenchable thirst for challenge and penchant for adventure. We call on them to rise and shine. We dare them to be more. To defy the average. We dare them to be the catalysts that we so dire need in these dynamic and changing times. Beyond crafting exciting and savoury dishes and delectable creations, we want to develop them, take them to the next level and foster in them a culture of inclusive leadership in hospitality. We want them to bring their best to the table. We want each culinary gladiator to compete against industry standards, and to claim the power to create future they envision. This is the goal of this year's 11th serving of the HRT Weekend. We challenge each stakeholder to contribute in realizing our thrust of “Developing Future Filipino Culinary Leaders�, to ensure the continuity of our legacy of excellence in hospitality and service. I encourage our fellow hospitality practitioners and stakeholders to not only invest in the upgrade of facilities, outlets and services, but also to include our human capital. The 10th Hotel, Restaurant and Tourism Weekend The staging of the 10th Annual Hotel and Restaurant Tourism weekend turned out better than compared to the 9th HRT Weekend. A total of 590 competitors from various schools and tourism establishments vied for various titles in culinary and skills competitions. Winners of the Chef Wars, namely University of Baguio (Student Division) and Baguio Country Club (Professional Division) represented the Northern Luzon in the National Food Showdown held on September 20 to 21, 2013 at the World Trade Center, Metro Manila.

E

ncouraged by their clientele's instance, the Benitezes brought the Mario's to the folks in the big city in 1974. The restaurant's popularity soared and its cuisine became the talk of the town. It served not only the excellent food that made it famous up in Baguio, it also provided the same cozy and romantic ambiance as its original branch in the mountains. Over the years, countless occasions have been celebrated at Mario's, and many more catered by Mario's. It is a place where memories are made, where important events are marked, where young men impress their dates—many times to eventually purpose to their future spouses, and where families go to enjoy their bonding dinners. Mario's has also evolved to be one of the city's most preferred places to network. At any given time: breakfast, lunch, or dinner—political and showbiz VIPs can be found enjoying the restaurant's plush and comfortable ambiance, which many describe as a most elegant setting comparable to any five star hotel or any exclusive country club. The friendly, yet unobtrusive, old school service from the restaurant is also well regarded for its very subdued noise levels and very cool air conditioning. All of which contributed to the restaurant being even more conducive to meetings among the country's power brokers. Mario's is neutral ground, so to speak, so it's not surprising to see heavy hitters from opposite political camp breaking bread with

each other in the restaurant. Mario's allows these movers and shakers to relax in convivial setting, far removed from the scenes of their heated political battles in the Senate or the House of Representatives. The Mario's classics, favorites for over four decades, are still the Power Table favorites: the Paella Valenciana, the Oysters Rockefeller, the Stake a la Pobre, Lengua con Setas, Corned Beef and Cabbage, Salpicon del Mary Tierra, and prepared tableside, what many consider to be the best Caesar Salad in the Philippines. The top desserts are the unparalleled Toffee Sans Rival, and Mario's irresistible old-fashioned dense, dark

Chocolate Cake. Although Mario passed away few years ago, his loving wife, Nenuca, is still the irrepressible doyenne of their kitchen. Mario's has gone beyond being just a restaurant. atherine Arvisu-De La Rosa was born and raised in Baguio City. A 4th year high school graduate of St. Theresa's College (now the SLU Boys High) and an AB Economics graduate of St. Louis University, Baguio City, the passion for the Tourism Industry came naturally. Kit, as she was called by the Baguio community until she moved to Manila for work and was nicknamed Cathy, personally got involved in tourism when friends and family came to Baguio for a visit and she would drive them around showing off her pride of place to include marketing and having to walk from John Hay to the city proper. Professionally, she got involved in the Tourism industry when she was 2nd year college as a casual hire, one summer time for Philippine Airlines and moved on to perform various assignments: w Aircraft Load Controller w Reservations Agent w Reservations Controller w Systems Analyst w Team Leader of the manual reservations system migration to the Computerized Reservations System of PAL w Trainer to various PAL international offices and travel agents relative to PAL's computerized reservations system

w Representative for the airline in various

international Travel Trade Shows promoting the Philippines to include ITB Berlin and the World Travel Mart in London, and sales blitz to various online destinations for the introduction of new flight routes After 20 years of service, she availed an early retirement program as Manager Tours and Promotions . She then moved to San Francisco, California, where she established the Sta. Barbara International Corp., a trading, marketing and travel and tours counselor enterprise. Setting up an office at the Philippine Consulate building at Sutter Street was a surprise reunion seeing most of her PAL colleagues who also availed of an early retirement program and were either managing their own businesses or for someone else and housed in the same building. With her experiences in the airline industry and doing business abroad, destiny brought her back to Baguio and established NOANTS consultancy services. Now on it's 18th year of service to the community with the saying “there is nothing greater in life than to share….” she continues to give back to the City that was good to her, the playground of her childhood days, the mini San Francisco. She is an active member of various Tourism related organizations and

is a founding member of: w Baguio Tourisim Council (BTC) w Travel and Tours Association of Baguio and Suburbs (TTABS) w National Association of Independent Travel Agencies, Baguio Chapter (NAITAS) w Hotel and Restaurant Association of Baguio (HRAB) w Baguio Convention and Visitors Bureau (BCVB ) w Center for Hospitality Education Foundation, Inc. (CHEF ) w Tourism Congress of the Philippines (TCP) w Association of Travel and Tours Management in the Cordilleras (ATTIC) She gives back to the airline that believed in her as she shares with her clients the wonders of travel and how to better appreciate the sophistication of the airline industry in systems and procedures from marketing and sales, reservations, airport operations, ground and in-flight services. All these activities were guided by standards that espouse total customer care. Not content with sharing and serving within the confines of an office, she taught for 3 years at the University of Baguio and positively responds to requests as a resource speaker in various student seminars and fora.
