Myth, Magic and Mystery in Bali by Jean Couteau Myth, Magic and Mystery is a book of stories on the Bali’s origin myths, ancestor deities, spiritual obligations, ceremonies and rituals; healing arts; customary laws; love, marriage and family; death, the soul’s journey, reincarnation and the concept of heaven and hell. Grouped into four sections, each focusing on a particular aspect of Balinese life, culture and religion, a veteran Balinese scholar gives us access to arcane and captivating information explained in straightforward and non-academic language. Known locally by his Balinese name Pak Kadek, Jean Couteau has lived on the island since 1972 and has earned a doctoral degree for his thesis on Bali’s art history and iconography in art. Able to write in English, Indonesian, Balinese, Kawi as well as his native French, Couteau is a regular contributor to news and media publications including NOW! Bali Magazine, the Sunday Indonesian edition of Kompas and the French newspaper La Gazette. He has authored three books on Bali: Lempad (2014), Time, Rites and Festivals in Bali (2013) and Bali Inspires (2011). Most chapters deal with the most salient beliefs, principles and other essential dimensions of the Bali Hindu religion. Some passages read like reflections of a theologian or a sermon by a Balinese priest who is steeped in protocol, tradition and caste hierarchy. Take for example the case of the Barong’s missing ear in Nina’s Baos: How to Make a God Talk. Taksu: Connection to the Cosmos illustrates the concept of taksu, which has a broad range of meanings, all related to power, inspiration and personal charisma. This inner power can be observed in a priest who is possessed by spirits, a dancer in trance or even someone in deep meditation.Ngendag: The Awakening of the Dead explains the macabre step-by-step details of various Balinese cremation ceremonies in which the soul is separated from its physical vehicle, the body. Instead of avoiding the presence of death and anything related to death as is the case in the West, death is accepted as a matter of daily life. The Balinese involve themselves in every stage of the cadaver ’s treatment with all immediate relatives expected to participate in the washing, massaging and perfuming of the body. The Chopped Hand of the Inveterate Believer illustrates the insurmountable power of the satio wacono oath that binds a Javanese to his word lest God condemns him to the worst tortures of hell. The Seven Muslim Saints of Bali gives us the locations of the graves of Bali’s seven Islamic saints, the Wali Pitu. The guardians of several of these tombs are Bali Hindu, a sign of prevailing tolerance among the saints’ followers. Not all the stories involve religious subjects and mystic rites. Several take the reader deep into the heart of Balinese folklore. Others are essentially philosophical treatises, a bit too erudite and hairsplitting for the common reader, perhaps only of interest to scholars of the Bali Hinduism. But in most of the essays, Couteau’s extensive experience and deep knowledge of Bali helps us to understand what life is really like on the island. In a searing account of how customary law can result in enslavement, Damri, Victim of Beauty is a sad and terrifying tale of plegandang - marriage by kidnapping. Common 50 years ago, the practice is now outlawed but still occasionally takes place. Mind Your Tongue addresses headon Balinese sexuality. The Balinese are blunt, outspoken and even vulgar when they talk about sexuality, often using “Garage Jargon” to filter the depiction of the sexual act through metaphors of motorcycle culture. Making love is “changing the oil;” not getting an erection is “the ampere meter doesn’t work.” Sexual symbolism on Bali extends into the agrarian sphere in pseudo-magic-religious interpretations of the procreation of men and women. Pertiwi the Earth Goddess provides food while her complementary opposite Aksasa the Sky Father blesses the earth with the fertilizing element of rain. All over Bali ancient pre-Hindu megaliths in the shape of Phallus and split yoni stones symbolize the sexual union of humans have been integrated among the paraphernalia of Balinese temples and worshipped as part of ceremonies of local fertility cults. The Faithfulness Vagaries of Jero Ketut is a lighthearted story of an impotent Balinese man’s sexual reawakening. This is

a prime example of how the author’s close friendships with Balinese and his familiarity with the language make him privy to insights that your average expat resident could never have. The Peeping Toms of Bali humorously reveals the prevalence of sexual voyeurism on Bali, a social phenomenon that has been documented in ancient lontar texts and manuscripts dating as far back as the 11th C. Javanese poem Arjuna Wiwaha. Voyeurs peep down from the ceilings of hotel rooms, from the bushes on beaches, from inside public baths, from behind bamboo walls of houses and from the hilltops of the Bukit Peninsula using binoculars. Couteau advises his readers just to ignore them and laugh away the matter with a witty put down. In The Kuta Bombing: A Balinese Perspective, even horrific crimes are erased by time and not carved into time. Why weren’t mosques set ablaze and Muslims lynched by wild mobs after the bombing? Couteau explains that the atrocity was perceived not as an attack by Islam but as an omen of cosmic disorder. Defilement of Bali was at its most poisonous in Kuta where people’s behavior brought shame to themselves and to all humanity. Instead of calls for revenge, which would have intensified the disorder, there were calls instead for palliative rites and offerings.

With its at times odd punctuation and misspellings, the book could have used more rigid editing. The uneven cadence of the sentences can also be distracting, forcing the re-reading of lines. But in spite of these grammatical idiosyncrasies – perhaps even because of them Couteau’s writing style possesses a curious and unique eloquence. I liked most the anecdotes and encounters that he experienced first-hand, whether it be a consultation with a balian, facing illness the Balinese way or his precise instructions on how to concoct and apply a restorative boreh poultice. The book’s 47 original illustrations are a delightful mixture of traditional religious paintings of mythological and cosmological themes; photos of daily life, ceremonies and processions; dances and other performing arts, line and tonal art; cartoons; mandalas and decorative chapter endings. The many Balinese words and phrases in brackets would have been more accessible had they been conveniently listed in one place in a glossary. Myth, Magic and Mystery is not a book by an anthropologist but by an aficionado of Bali, an island that he loves too much not to criticize. These lively stories, essays and discourses could only have been incubated while hanging around warung and living amongst Balinese villagers, high priests, the nobility, artists and academics. So embedded is the ponytailed Couteau in the spiritual activities of village life that we are able to learn a great deal about the ceremonial intricacies of a funeral, the presentation of wayang performances, temple exorcisms, inappropriate behavior and abstruse priestly officiations. As a knowledgeable and subjective scholar of Balinese life and culture, Couteau’s book is funny, sarcastic, empathetic, peppered with philosophical and sociological reflections, yet not burdened with moralistic preaching. We should be thankful to have such an astute interpreter of the island’s culture on hand to lead us to some real understanding of what life is really like on Bali.

13 HOW CAN WE AVOID OUTLIVING OUR PENSIONS? One obvious answer to the question is to die early! But that’s not the answer we want to hear. This is the follow-up to my last article ‘Will you outlive your pension?’ The fact is most people seriously underestimate how much wealth needs to be built up to provide a liveable income over an unknown number of years in retirement. If you are a long time expatriate living in Bali you might have observed many very old and seemingly happy Balinese. It is extremely unlikely that they are drawing pensions each month yet it doesn’t seem to bother them. In fact very few Indonesians will be drawing pensions as they are a relatively new feature of employment packages. True, there have been government pensions for decades but their value has been rapidly eroded by inflation. However, Indonesians and citizens of most developing countries have the support of strong family networks and tradition has always been that the family will support the older members. Westerners have long moved away from those values and those who have wandered to far-off shores have become even more isolated from family support.

then panic and look for investments that offer high returns to make up for lost time. At any point in time the ‘flavour of the day’ may be commodities, gold, emerging market stocks, cyber currencies or even works of art, stamps or wine collections. (At least you can drink your losses in the case of the latter!) Peer pressure might also persuade you to follow the herd and jump on the current bandwagon, usually just before it overturns. If you are young you can take a few risks but if you are building your wealth for retirement avoid any exotic or unusual investment. Nonsense like storage pods and car park spaces at airports have been doing the rounds in recent years. The second pitfall is to take fright and hold nothing but cash. Banks are generally (but not completely) safe and deposits are backed in most countries by guarantees up to certain limits. But the big enemy is inflation and while your bank is making a profit on your money by lending it out at a much higher rate your own deposit will be earning minimal interest and its purchasing power will diminish over time. Don’t be misled by high rates of interest offered in non-mainstream currencies. Paper gains can be easily cancelled out by currency losses as inflation rises faster in the countries of those currencies. It is essential to always keep some liquid cash that is easily accessible but holding too much cash for the long term is known as ‘reckless conservatism’. Why? Because of the missed opportunity for growth. So how much of your salary should you be saving for retirement?

So what can you do about it? If you are already retired the options to enhance income are obviously limited so the focus has to be on how to adapt to a low income and make ends meet. This could be the subject of a separate, dedicated article but for this one we will assume you have a number of active working years until retirement. Income from property For most people in the western world the biggest investment they have made is the family home. For those who bought decades ago, particularly in major cities such as London or Sydney, their family homes are now worth a fortune. It’s good to have that kind of security if you are planning to return to that home after a long spell overseas. But no matter how much the home is worth, if you move back you still have to maintain its upkeep and meet all your other living costs. You could even own a castle or a stately home but if you need cash in a hurry you cannot sell a bathroom. Downsizing is one way to retain a home and also release funds to generate income. Many expats own investment properties to provide an income in retirement. This is indeed one way to to secure an income and you also have an asset which is likely to appreciate over time. But relying totally on this income is very risky as the income could dry up for various reasons and the property could be difficult to sell in a hurry. But it is fine provided it is backed up by ample liquid cash or income from a liquid investment such as a portfolio of stocks and bonds or a pension.

Not everyone’s needs or objectives are the same, but as a general rule of thumb, and assuming you have saved nothing to date, you should take the age when you start to save and divide by two. That will give you the minimum percentage of your salary or other income that you should be saving to ensure a healthy income in retirement. So if you are already 40 years old you will need to save 20% of salary. But if you start at 25 you need to save only 12.5%. Compounding makes a big difference when saving so the earlier you start the better. How and where you invest your savings is also critical. There is no single product or asset class that you can count on to do the job on its own. You need several strings to your bow. Diversification is essential.

For our Water Tanks & Sanitation Project in 2016, RCBC worked together with Wake Water to install 26 water tanks in Kubu, Karangasem in the northeast of Bali, where villagers suffer from a chronic shortage of water during the dry season when children can get sick from drinking dirty water. Each of the tanks holds 3400 litres of drinking water collected by natural rainfall and provides enough to last a family of 5 through the dry season. “If you have the love of your fellow men in your hearts, my friends, you are a potential Rotarian.” Paul Harris, Rotary founder (1868-1947)

Our School Waste Management Program, working together with Eco Bali, taught children in Canggu’s 11 elementary schools how to reduce, reuse and recycle.

Hello and welcome from the Rotary ClubBali Canggu.

RCBC sponsors an Interact and a Rotaract Club and these enthusiastic young people are the Rotarians of the future. Probably the most notable of these is the famous ‘Bye Bye Plastic Bags’ team, whose aim it is to make Bali free of the plastic bags that litter our beaches and help restore it to the island paradise it once was.

We are a group of like-minded people who offer service to the community. We are a small yet active group who are vibrant and passionate about serving the local Canggu community and beyond. Our club revolves around two themes - fellowship and projects. RCBC’s most recent project is assisting the Rotary Club of Wauchope of District 9650 in Australia to renovate The Salam Children’s Home in Tabanan, Bali, providing four new bathrooms, a new septic tank and new steps. Previous projects include: Our famous ‘Nippers’ Program held every Sunday morning at Batu Bolong Beach, where children aged 4-14 learned about water awareness, swimming skills and teamwork.

Environmental projects are popular with our membership. In 2017, RCBC launched an organic composting project together with our friends at Rotary Club of Bali Taman, to teach local residents how to compost their domestic food waste. This enables them to then sell the resulting compost, or grow their own crops which in turn can be composted, reducing the huge amount of waste going to landfill every week.

We would love to welcome you to one of our meetings, which are held on the first and third Thursdays of each month at the Tugu Hotel at the end of Jalan Batu Bolong. We gather at 6pm for fellowship followed by a meeting, 6:30pm to 7:30pm. As well as meeting like-minded people, learning about club projects, listening to guest speakers present on interesting topics, you are welcome to join the evening chatting to members, visiting Rotarians and guests over a cold beer after the meeting finishes down at the beach bar. ARC’S SPECIALS ARC Anti-aging Beauty Clinic is the pioneer of medical tourism on Bali, opening their doors in 2002, and is now the country’s leading anti-aging clinic administering more Botox and Human Growth Hormone than any other medical facility in Indonesia. Australian owned and managed and staffed by experienced cosmetic physicians and nurses who administer all anti-aging and cosmetic treatments with professionalism using leadingedge technology and hygiene. Every month ARC offers special discounts on a variety of treatments. With savings like this you can afford to indulge in enhancing your beauty. August’s special is a 20% discount on Botox. Botox is still the foundation of looking younger almost instantly. It’s especially effective in erasing the wrinkles and fine lines on the forehead and around the eyes, making you look ten years younger. How does Botox work?

Botox blocks the signals from the nerves to the muscles so that the muscle can no longer contract, causing wrinkles and frown lines to relax and soften. It’s commonly used on the forehead lines, crow’s feet (those little lines around the eyes) and frown lines. However, you need an experienced doctor who knows where to place the injections and how much to use. I’ve heard horror stories of people who’ve been given too much and can no longer move their facial muscles, leaving them with a frozen expression. Or improperly injected near the eyes have resulted in drooping muscles around the eye. Not a pretty picture. That’s why it’s important to have an experienced doctor. Botox will generally be effective for about 6 to 12 months. Originally it was used to treat migraine headaches. I always love going into ARC Anti-aging Clinic, which is very spacious and bright embellished with original art works. Rather like entering an art gallery, making me relax the moment I walk in. I went in for a free consultation with Dr. Chandra to assess my face where Botox would be the most beneficial to enhance my looks. Looking carefully at my skin and asking me to frown and lifting the skin while looking in the mirror. Dr. Chandra has been working for ARC for many years and is very experienced with a very pleasant personality encouraging trust in her professional abilities. Then she asked me to step into the adjoining room for the procedure.

Lying comfortably on a purple reclining bed/chair I felt relaxed as the nurse applied an ice pack over the area where the injections would be made. She showed me the certified Botox Allergan bottle from the USA to assure me that they only use this product in ARC. Step by step the nurse applied a cold pack to an area on my face to numb it a little before Dr. Chandra injected the Botox into my skin. When she was ready for the forehead she asked me to frown to pinpoint the correct spot for the injection. With the numbing there was very little pain for the injections. The whole procedure only took about half an hour. Afterwards the nurse handed me an aftercare instructions and a small jar of arnica. Aftercare • Do not rub or massage the treated area for 24 hours post-treatment • No sun exposure for 24 hours post treatment. Wear a good quality sunscreen SPF 15 or above • No swimming for 24 hours post treatment • No facials or anti-aging facial treatments for 2 weeks post treatment

• • •

Avoid excess perspiration (exercise, spicy foods, etc) for 24 hours Avoid air travel for 24 hours (Headaches have been reported to occur during air travel) Ice and Arnica cream may be applied to the treated areas immediately after the procedure should bruising or swelling occur.

Botox Party If you have a group of friends of 3 to 6 people you can have a Botox party. For maximum 3 persons you can get 120 units of Botox for 9.500.000 Rp or 6 people for 200 units for 14,400.000 Rp. This will give your gang a considerable savings and keep all of you looking younger. This can be used anytime during the year. Light Lift- Needle Method for the Neck Coming this September is a new treatment for sagging skin on the neck and under the chin using the new Aptos Threads that are absorbable with microscopic barbs attached to the middle of the needles. The threads have double sharp ends which allows a single point entry. Double edged needles allow the threads along any contour creating a circle avoiding skin retractions. This creates a hammock-like effect under the chin lifting it up and holding it in place.

C/HE/U-17 Jan 18

This welcome treatment may just be the answer you’ve been looking for to make your neck look smoother and eliminate that double chin. Book an appointment with Dr. Chandra to discuss this new treatment to see if it’s the remedy that you’ve been looking for. Aptos Threads will be the featured promo for September. Say What?

NC/NV/U-01 August 18

Question: I think I may have flirted a bit too much with a young Balinese boy. He’s eighteen; I’m twenty-six; I have a boyfriend, and he knows it. I’m very happy with my boyfriend, and he knows that too. Still, he is cute and awkward and rather nice, and when I look at him, I think to myself, “Some girl is going to be lucky to have him someday.” I see him a couple of times a week at the shop where he works, and a couple of weeks back, as I was leaving, he mentioned that he looks forward to work because he gets to talk to charming Western women like me.

My advice is to keep talking to your Balinese friend in a friendly, engaging way and enjoy his company. Assume he can handle himself, and he will handle himself. If the weird flirting ever comes up, either because he pushes the issue or because he’s so darn adorable you can’t help yourself, you can always say, “I like this place too - I get to keep my flirting hand in with cool guys like you. I hope I didn’t overstep the other day.” In other words, just acknowledge the awkwardness and the adorableness, and let him walk away feeling ten feet tall.

I’ve been less responsive to him since then. I still joke with him, but I’ve tried to cut off the flirting. Still, I wonder if what I really need to do is to make an opportunity to speak with him to ask him if we need to talk. Perhaps it would be easier on him if he knew exactly what was happening from my end. What do you think? Do I take him aside and tell him what I’ve told you - that I don’t want him for myself, but he’s cute and some girl is going to be lucky to have him someday? Should I try to get that message across casually, rather than in a private discussion? Or is it best to just stay quiet and hope he’ll find his own way around the sudden lack of flirting?

Question: I’m an Indonesian woman in my mid-40s, having trouble with my role as a daughter. In the past year, my mother has been unable to drive; so I have taken up driving her wherever she needs to go. At first it wasn’t a problem, but recently she’s been calling me for a ride when I am at work. If I try to arrange something for another time when I am available, she acts displeased and complains to my father. This generally gets me a phone call from Dad, scolding me for being uncooperative.

Dr. ZZ: I wouldn’t worry too much about managing this young man’s feelings. We live in weird times. Never have we been more sexually liberated, but there’s also this weirdly fraught aspect that prompts us to wonder how much we’re expected to follow through on the heels of friendly, even flirty chitchat. Our grandparents’ generation had ballroom dancing, which allowed them to rub up against each other and talk and flirt and touch members of the opposite gender in a sociallysanctioned way. We stay at arm’s length, escalate to text messages, and then suddenly we’re in close proximity, having skipped a whole bunch of steps along the way. Having small crushes on people who make you feel awesome when there’s no chance of them getting out of hand is fun. Crushes put an extra spring in your step and sparkle in your eye.

I want to help my Mom, but I have my own life to worry about, and I can’t change my schedule to fit hers all the time. It’s difficult to approach her about this because she gets defensive any time I bring it up. Please help. Dr. ZZ: Obviously, things cannot continue the way they are. You need to sit down with both your parents and talk about driving, boundaries and schedules. It’s not going to be easy as they are apt to be resistant, but you need to look at your

NC/NV/U-01 August 18

schedule and plot out the times you need for work, personal care (e.g., grocery shopping, working out, errands, etc.), social commitments and leisure time. This ought to leave you with 1or 2 regular time blocks per week when you can be available to take your mom somewhere. Be conservative with these available time blocks - say, one weeknight and one weekend day. Make a calendar and block out the times you are busy, and highlight the times you are free and able to drive your mom. Chances are your parents will push against these limitations. (“What if she needs you during one of your busy times? Why are you being so stubborn? We’re family.”) The absolute last thing you want to do is justify every piece of your schedule to them. A simple “I have other commitments. ‘Sorry!” is sufficient. Refrain from making suggestions, and let the two of them work it out. Outside of your regular, available times, perhaps your dad can find a way to handle it, or your mom can get a taxi. Whenever you set and start to enforce a new boundary, the situation is apt to become tense; you may even be tempted to scrap the whole plan. But in cases where everyone loves one another and is acting in good faith, these tensions are usually temporary; people adjust. Give it a little time, let things roll off your back, stick to the times you are actually free and willing to help, and you should see some changes. If your dad calls you to yell at you, don’t pick up.

Trash heroes and scavenger apps battle Bali ‘garbage emergency’

Five years ago, tour guide Wayan Aksara noticed that more and more visitors he showed around the Indonesian island of Bali were complaining about garbage on its once-pristine beaches. Bali’s mounting rubbish problem was also becoming personal for Aksara, who lives near Saba beach - an undeveloped area close to the holiday resort of Sanur, which faces a constant battle with trash washed onto its shores from a nearby river. “Every time we drove around, our guests ... would comment about it not being clean and the large amount of plastic,” said Aksara. “They would say the trash is bad, that tourism here is not sustainable, and ask what we are doing about it.” Aksara joined - and is now chairman of - Trash Hero Indonesia, a community group with more than 20 chapters across Indonesia and about 12 on Bali. It uses social media to organize weekly garbage-collection events for volunteers. Aksara, a father-of-two, also gives talks at schools and community events on how to manage waste better. Like many parts of Asia, the Indonesian archipelago of more than 17,000 islands has a fast-growing economy and population, and a huge coastline with many densely populated cities. Style in a Garden Courtyard! Ubud is Bali’s cultural village. It has an ever increasing number of quality restaurants to complement the lifestyle. It also has one with air-conditioning. Lamak has done it smart! There is pleasant outdoor dining, both around the central water fountain, and upstairs on the breezy balcony. At the rear of the balcony is an airconditioned lounge, consisting of four large white leather banquettes and a scattering of smaller tables. Lamak is all style and totally unique as are most projects that have been designed by the late Made Wijaya. When Lamak opened [Valentine’s Day 2002] it joined Ary’s Warung [where Chris Salans was then presiding in the kitchen] and the recently opened TeraZo as the only top level quality dining options outside of the more expensive five star hotels in the Ubud area. In the intervening 16 years Ubud has seen many quality restaurants open whilst most of Ubud’s tourist increase has been from the suburban budget background. So places that provide what I call ‘comfort food’ have boomed and any increase in the fine dining options resulted in a vast drop in their business as it has to be shared around, and now with the increased number of quality restaurants, a few of which are in serious trouble. This has resulted in both TeraZo and Ary’s joining many other once great restaurants in restaurant heaven. Only Lamak has survived. Why? Because they have kept up with the demands of today’s dining, and now offer a range of light and healthy options. A cuisine that I would have to call Modern International, but with an Asian touch. The new menu at Lamak for this high season is quite amazing. An added touch is the sprinkling of edible flowers on many of the dishes. In life if you fight against the tide, you drown! Lamak has gone with the flow but without forsaking its credibility for fine dining having retained their popular top-end product [lamb rack, imported steak and other meats, great soufflés, etc.] but now also adding many more budget entrees and mains that use local product, however still with the attention to detail that only comes from preparation in a fine dining kitchen. The new 2018 menu at Lamak is quite sensational, very cleverly assembled. Start with a Tuna Tartare with a difference, the best tuna, Yellow Fin, sits above a round of diced avocado, the tuna has been combined with sesame and a wasabi mayonnaise. A soy vinaigrette is drizzled on the plate. The dish has a fancy top sprinkled with lime slices and edible flowers. As with all the dishes here the presentation is perfect, all are very attractive and that instantly boosts your appetite making you eager to try them.

The Snapper Carpaccio sees paper thin slices of fresh snapper layered with tomato and ice plants [more edible flowers], topped with a lime and coconut dressing, so refreshing. At the table the dressing is added as are a sprinkle of tomato granite which gives a pleasant and refreshing icy crunch to every mouthful. The Pomelo Crab is another perfect example. Easy on the eye and a great taste [pictured], in fact it is quite a knockout. A layer of crab meat [Kalimantan crab] is topped with chunks of pomelo on top coconut, thin cucumber strips, mint and an Asian style dressing [mint oil, lime juice and fish sauce], also added at the table. …Fantastic!

puree and a shiraz reduction and the esseential Rack of Lamb, another long time Lamak special, with sweet potato gratin, sautéed bok choy and the very Asian Hunan Sauce. Desserts have not been forgotten. The Souffle has always been a Lamak special and a Chocolate one is on offer. As well there is a Pandan Crème Brulee or a Panna Cotta. However the special dessert is the Rice Pudding, serving two persons, made with vanilla bean, walnut brittle, dulce de leche and Crème Anglais; Lamak is still one of Bali’s classiest restaurants and now also very affordable.

QUICK REVIEW Restaurant

: Lamak

A Vegetarian starter is the Beetroot Variations, pieces of fresh and salt-baked beetroot together with slices of pickled beetroot with little bundles of whipped goat cheese is balanced by a reduction of Modena balsamic. Seared Scallops sees three large mollusks served with grilled baby corn and pickled blimbi, a lemongrass and red chilli puree for dipping. The Beef Tartare uses slices of Australian tenderloin topped with pears and a Korean dressing of smoked mayonnaise.

In fact a meal at Lamak just comprising the 6 great starters would be a very fine dining experience, and provide a great variety of taste. It would be a perfect lunch accompanied by a new wine they stock a very crisp Spanish Rose, the Francck Massard from Cataluna, as I recently experienced. The massive wine cellar at Lamak, glass-fronted and just to the left of the cocktail bar, displays 111 different wines. quite amazing for a stand alone restaurant outside of a 5 star hotel. Included are the best of the local brands and a selection of premium wines from all over the globe. The cocktail bar at Lamak is one of the most professional to be found in a Bali restaurant. Under cover but at the edge of the garden courtyard, a more perfect setting could not be imagined. Margaritas seem to Bali’s cocktail of the moment. They are done different here as the Frozen variety are mixed with many different fresh fruit gelatos at Lamak. Their Frozen Daquiris, also come in many different fruit flavours, this is achieved by using fruit ice cream in the blender, a little different but very refreshing! Dining at Lamak you experience classic French/Italian style cuisine but with the addition of subtle Asian spices. The mains continue the gastronomic journey. The Poached Chicken sees two thick strips of perfect flesh, poached [slow cooked] in chicken stock, the result firm flesh but so tender. They are topped with coconut crumbs and onions, a light coconut curry is added [poured over] at the table. The Pork Belly has the skin completely crisp, it is accompanied by gastrique [a mound of green apple compote given the French sweet and sour treatment of rice wine vinegar and sugar, plus Chinese 5 spice to add a more local touch] and slices of Malang green apple.A Sirloin Carpaccio uses Australian Wagyu [MBS 7] topped with corn and the South American raw chimichurri sauce. Top of the bill is shared by the Black Angus Steak, served with seared foie gras, potato

The Ubud Writers & Readers Festival has revealed its first lineup of authors, artists and activists who will join this year’s five-day program of impassioned discussions, intimate special events, stimulating films and powerful performances from 24–28 October. Early Bird tickets are now on sale until the full program is announced from mid-August. In 2018 UWRF celebrates its 15th year as Southeast Asia’s leading festival of words and ideas. It will bring together more than 150 speakers from 25 countries, to share extraordinary stories and refreshing perspectives through the lens of this year’s theme, ‘Jagadhita’. Like many of the Festival’s previous years, the theme is drawn from a Balinese Hindu philosophy. ‘Jagadhita’ is the individual pursuit of universal harmony and prosperity as one of life’s primary goals, interpreted in English as ‘The World We Create’. The Festival’s five-day program will explore countless ways to create a world that we want to live in; how we strive as individuals and as communities to manifest positive change; and how to nurture this goal through respect and actions that sustain compassion for each other and ourselves. From Makassar to Nigeria, Jakarta to India, the first lineup of 16 speakers is testament to the Festival’s cultural diversity. Along with its intimate venues in the artistic heart of Bali, with views of Ubud’s iconic rice fields, jungles and valleys, the vast number of nations represented is what makes the UWRF unique among the world’s top literary events. The Festival is honored to welcome revered British playwright, screenwriter, filmmaker and novelist Hanif Kureishi, alongside Professor Gillian Triggs, who served as President of the Australian Human Rights Commission from 2012 to 2017. During her term Professor Triggs’ launched an inquiry into children in immigration detention, causing controversy among the political right and conservative media, and has since focused on the gendered nature of the criticism. Reflecting on the relationships between communities divided by history, language, and cultures is Kim Scott, whose Benang (1999) was the first novel by an Indigenous writer

to win the Miles Franklin Award, Australia’s premier literary prize. Scott’s second novel also won the Miles Franklin, and his third, Taboo, is shortlisted for this year’s Award. Acclaimed Indian poet, novelist and dancer Tishani Doshi, who recently gave a fervent response to the problem of violence against women in India at the 2018 Hay Festival, will appear alongside Nigerian American writer, filmmaker, and medical doctor Uzodinma Iweala. Iweala is also CEO of The Africa Center in New York, promoting a new narrative about Africa and its diaspora through a focus on culture, policy, and business. Pakistani memoirist and novelist Fatima Bhutto will return to UWRF after her first appearance in 2008. “It’s been nearly ten years since my first Ubud experience and I was so moved then by the multitude of voices, experiences and narratives that I encountered at the Festival. I’m very happy to return,” she commented. Leading the conversation on equality and inclusivity in publishing is Indonesian Singaporean writer Clarissa Goenawan, who will be joined by acclaimed British author Geoff Dyer, a Fellow of the Royal Society of Literature whose books have been translated into 24 languages.

architect Avianti Armand, and esteemed editor and author Putu Fajar Arcana. From 17 August 2018, Indonesian Independence Day, Bali will be home to the world’s tallest statue. The Festival is excited to welcome legendary sculpture artist Nyoman Nuarta, creator of the Garuda Wisnu Kencana Statue and other major national monuments, including the Indonesian Proclamation of Independence monument in Jakarta. As increasing Islamic conservatism dominates news reports about the world’s third largest democracy, the Festival is pleased to welcome author, entrepreneur and philanthropist Haidar Bagir. Bagir recently received the Global Business & Interfaith Peace Award for promoting pluralism and progressive Islamic thought through interfaith dialogue. “We are so proud to reveal the first round of outstanding Indonesian writers and artists alongside our diverse group of international guests,” commented UWRF Founder & Director Janet DeNeefe. “From humble beginnings 15 years ago, we have grown into the most prominent platform for showcasing the nation’s emerging and established writers and artists, and one of the world’s leading literary and artistic events,” she continued.

The nation’s extraordinary cultural and creative diversity is embodied by the Festival’s first round of Indonesian speakers. UWRF is thrilled to welcome Kamila Andini, director of Sekala Niskala (The Seen and Unseen). One of Indonesia’s most celebrated recent films, it premiered at Toronto International Film Festival 2017 and received the Grand Jury Prize at Tokyo Filmex, and the Generation Kplus Grand Prix at Berlinale.

“At a time when we need it most, we bring together voices from across the world for important debates and meaningful exchanges. At our Festival, cultural and geographical borders dissolve as our speakers and audiences create a global community,” DeNeefe concluded.

As screenings of independent Indonesian films remain rare both internationally and locally, celebrating independent Indonesian cinema has grown into a core component of the Festival. This year’s UWRF also sees the return of experimental filmmaker Richard Oh for the premiere of his fifth film Love is a Bird.

The 15th UWRF runs from 24–28 October on Jl Sanggingan, Ubud. Early Bird tickets save you 20% on the 4-Day Pass, and are available until the full program is announced in mid-August. Go to ubudwritersfestival. com for all the info.

One of the frontrunners of Indonesia’s modern literature landscape, Dee Lestari, will be joined by bestselling poet and rising star Aan Mansyur, award-winning author, poet, and

“I invite you all to join us in celebrating our 15th year as Southeast Asia’s leading festival of words and ideas.”

Raw Vegan Chocolate is Awesome

by Ines Wynn

Chocolate is older than the dickens and enjoys a historical pedigree like coffee and tea. Its up march in history is well documented. 2000 years ago wild cacao trees grew abundantly in the Amazon basin. Cacao beans were fermented into alcoholic beverages as far as 1400 BCE and the cultivation spread widely from there. Due to its many tasty and medicinal properties it obviously migrated fast and became a staple in many ancient civilisations. The Mayans and the Aztecs considered their chocolate beverages as nectars of the gods. They even used cacao beans as currency. It is said that the Spanish conquistador Hernando Cortes was offered a chocolate beverage by the Aztec emperor Montezuma. Cortes was only interested in gold but the cacao bean did get introduced to Europe in the 1600s and fast became a novelty favourite of the elite taste makers. But it was not until the 19th century that an enterprising candy maker came up with the process of making solid chocolate bars.

Cacao trees grow mostly in hot and humid tropical areas, more or less in a 10 degree band on either side of the equator. Due to market demand many tropical countries started cultivating cacao and thanks to the relative ease of growing and harvesting the beans several countries became primary producers. Indonesia became the third largest producer in the world after Ivory Coast and Ghana. In 2009 Indonesia exported 850.000 tonnes of raw beans. However, an unfortunate government decision in 2010 to put a hefty tax on raw bean exports caused a precipitous tumble so that by last year exports fell by to a bare 260.000 tonnes. What may be gloom for overseas consumers turned into a boon for local chocolate producers. They now have the choicest beans to work with. Long time expats in Bali have undoubtedly noticed the increased availability of choice made-in-Indonesia chocolates over the last few years. The fine imports got some competition from local brands like Monggo, Pod, Krakakoa and newer arrivals on the shelves of your favourite supermarket. The tastes and

flavours have expanded commensurately. In the last few years we have even been spoilt by the availability of raw and vegan chocolates. Bali can now also boast its place among the raw and vegan chocolate producers. The big difference between the ordinary processed chocolate we are all familiar with and raw chocolate is that processed chocolate is made with roasted cocoa, sugar, milk, artificial flavouring and other ingredients. Raw chocolate comes from fermented and dried beans that skip the roasting process in order to retain the health benefits and unique flavour of raw fermented cacao. It uses pure cacao butter and coconut sugar to make silky and tasty chocolate and contains nearly four times the antioxidant content of regular processed dark chocolate, 20 times more than blueberries, and 119 times more than bananas.

Elevated Cacao’s owners are Paul and Amanda. Paul learned the art of raw chocolate making in London and decided to transport his skills and passion to Bali. Being dedicated long time vegans Paul and Amanda quickly learned that producing tempered raw and vegan chocolate was virgin territory here. Consequently they set about creating the business of making vegan chocolate, using locally grown cacao beans and other necessary ingredients. Although cacao beans thrive in hot humid climates like Bali, the act of converting cacao beans to a smooth silky chocolate is another matter as humidity and water are anathema to making good chocolate that has a bit of shelf life and does not need to be refrigerated. They experimented a long time under less than ideal conditions and had to apply a lot creativity and traditional know-how to finally come up with a product they could be proud of. It was an uphill learning curve and involved a lot trial and error. But slowly and inexorably the experiments paid off and resulted in the chocolates marketed today.

The benefits of raw organic cacao are well documented. These are too numerous to mention here but for starters, • It has the highest plant-based source of iron. • It is full of magnesium for a healthy heart & brain. • It has more calcium than cow’s milk. • It contains anadamide, a natural mood elevator and anti-depressant. • It is a natural blood thinner and prevents premature aging Raw and Vegan in Bali – Recently a Bali producer who makes vegan/natural/organic/Bali-sourced chocolates with cool flavours and added superfoods, has come onto the market. Elevated Cacao, headed by a dynamic business couple, is a small enterprise located in Tegallalang outside Ubud and their London-trained chocolatier produces 7 out of the ordinary flavours with combinations of acai, goji, cranberries, organic pink salt, mint, moringa, spirulina and other healthy ingredients.

Both Paul and Amanda are passionate raw and vegan chocolatiers and eager to share their skills with other vegans who would like to make raw chocolate – and avoid the pitfalls of Bali’s climate in the process. Elevated Cacao regularly puts on events to introduce gourmets to the many benefits of raw chocolate. Tea + Chocolate pairings are regularly held at Artteas in Ubud. A 2.5 hour masterclass Level 1 Raw Chocolatier is being offered in conjunction with Sayuri’s Healing Food in Ubud on 14 August. A level 2 Class is in the making. If you want to make your own raw vegan pralines you can sign up for the class at www.elevatedcacao.com. Elevated Cacao’s website treats you to a first class educational journey into the art of raw chocolate making. And you can order any of their unusual flavours there. They will also be teaching classes and selling chocolate at the Bali Vegan Festival in October. Oct 5-7. Pictures courtesy of Elevated Cacao

Their cacao beans and other ingredients are ethically sourced wherever possible. They work with local cacao bean growers in Jembrana and coconut sugar producers in Klungkung. Their production is still moderate but revving up as they recently obtained the permit to distribute their chocolate products in supermarkets and other food stores.

THE LAST STRAW About five years ago my housekeeper’s son decided to start a little business making bamboo drinking straws. I’ve known Putu since he was four years old. So he’s been under my indirect influence most of his life, receiving subliminal messages through his mother Wayan Manis about waste management, nutrition and the environment. Now 20, he wouldn’t dream of tossing litter, prefers unpolished rice to white and is mainly vegetarian. Putu was concerned about the pollution caused by plastic drinking straws in his own environment, years before the issue reached the crescendo of discussion today. He’s always been a serious, focused, hard-working lad like his father, whose ringtone is a voice shouting “Bangun! Kerja! Jangan Malas!”(”Wake up! Get to work! Don’t be lazy!”). Once Putu focused on the waste issues at his high school, he decided to try and do something about it.

The big picture is horrific. Drinking straws are made of polypropylene, which takes up to 200 years to break down. About 500 million drinking straws are used daily in the United States alone; about 3.5 million straws are given out daily just by McDonalds in the United Kingdom. The statistic for the EU is 3.5 billion a year. Those numbers don’t include statistics for India, China and Indonesia, which use huge numbers of straws but don’t keep count. Many of these end up in the ocean and make up about 3% of recovered trash. Over a million sea birds a year die from ingesting plastic. These numbers are all from the last year.

neighbours were roped in. Wayan Manis did the quality control, packing and fighting with the post office about its constantly changing rates. The right kind of bamboo for straws is rather rare (I haven’t been able to establish the variety, it may be Schizostachyum). The bamboo is not cultivated, but grows wild here and there on Bali. There’s a stand of it on land belonging to Wayan Manis’ extended family in central Tabanan, and twice a year the family hires a truck and drives to the remote ravines where it grows. Harvesting is hazardous in the rainy season when the ravine banks become steep and slippery. At certain times of the year the female King Cobras sit on their eggs among the bamboo roots, which adds a certain piquancy to the exercise. Only the slimmest culms are selected and cut. Making bamboo drinking straws is very labour intensive. After harvesting, the bamboo has to be dried in the sun for at least a month to ensure there’s no moisture inside or out. Drying the bamboo has been a huge problem over the past year due to the incessant heavy rain and sometimes slows down production for weeks. Once dry, the bamboo is cut by hand to the right length with a small saw. The cut bamboo is carefully cleaned inside and out and then polished with loose sand, again by hand. About half the raw material is the wrong size and can’t be used. A worker can make about 100 straws a day. The business kept growing and made the family a comfortable little living for several years. They began sending straws to Australia, the United States, Taipei, the United Kingdom and occasionally exotic destinations like Lithuania and the Cook Islands. Here’s a contemporary paradox. The world suddenly demands huge volumes of bamboo drinking straws which cannot be met. Then about a year ago, there was a big shift. Suddenly, bamboo straws were a hot commodity internationally. The family began to receive enquiries for very large numbers of straws. People were asking for 10,000, 50,000, 100,000 straws with very short turnaround time. We patiently explained that this was a very small cottage industry without the human or material resources to fill such huge orders.

The business started small. The family placed an ad on the www.indonesiaorganic website and soon had a few local restaurants as customers. In early 2014 the first international customer contacted me (as the English speaker, I’ve been the go-between) with an order for 1000 straws - the largest yet. I still have a picture of a much younger Putu holding a big box addressed to California. It was a proud moment.

The family were now fielding daily queries, some of which required many emails before orders were placed. It kept raining and the bamboo would not dry. Ceremonies held up production further. Australia imposed a new regulation that all bamboo products has to be boiled for 30 minutes. Customers complained about waiting for their orders. The family began to stress out. Costly mistakes were made.

The learning curve was steep for the family. They needed help establishing systems for taking orders, production, invoicing and mailing. At first Putu and his cousin Agus made the straws with some help from Nyoman when he had time. As the orders increased Putu’s sister, other relatives and

We sat down for a meeting and decided that the family would withdraw the ad from the website, and limit production to about 10 long-term customers. This helped with the stress levels while bringing the supply and demand issue into sharp focus.

Here’s a contemporary paradox. The world suddenly demands huge volumes of bamboo drinking straws which cannot be met. This little industry cannot be ramped up. The raw material is not plentiful and only grows in the wild. It’s unlikely to ever be cultivated because of the high cost of land and low/slow return on the usable crop. But an even greater obstacle is the lack of labour. I spoke to Agung Alit, founder of Mitra Bali Fair Trade, about the production of arts and crafts in Bali today. Agung originally trained as a lawyer but later directed his passion for justice to creating systems to support the craftspeople of Bali. He was named an Ashoka Fellow for his work in 2001. “Mitra Bali used to have up to 60 artisans making crafts for export, now we have only 16. Most of the rest are in the construction industry now, building houses,” he told me. “Even with Mitra Bali support, they struggle to make a living. Raw material is more expensive, but it’s also a cash issue. We pay a 50% deposit on orders but that is quickly spent; they would rather get a daily rate as a builder. And young people don’t want to work with their hands any more. With them, it’s more about status than money.” Wayan Manis agrees. She’s constantly seeking workers to make straws and is constantly disappointed in the lack of interest, low quality of the work and the inability to meet deadlines. She’s also frustrated by the impact of constant ceremonies on production which is new angle for her. We’ve had queries from India, Thailand and China, places I’d expect to have their own bamboo straw production. But they don’t. There’s a similar small initiative in Cambodia which is dealing with the same issues of access to raw materials and lack of labour. So don’t expect to see bamboo straws flooding the market. This seems to be the tipping point; handmade items from natural materials will become increasingly rare just as the word begins to realise their value. We live in strange times.

Street Art and Artivism : Sea Walls Bali Artivism is alive and well in Bali. That’s the activity of artists who use their talents (spoken word, dance, murals, music or, really, any art form at all) to build awareness and support for a wide range of concerns, such as politics and justice, social needs and the environment. The word was probably coined in the USA 20 years ago for describing the high-profile activities of several tightly knit Chicano art collectives in East LA. Unnamed, the phenomena of artivism has been around for as long as there have been politics, pigment, and public squares. Today it describes a global phenomenon embraced by artists with a sense of grand scale, fully entrenched in a media savvy world. From Papua to Jakarta, Indonesian artists are exposing their thoughts of protest, hope, and change, in powerful imagery on urban and rural walls. Using social media, these expressions can go directly and instantaneously from artist to the world. Small wonder street art is the hottest medium to subvert the heavily monetized, patron and dealer-led art world. In the years following democratization and especially the Bali bomb, street art spread all over Bali, thanks to several artist communities (Djamur Community, Pojoks, to name a few). Although Gianyar’s Kulidan Kitchen and any number of banjars’ anti-reklamasi street banners have given passers-by a dose of excellent street art, the most visible concentration is in hipster-magnet Canggu. The most attention-grabbing and technically impressive walls have been immortalized via Instagram, blogs, and televised travel shows. Today, travelers come to Canggu just to see the street art. Banksy hasn’t made the scene, but restaurant Aya, with its bold street art collection, boasts a framed print by that elusive megastar. Lifelong art fan and former Paris finance drone, European Julien Thorax can take significant credit for the transformation of Canggu. Ending a round-the-world journey, Thorax returned to Bali in 2015, and knew right away it was a place he could support street art the way Paris does. He took over the foundering spray paint retailer ALLCAPS (Jl Raya Canggu), and wasted no time in organizing multinational spray jams, transforming the bataku walls of Canggu’s rampant development into canvases for artists. While only some of the artists created works expressing strong opinions, you could argue that transforming the village into an outdoor art gallery is true artivism against urban blight.

In 2016, Julien launched the Tropica Festival, Bali’s first street art and graffiti festival. More than 40 artists took part in a one-week blitz of parties, walls gorgeously painted, and fellowship between artists of Indonesia and the rest of the world. Established artists Sofles, ROA, Felipe Pantone, Seth Globepainter, and Fintan Magee are big names who helped put Bali on the global street art map that year.

the art throughout the 3 islands. These are accessible by boat from Padang Bai, Sanur, and Benoa. PangeaSeed leaders say that it’s all about addressing marine environmental issues and opportunities relevant to the local community and environment. “We hope to ignite a sense of pride and ownership for the sustainability of their natural resources.” Topics addressed will include overfishing, plastic pollution, disappearance of ocean-based cultural practices like seaweed farming, conservation of key ocean species (sharks, manta rays, mola mola, sea turtles), and climate change.

Next, Julien set up ALLCAPS Gallery, though not merely as a place to view and buy artwork on a variety of moveable media. ALLCAPS became an epicenter for artists connected to the Canggu scene. A recent weekend art market there, with at least a dozen individual Balinese and international artists selling original small-scale creations, was a one-stop networking opportunity for designers, artists, and their admirers. The Indonesian team at ALLCAPS is infused with a gung-ho, can-do spirit of inclusivity and an overt enjoyment of linking artist to the public at large, an image far removed from a hooded vandal plastering their name on private property in the wee hours (although Julien admits that some of the world’s street artists do both). As Julien told me, “graffiti is originally an illegal form of expression. Artists (or vandals) write, tag or paint their names illegally on walls, train, doors, et cetera, to get their name visible. Street Art is more like bringing some form of art into the street for the general public to enjoy.” ALLCAPS also organizes three-hour street art tours, sharing stories and insights about individual artists’ contributions. Guides reveal a few hidden gems not easily accessed on one’s own. The gallery also offers artist-led, hands-on, painting lessons, a great activity for a teens’ party. With Tropica Festival now approaching its third staging, Julien’s taken a dedicated turn to artivism by teaming up with non-profit ocean environmental movement PangeaSeed to raise local awareness in ocean ecology and our impact upon it through their project Sea Walls Bali. Since 2009, PangeaSeed has brought 250 artists to diverse global corners to create 300 outstanding oceanthemed murals, with a mission of “fostering a new breed of conservation through community engagement and empowerment.” Sea Walls Bali runs from September 10 to 17 (with Bali graffiti jam Sept 1-2). Sponsored artists are assigned blank walls on Nusa Penida and Lembongan to make lasting, high-impact images about positive stewardship of the ocean and its creatures. Simultaneously, PangeaSeed will hold community outreach events: film shows, kids’ activities at schools, beach cleanups, multilingual talks to raise awareness and offer practical solutions, and tours of

Businesses and individuals who want to show their support through sponsorship may still apply at press time; contact jthorax@me.com. www.pangeaseed.foundation has more information; @ tropicafestival is on social media. Julien’s magazine KONEKTION, serving Canggu alternative arts and lifestyles, will also give information. In other news, save these dates: the Balinale, Bali’s own international film festival, is scheduled for 24 – 30 September. Screening national and international films in two theatres, Cinemaxx Lippo Mall Kuta and Cinemaxx Plaza Renon, this is a not-to-be-missed event where audience members vote right along with the jury for best films. Look forward to premiere showings, rising stars, industryinsider workshops, free weekend screenings of kids’ movies, and a wide array of participating countries. Many times, this is our only chance to see on a big screen, the best independent films from Indonesia and the world. Find all the info at www.balinale.com. Spreading art news? Gongs in Bali

To the Balinese, a gong is something that is often revered: for its sound, its prestige, its mysticism. To the lay person, we think of a gong as a hanging instrument that makes a sort of booming sound, but it is much more than that. As a gamelan researcher and educator at Mekar Bhuana Centre, it’s hardly surprising that I often answer questions about gongs: When did gongs first appear in Bali? How many different types of gongs are in Bali? Where are they made? How are they made? The word gong itself has its origin in Malay that only dates back to the 17th century. However, it is obvious in both the archaeological and literary record that these instruments are a lot older. Whereas gongs have been found in the archeological record across Southeast Asia up to 3,500 years ago, the earliest mentions of gongs in Bali can be traced back around 1,000 years to a stone edict called Prasasti Pengotan (925 AD) in Bangli that mentions players of instruments interpreted as either drums or gongs with sunken bosses known as bende in Balinese. For me it’s quite surprising that a gong of such high technology was the first mentioned, since it is a lot more different to produce a bossed (especially one with a sunken boss) than a gong with no boss (gong bheri in Balinese). The Moon of Pejeng – a type of instrument known as nekara in Balinese that could be interpreted as either a upright drum or gong – that could in fact be the earliest; and, even though this one is probably the result of intercultural trading with other parts of Southeast Asia, there is archeological evidence in the form of molds which were found in Bitera, Gianyar that they were also produced locally at some time in ancient history. When talking with Balinese about gongs, it’s easy to get confused, because they not only use the word to describe the individual instrument but also an ensemble itself or as a prefix to the name of an ensemble. For example: gamelan gong, or just ‘gong’ can mean Bali’s most common type of orchestra which is also known as gamelan gong kebyar: abbreviated, many people just say ‘gong’ (fortunately the ensemble also has many gongs in it!). Gong suling is an ensemble made up of mostly end-blown flutes but it is possibly referred to as such because it still has some gongs in it. Ensembles without gongs don’t use the ‘gong’ prefix however. In my next article I’m going to explain the different types of gongs you find in Bali.
