Defining the 'best' RECENTLY OVER DINNER, my husband posed a question to the table: What’s the best meal you’ve ever had? Our friend immediately started thumbing through her camera roll, looking for pictures to show us of an Italian restaurant she’d visited while vacationing in Utah. I, too, pictured the tapas and sangrias from our honeymoon in Spain. I think there’s a tendency to equate our best culinary memories with travel. Maybe being on vacation is a rare chance to unwind enough to truly taste our food. Or it could be that the excitement of venturing to a new destination pushes us to order dishes that’d normally be outside of our comfort zones. But as fun as it is to eat at a fancy rooftop restaurant or a celebrity chef-owned concept in Las Vegas or New York City, the place that teaches us the most about food is the one we call “home.” Chefs at local restaurants shape our palates—and how we define great food. Our favorite grocery stores and spice shops teach us about seasoning. We learn the ins and outs of cooking with meat and seafood at our local markets. And we discover just how bright and flavorful local produce can be when we bite into a peach or a strawberry grown on a nearby farm. Star-spangled band All-volunteer Baton Rouge Concert Band rings in July 4th once again THE SOARING SOUND of a concert band is part of a community’s essential backdrop, a festive undercurrent bringing deeper meaning and a cheery mood to civic events. Since 1976, the Baton Rouge Concert Band has provided such a soundtrack for those occasions, played by 65 volunteer musicians whose ages range from 18 to 80. Band members typically fell in love with their instruments while playing in school, and they didn’t want to abandon them as adults, says vice president and trumpet section leader Mark Courter. “We’re made up of people who invested a lot of time in music,” says Courter, who works by day as a software engineer. “We might have played in high school or in college, but we wanted to continue playing. It’s a great outlet.” Courter says some members joined the concert band immediately following playing in bands in high school or college, while others returned to playing after long breaks. He falls into the latter category. The former Tiger Band member graduated from LSU in 1981, and joined the Concert Band in 1993. He’s been playing with it ever since. This month, the band performs its annual Fourth of July concert in the courtyard of the Main Library. The show follows a successful Memorial

Day concert of patriotic pieces and World War II era showtunes, also held at the library. For Independence Day, expect to hear big numbers like “The Star Spangled Banner” and John Philip Sousa’s “The Stars and Stripes Forever.” The Concert Band will also play a Leonard Bernstein tribute, “God Bless the USA” and a piece in which the famous baseball poem “Casey at the Bat,” is set to music. A lot of time and energy has gone into the band’s preparation, Courter says. Members meet weekly for rehearsal at Dutchtown High School under the direction of conductor Sheily Bell and assistant conductor Daniel Modenbach. Bell is only the second director in the Baton Rouge Concert Band’s history. She followed founding director Vincent Taranto Sr., who led the band from 1976 until his retirement in 2002. Different from orchestras, concert bands are comprised of clarinets, bassoons and oboes, a range of brass and high brass as well as percussion. Their distinct sound makes them perfect for municipal events, parades and holidays. There are thousands of community concert bands across the country, each one providing adult instrumental musicians an outlet for playing, while also fortifying the community’s cultural fabric. “We have a lot of very good musicians,” Courter says. “And we love playing for the community.” —MAGGIE HEYN RICHARDSON

FURTHER PROVING THE point that yoga doesn’t have to happen in a studio, the USS KIDD Veterans Museum has announced a new free yoga series, Strong & Calm Warrior Yoga. Aimed at veterans, active military, first responders and their supporters and families, classes are held on the first Saturday of each month at the museum in a peaceful, open event space overlooking the Mississippi River. The series is sponsored by the Mayor’s Advisory Council on Veterans Affairs, Blue Cross and Blue Shield of Louisiana and Yoga with Brandi. Class participants move through easy, accessible poses while also practicing relaxation techniques focused on breathing and stretching. Taught by instructor Brandi Hanson, the sessions help increase strength and stability and are aimed at all ability levels and life experiences. The poses and exercises are also adaptable to injuries. The number of named storms predicted for the 2022 Atlantic hurricane season by Colorado State University’s (CSU) Tropical Meteorology Project in June, a slightly higher figure than it forecast in April. Of those 20 storms, 10 will turn into hurricanes, the project predicts, and five will be classified as Category 3 or higher. That’s significantly higher than the Atlantic hurricane season’s 30-year average of 14 named storms, seven hurricanes and three Category 3 or higher events.

Fast forward to 2022, and Tadpole Academy Swim School travels to residential pools across the region. The business is insured and requires that each homeowner also be insured. Today, it employs 15 lead instructors and more than 20 different assistants. All lead instructors complete —Taylor Alexander, owner of Tadpole rigorous training to Academy Swim School learn the academy’s protocols and become Red Cross Water Safety Instructors, the highest swim certification. “I certify them in (the Water Safety Instruction course) before they’re able to teach. They work for me for a year, and they’re invited to take the course through the Red Cross,” she says “And then they sit for two sessions. If we feel like they’re capable at that point, then they can go out and lead.” As an added layer of security, the academy also encourages the caregivers to stay at the lesson with their children. “We don’t want any caregiver showing up to practice, caught off guard by our aggressive method,” Alexander says. “We need those parents to cheer their kids on and give them high fives. We need them to encourage their kids to take every single turn.” Now in her tenth year, Alexander says she has no plans of slowing down. “Since starting Tadpole Academy, I began to realize that there were so many children in rural areas that weren’t going to get swim lessons if The academy meets an urgent need we didn’t go there. AFTER HER 3-YEAR-OLD nearly drowned years ago, Taylor Alexander embarked on a mission to teach water safety to every child in southeast Louisiana. It happened in an instant. Alexander was putting sunblock on another one of her children by the pool. Her son, Ian, ventured toward the water, mistakenly thinking he had his floatie on. But when he went into the pool, he sank straight into the bottom. “When I saw how quickly something could have happened had I not been right there, I was like, ‘Whoa, I’m not waiting,’” Alexander says. “So, two weeks later I signed him up with this lady that teaches the same method that we teach now.” Alexander is referring to the methods utilized by her instructors at Tadpole Academy Swim School, which she launched in 2013. The school takes a more aggressive, fast-paced approach to swim safety, encouraging parents to enroll their children in lessons at a much younger age. It also discourages

THE SUNNY, SUMMER morning is quiet, except for the swishing of horse tails and the clip-clop of their hooves as four young riders make their way to the training ring at Sommerview Farm in St. Gabriel. Aili King, Emma Melville and sisters Stella and Vivian Silva have spent the last several weeks making final preparations for the show of their lives—at least thus far in their equestrian careers. Next month, the girls, their trainer, horses and families will caravan to Lexington, Kentucky, for the United States Equestrian Federation Pony Finals. Qualifying for the prestigious event, which draws young riders from around the country, is a hard-fought accomplishment reached through a season’s worth of national qualifying events. To earn a spot at Pony Finals, the girls had to earn “champion” or “reserve champion” status (placing first or second overall) at a nationally rated horse show. The girls have trained six days a week to hone their skills in the hunter jumper discipline, an equestrian category that requires technical precision, control and athleticism. Rider Stella Silva qualified for Pony Finals by placing first at a horse show in Texas on her white pony, Laughing out Loud. “I just tried to relax and do my best and trust him,” says Silva, 11, who also qualified in 2021 for Pony Finals. “Because I know if I get in his way too much, I’ll mess up.” Silva’s little sister, 9-year-old Vivian, qualified for the first time this year on a black pony named Signed in Ink. She says riding has been a journey that’s included learning to get back in the saddle when you fall off—literally. “It feels good to overcome obstacles. It feels like I’ve accomplished something,” Vivian Silva says. For her, a horse show is “not about the ribbons, but the riding.” Having four riders make it to Pony Finals is a big deal for Sommerview Farm, a family-owned barn operated by Brittany Sommer DeSalvo, an award-winning equestrian who grew up in Baton Rouge. The barn, located about 25 minutes from downtown Baton Rouge, offers lessons to riders of any age and ability level. It’s also a boarding barn for families who own horses. Located on a verdant swath of land on Bayou Paul Road, the operation includes two training rings and a large barn with tack rooms, a washing area and stalls that currently hold about 25 horses. to give the animals round-the-clock care. DeSalvo also owns a sister operation in Lafayette called Sommerview Oaks. Buying an expensive horse isn’t a prerequisite to equestrian success, DeSalvo says, who regularly brings in rescue horses she believes deserve a —Sommerview Farm owner Brittany Sommer DeSalvo second chance. In fact, Melville’s horse, Golden Ticket, is a rescue that DeSalvo bought at a “slaughter auction,” where horses are sold for processing. Melville, 13, has spent months working with Golden Ticket (nicknamed Tank), riding every day after school during the school year and a full day on weekends. It’s paid off. She surprised herself by qualifying for Pony Finals this year with Golden Ticket at a show in Folsom. “I didn’t realize it at first,” Melville says, “but then everyone was screaming.” Sommerview Farm was born out of DeSalvo’s single-minded, childhood passion for horses. what I wanted to do,” she says. “On a horse—that’s where I wanted to be.” But this was 30 years ago, when fewer opportunities for equestrian education existed in the Capital Region than they do today. The family had to travel to Lafayette and even as far as San Antonio for lessons, Sharon says, later buying the St. Gabriel property and bringing in trainers to work with DeSalvo and some of her friends. DeSalvo hadn’t been kidding about her equestrian commitment. She earned big success as a teen rider, raking in scores of ribbons, and placing first in the nation in her division at the 1999 National Horse Show at Madison Square Garden, where she faced off against the country’s top 10 riders. It was a huge accomplishment for an unknown rider from Louisiana, and one of several honors she has earned over the years. Sixteen years ago, DeSalvo began putting her energy into developing Sommerview Farm, improving its facilities, and expanding lessons and camps for riders of all levels and ages. She’s pinning high hopes on Pony Finals this year, she says. “I’m really excited about going and for what these girls have accomplished,” DeSalvo says. “Now, let’s go win.”

JoyMcDonald JOY MCDONALD’S interpretations of famous paintings may never be featured in worldrenowned galleries with the likes of the Mona Lisa. And she’s perfectly fine with that. To McDonald, it doesn’t matter where her art hangs as long as it makes people smile, or even laugh out loud. Her name, Joy, is perfectly fitting. After 25 years of bartending, McDonald started a sobriety journey in 2016 that would lead her to rediscover the color in her life. Now it’s her mission to share that newfound happiness with others. “Once I quit drinking, it changed everything. I got a second chance at life,” she says. “Once I started drawing and flowing, I realized how happy it made me feel, and now I can’t stop. I’m more addicted to making people happy than I was to alcohol. This addiction is way more healthy and more rewarding.” McDonald has always had a creative spirit. She remembers running out of time while taking tests in school because she doodled little characters in the margins. By the time she was in high school, she designed T-shirts for graduations and small businesses in her community. As a self-taught artist, McDonald finds herself experimenting with different subjects and mediums, whether it’s a painting or cheerful chalk doodles on her neighbor’s driveways. One thing is consistent across all her work: There is no shortage of color. While painting one afternoon, McDonald birthed her own signature characters. What started as a red line painted on a canvas turned into an army of expressive, multicolored rectangles that McDonald uses to bring joy to everyone who encounters her art. “Everyone always asks, ‘What are they?’ And a lot of people will guess that they’re popsicle sticks or sticks of gum,” she says. “I don’t really know what they are. I call them my little LOLs, because they just make you laugh out loud.” McDonald uses these LOLs to bring a sense of happiness to the mundaneness of life around her. She places them in Louisiana scenes like Saturday nights in Death Valley, or uses them as substitutes for famous celebrities like The Beatles. Their smiling, carefree faces pop up in renditions of well-known art pieces by Edvard Munch and Gustav Klimt. “I started with The Scream, and now he’s The Laugh,” she says. “Then, I recreated The Kiss for a friend with the LOLs. Recently, I reimagined The Girl with the Pearl Earring because she looked sad, and I wanted to make her laugh, too.” It’s these reimagined paintings that make McDonald’s work stand out in shops like Local Leaf Gallery and Mid-City Artisans Art Gallery. She hopes to one day have her work displayed in St. Jude Children’s Research Hospital. “Her work is hard to miss,” says Local Leaf Gallery owner Brittany Rouse. “It definitely makes you smile.” And in February, McDonald delivered her biggest commissioned painting yet to her friends Anne and Dave Brassett. The canvas is covered with LOLs getting into shenanigans from New Orleans to Baton Rouge. Though there’s a lot going on in the piece, one element makes it special: puffy paint. Dave is blind, so the addition of 3D paint allows him to feel the canvas and get an idea of what’s going on. “Dave can feel the crawfish claws and the muffulettas in the painting, and it makes him smile too,” Anne Brassett says. “I love that he can be part of it and still experience the painting in his own way.” facebook.com/joy.mcdonald1

STEP INTO THE Bougie Bar, and the first thing you’ll notice is the smell. The floral scents of seasonal summer fragrances merge into a sweet, fresh aroma. It’s all thanks to the shelves lined with candle containers and more than 100 different fragrances that guests can choose from to make their own candles. The brainchild of owners and couple Rusty and Jamie Phillips, the shop opened in Mid City this spring. The entrepreneurial duo got their start in the world of fragrances through their candle company, Bourbon Royalty, which they founded in 2013. This experience, as well as Jamie’s ongoing desire to open a gift shop, inspired them to launch the first location of The Bougie Bar in Lafayette in 2019, where the team has hosted private candle-making events for every occasion, from bachelorette parties to office celebrations. As customers started driving long distances to the Lafayette location, the owners knew it was time to bring The Bougie Bar to Baton Rouge. “You name it, we have pretty much seen it,” Rusty says. “We’re not just a class where you come in and you rush

through a process to make the candle and you’re out the door. You get to have an experience, which is important to us.” Here’s how it works. Once the guest chooses two to three fragrances for their candle—the most popular being a masculine base combined with a fresh or sweet scent—the candle wax is heated and prepared by an employee at the bar area. Candle-making isn’t the only thing on tap at The Bougie Bar. The gift shop area is also filled with soaps, headbands and jewelry, as well as Bourbon Royalty products. The owners’ goal for the future is to make the gift shop full-service by adding more local products to the shelves. Rusty says guests typically most enjoy the team-building and customization aspects of the candlemaking process. “It allows people to come in a relaxed environment, where they get to be creative, relaxed and interact on a different level,” Rusty says. “Your hands are moving; your senses are activated. You’re not thinking about everything that you’ve done today. Your focus is right here.”

FROM WALKS DOWN New York runways to walks down the aisle, Baton Rouge native Oonarissa BrownBernard is walking her fashion brand throughout the country. She has designed men and women’s wear for various events, from weddings—including bridal dresses, tuxedos and flower girl dresses—to custom school cheer uniforms through her line OonaNicole. Her work has been featured in New York Fashion Week since 2018, and also highlighted in New Orleans and Dallas fashion weeks. She is currently preparing bridal wear for The Fashion Gallery’s New York Fashion Week show, presenting on the same stage as brands like Victoria’s Secret. Brown-Bernard earned two degrees from Southern University and graduated from the Fashion Institute of Design & Merchandising, based in California, in the early 2000s. But she didn’t start pursuing a career in the industry until 2011. Brown-Bernard decided it was time to put her degrees to use when she became a stay-athome mom to care for her second son, who was struggling with breathing complications. “That’s when I really started honing my craft and investing in my business: after I had to become a stay-athome mom to save my child,” Brown-Bernard says. When it comes to her designs, she follows an intricate process. Before anything, she consults the fashion forecast on current and rising trends. Brown-Bernard draws inspiration from her favorite designers, such as Valdrin Sahiti and Elie Saab, as she sketches out her vision board and decides her choice of fabrics, colors and patterns. From there, she orders fabrics and starts to bring her vision to life. Rather than adhere to a signature aesthetic, each of her designs offers something new. Her clothing sets are diverse, but they all have a style that is “high-end sophisticated, classy and sexy,” Brown-Bernard says. “(My clothing) has class,” she elaborates. “A little sophistication and a little old school with a little vintage look, but it has modern-day tweaks.” Currently, her brand OonaNicole is a two-person operation, with Brown-Bernard creating the clothing and her husband managing the business. Brown-Bernard is working to build her brand by presenting her work at other fashion weeks, like those in Paris and Milan, and being a force for other Black designers. High-end Black-owned fashion lines are rare in the industry, she says, because of a lack of funding and support. “It’s a rough journey, but those are my goals, and I hope to reach them.”Follow Brown-Bernard on Instagram @overandbeyongapparel, or find her work on Etsy.

A new Zachary boutique offers everything from baby and maternity clothing to memorable interactive experiences FOR NEW MOTHERS about to enter a stressful stage of life, Lacie Herndon hopes her baby-themed boutique provides tranquility. Baby + Bump opened in Zachary earlier this year, catering to mothers, mothers-to-be and babies. Inside, customers can browse racks of women’s basic tees and maternity leggings, and shelves full of books, toys and baby clothing up to size 3T. The warm wood floors, muted gray walls and lots of rattan fixtures are meant to calm customers as soon as they walk through the doors. “Personally, I feel overwhelmed if there are too many colors in a store or there’s too much to look at,” Herndon says. “I prefer neutrals, so I wanted to bring those natural tones into (my) stores. I feel like it allows the customer to enjoy their shopping experience more.”

In addition to its curated selection of goods, the shop aims to provide interactive experiences for families, including hands-on DIY classes through AR Workshop and silhouette portrait sessions with photographer Madeline Mefford. “Baby + Bump is still really new, but we plan on doing a lot of events and activities this summer,” Herndon says. Back in 2015, Herndon opened Maison Greig, her first store in Zachary. The flagship shop features gifts, home décor, accent furniture and more. But as she began expanding her products to include baby and maternity items, she got an idea for a second storefront location. “I always knew I wanted to do more, and when the opportunity became available to have another space, we jumped on it,” Herndon says. “That’s when we decided to open Baby +
Bump by Maison Greig.” Herndon entered the retail world after transitioning out of the medical field. The former nurse missed her creative side. After years of moving from state to state supporting her husband’s military career, the couple returned to their hometown of Zachary and opened Maison Greig. “One day I just woke up and I was like, ‘I’m not doing this anymore,’” Herndon says. “I got a loan and went to the market and opened my first store, and spent the last seven years growing that.” The early days of the pandemic forced Herndon to open an online storefront for Maison Greig. She

only had one month to prepare the website before going live. “When 2020 hit, we had all of this free time, and it was kind of like we either open an online store or die,” she recalls. And while the brand’s brick-andmortar has of course since reopened, ShopMaisonGreig.com remains operational, too—and has even expanded to include items from Baby + Bump.

PATRIOTIC POPSICLES
Makes 4 servings. One serving gives you 90 calories, 4 grams of protein, 18 grams of carbohydrates, 1 gram of fiber and one gram of fat. Simple Ingredients 1 cup low-fat vanilla yogurt 1 cup low-fat milk 1/2 cup chopped strawberries or raspberries 1/2 cup chopped blueberries Easy Directions 1. Mix together the yogurt and the milk. 2. Add one quarter cup of the mixture into a bowl with the strawberries and stir until combined. 3. Add one quarter cup of the mixture to a bowl with the blueberries and stir until combined.
4. Layer the strawberry, yogurt/milk, and blueberry mixture into popsicle molds and freeze according to manufacturer instructions.
TERIYAKI SALMON AND PINEAPPLE SKEWERS
Makes 4 skewers. One skewer gives you 310 calories, 25 grams of protein, 17 grams of carbohydrates, 2 grams of fiber, 16 gams of fat (3 grams saturated, 6 grams PUFA, 6 grams MUFA) Simple Ingredients 1 pound raw salmon, skin removed 2 cups fresh pineapple cubes 1 red bell pepper 4 tbsp low sodium soy sauce 1 tbsp sesame oil 2 tbsp brown sugar 1/2 tbsp corn starch 1 tsp garlic powder 1/2 tsp powdered ginger Salt & pepper to taste 4 wooden skewers Easy Directions If using an outdoor grill, soak the skewers in water for 30 minutes (this is not necessary if using a grill pan). Cut the salmon into 1-inch chunks, and the bell pepper in to 1-inch pieces. You will need at least sixteen pieces each of salmon, bell pepper, and pineapple. Thread the salmon, bell pepper, and pineapple onto each skewer until four of each item have been threaded. Once finished, place the skewers
into a baking dish or pan. Combine the soy sauce, sesame oil, brown sugar, corn starch, garlic powder, and ground ginger, and whisk together until all ingredients are thoroughly combined. Spoon or brush the mixture onto the skewers, making sure all sides of the skewers are coated. Sprinkle the skewers with salt and pepper, and place them in the refrigerator for 15-30 minutes to marinate. Preheat the grill (or a grill pan) to medium heat. Once hot, spray the grill or pan surface with oil. Place the skewers on the grill and cook for about 2 minutes per side, for 8-10 minutes total. Remove skewers from the grill and place them onto a clean plate to serve.
STRAWBERRY JALAPEÑO MOCK MARGARITA
Makes two 12-ounce drinks. One serving gives you 140 calories, 1 gram of protein, 37 grams of carbohydrates, 2 grams of fiber and 0 grams of fat. Simple Ingredients 1/3 of 1 cucumber, peeled 1/4 of 1 jalapeño, seeds and pith removed 1 cup frozen strawberries 3/4 cup orange juice 2 tbsp honey Juice from one lime 1 packet (0.8g) True Lemon unsweetene crystallized lemon 1/2 cup ice Easy Directions Add the cucumber, jalapeño, and frozen strawberries to a blender. Combine the orange juice, honey, lime juice, and True Lemon, and pour into the blender. Add ice and blend until smooth. Try it with other fruits like blackberries or mango too. FROM A BOOTH at a bank of windows in Iron Fork, you can see the cars rushing by at the intersection of Perkins Road and Essen Lane. But inside this Cajun eatery during a Thursday lunch hour, the vibe is surprisingly tranquil. Maybe it’s the natural light dappled from shade trees outside, or the warm tones of the unassuming interior, but you almost forget you’re in one of the busiest areas of town. You also might forget that this spot has struggled to house restaurants for years, cycling between one dining concept after another in the same location—including Calendar’s, Lasseigne’s American Grill and several ill-fated Italian, Mexican and seafood restaurants. But Iron Fork, which opened in October of last year, hopes to change that bad streak. Its menu of daily lunch specials and Southern favorites aims for crowd-pleasing, no-frills pleasures. Just after the lunch rush had passed, I decided to give this Beau de Chene Shopping Center eatery a try. I’m not usually one to go hard at lunch. A heavy meal then returning to the office till 5 p.m. does not appeal at all. But I gave in the minute I saw the “hot box” behind the order-up counter: plump, savory boudin egg rolls, sausage links and cracklins warming behind glass. The friendly woman at the counter even let me sample one of the restaurant’s special chicken cracklins while I waited. Imagine the crispiest ends of a fried chicken finger, and that’s what you’d get. When it comes to po-boys, Iron Fork has all the classics, like roast beef and fried fish. I ordered up my personal favorite, the fried shrimp po-boy, with

It also offers a market area with fresh and smoked meats and prepared foods. The owners were also applying for a liquor license for a small bar area near the entrance at press time. WHAT’S A MUST: The shrimp po-boy is a straightforward take on the classic, with addictive shoestring fried onions on the side. There’s a set menu of lunch specials by the day, including the Chicken and the Sea on Thursdays, with juicy and well-seasoned fried chicken. We’ve heard good things about the Wednesday barbecue. And if you’re just interested in a Cajun-style snack, grab some boudin egg rolls or cracklins from the hot box.

fried onion rings on the side—because why not? When it came out, I immediately got excited over the shoestring-style fried onion rings. A win from the start. They were crumbly and salty-sweet and a huge enough portion for more than one person. The po-boy bread was flaky on the outside with just enough chew and pull when biting in. The shrimp were crispy, big and well-seasoned. The chopped, deep-green lettuce and juicy red tomatoes were fresh, and the condiments and pickles were on the side as requested—I like to add just a little bit of mayo and hot sauce to mine. Not everyone gets the New Orleans classic right, but Iron Fork’s po-boy was a respectable take. And I had plenty left over to take home. But I wasn’t done. Known for its lunch specials, I knew I needed to take a stab at these for a true Iron Fork experience. The Thursday specials were either homemade lasagna or a dish called Chicken and the Sea. While I was willing to splurge on this particular day, lasagna seemed like a carb-loaded bridge too far. I opted for the latter, which featured a fried chicken breast covered in shrimp etouffee. The chicken was juicy, perfectly seasoned and with a fried exterior that held up to the smothering of shrimp

etouffee. The shrimp were of a respectable size, but despite visible bits of green onion and stewed tomato in the roux, the etouffee was surprisingly bland. I was also a bit confused by the side of dirty rice when there was already rice in the etouffee. It seemed like overkill and was also disappointingly bland. The special came with a soft, garlicky breadstick and classic stewed corn, but I would have preferred some kind of green to cut through all the heavy components. Sides aside, the fried chicken still hit the spot on flavor and texture. On the way out, I gave in and ordered from the hot box to-go: one boudin egg roll and a bag of smoked pork cracklins. Of course, I had to taste them in the car while they were still warm. The egg roll was crisp and filled with a satisfying boudin stuffing, and the cracklins were crunchy, spicy and indulgent. Minus a couple of misses on the special’s sides, I had no regrets for stopping in at Iron Fork. Well, one regret: That I hadn’t come on Wednesday to try its barbecue ribs and chicken special. I’ll have to visit again when I need to pause and indulge for a while at midday. Here’s hoping Iron Fork breaks the curse at this location. We all need a chance to dig into some of this Cajun goodness.

How Eliza chef-owner Russell Davis keeps his family fed

RUNNING TWO POPULAR Baton Rouge restaurants doesn’t stop chef Russell Davis from taking time to cook dinner for his family. Three or four nights a week, you can find him peering into his home fridge or kitchen garden and concocting spontaneous meals for his wife, Sally, and their two teenagers, Charlotte and James. “On weeknights, it’s something really simple, like throwing (proteins and vegetables) on the grill, tossing them with a little olive oil and finishing with salt and pepper, and maybe mixing in pasta or some couscous or something like that,” says Davis, who credits an expanded support staff at his eateries for allowing him to spend more evenings at home. “On Sundays, when Eliza is closed and JED’s is open only for lunch, I like to do a slow braise or a beef stew, or red sauce.” 225batonrouge.com | [225] July 2022

The Davises balance running Eliza Restaurant and JED’s Local with the long list of obligations that families with active kids know well. To combat the frenzy, they’ve put a lot of thought into their culinary home life. The do-it-yourselfers renovated the kitchen of their Old Goodwood house in 2021, the same home that Sally and her five siblings grew up in. The new space, outfitted with cool mint green walls, white quartz countertops and a white subway tile backsplash, features a large square island used for both prep and casual dining. It’s a peaceful refuge that leads to a back patio and kitchen garden overflowing with herbs, flowers and seasonal vegetables. “We grow enough herbs to supply the cocktail program at Eliza,” Sally says. At the moment, the Bocage restaurant’s bar uses fresh mint in its Eliza Greyhound, and basil and mint in its cucumber basil mojito. The garden’s vegetable patch includes cherry, roma and slicing tomatoes, cucumbers, peppers, squash, eggplant and other heat-loving crops. The veggies are helped along by a new addition of flowers this year, deliberately planted to draw pollinators, Sally says. It’s common practice to send the kids to the garden in the evening to harvest what’s fresh, the couple says. Tomatoes

SHE WON THEM over with her chitterlings. Last year, Deborah Dickerson, a Plaquemine soul food restaurant owner and music lover, reached out to Baton Rouge Soul Food Festival founder bluesman Henry Turner Jr. to learn more about his efforts to preserve soul food culture. The two got to talking, and before Thomas knew it, Dickerson had offered to bring 150 pounds of chitterlings to the festival’s pre-party. “She overwhelmed us with her abilities,” Turner told 225 earlier this year. “Her food is off the chain.” This past May, Dickerson was named the festival’s 2022 Soul Food Pioneer for her contributions to regional soul food preservation. Dickerson is the owner and founder of D’s Southern Soul Café in historic downtown Plaquemine, a friendly, inviting spot on Railroad Avenue where the weekly menu meanders through a hit parade of belly-warming soul food classics. Regular customers are fully versed in the line-up. Mondays are known for red beans and fried pork chops. Tuesdays spotlight hamburger steak and liver and onions. Wednesdays feature shrimp and okra, white beans and smothered pork chops. Thursdays will make you earn your soul food stripes with chitterlings—braised and seasoned pig intestines, and tripe, the sinewy lining of the stomach. (If offal’s not your jam, ribs and turkey wings are also on the menu.) Fridays are all about fried fish and shrimp stew. Homemade hamburgers, footlong dogs, other entrees and side dishes are available, along with occasional peach cobbler. The restaurant is also open for lunch on Saturdays and Sundays.

“If I don’t have it,” says Dickerson of her daily specials, “I hear about it from my customers.” The eatery is bright and cheery, with counter service ordering and a mixture of comfy booths and tables. Dickerson’s love for music shines through the decor, with memorabilia, an antique piano and a vintage turntable scattered throughout the space. The front picture window looks out onto the quiet downtown and the railroad tracks that give the street its name. The restaurant was previously located nearby on Main Street. There, Dickerson started an after-school program she named the Gumbo Youth Project, and to support it, she wanted to sell food. But it required securing proper permitting, she says. Once that was in place, she figured why not open a café, especially when community

members kept encouraging her to cook. “What you see on the menu, that’s what they told me they wanted,” Dickerson says. A native of Iberville Parish, Dickerson moved to New Orleans at age 10 after her mother remarried. Her cuisine, she says, blends the culinary traditions of her rural roots with the Creole foodways of the Crescent City. After high school, she joined the U.S. Army and spent the next couple decades serving on bases in Egypt, Israel, across Europe and in the United States. Now back home, she says preparing soul food is helping her overcome the PTSD she experienced from active duty, and is easing her transition to civilian life. At its core, soul food is about thrift, stemming from the manner by which enslaved people and their descendants cooked with discarded or inexpensive ingredients. Coaxing rich flavor from cast-off cuts is soul food’s signature, demonstrated in the style’s long, slow braises and rich gravies.
That heritage is on full display in a dish like chitterlings. Dickerson says she starts preparing the dish by painstakingly cleaning pig intestines, then braising them for about eight hours, adding aromatic vegetables and her own spice blend toward the end of the cooking process. The whole affair can take up to two days, she says. All that labor has made this lowly dish the most expensive item on the menu at $15 a plate. Dickerson calls it “Iberville Gold.” In the fall and winter, she also serves peppergrass, a wild green she says grows in sugar cane fields after the harvest. Dickerson says she was raised to spot it and bring it home to her mom, who would simmer it low and slow. WITH THE SUMMER harvest still upon us, I have continued experimenting with more of my favorite fruit and vegetables that are so plentiful this time of year: eggplant, zucchini and nectarines. I enjoy making dishes that enhance the fresh flavors of the fruits and vegetables while they are at their peak. It’s even better when the dishes are easy to create without having to spend excessive time in front of a hot stove or grill. All of these recipes happen to be meatless, but they are certainly hearty enough to be served as a main course. They also make wonderful sides for any Fourth of July cookout or your next potluck party.

Roasted Vegetable Ratatouille Ratatouille is one of my favorite dishes to make year-round, but it is especially delicious in the summer when the eggplant, squash and zucchini are at their peak. This classic French provincial dish is bursting with summer flavors from the tomatoes, zucchini, squash, eggplant and onions. I like to roast the vegetables until they become golden around the edges and are just tender but still holding their shape. I then fold them into a quick homemade red sauce showcasing fresh Creole tomatoes. The result is a delicious, lighter version of the traditional recipes. Roasting the vegetables helps bring out their respective flavors. The fresh tomato sauce is light and bright and helps marry all the flavors. This is a wonderful side dish to complement any grilled meat or seafood, and can be served warm or at room temperature. Servings: 6 4 large ripe Creole tomatoes 1/3 cup olive oil* ¼ teaspoon crushed red peppers 3 cloves minced garlic ¾ teaspoon kosher salt* 2 medium eggplants ½ teaspoon dried herbes de Provence, divided 2 large zucchini 2 large yellow squash 1 small red onion *Used more than once
1. Bring a large pot of water to a boil. Use
a serrated knife to cut a small slit across the bottom of the tomatoes. This will help release the tomato skin, making it easier to peel.
2. Once the water is boiling, carefully
drop in the tomatoes. Blanch for 30 to 40 seconds, or just until the skin begins to peel from the flesh.

3. Drain the tomatoes and cool under
cold running water. Carefully peel the skin from the tomatoes.
4. On a cutting board, slice the tomatoes in half. Use a small spoon to scoop and discard the seeds. Chop the tomatoes and set them aside. 5. Heat 3 tablespoons of the olive oil in
a large sauté pan. Add in the crushed red pepper flakes and minced garlic. Sauté for 10 to 15 seconds, or just until the garlic becomes fragrant.
6. Add the fresh chopped tomatoes and
¼ teaspoon of the kosher salt. Allow the sauce to come to a boil, then reduce the heat and simmer for 10 minutes. (This sauce can also be tossed into your favorite pasta).

oven to 400 degrees and line two baking sheets with nonstick foil.
8. Cut the eggplant into chunks. In a mixing bowl, toss the eggplant with 2 tablespoons of the olive oil, ¼ teaspoon of the kosher salt and ¼ teaspoon of herbes de Provence. Place the eggplant in a single layer onto one of the lined baking sheets. 9. Cut the zucchini, squash and red onion
into chunks. Place in the mixing bowl. Toss them with the remaining olive oil, salt and herbes de Provence. Place them in a single layer on the second baking sheet.

Nectarine and Pickled Red Onion Salad with Feta and Baby Greens
When the temperature hangs out in the mid ’90s, I’m not exactly in the mood for heavy, rich meals. On days like those, I crave foods that are cool, crisp and have a ton of fresh flavors. This nectarine and pickled red onion salad delivers on all scores. The pickled red onion is a secret ingredients I like to keep on hand to jazz up any salad or sandwich. I used red onions here, but sweet yellow onions will work just as well. This recipe is easy to make and will last in your refrigerator for up to two weeks. If available, I like to use both yellow and white nectarines in this salad. The white nectarines tend to be a little sweeter and not as tart as the yellow ones, and the blend of both makes for a nice contrast. This salad is equally delicious with peaches. My cheese of choice in this salad is feta, as its saltiness helps keep the salad savory and blends well with the tangy bite of the pickled onions. But you can make a range of cheeses work. This salad will complement any summer meal, or you can toss in grilled shrimp or chicken and serve it as a main course.

4. Close the container and chill the onions for at least 1 hour or overnight. The pickled onions will keep in the fridge for up to 2 weeks. For the salad dressing: ¼ cup balsamic vinegar 2 tablespoons honey ¼ teaspoon salt ¼ teaspoon black pepper ½ cup grapeseed or light-flavored vegetable oil

For the salad: 5 to 6 ounces baby greens 4 ripe but still firm nectarines ½ cup sliced pickled red onions 4 ounces crumbled feta 1 ⁄3 cup toasted nuts (walnuts, pecans, pine nuts or almonds)
Servings: 6 For the pickled red onions: 1 cup red wine vinegar 1 cup water 2 tablespoons sugar 2 tablespoons honey 1 ½ teaspoons kosher salt 1 large red onion

Ricotta-Stuffed Eggplant Roulades
Eggplant Parmesan is one of my favorite comfort food dishes. But it can get a little heavy once the eggplant is breaded and fried. I also find that frying the eggplant can mask the delicate flavor of the eggplant itself. This recipe of ricotta-stuffed eggplant roulades is very reminiscent of an eggplant Parmesan, but it allows the eggplant to shine through without all that extra breading. To start, I lightly roast thin slices of eggplant and fill them with a mixture of ricotta and Parmesan. Then I roll them into little roulades. I place the eggplant roulades in casserole dishes with my favorite prepared marinara sauce and top with grated mozzarella before baking.

NOWADAYS, IMPACTFUL art exhibitions can happen anywhere. Artists are going outside of fine art galleries and showing their work in coffee shops, restaurants, spas, local businesses and public spaces. It’s a movement that’s making art accessible for consumers and creators, and local art collective Ellemnop.Art is all for it. The group highlights emerging and established Baton Rouge artists through virtual and in-person exhibitions, online marketing, popups and art curation services for businesses and homes. “We want to take art out of the traditional means,” says Ellemnop. Art co-owner Keidrick ‘Sensei’ Alford. “We want to meet people where they’re at and then convert that to a space where people can enjoy art.” Alford and Elle Mouton started Ellemnop.Art in 2019, right before the pandemic. The two longtime friends and LSU alumni wanted to create a digital platform for up-and-coming artists to share and sell their work. So they created a website spotlighting artists, where artists can have virtual exhibitions and sell artwork and art enthusiasts can browse upcoming Ellemnop.Art events. Both Mouton and Alford have always been art lovers. Outside of being a system administrator for a supply chain enterprise, Mouton is a photographer and digital artist. Shortly after launching, Alford and Mouton were invited to be curators at the Healthcare Gallery and Wellness Spa, where they were able to bring their virtual ideas for Ellemnop.Art into the physical world. The collective’s most recent exhibition, Astronomical Twilight, was displayed at Healthcare Gallery from March to June. It featured handmade paintings and sculptures by local artist Clint English. He is the creator behind Domestic Artifact, a collection inspired by natural
minerals. English’s abstract artwork is dark, minimal, textured and moody. His work resembles and incorporates natural elements like rocks, concrete, stone, sand and cement rubble. “There’s a time every day called ‘astronomical twilight.’ That is the darkest point of daytime,” Alford says. “For us, it means the darkest time in your life could represent a new beginning.” The group has held pop-up events and exhibitions at The Radio Bar, Local Pop-Up Market and The Stitches Group Headquarters. There are also more than five virtual exhibitions by local artists on view in a digital gallery, where visitors have the opportunity to purchase work or donate to the artist. But Ellemnop.Art goes further than simply curating art exhibitions. It works closely with emerging artists, connecting them with buyers, galleries and exhibition opportunities and helping them source the necessary tools to be professional artists. Alford and Mouton have worked with local creatives including Nathaniel Landry, Kimberly Meadowlark, Cierra English, Courtney Miley, Fred Parker, Erick Fields and Travis ‘ArtSoulLife’ Pickett. As it continues to reach more artists and build its community, Ellemnop. Art wants to establish collaborations between local artists and businesses, share meaningful public art—and eventually have its own space where creatives can work in studios and host exhibitions. ellemnop.art

But the past catches up to him when Jane Foster, his ex-girlfriend, mysteriously returns wielding Mjolnir as the Mighty Thor. The two Thors must face a new foe together, Gorr the God Butcher, from eliminating all gods.

Flipping the script An exhibit featuring diverse interpretations of historic paintings provokes viewers to rethink assumptions By Maggie Heyn Richardson

FAMILIAR PAINTINGS FROM throughout the history of art are reimagined in a wildly creative format in the exhibit, In Empathy We Trust. Sixteen iconic works viewers will recognize are recreated photographically with new subjects of different genders and ethnicities. The exhibit is open through October at the Louisiana Art and Science Museum. The playful—yet moving—pieces are part of an ongoing series by E2, the artist duo of Elizabeth Kleinveld and EPaul Julien, and are meant to prompt viewers to think twice about preconceived notions as they view art and go about their daily lives. “It’s about reimagining history and changing expectations,” says LASM Interim Assistant Curator Beth Welch. “For the most part in historical paintings, you’d see females and males as usually white and depicted in
traditional roles, and this changes that dynamic.” Viewers will recognize new interpretations of Vermeer’s “Girl with the Pearl Earring,” Whistler’s “Mother” (“Arrangement in Grey and Black No. 1”), Emanuel Leutze’s “Washington Crossing the Delaware” and one of Frida Kahlo’s self-portraits. The setting of each piece is recreated with striking similarity, with fresh takes on subjects. Kleinveld, an artist and photographer from New Orleans now based in Amsterdam, and Julien, a New Orleans fine art photographer and mixed media artist, began work on the series in 2010. The two met while working on the traveling exhibit and book project, Before (During) After: Louisiana Photographers Respond to Hurricane Katrina. Sparked by their shared interest in social equity, Kleinveld and Julien created In Empathy We Trust,

an ongoing series that has traveled to multiple galleries nationwide. In a retelling of Marcus Gheeraerts’ “Portrait of Elizabeth I” (known as “The Ditchley Portrait”), the virgin queen is replaced with a Black woman. In “Washington Crosses the Delaware,” the all-male occupants on board General George Washington’s boat are replaced exclusively by women. And Vermeer’s “The Milkmaid” is reimagined with a male subject. Each labor-intensive work takes about six months to create, Welch says. The artists begin by building a physical set that mimics the setting of the original painting. E2 collaborated with the Dutch National Theatre, which provided many of the costumes, wigs and props worn by the modern subjects. They then stage the live subjects precisely, and shoot the photograph. The lighting, color and shadows are perfectly engineered to mimic the original painting. It’s worth taking time to study each piece to understand the artists’ intentions, Welch says. In a modern depiction of Gheeraerts’ “Portrait of Elizabeth I,” a Black woman is dressed just like the queen. She wears an ornate white gown bedecked in Tudor roses, pearls and an Elizabethan ruff

framing her face. But one element is missing—the crown, a symbol of imperialism. Its absence, along with the inclusion of a woman of color, asks the viewer to perhaps reimagine the British Empire and colonial structures of power. Welch says response from patrons has been strong. Referencing
familiar original works helps the exhibit feel accessible, and E2’s fresh twists are thought-provoking conversation starters. Viewers can read more details about E2, as well as the original paintings, through QR codes—one more way the exhibit brings the artwork into the future.
