4 Rolf Gibbs: Chocolate Maker

Rolf Gibbs is the fifth child of English parents (architect father and sculptor mother). From an early age his family moved around a lot, living first in England, then Jakarta (ages 4 to 9) and New Zealand (ages 9 to 14). When his father died when he was 18, Rolf left his home in England and moved to Paris, where he became the youngest ever fashion photographer to work for French Vogue, among many other magazines. He moved to Berlin in 1989, shortly before the Wall came down, and continued his photography work there for 7 years. Then, after a brief, but successful career directing films in New York and Hollywood, he decided to travel the world. After 10 years on the road, Rolf finally chose to put down roots in Bali in 2014, and created UBUD RAW Chocolate Factory, with the goal of producing Bali’s healthiest and most delicious chocolate. Where did you get the idea of starting a business? When I settled in Ubud after 10 years of travel, I had very little money left. I felt the need to create something meaningful and lasting, and something that could support me for the rest of my life. But I had no idea yet what it would be. When my chocolate business started up, seemingly by itself, I felt so inspired and energized that it grew quickly and began to demand more and more of my time. Where did the inspiration come from? I considered imported Swiss chocolate too expensive in Bali and I wasn’t impressed by any of the raw chocolate I could find in Ubud. So I started playing around in my kitchen. I hoped to make something that I could enjoy, something smooth and creamy, but also healthy and nutritious. My neighbor showed me how she produced home-made chocolate. I started from there, gradually developing my own style and technique of preparation. How did your experimenting develop into a business? After just a few months, I quite suddenly realized that I had created a new kind of chocolate, which tasted better than any other I knew. When friends tried my raw chocolate, they immediately asked for more. So I started with an investment of just Rp100,000 to make one kilo of chocolate and sold it easily on consignment at a local juice bar. Then I had enough money to make 3 kg, then 10 kg, and so on. I have continued growing in this purely organic way and my business expanded quickly. Today we produce around 400 kg per month, employ 18 people, operate two branded stores in Ubud, and sell at 90 locations around Bali. What does “raw chocolate” actually mean? Traditionally, chocolate has always been made from roasting cacao beans, a way to enhance flavor, like with coffee beans. Roasted cacao is relatively rich in antioxidants, but raw cacao is four times richer. In fact, raw cacao has more antioxidants than any other natural food in the world. Therefore, raw chocolate is much healthier to eat than conventional chocolate. I had found a way to make my raw chocolate taste creamier and more delicious than traditional Swiss or Belgian chocolates. Where do you get your cacao from? We source our cacao directly from local farmers in Tabanan Regency. We trained our farmers to grow, ferment and process cacao beans according to our organic and raw standards. We pay them well above normal market price. Although cacao can be grown in many tropical environments all around the equator, I personally find that Balinese beans have a very interesting and fragrant flavor profile. Can people grow cacao and make their own chocolate at home?

would have to wait a few years for the cacao tree to become mature enough to produce fruit, learn about fermenting the beans, invest in some kind of grinder, and manually remove the shells, which is all quite difficult and time consuming. Have you developed any s p e c i a l manufacturing techniques yourself? We make all our chocolate by hand, in the simplest way possible, using low-tech spoons and bowls, knive and fridges. We pioneered the use of coconut milk as a vegan alternative to cow milk in chocolate. Coconut milk creates a creamier and smoother chocolate than traditional dairy chocolate. The only “problem” is the high water content. This means that our chocolate has a short shelf-life, and needs to be made fresh, and kept refrigerated at all times. Do you support Bali’s environmental sustainability movement? We are working to minimize our use of plastic and other non-biodegradable materials in packaging. Most of our chocolate is sold “naked,” i.e. directly from refrigerated displays. We have also pioneered the use of reusable stainless steel vacuum thermal jars, which can also be used for storing food, soups and beverages. They keep our fresh chocolate cool and airtight for several hours, even in a tropical environment. Customers who bring our thermal jars back for refills get a 10% discount on chocolate each time they use it. And for take-away chocolate drinks sold in our shops, we are working with local potters and EcoBricks. org to create inexpensive earthenware EarthCups to replace problematic plastic-coated paper cups. We are also members of BookGreener, a community of sustainable business owners who support each other towards environmental sustainability, with projects including Refill My Bottle (refillbali.com), a network of business locations that offer drinking water refills to consumers and tourists in order to reduce the use of single-use plastic bottles.

What are the most important things for consumers to be aware of when buying chocolate? Simpler is better. Generally, the more ingredients found on the label, the lower quality the food will be. We make our chocolate using just two local plants: cacao and coconut. Local means we know who grew and harvested the beans, we know that they own their land and are living a good life. Most people think of eating chocolate as a “guilty pleasure.” We like to think that we are redefining what chocolate can be. We want people to know it can also be a fresh and healthy “superfood” without compromising on taste and texture.

6 Help my pet is falling over – Vestibular Syndrome explained The vestibular system controls balance and prevents an animal from falling over. It does this by holding and constantly adjusting the position of the eyes, head and body in relation to gravity. When there is disease affecting this system, though it is seldom life threatening, the symptoms caused can be particularly distressing for a pet owner. Animals may tilt their head to one side, circle either clockwise or anticlockwise, fall over repeatedly, roll to one side, be generally wobbly and display abnormal pupil movement in their eyes. Here we look at the physiology of the vestibular system in dogs and cats, what can go wrong and how a good veterinarian will diagnose and treat it.

Central vestibular disease is where the disease is located in the balance control centre in the brain (to be precise, either in the brainstem vestibular nuclei or in the cerebellum).

What exactly is the vestibular system?

1. Middle or inner ear disease (infection or tumor) 2. Nasopharyngeal polyps 3. Head trauma 4. Drug toxicity (e.g. gentamycin) 5. Underactive thyroid gland 6. Congenital (present at birth) 7. Idiopathic (cause unidentifiable)

The vestibular system is a sensory system consisting of a receptor organ within the inner ear, the vestibular nerve itself, and a balance control centre at the back of the brain. The receptor organ in the inner ear detects the position and movement of the head in space, both when the animal is resting or moving. Information on the position of the head is converted into electrical signals, which are transmitted via the vestibular nerve to the brain. The balance control centre in the brain then processes this information, and sends motor signals to the muscles controlling the positions of the eyes and limbs according to the movement of the head. What is vestibular syndrome? Vestibular syndrome is a general term describing disease of the vestibular system. The term alone does not provide any information on which part of the vestibular system is affected, and what the cause is.

The first task for the veterinarian is to identify whether he or she is dealing with peripheral or central vestibular disease. This is done by looking carefully for all of the symptoms described above, and further characterizing them by direction and nature. It is beyond the remit of this article to go into the exact way of differentiating them clinically, and though it can usually be achieved by a competent vet by examination alone, sometimes further tests are necessary to do so. Causes of peripheral vestibular syndrome

Causes of central vestibular syndrome 1. Brain hemorrhage or infarct 2. Infectious encephalitis (bacterial, viral or fungal) 3. Meningoencephalitis 4. Head trauma 5. Drug toxicity (e.g. metronidazole) 6. Brain cyst 7. Brain tumor (primary or metastatic) 8. Thiamine deficiency 9. Neurodegenerative disease Making a diagnosis

What are the signs to look out for? Animals with vestibular disease may display any or all of the following signs: 1. Head tilt This is rotation of the head so that one ear is lower than the other. It occurs due to loss of antigravity muscle tone on one side of the neck. 2. Circling Circling often occurs with vestibular disease, but can also occur with forebrain tumors. Generally, tight circles mean vestibular disease while wide circles mean a brain tumor. 3. Nystagmus (wandering pupils) This means involuntary rhythmic movement of the eyeballs. The pupils tend to drift to one side (the slow phase) and then jerk back to the middle (the fast phase). Usually the slow phase is toward the diseased side. 4. Strabismus (squint) This means abnormal position of the eyeballs, rather like the condition commonly known as a squint. 5. Ataxia (wobbliness) This means walking in an uncoordinated fashion, and is seen with a wide range of diseases other than vestibular disease, such as those affecting the brain, spinal cord or peripheral nerves. Animals can adopt a broad based stance, exhibit swaying of the head, and leaning, falling and rolling to one side. Ataxia can also be seen in cases of poisoning. Peripheral vs Central Vestibular Disease Vestibular disease is categorized as either peripheral or central, according to where in the system the disease originates from. Peripheral vestibular disease is where the disease is located in either the receptor organs in the inner ear or the vestibular nerve.

First, the veterinarian must distinguish between peripheral and central disease based on clinical signs. If there is doubt, diagnostics for both should be done. If the veterinarian suspects central disease, he or she may choose to rule out peripheral disease with various tests first because the tests for central disease are expensive (e.g. MRI or CT scan, both unavailable in Bali anyway). The following procedure is what is most commonly done when looking for causes of peripheral vestibular disease. If drug toxicity has been ruled out (no metronidazole, aminoglycoside antibiotics or topical chlorhexidine recently) then the external ears are examined using an otoscope (illuminated and magnified inspection device with a rigid conical end which is inserted into the ear canal). Ear infections, tumors and polyps may be detected this way. Middle ear disease is suspected if the ear drum appears to be ruptured, bulging, cloudy or red in color. The next step of the investigation is taking xrays of the skull. Several views are required but the most important one is that which shows the tympanic bullae in the middle ears most clearly. This requires general anesthesia to allow correct positioning. If the tests at this stage have all come back normal, many cases will be given a presumptive diagnosis of idiopathic vestibular syndrome. This is usually because a) it is by far the most likely diagnosis, and b) further specialized tests are costly.

Isn’t it time Indonesia blew its fuse over bomb hoaxes?

On May 17, two female passengers boarded their flight in Makassar in South Sulawesi, Indonesia, bound for Manado, North Sulawesi. Soon after, they told flight attendants they had bombs in their checked luggage. They didn’t. On the same day, on a flight carrying 147 passengers out of Ternate, North Maluku, to Jakarta, a man told flight attendants that he, too, had a bomb in his checked bag. He didn’t. A few days later, on a flight out of Banyuwangi in East Java, two of the city’s councilors were questioned by police after they told their Garuda flight attendants that perfume in their carry-on was actually an explosive device. It wasn’t. After a series of suicide attacks in Indonesia last month, the bomb hoaxes have added a new headache for travellers just as the airline industry enjoys something of a renaissance. Safety and on-time departures now rival foreign carriers. A suite of shiny new terminals, including one opening this week in Semarang that is nine times bigger than the one it is replacing, make travel bearable. For aviation specialist Gerry Soejatman, who counted 10 bomb hoaxes on aircraft last month, the false alarms are something of an own-goal for an industry that has battled back from the brink. “This just reminds people of the bad old days when, really, the industry has moved on,” Soejatman said. Unlike other jurisdictions where authorities can come down hard on bomb threats, Indonesia takes a light touch, usually letting perpetrators off with a warning. Patience in Indonesia, though, may finally be running short. Late last month, university students aboard a Lion Air flight from Pontianak, West Kalimantan, triggered panic when before take-off they told a flight attendant their laptop computers contained bombs. Hysterical passengers overpowered the flight crew, ripped open emergency exits and poured onto the wings, even as the engines were still running. Distressing images of passengers sliding down the engine casings onto the tarmac several metres below were beamed onto television news programmes and social media. This time the students were taken into custody. “We hope that this legal action will be a deterrent,” Indonesia’s transport minister Budi Karya Sumadi, told local media. “This needs to be a lesson for all of us that we can no longer joke about bombs.” Soejatman says Indonesian culture has struggled to adjust to the rigid protocols of air travel, and travellers are not always that savvy. By law, bomb threats that result in injuries or property loss can carry an eight-year sentence. But other than the pair in West Kalimantan, it’s unclear whether any other pranksters will face legal action. National police spokesman Muhammad Iqbal didn’t respond to repeated requests for comment. “We think hoaxers should be charged seriously to teach them a lesson,” says Yado Yarismano, spokesman at state-owned Angkasa Pura II, which manages western airports including Jakarta’s Soekarno-Hatta. Yarismano declined to say whether he felt the police response was adequate. “These incidents are very disruptive. They hurt passengers and they hurt the airlines.”[South China Morning Post June 10, 2018] Evidence of gecko killing poisonous green viper in west Bali home Often decried and too seldom appreciated are the Gekkos, Geckos, or also known as Tokeks – that are a common sight in the gardens, hotels, homes and villas across the island where they tenaciously hang on to walls, tree trunks, or seemingly defy gravity by hanging upside down from a ceiling. Coming in range of camouflage colors, but locally dominated by a livery of an amalgam of gray-pink-green, Geckos are in fact members of the lizard family found in warm climates around the globe. Equipped with over-sized eyes for nocturnal hunting, Geckos, in fact, have no eyelids, but their long tongues come in handy for keeping their large eyeball moist and clean. The Gecko’s most often found in Bali range in size from perhaps 12 – 17 centimeters. They have large voices that are onomatopoetic with their names with Indonesia ears detecting repeated echoes of “Tokek-Tokek” and European ears denoting “Gecko-Gecko.” The remarkable webbed feet and toe pads of the Gecko are objects of widespread scientific study to determine how their semi-porous construction allows these reptiles to walk upside down across ceilings “suctioned” to the surfaces in a relentless search for insects and other prey. Somewhat at odds with the loud and familiar mating call of the Gecko is that some species of this reptile are parthenogenetic which means females can reproduce without ever having contact with a male of the species. Think: Virgin birth. Gecko’s are unjustly feared for the ferocity of their bite. Although in reality they almost never bite any animal or insects they have no intention of eating. Geckos can have as many as 100 teeth that are fused to the jaw bone and can be replaced and re-grown every 3 or 4 months. Gecko bites of humans beings are extremely rare and almost always result from efforts to handle the lizards. Which, at last, brings us to the point of this somewhat long treatise on the ubiquitous Gecko’s living in Bali. Detik.com reports from the Regency of Karangasem in Bali that a poisonous green python was killed by a fearless Gecko. Reported on Instagram (@ Pinsianart) on Friday, May 25, 2018, by I Putu Pingki Sinanta who shared details and pictures of the duel to the death that took place between the green viper and the Gecko at his residence. That a Gecko is capable of killing and devouring a poisonous snake was confirmed as a scientific possibility by snake herpetologist at the National Research Center (LIPI) due to the fact that the Gecko first devoured and immobilized the head of the snake. Had the Gecko with its large head and sharp teeth attacked the snake from any other angle, the battle might have ended with the snake ruling the day. Sinatna said the snake struggled unsuccessfully for hours to free itself from the Gecko’s jaws before eventually giving up the ghost. Gulp. Many people living in Bali unintelligently try to banish Gecko’s from their living areas, complaining that the reptiles are frightening and leave copious quantities of excrement in their wake. But, given the Gecko’s efficiency of destroying insects and snakes, perhaps it’s time to seek a rapprochement with these reptilian friends who share our living space? [www.balidiscovery.com June 12, 2018] Russian expat arrested in Bali over Kuta coke dealing A Russian national was arrested in Bali’s tourist hub of Kuta in April for allegedly dealing cocaine. The Russian, identified by Merdeka as Vladimir Rybnokov Aleksandrovich, 24, was apprehended by Kuta Police in front of the Miranda Star Shop on Jl. Majapahit on April 27 with three packets of cocaine in his pant pocket, police announced at a press conference on Wednesday. From there, police searched the Russian man’s accommodation at Bali View Apartment on Jl. Nakula, Legian, where they found a book with two more plastic packets containing cocaine inside. Kuta Police Comr. I Nyoman Wirajaya said that the cocaine confiscated from Aleksandrovich ended up being five packets: four grams in total. The Russian had been living in Bali for a number of years and had overstayed his visa, police said. “He appears to be a dealer. He has been in Bali for almost six years and has overstayed. His work is unclear. He confessed to buying from local people here, but he does not want to honestly say where exactly he got the goods,” Wirajaya said. Police estimate the value of the drugs taken from Aleksandrovich to equal around IDR2.5 million (US$180). The Russian will be charged with violating Law no. 35 year 2009, which carries a minimum sentence of four years prison and a maximum of 12 years, according to Wirajaya. The commissioner said police are still investigating the Russian though, trying to deepen their understanding of the supply network that Aleksandrovich had been connected to. Indonesia fuel price fiasco may put $1.7 bln dent in Pertamina’s finances Indonesia’s state-run Pertamina is paying the price for the government’s reluctance to raise domestic fuel prices in line with surging global crude prices, at least until next year’s presidential elections are held. Consequently, national oil company Pertamina is estimated to incur losses totaling Indonesian Rupiah 24 trillion ($1.73 billion) through 2018 if fuel prices remain unchanged, an official who declined to be named said. Indonesia’s move contradicts its policy of fuel reforms in the aftermath of the 2014 oil price crash, when President Joko Widodo had fully scrapped gasoline subsidies and retained a nominal Rupiah 500/liter subsidy for diesel. It also mirrors populist moves in countries like Malaysia where the government has lifted consumer taxes to win public support, and underscores the dilemma of Asian governments in a high oil price environment. When Jokowi scrapped gasoline subsidies in 2014, crude was under $50/b. However on Tuesday, August Brent crude futures on ICE settled at $75.94/b. The government has effectively shifted the burden of higher oil prices to Pertamina, which distributes gasoline at retail prices lower than market levels, unlike private retailers who can adjust fuel prices more freely. Pertamina currently sells 88 RON gasoline at Rupiah 6,450/liter (46 cents), while the market price is around Rupiah 8,600/liter. It sells gasoil at Rupiah 5,150/liter compared with a market price of about Rupiah 8,350/liter, according to the energy ministry. Meanwhile, the Jokowi administration says it is protecting Indonesian wallets. “The President is also aware that the public’s purchasing power has to be maintained at the current stage, so fuel prices will not be increased until 2019,” energy and mines minister Ignasius Jonan told reporters. [Platts June 10, 2018] Selfie-taking Chinese tourist dies after falling from Indonesia cliff A Chinese tourist fell from a cliff to his death after attempting to take a selfie on the edge of a cliff in Nusa Lembongan, Nusa Penida, an islet off the coast of Bali. Liang Wanchang, 46, was reportedly enjoying the scenery at Devil Tears, located at the top of the cliff with a view of the ocean in Nusa Lembongan, with friends at 2:30 p.m. local time on Sunday. A strong wave hit him as he was taking a selfie with the ocean in the background. “The victim lost his balance, slipped and fell into the sea,” Nusa Penida Police chief Comr. Ketut Suastika told The Jakarta Post on Sunday. “People in the area strived to help him, but strong waves hampered their efforts,” Suastika said. The victim’s body was later found in the sea, but rough conditions initially hampered efforts to retrieve it. The body was later sent to Nusa Penida 1 community health center (Puskesmas). “A doctor at the Puskesmas declared him dead,” Suastika said. The body has been sent to the morgue at Sanglah Hospital for an autopsy.[Asia One June 11, 2018] Bali based airlines Garuda Indonesia and Batik Air earn highest safety rating after audit Two of the key airlines flying holiday makers to Bali have had their safety rating upgraded to the highest level after Indonesia passed a major international audit. Garuda Indonesia and Batik Air, as well as Lion Air have all been upgraded to top the top tier-seven stars - for safety by global ratings agency AirlineRatings.com. The upgrade is the result of a new audit of Indonesia’s compliance with the eight categories in the International Civil Aviation Organization Universal Safety Oversight Audit Programme (USOAP). These include Operations, Airworthiness, Accident Investigation, Aerodromes, Organization, Legislation, Air Navigation Services and Licensing. ICAO is the governing body of commercial aviation. All three airlines have also completed the International Air Transport Association Operational Safety Audit (IOSA) which is conducted every two years. Airlineratings.com safety rating system, however, does not audit pilot training as this is covered to an extent under the IOSA audit. In 2017, the accident rate for airlines on that have completed IOSA was nearly four times better than that of non-IOSA airlines. Garuda Indonesia completed the IOSA audit in 2008 and has not had an accident or serious incident since. After completing its audit, the European Union lifted its ban on Garuda Indonesia flying to Europe. The audit is an internationally recognised and accepted evaluation system designed to assess the operational management and control systems of an airline. Many countries have now adopted the audit as the guiding principle for its aviation system. [Perth Now June 9, 2018] Body of Bali Nine member Tan Duc Thanh Nguyen brought home The body of Bali Nine drug smuggling ring member Tan Duc Thanh Nguyen has been brought home to Australia to be buried, an Indonesian official has confirmed. Ade Kusmanto, a spokesman for Indonesia’s Directorate General of Corrections, said Nguyen died on May 19 at Siloam Hospital in Jakarta from stomach cancer. He was 34. Mr Kusmanto said Nguyen’s body was taken to Brisbane on May 22. Travel arrangements were made by his adoptive mother, Jolita Zonneveld, a Dutch-Indonesian living in Denpasar, Bali. Ms Zonneveld had been caring for Nguyen since he was transferred to a Jakarta prison in October to get better treatment for his cancer. Nguyen had at least two chemotherapy sessions between February and April at the same hospital. His condition started to deteriorate on May 13, Mr Kusmanto said. It’s ‘Game On’ @ Finns for World Cup Soccer 1 month, 64 games, 12 venues, 11 cities and 32 teams (including newcomers Panama and Iceland) make up this year’s competition and Finns aims to bring as many live games to us as possible - right here in Bali. Of course the obvious time difference between Russia and Indonesia means that, as usual, we’ll be watching many of these games once the sun dips down but that gives us all the time in the world to continue with our regular island activities whether they include work, surf, sun or strolling the beach.

Break out the beer and bar snacks and be ready for a few long weeks of late night viewing because World Cup Soccer is back for 2018! Yep, it’s the return of that 4 yearly phenomenon where spouses of soccer fans across the globe find themselves solo for weeks on end while our partners, possessed by the world’s most watched sport, sit glued to the screen well into the wee hours….. This much anticipated international competition commences June 14th and continues until the final, scheduled for the 15th of July. Russia and Saudi literally start the ‘ball rolling’ (sorry, it had to be said!) with the curtain raiser on June 14th followed by an average of 3 matches per day as the competition progresses throughout June. As some of the matches kick off late into the evening, Finns management is requesting patrons register any interest in viewing these games by contacting their new member services representative and full time concierge, David Setyawan. Of course there are many such, but in this column I’d like to highlight the work of Karuna Bali, an Indonesian non-government organisation that identifies potential future leaders in local Balinese villages, and gives them a very significant hand-up. Since 2007, Karuna Bali has sponsored 185 students to attend the extraordinary one year “Leadership and Communication” program at Campuhan College. Based on the conviction that each student carries within him or herself an innate knowing of their natural skills and creativity, Karuna began by focusing on students from Balinese low-income families who can’t otherwise continue their children’s education. The program is now also offered to young people throughout Indonesia who have graduated from senior high school - from orphanages and others - and have a strong desire to make a difference in their lives and to extend benefits to others. Naughty Nuri’s Seminyak is actually on Jln Mertanadi, Kerobokan. Whilst Ribs are obviously the specialty of this franchise, unlike the original in Ubud they also offer quite an interesting menu of other options. I was amazed when I first tried their Fish Wings [pictured], never having even thought of eating such things before. They are quite sensational, the meat at the base of the wing so soft, sweet and delicate not unlike that surrounding the eye, the wings themselves crisp. New dishes are always being added to their menu, a sure sign of a switched on management, never resting on their laurels. The latest ones all have ‘unusual’ names, another quirk of the management but one that never detracts from the taste. Porky Soup is a bowl of pork ribs, potato, carrot seasoned with Balinese herbs [cardamom, cloves and star anise]. Potato Crisp Nachos are thin slices of potato fried till very crisp replacing the usual corn chips. They are covered by baked beans, diced tomato, melted cheddar cheese and sour cream. You can also add chicken or pulled pork on top. Then there is the Naughty Pork Quesadilla, pulled pork combined with pineapple chutney and cheese, once again an interesting creation. Even that Indonesian standard Nasi Goreng gets a makeover, the fried rice is topped with shredded egg and pork strips, two baby back ribs sit on top, together with a strip of crackling. However it is the Pork Drumettes [a ball of pork mince attached to the bone] and the Pork Poppers [crumbed] that are impossible to stop eating!

Pekandelan Warung, at the entrance to The Tegenungung Waterfalls at Kemenuh, continues to amaze with the quality of food served at such a surprisingly cheap price. Our Cheap Eats find of 2017, they have now done it again! A full range of Dim Sum at the crazy price of Rp.15,000++ per serve [3 or 4 pieces in each]. Not surprisingly the most popular order is for their giant mixed platter, 18 pieces for Rp. 65,000++.

Food Court stalls are normally staffed by cooks rather than chefs and more often than not home trained. So it was a pleasant surprise to discover that two of the outlets at rhe new Ubud Food Court on Tebasaya [operated by the food court owners] were under the control of young talented Balinese chef Komang Juniantara, ex Taksu and Ulun Carik where I had previously tasted, and raved about, his dishes…quality at that price! Eggs Benedict @ Rp. 40, 000, in a food court! One outlet offers Indonesian; Crispy Tahu & Tempe, Bakmi Goreng, Ayam Bakar Rica-Rica, Rendang, etc. The other is Komang’s Western choices; Fish & Chips [Mahi-Mahi], Pasta, Burgers, Cajun Chicken or Schawarma and Ribs. There is a standard western breakfast as well as the Eggs Benedict. Not bad for a food court?

Daebak is Korean on the Renon loop at Jln. Jok Agung Tresna. The big menu covers all of the traditional Korean dishes plus a few new creations. Kim Chi [cabbage soaked in chilli] is a popular base to many dishes, sometimes just eaten as a side dish, here you can have it in a soup, with noodles or even mixed with the Korean fried rice, their version of Nasi Goreng. Bulgogi is a beef staple of Korean cuisine, it is thin strips of meat that have been marinated before grilling. In view of the long time conflict between north and south it is interesting to note that Bulgogi is actually a traditional dish from North Korea but one that has long become adopted in the south as well. Many Japanese dishes have been modified to Korean tastes, sushi and noodles particularly, and are available here.

Souphoria on Jln. Bumbak, in Canggu, is most unusual in that their menu is all pork! They serve their pork ribs in a soup. Pork Sate may not be that unusual but these are very large ones. Loco Moco is a Hawaiian special of rice, meat and a fried egg on top. At Souphoria that meat is of course, pork. Many of the dishes are based on local standards, the Crisp Pork Belly with Balinese sambal matah, the Rendang with pork and the Betutu, pork ribs. Or you can go Chinese with Pork Belly and Salted Egg. Nothing is wasted here…. you can also order Pig Ears, very spicy!

Beach House Sanur may sound like a new restaurant, it is and it isn’t. On the beach at Semawang, south of Sanur it is the re-branded Stiff Chilli which was always one of Sanur’s best budget-priced restaurants. The Australian management have broken away from Rodney Holt’s banner, though the menu stays the same as they were doing under that name last year. Does this mean the end of Rodney’s Stiff Chilli restaurants? The original Stiff Chilli, on the hill at Uluwatu almost 20 years ago, was an instant success introducing simple, tasty, bistro style food to Bali at budget prices! Rodney Holt was one of Bali’s chef pioneers. He was one of the first top chefs to venture here [Amanusa and Begawan Giri in the 90’s, he fell in love with both the island, and a girl, and stayed!].Whilst the Beach House Sanur is also a sports bar that section is kept completely separate, a great idea for all those who do not want the constant interruption. Interesting pasta combinations include Prawn and Chorizo Linguini, with large prawns, chorizo, Lombok chilli, paprika, fresh tomato garlic and lime, or Tagliolini all’inchiostro, squid ink pasta with smoked marlin cream sauce. Even the pasta with meat is a ‘cheap eat’. Such as Agnolotti Pollo Funghi, chicken and mushroom filled pasta, with a mushroom, thyme, garlic cream sauce. Seafood and meat dishes as well; a Bintang battered Mahi Mahi or Gamberone alla Griglia, prawns grilled with garlic parsley and lime served with salad and chips. The always popular Sicilian “Bangers and Mash”, 2 large beef sausages on a bed of mashed potato, topped with an Italian salsa of tomato, onion, garlic, chilli and olives. Great Value!

Mainly Vietnamese! Bo & Bun offers a variety of Asian cuisines, but the main one is Vietnamese, although there are also many Thai dishes as well as some Korean, Indonesian, Chinese and a few of their own combos. Normally places with many different cuisines are those to be avoided but at Bo & Bun they do them all well enough to be an exception to that rule! The most common Viet dish on offer in Indonesia is Rice Paper Rolls. Sadly the quality of this quite simple dish varies greatly from place to place. As with the Japanese Sushi it is best prepared fresh, ‘a la minute’, NOT pre-prepared and then refrigerated, thus losing most of its taste, finishing in your mouth almost as plastic. At Bo & Bun they offer them as they are most often served in Vietnam…you make them yourself! The plate has a pile of rice paper, dampen them and fill them with a host of ingredients. Select your base of pork, chicken or tofu, then cucumber, coriander, mint [a must] and much more are to be added. You soon discover why inexperienced kitchens often ruin them! Messy but fun, and like anything that you create yourself tastes great when you get it right! These are a great starter to any Asian meal but there are many other interesting snacks and entrees here, in fact you could make a meal of just them, as there are so many different tastes. Viet deep fried Spring Rolls are different from all of the others….they are stuffed with cabbage, wood ear mushrooms and glass noodles. You dunk them in the traditional Viet ‘nuoc cham’ dipping sauce [lemongrass, lime juice and a little chilli]. For a complete variety of taste add a plate of the Korean Chicken Wings in a spicy Korean sauce sprinkled with sesame seeds, some Thai Fish Cakes, and a serve of Bao Gao, steam buns stuffed with pork belly, pickled cucumber,

a bit of coriander and chilli then dipped in the sweet Chinese hoisin sauce. There is also a regular Thai dish, Gai Hor Bai Toey, Chicken Pandan on this menu, chicken pieces wrapped in pandan leaves though they serve it with that all purpose sweet chilli sauce rather than the wonderful traditional tamarind/sesame reduction. Vietnamese Salads have a wonderful clean fresh taste to them derived from the range of ingredients but here a house creation steals the show. It is called just a Crunchy Asian Salad and is based on the use of Japanese soba noodles, but served cold! I had never experienced them cold until a recent meal at Reef in Sanur, ever since then I am totally hooked! At Bo & Bun the cold soba noodles are combined with shredded carrots, red & white cabbage, grilled tempe and fried wonton skins, tossed in a soy & ginger dressing. Fantastic! By now you are almost full and you have not even looked at the house special…PHO. For many people this dish is why so many go to Vietnamese restaurants, although I am afraid for me the other traditional dishes are more important. Pho is beef [here a combination of tenderloin, brisket and meat balls] in a broth with noodles, coriander, onions, bean sprouts, chilli, basil and lime. It is a very aromatic dish. They also offer another Pho version with lemongrass but that is so popular it sells out quickly each day.

A Pad Thai, Chicken & Cashew and one of my all-time favourites, Kra Pao [minced chicken with Thai basil, topped with a fried egg], which is good but served much lighter on the chilli, than real Thai. Balsamic Feta Carrots Serves 4

Ingredients: - 1 kg peeled carrots, cut in half lengthwise - 2 Tbl. olive oil - 100 g butter - 2 Tbl. palm sugar - 2 Tbl. balsamic glaze (see above to make your own) - 30 gr. feta cheese, crumbled - 50 g pine nuts or cashews, roasted in a wok or frying pan - 1 Tbl. Italian parsley, chopped Directions: Preheat the oven to 400ËšF.

Oil a cookie sheet with some of the olive oil. Add the carrots to the cookie sheet and toss them with the remaining oil. Roast the carrots in the preheated oven for 25-30 minutes or until nicely browned. While the carrots are roasting make the sauce. Into a small pot over a low heat melt the butter. Add the palm sugar and the balsamic glaze and stir well. Keep this warm. When the carrots are beautifully browned, arrange them on a serving plate. Pour the balsamic butter mixture over them and garnish with the parsley and nuts. Serve warm. Enjoy your carrots!

As are the avenues for dispute and disappointment, quite apart from the bureaucratic obstacles encountered along the way. Of course property deals are the behemoth in the hallway of this particular villa. Suffice it to say that if a foreigner builds and rents out a villa for hundreds of thousands of dollars over decades, while paying a peppercorn rent, that foreigner can hardly be surprised when the landowner wants to renegotiate the deal. On the other hand, if the deal was essentially fair and legally sound from the outset and the owner (or heirs) are hell-bent on dispossessing their tenant without reasonable discussion or compensation, then there are certainly grounds for grievance.

It is the real and the authentic that is the true luxury in this day and age - and Bali is uniquely situated to take advantage of this. But, for that to happen a creative meeting of minds on both the commercial and artistic levels is required. One way or another Bali has evolved. It is not the place it was. How could it be? Theme park traditionalism, however you dress it up, is no answer. If Balinese cannot keep the rest of Indonesia out and they don’t relish the low-paid low-status jobs hardworking Javanese come here to perform, then they need to trade up. What makes Bali special is precisely that it embodies this creative spirit. Why then, are so many of it’s young men and women packed off to get ho-hum qualifications designed to serve the F&B and tourism industries? This misallocation should be greatly reduced. Less than a year after penning a piece in these pages welcoming the opening of Chris Salens’ Spice resaurant in Sanur I was sad to see that it has now closed. This is Sanur’s loss as Spice provided not just delicious food but a very agreeable ambience in an excellent location. The culinary curse of Sanur strikes again.... I mention this because one of the pleasures of this restaurant was the open outside area where on occasion a Saturday market was held with stallholders selling natural produce and handicrafts. This was where I first came across the excellent jams made by Confiture de Bali, illustrating in miniature the opportunites and snags (referred above) of running a cross-cultural business in Bali.

Confiture Michele de Bali was a small company making jam in the traditional French way using fresh fruit and using only 30 percent added sugar rather than the sickeningly sweet 70 percent that is the norm. It was started back in 2013 by a French women and her Balinese co-founder with a small shop in Ubud selling a range of jams and nut butters and also cooking buckwheat crepes for customers to sample the jams. Each of the partners put in the respective expertise needed to make the concept prosper – and it did. The company now offers over 30 kinds of jam along with nut butters and kombucha. The prices are very reasonable for all the jams at Rp52K for a 330mL jar.

BREAST CANCER - To Chemo or Not To Chemo? Recent studies have shown that many women who have been diagnosed with the most common form of breast cancer may not actually need chemotherapy. Thousands of women with the most common form of early breast cancer may be spared chemotherapy under a new “precision medicine” approach, according to a landmark study. Researchers estimate that more than 123,000 women in the US and 23,000 women in the UK are diagnosed with the particular form of the disease each year. With the new treatment protocols, less than a third of them would need chemotherapy.

Of the 10,273 women tested, 6,711 (69%) had a score of 11-25. They were randomly assigned to receive endocrine therapy alone, or a combination of endocrine and chemotherapy. Researchers concluded that, depending on a patient’s age, women who received only endocrine therapy did not fare worse than those who were also treated with chemotherapy. It means women over 50 with this type of cancer and a score of 0-25 do not need chemotherapy; women younger than 50 with a score of 0-15 can also avoid the difficult treatment.

This is great news given that chemotherapy itself can cause awful side effects. But chemotherapy is not being given the boot all together. There are still many other forms of breast cancer that will respond to chemo, and it is still a life-saving treatment for those that really need it.

The Best Treatment is Prevention Regardless of the treatment that you may need if you should be diagnosed with breast cancer, early diagnosis always improves that outcome, and the best way person to detect this is yourself.

Breast cancer is the most common cancer in women worldwide. This study looked at women with early hormone-receptor-positive, HER2-negative, axillary-nodenegative breast cancer, which accounts for about half of all cases.

The most common signs of breast cancer are a lump in the breast; abnormal thickening of the breast; or a change in the shape or color of the breast. Finding a lump or change in your breast does not necessarily mean you have breast cancer. Additional changes that may also be signs of breast cancer include: • Any new, hard lump or thickening in any part of the breast • Change in breast size or shape • Dimpling or puckering of the skin • Swelling, redness or warmth that does not go away • Pain in one spot that does not vary with your monthly cycle • Pulling in of the nipple • Nipple discharge that starts suddenly and appears only

It is through our hearts’ wisdom that we are able to unlock the door to our subconscious and delete any programs which no longer serve us. I recently had a client who had been getting body work for many years because she had severe lower back pain. She was referred to me by her body worker who intuitively felt that there was an emotional aspect connected to Martha’s pain (a fictitious name is being used to protect the client’s identity). Martha is a 60 year old woman in very good physical condition who teaches yoga. When I asked her what her pain level was from 1 -10 she shared that the pain was normally between 7 - 8, but in that moment she was at an 8. She told me about her life and I could already sense that her pain was strongly connected to a trapped emotion. I then asked her how long ago the pain began, and she recalled that it started about 35 years ago. “What was going on in your life at that time?” I asked. “I had fallen in love with the man who I believe was my soul mate, but due to our different cultural backgrounds and circumstances, it just didn’t seem possible for us to stay together.”

I guided Martha to access the love for this man and allow it to flow into her heart, moving it throughout her whole body until she felt completely filled with love. Then I asked her to direct this love to her lower back for self healing. This process only took a few minutes. I witnessed a change in her whole demeanor. Her face and body relaxed and there was a lovely smile on her lips. “Please gently open your eyes, Martha.” As she opened her eyes and met mine, I could see a peace that wasn’t present in the beginning of the session. “I never knew that I could access that love again and utilize it in this way. That was amazing,” said Martha with deep appreciation in her voice. I am always touched to witness someone’s healing and transformation. I believe that I am just a vessel and that my guides are working through me to serve the greater good, helping each person I work with to discover their own super human capacities. I don’t know why I was guided to use love as a mode for healing. I honestly haven’t done this type of healing very much as I have many tools in my repertoire which include Reiki, hypnotherapy, Shamanism and much more. And yet, that day with Martha I realized that our heart’s intelligence had far greater capacities to heal us then we give it credit for. This little brain is the key to our wellbeing and soul’s growth. The more we are able to connect with our heart and have a direct line of communication with our brain and vice versa, the easier it will be to navigate through our lives and discover true happiness. The heart knows what we need, we just have to take the time to listen. So how can we cultivate more of our heart intelligence? Take the time to slow down and find time for yourself. Close your eyes and place your hand on your heart as you tune into the rhythm of your heart beat. Take a few deep, full body breaths and allow yourself to really move down into your heart and out of your head. Ask your heart a question like: “What do I need to know about my next steps in life?” Just sit silently and wait for your heart wisdom to arise. It won’t be a logical answer, but more of a knowing or understanding that you will receive. The heart speaks a very different language which is often more subtle or gentler than our logical brain. Our heart is the barometer for the soul. It is here that we can access our truth and open up to the beauty of who we truly are.

Freeing Rootbound Plants ‘I live in Thailand and I have just moved into a new house the previous owner has left me a beautiful pot plant which seems to be absolutely thriving but after a little deeper look I can see the plant has grown into the soil under it. The plant is in a very awkward place and really needs to be moved. But I’m so scared to kill it. I also know that being like this in the pot can’t be good for the plant in the long run...Do I cut the roots and risk killing this beauty? Sondra, Thank you so much in advance. I’d like to deal with this with as much love and respect for this plant’ Thank you for the question about an often overlooked, yet critical aspect of gardening. Absolutely cut the roots and free this plant from its rootbound prison, you’ll be doing the plant a favour, in fact the hardest thing about this task is going to be getting the plant out of the pot.

The pot looks like a throwaway, so it’s no big deal. It’ll feel good smashing that pot up and freeing the plant, and how often do you get to feel good about smashing things up? It’s the right thing to do. The pot’s constricting the plant which will do so much better out of there, it’s doing well just to survive as it is. In the case that a pot is worth saving, try a serrated bread knife sunk in at the edges operated with a sawing motion around the internal perimeter of the pot to see if you can free the plant.

If you think you’re harming the plant, then think about bonsai which are extremely delicate - yet the entire art relies on either trimming the roots, keeping the plant in small pots, or otherwise restricting root volume to restrict overall growth. Once you’ve untangled the root-ball into something manageable it’s as simple as repotting or transplanting, use plenty of compost, then water in well.

I wouldn’t worry about hurting the plant in this whole process, it should survive just keep it well watered before and after. Either transplant it direct to the ground in a well-prepared soil or move it to a much larger pot. But before you move it, think about how you are going to do it - break it down into tasks.

1.To increase the chances of success water well before and after. 2.Perform the task in the late afternoon, there’s nothing worse than transplanting into the full heat of the midday sun. Often it’s the first few hours after the transplant that determines whether the operation is a success. 3.Have a new larger pot or a place in the garden preprepared, composted and watered, the plant should be back in earth ASAP. 4. Trim the crown of the plant back to a nice manageable shape. If you’re worried about losing the plant you can always make some cuttings from the parts you trim off. 5. Remove the plant or break the pot, trim woody roots and tease out the finer ones, then trim the root-ball back to a balanced shape so that it literally resembles a ‘ball’ or spherical shape, don’t be too fussy about it - just get it back in the ground ASAP. 6. If you must transplant to a sunny spot in the garden, prepare a shade cloth or even an old white bed sheet draped over the plant for a few days/ weeks will help reduce transpiration and allow it to fully recover much better. Water it in well and regularly until you notice new growth starting to appear.

Freeing Rootbound Plants Any root bound plant will benefit from being removed and relocated from its confined space. There’s no need to worry about hurting the plant as remaining in a rootbound condition is more detrimental than anything else. With a standard nursery plant that comes in a 10 or 20 mm plastic pot releasing a rootbound plant is as easy as watering the soil, squeezing the plastic sides and popping it out. Then you tease out as many of the wound-up roots as possible and clip off the excess with secateurs leaving you with a balanced root-ball and then replant. Now for a plant like yours, bound in an earthenware pot (same goes for ceramic) you have a a task on your hands. You’d be lucky to get it out, I have a feeling you’re going to have to bring out wrecking crew and smash the pot open with a hammer, sledgehammer, crowbar, whatever is easiest and the most fun! Why? You might ask. Well, there’s a few things going on here. 1. The tiny size of the pot relative to the plant for starters. 2. The woody roots growing from the pot into the ground. 3. The fact that the pot is not only earthenware but square also. With a circular earthenware, or ceramic pot you might have a chance of getting the plant out, but in my experience those woody exposed roots are just the tip of the iceberg. They will be curled up inside all around each other, interlocked, wedged and attached to the pot in the corners and sides in the most unhelpful ways - essentially making it impossible to remove the plant. I doubt the woody roots found their way out on the first attempt, well that’s what experience tells me anyway and trust me I’m a gardener!

1.Pre-prepare it ‘s new position, garden bed or a much larger pot? 2.Trim the plant back into a nice shape. Plants always do better with a trim before transplanting. The reduced foliage means less moisture loss to transpiration - the plant will better cope with transplant stress. Think about plant cuttings, we usually take the foliage back to all but the last few pairs of growing tips. From the pictures sent in I can see that it could easily be trimmed into a nice spherical shape by taking out some of the wild outlying bits, or better still cut it back even harder. 3.Roots growing from the pot into the ground need to be cut, secateurs might do it, otherwise a saw. Make sure all your tools are clean and sharp. 4.Move the plant to its desired position for transplant then remove it from the pot or otherwise break it away with a hammer. Once the plant is out cut the woody roots back and get your fingers in there and tease out the finer roots so that everything runs free. Don’t worry too much about hurting the plant, there’s probably not even much soil left in the pot and if its managed to survive like that, a bit of root remediation isn’t going to hurt. On a heavily rootbound plant it is possible to take off up to 50% of the root-ball sometimes more with no ill-effects depending on the plant and how severely bound it is. With a substantial trim of the root-ball also trim back the crown of the plant.

Tips for Ultimate Success

Follow the steps and don’t worry too much about hurting the plant, cutting off those woody bound roots is like cutting off a gangrenous limb, it’s worth the risk. Most gardeners are accustomed to only trimming above ground, but once you’ve pulled a plant out and trimmed its roots…then you know you’ve really arrived!

Balinese believe the gods dwell in Agung, the ash-spewing volcano that ruled out tourism and local life in east Bali for almost four months from late 2017.

Ceremonies to appease the gods certainly defied the predictions of volcanologists, who were sure the 3000-metre plus gunung api (fire mountain) was set for an imminent eruption. Their predictions served to re-locate tens of thousands of people living within a designated red zone. The dire warnings also had a profound effect on tourism, the island’s number one industry. But not content with the volcano’s present sleep-mode, hundreds of men from Karangasem regency, Bali’s most easterly regency, maintain regular visits to Penataran Agung temple in a community effort known as gotong royong. Construction of bamboo and palm temporary outbuildings and maintenance of the grounds are in preparation for a major full moon ceremony on September 24, a year after Agung signalled its first intentions with a show of steam, smoke and ash. Village chiefs assign various tasks to the banjars (council divisions), such as digging post foundations, moving soil, crafting posts and rails, palm frond fashioning for walls and roof. These gotong royong efforts begin just after dawn, when the clouds still hover on the three central spires of the temple, representative of Bali’s three most important mountains. This selfless, hard labour is offered without monetary rewards, but promising something richer: the belief that homage to Agung will satisfy the gods and serve to insert a spiritual plug in the restless crater. In other words, a return to life minus the threat of deadly lava, fire and noxious gases. The older participants still remember the eruption of March 1963 when more than 1000 people died and farmers were unable to harvest crops or tend to livestock for months. With that historic fact in the back of your mind, weeks and weeks of community building and cleansing processes need no explanation. By Ian Monaghan

Making a difference! Rotary Club of Bali Lovina In 2017-18, we’ll answer the question “What is Rotary?” with RI Ian H.S. Riseley’s theme, Rotary: Making a Difference. “Whether we’re building a new playground or a new school, improving medical care or sanitation, training conflict mediators or midwives, we know that the work we do will change people’s lives - in ways large and small - for the better.” And this is what makes Rotary such a special organization. The fact that it can change people’s lives for the better through small and large projects and on the hands of smaller and larger clubs. Because; every Club is in its own unique location with its own challenges and consists of its own unique group of people. The Rotary Club of Bali Lovina is a rather small Club but it is a dynamic one at the same time. All our members are proactive members, because we are aware of our service making a difference in people’s lives. We are involved in projects primarily aimed at assisting the less fortunate people of Buleleng Regency (North Bali). As the only club in Buleleng we have a lot of ground to cover! We need more hands on board in order to be able to give more and better assistance in the field. Let me give you an example of what people could do looking at our Club’s literacy program.

Over several years we have been able to provide books and other materials to a number of elementary schools in Buleleng. Currently, under the auspices of the Window to the World school in Lovina, a series of workshops is being held to assist the schools and their library staff in the more active use of these library materials in improving literacy. The project is surveying the participating schools to determine their needs, whether it be more books, more literacy materials, further training, and so on. Our members visit schools and talk with participating people, school staff as well as the children. This is labour-intensive work and a pair of extra hands would be more than welcome. The success of these projects relies very much in continuing assistance in order to make sure things stay afloat. It is nice work and we do things together as a team. But at the end of the day it is definitely work! So, yes, to be in Rotary demands being proactively involved into your Club’s programs. Only then we can make a difference. Our current Rotary International President explained it as follows at the start of his term as President; “To me, Rotary is defined not by who we are, but by what we do - by the potential that Rotary gives us, and the ways we realize that potential in meaningful and lasting

service. Rotary has been around for a long time: 112 years. In some ways, we’ve changed tremendously, as we’ve grown, matured, and adapted to the changing needs of our members and communities. In our fundamentals, however, we remain the same: an organization of people with the desire - and through Rotary, the ability - to make a difference in our communities, and the world. We answer the question “What is Rotary?” with our actions, by making a difference through our service.” I do not think I could say that in better words. So I would like to reach out to people in our area. If you live in the Lovina area and you want to make a difference; get involved and join us in our Club’s project work.

Escape Nomade Promotes Wall-Free Living “Tents are addictive,” says Anneke van Waesberghe, the founder of Escape Nomade, a Bali-based luxury tent manufacturer. For Anneke living in a tent equates to living without walls, both in the physical and psychological sense. According to her, the concept of living inside and outside simultaneously also means living in tune with nature, which in turn makes it easier to become aware of the present moment. Perhaps, this notion is what is making glamping, or glamorous camping, increasingly more popular on the island. The concept of no ties, no walls, and complete freedom without compromising on creature comforts such as a bathroom, air-conditioning and hot water is certainly an appealing one.

While most people opt to glamp at one of the resorts on the island for a night or two, others, like Anneke, are making a more permanent switch to tented accommodation. Anneke’s love affair with tents began when she decided to have one set up in a garden outside her studio to display the travel products that she was designing at the time. She then had a larger tent designed and installed close to the Ayung River in Ubud where she was planning to build her house. In the end, she never had the house built, and decided to put up more tents and live in them instead. Building on this passion, Anneke has been creating customized tent/house hybrids since 2004. “We have a team of in-house architects that work closely with each of our client in order to satisfy their requirements, keeping in mind any technical restrictions.” Up to date, Escape Nomade has exported tents to over 19 countries including Myanmar, Laos, Thailand, Cambodia,

Colombia, Portugal and Greece. While the tents may not be suitable for colder climates, they are quite versatile and sturdy. Designed to withstand sun, humidity, torrential rain and winds of up to 175 kilometers per hour, the tents can be installed on any terrain, be it the jungle or a concrete rooftop. The tents are constructed at Escape Nomade factories in Ubud and Banyuwangi in Java, and packaged in wooden crates for shipping—no plastic or styrofoam is used during transportation. Once installed, the structures can stand up to 20 years, and can be easily packed and moved if required. The first step of taking an order for a tent is working out how it will be used—a residential property, an overnight guesthouse, a spa tent or a venue for weddings being some of the most common requests—and where it will be installed. Anneke’s team then looks at how to minimize the impact of the tent on the surrounding landscape before helping the client to decide on the size of the structure— the tents range between 25 and 150 square meters. After that, the client is guided through selecting wall panel configurations, door and window placement, as well as flooring and rooftop options. “Most clients request to bring one of our project managers to the site, so that they can help with the oneday installation process,” Anneke says. Made from r e c y c l a b l e galvanized steel, sustainablyh a r v e s t e d hardwood and high-quality canvas, the tents are environmentally-friendly and energy efficient. They are designed to draw cool air from underneath the bed or deck, and expel hot air through cross-ventilated spaces and a roof ventilation system, often making air-conditioning

unnecessary. Compared to brick and mortar buildings, the amount of time and materials, as well as man hours, taken to build tented accommodation is minimal. “The construction utilizes natural materials so as not to disturb the surrounding nature, keeping in mind sustainability, cost and availability. Plus, the tents are low maintenance, and the products we use for cleaning are all natural,” Anneke says. “And the structures can be taken down in half a day, and once the concrete foundation is taken away there is no sign that the structure was even every there.” There is little doubt that tented accommodation has come a long way since the days of boy scout tents. Escape Nomade is not just about seeing, touching, smelling and hearing the surrounding nature, but also about sleeping in comfort. “Our clients come to us with a dream and I love to help them make that dream come true,” Anneke says. “Some of them wish to build a resort, others decide to live in a tent, as I do.
