Introduction Hisar dairy Location – Opposite Manohar , next to the vegetable market, Loni - Solapur highway, Pune. Contact Number – The owner of the dairy Mr Ameen Seth from Haryana has settled in Loni , Pune. His father settled in Pune before 25 years. They have 400 buffaloes and cows in all. They have three dairies in Pune. They are located in Hadapsar , Theur and Loni. We have taken up Hisar Dairy in Loni as a part of our project. Run by the owners younger brother and his mama ( maternal uncle ). They have a helper during snack hours and a cleaner.
People working in the dairy The boy takes over the snack stall with a helper and the dairy is run by his uncle in the evening.
Younger brother of Ameen Seth works everyday day as Ameen Seth has to prepare for his exams and they are not getting people to work for them.
He cleans the dairy throughout the day thrice and keeps the surroundings clean. Also eats and has lassi in the dairy during working hours.
Operation hours of the dairy It is open on 364 days of the year. They work for longer time during festivals.
They take wedding orders for sweets. The dairy opens before all the shops at 6:30 am in the morning and closes last at 10:30 pm in the night. Peak Hours in the morning : 8:00 am – 9:00am
Peak Hours in the evening : 7:00 pm – 9:00 pm Snack Hours : 5:00 pm – 7:00 pm
Makes different variety of sweets during festivals. Due to no holidays and a very busy life the owner does not wish to continue with this business. His father will carry on while he chooses to study and get a job, house and a car.

Customer Profile
Most of them are the locals who need milk everday. Students from loni like Lassi. Manet and Mit students also prefer the lassi. They have a few regular customers since five years. The locals fall under the income group from Lower to Middle class. They spend sometime in the dairy eating snacks at times. Most milk is sold in the morning and the evening.

Aspirations Variety of fresh products to make the customer band wider. Ice creams , kheer , kulfi , fresh milkshakes etc can be introduced to expand their business. Add seating area for people to enjoy their snack and lassi time comfortably. Improve lightings for the dairy , especially in the evening to attract more customer and maintain the “ fresh “ feeling throughout the day. Menu should be more pictorial so that even the illiterate locals can ask for what they want. Colours of the surroundings like the floor, snacks counter, seating area etc. have a
great scope to intervene. The parking area can be used to extend the snacks area and seating for the customers.
USP – “FRESHNESS” We realised after talking to the customers that most of them buy milk from hisar dairy because it had fresh milk. They get milk in the dairy twice a day (morning and evening) therefore people who need milk at anytime of the day can get fresh milk. The dairy is kept clean . The cleaner cleans is thrice in a day to avoid stinking smell, flies on the sweets etc. There is white light inside the dairy which makes the dairy look bright and not dull. Even in their snacks counter they get the bread fresh from the bakery next to
them. None of the foods are packed, even the bread is made by the bakery daily.
Concepts
Concept 1Without changing the existing the present space of the shop, an attempt was made to increase the seating area and make the space more organized, visually. For this a new parapet could be constructed in the front region of the shop which be of the same height as the existing ones. However, this would be positioned such that the distance between the new parapet and the existing parapet on the left would be equal to the width of the snack stall. Hence, when not functioning, the snack stall could be placed there. And when in use, it could be putted inside and turned 90degree. The new parapet would now serve as a new seating space.
Concept 2Keeping the concept of ‘fresh food’, the shop could increase its menu by introducing fresh fruit shakes, fruit flavoured lassi etc. However, for this additional space would be required. Hence the snack stall that does not function till 5 pm could be used as the place for preparing these items. While the snack stall functions, the fruit shake stall could be shifted to a tray that opens from the side of the snack stall. Moreover, the closed snack stall at the entrance gives a very negative feel. A customer might think that the shop is closed or that they are out of stock. In addition, having fruits displayed at the entrance would reemphasize on the concept of ‘freshness’.
Concept 3/ Final concept•The space beyond the shop is also owned by the shopkeeper. It is the parking space that he could utilize as he wishes to. Inspite of paying rent for that place, he is not utilizing the place to increase his profits. Since he does not own the space, a removable flooring with a barricade could be made in the space. Also to increase the ‘freshness aspect’ grass could be grown in this area and kota stones could be placed in the grass. The barricade could be made of bamboo.
•The shop has just a written menu which is unattractive and difficult for the illiterate. Hence the green walls inside the shop could have large images of the products it deals in, making it attractive and easier for the customers.
•Also, the shop does not have an attractive menu card. Hence, the menu card could be redesigned keeping the concept of ‘freshness’ in mind and placed on the posts that support the roof.
•Also, a person passing by the shop does not get to know what the shop sells. Hence we could have hanging displays in several places. These hanging displays could be in the shape of an octahedron, which makes it easier for the people sitting below it to read. It could have images of the products along with the names of the products in the local language, that the shop deals in. Also it could be well lit.
•The seating space is not sufficient for the customers. Hence the area that extends beyond the present store could also be used as the seating. And when the crowd is less, the benches could be placed over the parapet. Also kota stone could be put on the parapet.
•The snacks stall could be rotated 90 degree to making it facing the customers coming in. Also the stall could be made more attractive by giving it a different colour.
