EDITORS NOTE Here we are again with another gorgeous edition of Bay Lifestyle Magazine to help kick off the winter gloom a little easier. This issue will definitely ease any winter woes with some really interesting articles, contemplative tit bits, as always amazing homewares to entice us as well as simply some great stories to tell. Mary from Mammoth Health helps ease our confusion with the overabundant vitamin market and clearly states the most effective vitamins for common ailments. Her knowledge in vitamins and all things natural health is amazing and as with all of her articles, this is a must read. We have a new contributor for our Parenting section who with both Primary and Secondary teaching under his belt, is a plethora of knowledge when it comes to kids and their education. In this issue, he examines learning developmental issues in children and what to look out for as well as the importance long term of seeking help in the short term. A perfect winter destination would have to be without doubt the landscape of New Zealand. There are so many glorious parts of this country to explore and enjoy, as well as to simply stand back in complete awe off! Our writer: Deb Sansom has just returned from a family frolic there and highlights the very best New Zealand has to offer. We all love music and it doesn’t get much better than standing around, wine in hand and disappearing into the musical talents of a highly gifted musician, it really is quite spellbinding. Well Geelong is literally swirling with just that and offers some great venues to go and enjoy the very best local talent on offer. In addition, they seem to ooze in a great atmosphere, great food offerings and the perfect excuse to round up your favourite people and head out. We all absolutely love warm weather, glorious beaches and a slower pace. To have the money to travel, buy a home, purchase an investment property, a new car or have a healthy balance in superannuation, how wonderful that would be. Well it’s certainly possible. Careful planning and goal setting and some dedication thrown in, will see you achieve your financial ambitions whatever they may be. And there is certainly no better time than now to start. THE ANCHORESS by Robyn Cadwallader - Historical Fiction This captivating novel by debut author Robyn Cadwallader created a huge buzz in literary circles prior to release and certainly lives up to the hype. Set in twelfth century England it is the story of Sarah, who after the death of her sister and aged only seventeen, decides that she will commit herself to the life of an anchoress. In medieval times, anchoresses were holy women who chose to dedicate their lives to God and were sealed into a tiny stone cell measuring seven paces by nine built at the side of a cathedral to live out their days in prayerful contemplation and reflection. The historical detail is superb and beautifully recreated. One of the most interesting aspects to note is that the deprivation of the senses experienced by Sarah in her cell, only serves to heighten her awareness of every sound, smell and taste and the sensual nature of the writing makes for an absorbing reading experience. This is a story that will stay with its readers long after the final pages are turned.

BAD BEHAVIOUR by Rebecca Starford - Memoir This debut memoir brings the issue of school bullying sharply into focus as the author ventures back to a dark and confronting time in her teenage years. As a scholarship student at a prestigious private school, Rebecca Starford headed off on a year-long stay at a remote school camp. The intention was for students to spend time away from electronic devices and other distractions and to focus on personal growth and development. However some of the girls Rebecca shared her accommodation with were more focussed on power games and the victimisation and harassment of those they perceived as weak, than making the most of the opportunity. The most compelling aspect of this memoir is the author’s determination to hold a mirror up to her own behaviour, as she is in turn both tormented and a tormentor. It is a searingly honest account of real life “mean girls” and is a gripping, if not slightly uncomfortable read.

ONE LIFE: MY MOTHER'S STORY by Kate Grenville - Biography After her mother’s death, acclaimed Australian writer Kate Grenville discovered scraps and fragments of paper, tape recordings and unfinished journals, that when pieced together told the story of her mother Nance, whose life at first glance may not have appeared exceptional but when told through the superbly crafted words of her daughter, is revealed as far from ordinary. Despite a challenging childhood, Nance nonetheless went on to qualify as a pharmacist which was an unusual achievement for a woman of her era. But it is the engaging exploration of her mother’s battle to juggle her roles as a wife and mother while trying to forge a career during times of great change that will resonate with many on this same journey today.

HIS OTHER HOUSE by Sarah Armstrong - Fiction Sarah Armstrong’s first novel, Salt Rain was short listed for a number of awards including the Miles Franklin and in this, her second offering, she has not faltered in presenting a tale of intrigue and moral complexity. Brisbane doctor, Quinn Davidson has taken up the offer of two days a week at a practice in the hinterland a few hour’s drive from the home he shares with his wife Marianna. The couple have been trying to conceive and have several failed attempts at IVF which has strained their relationship, so this seems a solution to give them some space. Circumstances bring Quinn into contact with Rachel, the daughter of one of his patients and the attraction is immediate and powerful. But before he can make up his mind about his marriage, life changing events take over and the second half of this absorbing tale raises questions about whether secrets should be kept or it is better to know the truth?

hen you walk into a health food store the array of vitamins can be confronting, confusing and overwhelming in their promises? Do you actually need them, and what effective dosage is needed? In addition, we often hear that if you eat well you shouldn’t need supplements. However with the amount of chemicals we are exposed to, both in our foods and in our environment coupled with the pace of our lifestyle and the stress we are under, supplements are essential health boosters that support our diet, fill the nutritional gaps and rebalance our body. Whether that be from underactive hormones, trouble sleeping, pain and inflammation, stress, colds and flu, anxiety, lowered mood or lack of energy and vitality. Eating whole, seasonal, preferably organic food is highly recommended however so too is the need of a regular intake of high quality supplements. While they won’t make up for a bad diet, they will support your body’s cells to work optimally so that you can enjoy high energy and vitality.

2. Magnesium Magnesium is an essential mineral that feeds our muscles, nourishes our nervous system and is needed for energy production. Australian soils are low in minerals and therefore we often don’t get enough magnesium from our food. Muscle cramps are often the first sign that we are deficient in magnesium. such as love, joy, pleasure, happiness and fun. Giving ourselves permission to indulge in these kinds of states are what keep us healthy. Stress, anxiety, worry and fear – they are what make us sick. And suppressing negative feelings such as these only causes the body to start producing toxins. Overwhelming evidence now supports the fact that our mental health directly correlates our physical health. Hence why the mind reprogramming was an essential part of my recovery from the cervical issue. But as part of my healing, I also started using an ancient tool for vaginal health called a Jade Egg.

We are aware of the side effects of not brushing our teeth. Abandon the toothbrush long enough and your teeth are likely to rot and fall out. Well a woman’s sexual organs are no different. Autopsies done on nuns showed that their sexual organs had completely rotted out due to non-use. Scarily enough, this is actually really common.

Four months after my diagnosis with the cervical issues thanks to my Jade Egg practice and my mental clearings, I was given a clean bill of health. The doctor claiming it had been a ‘miracle’. This just shows what is possible when we have the right tools and techniques at our disposal.

44% of women will experience some degree of prolapsed sexual organs in their lifetime. One third of women will have a hysterectomy by the time they’re 60-years-old. A woman’s body is designed to remain fertile right up until menopause. Yet 12% of all women of childbearing age are infertile, with one in three women over 35, unable to conceive.

Internal Health

The stats really are shocking and they do get worse than that. Every ten hours a woman in Australia dies of ovarian cancer. One in 70 women will develop ovarian cancer in their lifetime, with only 20% of these women surviving longer than five years. When it comes to cervical cancer – women have a one in 155 chance of becoming a statistic. It is imperative to be aware of the dangers and start taking the precautionary steps necessary to prevent future degeneration or heal any existing degeneration, because there is nothing worse than being diagnosed with a life-threatening illness.

The Jade Egg has been around for 5000 years; Queens and concubines in ancient China would use it to stay youthful and keep their sexual organs as tight and resilient as a young unmarried lady. Many who mastered the practice reported very good health and high energy levels. The reason most people have never heard of the Jade Egg practice, is because it was a well-guarded secret saved for the Royal Palace. To begin the practice you learn how to activate your vaginal muscles to sip the egg inside, and once there, you do certain exercises that help tone the pelvic floor while bringing fresh blood to the area to help it heal of physical illness, as well as draw out any trauma stored in the vaginal tissue.

Mind over Matter I was put in this situation when I was 31-years-old. I returned an abnormal Pap smear result and was diagnosed as being the stage before cancer. Being a high-risk case, the gynecologist wanted to rush me into surgery and perform an operation that could have left me unable to conceive. Given I wanted to take a more natural approach to my healing I said ‘No’, and started applying the techniques I teach my clients to overcome all sorts of ailments from depression to serious physical illnesses. I did a lot mind re-programming, because when we have a thought it triggers a chemical response in the body. If that thought is positive, it will send happy chemicals into the body to make it healthy, if that thought is negative it will sicken the body. So when we fall ill, it may at times be our bodies way of communicating to us – trying to get our attention – to say ‘Hey, I’ve got some negative thinking patterns that are making me act and behave in unhealthy ways.’ Now these negative thinking patterns – that are responsible for how happy and healthy we are – are installed in us at a very young age. From the moment we are conceived up until the age of seven we are programmed, much like a computer, on how to think, act and behave. These beliefs and thoughts we take on about ourselves can cause us to live in a very fear-driven way, taking us away from our natural state of health and thus, possibly opening us up to mental and physical illnesses. There have been numerous studies in scientific papers that draw a direct link between good health and exalted feelings WINTER 2015

LIFESTYLE & BALANCE Most women are storing some sort of trauma in the vagina; whether it be from sexual abuse, abortion, miscarriage, a painful labor or emotionally or physically wounding sexual experiences. This can cause all sorts of side effects including illness of the sexual organs as I mentioned, as well as problems like thrush and incontinence. Incontinence effects up to 60% of women post birth. Women who have had a baby often lose their vaginal elasticity and suffer damaged nerve endings as well. Yet just a couple of weeks of using the egg – 2 to 3 times a week – and a woman will start to naturally heal from these afflictions. Some women have trouble self-lubricating for intercourse because the glands that run along the vaginal canal are not working properly. Yet women who use the Jade Egg regularly, have noted an increase in self-lubrication.

An Effective Alternative "Can’t I just do Kegel’s exercises to look after my sexual organs?", is a question often asked. In truth, the answer is ‘No’. New mothers are usually recommended to do a series of Kegel exercises in order to restore pelvic floor health after giving birth. Yet research shows up to 50% of women do these exercises incorrectly, which can cause scarring. The other problem with Kegels is that there is no resistance. We all know that if we want to build our bicep muscles, we need to lift weight. Simply moving it won’t tone the area, and the same goes with the vagina.

T

he other day my friend Chris and I were talking about our respective children. It was a conversation that is probably repeated daily everywhere. “What are your kids up to? And how are they going at school?”

“My daughter just loves reading. I feel like she’s learning new words everyday.” Then, with a noticeable pause, Chris looked up and asked me “Do you think that my boy should see someone, like a specialist, because he’s not…” cue the appropriate missed developmental milestone. My friend went on to say that his son is not making appropriate eye contact, doesn’t seem to converse and play well with other children, then gets easily frustrated and angry when asked to do his school work. Forty years ago, my mother had one of these conversations with her friend who was a Speech Therapist. Her friend was very brave and caring. What happened next, changed my life, although some of the changes happened very slowly… My mum is a very vocal and boisterous individual. As a young mother she was surprised by my extremely shy nature, anxiety when separating away from her at kindergarten and unwillingness to speak barely a sentence. And when I did speak, my grammar and words were broken, disjointed and stuttering. Mum’s friend referred me to a local primary school that offered speech therapy. My difficulties pronouncing “s” was fixed within weeks. I recall saying 'Swanston Street Station' over and over with a slight whistle with my tongue. The lisp was gone for good, thanks to early intervention. I’m thankful to my mum, as she spotted the signs, sought advice and acted early. Fast forward to current day and a good deal of my job is speaking with parents on a daily basis. These are very frank conversations about the tough times mums, dads and carers

22 WINTER 2015

are experiencing with their children. During my educational career, I have noticed that initially concerning behaviours are often linked with real learning difficulties. In other words, a child who is constantly playing-up may actually be presenting a symptom of something bigger; that maybe there is an underlying undiagnosed reason that he or she is frustrated with trying to do school work, or can’t understand basic social skills in order to play happily with other kids at school. Learning difficulties range greatly, from simple learning delays that are sometimes rectified by time or changes in a child’s learning environment, to more serious issues requiring clinical intervention. These greater learning difficulties may be classified as learning disabilities requiring specialist diagnostic intervention. So where does a parent start? Your safest place to begin is talking with your child’s kindergarten or school teacher. Teachers are very willing to make time to discuss your child’s learning outcomes. Ask your child’s teacher to show you through some of your child’s work. The teacher should be able to present to you what the normal range of achievement and development looks like for your child’s age. The teacher may also show you development graphs or data obtained formally in the classroom. If the data shows your child is outside the range of what is normal in multiple bands of development, this is a sign to act. Things also to discuss, may include whether your child finds it difficult to read or frequently misspells common words; has messy handwriting; lacks confidence with schoolwork; finds it challenging to write down their ideas that they can easily talk about; or forgets tasks that are assigned as an ordered list such as steps in solving maths questions. Lower than normal literacy and numeracy skills can many times be rectified if assessment and assistance are offered early. Early intervention is the key.

Some Signs and Symptoms Here are some signs and symptoms both you and the teacher can look out for and discuss in detail: • A noticeable dislike of reading, confusion over similar letters and words, or lack of fluency when reading or writing. • Difficulty spelling common words, disassociation of letters with appropriate sounds, or reversal of words or letters. • Trouble understanding numbers, symbols and maths concepts, mixing lines and columns of numbers, and troubles when attempting verbal number problems. • Many physical developmental difficulties and impairments affect learning too, such as poor short term auditory memory, issues following sequencing, low vision perception or visual decoding skills, poor fine motor coordination, attention deficit, hyper activity and impaired speech fluency. • Poor mental health and psychological issues also vary widely, evident with mood swings and emotional instability, anxiety, low capacity for change and resiliency, poor sense of self and poor social skills. • Behavioural issues are often tied to many of the above difficulties, such as a noticeable low threshold for experiencing frustration, extreme and unregulated emotional changes, resorting to using physical force or violence, short concentration spans and hyperactivity.

OUR OFFSPRING The teacher will be able to refer your child on to school-based specialists or student support services. Such specialists exist in state schools regionally. There are social workers, speech therapists, and child psychologists who will visit schools and work directly with children. They are experts at providing advice and therapy, establishing tailored education plans, behaviour management plans and treatment plans. They work towards informing and empowering parents as the primary carer and educator. They may also refer-on to external agencies to be enrolled in a special program. You may also be advised to book a specialist appointment with a paediatrician, child psychologist, counsellor or therapist, who can make an assessment and design a treatment plan for your child. It is confronting to be told that your child may have a learning difficulty. A parent’s mind immediately may anxiously race through all the possibilities, so great care and support must be given to a worried parent. For a parent pursuing a diagnosis, they may already have experienced many emotional months of google searches, specialist appointments, testing, and sometimes dead-ends. Deciding to be a persistent parent is the key. Follow your intuition. Get informed. Become your child’s best advocate. An empowered, well-informed and diligent parent is a child’s greatest support. n size and in spirit, New Zealand is big. Some travel guides give the impression that this is a country you can swallow in one large chunk, but to enjoy its true glory, New Zealand is better enjoyed in smaller bite size pieces.

New Zealand is green in winter for a reason, for you’re assured of rain, crisp blue skies and snowballs. So wrap up warm, you’re in for one heck of a ride!

North Island If you’re starting in the North Island, then the obvious choice is Auckland, or the ‘City of 100 Villages’, which is home to nearly a third of the population, a superb harbour and a great social scene. Highlights include the view from Mt Eden, the Harbour Bridge, and the fantastic Tamaki Hikoi Maori Walk, which weaves traditional stories and songs into its three-hour duration. You’re never far from the outdoors in New Zealand. If you love the idea of the wind in your hair and one-on-one family time, you could bundle up the kids from one of Auckland’s many campervan providers and head North to the ancient forests of Waipoua and Te Urewera or the coastal resorts in the Bay of Islands. Campervans are no longer the cheapest travel option, but they do allow for a loose itinerary and freedom that works in well with the general New Zealand vibe. For extra luxury, escape Auckland on the ferry to the pint-sized perfection of Waihiki Island. There you will find Lavender Hill, a tantalising Tuscan accommodation treat, where you can choose from a suite or the farmhouse complete with restored oak doors and open fires. Waihiki is renowned for its estate-grown wines, but the Island Brewery is also great fun (Dark Ale goes down a treat with a dozen oysters). For about $60 a day you can take the sweatless sightseeing option of an electric bike from Ecycles NZ, or at Matiatia Wharf you can paddle the day away in a kayak while taking in the splendour of the birdlife and occasional dolphin. Up North, NZ’s coolest winter hotspot is Rotorua. As well as the geothermal wonders, the super adventurous can get frothy with white water rafting on the Kaituna River. For those who like their water less rapid, the Polynesian Spa is suitably indulgent, and one not to miss is the overnight experience at the Tamaki Māori Village, where Māori culture comes alive in a natural rainforest environment. For fast-paced fun, include a visit to the Skyline Luge and take off downhill on your luge through twists and turns through the beautiful Redwood forest.

South Island Even if you’re not a climber or a hiker, the mountainous delights of the South Island are soaringly satisfying. Mount Cook is New Zealand’s highest peak and was Edmund Hilary’s training ground for Everest. A good place to base yourself is at Aoraki/Mt Cook Village, which offers everything from backpacker lodges and camp sites to luxury hotels. About 6hrs South West of Mount Cook is Milford Sound - the star of the country’s iconic Fiordland. If you crave childlike awe, here is a good place to rediscover it. Stay in one of the chalets at the Milford Sound Lodge, take a scenic cruise, go black coral diving and be astounded by the vertical mountain peaks proudly poking up from the dark waters. Another highlight down South is Stewart Island. With only birds and kiwis for company, this is the smallest of New Zealand’s three main islands and can only be reached by ferry (from Bluff) or by flight from Invercargill. The walking tracks are lovely and suitable for all levels of fitness. We took a charming twilight cruise with Bravo Kiwi Spotting and managed to spot some of the elusive natives in their natural environment. Is that New Zealand covered? Of course not, for it is vast, inspiring and made for exploring. The North and the South islands offer wildly different and exciting experiences as every pocket of the country has a local flavour that is deliciously different to the next. Whether you choose to bike it, hike it, kayak it or walk it, this unique country is remote, rugged and remarkable.

T

ienko is a local Geelong business borne out of the concept and structure of a tepee, a love of all things colour dipped and on trend, and quite simply a towel rack option in the bathroom, which at the time of its inception, was sought after. It also originated from an undeniably creative mind, a clear vision, an inate style and a desire to come up with something that hadn’t been done before. Lauren, the creator of the Tienko brand is the originator of a concept now proudly stocked both locally and nationwide. It is also one that even though still a work in progress, is being

considered for a hotel opening later in the year in Far North Queensland. When you look at what Lauren refers to as “an accessory stand”, there is no doubt the future is bright for this new local business. Lauren has been heading towards an interior driven career for many years without being even remotely aware of that fact. She grew up with a mother who was an interior designer and was literally surrounded by an eclectic creativity; they even spent weekends trawling through display homes to source out interior inspiration. She spent her down time, as we would perhaps shop or enjoy a lunch out, designing and

redesigning her interior space. This she called merely an interest, her career at that time being highly driven in the fast paced Human Resources world which she literally lived and breathed. But that was only to be in the short term! Tienko is Scandinavian inspired and minimalist designed, this reflecting the brand moving forward as well as a strong desire to represent uniqueness in product style. Lauren's current accessory stand collection represents both, mainstream and current on-trend colour palettes. These are categorized as Neons, Pastels and the much sought after Metallics range. Interestingly, her top three colours include white, copper and aqua which has also proved very popular.

July-August will mark the next exciting step for the Tienko brand as Lauren unveils Tienko textured and style based accessory stands, which will really expand the look and direction of her current range. Lauren's plans for the brand don’t stop here as she hopes to get to Scandinavia in the short term and with that expand her range with the view to concentrating on kid’s interior style. The name “Tienko”, literally is a play on words with “Tepee” again providing great inspiration. So after throwing a few words and sounds together, the name appeared and after googling its definition which happened to be a small town in Africa, the name stayed firm. Like the product it represents,


ABODE the name portrays; minimalism, style and a contemporary feel. Lauren not only runs this business as well as introducing it through retail stores, she also makes her products. They are made from quality, durable materials and her Metallic Range is a three day exercise from start to finish. They are then safely packed for posting and the process continues... The Tienko Path Along with Laurens innate sense of style, she is a dedicated seeker of all things blog based in homewares. In particular, the Scandinavian and European blogs have filled her senses with some great ideas moving forward with missjettle and misskyreeloves being two of many that she regularly seeks out. Locally, Lauren's favourite stores are Ampersand, 3oh2 Willows, Den Supply Co and Quirk. She also loves Frankie Say Relax with a takeout coffee from King of the Castle being a favoured past-time. Pakington Street is a definite local favourite when it comes to sourcing creativity.

For most people, Tienko would be more than a full time commitment, but Lauren shares her world with her much adored toddler. Another full time role within itself, but with her incredible drive, infectious personality and a refreshingly positive attitude, she takes it all in her stride. Asked about her five year plan and she’s in year one and things are heading along very nicely indeed. Tienko phase 2 is about to unveil with a new slant on her already inspiring collection. Product expansion will continue to follow with an aim to be a great online product presence supported by a highly creative team. This is a must do in Lauren's business plan along with a firm desire to always provide a great product and an even greater service to customers. 2016 is bringing with it a planned trip to a New York Trade Fair for new and upcoming decorator items, so the five year plan may be evolving faster than initially thought. Asked whether a Tienko store might prevail down the track and the answer is; never say 'never'. Tienko is a brand with a very bright future in all things home and with Lauren at the helm, along with creativity thickly cemented in every corner of her world, this no doubt exciting journey has only just begun. inter seems to be the time that many of us spend endless hours in the gym, running around the Barwon River or sweating it out at Bootcamps on those frosty mornings, when we would prefer to be tucked up in bed! This effort is an ongoing commitment to stay fit and healthy, so how can we reward ourselves without undoing all this hard work? It’s quite simple really… Bang Fitness Adventures, owned by local Matt Jolley is the perfect holiday combination of paradise, exercise and fun! Taking groups of up to 16 people on fitness adventures in Sanur, Bali is Matt’s specialty. Coming from his own personal training business of 12 years and over 20 years in the sporting industry, Matt’s wealth of knowledge is what set’s him aside from the rest. Matt completed the Kokoda trek and believes focusing on each individual and creating a path tailored specifically to them is what aids in breaking down barriers and reaching individual fitness goals. Matt’s mindset on fitness has always been that he didn’t just want his business to offer a generic service that would simply help people, ‘get fit, lose weight and tone up’. He wanted a fitness experience but with a difference. Why not 48 WINTER 2015

enjoy the experience with an idyllic paradise backdrop? With great weather consistently on tap, perfect training locations, adventure activities, great food and friendly locals, the concept grew into a reality and Bang Fitness began their fitness journey. Matt’s fitness adventures are suited to all fitness levels. His willingness to adapt to all levels is because he knows through the use of goal setting, all attendees can and will get fitter, but nobody has to complete an activity or training session they don’t feel comfortable with. The aim is to educate with the training sessions offered, rather than leave everyone so exhausted they can’t enjoy their holiday. The benefit of training whilst holidaying is obvious. Matt reminds us that we all like to eat and drink on holidays, so having activities to fill some of the days will help keep off a few extra kilos, and being active will really help to reenergize your body for the dreaded return to work! While it seems easier said than done, Matt plans the itinerary to ensure that goals are set early on. Matt says they don’t discourage drinking, but often find that the atmosphere amongst the groups is based on a positive, healthy outlook and so most people will have a couple of drinks and leave it at that, waking up feeling refreshed each day.

Bang Fitness Adventures welcomes all ages and ranges from people in their 20’s through to people in their 60’s, as well as a mix of singles and couples. There are many reasons people choose this fitness experience, from wanting a break from the real world for a week or from parenting, or simply just leaving their stressful jobs behind for a while. Whilst other people

want to take on the challenge of climbing a volcano or white water rafting down a river, or trying their skills on a high ropes course. Matt says for those who are more advanced, the idea of being able to train for fitness without always being rushed, and using the time to dig down into what motivates them, is a great reward for being distraction-free for the week.

Day 7 - Rafting What better way to complete your final Bali Adventure than with a breathtaking White Water Rafting experience on the Telaga Waja River, following a workout on the water. Enjoy a delicious lunch before returning to the hotel. The rest of the day is yours to enjoy. Then a final dinner at the Villa to wrap up what you’ve achieved in your adventure week.

Day 8 - Departure Day 3 - Traditional Meals Breakfast overlooking Mt Batur at Kintimani before visiting a coffee plantation, discovering rice paddies and enjoying a mountain bike tour through villages near Ubud. This is followed by a traditional Balinese meal in a Balinese compound where you can learn about family life and their traditions.

Day 4 - Rest Day After a morning training session at the beach enjoy the rest of the day to go and discover the beauty of Bali. This may be a good time to book in for a relaxing massage, perhaps, or maybe some swimming and surfing, if that's your thing.

Day 5 - Climbing Day Up early for a drive to Mt Batur, climbing 1717 metres to the peak in time to see the sun rise… AMAZING! Then enjoy a delicious 50 WINTER 2015

Enjoy some last minute training, shopping or some well-earned relaxing around the pool before heading to the airport. Then back to reality. This is an alternative fitness experience in one of the world’s most beautiful destinations, which certainly doesn’t sound like hard work. Add to that a tour guide full of helpful fitness tips with an itinerary to match and this will be a week to remember proving not only kind to the body, but also the soul.

GRAZING

A FOOD HISTORY For the foodies amongst us winter is without doubt a representation of a change in the food we eat and the style of our cooking. It plays a role of nurturing not only our taste buds, but warming our souls. It also paves the way for some great creative license and some wonderful food choices. This season we bring a well-known Geelong iconic Chef: Daniel Brehaut to the forefront to share some of his gastronomic styles and choices. Daniel Brehaut has a deep tapestry of life experience and notably a 22 year history in what he loves doing most that being; creating wonderful food indulgences. His love of food started interestingly with an appreciation for the taste of green apples, this was led by a Grandmother who often shared the wonder of cooking this tasty fruit and from a small child and a need for experimentation, his food curiosity grew. In 1993, unknown to Daniel, his food career commenced originating firstly on the restaurant floor of The Travel Lodge in Port Moresby (Daniel grew up in Rabaul in Papua New Guinea) and then the in-house kitchen beckoned…. That was an introduction to two Australian Executive Chefs, one who had notably opened some well-known restaurants throughout the world and had in fact cooked for the Queen and no doubt their influences firmly plateaued Daniel distinctly food forward. He followed this working in a notable hotel on The Gold Coast and then heading to Melbourne to be with family, of which he won a prestigious position in the kitchen at Crown. A yearning for his own distinct style business brought him along with a young family to Geelong and in 2008 Black Bull opened its doors. Spanish food was high in food fashion at the time as well as shared grazing over a selection of small delicious morsels and the demand for this food style has not waned. Add to Daniel’s business belt the recent introduction of Mojo Mama a food style likened to Mexican street food and he is without doubt, making a defined mark on the Geelong food scene which over the past few years continues to flourish at a speeding pace. Here are some delicious winter offerings courtesy of Daniel, which combine the best of local produce and readily available items and most of all they are a wonderful representation of all that is winter in food. Enjoy.

PASTRAMI CURED SALMON Ingredients 800gm center-cut salmon fillet with skin 1 ½ tablespoons fresh lemon juice ½ cup salt 3 tablespoons brown sugar 1 ½ tablespoons coarsely cracked black pepper 1 cup coarsely chopped dill leaves and stems 1 cup coarsely chopped parsley leaves and stems 2 tablespoons molasses 2 bay leaves, torn into large pieces 1 ¼ teaspoon cayenne pepper 1 teaspoon caraway seeds 1 teaspoon coriander seeds 1 teaspoon sweet paprika 1 teaspoon freshly ground pepper

Method 1. Pin bone the salmon with tweezers then rub the salmon fillet all over with the lemon juice. Place the fillet skin side down in a glass dish. 2. In a small bowl, combine the salt, sugar, cracked black pepper, dill and parsley and rub the seasonings all over the salmon. Cover the salmon loosely with plastic wrap and refrigerate for 2 days. 3. In a small saucepan, combine the molasses, bay leaves and cayenne and bring to a simmer. Let cool to room temperature. 4. In a small pan, lightly toast the caraway and coriander seeds over moderate heat, shaking the pan, until fragrant for about 1 minute. 5. Transfer the seeds to a mortar and let cool completely. Crush the seeds as finely as possible with a pestle. Stir in the paprika and ground pepper. 6. Gently scrape the seasonings off the salmon. Set the salmon on a plate, skin side down. Brush with the molasses. Sprinkle the ground spices evenly over the fillet. Refrigerate uncovered for at least 12 hours or overnight. 5. Using a long, sharp knife, cut the salmon crosswise into very thin slices. Arrange the slices on plates and serve.

ROASTED PORK BELLY WITH RHUBARB Rhubarb Relish Ingredients 1 red onion, thinly sliced ¼ cup sultanas 1 orange, rind grated 125ml white wine 60ml apple cider vinegar 200g brown sugar 1 bunch rhubarb, washed, trimmed, stems cut into 2cm pieces

Method 1. Combine onion, sultanas, rind, wine, vinegar and sugar in a saucepan. Stir over low heat to dissolve sugar, then add rhubarb stems and simmer for 5 minutes. 2. Strain rhubarb, reserving the syrup. Return syrup to pan and simmer until reduced by half. Pour syrup over rhubarb and allow to cool.

Pork Belly Ingredients In season rhubarb and rosemary 2kg piece boneless pork belly (skin on) 2 garlic cloves Pinch of ground cloves ½ teaspoon caraway seeds ½ teaspoon dried chilli flakes 2 tablespoons thyme leaves 2 tablespoons olive oil 1 tablespoon lemon juice 2 onions (sliced) Sea salt

Method The night before, prepare the Rosemary Salt: in a large pan, combine salt and rosemary. Place over medium heat, and warm through for about 10 minutes. Transfer salt and rosemary mixture to a container. Let cool for 5 minutes, uncovered, and then cover with an airtight lid overnight. 1. Using a sharp knife, score the pork belly skin and fat in a criss-cross pattern, without cutting into the meat. Set aside. 2. Place garlic, ground cloves, caraway seeds, chilli, thyme and some sea salt in a mortar and pestle and crush to a paste. Stir in the olive oil and lemon juice. Rub the marinade over the pork and stand at room temperature for 30 minutes. 3. Preheat the oven to 220C. 4. Arrange the onion slices in a roasting pan and sit the pork on top. Roast for 30 minutes. Reduce oven temperature to 170°C, then roast for a further 3 hours or until the pork is tender and cooked through, and the skin is crisp. Rest the pork belly, uncovered, for 20 minutes, then cut into slices and serve with a light salad, mashed potato a side of the rhubarb relish and rosemary salt.

GARDEN STYLE

W

ith winter well and truly here, it’s time to explore an amazing family of flowering shrubs that are guaranteed to make a stunning contrast to our grey skies.

The Protea comes from South Africa and is a relative of our own native Grevillea, Hakea and even the Macadamia. This large family, the Proteaceae are mainly found in the Southern Hemisphere and explains why so many South African plants thrive in our local climate. The amazing diversity with this family is acknowledged with the name deriving from the Greek God ‘Proteus’. Proteus was able to change into many different forms and gives us an insight into this amazing family of plants, its leaves and truly beautiful flowers. Proteas flower from autumn through to spring, therefore providing a stunning display of buds and flowers while the rest of the garden is in hibernation. With over 100 different species there is plenty of variety with plant breeders constantly working on new hybrid cultivars, to highlight new colours and shrub sizes. In fact one of the wonderful things about the Protea genus is the variety in sizes with some species essentially being ground covers, while others tower almost eight meters into the air and are more trees than shrubs.

Cut Flowers Protea flowers are prized as long lasting displays and they’ve recently made a return to create beautiful arrangements and wedding bouquets with a difference.

To make the most of your own floral delights, cut the flower stems as long as possible and remove leaves from the lower part of the stems before placing in water. Fresh cut flowers will do best if the stems are regularly trimmed by 2cm and it’s always a good idea to change the water at the same time. Proteas can even be made into dried arrangements; simply hang them upside down in a dark place where there is good air circulation (this helps maintain colours and prevents mould forming on the flower heads).

Attracting Birds Nectar loving birds will frequently visit flowering Proteas, just like this New Holland Honey Eater who doesn’t seem to mind that Proteas aren’t native to Australia.


GARDEN STYLE Growing Conditions

Pruning

Get the basics right and your Protea will reward you with wonderful floral displays year after year. Like their Australian cousins - Grevillieas and Hakeas - Proteas like infertile soils that are slightly acidic. Ideal for our coastal areas, where sandy and acid soils abound. Dig a hole twice as wide as the pot you’re planting and if you discover clay sub-soil consider planting in a mound above the surface as Proteas generally don’t like wet feet. Water initially until established as well as in very hot weather, in the first few years. Once established, their toughness and resilience is enviable. Don’t bother with fertiliser as superphosphate will do them far more harm than good and the same goes for organic amendments such as blood and bone or animal manures.

Proteas are a breeze to maintain. Simply dead-head prune in spring once flowering has ceased. If the bush is getting too large or straggly, simply cut back to a more compact shape and you’ll be rewarded with more flowers next season.

Varieties Subtle pinks are no longer the only protea available, with many yellows, creams and rich reds easily accessible from local nurseries. Protea Repens have a more delicate, open flower and are sure to delight both in the garden and on display as cut flowers.

While they’ll survive in poor light, you’ll be rewarded with brighter colours and more flowers if you choose a sunny site. As mentioned, coastal areas are no problem for proteas, and given they grow wildly in the very exposed Table Mountain national park in South Africa, this is no surprise. Once planted mulching is a good idea, not just to maintain soil moisture but to prevent weeds and grasses competing with the Protea. They don’t like root disturbance so be mindful of invasive running grasses planted in neighbouring garden beds or lawn. Wood chip mulch makes sense in its many forms, just be careful not to smother the trunk of the shrub as collar rot can be an issue - especially if we experience summer rains.
