When it comes to a special meal for two, there’s no finer cut of meat than a rack of lamb. It has that sense of occasion, plus it’s easy to carve into neat cutlets and doesn’t take too long to cook. Here, I’ve paired it with green-olive potatoes which absorb the roasting juices, locking in all that great flavour and saving you the effort of washing up extra pans. One-pan cooking has a reputation for being all about simplicity, but this easy roast proves you can have ease as well as elegance.
