Another Holiday Season is upon us, and it begs the question, especially as we get older (and hopefully wiser), “Where does the time go?” Our kids get bigger, friendships more distant, family parties less frequent. We are all so busy with the day-to-day norm. As we navigate through this journey of life, the holiday season is a perfect excuse to make the time to reflect on what really is important in this big world. The answer is always the same every generation: Family, True Friendships and Giving Back. After all, in the end it’s all you get to leave behind—your love and your legacy for those your life touched. As Denise Busley, owner of The Grand Traverse Pie Company, said when she quoted the Beatles to me a few years ago, “The love you take is equal to the love you make.”
So this issue is dedicated to creating and celebrating the Wonder of Practical Magic, the magic we are all capable of achieving and sharing with those important to us. For Holiday Magic, it’s a collection of our area’s fun family activities, starting with the basics of where to find a turkey farm all the way to Santa lighting the Christmas tree, and family and friends belting out “hallelujah” along with a joyful choir. You may discover new events that will become treasured traditions for years to come. Paper Magic is your golden opportunity to embrace a local organization that changes people’s lives every day. (Big statement, I know, but they truly do.) Just with a recycled greeting card from Paperworks Studio. I literally felt forever changed the day I toured their facility, guided by Brian Lewis who has been asking me to feature them in the magazine for over a year now to bring awareness to the inspiring work they do. (I felt shamed I hadn’t made time sooner.) Quite frankly, the dedication and real purpose they create for special needs individuals is nothing short of a miracle. And I hope when you read it you will be greatly touched, as I was. You CAN support them by sending their cards in the mail with a whole lotta love. You do it anyway, right?

Makeover Magic is what we entitled the home feature, as David and Lisa Nicolaou made Monumental Changes to their family home. When your space isn’t working, do you move or fix it? After much anguish and time spent trying to find a perfect new home, they came to the realization that they loved where they lived. Both are in the medical field, and as Dave put it, they performed Major Surgery on their home. The Low Down When Jim Smolak and Matt Cozzens first appeared in our magazine, they shared that they were opening this cool place in town, a Tap Bar, named 7 Monks. We got a sneak peek inside before it became the Now Hottest Bar in town and the beloved meeting place of many (many) Happy Hours. Now reeling from that success, they are at it again! They are expanding and busy working on a November opening for a new “IT” place they are naming The Low Bar. It’s aptly named because it will inhabit 1,500 square feet of basement space right next door and debut as a 1930s speakeasy-inspired lounge. Think bars from the era of prohibition and bootlegging, many were actually owned by the mafia. So get EST 2013 ready to strike a Greta Garbo pose and have your martini hand at the ready. Level the cones so they stand up straight when placed Upside down.
Coat the inside with a thin layer of melted chocolate. (protect the cone from getting soggy once you put the ice cream in) Fill each cone with softened ice cream, return them to the freezer.
When ice cream has hardened, cover the outside of each cone by piping melted white chocolate in vertical rows from bottom to top. Set on wax paper. Keep these frozen until you’re ready to serve them. november /december 2013 | BAY LIFE NORTH

secret recipe: Maple Bourbon Salmon with Candied Walnut Fingerling Potatoes Ingredients 2 6oz Salmon Filets 2 Tbsp. Salad Oil 1 cup Real Maple Syrup 1/3 cup Whole Grain Mustard 2 Tbsp. Bourbon 2 Tbsp. Butter 8-12 Fingerling Potatoes 1/2 tsp. Sugar 1/8 cup Candied Walnuts, chopped Salt and Pepper For the Brine 1 gal water ¾ cup kosher salt ½ cup brown sugar 4 bay leaves 1 tbsp whole peppercorns

Directions, Serves 2 Heat oven to 350 degrees. Toss fingerlings in 1 Tbsp. oil, salt, and pepper. Spread evenly on a sheet tray and bake for 15 minutes. In a separate bowl, mix together syrup, mustard, bourbon, and a pinch of salt
Aerie Sous Chef Anie Driscoll "I can't believe I get to come work here — I feel like I get to play every day." One of the few female chefs leading restaurants in the Traverse City area, she brings an energetic, innovative approach to creating the distinctive dishes on Aerie’s menu.
Meanwhile, heat 1 Tbsp. oil in medium size sauté pan on high heat. Season salmon filets with salt and pepper and sear flesh side down until golden brown. Flip salmon in pan and drain any excess oil. Add maple syrup mixture to the pan with 1 Tbsp. butter while still over a high flame. Allow butter to melt completely. When butter is completely melted and bubbles in the maple syrup appear to be even throughout the pan, transfer the sauté pan to the oven for 6 to 8 minutes or until the glaze reduces to a caramel consistency. While salmon is in the oven, toss baked fingerling potatoes in 1 Tbsp. butter, 1/2 tsp. sugar, candied walnuts, and a pinch of salt. Return to oven for 4 minutes. Plate salmon on top of the fingerling potatoes and spoon excess glaze over the top.

LBD History So why is the LBD such an icon? Long before Audrey Hepburn’s Givenchy launched a thousand copycats from “Breakfast at Tiffany’s.” In 1926 Gabrielle “Coco” Chanel published a picture of a short, simple black dress in Vogue. It was calf-length, straight, and decorated only by a few diagonal lines. Vogue called it “Chanel’s Ford.” Like the Model T, the little black dress was simple and accessible for women of all social classes. Vogue also said that the LBD would become “a sort of uniform for all women of taste.”

On Walloon Lake On a sweltering July day, the new hip restaurant Barrel Back opened in Walloon Lake. The wait was two hours and the service was a tad slow. It was worth it, though, because the food was Outstanding, the ambiance undeniably cool and the view overlooking Walloon Lake from the second story open Marina was priceless, of course! When we stumbled upon this new hotspot we were a little bummed that we hadn’t been able to fit it in for a summer issue. But after talking to General Manager Bryan Banfield, we were thrilled to hear they would be open All Year, unlike some of our favorite destination restaurants that close their front doors right after the visitors depart
and leave us poor locals with fewer destination choices the whole long, long winter. We troopers that call the frigid North home deserve some bright spots to look forward to, don’t you think? Barrel Back is for sure one of them, I am happy to report. (They are closed on Mondays, though! Make a note!)

Just a few months old, Barrel Back is already bringing in rave reviews, thanks to meticulous planning from owner Matt Borisch. He put experienced key people in place to thrive, from the management team to the gifted Executive Chef DJ Flynn. And from the ground up, he worked with interior designers every step of the way for the full WOW effect. Matt, a first-time restaurateur, had an “out-of-the-box” list that makes the place uniquely different and worth a trip. One aspect of this is the seriously cool garage doors that overlook the lake and can be opened fully on a gorgeous day. Don’t worry: They have industrial heaters strategically placed above all three, the same type found in a stadium above the bleachers at a hockey game, ensuring it’s toasty on a cold day! And for extra warmth and ambiance, there is a metal-hooded killer gas fireplace smack bang in the middle. Rich wooden walls complete the other side, transforming the entire room into a modern ski chalet atmosphere.

Which leads us to the next “Matt Must Have,” a Wood-Fired Oven. DJ, the chef, took this idea one step further, sharing his input for a Wood-Fired Grill and turning it up an extra notch by adding a rotisserie smoker! (Now that’s comfort food!) As Bryan conveys to us, “Because of this, our food tastes like nothing else I can compare anywhere. The food is all so delicious it tastes like it’s cooked over a campfire.” The woodfired oven creates the perfect pizzas, of course, but shake up the norm and try the Slow-Roasted Smoked Pork Pizza! “We use a special dough recipe that sets up the night before to rise, so it has a thicker crust and a different flavor,” says Bryan. The Smoked Chicken “Wonder” Wings are hailed as “amazing,” so if you consider yourself an expert, these alone make the drive worth it.

If you have to label the food (it seems everyone always asks?), Barrel Back’s would be considered Simple American Food. They only serve Fresh Fish, and the menu is printed daily to reflect seasonal fare. Most of your tried-and-true favorites stay on the menu, though. Tantalizing must-try dishes include the Beer-Battered Whitefish Sandwich with Sweet Potato Fries, The Chopped Salad (like nothing you’ve ever had!), and Smoked Beef Brisket. They even have a vegetarian menu and a kids menu that actually offer a little variety! Try the Slow Roasted Smoked Pork Pizza.

The bar is also a stunner. As you walk in, it’s the huge centerpiece of the main room, framed on one side with huge comfy booths and graced by at least 30 enlarged vintage postcards of Walloon Lake Memorabilia on the wall above. These are a subtle reminder of the lake’s rich history. Ernest Hemmingway himself used to summer here as a boy. Large glass globe fixtures hang on each corner, looking like a cross between funky industrial meets Victorian gas lights, and high above on a shelf is an eclectic element of old bottles in varied colors and sizes. An array of beers is on tap, and the restaurant has even crafted its own namesake beer, Barrel Back Signature IPA, with Petoskey Brewing Company. Not a beer lover? How about Some Sex on Tap? No, that’s not a typo/ Local winery M. Lawrence’s popular sparkling rose that has become the “it” brand. (Can’t imagine why.) Makes sense when you consider that an opened bottle’s bubbles fade, but when the wine is hooked up to a tap with a barrel, every pour is fresh and bubbly. Such brilliant thinking, and it goes down nicely served in a fabulous fluted glass. The “Hot Toddy” was recently dreamed up by bartender Melissa, and with colder nights creeping in, this sounds just perfect! Oh, and they just added a Happy Hour special, too. Every day from 4 p.m. to 6 p.m., you can enjoy $2 drafts and special appetizers! Before the cabin fever sets in, make a date to dine at Barrel Back. It’s a great excuse for a little road trip. We forgot to tell you the origin of the name Barrel Back. The restaurant is named for those iconic, curved barrel backs of the classic wooden boats that cruised Walloon Lake in the 1930s, ‘40s and ‘50s, and still do today. Paperworks Studio cards quite literally help change the future and write new chapters of life for the special needs and disadvantaged people who hand-make these monumental cards with Magical Powers. Each individual has their own path of struggles, obstacles and adversity. Some are affected by Autism, Down syndrome, and Cerebral Palsy, to name a few. They work hard every day to overcome the daily challenges they face, and in doing so, they create something beautiful. But more importantly, this gives them a Purpose in Life, a place to be where they are needed and share a safe haven with coworkers all on the same mission, reaching life goals. Quite simply put: A whole lot of Love is jam-packed into every exquisitely created card, especially when you also count the amazing people who have made a career of managing this group of artists. Their passion for Paperworks and their commitment to the people they help are truly Remarkable.

As we head into the Holiday season, it’s quite fitting to liken the comparison of touring the Paperworks facility to visiting the North Pole and catching a secret peek inside Santa’s Workshop. (Although the radio was playing the Bee Gees, not “Jingle Bells.”) Director Brian Lewis proudly led us room to room where we watched in awe, now privy to the coveted made from scratch Magic Recipe that creates the one-of-a-kind recycled paper. Spoiler alert! It even contains Super Sparkle! In the first room, we met Dan, recently promoted to Assistant Team Leader. His task is to take all the shredded denims, wools, cottons and linens and “beat them to a pulp” with the help of a big machine, of course. He also adds the dye and shows us his blue Smurf hands. But his big accomplishment is actually that he has turned his life around with a job he feels blessed to have. “I enjoy working with people and making a difference. I feel proud with a sense of accomplishment,” he tells us. So he should, as it wasn’t long ago he called the Goodwill Inn home. They didn’t think he would be able to handle just a few days of work, but he has now been flourishing at Paperworks for three years. Audrey is one of many dedicated workers in the next room. She looks like a prospector mining for Gold, only it’s the Blue Rush. She starts to make a wet paper. Once it’s in place, it gets hung to dry, literally changing the Dan, who was recently promoted to Assistant Team Leader

form of a fiber.Audrey and her coworkers average around 500 sheets a day, enough paper for 1000 cards. Their personal best and record set is 677 sheets in a day. Once the paper is dry, its next journey is to Quality Control. Here it meets Nick, and it has to pass a weight requirement on the scale that sits on his desk. Nick’s smiling face immediately gives him away. “I love that they let me do quality control,” he says. He spends three days a week here and cherishes every minute of it. Nick is in a wheelchair, but we are so enamored of his illuminating smile and huge personality we don’t really notice it. Behind Nick is the Bustling Busy Workshop. Many Hands Make Light Work, it is said, and that happens here. Tables are full of the magical cards being made at every stage. There are endless piles of card and paper in all the colors of the rainbow, with scissors and glue sticks at the ready. Fingers are prepping, creasing, folding and counting. People are working away with full concentration and keeping their eyes on the prize. Among the helpers are Jen, who is a diehard University of Michigan

fan and has been here for three years. We also met Marley who shared with us, “I’m learning really great work skills.” Front and center on Marley’s station is a treasured smiling photograph of him with a friend. It’s a gentle reminder to focus on, helping him to Stay Calm and Relax when things get a little overwhelming. (Hello, I think we can all relate to that!) Marley is proud to be learning really great work skills.

High above them is a reminder of how astounding their success is becoming. A long line of 2013 Christmas cards drapes along the wall, 15 different designs to be exact. Leaves of Love I was inspired to share this story of making a Thankful Tree, starring my friend Greta. She made one a few years ago with her kids and family. No one really took her seriously, but they humored her! The next year her father sadly passed, and now his handwritten thankful leaf is one of her greatest personal treasures. It really is the little things in life that mean a lot! So grab a few big sticks, cut out some leaves with your kids and go create your very own family Thankful Tree. Gives a whole new meaning to turning over a new leaf!

Here’s a great new tradition to start with your kids! Buy some cute Santa sacks and have your kids lovingly say farewell to 10 old toys to fill them up. (These should be toys in good shape that other kids would actually want!) Leave the sacks under the tree on Christmas Eve. Santa takes them back to the North Pole to fix up and give to needy kids, and he leaves new toys in their place. (You can put new, unwrapped toys in the same sack and save on wrapping and trash pickup Christmas morning.) It’s a great way to teach your kids that Christmas is about giving rather than receiving. Of course, Santa Mom takes the old toys to recycle at local charity drop-offs!

Big Arms to Hug Are you familiar with the recent story of Davion that spread like wildfire across social media channels? Davion was a foster youth who had been waiting most of his life for an adoptive family. His desperation led him to visit a local church to plead for someone to adopt him. "I'll take anyone," Davion said. "Old or young, dad or mom, black, white, purple. I don't care. And I would be really appreciative. The best I could be." His story tugged at the nation's heartstrings and had scores of people sharing his story. His social worker reports that more than 10,000 families have inquired about adopting Davion. The point? There are many like Davion out there in our local community. Foster children, more than anyone, need a support system as they become adults. The outcomes for foster children who age out without finding a family are not good. And yet, so many of them just need support, love and the promise of a family. “Nature created that, I didn’t.” Memory stones that form a flowing river within the floor tiles at Korner Gem’s Store.
Kevin Gauthier’s dedication to Rock Hunting began at around age 9. Lucky to be born and raised in Northern Michigan, his hunts were not just limited to vacations, like many collectors. Kevin had an endless array of vast beaches to pick from. He was partial to Petoskey Stones, especially those pretty blue ones (Leland Blue). He stowed away the finest of his pickings as colossal treasure troves in his room. And the piles upon piles of shoeboxes stashed to the brim drove his Mom nuts! She threatened, “Do something with these or get rid of them.”

In the early 1980s, Kevin became the youngest member of the Grand Traverse Rock & Mineral Club. The forever friendships he forged there are immortalized in colorful hues of Memory Stones that portray a river, now beautifully inlaid on the actual floor of the store he dreamed about for many years. Here’s how he went from a shoebox to a successful store named Korner Gem, located in Traverse City.

Kevin’s love of rocks got thrown back into the water for a while, as he attended Michigan State and became part of the corporate world in Chicago. But he didn’t let go of his Rock Solid Dream. Even then, he was dabbling in jewelry making and driving home on the weekends to take part in art shows and let his creativity soar. With every extra paycheck or bonus, he saved up and invested in new rock collections, glass showcases, etc., stashing them away into storage and keeping his dream of owning his own store someday alive.

When someday came, it happened as Destiny, for sure. His corporation offered him a huge promotion to travel internationally, doubling his salary. “Thanks But No Thanks,” said Kevin. “I’m going to move home to Traverse City and open a Rock Shop!” It took a couple of locations to get the right spot, but the Korner Gem of today has been there for almost 10 years. Kevin’s idea of a perfect “Rock Shop” is one that welcomes kids to come in and chose a treasure for 50 cents and invites Big Kids to come in and choose a treasure of fine jewelry worth thousands. All ages come into the store and all can still be in AWE. As Kevin says, “Our jewelry profession supports our Rock Habit.” From floor to ceiling, the store is a veritable Pirates Plunder of gold and silver with shiny jewels that bedazzle from every nook and cranny and wondrous stones that were handpicked from all over the world. The breathtaking one-of-a-kind pendants, rings and necklaces in all the spectacular colors of nature beckon and taunt you to “try me on” from their home below, elegantly draped on rocks in the mesmerizing showcases.

What’s does the future hold? “I feel like I’m just starting,” Kevin says to me with big wide eyes and a boyish grin. With a trusted team in place he can now pursue those treasure troves still hidden, and he can’t wait to burn off some creative energy with those stones he has been collecting for more than 30 years from all over the globe. Large meals, treats needing to be baked and just the right spot to set up the hors d’oeuvres become our priority. There are 2 key items that need to be taken into consideration when designing a space for the entertainer.

First and foremost we need counter space. Whether it is for prepping vegetables for that 5 course meal for 20, baking dozens of Christmas cookies, setting up a buffet for casual entertaining or a staging area outside of the kitchen, counter space is one of the most vital parts of a home designed to entertain guests. double the size of your kitchen. Although Butler’s Pantries are certainly a Kitchen Envy of mine. Creatively, we can design spaces that in our everyday world function with a different idea in mind. Laundry rooms can become butler’s pantries. A Sofa Table that has drop leaves, can become a buffet or bar area. Think inside and outside of the kitchen to create spaces that allow you to stage items for easy serving when the guest arrive. Secondly, storage for serving ware is just as important. Tray dividers aren’t just for cookie sheets, but can be used to store serving platters. Auxiliary cabinetry for additional glass
ware, table linens, silverware and such can be designed into the dining or living room areas. Purchase and set up sturdy shelving in the lower level to house some of these items, but be sure to keep them accessible (not boxed away) so when the time comes, it is easy to get to them. So the holidays get crazy, but with some forward thinking and a good design team, they can be tackled with ease, knowing you planned ahead to using alternate spaces for storage and staging. So, bake some cookies, invite family and friends over for a cocktail party and relax enjoying their company for the holidays.

Still, the nagging question remained: Was it a wise investment to renovate and renew knowing that if they poured all their available money into the house, they almost certainly would never, as far as the market goes, get it back? However, here’s the bigger picture of what you can never get back, the stuff that money can’t buy: your family’s memories like all the firsts that happened in your home, your kids’ forever childhood home, birthdays, holidays, parties, summer days by the lake, cozy fires in winter, triumphs, proms, graduations, celebrations and weddings all centered around harmony in your home. The main realization was they had to decide if this would be their retirement home.
After much anguish, the answer became an easy yes, and the almost complete overhaul of their home is a miraculous transformation. Lisa is a registered nurse and Dave a doctor, so they know that major surgery relies on dedicated, talented professionals who keep a keen eye on every meticulous detail. Almost by accident, they found the perfect contractor to fix all that was ailing their house in Kris Arnold of KA Construction. He was contracted to put a new front door on their house, but Lisa and Dave were so blown away by how much of a perfectionist he was, they asked if he did remodels. “Well, I build houses, so I guess I could remodel one,” Kris answered. And so it began. The project started in October 2012 and lasted all the way through May 2013. Lisa and Dave were in a unique situation. They were able to watch the remodel from afar by renting a summer house just five doors down. “It was invaluable, as things would change so much,” recalls Dave. “But because we were right there, it allowed us to participate in Real Time.” By being nearby, Lisa and Dave could give timely and concrete opinions as the remodeling progressed, sometimes on an hour-by-hour basis. “It would be freezing cold with holes in the floor, and we would take over a couple of beers,” Dave says. “It was surreal after a while that it was our house.” 70

“Kris had some fantastic ideas and 85 percent of any design changes came from him,” Dave says. “The dormer was all him—we thought at first we would do sky lights. The built-in bookcase was also totally random. It used to be a closet and because that was the main entrance, we just naturally thought we would keep it. But we had added on a mudroom and closets on the side, taking up 10 feet of the garage, and he reminded us this was now our formal entrance, so we didn’t need a closet there.” “Another huge help was we could reach him at all times. His communication was incredible,” he emphasizes. And it’s a good thing, too, as the best laid plans always have Surprises (not good ones usually). Lisa and Dave came across some big surprises like lake setbacks with limited footprints to honor. They also had to leave the exterior walls alone, but these were all challenges Kris took in stride. Dave was very impressed at what a superb listener he was.

With construction nearing completion and the impending Summer Rental deadline looming (no pressure, I’m sure), the fun project got underway. “Operation Decorate” commenced, or what Kris and the construction guys jokingly nicknamed “Lisa, the UPS Queen.” Boxes started to arrive daily, and everything inside is new. It’s a completely new house. They are not finished altogether, though. “We wanted to live in the house and see what the day-to-day utilization of the house would be. We made a couple of realizations that if you already have a preconceived notion of what that space should be before you live in it, that may not be right,” Dave says. The Before and After images certainly tell a transformation story of their own. They are dazzlingly dramatic, and you may not recognize this as the same house. Of course, Kris didn’t do it alone—it takes a village!—and a long list of local subcontractors contributed to his success of a beautiful job well done. It was a Major Surgery they performed, but Lisa, Dave and Kris cured the home of all its ailments in the process.
Now they’re ready for a lifetime of family memories, and you never put a price tag on that.

Old Settlers Rest Room Building Then: Circa 1915 The Old Settlers Rest Room Building was located in the middle of Cass Street just north of Front Street, where today’s Christmas tree stands. Originally it was the “Bureau of Information” building for the Traverse City Board of Trade. It then became a gathering spot for the older residents of Traverse City. On the porch is William S. Anderson, a pioneer wagon manufacturer who later was an undertaker. He was instrumental in collection and preserving many historical relics and photographs of the Grand Traverse area. The Old Settlers Building was eventually moved to 206 Union Street and later moved to Thirlby Field to be used as a warming hut.

Steadfast Winter Warrior When winter comes calling, our local wildlife can do little about it. Instead, they use their hereditary gifts, strong will, and pure cunning to survive and thrive through the harsh winter months. One morning, in the woods near my office, I sat and watched in awe as a vibrant constellation of songbirds flittered and fluttered through an otherwise nude winter landscape. They were just carrying on their daily struggle to survive, and paid me no attention as I hunkered down in the cold alongside them, slowly sipping coffee for a brief rush of warmth and feeling in my cheeks.
I was watching this cardinal for nearly an hour, darting here and there and gathering seeds, all the while singing merrily to himself; or to me, Iâ&#x20AC;&#x2122;m not sure which. Eventually, he perched in the tamarack tree in front of me, and as he did, the wind picked up and snow started coming in sideways. He hopped down a few branches and turned towards me to brace himself against the wind. He fluffed out his feathers to in an attempt to block the chill. After just a moment, he turned and left to continue his season-long struggle.
