Tommy’s Restaurant Oyster Bar:A True Pearl of Clear Lake

The landmark Tommy’s Restaurant Oyster Bar of Clear Lake has been a favorite of those who enjoy seafood for all its 27 years. Louisiana native Tom Tollett, owner and chef, is a legend in his own right, mixing high standards for food and service with the restaurant’s welcoming ambience that is simultaneously upscale and casual. His longevity in the industry demonstrates an unwavering dedication to quality in both cuisine and customer experience. Tommy’s buys fresh, local seafood when they can. The oysters come from Smith Point in Galveston Bay. Shrimp is from the Gulf Coast and fish from Palacios. The restaurant’s consistency is attributed to Tom’s active involvement, longevity of his staff, and his personal attention to customers, a trait that he ensures all emulate.

As patrons enter Tommy’s, their eyes will be immediately drawn to the curvy bar that invites them to sit and enjoy dozens of oysters with creative house cocktail beverages. Oysters are the obvious specialty of the house; they serve 6000 on the half-shell every week. Tommy’s offers these local delicacies in a variety of delicious ways: freshly shucked, Rockefeller, grilled, and more. It is not surprising that regulars flock in for the nightly happy hour ready to feast on these platters of pure deliciousness.

Tommy’s is a full-scale restaurant with well-trained servers who make every visit a true delightful occasion. Large trays of succulent pecan-crusted redfish, tasty grilled wedge salads, and generous bowls of seafood gumbo are just some of the popular dishes that staff encourage guests to try. Don't miss the Black & Blue Tuna, lightly seared sushi grade tuna subtly blackened served on a bed of greens with roasted shallot vinaigrette, topped with tortilla strips plus soy sauce, fresh ginger and wasabi on the side for a dish with true taste explosion.

Over the last couple of years, Tom’s son, Nikolas, joined the restaurant staff and is bringing new ideas as the beverage manager. He graduated from Le Cordon Bleu College of Culinary Arts in Austin where he was in the top of his class, and then excelled at the University of Houston Hilton College of Hotel and Restaurant Management where he earned his next degree. Nikolas brings the same attention and professionalism to the bar that is present in the kitchen. Try one of his creations like Basil #7 with vodka, fresh basil, lime juice, and jalapeño. The basil hits the nose with an earthy fragrance just before the fruity tartness and subtle pepper sting wake up the taste buds.

Tommy’s is an excellent place for all types of events both business and personal, hosting over 300 per year. Staff advise those interested to call weeks in advance to make reservations. Tommy’s hosts rehearsal and wedding dinners, board of directors luncheons, office holiday celebrations, and birthday parties in each of their three private dining rooms year-round. Tommy’s staff will gladly assist you for all event planning, large or small.

Tommy’s is beautifully flooded with natural light from the large windows surrounding the main dining areas. A recent sleek remodel earned the Slovack-Bass Design Firm a Ruby Award from the American Society of Interior

Designers in the category Commercial Small Firm – Hospitality in 2021. The new look adds polish with inventive light fixtures and wall décor. Both the wall divider by the bar and the back wall in one of the private dining areas sport oyster-inspired designs in contemporary styling. Take some time to also study impressive map of the Galveston Bay Oyster Reefs that Tom had a direct hand in designing.

Tom is an active board member of the Galveston Bay Foundation (GFB), the nonprofit organization dedicated to restoration, conservation, and protection. Tom worked with the GFB to create a recycling program for oyster shells to rebuild the reef system in the bay. He works tirelessly on behalf of the Bay to continue its balanced vitality for sea life, coastal wetlands, and local communities.

Tommy’s is a popular place for both regulars and those seeking a destination restaurant. Tommy’s is open Monday – Friday, 11 AM to 10 PM, Saturday 4 PM to 10 PM. It is closed on Sundays. CLEAR LAKE CHAMBER GALA MARKS 60TH ANNIVERSARY

SIXTY YEARS! Yet, for some, it’s seems like just yesterday the Clear Lake Area Chamber was opening for business. Today, it is a bustling business itself, helping Bay Area businesses rise and shine.

On Oct. 7 the membership gathered at South Shore Harbour Resort to celebrate the special anniversary with a Blast to the Past celebration that featured neon decorations, lava lamps and costume attire saluting the Sixties. The event honored 2021-2022 Chairman of the Board Kristi Koncaba of Home Bank, welcomed new Chairman of the Board J.P. Morris with b1BANK, recognized the Chamber leadership and celebrated the membership.

Much to the delight of Richard and Jennifer Simmons, Mike and Traci Furin, Byron and Cindy Hebert, Jill Reason, Marcy Fryday, Myrna Baker, Rebecca Lilly, Rick Rivera, Jason and Melinda Mintz. plus South Shore Harbour Resort execs Roy Green and Bridget Bear, who worked so hard with the chamber members to make it a success.

They had barely had time to say hello when in walked UH-Clear Lake President Dr. Richard Walker, BAHEP President-Elect Brian Freedman and his wife, Erica, Chamber President Cindy DeWease and her husband Jeff DeWease, and Chamber Vice President Shari Sweeney and her husband, Don Sweeney, followed by Home Bank Texas Marketing President Kenny Koncaba with his wife, Chamber Board Chairman Kristi Koncaba, followed by Emmeline Dodd, Pam Ploss, Don and Kimberly O’Connor, Jim and Jane Sweeney, Lisa Holbrook, Bruce Chandler and Wendy Shaw, Paul and Hillary Gramm and Shawn and Susan Bailey.

State Sen. Larry Taylor served as the evening’s emcee. After former Clear Creek ISD Superintendent Dr. Greg Smith swore in the new board members, Bay Area Houston Ballet & Theatre dancers kicked off the program with “Welcome to the Sixties” from Hair Spray.

PRP Entertainment and Jill Rauscher School of Dance got the guests on the dance floor, and later in the evening to party into the night. Underwriters for the event were Community Health Network, Home Bank, UHCL and UTMB Health.

Several elected officials joined the celebration, including State Reps, Dennis Paul and Dr. Greg Bonnen and their wives, Eliza and Kim; Mayors Thom Kolupski of Seabrook, Jon Keeney of Taylor Lake Village and Phil Johnson of Nassau Bay, Nassau Bay City Secretary Sandra Ham and Councilors Ashley Graves, Michelle Weller and James Abbey; plus Councilmen Tom Tollett and Joe Machol of Seabrook, Doug Meisinger of Kemah, Bob Davee of Taylor Lake Village and Clear Creek ISD Trustee Jonathan Cottrell, with their wives and escorts.

For dinner they enjoyed ribeye steaks with fire roasted red pepper sauce, asparagus, and broiled parmesan tomatoes with creamy scalloped potatoes, plus turtle cheesecake and chocolate ganache cake for dessert.

Faced with a fast-growing population and the need to promote the area, the Clear Lake Chamber was formed in 1962 through the merger of the Seabrook and Kemah Chambers of Commerce. At first, it was called the Seabrook-Bay Area Chamber, but with the addition of Kemah, the name was officially changed to the Clear Lake Chamber with the late Jack Campbell – considered the founder –overseeing the merger and setting it on the course to promote tourism and enhance the quality of life in the Bay Area.

Campbell got the 45-member organization on its feet during its inaugural year by adding some 600 new members – 141 of them he signed up himself!

BECAUSE OF COVID, it’s been a long two years since members of the Bay Oaks Women’s Association last held their annual Fall Fashion Show.

So you can image the delight when the long-awaited event opened the evening of Thursday, Oct. 6 at the country club – big smiles everywhere you looked as emcee Nicole Kemprisch opened the style show andsome 13 pretty models showed off fashions from Moxie District 31, The Clothes Horse and Brave Boutique for the crowd of nearly a hundred.

Mammograms save lives. Breast cancer is the second-most common cause of cancer death among women in Texas. That’s why making mammograms part of your annual wellness routine is a great way to be intentional about the preventive screenings that can help keep you well.

“Studies show that mammograms are the ‘gold standard’ when it comes to detecting breast cancer. When we detect cancer earlier, survival rates increase, and that is our ultimate goal,” says Jibi Thomas, MD, breast radiologist affiliated with Memorial Hermann Southeast Hospital.

Dr. Thomas reminds women that annual mammograms are quick and well worth the time. “The actual mammogram exam is virtually painless and only lasts about 10 to 15 minutes. Sometimes, it takes longer to park and come inside than it does to have the screening,” he says.

Who needs a mammogram?

According to the American College of Radiology, women at average risk for breast cancer should have a screening mammogram each year beginning at age 40. If you have an increased risk of breast cancer, like family history, your doctor may recommend starting earlier or using a different timeline.

“Women with a first-degree relative who has had breast cancer, like a mother or sister, usually need to begin screening younger than age 40,” Dr. Thomas says. “Each woman should discuss a screening timeline with her physician, but generally if you have a strong family history, you should have your first screening when you are at least 10 years younger than your first-degree relative was at the time of her diagnosis.”

If you are experiencing new breast symptoms, including lumps, pain, skin changes or nipple discharge, it is important to see your health care provider, even if you are not due for your annual mammogram. “Don’t wait for your next screening time to come around. Call you doctor immediately if you notice changes in your breasts,” says Dr. Thomas.

What is a 3D mammogram?

A 3D mammogram, also called breast tomosynthesis, is an advanced imaging exam that combines several different breast images to create a three-dimensional view of the breast. This process allows physicians to better view the breast tissue and often reduces the need for follow-up imaging. 3D mammography is available at all Memorial Hermann breast care locations.

“The main advantage of a 3D mammogram is that it is able to detect smaller cancerous masses

than a 2D mammogram,” Dr. Thomas says. “A 3D mammogram gives us a much clearer view of the breast tissue, so it is less likely you will have to come back for a follow-up scan. This advanced technology benefits women of all ages and breast densities, so we recommend it for all patients.”

Doyou say grace before a meal? Most of the times I do, sometimes I forget and sometimes I must admit that I can get squeamish about saying grace. How about you?

“Saying Grace” is a common phrase that refers simply to the action of giving thanks before a meal. “Grace” is a Biblical word that simply means, a gift, which is free and shows love and favor toward someone.

When translated as a verb it is often used to refer to an act of giving thanks. It is exemplified in Jesus who showed grace to the whole human race, by giving his life on the cross so that we would be given God’s favor by simply trusting him and what he did for us.

“Saying Grace” is something Jesus did before feeding the five thousand households and last supper when he instituted what Christians call communion. Luke 22:19 says, “Then he took a loaf of bread, and when he had given thanks, he broke it and gave it to them, saying, ‘This is my body, which is given for you. Do this in remembrance of me.’” (New International Version) In fact, the word here “given thanks” is a form of the word “grace.”

In 2017, news articles from the Washington Post and the Christian Post reported that over half of Americans, no matter what background, race, religious orientation or political affiliation, are in the habit of “Saying Grace” before at least a few meals each week.

What does “Saying Grace” do? I believe it causes you to pause. It gives you the opportunity to realize appreciation. It connects you to your high power. Let’s face it, it wasn’t just your credit card that provided the food on the table. Think about the supply chain needed. And who is the originator of it all? Your good and gracious God (Romans 11:36)?. Just as, “Saying Grace” causes you pause and be thankful, “Saying Grace to God,” causes you to pause, and be thankful to The One who created and sustains everything. Now that’s Grace!

What if the challenge of November is, “Saying Grace to God” at and for every meal? Then when we sit down to the big Thanksgiving meal, we will all be in the habit of pausing, giving thanks and connecting with our good and gracious God!

LivingWord Church was able to pour the foundation to their new church home and community center on Friday, October 7th. The night before the members gathered for the Cornerstone Bible Placing Ceremony where six Bibles were placed in each corner of the facility. The Bibles included a Family Story Bible, Children’s Adventure Bible, Student Bible, Hebrew and Greek Bible, and an Outreach Bible.

SpaceX Crew-4 astronauts splash down in Atlantic

NASA’s SpaceX Crew-4 astronauts aboard the Dragon spacecraft safely splashed down Oct. 14 off the coast of Jacksonville, Fla., completing the agency’s fourth commercial crew mission to the International Space Station. The international crew of four spent 170 days in orbit.

NASA astronauts Bob Hines, Kjell Lindgren, and Jessica Watkins and ESA (European Space Agency) astronaut Samantha Cristoforetti returned to Earth in a parachute-assisted splashdown at 4:55 p.m. EDT. Teams aboard SpaceX recovery vessels retrieved the spacecraft and astronauts. After returning to shore, all astronauts will fly to NASA’s Johnson Space Center in Houston. Cristoforetti then will board a plane to Europe.

“Welcome home Crew-4! This international crew has spent nearly six months on the International Space Station conducting science for the benefit of all. Their work aboard the orbiting laboratory will help prepare future explorers for future space missions,” said NASA Administrator Bill Nelson. “Working and living on the space station is the opportunity of a lifetime, but it also requires these explorers to make sacrifices, especially time away from loved ones. Kjell, Bob, Jessica and Samantha, thank you for your contributions over the past six months to science, innovation, and discovery!"

The Crew-4 mission launched at 3:52 a.m. EDT April 27 on a Falcon 9 rocket from NASA’s Kennedy Space Center in Florida. Less than 16 hours later, Dragon docked to the Harmony module’s space-facing port. The astronauts undocked from the same port at 12:05 p.m. Friday, to begin the trip home. Hines, Lindgren, Watkins, and Cristoforetti traveled 72,168,935 miles during their mission, spent 170 days aboard the space station, and completed 2,720 orbits around Earth. Lindgren has logged 311 days in space over his two flights, and with the completion of their flight today, Cristoforetti has logged 369 days in space on her two flights, making her second on the all-time list for most days in space by a woman. The Crew-4 mission was the first spaceflight for Hines and Watkins.

Throughout their mission, the Crew-4 astronauts contributed to a host of science and maintenance activities and technology demonstrations. Cristoforetti completed two spacewalks with Roscosmos cosmonaut Oleg Artemyev to perform station maintenance and upgrades.

GALE’S FEED STORE: Fresh from the Farm

Rightwhere N. Meyer Road dead ends into E. Meyer in Seabrook is a large metal building behind a chain link fence. By the road is a metal mailbox that says Gale's Feed Store. Since 1987, Charles Leslie and Mary Gale have run a feed store in Seabrook, moving to this location in 1990. This land was owned by Leslie’s father, a shrimper who bought three acres for $1,800 in the 1940’s, and built this building in July 1961 as a feed store. East Meyer didn’t even go through to Highway 146 back then. A dairy was nearby on the land that is now Seabrook Intermediate School. Behind the Gale property was the Bodacher Family Farm that stretched from Searidge to Todville Road and even had a landing strip for their biplane.

While Leslie was born in Seabrook, Mary was born in Tennessee but grew up in Galveston. In September 1961, Hurricane Carla, one of the strongest hurricanes to hit the United States, caused Mary’s family to move to League City. Mary began attending Clear Creek High School where she met Leslie, her lifelong love. They eventually married. Leslie continued in the family’s shrimping business and Mary ran the Seabrook Post Office. They also had two sons and, in time, eight grandchildren and one great grandchild. Because Leslie’s father started his feed store before Seabrook was incorporated, he was allowed to have a sign on the building. The family hid out in the building during Hurricane Carla which ripped the sign off outside. When they tried to replace the sign sometime later, Seabrook had officially become a city and those in charge at the time refused to let them get a new one. The Gales still do not have a sign but the current city administration is working to help them with this decades old problem.

When Leslie left the shrimping business in 1980, the Gales bought property near Rusk, Texas, raising cattle for a while and always hay. They still transport hay from the Rusk farm, just like they did when they first opened their own feed store on Old 146 (Bayport) before coming back to the current location in 1990. They have a shed near the back of the property where they store different kinds of hay: horse hay, cattle hay, and Halloween hay. Horse hay has to be very pure and clean so that the horses do not get sick from it. Cows, on the other hand, can eat any kind of hay because of their multiple stomachs; it’s often called “junk hay.” Halloween hay comes in attractive bundles that people use for their fall decorations.

In addition to hay, the Gales have other kind of feed including premium dog food, deer corn, dry mix for ducks, chicken feed, and horse feed. These bags are stacked in neat rows just inside the building’s doors and can be easily hauled out to waiting vehicles. They also periodically have deer feeders. Longtime customer John Rihn, pictured with the Gales, recalls how he used to buy fee for his Longhorn cattle when he still had them. "I also love buying the pickled quail eggs and other freshly canned goods here," John stated.

Upon pulling on to the Gale property, customers will notice stacks of cured firewood, also from Rusk: pecan, hickory, white oak, and red oak. They begin cutting in February in preparation for the next year because it takes so long to dry it out once it is split so that it will properly burn. The Gales perform all their tasks with the same attention to detail to provide quality products for their customers. Rick Clapp, owner of Bay Group Media, remarked, "The Gales have preserved something from the past that is here in present."

If you go inside the front room of the store, you will notice two things. First, it is air conditioned. Second, the shelves have various items for sale beyond the animal feed. Near Jacksonville, Texas, Leslie picks up fresh produce every Saturday. The bounty varies by week depending on what the farms were producing. On the next set of shelves, are hand-canned vegetables of various kinds such as okra or pickles. As we approach holiday baking season, the Gales are stocking up on pecans from Bastrop. They shell and freeze them for easier use.

The Gales sell locally sourced honey. The lighter color is honey from the Spring; the darker one is from the Fall. The Texas Beekeepers Association recommends buying honey near your home because it contains local pollens and may help build up immunity to common allergies as well as supporting the agricultural community.

The Gales invite you to stop on by the next time you are in the neighborhood. They might not have exactly what you are looking for on this trip, but they replenish weekly and appreciate visitors. The items on the shelves are fun to look at and the Gales are very fun to talk to, even if it’s just about Seabrook days gone by. They live near the feed store so don’t worry about making them late getting home.

Gale’s Feed Store is open Monday – Thursday, 8 AM to 6 PM, Friday, 8 AM to 4 PM, and Sunday, 1 PM to 6 PM. They close early on Fridays so that Leslie can travel up to Rusk and East Texas to pick up fresh produce, hay, and firewood on Saturday to start selling back at the feed store on Sundays. Gale’s Feed Store is located at 1102 East Meyer Road in Seabrook.

Grading Galveston Bay

Remember your days back in grade school? Every couple of months, or even monthly, you would receive a report card. I would apprehensively open it before showing the report card to my parents. One side of the card would be for academics, the other for how well you followed directions, interactions with classmates, and your overall behavior. Every year the Galveston Bay Foundation gives a report on the overall health over our bay system. The grade it much like report cards of old, A through F grading scale. Now this report is just from their perspective. In the article, I'll give a report from what I see myself, and from other anglers that fish the waters of Galveston bay. Better than that, I'll break it down by the bays.

West Galveston Bay receives a B minus from my observation. Over the past few years, this bay has been the place to fish for speckled trout and redfish. While some anglers, mostly guides, have had a good summer of catching, the average angler has struggled for the most part. Now mind you, most of the good catches have come from those anglers using live croakers. As far as habitat, this bay is thriving because there's been so many environmental projects that protected the marshes and shorelines along with planting of sea grass.

East Galveston Bay receives a C grade. I fished this bay a few times in late Spring and early Summer, and while I caught fish, many were undersized speckled trout. Some guides did okay in the Summer by fishing live bait over the reefs in the Summer, but the bite didn't last

long. Hurricane Harvey destroyed the bay’s oyster reefs, along with recent floods, due to the freshwater. Finally, the bay is receiving some environmental projects, in hopes of restoring the reefs. It may take a few years to see if closing Rollover was a good idea or bad. Most of those folks in the oyster business are in agreement this will be beneficial to the bay's overall health.

Trinity Bay receives a C minus. Although it's hard to access this, the largest bay in the complex, speckled trout catches have rebounded this year. During the Spring, anglers did have some good catches from the East shoreline. Those fish vacated the area as we moved into the Summer months. The fish caught this Summer mostly came from the upper shell reefs, near the Houston Ship channel. The true test for this bay system will happen this Fall as the weather cools. For the first time in many years, the bay is salty. Will it remain that way? At the time of this writing, it appears so, as long as we can avoid any type of tropical weather. It would be nice to be able to fish the North end of this bay system, to truly give an accurate

assessment of the fishery. Environmentally, not much has been done to protect the habitat. It's really a shame to witness the loss of habitat caused by commerce.

Now for Galveston Bay, I'll have to give it an overall C. A lot of people including myself caught speckled trout. Fish were in their usual areas; shorelines in the Spring and during the Summer, out along structure and oyster reefs near the Houston Ship channel. Was it lights out, super-fast and furious? No, but it was consistent. Winds played a factor early in the Summer, but once they settled, the catching was good. Now this part of the bay will be faced with the dredging of the Houston Ship Channel. Twenty or so years ago, the channel was dredged and it changed the bay system, by removing live oyster reef and caused silt to cover other live reefs. Something environmental groups don't want to talk about. Organization like the CCA and Galveston Bay Foundation need to step up and address this issue. Galveston Bay has lost so much habitat, it's time for something to be done, so future generations can enjoy the fishery.

ABPW supports local shelters with white linen drive

The Association of Business & Professional Women (ABPW) recently donated $9,000 worth of shelter supplies to the Bridge Over Troubled Waters (BOTW) and the Bay Area Turning Point (BATP) including mattresses, pillows, sheet sets and towels. Linens and mattresses account for a large line item in the budget for each of the shelters.

It is estimated that in prior years ABPW has donated $150,000 in supplies to the two local shelters.

BOTW and BATP offer support, provide safety and prevent domestic and sexual violence. They are a visible force and leaders in the community as advocates against the occurrence and effects of domestic violence

and sexual assault.

The Bridge Over Troubled Waters is currently working to complete the final $2.3 million of a $7.5 million capital campaign to build a large children’s center. This will allow them to house all services under one roof and provide increased services, stability and support for traumatized children.

Turmeric Dosage: How Much Should You Take?

Many studies indicate that chronic, low grade inflammation is a key factor behind chronic conditions. Chronic inflammation can cause joints to swell and become painful.
