Is Bali’s heritage rice kept hostage to outdated regulations? The recent Ubud Food Festival (UFF) hosted a number of ‘Food for Thought’ panel sessions and discussions around sustainable farming and the origins of the foods we consume. Of note was the strong message purveyed by the panellists that “consumers need to engage directly with farmers to safeguard sustainability and give farmers a better deal.” The three biggest challenges for farmers, according to the panellists, are access to the market, finance and knowledge. The growing movement towards sustainable agriculture and food production in Bali is gaining momentum. It is, however, still a very steep uphill road, especially in the case of rice farming, an underappreciated and underremunerated labour, and for most rice farmers a Spartan existence. The central question is thus: can rice farming be made profitable?

I Made Chakra, founder and president of Tri Hita Karana, an NGO devoted to sustainable agriculture and technology using permaculture principles, declares that financial support for Bali’s rice farmers is crucial if the practice is going to survive. Balinese rice culture, he explains, is based on agama, the religious practices that are indigenous to Bali and did not originate in India where Hinduism was not based on rice culture. As far back as the 8th century the Ashram system, describing and guiding an individual through the 4 stages of life, as practiced in Bali, was still the same as that in India. This gradually changed over time into a more community oriented system based on rice farming. In the 11th century, a Hindu priest named Mpu Kuturan came to Bali from Java with the intent to build a cordon of coastal Hindu temple-fortresses around the island like Uluwatu, Pura Sakenan, Goah Lawah,. He felt the threat of the advancing islamisation of Java and in response created the Tri Kahyangan Hindu system, encompassing the worshipping of the trinity of the gods Brahma, Vishnu and Shiva. On the practical side, it was an agrarian community-banjar system that relied heavily on barter trade. This is the start of the establishment of the Balinese Hinduism we know today, a socio-economic-religious culture that pervades all aspects of Balinese life.

In 1487, the time of the Majapahit exodus to Bali, this work and legacy was continued by the sage Danghyang Niratha who continued to build more temples like Rambut Siwi in Jembrana to protect the island from Javanese invaders. The Tri Kahyangan system was built on rituals. It is in essence a water- religion culture using the subak system, a collaborative effort to ensure sufficient irrigation for all farmers in a given area. Rituals and ceremonies were created to remind people how and when to execute certain tasks or actions so they would not forget. It encompassed practices like seed selection, growing new rice seedlings in top areas closest to the incoming subak water, keeping the rice fields ‘pure’ by not putting compost as fertiliser or letting cows graze on fallow fields. The reasons and explanations for many of today’s surviving rituals and ceremonies are lost in the mists of time but the practice is still continued to the point where some of the obligatory rituals have become an increasing financial burden on the farmers. Cultivating a white rice crop is not a lucrative undertaking. Wholesale prices for the hybrid rice most widely cultivated in Bali, are low at IDR 6000 per kilo and the work is arduous and backbreaking. In addition, the cultivation of white rice requires expensive chemicals like fertiliser and weed control sprays. No wonder the younger generation increasingly opts out of continuing the family tradition. The consequences are nefast. The current generation of rice farmers are getting older and have to rely more and more on itinerant labourers. Consequently the rice fields are getting sold off when the older generation retires. Chakra insists there is another solution. Farmers can get a lot more income if they switch to the cultivation of heritage rice, i.e. the brown and red rice varieties that are grown from original nonmodified local seed widely used before the advent of the ‘green revolution’ when white rice culture became the norm. They also fetch more attractive prices on the wholesale

market at IDR 25000-30000 per kilo. A number of traditional rice varieties are already cultivated at different locations in Bali: primarily in Jatiluwih (red rice) and Gianyar. Although retail prices of heritage rice are higher than for white rice, the biggest problem with heritage rice is primarily a problem of marketing, of finding interested buyers for these rice crops abroad due to an old, ineffective government resolution which is still on the books and is effectively preventing the export of Bali’s heritage rice crops. The original resolution, proclaimed at the time of the Sukarno government, was the direct result of a big rat plague that decimated and destroyed the crops. It was intended to keep precious rice stocks in the country in order to feed the population rather than exporting a valuable commodity needed at home. The plague is long gone but the resolution has not been lifted and Bulog, the entity in charge of food distribution and price control, is still enforcing the old ban and most of the Bulog bureaucrats have long lost sight of the original intention. Red and brown rice varieties are in demand by consumers who appreciate the natural, chemical-free and sustainable nature and properties of these crops, and they are freely available in Bali. Heritage rice production is more than sufficient for the local market and is only held back from higher production and export by endemic bureaucratic obstinacy. In other areas Indonesia seeks to increase its exports to an ever demanding consumer base abroad. Bali heritage rice could be one of its proud exports. It’s high time the government understands this, lifts those old inadequate resolutions and takes down the obstacles to increased prosperity for Indonesian farmers. 8 Margaret Mead, Gregory Bateson and Highland Bali

In 1936 anthropologists Margaret Mead (1901-1978) and her husband, Gregory Bateson (1904-1979), moved to Bali and stayed for three years. Soon after their arrival, they retreated from the island’s lowlands, the focal point of scholarly and tourist activity, to the remote village of Bayung Gedé in Bali’s central highlands. Although they wrote relatively little about their work in this small community, which Mead called “our village, way up in the mountains, a lovely self-contained village,” they did leave behind a remarkably rich and extensive photographic record of their time there. At the time, Bayung Gede was as simple a village as they could find, allowing them to learn as much as possible about the underlying patterns of Balinese life without having to begin their studies in the more complicated and ceremoniously elaborate communities of southern Bali. Its inhabitants were upland agriculturalist, peasants who maintained their own distinctive customs. For example, unlike the Balinese of the lowlands, the villagers do not cremate their dead but bury them. Mead had over a series of field trips from the late 1920s through the late 1930s, become a student of the various ways in which different groups of people raise their children. Influenced by many notable scholars and scientists of her day, including John Dewey, Ruth Benedict and Erik Erikson, she postulated that just as the childrearing practices of various groups differed from one another, so too the resulting character of the adult members of those groups would also vary from one group to another. Mead set out to prove that the way a particular group of people – in this case, a primitive homogenous community on Bali – raised its children consistently yielded more or less a unique a specifiable and socially identifiable character. She sought to find the relationship between the habits and behavior of infants – suckling, sleeping, sphincter control, etc. – and the behavior of adults. For instance, Mead found that the Balinese male child was treated as a sexual object which resulted in emotional frustration that is perpetrated by their elders. In an effort to mold their behaviors, Balinese mothers habitually warn their children of dangers, chosen at random and without concern for relevance – “Fire!” “Snake!” “Feces!” “Scorpion!” “White Man!” “Tiger!” She also found evidence of mothers’ “emotional disassociation” towards their children. This emotional distance, Mead’s most famous and controversial observation, manifested itself in the way that Balinese “are physically active but affectively passive.” In her letters to colleagues, Mead contends that adult Balinese have no responsiveness at all to human beings. In fact, they are the least responsive people she had ever known, simply refusing to perceive of any intrusive fact by closing their eyes and saying, “I don’t understand.” She maintained that the purpose of this emotional non-responsiveness was “to keep the peace among the 800,000 people on this little island.” The main body of Gerald Sullivan’s book are 200 selected black & white photographs that Bateson took between 1936 and 1939, the vast majority never before published. In the substantial introductory essay, the author uses excerpts from Mead and Bateson’s field notes and correspondence to illuminate their ethnographic work. Tracing the project from its inception in their proposals to the publication of the anthropologists’ work, Sullivan shows how they used the photographs both as supplements to their written observations and as important elements in their theoretical arguments. Finally, Sullivan explores what the photographs revealindependently of Mead and Bateson’s project-about the Balinese character for the contemporary viewer. What is the most unusual and unconventional about Bateson’s work is the methodological and analytical importance that he gives photography in the study of anthropology. Using his photographs as notes in the place of illustrations, his aim was to make cinematographic records of “gestures, postures and movements expressive of emotion.” For the time, this was a remarkably prescient discussion. Bateson brought to the field both a Leica camera

for taking still photographs and a motion picture camera. Although his photos were not meant to be aesthetically pleasing, many are nevertheless quite beautiful. Having used substandard cinematographic equipment, his motion pictures are less so. A fact that is not generally known or acknowledged is that when Mead and Bateson were in Batavia in 1932, they hired I Made Kaler, a diligent young Balinese who spoke five languages, including “some 18,000 words in English, although he had never before met a native speaker of English.” He became their indispensable secretary, language teacher, fellow researcher and general aide-de-camp throughout the whole span of their on-site field research. He conducted his own interviews in Balinese, posing his own as well as specific questions suggested by the two anthropologists. Kaler’s own running field texts were to make up a substantial portion of the study’s field notes. The efforts of all three supplemented each other. Mead considered Kaler a “tireless perfect machine” and his ethnological work “better than most graduate students.” Many everyday objects - furniture, articles of clothing, architecture, offerings made to spirits and ceremonial accoutrements - are clearly and immediately identifiable in the Bali of today. I visited Bayung Gede several years ago, and I could even recognize the village’s layout with rows of houses on the slope of a hill and house yards enclosed by rickety fences. Dwellings pictured were more rudimentary than nowadays with shingle roofs. Only bamboo, mud bricks, grass and stone were used in construction. Every household implement was made of clay or woven material. Villagers appear dirt poor and scantily clad in ragged clothing in spite of the cool weather of the highlands. Mead under a floppy sunhat and Bateson’s unused movie camera and tripod can often be spotted in the corners of a number of photos. The images all together spontaneously capture the everyday lives of the men, women and children of Bayung Gedé, their homes and temples, the tending and raising of children, attitudes towards the human body, ways of learning, the experiences of boys and girls as they grow into adolescents and how they interact with their parents and other adults. Homebuilding and agricultural techniques, dance performances, life cycle and funerary ceremonies and many other fascinating details of village life not featured in Mead and Bateson’s publications are also amply illustrated. The photographs depict halfclothed natives with unabashed expressions in moments of intimacy, vanity, buffoonery, changing moods, all revealing the interpersonal behavior of upland Balinese. During the 12-year period that Bateson was married to Mead, his collection of 25,000 photographs taken in Bali stand out as among the most famous ever taken in anthropological field studies. Among all the illustrious photographers who chronicled Bali, Bateson is also the most significant photographer of Balinese highland communities and one of the first to pioneer the usefulness of photographs as memory aids to field notes, as invaluable anthropological and ethnographic tools and as a means to elucidate for others what he and Mead had witnessed. Podcasting 101 Before the 1950s (in the USA), radio was king. Every household that could afford a radio had one and families would gather after dinner to hear serials (the precursors to today’s soap operas), news, comedy, dramas, live orchestral performances and other forms of entertainment that relied solely on listening. After television arrived, radio fell out of favor. When I was young, radio was still popular, but mostly for music or sports. When I was a teenager, CBS revived its classic ‘Radio Mystery Theatre.’ I would huddle under my covers late into the night, long past my bedtime, thrilled and scared, to listen to new shows in the traditional radio theatre style. But with the arrival of MTV and cable television, radio listening because an endangered activity. When the advent of the iPod, and the rise of digital devices, radio has returned. Now we call it ‘podcasting.’ Podcasting offers a far greater diversity in programs than radio ever did. And it’s getting even more popular than radio.

And in the sprit of the CBS Radio Mystery Theatre, and for devotees of horror and mystery, there are podcasts like The Black Tapes, a fictional account of a journalist examining paranormal events. (Or is it fiction?) The same team just launched, The Last Movie, a serial about a secret underground film that supposedly drives watchers insane. If you check your mobile device, you will find that it has a podcast app that comes standard with the device. If you open the device, go online and check out the incredible range of podcasts that are available for downloading and listening. (Or simply Google ‘Top 25 podcasts of 2017’ as a starting point.) Say What? Question: I moved to Bali from Thailand a few years ago, so all my conversations with my ex have been pretty much online at this point. I generally don’t answer my phone when she calls because if I did, she’d call all the time. So after a few years of this, she’s stopped calling except for rarely, and this works for me. She still loves me, and I still love her, and we’re both still attracted to each other. This is the reason why we were dating in the first place. But she has no idea what boundaries are and appears unfamiliar with the concept of “alone time.” When we were dating, I didn’t get to have my own life. That’s why I broke up with her. It’s also why I’m hesitant to get involved with her again. On the other hand, is it insane to let boundary issues ruin what’s otherwise a good relationship with good sex? Dr. ZZ: So you’re asking me about getting back together with a woman who has no sense of boundaries or personal time? In fact, things were so bad the first time around that you broke up, moved away, and ignored all of her calls in order for her to get the message. Do you know what women call men who berate them with endless phone calls, have “boundary issues,” and “still love them”? Stalkers! Even if this woman is just a person who is blissfully unaware of the concept of personal space, you’re doing her a disservice by remaining in contact with her. Chances are she thinks her online connection with you is a gateway to getting back together, when in reality you seem to be keeping her on the back shelf just in case you feel like reaching out down the road. Do both of yourselves a favor, and end contact for a while. I’m not saying you have to wait for “someone who has no issues” because, let’s be honest, everyone has issues. You just need to be more discerning and find someone who doesn’t have giant neon red alarm issues blinking all around her. So buck up, and get some self-esteem about your own identity. That way you won’t feel like you have to settle for a woman with a boatload of problems. Question: My wife and I have been married for 11 years, and our 7-year-old son’s enthusiasm for life brings me

great joy. Now we are planning a second child, a girl, whom I am imagining with blond hair. This would not be so spectacular were my wife not Asian. In concern that I carry the gene for alcoholism as well, and that we may have dodged a bullet with our first-born, we have asked my brother, who has my blond coloring, and who does not carry the alcoholism gene, to contribute sperm for fathering our next child. Although gene editing is not available publicly yet, it will most likely become an option in the next couple of years, and it is available both legally and illegally now in certain countries. My wife works in a medical lab in one such county, giving us access to this technology now, all of which has me pondering the possibility of creating a custom version of our next ideal offspring. There are, or course, many unanswered questions. The general consensus is that before any such options are made popular, Science must first better understand the entirety of the function of the gene(s) in question regarding what else, if anything, these genes contribute. There are also some ethical/regulatory issues in play; so my personal opinion goes back and forth. Do I want to experiment like this to “custom design” an offspring? Or do we take our chances as we did with our son? I’d be interested in your opinion if you think this topic is not too esoteric for your readership Dr. ZZ: Esoteric or not, the subject of gene editing is beyond

my field of expertise; issues of “control” and “power,” however, are not, and I wonder why you would want to exercise or entertain the notion of having so much control over yours and another person’s life. The old standby joke pertains: “Life is what happens when you’re busy making other plans.” Right now on certain social media websites, for example, there are between 58 and 71 gender options that people can choose from in claiming a sexual identity. To imagine that your test tube offspring is going to happily conform to your ideas of what you imagine he/she should be is a setup for emotional disaster. Your role as a parent is to love your offspring and to allow them to be who and what they are, not who and what you think they should be. Control is not a sound strategy for happiness; adaptability is. You may want to look at the aspects of yourself that prompt you to even want to control your own and another person’s life to this extent. A large part of enjoying life is simply in adjusting to the reality that the only constant is change. Even King Midas with his “golden touch” learned in his conundrum that “having it your way” can be disappointing in the end. Is there wisdom in the possibility of future genetic editing for conditions like MS, Parkinson’s and Down Syndrome? This is something that we as a society, a people, will most likely need to address in the not too distant future. Is genetic editing for appearance a wise next step? Not in an already appearance-obsessed world! Freedom comes in letting go of the outcome and in cultivating inner joy - not in controlling the visual effects.

Jindee and Suriawati excel at designs marrying contemporary sophistication with Indonesia’s culture and craft and natural materials. On a gang just off the intersection of Jalans Teuku Umar and Diponogoro, CushCush occupies an old garment factory, repurposed for the manufacture of furniture, accessories and housewares in a modern Nusa Tenggara vein. CCG occupies a small, bright section and stands as the operation’s interface and resource linking art and design. At press time, retrospective exhibition Natural Curiosities: A Tribute to Natural Wonders, Artisans and Designers is on view, celebrating 16 years of CushCush’s creations, showing threads of exploration and innovation using local materials. Now in the final days of the show (closing is 9 June), the gallery opens by appointment only (contact Gallery Assistant Sagung, 0361 242 034). With no parking, arranging a lift there and out is essential. Just as CushCush collaborates regularly with other professionals in craft, hospitality, and design industries, Suriawati and Jindee see the need for greater collaboration between artists of varied disciplines. Year-round events and workshops at CCG bring the public (especially children) closer to art and artists.

The multidisciplinary group was then led through Bali’s markets, traveling on foot and by bemo, newly seeking that which could fire their imaginations. These markets and merchants’ districts are identified right alongside museums and artists’ studios on CCG’s Denpasar Art Map published for the exhibition. Denpasar 2017 essentially urged all comers to see the city’s markets with the eyes of art lovers if not as artists. CCG embraces the longstanding role of artists as tour guides to our times, chroniclers of society, and dreamers of our future. energetic discourse on Denpasar’s culture, and a greater public appreciation of local urban identity. Bali’s visual art scene is headed for greater triumphs, now that artists who met during Denpasar 2017 are forming their own communities and collaborations.

For three months, CCG‘s tranquil white cube became something of an agora, its walls vibrant with the faces of work and commerce, as seen through diverse media. Purposeful hustlers, images of enticing arrays of goods, and reimagined artifacts of the city, became new icons of Balinese life and culture.

A time that becomes the estuary of life’s light and dark moments. A metaphor of how we may perceive two different things within the same instant, while being lulled in its beauty. With this theme we want to undepurstand both the struggles and victories of Denpasar people and its lovers, to interpret Denpasar as their homes. We hope to uncover both the bright and the dark sides. The process of convincing, building, maintaining, or even requestioning.

CCG’s programs for children (PlayPlay and Charcoal for Kids), have seen collaborations between generations and disciplines, spilling into this year. There were charcoal-making classes (imagine this: a conte crayon made from a camphor or a mango tree), charcoal drawing sessions where young children could try out the medium for the first time, and Drawing Future: simply planting the seeds of inspiration and creative thinking by letting children experiment and discover art on their own terms. One workshop was a collaboration with adult artists and resulted in a fundraising evening for a charity. For Monster Menari, performance artist Adhika Annissa engaged youngsters in dance experimentation, while Monez Gusmang captured the scene in charcoals in an art brut style, which in turn reappeared in a limited-edition run of scarves.

Last year’s Denpasar 2017 was an ambitious project from CCG which elevated the profile of many resident artists, dancers, and craftsmen, some of them young and virtually unknown. With the theme of Bahasa Pasar or Market Language, 17 artists and groups (4 by invitation, 13 chosen by jury), produced art delving into the identities and spirit of Denpasar itself. Their stories and struggles, some involving migration from other islands, were revealed sometimes poignantly, often boldly in a great array of media. Participants included an illustrator working as a barista and a comics artist from Riau. To prep the artists taking part in the show, CCG had pioneering graphic artist Arief ‘Ayip’ Budiman and cultural activist/deejay Marlowe Bandem give short talks about the significance of the city’s market culture.

Now, CCG is calling for applicants to participate in Denpasar 2018, with its theme of jingga. Jingga is the color of dusk, that intense moment just after sunset, experienced by us in sometimes profound ways. CushCush literature describes it best:

there have been many developments in terms of how people practice religion, both in terms of spirituality and customs. A turning point I believe was the first Bali bomb in 2002 – rather than retaliate against the extremist elements in Indonesian society which Balinese saw as Islamic terrorists, religious leaders here attempted to build the core values of Bali’s culture and religion stronger via a concept termed ajeg Bali. Basically this meant promoting anything Balinese: language, food, music, dance traditional costumes, and of course religion. Balinese were encouraged to greet others with “Om Swastiastu”, even on the phone, and all meetings or speeches would be opened with this. At this time, the provincial government applied for additional public holidays that would be recognized nationally such as Nyepi. Nowadays my children have many days off for local ceremonies which were not days off in my wife’s generation: for example, Pagerwesi. Most recently, at government schools and offices it is compulsory for Hindus to wear traditional garb and pray together on new and full moon. Ceremonies got bigger and more lavish, and with the popularity of photography and social media Balinese themselves started to document ceremonies, both professionally and at an amateur level. Sometime after this, religious pilgrimage known as Titra Yatra became common, even to the extent that, particularly when it involved bus tours to Java and Lombok, it could be termed a new form of domestic tourism. Devotees are transported around in big buses, which on many occasions travel in convoys with police escorts.

Perhaps the most curious development within Balinese rituals themselves is the trend of groups of young female priests going into trance together spontaneously. I witnessed this recently at a small-scale ceremony in Kuta where the girls acted like wild boars and were eventually appeased by heavy dousing of holy water. According to Balinese friends this phenomenon is happening everywhere in Bali these days. In my next article I’m going to look at how modern technology has affected Balinese ceremonies and traditions.

ESPACE CANGGU Joining the trendy surfer set to ease their tension and aches and pains is the new Espace Spa located on the road between Deus Restaurant and Echo Beach. This ultra-modern building is two stories and very spacious. The delightful décor consists of light rattan furniture with brightly coloured African wax fabric cushions creating an atmosphere of being light and airy. Espace opened in December and is still in its “soft opening” phase with a planned grand opening in a couple of months.

which felt incredibly good. A gentle face and scalp massage had me in a state of bliss at the end. Following the massage I had the new Facial Organic Bamboo Charcoal that includes a scrub and conditioning mask enhanced with essential oils. This facial is good for cleansing and detoxing the face. The entire ritual consists of cleansing, scrubbing and a soothing face massage followed by the mask. During the process time she massaged my hands and arms and then a gentle scalp massage. Espace has been in operation in Seminyak since 2001 and is well known for great proper massage thanks to their European master trainer. This is a spa where you know you’ll get a great massage that actually benefits your body and its needs. I had a little tour of the new spa when I first arrived viewing the 16 treatment rooms, some single and others double. This spa can handle a group of ten or more people at one time. The manicure/ pedicure room and cream bath facilities are beautifully outfitted. The locker room is equipped with 14 private lockers with a soft white bathrobe inside. Showers and toilets are for your convenience on the ground and first floors. After enjoying a cup of cold ginger tea I was greeted by my therapist in the reception room and accompanied to the locker room to change. When I emerged a few minutes later she was waiting for me outside the door and led me up the expansive staircase. Then I was guided to one of the single rooms and told that I would receive the full body Traditional Oriental massage first. This is Espace’s signature massage which is stimulating and rejuvenating using long strokes, deep stimulation on muscles and joints along with great stretching and pressure points. I found the massage bed very comfortable being wide and long with a face hole in the bed with a soft cushion horseshoe around it for face comfort. Looking through the tunnel of white sheeting I could see a small garden of flowers below. So many massage beds are quite narrow with an uncomfortable face cradle at the end of the table. This one was a pleasure to lie on. The massage commenced with some gentle rocking on the back to relax me. Then strong stretches to my legs which really needed it. Methodically she worked on each leg easing the aching muscles then placed a small cushion under each ankle for comfort of the leg. The splendid back massage erased all tension. Then she surprised me by asking me to lie on my left side, which is a common position in Shiatsu and Thai massage. Instead of applying oil she covered my leg with the sheet and pressed pressure points on the outside and inside my leg. Some of the points almost had me crying out in pain but I had to grin and bear it knowing it was doing my body good. The whole massage seemed to go on forever culminating in a band of fabric under my neck and pulling up on the occipital

Maya Sari, the lead restaurant at Maya Ubud, Peliatan, has seriously upgraded their menus under the guidance of their new food and beverage management. Dining can be inside the main room, on the garden terrace or outside above the passing river. For a starter the Beef Tataki is served with daikon, radish, mint, horseradish and a ginger, lemon and soy dressing. Interesting, healthy salads are now a feature of this menu. Passion Fruit & Seafood is with poached salmon, scallops, prawns and tropical fruits. Thai Chicken is tossed with mesclun salad, cabbage, avocado, mango, red peppers, cilantro, green onion, bean sprouts, cashew nuts, soy and sesame oil. The Quinoa and Rocket is about as healthy as you can get; chick peas, lemon, garlic, turmeric, paprika, zucchini and pecorino cheese. New additions to the menu include Laksa Lemak, a spicy seafood soup and Atlantic Salmon, served with an orange beurre blanc sauce. Old favourites are still there, top of my list are the New Zealand Lamb Chops [pictured] perfectly prepared, with pink flesh, crisp surrounding skin still attached.

The Clubhouse, is it Sanur’s best kept secret? Specialisation is rare in Bali restaurants where most menus try to cater for the world with oversize menus. The Clubhouse is simple; just steaks, hot dogs and fish & chips. However most go there to enjoy one of the best steaks in Bali. Meat that is genuinely imported from Australia or New Zealand [not Aussie beef cattle raised in Sumartra] and then dry-aged on the premises. Hidden away on the back streets of Sanur it is not easy to find for the first time. It is in behind Hardy’s and The Oasis; Jln. Kesari II Gang Penjor No 15, sign-posted on Jln. Danau Tamblingan. The Steaks can be ordered in various sizes from 250 – 400 grams. They come with very large potato wedges, and salad. Or if you prefer the smaller steak can be had in a Sandwich or Burger. They also come with the giant wedges and only Rp.120,000. Malabar is one of Ubud’s many Indian restaurants. It is small, intimate and reeks of Indian spices. Indian restaurants are the only ones that you can recognize by smell from 20 metres. You can almost taste the smell! This one specializes in India’s cuisine of the south, Malabari, from the famous area of Kerala, where the curries are milder and more aromatic. You do not come here expecting a fiery curry! The restaurant is located down a small gang [Arjuna] that runs off Monkey Forest Road at the top end. As with 90% of Ubud’s restaurants these days, parking is a problem although the ban on Monkey Forest Road seems to be relaxed in the evenings. A small menu and that is very welcome. Malabar specialises in chicken, fish and vegetarian dishes. Good samosas that are different from the norm! It is family run and all is prepared to order so a small wait is often the case. When the food arrives, you have already forgotten that. Great value for money! Le Patio actually has one, or two, but it is also nice to eat in the open central garden area, very relaxing. It is just metres away from the throbbing noisy Raya Seminyak. Whilst it is under French management the menu is a mix of local and Mediterranean dishes. If you want French you can order a real Salade Nicoise [greens tossed with tuna, tomato, corn, onion, black olives, potato, boiled egg and honey vinaigrette], Steak Tartare or the very French Fish a l’estragon [mahi-mahi in a wonderful tarragon cream sauce]. There are unusual dishes on the menu such as the Tuna Sesame Steak [with a balsamic caramel sauce] or Grilled Chicken, greens, cashew nuts and pineapple, served in a pineapple boat. There are Sandwiches on Ciabatta or Burgers, if you just want a snack. The local menu leads off with a Ginger Chicken and includes the ever popular Indo-Chinese Sweet and Sour Chicken [Ayam Asam Manis]. The kids love the Gelato Twists.

Hai Ling has replaced the long closed Feyloon Restaurant on Raya Kuta [opp KFC]. Still serves Cantonese cuisine with a large selection of dim sum, in fact nothing much seems to have changed since it was Feyloon.

The Hub has been all the rage in recent months, in the Sanur area, and threatens to be one success among many failures to open on The Bypass. It is on the northern end and is a giant glass house which seems to be the latest fashion in Bali restaurants although this one is almost always busy, the others almost always empty. Although what a yellow Volkswagen, hanging from the roof, does for the atmosphere I know not. The Hub is offspring from the well established Bali Kopi House of Butterfly Coffee fame, at the southern end of The Bypass. Unlike its brother restaurant the clientele here is 90% local [most with large SUV’s] which says something but I am not sure what? The food is normal modern café fare seemingly with the emphasis on presentation. Botanical is about to open on the street where it all began, one that has continually kept changing its official name but I still call it what I christened it back in 2002, Eat Street. Back when Mykonos and Christalada were the only restaurants, surrounded by rice paddies, and everyone else was beginning to move in. Under experienced and successful management Botanical promises to be a welcome change with its modern and innovative café style menu, not same-same like most of the rest. A sure success! Hamburgers! The Nirvana Burger Bar is also a sports bar. Many screens cover all of the world’s major sporting events, as well as all the popular Australian ones. If sport bores you then the bar area and the front section of the restaurant is your escape. The Burger Bar is next door to the Nirvana restaurant, on the Seminyak side of Eat Street. A few years ago I commented that even though the majority of Bali restaurants, including some fine dining ones, had hamburgers on their menu there were still no specialty burger restaurants. Then they came, in droves….. many of them were not to last the distance, and have already gone. Hamburgers have existed in Australia for almost as long as they have in the USA. They are only a very recent addition to the menus of the rest of the world. Although there were a few attempts to do so, such as England’s awful Wimpy, and their even worse street food burgers which had the beef patty actually boiled and placed alone in a soft bun! Late night drinkers eat anything. So it is no surprise that an Australian restaurant is the longest running specialty burger site in Bali. No they are not gourmet burgers, wagyu or from other exotic cuts or processes of meat. They are just simple plain hamburgers [with many filling options], which after all is what most people want. A quick snack, with taste! You can not beat the basic classic; beef patty with lettuce, tomato and onion in a sesame seed bun. At Nirvana it is very good [pictured], served as they all are with French fries, or chips as they are called in Australia, The ‘Aussie Burger’ appears on many Bali menus, sadly as misrepresented as Thai’s Tom Yum Goong or Beef Salad. It differs from the American way of preparing and serving a hamburger. In my younger years I made thousands of them on a working holiday. There are many small differences from the American, 1st the bun is toasted [the American is

QUICK REVIEW sometimes steamed]. The beef patty is hand moulded from the fresh mince, sometimes with finely chopped onion added, even some egg yolks as well as normal seasoning. It has all the ingredients of the classic hamburger plus one special, pure Australian element, a slice of beetroot [without that it is definitely NOT an Aussie Burger]. The Cheeseburger option has the top half of the bun removed from the grill half way and the underside covered with a mound of grated cheddar cheese before returning till the cheese begins to melt. Any added egg is cooked on the hotplate in an egg ring, rarely seen in Bali.

Nirvana just about gets it right. Their version is a cheeseburger with fried egg added. Whereas the true American hamburger is properly best represented by those available at the Hard Rock Café, a larger sesame seed bun, fired patty, sliced dill pickle and table relishes for you to add as you please.

The variations on the classic are endless. Top of the list is, as always, the Hawaiian, with a pineapple ring added. A Bali fusion one, the Volcano, has a chilli sambal to give it a bit of extra heat. The Barbie Burger is still beef but with BBQ sauce. There are also double cheese and bacon & cheese burgers.

: Great value for this area!

The Chicken Burger, chicken patty, lettuce, tomato and cheese, uses the Aussie colloquial name as a Chook Burger, which confounds all but Australians. There are also Fish and Vegetarian Burgers. A Mini Burger Platter is 3 miniatures, one of each; beef, chicken and fish. To any of the burgers you can double up on or add your own favourite ingredient, there is a long list of available extras. As an alternative to a burger meal try another Aussie standard, the Steak Sandwich. Apart from the beef fillet, tomato, lettuce and onion it also has beetroot, cheese and a fried egg. The Nirvana Burger Bar seems to throb, day and night. There are other snack items that go very well with a drink at the front bar. You can order Chicken Wings and Nuggets, Onion Rings or a plate of Potato Wedges [served with a cocktail dipping sauce], or a plate of Crumbed Calamari. Simple cuisine served well, at reasonable prices. No wonder the place is always busy!

THE SKIN WINS Recently a friend from Morocco visited me, bringing gifts of lovely natural body care products: rose water, orange flower face tonic, argan oil, frankincense. I was delighted to present her with some of the locally made, natural personal care products available within a 20 minute stroll of my house in Ubud. Over the years I’ve researched and written several stories on commercial skin care products, and as a result have stopped using most of them. Those attractively packaged and heavily marketed creams and lotions contain parabens, phthalates, sodium laurel sulfate, formaldehyde and toluene to name just a few chemicals you probably wouldn’t rub on your car, much less your epidermis. And in Indonesia it’s almost impossible to buy skin products that don’t contain some form of bleaching agent (hydroquinone is the most toxic) to make the skin lighter.

Here are four of the brands I use. I’ve met the people who make them and know them all to be ethical and committed to using only natural ingredients. Commercial products contain preservatives and stabilisers which make them so chemically stable that they never degrade even after years on the shelf. Your skin is your largest organ, covering an area of about 20 square feet. It is absorbent, so whatever you use on it will penetrate the tissues and eventually enter the blood and travel to the vital organs; children are especially vulnerable to transdermal toxins. Personal care products contain carcinogens and chemicals which collect in the body over many years. In 2006 the European Food Safety Authority banned propyl paraben in food (parabens are just one of the many dangerous chemicals found in personal care products) because of evidence it disrupted sex hormones and sperm counts. North American authorities are less concerned. From the FDA’s own website: “The Federal Food, Drug, and Cosmetic Act does not require cosmetic products and ingredients to be approved by FDA before they go on the market, except for color additives that are not intended for use as coal tar hair dyes.” Buyer beware. For several years now I’ve been using natural skin care products created here in Bali without chemical additives. They’re made by real people from real plants, oils and other natural materials on the principle that if you can’t eat it, you shouldn’t put it on your body. Natural skin care products are

Ibu Lilir and her husband Pak Westi are both descended from traditional Balinese herbalists. They’ve been working with healing plants all their lives and in 2011 formally established Nadi’s Herbal (www.nadisherbal.com). Deeply impressed by her knowledge of healing plants, I’ve been consulting with and writing about Ibu Lilir since I arrived in Bali in 2000. Its products include steam-distilled essential oils, body balms, soap and hair

Created as a healthy alternative to synthetic air fresheners, the aromatherapy mists are made with pure essential oils and rainwater harvested from the slopes of Bali’s volcanoes. Mists use a lot of demineralised water; in a sustainable livelihoods program for women living in rural households, the rainwater is collected in special containers in open areas directly from the sky. It’s tested in the field, then further purified through ceramic and carbon filters before essential oils are added. Ubud Botany Interactive (www.ubudbotany.com) is the business of a dedicated young local botanist named Mbak Dewi. Dewi is a farmer’s daughter who earned Bachelor and Masters degrees in Botany from Udayana University and is now sharing her knowledge with visitors. Her programs include agricultural and botanical walks, Balinese cultural tours and a workshop to make coconut oil. From her little shop at the end of Jalan Kajeng she offers daily workshops in making natural shampoo, sun protection cream, face masks and traditional healing scrubs/boreh from plants. She also has a small range of natural products for sale, including essential oils she makes herself. The walks and workshops offered by Ibu Lilir, Pak Westi and Dewi provide fascinating links to a rural Bali that is fast disappearing. Rapid development is paving over the pathways and rice fields where healing plants grow wild. Traditional recipes for therapeutic teas, scrubs and skin care products are being lost as the new generations prefer commercial products. Our support for these small businesses has many benefits. It keeps alive traditional products and therapies and demonstrates their value to the young Balinese who are working in these businesses. It encourages farmers to continue growing traditional herbs and flowers. It gets visitors out into the countryside learning about this facet of Balinese culture. It gives us great ideas for gifts. And it provides us with safe, affordable personal care products. The skin wins.

Indonesian pair sentenced to 15 years for killing Dutchman in Jimbaran

Two Indonesian defendants have been sentenced to 15 years in Denpasar District Court over the murder of a Dutchman in Bali’s quiet Jimbaran area. Winda Wilantara, 23, and Andika Budiyanto, were found guilty in court on Thursday of the premeditated murder of elderly Dutch national Robert Goelhoed. The panel of judges, lead by Ketut Suarta, handed down a more lenient sentence than the prosecutor’s demand of 18 years. “We sentence the defendants to 15 years imprisonment,” said Suarta, as quoted by Kumparan. The defendants along with the prosecutors both have one week to decide whether or not they accept the sentence or will move for appeal. The expat was killed by Wilantara and Budiyanto on Oct. 26, 2017 on Jl. Ambon in the Puri Gading housing complex area of Jimbaran, the court previously heard in the defendants’ indictment. The pair made a plan to kill Goelhoed the previous day on Oct. 25, 2017 while staying at a condotel belonging to the victim on Jl. Dewi Sri in Legian. In addition to killing the victim, the defendants also stole from the Dutchman, including two cars. It all went down after the victim allegedly asked the two defendants to perform a sexual act in his bathroom, the court heard. With assistance from Budiyanto, Wilantara killed Goelhoed, striking him on the head with an iron bar then proceeding to cut him with an axe until he was no longer alive, prosecutors said. Goelhoed’s body wasn’t found until over a week later when a neighbor, walking her dog, reported a foul stench coming from the house. Wilantara was later arrested on Nov. 7 in Lampung, Sumatra, while police tracked Budiyanto down on Nov. 9 at the home of his parents in Bogor, West Java. Violent crimes are not common in Bali, but a Japanese couple was actually killed in the same neighborhood, Puri Gading, last year, in what was ruled to have been a burglary gone wrong. But for many animals, the islands are far from a paradise destination. Among the popular attractions on offer are a number of wildlife venues, where animals such as elephants, dolphins and orangutans are held in captivity, specifically for the purpose of entertaining tourists.

A new report published by nonprofit World Animal Protection (WAP) investigated 26 of these venues and painted a bleak picture of the conditions that these animals are forced to endure every day. WAP found that all venues failed to meet the basic needs of the animals they kept, highlighting various welfare issues that led to significant suffering. These included extreme restraint through cages and chains, limited opportunities to naturally socialize with other animals, participation in stressful and harmful activities, forced interaction with people, non-existent or insufficient veterinary care, and inadequate nutrition and diet. Researchers surveyed more than 1,500 animals and found evidence of dolphins being kept in severely insufficient pools which were far too small for them. Elephants suffered cruel and intensive training that involved severe and traumatizing restraint and pain, and orangutans were forced to entertain and take selfies with long queues of tourists. Among the more disturbing findings, one venue was even found to have filed down or entirely removed the teeth of its dolphins to ensure that they were unable to inflict serious bites on swimmers. “It’s a tragedy that Bali, such a beautiful destination for tourists, forces its captive wild animals to endure such grotesque and horrific conditions,” Steve McIvor, CEO of WAP said in a statement. “Behind the scenes, wild animals are being taken from their mothers as babies or bred in captivity to be kept in filthy, cramped conditions, or repeatedly forced to interact with tourist for hours on end. “Bali is an idyllic paradise and its economy relies on the millions of tourists who travel there each year. Sadly, until Bali improves animal welfare at these dreadful venues, we are urging tourists to avoid them,” he added. This is not just a problem in Indonesia. Across the world, wild animals are being captured or bred in captivity to be used in the tourism industry. In light of the report, WAP is encouraging holidaymakers to boycott travel companies that promote and support cruel venues. “If you can ride, hug or have a selfie with a wild animal, then it’s cruel-don’t do it, no matter how many ‘likes’ it will get on social media,” McIvor said. [ Newsweek May 22, 2018] Aussie mum’s Bali tattoo nightmare LISA Anne Tapp and her family had just had a blissful holiday in Bali, a destination she loves - but things turned sour after they returned home. While in the resort area of Nusa Dua, in southern Bali, she treated her six-yearold son Benjamin to a henna tattoo. However, shortly after getting back to Australia earlier this month, Benjamin suffered a reaction that may see him scarred for life. Now, the Australian traveller is warning others of the dangers. “Just thought I would put out a warning,” Lisa said. “My family and I just got back from another amazing holiday in Bali. But a week after being home my six-year-old son started to break out on his arms and leg where he had henna tattoos done.” Lisa said the problem lay in the tattoo’s black colouring, which indicates that chemicals were added to it. “The tattoos were black and not brownish red,” she said. “I have since found out that the black henna has nasty chemicals added to it. They add PPD (paraphenylenediamine) and even kerosene.” It’s likely that the scars will remain, although there’s hope they will fade over time. “The hospital and doctors back home have told me that my son will more likely have permanent scarring on his two arms and leg. “So please everyone enjoy the beautiful Bali and beautiful Balinese people but stay clear of any henna tattoos especially if they are offering in the black colour.” Lisa’s warning comes after Chinese media reported that a 30-year-old man was taken to hospital days after returning from the Indonesian holiday isle. He had suffered a severe allergic reaction to a henna tattoo, with his arm turning red and becoming severely swollen. Problems with dark henna tattoos in Bali are so common that our government has issued a warning, however many tourists remain unaware. The Department of Foreign Affairs and Trade states in its travel advice for Indonesia: “Avoid temporary black henna tattoos which often contain a dye that can cause serious skin reactions.” It’s not just Bali that has this problem either; cases have been reported around the world, including seven-year-old Madison Gulliver who was left with horrific scars after visiting Egypt, and Theo Luckett, 7, who was scarred in Bulgaria. While PPD is present in many products, such as sun cream and hair dye, it is usually used in very small doses. The addition of PPD into henna is now recognised as a public health issue, as this allergenic chemical often causes hypersensitivity reactions in children. The rear engine of the KMP Labitra Adinda caught fire around 2:20pm right as the boat was queueing to dock at the Port of Ketapang in Banyuwangi, East Java, according to Banyuwangi Water Police Comr. Subandi. The ferry was carrying 18 passengers and 12 crew members, along with five trucks, five dump trucks, two motorcycles. The route across the Bali Strait is a popular one, leaving from the Port of Gilimanuk in Jembrana, West Bali to Ketapang and is usually just a quick 30-minute ride–that is when the ferry doesn’t catch fire.
