Bali is facing an environmental and potential health disaster with the trash on the much loved island. Only 3 decades ago, plastic was not used in Bali. Most Balinese would bring a woven bag to carry items home from the markets. Today, almost every item that is purchased throughout Bali, from ceremonial offerings to food, to general house hold items, is packed in plastic. Cargo & Export Soemantri Widagdo was born in Pekalongan on the north coast of Java and his family moved to Jakarta when he was three. He was brought up a Catholic and was deeply influenced by Christ’s teachings. After graduating in 1974 from the Jesuit’s Kanisius College in Jakarta, Soemantri went on to receive a Bachelors in Chemical Engineering from the Institute of Technology Bandung in 1981 and a Masters and Doctorate in 1991 at the Stevens Institute of Technology in New Jersey and the University of Pennsylvania in the USA. He worked as an engineer, researcher and educator throughout his professional career (1985-2009) in the USA and from 2010 to 2012 in Southeast Asia. Presently, Soemantri serves as the founding chairman on the advisory board of the non-profit organization Yayasan Titian Bali.

How did you become involved in Balinese art? When I came to Bali for the first time in 1994, I happened upon the Museum Puri Lukisan and met Pak Muning. He introduced me to five Balinese masters in their studios including Anak Agung Gde Meregeg from Padangtegal and Ida Bagus Made Poleng from Tebesaya. Due to my familiarity with Mahabharata and Ramayana, I understood the narratives depicted in Balinese art. I worked closely with Pak Muning to build up the museum’s collection and reviving the annual exhibition which had been held since 1995. All proceeds from exhibition sales were allocated solely for new acquisitions.
How did Yayasan Titian Bali come about? By 2015, after completing the last international exhibition of the works of I Gusti Nyoman Lempad, and in order to continue the mission of the Pita Maha Artists Association, I decided to build a new foundation with the mission of discovering, nurturing and developing the talents of Balinese painters and woodcarvers. Thus the Yayasan Titian Bali was founded on 29 January 2016, the 80th Anniversary of the establishment of Pita Maha.
What do you mean by “a new ecosystem” for the arts? The current ecosystem allows the middleman to profit the most. We want to create a new value chain where the creators (artists) and the end customers (collectors, museums, institutions, etc.) are more fairly rewarded. To help correct this imbalance, all exhibitions of Balinese artists at Titian Art Space are free of charge. We require no exclusivity contract with artists who are free to sell directly to buyers. Some artists voluntarily ask us to handle the transactions. The gallery also publishes books on Balinese Masters in Indonesian that are available free of charge to Balinese artists.
Does your display space support only Balinese and Indonesian artists? Our primary focus is to exhibit the work of new Balinese talent, but we do show the work of foreign and well-established Indonesian and foreign artists in order to introduce Balinese artists to different techniques, schools of art and marketing approaches. Our exhibitions consist mostly of paintings and sculptures, but also art installations and photography.
Is selecting which artist’s work to exhibit difficult? In 22 years of holding large exhibitions in Bali, we have always had tremendous difficulty finding more than a handful of great works. The selection criteria are based on subject matter and on how innovative is the artist’s work. We look at how he reacts and responds to what’s happening around him rather than just the mere depiction of Balinese landscapes and traditions. Our choice of young artists is not based on their financial success, but on their talent. We believe that financial success should be a by-product rather than a criterion.
Do the exhibits tend to be large? Because of space limitations of 100 square meters, we have to limit exhibitions to nine works from one artist. Exhibiting only nine works at a time is also based on the Balinese Nawasanga principle which embodies the nine directions of a Hindu mandala. However, in the future we will exhibit only

three and ultimately only one artist’s work. The main idea is to focus on quality rather than quantity so that the exhibit is more likely to attract collectors. It’s a marketing strategy.

When choosing artistic talent, do you use an evaluation board or panel of judges? January 29th, 2017 was the first anniversary of the inauguration of the Titian Prize, our way to identify and reward new talent. The three presiding judges were respected art experts with no direct association with our yayasan: Agung Rai, founder of ARMA; Ms. Lisa Horikawa, senior curator of the National Gallery of Singapore; Mr. Richard Hassell, an award-winning Australian architect, painter and avid collector of Balinese art. We purposely assembled an international panel of judges to attract international attention.
How do you teach artists to become art entrepreneurs? Most artists are not entrepreneurs. They are too busy imagining, exploring and transforming their ideas into works of art. Our main job is to introduce them to the marketplace and how to manage their careers and their finances. Yayasan Titian workshops teach artists about evaluating art, various approaches to realistically pricing their work as well as other pricing strategies for beginner, mid-career and mature artists. We also give instruction on how to negotiate with art galleries, museums, auction houses and private and institutional collectors.
Do you have a marketing success story? One example of an artist’s successful self-promotion is that of Anak Agung Gde Anom Sukawati (b. 1966) whose work we first exhibited at Museum Puri Lukisan in 1996. Now among the most sought after Balinese artists, one of his works reached a new world record Rp350 million (including buyer’s premium) at the Larasati Bali Sale in 2016.

11 In Search of the Perfect Bali Avocado Don’t chuck the Stone – Eat it… There aren’t many people who don’t like avocados. They’re creamy, delicious, brilliantly versatile and undeniably one of the greatest super foods available on supermarket shelves. Most people are aware by now of the wideranging health benefits that the flesh of the avocado provides, but few know that the seed they throw away every time they eat an avocado provides even more health-giving properties than the flesh itself. While the flesh of the avocado is indeed packed full with nutrients and healthy fats, you may be surprised to learn that over 70 percent of the total antioxidant concentration in avocados, which is what essentially makes them the superfood they are, is jam-packed into the seed. It is worth taking a second or longer look at this rather wonderful appearing object. The pit or stone of any fruit is usually possessed of remarkable but not always tasty healing properties. In the case of the avocado and its stone, which are in fact botanically classified as a nut, the stone is a large smooth oval of a rich brown colour. As noted, seeds are powerful entities, packing enough life and power in a very small space to move and feed worlds. In which case, the avocado stone is an emperor among seeds with a numinous presence all of its own when contemplated for any length of time. If you’re in any doubt about this, instead of throwing the stone away, next time just set it in a bottle or container with the bottom eighth of it resting in water and see the result. Before too many days have elapsed something remarkable starts to happen. The top of the stone splits and a bud appears which begins to grow straight upward day by day. After eight inches or so of shoot a rich green leaf will appear on top. And the shoot continues upward. It all has a rather wonderful zen-like aesthetic (beats the office bizzy Lizzy anytime). In theory at least, you can re-pot it in your garden and are now on your way to your very own hydroponic-sourced avocado orchard. Good luck with that. Reduces inflammation The powerful combination of antioxidants in avocado seeds is responsible for a lot of major medical benefits beyond the manifest nutritional benefits. It is a remarkably effective anti-inflammatory, containing high concentrations of catechins and procyanidins; antioxidants that reduce the inflammation associated with pain, swelling, stiffness and impaired joint function. This heroic pair of antioxidants is also what strives mightily to ensure heart health and optimum blood circulation. Fights cancer Recent research has shown that extracts from the avocado seed have what’s called an pro-apoptotic influence on leukemia cells, meaning that the extract caused leukemia cells to die while leaving healthy cells healthy and stable. For this reason, avocado seeds may provide an important way to fight or reduce the risk from other cancers also.
Skin support The powerful cocktail of antioxidants combined in an avocado seed is exactly what your skin needs to become supple and clear. The antioxidants rebuild collagen; repair cells damaged by free radicals and generally makes your skin look and feel healthier. Processing the Avocado Seed Having learned something of the benefits of the avocado seed you might be wondering how to access them. As it is, they seed is hard and like many ovaloids, hard to bust into. The first step is to remove the seed from the surrounding flesh by cutting the avocado in half by cutting around the seed, twisting and separating the segments. Use a sharp heavy knife and with care whack into down into the seed and twist it out using the edge of a cutting board or similar to dislodge the seed from your knife. Then carefully cut it into quarters, which is now quite easy to do. Next, throw the quarters into a powerful blender and process into a fine powder. Divide the results into two – each being enough for one serving and either use or store in the refrigerator. Now you have the basis for making the smoothie of your choice, but be aware that the avocado seed powder is quite bitter due to its tannins, and choose the other ingredients of your smoothie accordingly. Other methods include: Cutting the seed into small pieces and letting them dry. You can then convert the pieces into powder by crushing or any other appropriate method.

Another way to consume the seeds is run them through a juicer and add the resulting nut butter to an omelette of eggs and any other ingredients you care to add. This way you get an agreeable natural flavor without having to disguise the seed flavor usually with one or other form of sugar. In Search of the perfect Bali Avocado… A year or so back in this column I wrote about the astonishing rise and worldwide popularity of the Avocado ‘pear’. In that piece I noted that you needed to buy your avocados here in Bali with care. The imported ones were usually very expensive and usually delicious in texture and flavor. However on occasion you would get a dud, blackened, part-rotten, or hard and only softening when it went direct to black and rotten. The Bali avocado, which was much cheaper, invariably had a watery texture and lacked much of the flavor of the imports. Presumably this had to do with climate and elevation. However on occasion I had been lucky and been able to buy Bali avocados just as good as any import.

HOW SAFE IS THE PORK ON YOUR FORK?

STREPTOCOCCUS SUIS Many of you may have seen the warnings regarding the consumption of locally produced pork recently. The warning concerns particular bacteria, the Streptococcus Suis. This nasty little character can cause Meningitis (brain infection) in humans. Human infection by Strep. suis occurs mainly in adults. It is transmitted through direct contact and often related to exposure through wounds on the skin while handling of the infected pigs or pork. Consumption of raw or undercooked pork is also a concern. S. suis infection can be treated effectively with antibiotics. High-risk groups People at risk include pig breeders, abattoir workers, meat processing and transport workers, butchers, and cooks. People with low immune systems, including persons with diabetes mellitus, cancer and alcoholism, are also at greater risk of infection. Prevention Personal hygiene • Avoid contact with pigs. • When handling pigs or raw pork, wear protective gloves and avoid injury. • Wash hands thoroughly after handling pigs or raw pork. • Disinfect and cover wounds properly. Food hygiene • Raw pork and cooked food should be handled and kept separately. • Pork should be cooked thoroughly before consumption. People with suspected symptoms should consult their doctor as soon as possible and report their relevant exposure history. The incubation period ranges from a few hours to two weeks. Clinical symptoms of acute bacterial meningitis are : 1. Fever 2. Change in consciousness 3. Stiff neck 4. Headache 5. Nausea & vomiting TRICHINELLA SPIRALIS (trichina) Another concern when handling and consuming pork is Trichinosis. This is a parasitic disease caused by roundworms of the Trichinella type. Trichinosis is mainly spread when undercooked meat containing Trichinella cysts is eaten. Most often this is pork and dog meat.
During the initial infection invasion of the intestines can cause: 1. Diarrhea 2. Abdominal pain 3. Vomiting Migration of larvae to muscle, which occurs about a week after being infected, can cause: 1. swelling of the face 2. inflammation of the whites of the eyes 3. fever 4. muscle pains 5. rash Minor infection may be without symptoms. Complications may include inflammation of heart muscle, central nervous system involvement, and inflammation of the lungs. The best way to prevent trichinellosis is to fully cook meat. A food thermometer can verify that the temperature inside the meat is high enough. Infection is typically treated with anti-parasitic medication such as albendazole or mebendazole. HANDLING PORK SAFELY Cleanliness: A clean working environment is essential in the prevention of contamination when working with pork. Be sure to wash hands thoroughly before and after handling raw pork. The work area, cutting boards, and utensils must be thoroughly cleaned with hot soapy water after being exposed to raw pork and should not be used for other foods until properly cleaned. This will prevent cross contamination of bacteria from the pork to other foods. Handling: At the supermarket, pork should be placed in a plastic bag to prevent any leakage from contaminating any other foods. After purchasing it should be taken home and refrigerated as soon as possible. When cooking and serving pork, the meat must be handled properly to prevent contamination. Be sure that raw pork does not come in contact with foods that have already been cooked or foods that do not require cooking before being consumed, such as raw vegetables and fruit. Cooking Safety It is recommended that most cuts be cooked to approximately
Pork should be stored so that it is kept out of the temperature zone in which bacteria, that causes food-borne illness, grows quickly. The danger temperature zone is a range between 40°F and 140°F (4°C and 60°C ). Raw pork can be stored in a refrigerator several days, depending on the type of cut. If it is not to be used within the recommended time, it should be frozen to prevent it from perishing. Leftover cooked pork should be wrapped tightly and refrigerated as soon as possible. Do not leave any pork at room temperature for more than two hours. If cooked pork is not going to be used within four days of cooking, it should be frozen. Refrigerating Raw or cooked meat can be stored safely in a refrigerator at 40°F or lower for several days. • Check the temperature of your refrigerator with an appliance thermometer on a regular basis to verify that it is maintaining the proper temperature. • Store raw meats on the bottom shelf of the refrigerator to eliminate the chance of meat juices dripping down on other foods and contaminating them. • Chill leftovers quickly by dividing them into shallow dishes before refrigerating. This will shorten the time that the pork is in the danger zone between 40°F and 140°F. • If you are not sure whether the pork has been refrigerated for the maximum suggested storage time and you are questioning if it is safe to eat, do not taste test it . . . be safe and THROW IT AWAY! The Power of Prayer As I travel through Mexico seeing and experiencing the ancient Mayan and Aztec ruins, wandering through the streets in Mexico City or lying on the beach in Playa del Carmen, I am moving deeper into my heart and feeling some old wounds surfacing that need my attention. Most of my life I have turned to prayer whether I’m happy or sad. It is the one constant in my life that keeps me connected to both my higher self and the Universe. I have had a lot of time alone on this trip which has mostly been restorative and healing, but there have also been some painful and raw moments of recognizing how hard I am on myself and sometimes others. I know I’ve helped many people who have either come to me for private sessions, taken a class or joined one of my transformational retreats. Yet, there is this voice deep inside that gets louder at times saying: “You haven’t done enough. You could be doing more.” This voice is something many of us hear and try to avoid through distraction or by imbibing alcohol or other substances. We all have a deep yearning for inner peace, but we don’t know how to get this voice in our head to shut up. Normally it’s easy for me to stop it, but with more time alone my inner critic is now screaming at me. Her voice is deafening and keeps me up at night. I try to put the pillow over my head but that only slightly muffles her persistent and pestering voice. She seems to be omnipresent, and I find that I am struggling to sleep well. If you can relate to any of what I’m saying and you are experiencing this in your own life now, then hopefully what I’m about to share with you will help you too -- it is the power of prayer. When I feel like I’m going to lose it because this voice keeps jabbering away, I call upon my helping spirits and I make an intention to connect with my higher self by focusing on my heart center. I come back into alignment with my soul through prayer and silence.

A prayer can be anything that you say with all of your heart and soul as you send it out to the Universe or to God -- something greater than your egoic self. I have even prayed to my higher Self to ask for direction or healing. As we move out of the personality and into our higher Self or Soul, we are able to shift any lower vibrations within us that are creating disharmony or pain in our bodies and lives. All we need is a few minutes to say a prayer of gratitude or forgiveness. One of my favorites is the Hoʻoponopono prayer which is as follows: I’m sorry, Please forgive me, thank you, I love you So simple yet so powerful when we say this prayer with deep feeling and intentions to transform any situation in our lives that is troubling us. There are many ways for us to pray. I love drawing mandalas with beautiful geometric shapes. As I draw my mandala I think about whatever I want to heal or bring into my life. I feel and know that I’m putting this intention into my mandala. Thus, I’m sending out a prayer to the Universe through my thoughts and my creation. Often even before I finish my mandala I feel more at peace or clearer about my situation.

I just want to clarify something as many people think that only religious people pray. This isn’t true. Anyone can pray whether she or he is religious or not. I don’t believe that prayer necessarily has to be something you do in a church or in a mosque. Prayer is personal and something that each individual will choose or not choose to do in their own particular way. For some, ritual is an important part of prayer such as lighting a candle, burning incense or wearing a special dress or mala beads during prayer. It’s totally up to you how you choose to incorporate prayer in your life if this feels right for you. For me, prayer has brought me great solace when I’ve been in the midst of personal suffering, sick or felt lost and confused about my life. When I feel disconnected from the world, I close my eyes and do a Metta prayer sending out love to humanity, imagining that I’m connecting with millions of people around the world. This is a beautiful way to deepen our connection to both Self and others. As we share our love with the world it will naturally return to us, kissing us on our forehead like a soft breeze. My prayer for all of you who are reading this article today is that you may all discover the power of prayer in your own life and utilize prayer to transform any situation that is not working for you. Don’t give your power to your inner critic. Instead, allow the power of your prayers to facilitate true peace and joy for yourself and the world. Please give yourself this time and you will discover that any problem is surmountable -- any dream is possible. Namaste.

GM Tales and Concierge Encounters The people who manage big hotel properties and attend to the quirks and eccentricities of their guests have many tales to tell. From unusual, extravagant, barely legitimate (or not) requests to questionable, weird and outrageous behaviors, the sky is not even the limit for the yarns they can spin and the anecdotes they can dish up. But they are discrete and therefore a few of the story tellers in this article declined to be identified to protect the good name of the properties they represent. Some names are fictitious but the stories are real. Enjoy! Jerry1 is an affable American who has worked in the hospitality industry for some 34 years and has been a GM for a string of 5-star hotel properties for the last 28 years. His job has taken him all over Asia; he has been in Bali for the past 20 years. Jerry starts his yarn by telling me about the shortest interview on record for the hotel he currently works at. He flew to Bandung to recruit staff for the hotel. Bandung is known for their reputable hotel school and the graduates are eagerly courted for employment by the major hotels in Indonesia. Jerry says he had previously posted a recruitment ad at the school expressly stating that all interviewing candidates must speak English in order to be considered. One of the solicitants came into the interviewing room and after introducing himself, Jerry started the interview process by describing the hotel, its venerable history, the jet-set clientele from all over the world, its employment philosophy and the specific position he was looking to fill. After this lengthy spiel he finally turned to the candidate and asked him simply “Now tell me about yourself.” To which the youngster uncomprehendingly replied with “Apa?” Needless to say the candidate’s prospects were dashed. A hilarious story happened in Myanmar where he managed a regency property in 2005. One day, walking past the front desk, he heard a Japanese guest clearly frustrated at not being understood, gesticulating wildly and articulating his request loudly and repeatedly to a baffled and flustered receptionist. Since the guest was adamantly shouting what sounded very much like “F*ck sh*t”, Jerry did a double take and offered to assist the red-faced customer. To his consternation it finally dawned on him the guest was requesting a fax sheet to fill out and send. Linguistic misunderstandings and mispronunciations are very often at the base of funny stories. Another story told by Jerry when he was working in Bali was about a room service staff member who after delivering and setting up a beautiful breakfast service in the guest quarters was thanked by the British guest with a “Very lovely, indeed”. To which the boy haplessly replied “Sorry, my name Made, not Indeed”. Then there is the funny anecdote of one waiter-in-training who, at a gala New Year’s Eve dinner, brightly announced the foie gras on-brioche appetizer to a table of perplexed guests. He pronounced it as something akin to “Viagra” which the guests politely declined.
That some guests are demanding is beyond the pale. One French lady, a very regular patron who each year rents one of the property’s private villas for a few weeks, has a standing request that her poolside area contain 4 sunbeds so she can move with the sun and does not need to bother about moving the chairs herself. This same lady also requires that “her” table in the hotel’s dining room be totally shielded from view by a curtain of tall potted plants. Luckily other guests are not quite as exigent though occasionally one has to apply a suave brand of tact and politeness to mollify brash and brazen customers. One
particular guest from India made a condescending remark about the hotel being “old” – as in traditional and old fashionedto which GM Jerry cheekily replied: “So is the Taj Mahal, Madame”.
Eccentricity and peculiarities also make for good stories. One well-off couple who moved from one 5-star property in Lombok to a sister resort in Bali, actually paid for a Lombok staff to fly their luggage personally to the Bali hotel, unpack, press and hang their clothes in preparation for their arrival. To the consternation of the staff member, one of their suitcases was packed full with Dunhill cigarettes.

a process of transition and transformation. We go on, ready and eager for the next adventure or opportunity. There are a few resorts in Bali that are so private and exclusive that they are totally off the radar. Even their websites are hard to find as they deal solely with specialized agencies that cater to the wishes of an elite clientele insisting on total anonymity. Andres1 is Concierge at a posh private estate ensconced in a secluded mountain area in central Bali. He claims it’s the ultimate in a hospitality dream job and positively beams when he describes his function, telling stories of visiting celebrities, rock stars, royalty, business tycoons and the ultra-rich.
Jerry observes that the role as GM is demanding and requires at times quite a bit of ingenuity and creativity, as well as tact and diplomacy at all times. You have to excel in difficult situations, he says, and approach exigent or fussy guests with delicacy and understanding. Some visitors expect red carpet treatment like a daily bottle of complimentary premium champagne that costs more than the room itself. While GMs and their staff all want to make their guests happy campers, the attitude of the guests as well has a lot to do with the way they are perceived and treated by hotel staff. Some GMs have led many lives and switched careers along the way. This creates a background to their stories with a different, much richer slant. Alexander Jovanovic at the Trans Resort Bali tells stories that reflect his humanitarian and empathic side. As a Registered Nurse in his previous career, he is especially keen to relate stories that emphasize this aspect of his personality. The time that he was managing a big hotel in Japan coincided with the notorious 7.6 earthquake of 1997 that destroyed and damaged lots of buildings and homes, and made many people homeless. He remembers waking up at 6am to heavy shaking and immediately shot into damage control mode, only to find out that the hotel staff were collectively hiding and not helping the hotel guests to designated safety zones. So he had to round them up, lecture them about their responsibilities, remind them of their training and push them towards their duties. After supervising the evacuation of all hotel guests to designated safety zones, he encountered a crew of American flight attendants who were freaked out by the earthquake. He luckily had a supply of Valium on hand and proceeded to administer it to calm down the trauma. As it turned out, these same flight attendants had been in the San Francisco earthquake almost a year to the day and the collective memory caused wholescale panic among them. Due to major damage in the surrounding area, many expat families came to the hotel for shelter and brought their pets. Since the hotel had a strict No Pet policy, Alexander came up with the idea of converting part of a basement staff area and transformed it into a pet hotel. As a result, the hotel became famous as the people/pet shelter and displaced families were flocking to the place even though for the next 5 days, there were very limited services, food and water. GM duties are not always interesting or fun, says Alexander. He recalls a few occasions on which he had to break sad news to family members when a guest died on hotel premises. This is when his training as an RN came to help and he was able to rely on his empathic side to soften the blow. “How do you tell a wife her husband drowned in the sea due to his own carelessness or disregard for warnings?” In his long career as GM, says Alexander, these have been the hardest moments. It is not only dealing with the bereaved family that is taxing, but he also needs to front the authorities and the media, and try to limit the fallout for the other guests and safeguard the reputation of the hotel. It’s all in a day’s work, says this gregarious GM as he quickly jumps up to welcome new guests in the lobby. After all, life is

According to Andres, they are people much like the rest of us when they can chill in a relaxed atmosphere and be at ease in becalming surroundings. Some of their habits may seem a tad extreme, like the Middle Eastern prince who brings 2 attendants to cater to his very private needs and whose job includes putting toothpaste on the brush ready for the prince’s toothy ablutions. Or the Chinese tycoon who demanded that all frogs be removed from the entire estate because he could not stand their croaking. But most of these high-society guests are very down to earth and very approachable; some even share family traditions like the Hong Kong tiger lady who shared her favorite recipes with the Executive Chef. One European princess was enraptured by the estate’s big organic garden and asked for a tour. She even politely asked if she could taste one of the cherry tomatoes ripening on the vine and told Andres how it triggered memories of a happy childhood.
Occasionally guests will request some extravagant arrangements like organizing a birthday party for a 5-year old on a private yacht complete with first rate magicians and Disney-style characters but most guest requests are modest and not presumptuous. One memorable exception, recalls Andres, is when a couple of rich Jakarta jet-set boys asked him to organize a private party with prostitutes and soft drugs. This was just as good a time as any to hide behind the “House Rules” and deflect the strange request in a diplomatic manner. Diplomacy, says Andres, and sensing how to deal with demanding guests, is a skill he has acquired during his many years of dealing with the rich, the spoilt and the “I am privileged” set. When it comes down to it, says Andres, in a relaxed environment they can be themselves and let their guard down. They do not have to perform for the world, the onlookers and the entourage. They can be themselves and revert to a natural state that lets the inner child come out and play. And that, of course, is priceless. ___________ 1 Not his real name

19 PLN’s Best Day It was Nyepi yesterday (Mar. 28): Bali’s Silent Day. It is celebrated on the first new moon in March – at the same time as Indian Hindus mark their festival of Ugadi – and ushers in the Balinese New Year. It was then 1939 when we were again lawfully allowed to pop the kettle on to make a nice cuppa. On Nyepi day, as is now well known even by challenged Australian tourists and most Chinese whose package tour operators failed to remind them that they’d be confined to barracks, very little happens in Bali. The streets are deserted, except for Pecalang patrols checking to see that everyone’s indoors being quiet and contemplating no one’s navel except their own, and any emergency vehicle that’s been let out on duty with an authorised blue flashing light. So the road system copes quite well. Electricity use plummets by 40 per cent, which means PLN can meet demand, also a novel one-day-a-year arrangement. The airport remains officially operational. It must, as an international airport, so it can function as a landing place for aircraft in distress. Otherwise, only transit flights are permitted over Nyepi and these are not allowed to embark or disembark passengers. Maritime navigation lights also remain on, including for ships at anchor, as international maritime law requires. So anyone with a sea view can find amusement by spotting riding lights and harbour beacons. Designated tourist hotels can keep minimal lighting on for guest safety. Otherwise, clouds permitting, it’s a starry, starry night. Which is lovely. At The Cage, we keep things quiet. No noise is allowed to escape our perimeter. No light is either. That’s our mark of respect to local regulations and the honoured and honourable requirements of Balinese Hinduism. We’ve lived here for 12 years, but we are still guests in someone else’s homeland, and guests should respect their hosts by behaving themselves. Religion, though, is not for us: we don’t even observe the strictures of the one that we are forced by Indonesian law to nominate as ours. Years ago we cut to the chase and gave up Lent for Lent. It’s Lent (the 40-day Christian preEaster fast) at the moment, just by the way. These days we stay home for Nyepi. We’ve given up going away, or checking into some tourist accommodation where unruly children and their indifferent parents ruin your day. Some years ago we booked for Nyepi at a favourite spot (it’s in Candi Dasa) and took our usual room overlooking the pool. We and the other guests were chivvied out of the restaurant by 7.30pm and sent to our rooms where the doors had to be closed and the curtains drawn tightly across the windows lest light or sounds of muted merriment be evident. We sat in the dark on our terrace and were amused by the staff, of which numbers soon turned up at the darkened pool with all the pool toys. They had a rare old time.
Miscreants and Others Bali’s courts seem to have been processing job lots of foreigners lately, for the usual run-of-the-mill offences like drugs (“I didn’t know it was illegal”) and killing people. We sympathise with the judiciary, which has a tough enough job dealing with Indonesian-speaking criminals without having to cope with idiot visitors who can’t understand what’s being said, or the procedural practices of Indonesian law and the courts, and who probably shouldn’t have been allowed on the planes that brought them here in the first place. Such is life, in the age of mass tourism. It’s true of course, if you believe the inmates that is, that jails everywhere are full of innocent people. The scope and range of implausible excuses is infinite. Criminal law is an interesting area, but we couldn’t take it. Our fuse is not long enough. That’s why we took up scribbling for a living (though the living bit is moot these days). As so many assume is their right to tell you, it’s easy to fulminate. You just need an outwardly imperturbable nature and a thick skin. Though to do so sensibly, in the hope of encouraging objective thinking, in yourself or in others, you must be broadly informed. Sadly, Google long ago declared this practice archaic. These days you just cherry pick by cut-and-paste to reinforce only what you want to believe. In the specific instance of the thrill of the moment, the trials of Briton David Taylor and Australian Sara Connor for the killing of a policeman on Kuta Beach on Aug. 17 last year, it’s appropriate to note that the sentences plainly reflect a very full judicial assessment of all the circumstances. Taylor, a DJ whose performance name and apparently preferred lifestyle is Nutso but who sensibly shed his dreadlocks and his attitude for his trial, has accepted his six-year sentence. Connor, a mother of two (which some non-Indonesians seem to believe should mediate sentencing policy)
HECTOR’S was at last report considering counsel’s advice that she should appeal. She got four years. Our advice would be to cop that sweet.
Traditional Dress

Some people are said to think that Governor Pastika went a bit over the top in his choice of attire when he said cheerio to King Salman of Saudi Arabia at the end of his extended stay. The Governor wore traditional Balinese dress. King Salman wore traditional Saudi dress. They could have swapped, perhaps, just for the heck of it and the photo opportunities. But the Governor is Balinese. Why shouldn’t he turn out in full ceremonial rig for a ceremonial occasion? Bali’s unique culture deserves protection – and promotion. King Salman seems perfectly content with the notion that Bali is not part of Arabia Felix. Apparently he has the same opinion about the rest of Indonesia. This will disappoint only very few people.
Multilingual Cats We spent a lovely weekend recently as house guests at a villa in the Ubud area, an establishment where the two resident cats – kittens, really, and rescue animals at that – are showing remarkable linguistic aptitude. The household is French-speaking. The help is Indonesian. The visitors in this instance were from the Anglo side of the resident foreigner community.

We took along a couple of toys for the cats to play with. They seemed to enjoy them. One of them even went as far as to purr in our presence, a very high honour. But what impressed us most was that they seemed to be equally at home all three languages, as well as being completely fluent, as you’d expect, in their own Meow. We tried our French on one of them, a lovely little ginger fellow whose name – surprise – is Ginger. In French, that’s “Jzhonzh-air”. He is the one who had purred at us. We think we got a meow in response. But it could have been a meh. Such a put-down! French vowels have so often brought us undone. We were in Paris once and were trying to find the Louvre, and got sent to the pissoir instead.
Ah, Yes, that Rabies Thing It won’t go away. It won’t, at least, until Bali’s authorities find some way to get really serious about it, and apply to the reduction and eventual elimination of rabies the established rules and practices that work everywhere else. The island’s new compact with the Japanese city of Kumamotu might help there. It is designed to put in place a controlled and properly administered program of the same sort that was commenced here in 2009, was then handed over to the local authorities, and then fell in a heap.

We know from reports in the local media that rabies-positive dogs have recently bitten people in the Bangli, Tabanan and Jembrana regencies. As usual, there was the absence of ready access to vaccine to cope with. That really is something the health authorities need to get on top of right now. Rabies is a zoonotic disease (human infections are from animal vectors) in the same way as plague is, for example. It is also 100 per cent fatal, unlike plague. But prevalence of zoonotic disease in close proximity to human populations indicates an absence of effort to eradicate it, including by spending the money required to do so. This is not something any local government should permit. Rabies has been known to be present in Bali since 2008. It is unsafe to assume that any area of the island is free of it. We should remember that it started on the Bukit, not far from that popular draw-card, the GWK cultural park, and will certainly still be present there. It does seem, anecdotally, that infection levels in dogs are now at relatively low levels. That’s a benefit. But all it takes is one dog. Someone who drives around in a plush government supplied SUV should have a real think about that.

Charity Surf Contest (9 April) This event is a direct response to the environmental problems of rubbish on the island. Bali is facing an environmental and potential health disaster with so much rubbish dumped daily. Only 3 decades ago, plastic was not used in Bali. Today, almost every item that is bought in Bali, from ceremonial offerings to food, to general house hold items, is packed in plastic. With insufficient education on the disposal of rubbish, many of Bali’s millions of plastic bags end up littering the environment, finding their way into the water streams and finally in the ocean. One does not have to look far to see these problems particularly during the rainy season when drains are clogged with plastic and the water simply cannot move leading to wide spread flooding. Keep Bali Clean is a campaign aimed at reducing Bali’s current littering problem. Through donations and sales Keep Bali Clean have already distributed over 30,000 reusable bags to consumers in Bali. In support of Keep Bali Clean’s projects a charity surf contest will be held in conjunction with LOKO Bali and Finns Beach Club. The event will feature 16 of Bali’s best surfers battling it out in the waves of Pantai Berawa, directly in front of Finns Beach Club. There will be raffles and prizes and the chance to learn more about this campaign and all they are doing to Keep Bali Clean. You can also purchase some of the merchandise and profits will go towards this worthy and vital cause. Events like this really do raise awareness but again it is down to every single reader to say no to plastic and be responsible. Bali is a beautiful island and we all need to act to preserve and ensure the survival of the island for decades to come. Natural Fertiliser ‘Dear Garden Doctor, I have a small plot with a lawn, frangipani, bromeliads, a lot of leafy border plants. I have a few pot plants and trying to grow tomatoes. What is the best fertiliser to use to give everything a kick along because I don’t think I have the best soil, and obviously I can’t replace it all in one hit. Thanks for the informative articles, keep them coming. Regards, Michael, Sanur.’ The best thing to do would be to improve the state of your soil by composting and incorporating natural organic fertilisers along the way. The health of the soil determines the health and vitality of the plants that grow within it. A balanced soil should be full of organic matter, beneficial microorganisms, earthworms and other insects that help keep soil ecosystem ‘alive’.
Kelp Fertiliser If you are hands on like me, you could make your own seaweed/kelp fertiliser. When you see kelp, seaweed, seagrass, sea-grapes or any other sorts of sea plants washed up on the beach forage them up in a plastic bag. I usually get mine from Nusa Dua, Sanur, or Canggu. Wash it thoroughly to remove the sea salt. Place the material in a small bin or bucket, with about 20 litres of water. Put a lid on top and leave it for 2-3 weeks. The nutrient goodness will leech out into the water and resemble the colour of a strong tea. At this stage, it’s ready for use. Dilute one cup to 5 litres of water. Use it on the garden and lawn. You can apply generous amounts monthly throughout the year to improve soil and plants.
Incorporate organic matter into your soil as often as you can. This may be as simple as collecting grass clippings/garden off cuts and spreading them around the garden or digging them into the soil. Even adding banana peels into your soil will provide a boost of potassium! Better still invest in a bin and start your own compost, it will benefit the garden and the environment. You will cut down on kitchen waste filling up your garbage bin and by extension the landfills around Bali. Consistently adding fresh homemade compost will deliver the best long-term results to the soil. Otherwise buy some bags at a local nursery (just ask for compos) and spread them around the garden. If you want to use fertiliser for a quick ‘pick me up’ it’s best to use those that are natural and organic.
Natural Fertilisers Fish Emulsion I prefer to use either fish emulsion or kelp fertiliser. Products that are based on materials from the sea are consistently rich in a broader spectrum of nutrients and trace elements, not usually contained in standard chemical fertiliser. Fish emulsion is a liquid made from the by-products of the fish oil industry, it’s literally a soup of fish-waste. Sounds disgusting - I know! But it’s great for your soil and garden. Fish emulsion is purchased as a concentrate, dilute it with water in a watering can and apply to the lawn or garden. It is usually sold in a 1 litre bottle, which could last you for months if not years depending on how often you use it. This is the easiest and most effective broad spectrum organic fertiliser in my opinion that can be used all over the garden, lawns included. As you would expect the concentrate doesn’t smell like roses, but it will certainly help to grow them. Once diluted and watered in there won’t be any unpleasant lingering odours, just don’t spill it on yourself!
Chicken Manure Fresh chicken manure is extremely potent with a high nitrogen content and needs to be aged otherwise it could burn the root system of your plants. Better to use a pre-packaged product such as ‘Dynamic Lifter’ which can be applied directly to the garden. The only draw-back with using animal manures is that they often come with an undesirable lingering smell that can last for a few days or more after application. Cow manure and horse manure are other options to consider. When using any fresh animal manures it is best to apply sparingly or run it through the compost first. Chemical / Synthetic Fertiliser Using chemical fertiliser products on the garden can be counter-productive in the long run. Major drawbacks being that it is easy to over-do it, plants developing a long-term dependency, and salts accumulating in the soil having adverse long-term effects. Over application can burn roots, kill plants, or cause an over production of leafy growth to the detriment of fruits and flowering. Chemical fertilizers are absorbed by plants, with no positive effect on the soil. The residues from the garden run back into the groundwater and river system, resulting in elevated nitrates and phosphates disrupting the natural balance of the ecosystem. In contrast, organic fertilisers feed the soil, the bacteria and other micro-flora that plants have evolved to depend on. They improve the soil over time whereas chemical ones deplete it.

The high concentration of nitrogen will encourage vigorous leaf development and is also great for watering around the lawn.

While the nuts are roasting, heat a heavy skillet. Add the sesame seeds and toast them while stirring slowly but continually until they are golden brown. Remove from the heat and put into a medium sized bowl to cool. (Keep your fingers off those cooling nuts.) Once the peanuts and cashews are cooled coarsely chop them with a knife before adding them to a food processor. Pulse the food processor until you have finely chopped nuts. It’s important not to grind them to a powder. I found that by sifting them through a large holed colander I could separate out the big pieces to return to the processor for further pulsing and avoid some of the nuts becoming ground to powder. If you don’t have a food processor then finely chop them with the knife. Add the chopped nuts to the bowl with the sesame seeds. Add the smoked paprika, sea salt, cayenne, toasted ground cumin and coriander. Stir well and taste, adjusting according to what you like by adding more of any of the seasonings. When ready to eat pour the olive oil into a small dipping bowl and surround with the sliced bread and veggies. Dip the bread or veggies into the oil and then into the nuts and eat. The Frugal Balinist *Important Nazava update! Since we bought our Nazava Bening XL Water Filter three years ago, and reported on how frugal a source of clean safe water it is in this column, we have learned how to use it, information that is only available in Bahasa Indonesia. Installing and cleaning instructions are in the manual and on You Tube (in Indonesian). Averaging about three times cheaper than buying the big Aqua water bottles, Nazava’s 3 water filter candles last up to 7,000 liters or 1-2 years, depending on usage. Dirty water reduces the lifetime of candles. What’s important to remember is that each time a filter is cleaned weekly, it becomes thinner. All models come with an upper and lower container (both 27.5 liters) made of food grade plastic, lid, ceramic filter(s), filter measuring tool, cleaning sponge, tap and a rubber tube for filling from your sink faucet. Output is 12 liters per hour. Use the measuring tool to check if the filter has become too thin to use when diameter is less than 5 cm. Replacement filters cost Rp95,000/per. If the candles turn black, it means that they are rarely cleaned, that the water quality is not good, mosses have grown on the filter or because of prolonged exposure to sunlight. Clean the filters by using a new toothbrush or salt on a sponge (rinse the filter afterwards to avoid water tasting like salt). For detailed information, go to FAQ at www.nazava.com. *Wondrous Bumbu Genep. Simply add a packet of bumbu genep or basa genep spices (Rp2000/bungkus at the pasar) to hot oil to instantly make tasty meals. Bumbu Lengkap in Indonesian, basa genep is a standard spice mix used as the base for many chicken, pork and curry dishes. Or mash shallots, turmeric, chilies, garlic, ginger, lesser ginger, galangal, lemongrass, candlenuts and shrimp paste (terasi) into a fine paste in a traditional stone mortar and pestle. Add to coconut oil in hot pan until it becomes fragrant and slightly charred before adding the raw chicken or other meat.
*Store valuable rainwater! Get ready for Bali’s ground water to be pumped dry in the coming years, bringing us all to the brink of environmental catastrophe. A water jar is started with a form created from cloth. The stronger the cloth, the easier it will be to draw your desired shape. Sew the cloth together and fill with sawdust. This creates the form for the water jar. Take time to make sure that your form is even on all sides and has the shape that you desire. (For larger jars, reinforce with wire and a second layer of cement.) Using a cement mixture of one-part cement and three-parts sand, lay down a foundation that is larger than your form. Apply a layer of cement about one cm thick and place the saw-dust filled form on the foundation. Smooth the outside with cement. Let the jar dry for 12 hours, then remove the sawdust and cloth form. The final step is to waterproof the inside of the jar with a water and cement mixture. Let the cement dry and your new water jar will be ready to store water in case of water shortages or electrical outages that stop your water pump. *Plant your own: Now is the time to buy chili plants and plant them in pots or in the garden under a long transparent shed made of polybag plastic or a greenhouse with a plastic roof. Chili (cabe) prices soar to as high as Rp130,000/ kg during this extra-long rainy season and during the run up to holidays when demand increases. Substitutes like cayenne and pepper (merica) and commercial bottled sambal brands like ABC, Del Monte and Indofood (Manis Pedas, Extra Pedas, Kecap Pedas) just don’t cut it. If you grow just 20 cabe, you can harvest 10 kg of chilies annually instead of buying pricey raw chilies at the market. By producing 10 kg of chilies per year, a household can save Rp500,000 annually. Buy seeds or small chili plants from a nursery, then plant them this April. Reaching a height of 2 m within 2 years, the plants will continue to produce for 1-2 years. If they aren’t thriving, add more mulch and compost. We have successfully completed over 16 water projects in North Bali bringing water to families who do not have access to water; we have given scholarships to students so they can continue their education; and gave books, pencils, and writing paper to local schools that needed them.
Bali has over 3 million visitors each year. All these people bring energy, creativity, and the knowledge to this beautiful island. If you are one of these people, you can take the opportunity to help the local people here who really do need some help.
We are all part of the 33,000 Rotary Clubs throughout the world. Here in Bali there are 15 local clubs helping the local Indonesians that need help.
These are people who you may never have seen while you travel around the island. Because even though Bali looks like a rich island filled with wealthy hard working people, there are many pockets of desperately poor Balinese people. Villages with no water where the women must walk 3 hours every day to bring drinkable water back to their village. Children that Indonesia gives free schooling to up to the 10th grade, but the children must have their own uniforms, books, writing paper and pencils. But many children are too poor to have these things, thus they cannot go to school. Schools with no water - none for drinking, for hand washing, or even for toilets. These are the problems we have in Bali that most people do not see. Our local club specializes in and focuses on education, hygiene, and health for children and schools. We are a 100% volunteer organization, which means that every dollar

SINGAPORE ON A SENIORS’ BUDGET Singapore is notorious as one of noto the m most expensive cities in the world, citie a pla place where a pot of ttea could set you back about SGD9.00 and the SG o r i g i n a l Singapore Sling Sin at Raffle’s Long Bar is a whopping Ba SGD31.00 a drink. dr We three matureW aged ladies from a two Bali, and a Canadian, Australians a decided to put the theory to the test during a week’s visit to the world’s only island city-state. We envisioned dollars haemorrhaging from our wallets in stacks of hundreds, flying into the hands of hoteliers, clothiers, restaurateurs and taxi drivers. But did it have to be like that, we wondered? Singapore on a budget….could it be done? Scanning the internet for cheap flights, we snapped up a great deal with Air Asia and booked three seats. Our next step was finding a hotel which could accommodate three people in a room within easy walking distances to major points of interest. It had to be clean and meet our budget. Bingo! Hotel 81 in Little Arabia…booked. The room was small but efficient, with 2 single beds centimetres apart, an extra mattress placed on the floor and a cosy ensuite with shower. By the time we landed at Singapore’s Changi Airport, we had a plan. Each day was loosely arranged into sights to see, places to go and things to do so we knew roughly what our week looked like and what forms of transport we’d take. The hop-on hop-off Red Bus is a great way to see Singapore’s highlights. The SGD43.00 ticket is valid for 24 hours and good value if you use it wisely. By studying the colour-coded schedules you’ll add value to the experience by seeing and doing more.

Cosmic Diner comes to Sanur. Cosmics are styled on American diners, and have become very popular in Bali. Not open for 24 hours as they often are in the USA, but still a place for simple comfort food, any time. In Bali they have also become a meeting pace for the young and young at heart, funky, comfortable and budget-priced. This will definitely be the case with the new Cosmic at Sanur. I can see the quaint ‘railway carriage’ becoming a secret rendezvous spot for the dating teens of the district. The 1st Cosmic was on Sunset Road, the 2nd in Lippo Mall, Tuban. Now the 3rd Cosmic has opened in the new Sanur Arcade on The ByPass Ngurah Rai, at Sanur’s souhern end. Whilst the fare is typical American [pancakes and all] it is their hamburgers that seem to be the most popular, their customers appreciating the difference when the meat patty is minced fresh on the premises rather than being a bought in manufactured commodity. Real hamburgers! Open from 10.00 a.m. every day, breakfast is more of a relaxed brunch. It can be Mexican scrambled eggs with chorizo, refried red kidney beans, pico de gallo, guacamole, sour cream, tortilla chips, a version of Eggs Benedict with poached eggs, smoked ham, sautéed spinach but on toasted sourdough with Hollandaise sauce, the very French Croque Monsieur [brioche toast, smoked ham, Swiss cheese & béchamel] or a big breakfast styled the The Morning After [pictured], your choice of scrambled, sunny side up, omelette or poached eggs with smoked bacon, beef sausage, roasted potatoes, sautéed mushroom, & toasted sourdough or rye, that is my type of breakfast, and available all day, or night, as they should be! The Burgers are all Wagyu [a combination of Chuck, Brisket and Short Ribs] in 6 different styles. With soups, salads, pancakes and waffles Cosmic is perfect for that anytime snack, and fun to visit! ‘Meet you at the Cosmic train’ may soon become a common phrase amongst Sanur’s younger set!
Indochine Rooftop is the latest addition to Indochine II, on the corner of Jlns. Raya Hanoman and Monkey Forest, at Padang Tegal, just south of Ubud. It has been constructed on the roof of the adjoining restaurant and features live music every night. The cuisine available is the same as little Indochine II, the smallest restaurant in Ubud but the one with the largest menu. In fact it offers three menus in one as it comprises the fare of three restaurants that used to operate at The Mansions in Sayan, and still under the same management. The Chinese Cherry Blossom [great BBQ Pork Buns and Bao Char Sui, boned pork belly cooked with garlic, pepper, soy and Chinese 5 spice, stuffed inside a steamed yeast bun. From the old Saigon Saveurs are all the classic Vietnamese dishes [Banh Xeo, Pho and the great Buon Ga, chicken grilled with lemongrass]. La Terrace is Italian, offering you excellent pizzas and pastas including Sicilian [spinach fettuccine with grilled Dory in a spicy Sicilian sauce]. There are many choices of what to eat or snack whilst listening to the happy music. Ulekan is a small modern café/restaurant on Jln. Tegel Sari, Canggu. The food is pure Indonesian without all of those ‘international’ items other places seem bound to include. The coconut milk curries can be seafood or chicken. From Madura is Kare Domba, lamb, chilli and curry leaves. The Rendang is exceptional, they use beef cheek combined with cinnamon, clove and star anise. The crisp deep fries can be Barramundi [sweet and sour], Chicken [lemon basil] or Duck [lemongrass]. Vegetarians are well catered for, as with most Asian cuisines. The Gado Gado is steamed vegetables topped with a boiled egg, peanut sauce and prawn krupuk. Perkadel Jagung is a corn fritter, this version with green chilli sambal. From the wok, Bihun Goreng, vermicelli rice noodles and mixed vegetables, or Cap Cay, sautéed vegetables with garlic, soy and oyster sauce.
Holy Cow is a steakhouse on Jln. Dewi Sri, Legian. Part of a Javanese chain their menu is based around wagyu beef, but other options are also available. The steak menu includes everything from the cheaper cuts up to tenderloin, rib-eye and sirloin. The sources include Japan, USA, Australia and locally fattened. The prices vary accordingly. Whilst they began as a specialty beef steakhouse that has since been extended to include almost everything; chicken, ribs, hamburgers, lamb chops and even Spaghetti & Meatballs! Best 50 is a series of restaurant awards by the English Restaurant magazine in conjunction with Pellegrino. The awards for 2017 have just been announced and the judge’s verdict was Bangkok’s Gaggan for No. 1, for the 3rd consecutive year after toppling the 2014 winner, Australian chef David Thompson’s Nahm from the top spot. This year Nahm still retained the position of no. 5 in Asia. Kolkata-born Gaggan Anand is something of a superstar in the food world, for his boundary-pushing dishes. After a life-changing stint in the kitchen at El Bulli, the chef opened his eponymous Bangkok restaurant in 2010, where he has reimagined the notion of ‘progressive Indian cuisine’. The best result for Bali, and Indonesia was Ubud’s Locavore, being rated the 22nd best restaurant in Asia. Ryan Clift’s Tippling Club was one of the stars for Singapore based restaurants. You can taste Ryan’s creations here in Bali at the new Grow [Jln. Petitenget in front of the L Hotel], and at Bali prices, not Singaporean. The Asian restaurants also held up well in the awards for the Best 50 World Restaurants, Gaggan coming in at No. 23, and Nahm at No. 37. For 2017 the best restaurant in the world is considered to be Massimo Bottura’s Osteria Francescana in Modena, Italy, where the amazing 9 course tasting menu will cost you Euro 220, that is if you can get a booking?
Pomelo is on Jln. Raya Pantai Berawa, Canggu. An area that now boasts a wide diversity of cuisines, most of which reside in small intimate cafes such as this. However this one departs from the norm with an actual swimming pool in its centre, so to come here you have to be prepared for kiddie fun. Pomelo considers itself to be a health food restaurant with many vegetarian options for breakfast and lunch. Many vegetable wraps and pizzas, an Acai Bowl is different as is the very unusual Pumpkin Burger.

Tastes of the Archipelago One of my most s u r p r i s i n g discoveries about Bali, many years ago, was its almost total lack of quality I n d o n e s i a n restaurants. Small Warungs by the thousand, each selling the specialties of their area and restaurants serving an Indonesian version of Chinese food abounded, along with whatever local owners thought western cuisine was supposed to look and taste like. But no high quality good value Indonesian, served in clean premises that a tourist would visit, the food having been prepared in a modern hygienic kitchen! Back in the 90’s the old original Ketupat, on Jln. Legian, Kuta, behind the Jonathon furniture gallery was the stand out place for Indonesian cuisine, It was quite a large restaurant, built around a swimming pool, always busy and reservations only due the various peak periods. In more recent times Warung Enak, in Pengosekan, Ubud, has been presenting a traditional menu from all across the archipelago. Their attention to detail has been well rewarded with many cooking competition wins [usually against the major 5 star hotels] over the past few years, under the guidance of Chef Rai. With the same management as the fine dining Ubud restaurant Lamak, quality is guaranteed. Now in operation for more than 10 years they have added a selection of new dishes to their already comprehensive menu. At Warug Enak I find that I am always ordering a number of pure vegetarian dishes, they are quite outstanding. One dish that I can never visit without ordering is their Asinan Jakarta [pictured]. It is Betawi cuisine, street food from Jakarta. Healthy and tasty it is and according to many Jakarta friends who I have taken to Enak over the years, way better than any on offer in the big city. It is a mixture of yam bean, carrots, cucumber, bean sprouts and tofu, tossed with Carambola vinaigrette and served in a crunchy little bird’s nest of fried egg noodles, simple but fantastic! Not far behind it, and also usually ordered, perhaps the most often ruined local dish, Bergedel Jagung, simple corn cakes. I have been served disgusting versions of this dish in so many places, even at a famous Indonesian restaurant in a 5 star resort, At Enak always perfect, firm but still moist. Whilst the dish does not need it I always order some Sambal Ulek to coat the patties with, for me a perfect match. New amongst the entrees are some more vegetarian options; Beetroot with feta and hazelnut vinaigrette, and Pomelo & Young Coconut with cucumber, fresh mint, lime and coriander leaves, bitter nut crackers on the side.
Very Bali is the Seaweed Salad, tossed in roasted coconut, with garlic, red chilli and shrimp paste, on top are mini skewers of tuna and mackerel. Old favourites still on the menu include Balinese Tum Ayam [minced chicken and spices wrapped in banana leaf and steamed], and the best spring rolls in Bali, Lumpia from Semarang, thin crisp rice paper casing around young bamboo shoots, carrots, bean sprouts and shrimp. The dipping sauce traditional fermented soy bean. Sates, of course! Select from chicken, lamb, fish or tempe, all done in different regional styles. Nasi Campur is often just a selection of left-overs, but at Enak it is a featured dish. It includes portions of Ayam Betutu, Sate Ikan, Be Sisit, Urab Sayur, Tempe Mendoan, Telor Balado. Peyek Kacang and Bergedel Jagung. There is also a vegetarian version available, just as tasty! Soups can be the traditional Soto Ayam, from Madura [turmeric scented broth, shredded chicken, hard boiled egg and rice vermicelli], Hasil Laut [light clear seafood soup with lemongrass, red chilli, galangal and turmeric], Soto Betawi [diced beef in coconut milk, spicy] and Labu, a local creation of pumpkin puree and seeds with feta. Standard mains include Bali’s signature dishes; Betutu [Ayam] and Babi Guling [wrongly translated everywhere as ‘suckling’ pig, it actually means cooked on the spit]. Other chicken options are the ever popular Ayam Madu, grilled half spring chicken marinated with coriander seeds, cumin, honey and palm sugar and Ayam Bakar, chicken leg marinated in Balinese spices, served with a spicy sambal of tomato and sweet soy, my sort of dish. The Pork Ribs are also very special here, a 500gm full rack is used, marinated before grilling. There are many stir fries, all can be done with your choice of Nasi [rice], Mie [egg noodles] or Bihun [rice vermicelli]. To this base can be added Ayam [chicken breast, cabbage, bok choy and carrot], Ikan Teri [anchovies, red chilli, vegetables, egg & chicken skewers], Kambing [imported lamb leg diced combined with wing beans, red chilli], Udang [river prawns, red chilli, cabbage, bok choy and carrot] or Kepiting [Kalimantan crab, garlic, shallots, vegetables and a curry seasoning].

Dining at Enak is always a pleasant experience, tasty traditional food at very reasonable prices with friendly young knowledgeable staff. Amazingly this is a warung with wine! “HOT SPOTS” a common skin problem for dogs in Bali
Also known as Acute Moist Dermatitis or Moist Eczema, Hot Spots can seemingly appear spontaneously anywhere on a dogs body and the area involved can rapidly spread. This raw, unsightly skin disorder has a variety of causes but the most consistent factor is a bacterial infection. There are a number of kinds of bacteria that can be cultured from a hot spot and fortunately most respond to oral and topical antibiotics. Anything that irritates or breaks the skin can create the right environment for bacterial contamination if the skin surface is wet. The body’s response is either to itch or bechew the area, which further damages the skin, and creates a cycle of itching, scratching and chewing. If left to develop the infection goes into the deep layers of the skin. Hot spots in Bali can occur all year round in both wet and dry seasons, and dogs with matted, dirty coats are at greater risk of developing them. Some owners keep their long haired dogs shaved all year round, which helps prevent the thick coat from covering any dampness on the surface of the skin. Dogs that swim are also at high risk, unless they are dried soon afterwards. Regular grooming enables swift intervention if a hot spot is developing; often they will simply get worse and worse until treated so veterinary help is advisable. A hot spot that is left untreated may turn into a lick granuloma,
the hot spot with at least 1cm of healthy skin around the borders. - Topical medication: the area can be cleaned with an antiseptic solution such as chlorhexidine or povidone iodine, and a topical antibiotic cream applied. It is important to scrub the hotspot with the antiseptic wash to work it into the deep layers of the skin, and leave the lather on for around 10 minutes before rinsing and drying. Depending on the location of the hotspot, topical antibacterial cream (e.g. fucidic acid) can be applied although there is little point of this if the dog will simply lick the cream off (i.e. use buster collar, or only use topical cream if hot spot is on the face). -

Break the scratch cycle. To allow the hot spot to heal, the dog must stop scratching at it. A one off steroid injection is usually very effective (at Sunset Vet we usually use a single subcutaneous injection of ‘dexafort’ which lasts for around a week), but sometimes a short course of oral steroids is necessary. Your dog may be more hungry and thirsty while receiving corticosteroids, this is a common side effect. As a consequence, the dog may need to urinate more fre quently than normal.
- Oral antibiotics. The best way to deal with a deep skin infection is to deliver antibiotics to the site of the hot spot via the blood stream. If a hot spot is quite advanced, at least a 10-14 day course of a broad spectrum antibiotic such as cephalexin, clindamycin or Amoxicillin with cla vulanic acid is required to prevent immediate recurrence.

- Scratching or biting at one area incessantly - A patch of hair loss with reddened moist skin, often with - Scabs and crusts - Surrounding hair wet from saliva Diagnosis is usually obvious from the clinical signs, but your veterinarian may be inclined to search for any contributing factors by doing allergy testing, or take a bacteriology swab bacterium responsible. If the hot spot is on the dogs back leg it is worth checking the anal glands are not the source of the discomfort by emptying them.
- Clip the hair around the hot spot. The hot spot may be more extensive than it originally appears. Clipping will expose the area to the air and accelerate healing (scabbing over). At Sunset Vet we advise clipping to expose all edges of
investigation to rule out food and pollen allergies etc. - Educate the owner about preventative measures such as keeping the coat clipped short, drying the dog soon after it is wet from swimming or rain, and seeking prompt veterinary help at the earliest sign of a hotspot, as they can spread so rapidly. - If a hotspot is on an area where the dog can chew or lick at it easily, a plastic Elizabethan collar may be necessary to break the cycle. - In the early stages of a hotspot, home therapies such as colloidal silver sprayed onto the skin may be effective in stopping the hotspot from developing further.

BALISPIRIT’S 10TH YEAR! Wow, it’s ten years since my inspirational friend Meg Papppenheim tried to explain what she and her partners had in mind for a “world music, dance and yoga” festival. They had spoken to some yoga teachers and a few enthusiastic music groups from other countries, but nothing was set, and no venue was chosen, for an event they planned to open six weeks hence! And they did it! In fact WE did it, as I was part of that first extraordinary management team. Meg’s enthusiasm drew us all in, the yoga gurus crossed the oceans, Rob Weber’s musical contacts came through and Pak Kadek Gunarta’s understanding of Balinese culture and spirit was the gel that brought it all together into what’s still a unique event. Many of that early team are still involved, some with only a small role then now inspiring the world! My favourite example is Ni Made Murni, who started off in admin. We went snorkelling together at Padang Bai to relax after Festival 1 (Murni couldn’t swim so she had a life jacket and a rope to link her to the boat.) Local News Byron Bay Mother Sara Connor won’t Appeal Bali Jail Sentence Australian woman Sara Connor has told her lawyers she will not appeal against her four-year sentence for her role in the death of a Bali police officer. Speaking to reporters after meeting Connor outside Kerobokan jail, her lawyer Robert Khuana said he had told Connor that if she appealed she would have a good chance of being released on the basis that the initial decision was “too shallow”. However, she had been traumatised by the system and was worried about her sentence being increased if she appealed. “We believe that we will win in the High Court but everything depends on Sara ... she decided ... that she doesn’t want to appeal,” Mr Khuana said. Connor had until 5pm on Monday to change her mind but the deadline has passed. On Friday prosecutors said they were appealing Connor’s four-year sentence over the fatal assault of a police officer Wayan Sudarsa last August, which they believed was too short. They notified Connor of the appeal on Monday. Her British boyfriend David Taylor was handed a six-year term. Taylor became embroiled in a fight with Mr Sudarsa after confronting him over Connor’s lost purse on Kuta Beach, which contained around $A300. While Connor has maintained she did nothing but try to separate Mr Sudarsa and Taylor during the melee, Chief Judge Made Pasek found she effectively pinned him down. Prosecutor Anak Agung Jayalantara said last week’s sentence meted out to the 46-year-old mother of two from Byron Bay was “unfair”. Her sentence was half of what prosecutors had called for and two years less than Taylor’s. [9News.com.au March 21, 2017]
US Woman in Bali ‘Suitcase Murder’ Gives up Custody of Baby An American woman convicted in her mother’s “suitcase murder” in Indonesia gave custody of her young daughter on Friday to an Australian woman until her release from prison. Heather Mack is serving a 10-year sentence for assisting her boyfriend Tommy Schaefer in Sheila von Wiese-Mack’s murder, in which the body was stuffed in a suitcase. Schaefer was sentenced to 18 years in prison. The baby girl, Stella Schaefer, was born shortly before her parents were convicted in 2015. Under Indonesian law, she was allowed to live with her mother in her cell in Kerobokan prison until she turned 2 years old on Friday. Prison chief Tony Nainggolan said the girl’s development will be supervised by government social workers. “We will allow the girl to meet her mother any time,” Nainggolan said. Mack, 21, broke down in tears as she gave Stella to Oshar Putu Melody Suartama, an Australian woman married to a Balinese man, said Mack’s Indonesian lawyer, Yulius Benyamin Seran. He said Suartama, who has two sons and lives in Bali, befriended Mack when the couple was first detained for murder. She helped Mack as an interpreter and supported her during the trial. “She is the right person to raise Stella, she loves her,” Seran said. Von Wiese-Mack’s badly battered body was found stuffed in a suitcase inside the trunk of a taxi at the St. Regis Bali resort. Donald Trump’s Prospective Bali Estate met with Resistance by Locals Refusing to Sell Land Plans for a massive Donald Trump real estate development in a spiritually sensitive part of Bali have met resistance from locals, some of whom are refusing to sell to the US President’s Indonesian business partner. Hary Tanoesodibjo’s MNC group has been buying up land around the existing Nirwana resort at Tanah Lot, a relatively undeveloped area about an hour’s drive north of the main tourist strip at Kuta. Demolition of the old resort is due to start in August, ahead of a three-year redevelopment that will be partly operated by the Trump group. “It’s a big complex, more than 100 hectares, to build a hotel, villas, condominiums, also to build a country club - that is also with Mr Trump,” Mr Tanoesodibjo told the ABC. But local landowners have told the ABC that they will not sell for the prices being offered. “There is hardly anyone who wants to sell their land,” said Nyoman Madya, the head of the Enjung Pura neighbourhood that adjoins the planned Trump development. He said representatives from MNC had approached several villagers with offers well under market. The planned Trump resort is beside one of Bali’s most important Hindu sites - the temple at Tanah Lot that sits on a rocky island about 50m offshore. It is accessible only during low tide. The proximity of the temple means that any work done on the Trump resort will be watched closely by the island’s Hindu community. [ABC.net.au March 12, 2017]
Three Fishing Vessels Catch Fire in Bali’s Benoa Bay A fire started in Bali’s Benoa harbor early on Sunday morning, burning three boats docked on the west side. A security guard of PT. Jaya Kota Pelabuhan Benoa, across from where the fire started, said he immediately informed port police when he saw some smoke and flames while he was on duty on Sunday morning “I saw thick smoke and fire coming from the ship, the Sanjaya 12. The fire was going out from the ship and quickly spreading,” security guard Aris, 38, told Tribun Bali. A crew member of the Sanjaya 12, Edi, 26, said that the boat had just arrived in Bali from Surabaya, East Java to unload fish. “When the engine died, I woke up because many were screaming ‘fire’. I saw smoke and flames coming from the engine room and the rear of the ship. The fire was huge,” Edi said. Benoa Bay Port Police Commissioner Nyoman Gatra said the fire moved fast, spreading to two other ships near the Sanjaya 12. Fire trucks arrived at the scene and had the fire completely extinguished by 6:30 am, according to Gatra. The three boats are completely burnt and beyond repair at this point, Tribun reports. Thankfully no one was reported injured from the fire. Financial setbacks, however, seem to be pretty heavy. Losses from the Sanjaya 12 are estimated at more than Rp 100 million, while the other two ships are put at each Rp 50 million. Police have set up a crime scene at the dock and are still investigating the cause of the fire. “We still cannot conclude the cause, because forensics still need to examine it. It’s clear from witness statements though that the fire was first seen from the middle of the hull of the Sanjaya 12,” Gatra said. Bali Toll Roll Rentable for Wedding Photo Shoots Kompas.com reports that Jasa Marga Tol, the company that operates the Bali Mandara Toll Road is prepared to help couples planning their nuptials in Bali literally stop traffic. People who want to do photo shoots on the toll road for pre-wedding shots, wedding shots or other reasons - can pay Rp. 15 million for a single still photo session. A video session costs Rp. 30 million, according to Drajat Hari Suseno, a spokesman for PT Jasa Marga Bali Tol (PTJMBT) speaking on Saturday, March 18. 2017. On the average, the tollway receives two requests each month from wedding organizers and companies making commercials. Written application must be made in advance to (PTJMBT) for a toll road photo session. The entire filming process is done under the supervision of toll officials to ensure traffic keeps moving safely around the filming event. Bali Police Investigating Alleged Sexual Assault of Australian Indonesia police say they are continuing to investigate an alleged sexual assault of an Australian woman in Legian, Bali, even though she had refused to undergo a medical examination or identify the exact crime scene. The Perth woman, aged in her early 40s, was allegedly assaulted by two men on the beach behind Double Six Street in Legian at 12.45am on Tuesday morning. She was travelling with friends, according to police, but was alone when her shoe broke and she had no money to get back to her hotel. Raja Ampat in eastern Indonesia has long been a top attraction for intrepid travellers and avid divers, home to palm-fringed islands surrounded by an underwater kaleidoscope of coral and fish. But the 4,200-ton Caledonian Sky slammed into the reefs at low tide around Kri, one of hundreds of small islands in Raja Ampat, earlier this month after taking the tourists aboard on a bird-watching expedition. The boat, which was carrying 102 passengers and 79 crew, became grounded on the reefs and had to be refloated by a tug boat before continuing on its journey. The accident has damaged an estimated 13,500 square metres (145,000 square feet) of coral reef which could cost up to $16.2 million to restore, according to Ricardo Tapilatu, a marine researcher from the University of Papua who headed a team assessing the impact. There has been outrage in the local tourism industry which relies on Raja Ampat’s natural wonders for its survival. “How can this happen? Alstar B is an umbrella organization supported by 15 associations of taxi drivers in Bali. NusaBali reports that the angry drivers were once again taking to the streets of Bali in protest because, in the view of the chairman of Alstar B, I Ketut Wirta, the Provincial Government has ignored earlier protests.
