1. Most similar to ham, is a coarse-grained smoked meat made from pork, pepper, onions, and seasonings and often found in Jambalaya or Gumbo. LAGNIAPPE—Andouille was brought to Louisiana by French immigrants who influenced much of Creole culture.

LOCAL BATON ROUGE locations are steeped in history and lore. Paranormal investigators of all kinds visit these landmarks to validate the unnerving claims. If you are looking for history with a spooky twist, you may want to schedule time to visit a few of these notorious locations.
are often reported padding down empty hallways, and visitors report seeing doors open and close on their own. The basement is said to be home to the most paranormal activity. At one point, it was used as a hospital and a prison for soldiers.
1. MYRTLES PLANTATION St. Francisville
The USS Kidd, now a memorial battleship, is one of only four remaining Fletcher-class destroyers, now preserved as a museum. During World War II, the Kidd was hit by a kamikaze, killing 38 men on board. Visitors can tour the ship and experience artifacts up close. Visitors claim to see full-bodied apparitions of young men in 1940’s naval uniforms patrolling the tight passageways. People have also reported ghostly appendages, like arms and legs, passing through solid walls with no one attached to them. The vessel remains a cherished display of the bravery of our armed forces and an important piece of history worth a visit; haunted or not.
Considered one of America’s most haunted homes, this historic mansion was built in the late 1700’s. Photographs taken on the property frequently reveal eerie apparitions. The most famous is Chloe, a slave girl who put poison in the food to only make the owner’s wife and children’s ill, but they died within days. To protect themselves and avoid being associated with her actions, the other slaves hung Chloe from a tree on the property. As the story goes, Chloe still roams the property, at times, appearing to guests and in photographs. Overnight stays and guided tours are available, but don’t worry-it’s not unusual for guests to leave during the night, after hearing strange noises and encountering cold spots and the like.
2. LOUISIANA’S OLD STATE CAPITOL Baton Rouge Built in the late 1800’s, Louisiana’s Old State Capitol looks like a medieval castle, with breathtaking stained glass and incredible architectural features. Now home to a museum of political history, it also plays host to lost spirits. Staff have frequently reported motion detectors triggered when no one is around and mysterious footprints on the senate floor. Legend has it that a congressman from the mid 1800s, Pierre Couvillion, abruptly died of a heart attack in the Capitol’s chamber room after a heated debate, and still hangs around the historic statehouse. The most notorious haunt is a girl named Sarah Morgan. Footsteps

HOUMAS HOUSE PLANTATION 40136 Highway 942, Darrow More than two hundred years old, Houmas House Plantation offers daily tours of the grounds and overnight stays in gorgeous rooms decorated with period furnishings and antiques. This is also the site of inexplicable events and activity that many visitors attribute to the spirits. Several ghostly legends haunt the property, including The Gentlemen, ancient oak trees said to be inhabited by the spirits of 16 workers who lost their lives in a flood during the levee construction. A young girl, called simply the Little Girl or La Petite Fille, reportedly has been seen in a blue dress standing on the staircase or the large central hall. According to tour guides and guests who say they have seen the little girl, she usually appears in the morning or later in the afternoon but disappears when approached.

“One of the area’s best-kept secrets—even from the locals!” The siege of Port Hudson began on May 23, 1863. Nearly 30,000 Union troops were pitted against 6,800 Confederates. The ensuing battles constituted some of the most severe fighting in the Civil War. After the siege, the garrison at Port Hudson became a recruiting center for African-American troops. In 1974, the Port Hudson battlefield was designated a National Historic Landmark by the U.S. Department of the Interior. • Wide, easy hiking trails • Stroll the well-marked path through history—you may even have to step over Civil War era cannonballs.

New Orleans and Baton Rouge can lay claim on one of the more unusual public December holiday lighting displays. It’s here on the earthen levees containing the Mississippi River that local Christmas lights aren’t colored bulbs, but instead dozens of 30-feet-and-higher flaming pyramids of burning logs. The Christmas bonfires, as locals call them, are mostly teepee-shaped, but some can be odd shapes paying tribute to the river’s heritage—shapes ranging from miniature plantation homes to tiny replica paddlewheel steamships. Bonfires are built by families, friends and co-workers who visit, cook and mingle between the fires. It’s a local celebration with an environment akin to football tailgating, and the practice has continued for generations. Why bonfires on Christmas Eve? It depends on who you ask. Some historians believe they are a carry-down of an ancient European tradition where bonfires initially honored successful harvests and later from Christianity (south Louisiana was originally a French colony, and residents remain predominantly Catholic). However, ask the young and the young at heart who continue the bonfire tradition today, and the most common response is that the fires illuminate the way for Santa Claus (or Papa Noel, as the Cajuns say) flying his sleigh and eight reindeer to find the homes of local good girls and boys. The bonfires are up and down the river, but the highest concentration is in St. James Parish, in and around Gramercy, Lutcher and Paulina. The best viewing is by car along the east- and west-bank River Roads (La. 44 and 13, respectively) and by walking along the levees. Bonfire parties are not necessarily open to the public, but onlookers will likely be offered kind words and holiday greetings should they mingle on foot. —LOUISIANATRAVEL.COM
