WOODEN SMS Have you ever wondered about those tiny little grains on the floor, or on top of your bed cover, or under furniture. Technically, they are the excretion of cellulose-eating termites, dropped down from whatever wood the termites are chewing. Personally, I see them as a kind of message, from friendly but not very bright little creatures, to let me know they’re there. I draw a chalk circle on the floor before I sweep them up, so we remember where to spray. The Indonesian name for the insect is rayap, so you need anti-rayap spray. There are organic sprays but I’m not sure they work. Furniture makers recommend Lantrex, which they use for treating timber. Or there’s “Agenda” (in a small bottle with blue sticker), which you can get at any building store/ toko bangunan. Be careful not to get it on your hands or inhale it, and keep everyone away from the area sprayed for a few minutes. But do spray, and keep spraying until the SMS stop coming! I’ve seen antique furniture - and structural support beams eaten through by those tenacious creatures. TAKSU’S VIP CLUB Having known Taksu Spa since before it opened, I love to watch as their management keeps refining their offerings and creating new spaces. Their 2016 extensive upgrading and expansion construction is coming to an end, with the new Kirana Pavilion opened successfully for Ubud Writers Festival and yoga teacher training workshops. The Kirana Pavilion is a very useful, selfcontained venue that sits just above their famous river walk. With comfortable seating for several dozen people, it’s perfect for group events; still close to the Garden Cafe but definitely feeling like your own private area.

Considering The Memoir
Reckoning: A Memoir- Magda Szubanski ‘A brave and tender book about everything that matters most in life.’ Cate Blanchett By Uma Anyar Magda Szubanski, the much loved and admired Australian actress and comedian, was one of the headline speakers at the 2016 Ubud Writers and Readers Festival. The spacious Neka Gallery venue was already packed with curious and supportive fans when I arrived a few minutes after the introductions. It was standing room only but no one complained as we all wanted to hear Magda talk about her memoir, Reckoning. The line between an autobiography and a memoir has grown fuzzy and the terms are often used interchangeably. While autobiography has become a bit old fashioned and faintly tainted with scholarly nostalgia, memoirs have turned out to be enormously successful over the last 20 years. Several literary critics and historians have attributed the popularity of the memoir craze to the fact that we live in a “confessional age”, which grew out of the psychoanalytic/therapeutic era followed by pop psychology counseling and the various self-help movements that have reshaped our understanding of ourselves and others. The therapeutic model has re-addressed and embraced the human need for confessional release outside the purview of the Catholic Church. It is interesting to consider that St. Augustine’s book Confessions, written in the fourth century, would today be considered a memoir. Times Book critic Michiko Kakutani has stated, “For St Augustine “Confessions” was a spiritual journey to redemption, something between him and God. The conversation between one’s self and God has become a conversation with, and about, the whole world.” Today, we cannot watch a contemporary TV drama without some character offering ‘to be there for you, if you ever want to talk’. What used to be private is now public and the norm – part of a modern way of life. Confession can also be a powerful political tool. Magda Szubanski is a savvy gay rights activist. Magda came out in 2012 while campaigning for gay marriage in Australia, appearing on
The Project to announce: “I am gay, gay, gay, gay, gay.” She later described the revelation as ‘the most empowering thing’ she has ever done. She is well aware of the power a book about her own journey as a lesbian will have on others in the international gay community. She may have lost a few fans when she came out, but judging by the admiration of the audience at her Festival session, her career and popularity is stronger than ever. Magda Szubanski’s memoir opens with, “If you had met my father you would never, not for an instant have thought he was an assassin.” I think that understated attention-grabbing line deserves to join the ranks of those other best first liners we test each other’s memories over glasses of beer: What novel begins with, “It was the best of times and it was the worst of times…” Or, “Call me Ishmael.” or “Happy marriages are all alike; each unhappy family is unhappy in its own way.”? The voice in the book is much like Magda’s in real life. A straightforward style with an ever-so-slightly disarming honesty that made me trust her. Her father, Zbigniew Szubanski, came from a good Polish family. At sixteen he signed up to be part of group of Polish underground resisters and assassinated other Poles who were collaborating or providing information to the Nazis about where Jewish families were being hidden. Magda conveys a complicated but convincing reaction to this information. “He loved tennis, he loved ballet, he loved good conversation. Out there in the Melbourne suburbs—mowing the lawn in his terry-towelling hat and his Bombay Bloomers; in the lounge room doing the samba at cocktail parties; late at night playing his harmonica in the seclusion of the laundry—you would never have guessed that he was capable of killing in cold blood. But he was.

To be a little god with a gun, and the power over life and death. He spent the rest of his life trying to come to terms with what he had done. I grew up in the shadow of that reckoning.” Magda also conveys her gradual youthful awakening that she likes girls rather than boys. She covers her Catholic girlhood, her depressed, rebellious teenage years right into the political feminist period at university where she met and became involved with another lesbian and connected with actors. During her session at the Writers Festival she was asked about her take on the current gay climate. She said, “Oh, it is much better, not great, but much better. We need to do more to make it even better.” Magda has been open about her struggle to accept her own sexuality, previously admitting to Marie Claire: “When I was younger I used to pray to be straight,” and saying that she had only grown to accept herself after years of therapy. “The bottom line is there’s nothing wrong with being gay. I tell you, if there was a tablet you could take to cure it, I wouldn’t take it.” Society would be much better advised, she said, to “look at the genetic predisposition for prejudice and intolerance, find a pill that will cure that, [and] put it in the water, problem solved”. In May 2016, Magda Szubanski’s Reckoning: A Memoir won the Australian Book of the Year Award. Readers may buy Szubanski’s book because they know her from TV and films. She has performed in the television comedy programs The D-Generation, Fast Forward, and the very popular Kath & Kim where she played Sharon Strzelecki. But, they will finish Reckoning with a new admiration for Szubanski as a writer.

The Frugal Balinist *Poncho pointers: This single large sheet of vinyl with an opening in the center for the head and an extra hood to ward off rain and wind is cheap, waterproof and offers reasonable ventilation. If used properly on a scooter/motorbike or bicycle, a poncho will cover the head, arms, thighs plus a bag or backpack. What you don’t want is for the poncho to blow around in windy conditions, a super pain and dangerous. The wings and sides must be tucked in so the fabric doesn’t get caught in the chain or wheel spokes. Riders must anchor the front and sit on the back section. Wearing rain gear you can sweat like a pig, so even though the poncho has wind difficulties it is cooler and the rider will stay reasonably clean and dry. However, a poncho doesn’t stop water splashing up from underneath (wheels, road, side-blown rain) and in serious rain, you will get wet. A Gajah brand poncho costs Rp40,000-Rp50,000 depending on the size. A lightweight inexpensive breathable rain jacket +/- rain pants (celana dan baju) are your second choice for Rp30,000 to Rp100,000 (depending on quality). Other uses: Ponchos can be stretched out as a tarp to cover your bike, keep the rain off it or hide it; as ground cover, curtain or screen; to blackout windows; as a makeshift basket (if you tie corners together) and as a bucket or earth liner to hold water.

If you’re a group of 8-10 people, call first and ask the marketing or sales manager for a group discount. Also if you are staying longer than 3 days, ask for a discount. Asking for the “local price” is also a bargaining line that you can try; occasionally works! Note: If you take your passport with the KITAB permit to the POLDA Bali office in Denpasar, they will issue you a letter (surat laporan SKTMD). How do Balinese view Animals on a Spiritual Level? In my last article, I talked about witches appearing in the form of animals. These are what we would call “shape shifters” in the West. These animals can be seen as bad signs and may even be hunted down and killed. ‘Evil’ animals could be snakes, lizards, pigs and boars. These animals would be seen lurking around graveyards and possibly temples next to graveyards (Pura Dalem). On the other hand, animals which regularly visit other temples or places of worship can be seen as good omens. Dogs, geese, large snakes (such as pythons) and even rats (an individual rat that Balinese give a Balinese name: ‘Jro Ketut’), as well as unusual sea animals sighted on or in the water near beaches in areas where Balinese perform ceremonies such as large turtles and whales, are all potentially good signs. This is why you will see shrines with statues of dogs, snakes, and certain sea creatures (some of them legendary such as sea dragons or hybrid animals) in both public and family temples. In fact, there may be a special shrine dedicated to animals, as my parents-in-law have in their family temple in Sanur. This shrine is called Tugu Lurah, and in the case of my Balinese family is important because my mother in law likes to keep and breed dogs. Cows in some aboriginal (Bali Aga) villages such as Tenganan are considered sacred and allowed to wander freely through the village compound. Recently, during one of my research trips on court gamelan orchestras, I found a shrine in Carangsari Palace that is dedicated to a dog that was much revered by the royal family; so much so that it was apparently buried with two complete sets of gamelan instruments (today that would be the equivalent of more than USD50,000!). There is even a special day in Bali that is dedicated to animals called Tumpek Kandang. On this day, pets and animals considered important to the Balinese way of life (those used in farming, for example) are decorated and given special offerings. Kadek Parmita was born in Bondelam in Buleleng District into a farming family of four. She grew up helping her family with chores like hoeing, watering and planting new trees in their mango farm near the Tugu Pahlawan statue on Bondelam’s main 3-way intersection. After graduating from elementary school ate age 12, Kadek left to seek a better life (merantau) in Probolinggo, East Java with her aunt who had married a Chinese. Kadek spent 25 years in Java working as bebisister, taking care of her aunt’s children. Finally, in 1995 she returned to Bali to help her parents on the family’s farm. The small trees that she had planted as a little girl had by this time had become fully mature. Now the trees on 30 are of land are more than 30 years old and produce an abundant crop.
What kind of environment is best for growing mangos? Land that is a little above sea level with a hot dry climate, but not too dry and not too wet. Our area is rocky but that’s not a problem. We just plant trees in between the rocks. Bondelam was previously known for its citrus, which were shipped to Java. But after a virus attacked the citrus trees, the farmers switched. Now our area is known for growing the best mangos in Bali. We have the best weather and soil for growing mangga. What citrus is to Kintamani, mangos are to Bondelam. Half the families here cultivate mangos.

What is the yield of your mango trees? If the mango tree is planted from a cutting (cangkok/ setek), it will grow quickly and bear fruit but only lives 25 to 40 years. But if the mango tree is planted from a seed (biji), it can live and give fruit for as long as 100 years. The bigger the tree, the more the fruit. Mature trees can be 6 meters tall and 6-7 meters wide! Most of our 30 trees are grown from seed (biji), but we now also take setek (slip, cutting) from our mature seeded trees and plant them to get faster growth and fruit. From some of our old trees we can harvest up to 70-100 kilos of mangos.

If I wanted to plant mango trees, where can I buy young trees ready for planting? Buy your cheapest baby starter plants (bibit dari biji), from 30 cm to 50 cm high, at the seed nursery of Julah near Bondelam. The stones (biji mangga) inside the mango are split in half and seeds (bibit) are grown from the stones. Julah is where mango farmers themselves make their purchases. But have your Balinese friend buys the bibit (seed) or setek (cutting). The price, from Rp15,000 to Rp45,000, depends on the type of mango and how tall the cutting is. Trees setek give fruit in 1-2 years, but trees grown from seed (biji) give fruit only after 5-7 years (but they live longer).

Who do you sell the crop to? A wholesale merchant (sodagar/pemborong) from the city arrives at the garden before the mangos become fully ripe to check that the trees are healthy, which means a good crop. In the old days these contractors would buy the whole crop for as little as Rp1 million, but now we sell our mangos to them for around Rp2000/kg. After purchasing our crop, the pemborong takes them around to Bali’s traditional and farmers markets.
Do you own the garden yourself? A doctor and an old friend of the family bought the land but he died and his family now own it. My father I Gede Parta grows mango trees on the land. We keep the harvest free of charge in exchange for taking care of the large one hectare of property on which our mango orchard is located.
What is the best way to take care of mango trees? After the young starter trees (bibit or in Balinese tempelan poh) are planted, they mature in just one year. Mangga trees are not subject to disease and are easy to take care of. We let the leaves just fall under the tree, which forms a layer of mulch that keeps weeds from taking root. In between our mango trees, we plant star apple (sawo) and banana trees. We don’t plant anything under the mango trees because it’s too shady.
What kind of mangos do you grow? We grow five kinds on our property. Harum Manis are big mangos and weigh up to one kilo. They are very sweet and sweet smelling. Manalagi are also sweet and good. Mangga Madu is the best for the sweet-sour unripe fruit salad treat rujak. Lalujiwo is even more delicious than Mangga Madu. Amplem are yellow, very small (as big as the sour buah kedondong) and have a sweet and sour taste. Amplem are given to sick people who have lost their appetite. This type of mango makes them want to eat again. They are rare and merchants don’t buy Amplem because of their high cost. We only give Amplem to family, friends and neighbors for medicinal purposes.
Pickers climb the trees and use a net attached at the end of a bamboo pole to grab ripe mangos. When the net is full, the climber spills the mangos into a basket, which is lowered to someone on the ground. No machines are used. The process is totally manual.
When are mangos harvested? The two mango seasons are August and September and March and April, but it depends on the weather. In between these harvest seasons, my father spreads manure under the trees to increase the yield. On our farm there is not enough water to grow paddy, but he raises corn and takes care of animals. Rotten mangos that have fallen on the ground are fed to chickens, cows and pigs.
What do mangos cost? Mangos are more expensive if you buy them in between harvests. During harvest times fruit vendors build displays of mangos and supermarkets overflow with the fruit. During high season, which peaks this month, they sell for between Rp15,000/kg and Rp30,000/kg, depending on the type. If you have too many, just freeze them and make mango smoothies to enjoy when they are out of season.

Do you also like to eat mangos? Manalagi is my favorite. My father’s favorite is Lalujiwo. While harvesting, we always leave some mangos on the trees for family consumption. Our mangos taste way better than store bought ones! They are so good that sometimes people help themselves to our mangos from tree branches that hang over the wall that runs along the main road in Bondelam.

I’m sorry…..where did 2016 go again? Believe it or not, the end of another calendar year is nigh and that means Summer holidays and Santa are right around the corner. Pretty soon many of us will be taking off to spend the silly season with family across the globe but before we do it’s time to celebrate the end of term. In keeping with tradition The Junior Sports Academy and The Canggu Club will hold their 9th Annual Christmas Bazaar and end of term party on the last day of the CCS semester, Friday December 16th. It’s a fantastic afternoon chock full of festive spirit and some seriously irresistible Christmas shopping bargains. As the biggest market of the year it attracts a wealth of local vendors selling everything from shoes, clothing, artwork, food, homewares, jewellery, couches for canines and cats (I kid you not…) and a host of other gift worthy goodies. Trust me, many a Christmas
stocking has been stuffed from the stalls of the Canggu Club Christmas Bazaar and I challenge anyone to walk away without buying at least one thing! Bazaar bargain shopping begins at midday with a gymnastics presentation from the students of the Junior Sports Academy a little later in the afternoon. These end of term parties are always a terrific opportunity to discover how well JSA participants have progressed throughout the term and a chance for the kids to showcase all of the new skills they have developed during previous weeks.

Whether coping with a serious disease or simply experiencing a sense of chronic fatigue, depression or anxiety, we may wonder what we’re doing wrong. It may surprise you then that many of our health complaints are actually linked with over-breathing - in other words, taking in too much oxygen. We readily accept that limiting caloric intake is associated with longevity. After all, over consuming food has been proven time and again to create metabolic damage. Why wouldn’t the same be true for the “nutrient” of oxygen? Especially when we consider that free radicals are created during the normal metabolism of oxygen. These are the same molecules that are exceptionally destructive to cell membranes, proteins and DNA. Contrary to popular thought, taking in an abundance of oxygen is extremely unhealthy. Instead, we should be focusing on creating more efficient utilization of the oxygen already present within the system. This is where the genius of the Buteyko Method comes in. It’s well known among elite athletes that training in a high altitude environment improves overall physical performance. The reason for this is that they take in less oxygen, which forces the blood to increase its capacity and utilization, thereby contributing to the VO2 max - the volume of oxygen the athlete can use. The Buteyko Method was created to mimic this same limited oxygen environment - without having to live in high altitude regions. After recognizing the important role carbon dioxide (CO2) plays in releasing oxygen from the blood to
the cells and tissues - otherwise known as the Bohr effect Dr. Konstantin Buteyko invented a breathing method that increased CO2 concentration in the body. He then took the idea further by associating a range of modern medical conditions with a lack of CO2 - from asthma to high blood pressure and ADHD. Several ways we take in too much oxygen - and generate too little CO2 - is through mouth breathing, sighing, upper chest breathing and taking a large breath before talking or laughing. Since stress increases our breathing rate, it’s easy to fall into a state of chronic hyperventilation without realizing it. Excessive talking and overeating both lead to dysfunctional breathing patterns as well. Processed foods, high protein and grain meals also have an adverse effect on breathing because they tend to acidify the blood. The body reacts by attempting to harmonize pH levels, which makes you breathe heavier. Raw fruits and vegetables exert the least influence over the breath, followed by cooked vegetables. Chronic over breathing is also linked with the following health issues: • Heart palpitations • Angina • Shortness of breath or chest tightness • Allergies • Weakness and exhaustion • Cold hands and feet • Dizziness • Irritable cough • Poor concentration and memory • Tachycardia • Muscle cramps and stiffness • Acid reflux, heartburn • Headaches • Numbness and tingling • Anxiety • Sleep Apnea • Restless sleep and nightmares • Gas, bloating and abdominal discomfort One of the main objectives of the Buteyko Method is to encourage breathing exclusively through the nose. This is because the nose contains small amounts of nitric oxide, an

important gas that dilates the bronchial passages in the lungs, kills germs/bacteria and is a potent vasodilator. Nose breathing also harmonizes your breathing volume, making it more difficult to chronically hyperventilate. Asthma & Buteyko Professor Konstantin Buteyko, who developed the technique, believed that people with breathing disorders were hyperventilating, leading to hypocapnia - abnormally low levels of carbon dioxide (CO2). This causes broncho-constriction and numerous other systemic changes, directly and indirectly, due to the resulting respiratory alkalosis.Buteyko believed shallow breathing and breath-holding techniques, which are components of the BBT, raised CO2 levels and reversed broncho-constriction, although this has not been conclusively demonstrated in published research. The BBT spread to Australia and New Zealand in the 1990s, where the first randomized controlled trials were conducted. They found it could benefit people with symptomatic asthma by improving quality of life and symptom control, as well as enabling them to reduce dependence on inhaled bronchodilators. However, no study has shown that the BBT can alter lung function or airway hyper-responsiveness, which suggests that it does not affect the underlying disease process of asthma. Ideally patients should receive a five-week Buteyko program delivered by a trained practitioner. This is were it gets tricky here in Bali, for as far as I can ascertain there are currently no trainers permanently based in Bali. However this could change in the near future….so watch this space!

By the time he finished my face felt very hot and greatly appreciated the cool compresses placed over my face for a few minutes. Now for the PRP part of the treatment, which stimulates production of collagen. Blood was taken prior to the treatment and was turned into a serum of my own plasma. The doctor gently applied this over my face. The remaining serum I was given to take home to apply to my face before bed. Next goggles were placed over my eyes and the LED light positioned over my face. For the next 20 minutes I could relax as the red light reduced redness and soothed the skin. Afterwards a moisturized sunscreen was applied. After getting dressed I was surprised looking in the mirror that my face was only slightly red.
With these two technologies working together in a dual mode means that this laser targets and rejuvenates different layers of the skin, creating new collagen to tighten, tone and reduce pigmentation. Then after reading a consultation form and signing it I was escorted upstairs to the Quanta room and given a smock to change into by a nurse. She returned a few minutes later and applied a numbing cream all over my face then covered my skin with plastic to prevent the cream from drying out and left me to relax for 30 minutes. I was warned there would be some discomfort during the treatment but the cream should be adequate to keep me comfortable. The factory setting would give the greatest result but he could reduce the output if I became uncomfortable. Half an hour later two doctors came in to ask if I was ready to begin. The doctor told me if I became too uncomfortable he could reduce the output of the laser. I asked if I could wear earphones during the treatment to help me relax and stuck the ear pods in as a heavy eye mask was placed over my eyes to protect them from the laser. The plastic was peeled off my forehead and the cream was wiped off. Then the treatment began. A small instrument about the size of a square fingertip was placed on my forehead and remained for several seconds. I could feel a pulse going back and forth with a tingling sensation. Then he moved on to the next spot. He asked if I was okay. Yes, fine so far. He
The doctor advised me to stay out of the sun for the next three days and suggested I spend the rest of the afternoon in an air conditioned room to alleviate the heat. I was told not to use tap water on my face that day but use drinking water. The following day I could apply aloe vera and moisturizer and sunscreen minimum factor 30. I was told that the healing process would take 4 to 10 days and the skin would become dry and peel like after a sunburn.

AFTERCARE OF LASER SKIN RESURFACING Depending on the problem that was treated, healing typically takes 4-10 days. Once the skin heals, patients can wear oil-free make-up to minimize redness, which usually fades in two to three months. When selecting a sunscreen, look for one specially formulated for use on the face with a sun protection factor (SPF) of 30 or higher. Patients must limit the time in the sun, especially between the hours of 10 a.m. and 2 p.m., and wear a wide-brimmed hat. It is also important to keep the new skin well moisturized. If the patient uses Retin A or glycolic acid products, he/she should be able to start using them again after about six weeks or when the doctor says they can. A week later, the dry skin has peeled off. All redness was gone by day three. Now my skin is l o o k i n g smoother, the fine lines have disappeared and my skin looks brighter and radiant. The Orange - Best way to prevent Varicose Veins And a lot more besides… As we age an awful lot of us are going to get varicose veins along with small split or thread veins around our feet and ankles. It starts when we are quite young and is usually unsightly but painless. We tend to ignore the condition until it becomes a real problem, by which time it can be a lot harder to deal with. It doesn’t happen often but if left, varicose veins or Chronic Venous Insufficiency (CVI) can progress from leg ulcers, to amputation, gangrene and death. So while you may have lots of time to address it and it may not hurt, its not something to ignore and it’s easier to solve the problem sooner than later. We are not helped by a medical profession that doesn’t really know how to prevent varicosity and doesn’t take it that seriously anyway because it is seen as part of normal ageing and seldom life-threatening. When things get bad enough, they rely on some traditional and rather drastic surgery to strip the veins from the leg. Happily there are now some more modern procedures but which are still unappealingly invasive.

It need never come to this and it is symptomatic of all that is wrong with conventional medicine that a natural-based part-synthesised prevention and cure for CVI problems has long existed and been used successfully as medication in Europe for the past 40 years. Yet most of us are unaware of it because most doctors don’t know about it and for specialists, there’s no money in it – it’s just not what they do. This substance is called Diosmin, it is prescribed as a standard pharmaceutical intervention in Europe for chronic venous disease as well as hemorrhoids. Identified in 1925, diosmin is derived from the flavonoid, hesperidin, found in citrus rinds, most particularly from Spanish oranges. Along with the aches and disfiguration, chronic venous disease (CVD) also brings enormous expense. In the US alone, CVI is behind the loss of an approximately 2 million working days and accounts for an estimated $3 billion in health care costs. Surgery, vein stripping, and compression stockings or bandages have all been used with some degree of success to help with the symptoms of chronic venous disease. But nothing has come close to the inexpensive and effective treatment found in taking 600 mg diosmin once a day for three months. Not only does Diosmin work for varicose and split veins as well as haemerroids but has been shown to effectively reduce edema and leg swelling, and also prevent stasis and contact dermatitis, venous ulcers and hypoglycemia. It is an overall anti-inflammatory and been shown to reduce risk of cardiovascular disease and neuro-degenerative diseases like Alzheimer’s. It has no bad side effects even in very large quantities and over long periods of administration. A month’s supply containing 600mg of standardized diosmin shouldn’t cost more than US$20.00, suggested duration 3 months.
What causes varicose veins?
Many of us can be distressed by the appearance of our legs, especially those of us with visible varicose veins that can cause aching legs, swollen ankles and discoloured patches of skin. Thread veins are unsightly but don’t usually cause any medical symptoms, but are even more common; up to 84% of us have thread veins. Both conditions have the same basic cause: pressure in the vessels that return blood from the feet and legs back up to the heart. When you stand up, your heart has to pump blood against gravity and your veins contain valves to stop the blood falling back down the legs, but - if the valves don’t close properly, the blood falls back down stretching the vein wall and causing varicose veins. The same pressure can also cause smaller veins under the skin’s surface to become enlarged and more visible, giving us those thread veins.
Is it genetic, can I prevent it?
It’s true that the more relatives you have with varicose veins, the more likely you are to develop them yourself, but it’s not a reliable indicator like inheriting hair or eye colour. People who do a lot of standing seem to be more prone to it, but they may have a propensity to start with and standing just aggravated the situation. Pregnancy increases pressure on the leg veins, and can increase the likelihood of some of the valves failing, while the pregnancy hormone, progesterone, can cause the walls of the veins to become more relaxed and stretchy. There is little evidence that taking hot baths or crossing your legs
causes problem leg veins, but thread veins can appear in response to trauma. That’s why you often find them in horseriders, on the inside of their knees. And of course, they do become more prevalent with age.
Is it purely a cosmetic problem?
Thread veins are largely a cosmetic issue, but ignoring varicose veins can cause problems. A sizeable minority of people with varicose veins develop leg ulcers – painful sores that can take months to heal – at some point. Many more develop less serious symptoms, such as skin damage, or swollen ankles. Anyone whose varicose veins are causing pain, aching, heaviness, ankle swelling – or problems such as bleeding, eczema or leg ulcers – should ideally see a vascular specialist for an ultrasound. This creates a picture of how blood is flowing through the legs and will identify any damaged valves. You can watch and wait, but you should act if symptoms worsen.

What treatments are available?
Apart for taking diosmin, which seems the obvious course of action at any stage, the standard treatment for varicose veins today is endothermal ablation – where problematic veins are closed off using heat – or failing that, foam sclerotherapy, where a chemical foam is used to destroy the vein. Surgical “stripping” of varicose veins is the more traditional and invasive method, requires a longer hospital stay and more recovery time. For those whose varicose veins are causing symptoms, compression hosiery should only be used as a permanent treatment if the other options are unsuitable. Thread veins can be treated at private clinics, where they may be injected with saline or another substance that causes the walls of the vein to collapse. Alternatively, they can be destroyed by heating them with microwaves delivered through a hair-width filament. Make sure to use a clinic that is supervised by trained medical staff.
But don’t we need our veins?
A varicose vein by definition isn’t working properly, so losing it makes no difference. There are a number of veins delivering blood back to the heart, so these will generally pick up the slack. It should be noted that unsightly veins can come back if the root cause of the problem is not identified and addressed.That’s why it’s a good idea to have the duplex ultrasound when you can. Circulatory problems are amazingly common and at huge national cost. Indeed, varicose veins alone afflict one half of all adults past middle age. The condition is so common that in the US and Great Britain it is largely accepted that the development of venous problems is just another age-related symptom of decline. Does it not make sense then to avoid the problem by taking a natural medicine for a couple of months, which is effective, without side-effects and inexpensive? Diosmin is available commercially under such trade names as Vasculera, Dio-PP, Venotec, Daflon, etc.

Plan for the Soul
on to evolve. At the end of my plan was a list of specific Bach flower remedies that could help me with my Spiritual challenge which is taming my anger.
I have often felt that there is a plan or blueprint for our souls that is a mystery to most of us. We may get clues to what this divine plan is and follow these almost blindly, never knowing with absolute surety that we are heading in the right direction -- the way which will truly foster our personal empowerment and spiritual evolution. I have been lucky enough to get a lot of guidance from my higher self or helping spirits, but many people haven’t cultivated a relationship with their higher self or have no idea how to connect with their own Spirit guides. We usually get a manual when we buy a new car, DVD player, computer, etc., but there isn’t a manual for our life, at least there wasn’t until I met Joseph Callender, an English Soul Plan practitioner who currently living in Melbourne. Soul plan has its roots in the ancient Hebrew gematria. In the second half of the last century a new set of interpretations under the tile of: ‘Numerology of Moses’ were channeled by the visionary Frank Alper, author of Discovering Atlantis. Joseph explained that people who get Soul Plans are often stuck in their lives and they want some confirmation about which direction to go or they want to find out why they are stuck. Often people want to know what their life purpose is, and feel a strong urge to seek out information about this. Many times people have a vague idea of their life purpose, but can’t fully see it, so the Soul Plan can remind them of things they have forgotten and what they might need to know in order to go forward in their lives. “Our soul plan can help us learn about the energies that we are holding or have, as well as what energies we are trying to master. We can discover what effects all these energies have on our own lives and others. The result of a Soul Plan is to essentially assist people from moving out of victimhood into becoming students. When you get initiated with a soul
plan it’s like activating an awakening within your soul,” said Joseph. He mentioned that some systems believe that the soul is a fractal energy that goes over 50 dimensions and is all pervading. In other traditions, the Soul is also believed to be the deities that people experience. There are multiple levels of Soul, that one can experience. The soul has a Soul, called the “Oversoul” and others say that the oversoul has an oversoul. Joseph mentioned he has met clients, whose oversouls have simultaneously incarnated, as separate beings for maximum Spiritual evolution. The oversoul creates the experiences for this particular incarnation, and the energies that it gifts you contain the vibrations of your soul and your experiences in this life. For my own reading, I was surprised by how comprehensive and accurate my Soul Plan was, as it was constructed solely from my birth name. According to Joseph, as a Spirit, I would have chosen my parents and my birth name.There are 22 energies in this system which are illustrated with an upper triangle and a downward triangle that resemble the Star of David. The downward triangle represents your first 35 years and symbolizes your worldly aspects: worldly challenges, worldly talents and worldly goals. The upper triangle represents the next 35 years your life and the associated Spiritual aspects: Spiritual goals, Spiritual talents and Spiritual challenges. In the center of the illustration is a silhouette of a human with ‘Soul Destiny’ and a pair of numbers with two associated symbols. Each aspect of my plan had number pairs with symbols which all carry an energy and a frequency. When these are deciphered, it is akin to unlocking an aspect of your soul. My Soul Plan confirmed that I was already living my soul destiny as a Spiritual teacher and healer. It also showed me my Spiritual challenges and what I needed to work
My Soul reading concluded with a beautiful healing in which I was guided into a deeply relaxed state. During this time Joseph tunes into the heart which is the gateway to the soul, and he asked Great Spirit to present my soul blueprint. Then he removed several blockages in my field from other lifetimes, actually pinpointing a blockage in my left ear which I had never told him about that went back many lifetimes. Joseph concluded the session with reading a special Soul message just for me which was programmed into my subconscious. Throughout the session I felt like I was floating high above my physical body. It was a very similar feeling to being in a deep state of hypnosis. For me, the experience of receiving my Soul Plan was very enlightening and empowering. I believe that getting clarity about my Spiritual and worldly talents, as well as my Spiritual challenges, will greatly assist me as I move forward in my life. WHAT IS A WEED? ‘Dear Garden Dr., I see that you mentioned dandelions in the last article, it sparked some old time childhood memories of blowing the seeds off and watching them float away in the wind - thanks for that! It also revived another memory of mine from my long departed dear grandfather. He said that many moons ago some people used to pull grass out of their own lawns to make room for dandelions, chickweed, chamomile and other useful so-called weeds (that I have now forgotten the names of) and I don’t doubt it. While I know that dandelion root ‘coffee’ has become somewhat popular these days what are the other uses and useful weeds if you know of any? Well let’s just say that I could go on all day extolling the virtues of this magnificent plant, which is all too often mistakenly identified as a ‘weed’. And now it is bottled and sold as a healthy substitute or alternative to coffee...who would have thought? And as for any other useful ‘weeds’ I am quite sure there have been entire books written on the subject. There are probably even books solely devoted to the beauty and usefulness of dandelion alone, I could be wrong...but I doubt it! A weed is generally a term used for a plant that is growing where it shouldn’t be, or where someone doesn’t want it to be. What or who determines whether a plant is a weed? A weed is usually in the eye of the beholder. So one man’s weed could be another man’s lunch! That brings me to my next point.....what would a Frenchman have to say about all of this? The French have been known to soak their dandelion greens in salt water brine before cooking them and eating them just like spinach. Those leaves were perceived to resemble the teeth of a lion, so they named it ‘dente de lion’...later becoming ‘dandelion’ in English, As kids we used to blow the puffy seed ball and watch with excitement as the tiny feathery parachutes floated off gracefully on the breeze. Folklore dictated that you had to blow them off all in one go......and that would make your dream come true.
Now what a special weed is that! It could easily convince children to do its bidding by making a game of spreading the seed. But really, all it needed was a moderate breeze and the ‘parachutes’ could fly for miles and miles. Even as an adult I often pick a seed head and shake it off watching with glee as the star like seeds spread far and wide - knowing in just a few short months that I will have a fresh crop of greens. But wait there’s more! The beautiful bright yellow flowers will attract the bees and other pollinator’s too, benefiting the entire garden. So far we have found that you can eat it, play with it, even attract bees with it......look at the benefits already, and we’ve barely even gotten started. That is really some weed! It’s almost curious that dandelion is even considered a weed by some. Ralph Waldo Emerson an American philosopher and poet famously stated – ‘What is a weed? A plant whose virtues have not yet been discovered’. Well all I know is that the virtues of the dandelion were discovered long ago.... and thankfully for those that forgot they are being rediscovered all over again! It has a multitude of uses and is full of vitamins, minerals and antioxidants. Herbalists use dandelion root as a liver stimulant and as a tonic to cleanse the blood. The vitamin rich leaves are a useful addition to any diet. Pick the leaves and eat them fresh, steamed, stir-fried or added fresh to any salad that requires leafy greens. They are one of the most nutritionally dense greens you could ever hope to eat. Dandelion leaves are rich in vitamins A, B, C, E, and several other minerals including iron, calcium, and potassium. The flowers can even be fried or baked into a loaf of bread.
It is an anti-inflammatory and is thought to be of assistance to arthritis sufferers, to treat gout, and rheumatic pain. Dandelion contains Inulin which converts to fructose in the presence of hydrochloric acid in the stomach. Fructose forms glycogen in the liver without requiring insulin, resulting in a slower blood sugar rise, which makes it ideal for diabetics. The root is famously used as a coffee substitute. Cut, wash and dry, then slowly roast the roots in the oven until they resemble a coffee like colour. Crush and grind when ready to use. Dandelion root coffee is healthy alternative especially for the digestive system. Other so called ‘weeds’ that are often mistaken for dandelion but nevertheless just as useful are: Scientific name: Sonchus oleraceus Common name: Sow Thistle Scientific name: Hypochaeris radicata Common Name: Catsear, Flat Weed or False Dandelion Both of these plants are commonly identified as weeds and are closely related to the dandelion, and in fact often mistaken for it. Even better they likewise have many similar health benefits, and are used in similar ways. Chances are dandelion is growing right in your own backyard, and if not likely nearby... go for a stroll. If you spot the distinctive seed head pull it off, bag it, bring it home and then shake it out into a pot or direct into the garden. If you are out foraging for fresh greens in wild fields remember to avoid areas where it is likely that pesticide might be sprayed such as public parks and along roadways.

SWEATING LIKE A PIG
This balancing point is known as the “Dew Point” and we can calculate the Dew Point for any combination of air temperature and level of humidity.
Rumour has it that Winston Churchill once said “I am fond of pigs. Dogs look up at us, cats look down at us but pigs treat us as equals.” In fact we are not equal, pigs don’t sweat very much at all.
So what is the point of all this seemingly irrelevant information? Well if we want to live in a comfortable environment it is a good idea to manage the humidity as well as the temperature of the air. This is particularly important for people who run hotels or hire out villas.
Last week we talked about insulation to help keep ourselves cool but insulation can provide other benefits: • It can provide insulation against noise. • It can help us to control humidity. Humidity? Now there’s a thing. Humidity is always all around us, we can’t see it but we don’t have to fall in the fountain after a belly full of beer on a Saturday night to know that it’s there now do we? As we all know humidity can be a big problem when you live in the tropics. It grows bugs, it rots our woodwork, we get condensation on our walls, our clothes go mouldy in the wardrobe (leather is particularly vulnerable) and it can play havoc with electronic equipment and camera lenses. Leave a laptop or a smartphone for only a couple of weeks and they are often rendered about as useful as a three legged racehorse (I know someone who keeps betting on those). Humidity also has a considerable effect on how comfortable we feel. You know the feeling, you wake up in the night bathed in sweat. Some hours before you were cold and had switched the air conditioner off. Our physical comfort is determined not only by the temperature but also by the humidity of the air around us. Remember those times when it doesn’t seem very hot but we are dripping with sweat or other times when the air is cool but seems so dry that our lips start to dry up and crack. This is, in fact, all related to the balance of the temperature and humidity of the air, a balance that determines the “Dew Point”.
All that water has to do to evaporate is to collect enough heat from anything around it to change it from water into water vapour. As the water absorbs heat so it makes anything it is in contact with colder. This is, of course, the natural way our bodies keep cool, when we get hot, we sweat, our bodies lash a bit of water out onto our skin which evaporates and cools us down. Apart from the tweets all very obvious and straightforward so far. 2. Now as water evaporates and the water vapour mixes with the air the moisture content rises, the humidity of the air increases. Eventually there comes a point when the air can’t hold anymore moisture, it is full, it is saturated. This is, of course, 100% humidity and no more water can evaporate. This causes us a little bit of a problem (to say the least) because, when the air around us is fully saturated it can’t take any more moisture so our sweat cannot evaporate, our bodies can’t cool us down and we overheat. The higher the humidity level and the harder it is for us to sweat and to cool ourselves down. 3. There is something else we need to know - hot air can hold more water vapour than cold air. If we heat the air up a bit it can hold more water vapour. Let us consider that we have a room that is at a temperature of 25ºC and with 100% humidity. If we now heat the room up to 30ºC the room can hold more water vapour and so the humidity is now less that 100%, it is in fact only at a humidity level of 74.63% and so more water can evaporate until once again it reaches 100%. The level of humidity is directed related to the temperature of the air and so we call the humidity level “Relative Humidity”. I can sense a few eyes starting to glaze over (mine are) so let’s have a cup of coffee and see if we can stay awake a bit longer. 4. Alright so once again we have a room at 100% humidity. Now if we cool the room down the opposite will happen, the air can’t hold as much water vapour so some of the vapour must turn back into water, it condenses, and we end up with dew. 5. Now let us consider that the room is at 30ºC with a 60% relative humidity. We cool the room down, the room can’t hold as much water vapour so the humidity starts to rise. Eventually when we get down to a certain temperature (around 21ºC) the relative humidity will reach 100%. This is a balancing point - if we raise the temperature the humidity will drop but if we reduce the temperature dew will form.

Comfort Levels Our body’s natural built in temperature control involves 2 systems. If we are cold we burn energy to produce heat to heat ourselves up. If we are hot we perspire, we exude water which evaporates and causing cooling of our skin. As we have said our body’s ability to keep cool is dependant on the rate of evaporation which is directly affected by the relative humidity of the air around us.

We can now see that breezes and fans work by driving a steady flow of drier air over our bodies which accelerates the evaporation of our perspiration and cools us down quicker. But we can also see that the closer we get to the dew point the less effective fans and breezes will be.

It is also useful to note that water vapour is lighter than other gases in the air which means that humid air tends to rise so as we perspire the air next to our bodies becomes more humid and it rises making way for new drier air to replace it, in effect we create our own mini breeze, a flow of rising air over our skin which carries away the moisture.

1. When we heat water up to 100ºC it evaporates and turns into water vapour (yes we all know that). But water, of course, doesn’t have to reach 100ºC to evaporate. Water is trying to evaporate all the time thank goodness. When we wash the dishes we stack them up to dry and the water on them evaporates. My poor old mother with six boisterous sons dirtying clothes faster than a politician can fire off tweets fully understood the advantages of a bit of evaporation (and, before you ask, evaporation is not a hoax promoted by the Chinese so they can sell dehumidifiers).

In the above table find the room temperature from the left hand column and the relative humidity column along the bottom, where these meet will give you the dew point. For example, at a temperature of 25ºC and a relative humidity of 55%, the dew point is 15.33ºC, this is in the light green zone. The light green colour tells us how comfortable this dew point should be. • Below 10ºC (the blue area) is dry, we might wake up with scratchy eyes and our lips may start to dry up and crack. • A Dew Point of 10 to 15ºC (green) is very comfortable. • 15 to 18ºC (light green) is still comfortable. • 20ºC (yellow) is alright. • Once we get to 21 to 24ºC (orange) we start getting uncomfortable. • 24 to 26ºC (red) is very uncomfortable. • Over 26ºC becomes severely uncomfortable and possibly deadly for asthma sufferers. Notes: • If you have lived on hot climates for many years or if you are sitting in a breeze or by a fan you will probably be able to take a couple of colours higher before you start to feel uncomfortable. • Guests from colder climates will probably prefer the green zones. To be most comfortable we need to aim for a Dew Point of around 12ºC when our natural temperature controls can work most effectively so, if the room temperature is 24ºC, you will be most comfortable at a Relative Humidity of around 47%.

GUITARLO by Arlo Hennings How can a memoirist put 60 years of his life into a 328page book? In his memoir Guitarlo, Arlo Hennings ¿nds himself equal to the task by portraying himself as a sympathetic, fearless and daring character living a remarkable life. Like Ulysses, he is an unlikely anti-hero thrust upon journeys to defy the Gods and win or lose over and over again. His writing is equally as fearless and experimental using a hipster music industry vocabulary, daring syllogisms and unique mode of expression that de¿es pigeonholing. Tom Robbins wrote that only famous people should write memoirs. Hennings isn’t famous but the sheer span of time, space and range of humanity he covers in post-modern America is in itself a unique spin on the memoir genre. From attending the ¿rst Rainbow Family gathering in Colorado in 1972 and stumbling into three days of peace, love and music at Woodstock to meeting Dennis Banks of the American Indian Movement and witnessing South Africa’s ¿rst free all-race election in 1994, he always seems to ¿nd himself in the middle of the main currents of his time. The ¿rst two thirds of Guitarlo is about the author’s personal life and career as a music manager and impresario leading up to his leap of faith in starting a new life to Indonesia. The last third of the book, beginning with the chapter “Welcome to the Bud,” takes place on Bali and in his Javanese wife’s home village of Pasuruan in East Java and in Yogyakarta in central Java. The writer chose the memoir format because the truth mattered to him. He didn’t need to create a ¿ctional world when his own life’s experiences were extraordinary enough. But this is not a self-indulgent memoir as is true of many published recently. Far too frequently boomers insist on self-publishing their lackluster and boring life stories. Just because it happened doesn’t make it interesting. Each story of the 29 stories is about multiple events - divorce, cancer, death, travels, etc. No single event propels the narration. At the end there is no ¿nal resolution, just more eager and hopeful struggle ahead. Mature and city wise beyond his years, at 15 Hennings ran away from his parents’ contentious and ¿nancially insecure marriage for a life on the gritty streets of Minneapolis. He fell in with drug-crazed counter-cultural renegades, narrowly escapes a lynching by redneck farmers and gets picked up by a busload of hippies. The collapse of his own marriage leads to a period of restlessness and physical problems. Following attempts at a normal life as a dental mechanic and travelling salesman, he discovers a talent for managing rock and roll bands that takes him to the heart of the American music industry and ultimately on tours to South Africa. Hennings doesn’t hold much back. Facing an uncertain future due to Hepatitis C, you get the feeling that he wants to come clean, to unburden himself and leave a permanent record of his disadvantaged childhood, his lack of any sense of identity and self-worth and his brutally frank assessments of musicians that he has represented. Hennings was at the very center of the revolutionary counterculture movement of 1960s and 1970s. His recollections of the high-Àying world of rock and roll are fascinating. He faults Stephen Stills for ruining a Crosby, Nash & Stills tour by getting stoned and then breaking his nose in a bathroom. Throughout the book he encounters famous people of the era (Wavy Gravy, Ravi Shankar, Shawn Phillips). While hitching from Minneapolis to Woodstock, he meets Hunter S. Thompson and climbs aboard the same Magic Bus driven by the Merry Pranksters who were made famous by Tom Wolfe in The Electric Kool Aid Acid Test. Hennings’ ¿rst-hand accounts and anecdotes of a tumultuous era resonate with a unique voice and are narrated at a quick pace that entices the reader. Although the episodes of his life in Indonesia do not match the lyrical quality, the confessional power, the anguish and emotional force of the

book’s ¿rst chapters, he employs a probing writer’s eye, the sensibility of a novelist and a ¿nely tuned sense of absurdity and irony. It was never his plan to go to Bali, ¿nd himself and write a book. His rude introduction to the island on the drive from the airport up to Ubud was inauspicious - the stiÀing heat, the traf¿c congestion, the endless roadside art shops, the tawdry all-pervading commercialism - but his escape to Bali was to change his life forever. He settles into the trendy New Age Ubud scene, taking up residence in a hilly area overlooking a deep river valley ironically next door to where Elizabeth Gilbert of Eat, Pray, Love fame lived. He eventually comes to grips with his newly adopted home, its culture, language and strange customs. A litany of the typical woes of foreigners building in Bali follows-disappointments with contractors, shoddy unprofessional work, workers starting late, not showing up and not being paid, run-ins with batty neighbors, etc. He teaches music and makes an erstwhile attempt to open a hip eco-smart guesthouse. Though his professional skills and background are all his own, his experiences mirror those of many newcomers to Bali and he has to learn many of the same lessons. In a short three years, the island teeming with tourists and expats, he observes the enormous changes taking place as his neighborhood travels to the new century. At last fully embracing his new island home, he meets a Javanese woman through an online dating site. We read about surprising twists and turns: his digression into new-age spiritualism, becoming an unwitting witness in a murder case of a kind English teacher, the subsequent sale of his property that the tragedy triggers, his wedding in East Java and in 2015 ¿nding a new life in Yogya, the City of Artists where he opened a successful digital recording studio.

This is Party Food! And gorgeous to the eye. It’s so much fun to create with the colors and tastes of the ingredients. This list is just for inspiration - use what you like or come up with some of your own taste combinations. The secret is to start a few days before you want to serve the crostini so when you are ready to assemble, everything is ready to slap, spread, sprinkle, or insert.
Ingredients: - 1 fresh baguette - 1 cup homemade ricotta cheese (see recipe: http://baliadvertiser.biz/basicricotta-cheese-2/) - ½ cup yogurt cheese or Greek yogurt (see recipe: http://baliadvertiser.biz/ yogurt_cheese/) - 1 cup roasted baby tomatoes - 1 package of smoked marlin (or other smoked fish) - 1 Tbl. capers - 10 fresh strawberries, cut in half - 2 Tbl. fresh dill weed - 10 pigeon eggs - hard boiled, shelled and sliced - 10 basil leaves - 1 Tbl. za’atar (see recipe: http:// baliadvertiser.biz/zaatar/) - 2 Tbl. tapenade (see recipe:http:// baliadvertiser.biz/tapenade/) - 1 Tbl olive oil - 1 Tbl. balsamic vinegar Directions: Assemble all the ingredients in front of you so they are ready to use. Slice the baguette about 1 cm thick into as many pieces as you can get from the baguette. On half the slices slather on a base of ricotta cheese. On the other half slather on the yogurt cheese.

Mix it up! As you can see this lends itself to all kinds of ingredients: cold cooked asparagus, carrots, or green beans, anchovy, sun dried tomatoes, olives, chopped chives and shallots, roasted garlic, brie or other cheese, and chutney and whatever you have in your pantry that is good sprinkled or slathered. All the Way from Paris! L’Assiette Bali may not be as iconic as the original on Rue du Chateau in Paris, but neither is it as expensive. In fact for quality French cuisine L’Assiette Bali is very reasonably priced. Totally French, it is refreshingly different from the many French influenced restaurants of Bali, this one is just plain, simple, French! The restaurant is in two parts. Inside is very rustic, re-cycled wood has been used for the walls and furniture, the large tables well spaced for ultimate privacy, a relaxed setting. The rear garden is a surprise. Separate and again well spaced, are a series of small alcoves, presenting very private dining. In between the alcoves are immaculate gardens. At the rear a few more tables on the covered terrace, in front of the small gallery. This garden area is ideal for small intimate parties and gatherings, or just a romantic one for two. The restaurant, surprisingly, is open from early morning [9.30 a.m.]. No real breakfast menu but there is a special lunch menu [many dishes are also on the dinner menu]. Other items are more suitable for daytime snacks or light meals such as Egg Mimosa which is boiled egg with mayonnaise. That all-time favourite French snack, Croque Monsieur [toasted ham and cheese sandwich] is here as well as many healthy salads; Piemontaise [potato, tomato, boiled egg, gherkin & ham], Nicoise [mixed salad with tuna, black olive, green beans, tomato & onion] and Perigord [mixed salad with confit duck gizzards, duck breast and poached egg]. Other starters include Terrine de Campagne, Rillettes de Canard or Salmon Tartar. All are served with gherkin in the side and farm house bead. Many dishes that are available here are not seen elsewhere in Bali. Daytime mains include a French version of regular English Pub fare, Shepherd’s Pie. But instead of the base being minced lamb this one is excellent crunchy shredded duck confit, a dish often served in France during the Christmas festive season, but available here all year long. Very good, but served very hot so it goes well whilst sipping a light lunch wine. Other lunch specials can be Chicken in tarragon cream, Grilled Snapper with tartare, Sauteed Prawns in ginger and soja or a Vegetarian Lasagna. Many mains are available on both menus; Beef Tartar, T-Bone Steaks and the Swiss Fondue Bourguignonne. A small well priced [only Rp.170,000++] set menu, available for both lunch and dinner, is one that begins with your
choice of Egg Cocotte Spring Onion or a Home-made Terrine, followed by a sorbet then the wonderful Chicken Confit, finishing with the Dessert du Chef. Just try to find a classic 3 course French meal anywhere else in the world for $15…no chance! A super special, available all day, is just titled Special of the Chef, meat lovers take note! Quality beef tenderloin is roasted RARE, slices of which are served cold on a board with a small mixed salad, French fries and a pots of mustard [pictured]. Perfect! The dinner menu includes so many French classics. Oeuf Cocotte aux Girolles is such, an egg with girolles mushroom and cream, baked in a small terrine, perfect! The Duck Foie Gras is semi-cooked, and served cold on toasted bread. The Specialty of the chef is Truffe Noire Entiere en Chausson, a whole black truffle in pastry. If you feel like a soup that is really a main course then you can not go past the Mediterranean special of Bouillabaisse. Other seafood dishes include their Grilled Salmon [in a creamy lemon sauce] and the Chef’s special of Crisp Almond Fish. The ‘catch of the day’ is just pan seared and served a la Provencale, with capers, black olives, basil and garlic in white wine. Evening mains include Duck Confit or a Duck Breast in green peppercorn sauce. There are many beef options, prime steaks done many ways, with béarnaise, green or black peppercorns, etc. The alltime special is the rare roasted beef tenderloin, coated with foie gras, wrapped in puff pastry then oven-baked. Fine cuisine at its best!

Say What? Question: I am an expat with a business here and recently had an eye-opening experience about one of my staff. A smart and amazing artist, this young man is usually a thoughtful guy. Twice in the past year, however, he has acted extremely rude and uncaring in the course of the workday. Most recently, I wondered what was going on in his personal life to make him act this way; so I “Googled” him and found his Myspace page and a blog post, saying how intensely he loathes himself. He said he acts like a jerk sometimes and doesn’t mean it, but he can’t stop himself. We aren’t exactly friends because I’m his boss and he is my employee, but the post disturbed me deeply. I want to help him see his numerous positive qualities if I can. I try to be positive at work and tell everybody when they do something well and when something needs improvement, but I don’t know what to do with someone who feels so deeply flawed. If he starts acting like a jerk again, what can I say that won’t feed into his already poor self-image? Dr. ZZ: It is safe these days to imagine that everyone is “Googling” everybody else; old boundaries between what is private and public are now generally blurred. This young man put his personal thoughts on the Internet for all to see. You saw them, and now you can’t unsee what you read. It is not, however, your place to respond to his wounded psyche. You were not the intended audience. Your place is to make sure the work you need gets done, and you need to call him out on any behavior that crosses the line for what is appropriate on the job. The farthest you should step into his personal life would be to ask, when he is being out of line, if something is bothering him, and if he needs to take a few days off to sort things out. You can’t “care” or “compassion” someone into dealing with their own dark side - especially in a work relationship. This is not to argue against empathy and compassion, or even against asking why a person behaves the way they do in a personal relationship. But if you excuse inappropriate behavior in the workplace for the reasons you’ve written about, you set yourself up for abuse and put yourself in a position of not being able to end it. So, keep calling out your employees on behaviors that affect their work, and leave the rest alone. It would be inappropriate to let on that you read this fellow’s blog posts. Question: A married friend of mine had an affair with an Indonesian woman while he was in Bali on holiday. Protection was used, and the woman told him that she couldn’t get pregnant. Now, she is claiming she got pregnant, had a child, and seems to be looking for a meal ticket. He isn’t sure if the child is his and wants nothing to do with her. Under Indonesia’s marriage law of 1974, when children are born out of wedlock, the woman is on her own. But in 2012, a Constitutional Court Decision may have amended that. I don’t know if it was implemented, if there is any risk of my friend being sued in Indonesia, or if he risks having a judgment rendered against him if he leaves the county. Do you have any
Dr. ZZ: Let me state openly that I know nothing about Indonesian law or jurisdiction. Rather than wonder whether or not he can be sued, your “friend” needs to think about taking a paternity test. Most governments and legal systems in the developed world recognize that a child has a right to know its parents and receive support from both of them. Rather than shield people from this, the status and process of the law is generally to enforce parents to care for their offspring. More importantly, I would suggest that he tells his wife what happened. If he doesn’t, and she finds out another way, it could be devastating for her. All this is likely not the answer you were seeking, but being adult means sometimes taking responsibility for things even if you are an unwitting party. I doubt that your “friend” is as innocent as the person in the next example, but let’s suppose for a moment he is. Say, he is driving somewhere, totally sober and fit, obeying all the laws, when a child runs into the road, and he strikes her. It’s totally not his fault - no one could have foreseen that the child would do this - and although he did his best to swerve, no one on earth has reflexes quick enough to have prevented an accident. So what’s his responsibility in this case? Does he leave the child in the road to die, or does he attempt whatever he can to save her? All this is to say that his moral responsibility is to first determine paternity, not to minimize his legal responsibilities. Once he determines conclusively that the child is his, then he can take responsibility from a moral point, not necessarily a legal one. If the child is not his, then case closed!

KNIFE EDGE The Balinese are very practical about their knives. We may treasure our Zhen or Henckels blades but our Balinese neighbours are not into brands. Nor do they respect ours. I’m probably not alone in finding a cherished and expensive imported knife tied to a long bamboo pole to chop down a coconut, or used to hack up a woody pumpkin. The knife tips mysteriously disappear and no explanation is ever given. And instead of being cosseted by a professional knife sharpener, the blades are routinely stropped on the edge of a concrete pathway. The Balinese appreciate a heavy, workmanlike blade and still prefer those made by hand in their own banjars. The Pande caste have traditionally been the only Balinese allowed to work with metal, producing knives, farm implements, weapons and jewellery. Pande with taksu (spiritual power, divine connection or artistic inspiration) specialise in making ceremonial kris and are known as empu. But most of the knives being made these days are for use in the kitchen (mutik) or for heavy work dispatching and dismembering pigs, pruning trees and opening coconuts (golok). Wayan Manis tells me that knives are never given as gifts in the Balinese culture. It might cause marital discord, she opined. She would not buy a knife for her husband, nor he for her; each must buy his own knife. I’ve been wanting to visit a knife making pande for some time. After accepting that good knives come to bad ends in my kitchen, I began to use the locally made ones. The slender blades are of iron, not steel, and the handles are made of whatever bits of wood happened to be lying around. It seemed that a lot of work went into making these knives by hand. They are not fancy but they have a good edge and the rust is good for my iron levels. Recently Wayan Manis told me that some tools from the family’s bamboo straw business needed sharpening and offered to take me along. We followed her nephew Putu, who often visited this particular Pande, to the edge of Semana close to where the sawah begins. Just inside the gate of the compound was the primitive forge with its sacks of charcoal and simple smithing tools. A few knives and sickles awaited attention on the platform.
Pak Pande emerged from his room and peered at me in alarm. Wayan Manis told me later that he had never spoken to an actual tamu (foreigner). Once, years ago, a tamu had entered his compound and Pak Pande had run away in terror to hide in his rice field. But Putu reassured him and Pak sat down to sharpen the blades, carefully avoiding looking in my direction. Luckily Wayan Manis was with me, because Pak Pande spoke very little Indonesian. He thought he was about 75 years old and was still steady of hand and eye. The lineage of knife making Pandes in this compound extended to four generations which is about as far back as most ordinary Balinese can remember. But these days there is little profit in this specialised work. Pak Pande only makes knives on demand now because he can no longer make a living from it. He spends most of his time in the sawah. After he’d carefully sharpened Putu’s blades I asked him to make a small kitchen knife for me and sat back to watch the process. He had a plastic pail of old scrap metal which he used to forge the knife blades. He melted down some of the scrap or, if the alloy was appropriate, cut it by hand to the right length and width before beating it into a blade. But he already had a few unset blades, and asked me to choose which one I wanted before getting to work.

The entire process of making a knife takes a full day. The blade alone takes about three hours to cut, forge and sharpen. Then he must make and finish the wooden handle, fit it to the blade and add the decorative bands at top and bottom of handle. These ornaments are the only elements which are purchased; the wood and metal of the knives are scavenged. There is a lot of filing and sanding and sharpening. For this day of skilled artisanal work he will earn Rp 50,000 (about US$ 3.75). In his Pande lineage, the son takes over the work when the elder dies; they do not work together. Pak Pande has no son, and his grandson works for a rafting company. I can’t help wondering whether he will embrace the dirty, poorly paid life of a metal worker when Pak Pande goes to the great forge in the sky. He never looked me in the eye or spoke to me directly throughout the couple of hours I sat cross-legged on the floor of in his forge. But at the end when I respectfully placed the money for my knife in his hand, he smiled at me. In my work as a writer for the Canada-ASEAN Centre in the 1990s I interviewed hundreds of people from all walks of life in Southeast Asia. In government offices and high rise corporate towers, modest NGO offices and farmers’ huts I’ve had the privilege of glimpsing other lives and realities. Sitting in Pak Pande’s forge made me realise how much I miss this kind of connection. There will be more stories like this. And I plan to be using that little knife Pak Pande made for me until my shallot-slicing days are done.
There is something magical about watching a smith at work
In these modern times he used an electric sander to put an edge on the blade. Sparks flew, but there was no nonsense about safely goggles or gloves. His workbench was a well-worn slice of jackfruit wood and he sat on a length of timber. A neighbour dropped by to chat, then offered to help saw the wooden handle down; soon he was sanding it smooth. Pak Pande took the blade to his forge and started a small electric fan to blow air into the charcoal fire. There is something magical about watching a smith at work and we all observed the work intently. Rather mysteriously, he donned a straw farmer’s hat once he got the fire going. Presently he forgot there was a terrifying tamu nearby and relaxed into rhythm of his craft. First he annealed the blade in the hot little charcoal fire, plunged it into a trough of water with a hiss of steam, then finished the blade edge carefully on a worn file and then a special stone. He demonstrated its sharpness by shaving the edge of his beard with a naughty sideways glance; he had still not looked at me directly but now there was a shy grin cooking behind the grizzled beard. Then he fitted the blade into the handle, measuring by eye and heating the shaft in the fire for a tight fit. At one point he asked Wayan Manis what I would do with the knife. When told that I would slice shallots and carrots with it, just like a Balinese woman, he seemed astonished. Tamu can cook! Amazing!

Local News Perth Teenager Arrives Home in Australia After White Powder Ordeal Perth teenager Jamie Murphy has arrived home in Australia after walking free from a Kuta police station following allegations he was found with drugs in a nightclub. Mr Murphy and his parents were glimpsed by waiting media being escorted out a side door by airport security upon arrival. His return comes just a day after Bali police confirmed there were no illicit substances detected in the 18-year-old’s system, or in the white powder allegedly found on him. Mr Murphy escaped charges after it was confirmed the white powder he was found with was crushed paracetamol, caffeine, cold and flu medication and cough medication, according to Kuta police chief Wayan Sumara. Mr Sumara said the teen bought white powder from a street dealer but didn’t know what it was and is “very lucky”. “I don’t want to say whether he is stupid or not,” he said. Mr Murphy spent almost two days in custody after nightclub security guards claimed they found the white substance in his bum bag on Tuesday. Frenchman Dies in Motorcycle Accident in Northwest Bali A French national was killed when the motorcycle he was driving crashed into a container truck on Jalan Raya Seririt in Gilimanuk, northwest Bali. Beritabali.com says Turki Zahir (54) died from severe head injuries on the road through Pejarakan village on Tuesday, November 22, 2016, when he struck head on a container truck driven by Nofi Kristian (38). Zahir was driving on the wrong side of the road when he struck the truck. Australian Man Who Vanished Josh Goudswaard, who went missing on a trip to Bali with a woman he met on Tinder, has been found safe playing the bongos on a beach in Thailand. The 32-year-old was expected to return to his home town of Perth, Western Australia, on November 6, but never arrived. His unknown whereabouts and the fact his credit card was reportedly used in Great Britain on November 5 left his family and friends fearing the worst. In an event welcoming electric scooter test riders on a five-day journey from Jakarta to Denpasar, Pastika spoke of his desire that the alternative transport become the official vehicle of Bali’s provincial government. “I really appreciate this vehicle. Aussie Sara Connor Tells Court ‘I am innocent’ Australian woman Sara Connor’s trial for murder in Denpasar court is moving forward. The Aussie lost a bid to have the murder case against her tossed out on Thursday. In response, the 46-year-old told the court “I am innocent”. The Byron Bay woman is accused alongside her boyfriend for killing Bali policeman Wayan Sudarsa, who was found brutally murdered August 17, on Kuta Beach. Connor and British boyfriend David Taylor are being tried separately and each face three charges: murder, torture and assault leading to the death of the policeman. The max jail term for the unpremeditated murder charge is 15 years behind bars. Connor has maintained her innocence and Thursday’s “I am innocent” remark shows that that’s not changing. Father, Daughter Stranded in Bali Four Years Young Australian Ebony Silva is facing her fifth year of being stranded in Bali without a passport with Australian authorities refusing to help. It is now more than a year since Ebony’s desperate dad Peter Silva and heartbroken grandmother Jan Silva, 78, made a heartfelt pleas through the Herald Sun to Foreign Affairs Minister Julie Bishop to bring his daughter home. Since then Ebony has turned nine and is now facing another Christmas without seeing her ageing Australian grandparents. The Silvas say they have done everything asked of them but authorities still refuse to replace her expired Australian passport. Australian officials refuse to renew Ebony’s Australian passport unless her estranged Indonesian mother signs a passport application, or Mr Silva has the matter resolved in an Australian court. Bali Drug Dealers Reportedly out in Force to Take Advantage of Aussie Schoolies Drug dealers in Bali are reportedly out in force in Kuta as a swarm of Schoolies continue to arrive from Australia. Police believe the dealers are selling fake narcotics and taking advantage of the foreign party-goers, according to The Daily Telegraph. Denpasar police chief Hadi Purnomo told reporters he has increased the number of officers in Kuta to almost 200.Schoolies have said they are being offered drugs every few metres along the main strip. There are reports dealers are crushing up painkillers, bagging them and then selling them off to tourists to make instant cash. [7News November 27, 2016]
Australian Holidaymaker Found Dead in Seminyak Hotel Room After Becoming Nauseous A 59-year-old Australian, Richard Alan O’Brien, died in his room at the Primera Hotel on Jalan Camplung Tanduk No. 9A in Seminyak on Saturday, November 19, 2016. As reported by NusaBali and DenPost, a traveling companion, Daryle Steven Collins, came to the front desk of the hotel at approximately 10:30 pm seeking assistance, asking that a doctor and ambulance be called for O’Brien who was vomiting in his room. When medical help arrived at the hotel 15 minutes later, the doctor in attendance declared the Australian dead. Police later inspected the scene and found no signs of violence, but a range of prescription drugs in the man’s room and a bottle of alcoholic beverage. O’Brien had checked into the hotel on November 14 with a planned period of stay of 10 days. Police asked that, with the dead man’s family permission, an autopsy be performed to help determine the cause of death. Witnesses reported seeing several intoxicated tourists throwing punches and kicking one another at the party precinct. It is not clear whether those involved were arrested by police. [9news.com.au November 21, 2016] German on Trial Over Bali Meth Lab A German national is on trial in Denpasar, accused of allegedly keeping a meth lab in his Bali residence. Benjamin Bailey, 38, was arrested back in August 2016 when a drug raid uncovered his apparent at-home ‘chemistry set’. A witness with the National Narcotics Agency (BNN) testified against Bailey in Denpasar District Court on Thursday. BNN agent Ketut Puja reportedly described to judges, finding two packages of 0.71 grams of meth in Bailey’s room. “When we searched the defendant’s room on the second floor, we found methamphetamine on the side table belonging to the perp and found tools to make illicit goods,” Antara Bali quoted Puja as saying during his testimony. The defendant admitted to being a meth user and said his motive for making the drug was that it would cheaper to do so, than buying the drug off the street, according to Puja. GETTING RID OF FLEAS
There are several different types of flea, but the most common in Bali and worldwide is Ctenocephalides felis felis, also known as the cat flea. Though it is called the cat flea, it is the species most often found on dogs as well. Unless your pet has a severe infestation, he/she is probably not bothered by the odd flea, unless he/she has a flea allergy. However, since these unpleasant insects also bite humans we are, not surprisingly, somewhat intolerant of them. It is not always obvious when your pet has a flea problem. You may see an adult flea crawling around on your pet’s skin, especially if they have a pale coat. However, the easiest way to check for the presence of these pesky critters is to look for flea dirt. This is actually flea feces, and appears as tiny black specs near the base of hairs on certain parts of your pet’s coat, particularly around the rump (on the back, in front of the tail). Since fleas feed on blood, their feces are basically dried blood. When these little black specs come into contact with water, they turn reddish brown. So, try this: moisten a piece of white paper kitchen roll thoroughly and place it on a hard surface. Then, lift your pet above the paper and vigorously rub and scratch his/her back, going against the direction of hair growth, so that as much scurf and debris falls off you pet as possible. Afterwards, examine the wet paper closely. If your pet has fleas, the dried black flea dirt will have fallen onto the wet paper and turned into little red spots.

Applying it to the back of the neck prevents your pet from ingesting it as this is the one place they cannot lick at whilst grooming themselves. The liquid is absorbed through the skin and distributed around the body.
2. Treating the house. This is equally as important as treating your pet, as the major part of the flea life cycle develops off the host, in the environment. Though adult fleas will spend most of their time on your pet, the flea eggs and flea larvae live in the environment, often being concentrated in or near pet sleeping areas. To eliminate the next generation of fleas, the environment must be sprayed/mopped thoroughly with an effective product. The products recommended by Sunset Vet for household flea control are Dalmat or Bayticol (both available from Sunset Vet reception). These chemicals are highly effective at destroying flea eggs and larvae, and so complement the spot on treatments very well.
It sounds simple. However, at Sunset Vet we have lost count of the number of times clients say to us that they have done that already, when in fact they did not do it quite properly and so their flea infestation continued.
Many owners believe that applying a flea product they have bought in a pet shop or supermarket will kill all the fleas in their house, or that a flea collar will provide adequate protection for their pet. Wrong. Purchasing these products is certainly better than doing nothing, but they are nowhere near 100% effective. They are comparatively weak compared to the products you can get from your veterinarian. Generally the spot-on products provide protection for 1 month from the time of application. Frontline for cats provides 1 month protection from fleas whilst Frontline for dogs provides 2 months protection from fleas, but only 1 month protection from ticks and so is often applied monthly nevertheless.
If you have seen a flea on your pet, or have found flea dirt as described above, then you have a flea infestation to deal with. Do not fear, the problem can be easily resolved by following these simple steps. 1. All pets in the house must be treated with an effective flea treatment. 2. The house must be sprayed to kill any fleas and flea eggs in the environment.
1. If one of your pets has fleas, you need to treat them all simultaneously. Your goal is to wipe out every flea in the house, so make sure there is no safe host for them to live on. Remember dogs and cats require different doses of flea treatment products.

Good on You, Renae Lizzie Love, who we’ve always thought would have made a first-rate Flapper if she’d been around in the Roaring Twenties last century, is a very fine friend to many in Bali. In particular her interest in prisoners in Bali’s jails marks her as someone very special indeed. She’ll probably cringe when she reads this, because another of her attributes is discretion that often borders on invisibility. We saw a note from her the other day pointing us to the Australian magazine New Idea. It’s not our usual reading, except perhaps in back copy form in doctors’ waiting rooms. But its latest issue features Renae Lawrence, the Bali Nine drug mule, and her remarkable rehabilitation in the drug offenders prison at Bangli. Lizzie wrote: “Well done Renae. You have come a long way – no turning back now. I am so proud of you. Fair-minded people will not define you by your past and they will support your efforts and success in turning your life around.” To which we can only add: Amen. At Bangli, where the lush surroundings and the prison staff encourage rehab, Lawrence is busy teaching dance fitness classes and training her pet rescue puppy. The former catering worker has converted to Hinduism and discovered her softer side. New Idea quotes one long-term prison visitor thus: “Renae has changed a lot since her arrest and the years she spent in Kerobokan. She has become calmer, healthier and happier, and just dotes on her little dog Ozzi, who’s been with her since he was only two weeks old. He was the runt of a litter brought into the jail so Renae feels he was a bit of a reject, like her.” There is one other thing to add. Congratulations to the jail authorities, who have made Bangli a model prison.
He’s a Headache Perhaps Jamie Murphy, the 18-year-old Australian pipsqueak who bought a bag of crushed headache pills from a man in the street who told him it was something that would make him feel good, has by now had an opportunity to reflect on the consequences of crass stupidity. He spent two days in police custody after being found with the powder at a security check at Sky Garden, a Kuta nightspot. His parents flew from Perth in Western Australia to collect him from his dramatically curtailed “schoolies’ week” trip to Bali. Everyone is aware that law enforcement here is random and malleable. Even the police ride around without helmets when they’re not on duty. That’s stupid too, but it’s something for another time. Indonesia’s drug laws are harsh. Everyone knows that too, or should. The Australian government specifically warns travellers of the potentially deadly risk of using drugs and getting caught. The Australian media is full of reports of what happens to drug-using and trafficking miscreants. Even an 18-year-old untutored in life skills and who in the fashion of the young probably thinks he’ll live forever and is excused the need to heed restrictions, should be aware of that. Murphy wasn’t, and Murphy’s Law caught up with him. Fortunately for him in this instance, he was dumb as well as stupid. He caused everyone a headache. Silly boy. He should come back and see us when he grows up.

because they are connections of our connections. It’s a sort of 1.5 degrees of separation thing. It was chilly the evening we were there, unseasonably so according to the locals and certainly a tad on the frigid side for thin-bloods from Bali. But the pizza feast they put on was magic. So was the wine. The additional presence of a young couple whose lack of job prospects had forced them to flee economically comatose Venice in Italy enlivened conversation even further. It was far from our only culinary delight. In Perth we returned to Clancy’s Fish Bar at City Beach for fish and chips and a very nice pinot noir. We dined on gourmet burgers at Jus in Subiaco and sampled Papagallo at Leederville, with melt-inthe-mouth pasta and in fine company. Later in the trip we dined at Phoever, also in Subiaco, one of a chain of restaurants serving pan-Asian soups, curries and stir-fries, plus café fare. The beef meatball pho was to die for, as was the tofu stir-fry we had afterwards. There were chopsticks on the table, since Australia’s addiction to exotic cuisine has substantially eliminated fear of these implements. The presence also of standard western cutlery did though remind us of an incident long ago, in a Japanese restaurant in Paddington in Brisbane. There, the waitress looked at us doubtfully and asked: “Would you like two fork?” On that now distant occasion the Distaff kicked the Diary sharply under the table and managed to reply in the negative before the waitress went away and she allowed herself a smile and a fit of the giggles.
Cheers! Well, the Diary’s back in Bali, which is lovely. A two-week break in Australia is good, but there’s no place like home. We arrived on schedule, on Jetstar, unlike a friend, Clare Srdarov, who that day was flying Air Asia and finally left Perth seven hours late. We chatted briefly in the departure hall and left her contemplating a rather nice Merlot that she thought might ease her pain. Our return was not without incident, however. Jetstar views cigarette lighters as incendiary devices (Australian ones work more than once, just by the by) and won’t carry them. And on arrival at Ngurah Rai Officer Jeffry of Customs put on a politely official scowl and relieved us of an opened and partially consumed bottle of Jack Daniel’s finest, which he found in our checked-in baggage and deemed excess to the authorised allowance. He insisted that we watch him pouring it down the drain they have in the customs area for such ceremonies. We’re not quite sure what he made of the smile and the thumbs-up we gave him when he demonstrated how gravity deals with bourbon from an opened upturned bottle. But we hope that it helped make his day.

We wrote ourselves a stiff note the other day, just after our return from that big island away to the south. It went like this:

On the plus side, the local dogs seem to have remembered us; they didn’t bark, but then they do swing between fury and languor, so perhaps they’re just having a dolorous day.
The Divas were nominated for best event in this year’s Yak awards, announced on Dec. 2. That affray was themed British Invasion. They meant the music. Which is the best. One intending reveller noted that he might go as Keith Richards, since he wouldn’t need to dress up for the role. Chief Yakker Sophie Digby asked us if we might go as Freddie Mercury. We’re not mercurial enough was our modest response. Though perhaps someone from The Zombies might be a fit. The Yak party was at Vue Beach Club, LV8 Hotel & Resorts, at Canggu.
