With all that planning, we have been overwhelmed by the amazing response and huge success- WOWZA! For eight years BayLife Magazine has graced coffee tables, showcasing locals, and highlighting a genuine love for our town. This magazine you hold in your hands is truly our baby. As the publishers and owners, it is our family business that we have nurtured since its birth in 2012. We envisioned it to be relevant, engaging and beautiful inside and out, just like you, our hometown locals. We are elated that BayLife Magazine has permanently claimed its place. So much so, just last week Tom Ranville, Senior VP of Independent Bank called it, The People Magazine of Traverse City! With the wind in our sails, spectacular things are in store, and 2020 is already on the books to be a milestone here at Award-Winning BayLife Magazine. As we head into our eighth year, due to popular demand, we are thrilled to announce this is the first of eight magazines we will publish this year. Growing from our old format of just six bi-monthly issues. Along with the help of our wonderful advertisers, we will be giving the community two more gorgeous issues.

It’s official, BayLife Magazine rocks! Our plan was to GO BIG, and we did, we even won a nation-wide print award. Last year we took a leap of faith knowing our dream magazine was bigger, better, and was yearning to be directly mailed to your doorstep. We tirelessly planned, plotted, designed, created, and delivered. We also made the bold decision to devote our magazine exclusively to Traverse City; We all live here, work here, play here, and give back here. The BayLife team considers it an honor to portray Traverse City community pride in the beautiful pages of our magazine.

It was quite a concept back in 2012 to launch a stunning, high-quality magazine for FREE! With each issue, we work hard to earn your respect and print 10,000 copies as a gift to the community. We thank each one of our advertisers who continue to make that possible and could not do it without their support. In late 2018, we made massive investments in an effort to make Baylife Magazine one-of-a-kind, with extra sizzle, but still free for the community. Now we are the only Traverse City publication of its kind, delivered to your door, and digitally available to read free online. Magazines are also available to be picked up complimentary at any of our advertisers and other locations throughout the community. On the pages of each issue, you can always count on recognizing a familiar smiling face because BayLife Magazine is the community. We make a strong effort to engage, interact, and make our readers feel at home. What led you to be a CPA? “It was either this or

a long-haul trucker. Seriously! My best friend recommended an Accounting I class in high school and my decision was made. I love the complexity and the story that numbers can tell.” “Be organized. I cannot give advice if you are not organized. When it comes to tax strategies, it is not a one size fits all. But the key item I push is to maximize retirement savings. You can get a tax deduction and those funds are still yours.” What advice do you give your clients?

You have a passion for Mt. Holiday, how did that come about? “We are a skiing family. We just

returned from a ski trip in Austria and it was An Amazing Experience! Skiing is one of the few multi-generational sports. It gets kids outside and away from video games.” Do you have any words of wisdom you live by?

“Not sure about three, but one I constantly think about is Passionate. I have a passion for the work I do, making positive change for my clients.” “I have the utmost respect for World War II veterans. Their generation is what made the United Stated what it is today.” Who is your hero?

Are you a TC Native? If not, what was your

journey here? “Not. Grew up in Milford (Greater Detroit). My college sweetheart (and now wife) grew up in Eastport. So, when I had the opportunity to purchase a CPA firm in TC, it was a no brainer.” What’s one thing that would surprise us about you? “My personality is not that of a typical

pencil pusher! I recently gave a keynote tax planning presentation. And an attendee called me a CPA Unicorn. I was flattered.” What’s one thing you’ve checked off your bucket list? “My wife surprised me for my 30th

birthday and took me to Pebble Beach to play golf.” 18

Think local and shop small at West Bay Handmade, a curated artisan boutique that showcases local artists. Owners Cat O’Connor and Brad Richardson work with Northern Michigan makers to act as a platform in selling their handcrafted goods. The store carries a wide variety of items ranging from home decor to pottery, clothing, and jewelry. Richardson, a bladesmith by trade (knife maker!), has run his own company for over five years, Timberlee Tool & Trade. O’Connor has a background in retail management and focuses on the visual aspect of the store and working with new makers. Together, they own Heartlander Supply, a brand of home decor items, screen printed shirts, bags, and apothecary goods, which are now sold at their store. “When we moved to the area, we had a hard time finding outlets to sell our products. After about a year of emailing, handwritten letters and stopping store-to-store, we decided to open up our own space,” explains Cat. “It was a big decision but a great one. We started out really small in a basement shop and each month we expanded our space and kept outgrowing it. We live in such a creative and artistic area and have had a great response from the community.” Other brands sold in the store include: Lake Soap Co., Ignite Creative Studio pottery, jewelry by Sweet Mettle and Great Lakes Goddess, and Ruthie Z Art.

This winter marks Hop Lot Brewing Co.’s third year of constructing outdoor igloos in their four seasons beer garden. There are now 12 heated igloos to enjoy, with room for up to eight individuals in each dome. “It all started with an idea to add additional seating to our taproom space,” says co-owner Drew Lutke, with owners Steve and Sarah Lutke. “We felt we had the perfect setting for the igloos and hoped they would add to the unique Up North experience while visiting Hop Lot.” Guests are encouraged to sample the brewery’s craft beer, wine and cider while enjoying the winter ambiance and can fill up on hearty snacks from the kitchen. The igloos are free to reserve for one hour and can be booked online through their website.

The egg-based menu was inspired by the eating habits she and her husband adopted. “My husband and I are weekday vegetarians so we eat meat on the weekends but during the week we eat vegetables and a lot of eggs. So, we love breakfast. We wanted something simple and classic.” Elsen also hired Maria Leggettas as head chef. Leggett went to high school with Elsen and graduated from the Great Lakes Culinary Institute at Northwestern Michigan College. “We wanted the space to be casual, come as you are. We love that our two-seater table tops are turning into a community of locals talking to each other,” Elsen says smiling. This dynamic duo is ready to start your day right. • 1 oz. melted butter • 1Tbsp. fresh rosemary chopped • 1 Tbsp. fresh thyme chopped • 1 tsp. baking powder • 1 egg • 1 cup of flour • salt and pepper to taste

INSTRUCTIONS Wash and quarter the potatoes. Peel and cut the parsnips to a similar size. Place them both in a pot with enough water to cover them and bring to a boil. You don’t want to cook the root vegetables until they are done all the way. They should still be somewhat firm. Strain them in a colander. Meanwhile, chop the herbs and green onions and put in a bowl with the egg, flour, baking powder, and butter. Place the stillwarm potatoes and parsnips in the bowl and mash. We’re not making mashed potatoes here. The mix should be chunky. Thick. You should still see pieces of potato and pieces of parsnip in there. There should be no signs of liquid at all and if after mixing and mashing there is, add some more flour. Season to taste. Scoop the mix into the waffle maker and cook for the required time. Should make 6-8 waffles. Hold the waffles in the oven at 200 degrees.

INGREDIENTS • ½ lb unsalted butter

• 1 lb dried elbow macaroni

• ½ lb unbleached flour

• ½ cup sundried tomatoes

• 1 large white onion, julienned

• 1 cup spinach (packed and fresh or thawed from frozen)

• 2 qt whole milk • 1 large acorn squash • ½ lb Colby jack cheese, grated • ½ lb Muenster cheese, grated • ½ lb White American cheese, grated

• ¼ tsp nutmeg • salt and pepper For spiced pepitas • 1⁄2 lb pepitas • 2 T oil • 2 tsp Cajun seasoning

INSTRUCTIONS In a large pot, bring to a boil one gallon of water and a pinch of salt. Add pasta and cook until al dente. Drain and set aside. Pre-heat oven to 375F. Cut squash in half and scoop out seeds. Place squash skin side up in a casserole dish and fill with half an inch of water. Bake for about 30 minutes or until fork goes through with ease. Scoop out contents and set aside. To prepare pepitas, mix ingredients together and bake on a cookie sheet for 5-7 minutes until slightly crunchy. Set aside. In a saucepan, melt butter and cook onions until transparent. Add flour, cooking about 3-4 minutes for a blonde roux. Add milk slowly while stirring constantly until slightly thickened. Add prepared acorn squash and nutmeg. Gradually add grated cheeses and continue to stir until cheeses are fully melted. Using a handheld stick blender, blend until smooth. Add cooked pasta, sundried tomatoes and spinach and mix until incorporated. If desired, you may wish to add a touch more milk to loosen. Season with salt and pepper, to taste. Dish up mac and top with spiced pepitas and enjoy!

How did you get into winemaking? After a stint as a high school teacher for four years in Illinois followed by two years in Abu Dhabi, United Arab Emirates at a private American School, I started working with Larry and also worked at a winemaking facility in Marlborough, New Zealand. You are celebrating your 10th year in business, congratulations! How did Great Lakes Potato Chips Co. get its start? We looked back and saw that a lot of the regional snack companies were no longer around or had been bought by larger companies. We knew we had a great resource for potatoes, Michigan is the #1 grower of chipping potatoes. There is a strong movement to buy locally made products throughout the Great Lakes region. Can you tell me about your family’s passion for business? My father, Ed Girrbach, worked for Merrill Lynch in Detroit for 30 years. We worked together (along with my mom) to start and run Pangea’s Pizza in downtown Traverse City for 7 years. I owned it for 10 and sold it in 2016. Since then, my father has begun to enjoy more time in the Sunny State. My little ones are still playing baseball, hockey, and dance. As a company, we have been fortunate enough to have a spectacular team that feels like family and that has been the biggest part of our success. What makes your company special? We work hard to let people know just how great our team and the teams that support us are including the potato farms we buy from, the distribution partners that sell our product, and the retail partners that carry our brand in their stores. At the end of the day, we are proud of our staff and the hard work that they do. I often say that we are not the smartest and there are probably easier ways to do some of the things, but we are the most caring team when it comes to the way we treat and help each other. What is the secret to making Great Lakes Potato Chips taste so great? We leave the skin on and cook the chips a little different than a traditional kettle potato chips. Where are your potato chips sold? Throughout the Great Lakes Region (MI, OH, IL, IN WI, MN) as well as Canada and some other limited states. What does the future hold for your brand? We are currently starting the construction process on a new building for storage/bathrooms/ and office space. ‘Northern Hero’ focuses on highlighting inspiring individuals in our community. We seek to find people who give back to the community in selfless ways. Jim Rowlett is the chairman of Read To Me, an initiative in the Grand Traverse region that promotes parental reading in the early stages of childhood. Jim’s objective is to educate new parents on the benefits of reading to their children from birth, and the positive effect that it has on early brain development. Statistically, the earlier that a child is read to, the more likely they will be ready to start kindergarten and be prepared for each subsequent grade level. According to Read To Me, a large portion of 3rd graders are not reading critically at the 3rd grade level. Additionally, roughly 40% of young children in the Grand Traverse region are not ready for kindergarten. Jim believes the following are actions that parents can take to encourage the necessary level of literacy within their children:

✔ As expecting parents, start reading to your unborn baby each day. ✔ As a new parent, read roughly 15 minutes per day to your child. ✔ Continue to read with your child through the early grades.

Read To Me has partnered with a number of local and nationally recognized reading initiatives, which include: Born To Read, Dolly Parton Imagination Library, ‘1000 Books Before School’ via The Traverse Area District Library, Great Start to Quality Northwest Resource Center, Great Start Collaborative, and The Children’s Book Festival. as on our treasured ski hills. With the young and old, big and small, all embracing the cold outdoors, for fun, frolic, and friendship. Our winter ski families are core to surviving the long season, with a little fun rivalry thrown in the mix. Which snowy mountain is the best King of the Hills? Hickory Hills on the West side and Mt. Holiday on the East. It is mostly territorial based on where you grew up or now live, we choose to remain neutral, and need to tell you a very important story. Over the last few years, Preserve Hickory was established to raise millions of dollars needed to update Hickory Hills. Tireless dedicated volunteers and businesses, fueled by treasured memories, dipped into their hearts and wallets to make a difference. With the work now completed, a bigger and better Hickory Hills will now ensure its beloved place for generations to come.

Today, Mt. Holiday still exists on donations and revenue alone, with no federal funding. Today, Mt. Holiday, the historic 71-year-old hill, desperately needs our help. It needs an outpouring of the same show of love and commitment to survive. In 2020, instead of just praying for SNOW, they too pray for funds and donations. Not to just exist as is, but to re-build and re-imagine Mt. Holiday for the next 50 years. Don’t let it disappear. The people of Traverse City have done it once, breathing new life into Hickory Hills, and we can do it again with Mt. Holiday.

It’s hard to believe but Mt. Holiday began as part of a prison labor program. The year was 1949, and a group of local businessmen obtained permission to construct a ski run. In their prison attire, these wards of the state literally helped clear the way for generations to come. In 1985, it was purchased by Warren and Sue Brosch. After Warren’s death in 1999, Sue placed the area up for sale. With fear that the cherished mountain would be developed and lost forever, a team of passionate volunteers formed the non-profit corporation Mt. Holiday Inc. to raise funds to purchase it, setting the lofty goal of $1.5 million. These instrumental leaders Tom Hall and Denny Hoxsie took charge of the grassroots task of raising the money. Tin cans sat on top of business counters throughout the town, and the community rose to the occasion. Today, Mt. Holiday still exists on donations and revenue alone, with no federal funding. It is one of only a handful of true nonprofit ski resorts left in the country. And because of this, there is a genuine sense of community, ownership, and pride.

Over the Years Mt. Holiday is largely dependent on Mother Nature alone, which is unpredictable at best. In earlier years, the hill was only a 90-day operation. Up and running from mid-December to March, it would actually sit empty for the rest of the year. But since it’s perched in the middle of Mt. Holiday development packed with families craving recreation, it made sense to plan for expansion. So, over the years they have raised money to install a new kitchen, revamp the lodge, add mountain biking trails, and more recently, a zip line. Why Now? “The underground equipment is old and outdated. To the point where it was dangerous,” says Nate Pupel, Operations Manager. “I’ve grown up on this hill and worked every position, I know what’s good and bad. The snowmaking pits were all underground and made of wood, you have to scoop out the frozen dirt to get to the water valves to turn them on. It takes days to make a small pile of machine made snow. The chairlifts are from the ‘60s. The vintage equipment we have is like owning a collectible car, you can’t get parts for it and doesn’t run efficiently.” Ronald G. Harris, President of the Mt. Holiday Board, and ski dad explains, “All the years have taken its toll on our hill, and while it has served us well, our snowmaking infrastructure has outlived its lifecycle. Making seasonal repairs to our existing equipment, is no longer economically feasible. In addition, it inhibits the ability to expand our services to make Mt. Holiday the best it can be.”


What is needed With this realization that they cannot rely on Mother Nature alone to open ski hills and tube hills to maximize the season, the board reached out to the world-wide leader in snow making, TechnoAlpine. The company is custom designing the Next Generation Snow Making System for Mt. Holiday. This past fall digging had already begun to overhaul the existing infrastructure of the hill. The big picture plans have to wait until summer; new water lines, electrical lines, well head, pumping station, snow gun turrets/stations, and the supporting equipment of each. “The dream is that we come in and turn a switch. Once the system is all in place it will all be automated.” In order to open this winter, they have been working on their Must Do List. It has included waterlines, electric, pedestals and hydrants were also added. “It’s all updated and safe,” says Nate. The Mt. Holiday staff have been rolling up their sleeves to do some major work too. Sprucing up the place on a very limited budget. “Most of the wood came from collected palettes, so it was just the labor,” laughs Nate.

How to get there The Wish List Overhaul has a $5 million price tag. The board launched their Capital Campaign, to re-imagine Mt. Holiday in October. They have hired a professional grant writer/fundraiser to maximize every opportunity. Chances are you are a friend and supporter of Mt. drive down the wooded, dirt road that leads to the Royal Stag Lodge, sights of eagles, deer, and birds are commonplace. Park at the cabin and guests can hear the Au Sable River babbling over rocks and branches. Walk into any of the three cabins and feel immediately at home and ready to relax. “We have a passion for rivers and for nature,” says Krystin Saputo, who owns the Royal Stag Properties in Grayling with her husband, Will Saputo.

Open the door to the Royal

Stag Lodge, which is the “main” cabin, and it is easy to imagine large family reunions, big summer picnics, or a cozy ski getaway with friends. Guests can choose to rent the Royal Stag Lodge alone or rent it with its neighboring sister cabins. This wide plank knotty pine, tongue and groove lodge was built in the 1940s and is available to rent yearround. “Anyone of these cabins we would bring our family and we want guests to feel the same way,” Will explains. The Royal Stag Lodge property is comprised of three cabins and 35 acres of land on a private peninsula on the Au Sable River. Will and Krystin bought the Grayling property in 2010. An avid hunter and fisherman, Will had seen its unique setting while fishing on the river and jumped at the opportunity to own it. The cabins sit on a man-made, carved out peninsula.

A neighboring cabin, called Uncle Tom’s Property, was a late 1800s loggers’ cabin, and the other sister cabin, Pine Bend Cottage, was built in the 1950s. The Saputos are the first family in 65 years to own all three cabins. The couple also owns another cabin on the Au Sable River, as well as two cabins on the Boardman River in Traverse City.

The first room guests see

as they enter the Royal Stag Lodge is the kitchen, which is complete with a small pine wood dining table and wooden benches. Food is often at the forefront of big gatherings, so renters have the choice of creating their own meals or requesting an onsite chef. Follow delicious smells of the kitchen into the living room and immediately see the towering, 60-foot double-sided stone fireplace with an updated wooden mantel. Inspiring quotes are carved on both sides of the mantel. The quote that can be read from the unique wooden dining table with 12 handcrafted wooden chairs is, “The ornaments of our house are the friends who frequent it.” “I always wanted fireside dining,” Will says. “We want guests to feel at home here, and to truly relax and have fun.”

The Saputo family are the first in over 65 years to own all 3 cabins.

Next to the fireside dining area are builtin white pine cabinets from many years ago that hold a lot of history. Once called Squirrel Bend, part of the cabin’s décor is black and white photos that entertain joyful memories of families and friends gathering for birthdays, holidays, reunions, among other celebrations. “A big part of what we liked about the property when we bought it was its history,” Krystin says. “We want to keep its history – it’s important to us.”

fireplace to the large white pine exposed beams in the ceiling, and vacationers are sure to notice the 5-foot-tall natural elk antler chandeliers. “When antlers shed, they become hollow, which allows for wiring to pass through,” Will explains. The chandeliers are certainly not the only antlers in the cabin. In fact, there are at least 10 of Will’s deer heads on display in the living area, as well as more in the bedrooms. The living area also has other animals on display, such as a buffalo and a moose that Will has brought back from all over the world.

of the Royal Stag Lodge and there is a balcony with an updated metal branch pattern railing, as well as two bedrooms with a Jack and Jill bathroom. Two other bedrooms are on the main level. Each bedroom has an “up north” cabin feel, with buffalo check patterns and forest themes. A game animal sits in each bedroom, including an arctic musk ox, Eurasian red deer, an axis, and a Sitka deer. Above the bedrooms, visitors may notice a sign which represents a memory from a place Will traveled to on previous hunting or fishing trips. “Each name encompasses my favorite part of the trip,” he explains.

On the opposite side of the fireplace, there are five picture windows that showcase the Au Sable River, only 15 feet away. “Sitting here, you are immersed in nature,” says Krystin. “It almost feels as if you’re outdoors. We’ve seen river otters and mink while sitting here and enjoying the view. We also love watching as people float by enjoying themselves on the river in the summer.”

The Au Sable River is known for its fishing, and fishermen are a large demographic of guests that stay at the Royal Stag Lodge, in its six bedrooms and 3 ½ bathrooms. “We also get large groups of families, and we even had a wedding here,” says Krystin. a three-season screened-in room is used to enjoy meals or simply to relax and listen to the sounds of the river. The room seats up to 24 people. Take a step outside there is, of course, the river to enjoy. According to Krystin, “there’s something about rivers we just love. This area has a lot to offer with its lakes, but we love rivers. They’re seriously just magical.” Since the property sits on a peninsula, it has its own lazy river, or “trout slide,” as

the owners like to call it. Guests can take advantage of guided fly-fishing courses, as well as canoes and kayaks. There are other amenities that can be enjoyed as well, including a game room with foosball, ping pong, and onsite yoga and massages. One thing that sets the Royal Stag Properties apart from others is that Will and Krystin believe it is very important to allow pets. “They are part of your family,” Krystin says. “We don’t want you to leave them behind. We want you to bring them here and enjoy it.”

Located in Grayling, which is in central northern Michigan, the property is only a short trip from Detroit, and also close to getaways such as Mackinac Island and Traverse City.
