WHAT’S INSIDE A Celebration of Faith and the Teachings of Archbishop Socrates Villegas BY AMRYLOIS FERIDO On the weekend of the 23rd in September 2023, many gathered for Mass in a celebration of faith. Mass is a time of worship in Catholicism as well as learning. Notably, this weekend was graced by the presence and teachings of an inspirational person, Archbishop Socrates Villegas. Archbishop Socrates Villegas was ordained at the age of 25. In 2001, he was appointed Bishop and in 2009 was made the Archbishop of Lingayen-Dagupan in Pangasinan. Many call him ‘Father Soc,’ which emphasizes his personable nature. Throughout the weekend Archbishop Socrates spoke to many audiences through his homilies, which are a crucial part of Mass. While many of Archbishop Soc’s homilies can be found
on YouTube via the following page: https://www. youtube.com/c/FatherSoc hearing his words in person is an impactful experience. Archbishop Socrates made his first stop at the Incarnation Catholic Church in Glendale, CA. He began his homily with the question, “who are you?” Money, work, our mistakes, achievements, and the words of others all weigh down what Archbishop Socrates describes defines who a person is. He instead encouraged attendees to ask the question of “To whom do you belong?” “You belong to God. I hope that forever we will always remember that and there is no other greater than God,” Archbishop Socrates remarked.

Investing in the Dreams of Batangueños BY JESSAMINE ELISE SAGCAL
Traveling to Batangas, you can see the development projects happening left and right. From expanding its ability to generate more power for the country to improving its bays and parks, Batangas is in good hands. However, for Governor Hermilando Mandanas, he doesn’t mean his hands. He means the hands of the Batangueños themselves.
THE #1 RESOURCE The office of the Governor is surrounded by trinkets, paintings, and decor that resonate with Batangas. Whenever Mandanas speaks of the Batangueño people, his face lights up in excitement.
“Really, the number one resource of Batangas, I would like always to stretch, would be really our people,” Mandanas said. As Mandanas continues to develop its properties and production, he believes that the true investment is in the Batangueño people. “That is the number one objective we have all year: the welfare of our people and making them really Filipinong Batangueño, with love of country and concern for society as a whole.” To make this objective a reality, his plans include improving the quality of life for the fisherfolk and educational programs for families to retain the values and traditions of a Batangueño family. One such example is the Montemaria project.

Montemaria Asia Pilgrims, Inc (MAPI) and Fluvion Real Estate Development in partnership with Batangas Lions Club, Inc., officially sponsored the first stopover of the 71 km Verde Island Passage (VIP) bike challenge. The event was participated in by 300+ cyclists and volunteers from various parts of NCR, Calabarzon and Luzon was successfully held last July 2023.
DEVELOPING THE MONTEMARIA The Montemaria is a pilgrimage and cultural center in Batangas City. It houses the tallest statue of the Virgin Mary in the world. Guests can enter and see the view of Batangas atop the hands of Mama Mary. Scheduled mass also occurs in the indoor chapel. “Montemaria is a typical example of a private initative in contributing to really show the culture of the good life, a happy life, and of the traditions that we have here in Batangas.” — Governor Mandanas “We’re trying to develop Montemaria, which is going to be a center of really promoting the
importance and the benefits that we get from being the Center of Marine Diversity,” Mandanas adds. “It will be the center of making people aware of the importance of the place and the blessings that we get. It’s not just a tourist destination, but it’s really an educational center.” Montemaria’s plans include an advanced cable car system, parks, and resorts, as well as centers for educating children on marine diversity, environmental welfare, and the longtreasured cultures and traditions of Batangas City. Throughout all the busy projects, partnerships, and other potential plans, Mandanas still remains in a state of bliss.

A CONSTANT STATE OF REST Mandanas sees his work as his way to relax. Seeing Batangas and its people grow is his way to relax. “Rest doesn’t mean that you are not doing anything,” Mandanas said. “It’s just doing something else. I’ve been asked, ‘When are you
going to retire?’ I always say, well, I have retired a long, long time ago because, for me, what retirement is is to be able to do what you enjoy.” Mandanas enjoys seeing developments come into play, and he plans to be here for a long while to witness everything come to fruition.

JPark Sees Itself a Landmark for Cebu in PH’s Hospitality Industry Sector BY MINERVA BC NEWMAN
JPark Island Resort and Waterpark Mactan is a five-star family destination resort hotel situated on 16.5 hectares of land development at M. L. Quezon National Highway in Maribago, LapuLapu City, Cebu and sees itself as a monument and a landmark for Cebu representing the Philippines’ hospitality industry sector. JPark’s local clients are mostly families, honeymooners, and anyone just looking for a getaway or a place to stay. However the resort believes all types of guests are fitted for JPark because the resort can provide all kinds of experiences for all types — from the youngest to the oldest, there is always something for them, Aeron Uy, JPark marketing manager said in an interview with Balikbayan Magazine recently. “I see JPark as a growing destination, for all types of guests. I believe JPark is a monument for Cebu, a monument for the Philippines, a landmark, if you call it, that we can represent the Philippines in the hospitality sector,” Aeron said. Aeron bared that in the upcoming years, guests and tourists can expect more projects from JPark, such as better rooms, better facilities and always expect the best hotel/resort services they can find around the globe. World-class services are an integral part of JPark’s operations. According to Aeron, JPark treats all reviews, bad or good, with the utmost respect that a 5-star resort is supposed to give them, because they believe that in every circumstance there is always a silver lining that
allows us to grow. “We really take into consideration every single concern that we receive, we rectify it, whether it’s management, system or our staff and we see to it that our guests always have their best experiences here at JPark,” Aeron added. This is JPark’s timeless philosophy of treating guests like family, and the resort’s employees as well. Extending JPark’s philosophy to its guests and employees, is actually extending its hospitality to them, to make them feel at home, while away from their own homes. Aeron bared JPark’s philosophy that the guests experience with them from all over the world; its excellent amenities, such as rooms, JPark has the large number of room accommodations on the island while still catering and offering the best services that JPark provides for all its customers and guests, the kind of attention the resort gives its guests compared to other hotels is what makes JPark stand out different from the other resorts/hotels in the area. “Personally, I think JPark has the most attention to care, the service that we provide for all customers. We make them feel like they are royalty here at JPark.” — Aeron Uy Marketing Manager, JPark Island Resort and Waterpark

LESSONS FROM THE PANDEMIC, HOW JPARK COPED AND BOUNCED BACK BETTER The pandemic has cost enormous setbacks and economic losses in all businesses around the world within the hospitality and the tourism industry reeling dangerously throughout the two-year lockdown. Aeron recalled that the doom of the pandemic reminded them of JPark’s philosophy and strengthened faith in God. True to its brand philosophy of treating its guests and staff as family, JPark is still proud to say today that the company did not lay-off any of its employees. Everyone was retained during the pandemic. “We really stood our ground as we strengthened JPark from the pandemic. Even though we were badly hit by the pandemic, and
was followed by the typhoon “Odette” that came after the pandemic. We stood by our philosophy. Everyone in the company was very considerate and we stuck together as a family and with providence from the almighty, we were able to stand back up to our former glory and even more today,” Aeron noted. Unearthing the Rich History of Filipino Food One Video at a Time BY SABRINA RAIN SAMSON
The husband-and-wife team behind The Lost Filipino Cookbook, Roberto Villar Cabral and Beatriz Gomez, grilling inasal na manok with a marinade of their own blend.
From traditional recipes passed on from generation to generation to the rich origins of our beloved viands, a Filipino and Spanish couple reveals the history of the meals and ingredients that encapsulate Filipino history on their social media page, The Lost Filipino Cookbook. Together, Roberto “Rob” Villar Cabral, a Filipino culinarian and Beatriz “Bea” Gomez, a Spanish food scientist, follow long-established Filipino recipes and give free history lessons through bite-sized reels across Facebook, Instagram, and TikTok. The food journalists dive deeper into Filipino food culture that goes way back in time. Gastronomic curiosity has surpassed watching cooking shows or finding reels of influencers trying out trendy restaurants and cafes. Nowadays, food connoisseurs are also excited to learn about what goes on beyond the dining table. They want to know the story behind their meal. What’s the recipe? Where did they source these delectable ingredients? How did all these elements amalgamate to form this delicious and heartwarming dish? If you’re someone who seeks the answers to these questions, The Lost Filipino Cookbook might pique your interest.

A MARRIAGE OF TWO CULTURES Rob and Bea come from two different yet strikingly similar roots, which also drives their relationship and the content they produce. As a Filipino, Rob wanted to learn more about his heritage and the origins of Filipino cuisine. On the other hand, Bea, a Spaniard residing in the Philippines, wants to learn more about Filipino culture and embrace its way of life. Rob commends her by saying “I have to hand it to her that she really took great initiative and determination to really learn about her surroundings.” As a result of their continuous thirst for knowledge, they made The Lost Filipino Cookbook a project for both of them.
FOR THE LOVE OF FILIPINO FOOD AND HISTORY Burong Paho (pickled altissima mangoes), one of the first antiquated recipes that the couple attempted. It was initially prepared by Spanish colonials as a tropical substitute for brined green olives.
WHERE IT ALL STARTED We sat with Rob and Bea in Bacolod during their culinary adventure in the Visayas. The couple shared how their brainchild, The Lost Filipino Cookbook, was born. While the project based on the idea by Rob from way back was on the back burner for several months, it only came to fruition in April 2023. During one of their excursions, Rob spotted piko mangoes a.k.a. paho, which are tiny altissima mangoes. He tells Bea, “These are going to be extinct soon, so perhaps we should document about this and show people how it’s prepared.” Both agree that it’s a good idea. The first video Rob and Bea ever produced for The Lost Filipino Cookbook is about making Burong Paho, or pickled little mangoes. In the 1-minute video, Rob shares that the Spaniards discovered this tiny fruit when they set foot in the Philippines. They made it a substitute for Spanish green olives back in the day.
Aside from their determination to learn about each other’s cultures, food is the common denominator that brings them, and people, closer together. “Food has been very integral to our culture, Yes. It’s been there with us in social gatherings [...but] they accompany us through our personal journeys as well. So what better way to really talk about the story of people than with food?” — Roberto “Rob” Villar Cabral Bea states further, “You might have seen when we go to establishments, we don’t make it about us trying the food and saying, ‘this is so good’. We make it really about the establishment, the story behind that.” The Lost Filipino Cookbook aims to visit places that hold cultural and historical relevance instead of newly opened restaurants. Instead of vloggers who promote trendy establishments, the couple emphasizes that they are food journalists who want to cover things related to the nuances and overall importance of Philippine heritage in its significant contribution to the national identity, by way of the local cuisine.

Keeping it on the subject of food, Bea shares that her favorite Filipino dishes are kinilaw and sisig. For dessert, she loves biko. On the contrary, Rob loves a good parfait of halu-halo. For savory meals, he enjoys eating tinolang manok and ginisang munggo. Aside from the classics, the two also discover new favorites along the way as they produce content for their page.
that their platform is mainly for their learning and sharing those lessons with others. To their current and potential followers, Rob only has one thing to say, “Don’t lose love for your own country.” Their careful approach to the history of Filipino cuisine along with easy-to-follow recipes are what make them worth watching. If you want to know the history of your favorite Filipino dishes, learn and delight yourself with new food and knowledge than through The Lost Filipino Cookbook.
Tinolang Manok from a 1913 recipe.
REACHING MORE AUDIENCES WITH FILIPINO FOOD ORIGINS You might be wondering, how many people are tuning in to The Lost Filipino Cookbook? Across three platforms, they have 180,000 followers and counting. In less than a year, they were able to draw thousands of audiences through their insightful videos about the beginnings of certain Filipino dishes and establishments. For instance, their second video about the oldest restaurant in the Philippines, ToHo Antigua Panciteria, has over 40,000 likes on Instagram. In this viral reel, they give a brief overview of ToHo and try out their best dishes. Instead of rating the food they ate, they take viewers on a culinary adventure in one of Binondo’s culinary gems. Despite this traction, the two emphasize
Three generations of Pan de Sal: the crusty Pan de Sal de Suelo from the early twentieth century; the bread crumb-coated singkit variant popular during the post-war era; and the contemporary incarnation which is small, sweet, and airy.

Looking Beyond the Bottom Line at the 2023 Virtus Awards Parañaque City — It was a night of recognition and appreciation as the Hotel Sales and Marketing Association (HSMA) gathered to acknowledge the winners of the Virtus Awards, the annual peerrecognition event. Held at the City of Dreams last November 9, 2023, the 2023 Virtus Awards featured “Beyond the Bottom Line” and recognized three winners for its individual categories. Villaganas, Senior Sales Manager of Quest Hotel and Conference Center Cebu while the Outstanding Sales and Marketing Leader award was given to Karlene M. Capunitan, Director of Sales of The Ascott Limited. For the Outstanding Marketing Campaign award, recognition was given to Robinsons Hotels and Resorts for their “Let’s Go, Go, Go” campaign. With “revenge travel” as the resounding phrase of 2023, the hospitality group set up three products
that would benefit various travelers: the planner, the adventurer, and the chatter. The Go 24/7 provides the traveler with the choice to pre-book early or late arrivals without additional cost while enjoying 24 hours of stay. The Go 365 encourages travelers to book a hotel from 15 days to a maximum of 365 days in advance while securing the rate from the day of booking. He added that this was his first time joining the Virtus Awards and that it was an honor for him and
his team to emerge as the winner in a category that received a large number of submissions. “It feels so humbling and yet exhilarating as well to bring such honor to our group because this is the very first time that the HSMA has received a lot of entries for this category and they were all outstanding campaigns,” he added. For her part, Capunitan said she was very proud because this happened to be the first win of The Ascott Limited at the HSMA. “I am very flattered because HSMA recognized the hardships and the achievements. I am also proud because this is the first win of Ascott in HSMA. We have been joining since it started nine years ago and that is why I am very proud to have represented Ascott,” she said. Capunitan felt honored to be representing Ascott because of the many lives that company has changed and how Ascott has contributed to the landscape of the hospitality industry. “I am very thankful for the award and for the recognition. I actually really wanted to win. I think I deserved to win because I wanted to represent Ascott and to show the world that we are here and that we are doing very well in the industry,” she added. Christmas in the Philippines It’s a Wonderful Lifestyle! BY ALTHEA LAUREN RICARDO IT WAS THE CRACK OF DAWN and a seemingly endless stream of people was pouring out of a brightly-lit old concrete church. It was very chilly—chilly enough for me to be happy, for once, that I had a thick sweater on. I was at the back of a pick-up truck, waiting for my parents to get back, and when they did, my father handed me a big, fat, warm bibingka, which smelled of sweet and salty and scorched banana leaves. I don’t remember eating that bibingka; only letting its warmth settle on my lap and then yielding, finally, to sleep. This is my first memory of Christmas: my first Simbang Gabi. It is of colorful bright lights, smiling people, early mornings, and food-fragrant, flavorful, warm food. Misa de gallo While the holiday season in the Philippines can be felt as early as September, when the first Christmas carol would sneak up on unsuspecting shoppers, it officially begins on December 16, the first day of the pre-dawn novena masses that lead up to Christmas Eve. For any Filipino, no matter where in the world one is, Christmas is not really the same without the pre-dawn masses. It is a tradition that goes as far back as the Spanish colonial period, the misa de gallo. Literally “mass of the rooster,” it was decided to celebrate it at three or four in the morning, instead of at night, to accommodate farmers, whose routine it was to wake up long before daybreak to tend to their chores. The Philippines is now far from the largely agricultural country it once was, but the tradition lives on. My next pre-dawn mass after the first one came years later, upon the invitation of my
childhood friends in the subdivision I grew up in. We’d all tag along with Kuya Manu, our street’s resident big brother, on the first day of Simbang Gabi and make promises to each other to attend all nine masses for the chance to make a wish in the end. Of course, that almost never happened, but year in and year out, we never failed to try. Year in and year out, too, we capped the predawn ritual with breakfast at our subdivision’s little plaza before the morning walk back home to our waiting beds. After Simbang Gabi, all over the Philippines, you can always count on finding vendors selling puto bumbong, a purple rice pastry steamed in bamboo tubes and topped with butter, grated coconut, and brown sugar, and bibingka, a sweet thick pancake made of glutinous rice flour, topped with salted eggs and local white cheese, and baked in banana leaves. I’d never fail to bring some of either delicacy, as if they were mementos from an early morning celebration, as if without them I hadn’t really woken up and made it to the pre-dawn mass. The Christmas lantern My childhood friends and I would always want to walk the five blocks or so to church and back again, because it was such a joy to see the look-alike subdivision houses decked out in their Christmas best. And what is Christmas without the Philippine Christmas lantern, the parol? Usually star-shaped, the parol—which traces its etymology from the Spanish word for lantern, farol—was inspired by the Mexican piñata and Chinese lanterns and symbolizes the Star of Bethlehem, which led the Three Kings to Jesus. It was originally used to light the paths to the church for the misa de gallo during a time when

people didn’t have electricity yet. The five-point star-shaped parol made of bamboo and papel de japon was first created by Fernando Estanislao, an artisan from San Fernando, Pampanga, who started making these lanterns in the early 1900s. To this day, Pampanga is the parol capital of the country, with the humble parol having evolved and acquired its present-day splendor. For many Filipinos, the first visual cue of the season is an array of Pampanga-made Christmas lanterns blinking colorfully along highways. In grade six, we were asked to make a simple parol in art class, for a level-wide parol-making contest. It was like making a kite, which I had been slightly successful at as a child, only more complicated as we had to cover many sections of a three-dimensional bamboo star with the very frail Japanese paper provided with the parol kit, with the use of tubes of rice paste. My Christmas star was blue and white and very sticky; the paper was pasted loosely, so it was also wrinkly. A judge actually snickered as he looked at my creation. Obviously, it didn’t win, but despite
that, we hung it up that Christmas. The parol is also a symbol of hope in the midst of darkness. The Nativity Scene Another popular Christmas decoration is the belen, or the Nativity Scene. The name belen is from the Spanish word for Bethlehem. In Spain, from which the décor--as well as everything Catholic-originated, the belen is usually a lifesize decoration. We have that here too, like the giant ones that decorate office buildings and shopping malls, the one at the COD building in Cubao, Quezon City being the most popular for years and years, but many children start off recognizing the belen as little figurines residing underneath the Christmas tree, beside all the tempting, unopened presents. In my family, we’ve only had three belens in 33 years. The first one was made of cardboard and had to be replaced when it couldn’t stand on its own. The second one, made of ceramic, was replaced when one of the three kings and some animals got broken and baby Jesus was lost.

Caroling In the Philippines, having a house shining in Christmas décor splendor usually makes you a favorite target for a Christmas tradition that is becoming scarcer and scarcer, at least in the form I grew up with: caroling. Children with makeshift musical instruments, like tambourines made of flattened bottle caps and tin cans filled with coins, would go from house to house from December 16 onwards, singing Christmas carols in exchange for some coins. I’ve gone caroling a handful of times, and I remember making just enough money to buy a softdrink and chips the next day and adding two Filipino words to my vocabulary: barat, which means stingy, and patawad, which is what homeowners cry out when they don’t want to give you any money, even after your best rendition of “Give Love on Christmas Day.” Noche Buena In other countries, the bulk of Christmas festivities begin on December 25. Children wake up on Christmas morning, excited to find their presents underneath the Christmas tree. In the Philippines, the hard work and the partying begins on Christmas Eve, with noche buena marking the arrival of Christmas Day, and, thus, triggering an avalanche of phone calls and text messages and kisses and greetings and excited pleas from children to please allow them to open their presents. If you are not with family on December 24, you can feel really, really lonely. If you are alone in the evening of December 25, it can mean you’re just really, really tired from all the cooking and celebrating. The traditional Christmas spread you can almost expect everyone to have for Noche Buena includes the following staples: lechon, queso de bola, fruit salad, leche flan, and ham. The leche
flan is usually some auntie’s or grandmother’s secret recipe; the fruit salad is often the family’s unique version (ours has ground peanuts, for instance). The lechon and ham are understood to be part of many breakfasts as ingredients for a variety of concoctions, while nobody really eats the queso de bola—at least not during Noche Buena. aLast year, we decided to change it up a little and cook only what we could eat at noche buena, skipping the labor-intensive recipes, like the chicken macaroni salad and lasagna. We were done cooking in an hour, and ready to eat way before midnight—unlike the many Christmas Eves in the past when we would have a dish or two… or three still waiting to be cooked in the kitchen. It was not the same. Apparently, part of our Christmas tradition is stressing out in the kitchen, exchanging catch up stories, bickering over the overcooked leche flan, and snapping at brothers stealing cheese or shredded chicken or whatever ingredient waiting to be added to a dish. Flash forward to another Christmas memory, many years later. My cousin and I were in her car, looking for a convenience store that would honor a gift certificate for a gallon of ice cream on Christmas Eve. As we were parking at a gas station, we saw a brightly decorated tricycle leave. The driver had his wife inside the cab and a toddler straddling the motorcycle in front of him. Two children were on his back seat, and they were clutching a pack of hot dogs, a bottle of soda, and a loaf of bread. They were all smiling happily, as if they had run off with the world’s biggest treasure. For that moment, the tricycle was home to the family and their noche buena. Just as well, because in the Philippines, the land of fiestas with all its attendant trappings, it is really the people who make up the feast.

Memories and Recipes of Christmases Past BY ALMA ANONAS–CARPIO THE SMELL OF A ROASTING TURKEY wafts into the living room of t he house on the corner of P. Guevarra Street and Mariano Marcos St. in San Juan town. Drifting with this mouthwatering scent are other smells: Pochero is simmering in a large stockpot alongside a wok where laing is gently cooking. Outside, succulent pieces of fish and pork roast on a huge grill. Butter cookies prepared in advance are laid out on the dining room table beside slices of Marca Piña queso de bola and biko from Bicol, sweet and dark sago’t gulaman and aged fruitcakes sliced thinly. This is the first round of food laid upon my grandmother’s table at Christmas, the same table we all gather round now that she has been gone nearly ten years. Bottles of wine and a glossy chicken galantine bathed in savory gravy add sparkle to the table as the bells of Mary the Queen chime to call the faithful to the Misa de Gallo, the Christmas Mass that marks the end of the Simbang gabi novena of masses. The tree is tall, the harp-playing angel perched upon it nearly touching the ceiling of this old house, the first one to be built in Little Baguio in 1918. Fairy lights and tinsel, candy canes and shiny balls and strings of popcorn decorate it. Each child in the family has added something to the tree by this time, as we all, in
our time, had added one hand-crafted ornament on each Sunday visit from the first Sunday of November on. The festive food, the clinking of glasses, the church bells, the tree with its blend of handmade and store-bought decorations and a lava-flow of gifts beneath it are all part of my childhood. They are now part of my daughters’ childhood and will remain a tradition long after my ashes are strewn on the wind. Because our family tree has grown into a clan of several branches, we all bring something to the celebration. One aunt brings her famous chocolate cake, another buys the best ensaymada her favorite bakery has to offer. Yet others bring the dishes of their spouses who hail from Pampanga, Bicol, the Visayas. What was once a Spanish-Zambaleño feast has become a feast from all the islands, a feast that represents the growth and spread of our clan from Aparri to Jolo. The table is laden until it groans and we all circle it at our leisure, sampling cousin Robbie’s fresh baked bread, another cousin’s reprise on Superlola’s tapa, a tribute to our late Tito August by his son Bobbie – caldereta as close to Tito August’s own recipe. We celebrate living and loving in our family with this feast. We also remember our beloved dead with their signature dishes, prepared as best we can and as closely to the original.

There were the Christmases when we fed off Tito Greg’s immortal fudge and his irrepressible chili con carne as done by his grandson and exchanges stories of how he would reward us kids with these treats if we were good all week. Someone came in with a platter of cheeses – limburger, Roquefort and other smelly delights – and Norwegian smoked salmon and a shoulder of Chinese ham one Christmas in memory of Tito Robert. Then there were the Christmases when the younger members of the clan would pluck up their courage – and their newly-found culinary skills – and come to the Christmas get-together with dishes of their own making. Not everything was good, but it was all eaten with good grace and goodwill, accepted in the manner with which it was given. Our family speaks in the language of food, you see. We even have a certified Cordon Bleu chef in the family (she trained in Switzerland). We express our affection with the food we bring to the clan table, especially at Christmas. Statements like “Oy! I brought these mango tarts from Conti’s because I heard you love these,” or “These lemon squares are from Becky’s Kitchen, for my favorite inaanak!” or “Superlola! I brought you a case of Cerveza Negra! And pulutan of your favorite chicaron,” are the things we chivvy each other with during this most magical of nights. Second helpings are the norm, so the table gets re-laid with turkey, my mother’s Bam-I noodle soup, my Tita Noli’s kapampangan specialties and arosep salad, as well as desserts: Cathedral windows jellies, a huge centerpiece of starlight mints and gummi bears from Canadian resident Mama Heck, kakanin like sapin-sapin and pichi-pichi smothered in grated cheese. For thirds we have the drinking fare enjoyed by the adults: Bottles of the finest scotch and wines bought and hoarded for the occasion, tapa, salpicao, vegetables and blue cheese dip, fresh oysters and slices of dayap, cakes and soda for the kids. Once we are sated, the midnight bell tolls and the children run squealing to the tree, where my Superlola once sat in her favorite brown Pitoy Moreno gown and would call our names out grandly as she handed out each wrapped package. Now the matriarch is my Tita Gloria and it is she who sits in the regal chair of rosewood inlaid with mother-of-pearl and, with the help of her children, calls the little ones and gives out the gifts. Each Christmas at the house on the corner of P.Guevarra and Mariano Marcos is a magical time for our clan that is nearly 200strong. It is a time of revcelry and memory and all of us touch our roots and souls with stomachs full to bursting with food made from the heart.

A Celebration of Faith and the Teachings of Archbishop Socrates Villegas BY AMRYLOIS FERIDO On the weekend of the 23rd in September 2023, many gathered for Mass in a celebration of faith.

On this day, I had the chance to speak with Archbishop Socrates. He described how he was invited by his close friend and former classmate from San Carlos Seminary, Father Rodel Balagtas, pastor of Incarnation Catholic Church. Likewise, Father Rodel expressed his sincerity and excitement about Archbishop Socrates’ presence. “His presence is a blessing. He exudes joy in his ministry. His homilies are so profound and he’s well loved,” Father Rodel remarked. As many Catholics within the US are Filipino, Archbishop Soc had a message of encouragement for them. “I want to assure the Filipino community that all is well with us because God is in the Philippines. And if God is with us, no one can ever be against us,” he communicated, reassuring that the Catholic faith is strong no matter where they may be. The next stop was the St. Elisabeth of Hungary Church in Van Nuys, where a celebration was held for San Lorenzo Ruiz de Manila. While a majority of those in attendance were Filipino, there were other attendees of other ethnicities. However, everyone gathered for the same reason, to worship God. Archbishop Socrates reminded attendees that while the Mass was in celebration of Saint Lorenzo Ruiz, God
brought them all together. “Our reason for coming together is to honor the king of martyrs, Jesus Christ,” Archbishop Socrates declared, communicating how Saint Lorenzo Ruiz would say the same if he was present. Saint Lorenzo Ruiz is an inspiration to those of the Catholic faith. After being wrongly accused, he moved to Japan for asylum where a missionary he was a part of was arrested, tortured, and eventually put to death. Before Lorenzo Ruiz died, he said “I am a Catholic and wholeheartedly do accept for God; had I a thousand lives, all these to Him shall I offer.” He lives on as an example of complete devotion to God. “The first lesson of Lorenzo Ruiz is ‘I believe in God’,” Archbishop Soc said, detailing how even with what Saint Lorenzo Ruiz faced, he still had faith in God. “I am a soul,” Archbishop Socrates declared as the second lesson. “That’s why Lorenzo Ruiz was courageous because the Japanese could only kill his body, not his soul,” he added. “The third lesson we must remember is that ‘I believe in life everlasting.’ There will come a time when life on Earth will be over and the new life with Jesus, life everlasting, awaits us,” Archbishop Socrates affirmed, expressing how it is why Lorenzo lives until now. Mass on this day was beautiful. The procession involved all the Catholic churches within the San Fernando region. They had talented dancers who expressed their faith in performance and a choir that passionately sang. This event was put together by St. Elisabeth of Hungary’s Music Director, Jun Corpin, who is also the Chairman of San Lorenzo Ruiz Events of the San Fernando Region. He expressed gratitude in Archbishop Socrates’ visit, which was originally not planned. “It is very humbling that he passed by,” Corpin conveyed, emphasizing that while Archbishop Soc was not originally scheduled for their event, he made time. Pastor Shinto Sebastian of St. Elisabeth of Hungary also expressed his appreciation. “We really appreciate the presence of Archbishop Socrates Villegas. He gave an inspiring homily, inviting people to follow the good examples of Saint Lorenzo Ruiz,” Pastor Shinto conveyed. On the last day of Archbishop Socrates’

Southwest Travel & Tours: Your Gateway to Unforgettable Adventures BY RITCHEL MENDIOLA
When it comes to traveling, the journey is just as important as the destination — and Southwest Tours understands this like no other. As one of the pioneer tourist transport service company in the Philippines, it goes the extra mile to provide high quality solutions to tourist needs and challenges across Western Visayas. Whether you’re traveling with a group to the sun-soaked island of Boracay, or going solo to scenic Bohol, you can be assured that getting to your destination will be all the more memorable.
A FAMILY-OWNED LEGACY Southwest Travel & Tours was started in 1991 by Cedric Sazon out of the need to cater to tourists who were having trouble accessing Boracay.
“In the past, jeepneys were the only option and the trip took more than 2 hours” Celeen Sazon, Southwest Tours’ general manager, told Balikbayan Magazine. “Tourists also had to go back a day early to go to the mainland in Kalibo so they could manage their flight bookings.” At the time, the Sazon family was managing a ticketing office of Philippine Airlines (PAL) in Kalibo. When the flag carrier required an air-conditioned transportation service for its passengers flying to Boracay, they readily answered the call, acquiring a coaster as one of their first vehicles to establish Southwest Tours Boracay Inc. as the pioneer tourist transport service company for Boracay. “We take pride in that,” said Celeen. “We’re pioneers.” Over the years, Southwest Travel & Tours

Start Your Age-Free Journey With SansÂge Wellness & Advanced Aesthetics BY RITCHEL MENDIOLA
Believe it or not, there is an opportunity to transcend the limitation imposed by aging. SansÂge Wellness & Advanced Aesthetics is one facility that assist individuals in attaining their desired wellness and beauty objectives. Established in 2019, SansÂge Wellness & Advanced Aesthetics offers wellness, dermatologic and plastic surgery counseling and treatment. Its name — SansÂge is a combination of two words: sans, meaning none, and age — “ No Age or Without Age”. — SansÂge connotes the idea of agelessness beyond the physical aspect of growing older.
A SANCTUARY OF TRANSFORMATION According to Dr. Michele Nuez, the founder of SansÂge Wellness & Advanced Aesthetics, “To be SansÂge is to be age-free, transcending the limitations set by aging”. “Wanting to be SansÂge and agefree is synonymous with embracing an attitude of youthfulness and positivity regardless of the number of years we have lived.”
“Our clinic aims to complement this inner mindset of vitality with an equal amount of outer physical youthfulness through the delivery of our well-curated and well-executed treatments,” she added. SansÂge Wellness & Advanced Aesthetics isn’t just a clinic; it’s a sanctuary where medicine and artistry converge to create and nurture beauty. Here, patients are treated, understood, valued, and cared for. SansÂge Wellness & Advanced Aesthetics prides itself on offering a wide range of services. It provides non-invasive aesthetic services such as anti-aging facial treatments, body sculpting and contouring, lifting procedures, and scar solutions. More importantly, SansÂge is a reliable go to place for aesthetic surgical procedures like eyebag surgery, rhinoplasty, chin augmentation, facelift, breast augmentation, tummy tuck, liposuction, and more Because the clinic understands that external beauty is closely tied to internal health, it offers a holistic approach. This means addressing the patient’s aesthetic concerns as well as providing wellness services to promote overall well-being and sustain the effects of their treatments.
“SansÂge also offers massage therapy for its wellness service, thus providing both medical and wellness services in one place,” said Dr. Nuez.

Dr. Michele Nuez
THE CORE OF SANSÂGE At its core, SansÂge relies in its cohesive team helmed by Dr. Michele Nuez. Dr. Miles as she’s mostly called is the driving force of SansÂge actively steering the direction of the clinic with its team of experienced and fully licensed practitioners. Dr. Nuez is a highly skilled board-certified lady plastic reconstructive and aesthetic surgeon in the Philippines. She conducts consultation and performs the surgery for SansÂge. With a profound understanding of human anatomy and a natural sense of aesthetics, Dr. Nuez delicately balances precision and passion in every procedure she does. As personalized care is the cornerstone of SansÂge, the facility ensures that each patient’s needs and goals are met with tailor-made treatment plans beginning with an in-depth consultation believing that an informed patient is an empowered patient. “During this meeting, I actively listen to the patient’s desires and, in turn, I provide information about the potential procedures, outcomes, and limitations,” she explained.“The discussion will be detailed, addressing all concerns and questions as much as possible including benefits, alternatives, potential risks, and even budget,” she continued. “At the end of the day, the patient can freely give his or her consent.” Safety is also paramount, and Dr. Miles ensures that SansÂge Wellness & Advanced Aesthetics adheres to the highest standards of safety and ethics in surgery. This means using

MARRYING SCIENCE AND ART In a candid interview with the founder SansÂge Wellness & Advanced Aesthetics, Dr. Nuez’s path to plastic surgery was unexpectedly not straightforward. Surprisingly, she initially had doubts about pursuing a career in medicine. “I initially had a desire to study Fine Arts in college,” she revealed to Balikbayan Magazine. However, she ultimately overcame her reservations and decided to pursue a science-related field. She successfully completed her Bachelor of Science degree in Microbiology at the University of Santo Tomas thanks to a generous scholarship from Procter and Gamble Philippines. During her medical internship, she realized that medicine was not just a rigorous science but also a combination of manual skill, artistic work, and a scientific attitude. It was through assisting in surgery that she gained a newfound appreciation for the field. “Plastic reconstructive and aesthetic surgery helped me realize that it could also be an art,” said Dr. Michele Nuez. “Plastic reconstructive and

aesthetic surgery has this unique blend of science and art, which I find interesting and provided a good foundation for my surgical career.” Dr. Nuez completed her plastic reconstructive surgical training at the renowned University of thePhilippines - Philippine General Hospital (UPPGH) “I am grateful to undergo this rigorous six-year training program for Plastic Surgery,” she noted. “UP-PGH is where the very foundation of my skills was developed.” According to her, “plastic surgery can be lifechanging for individuals who have suffered from congenital deformities, trauma. But in my present practice, I saw how life changing it is to be able to address the most basic problem of aging.” “Being able to restore function, appearance, or just [providing] a refreshed look for these patients and seeing them regain a sense of normalcy or confidence is particularly satisfying and incredibly rewarding,” she added. As a plastic reconstructive surgeon, Dr. Miles’s ultimate goal is to help patients achieve their desired outcomes while maintaining their health, well-being, and self-esteem.“This holistic, patient-centered approach allows me to tailor treatment plans to their individual needs and desires,” she said.

Looking ahead, Dr. Nuez’s vision for the future of SansÂge Wellness & Advanced Aesthetics is one of continued innovation, accessibility, and empowerment. “SansÂge’s vision is to be the most reliable and effective provider of devised-based and non-devised based aesthetics and plastic reconstructive surgery treatment in the Philippines,” she said. “I will still be providing the traditional or standard surgical procedure with a holistic approach to aesthetics,” she added. Dr. Miles also envisioned SansÂge Wellness & Advanced Aesthetics to be an active participant in Philippine medical tourism “within ten years.” And while the clinic is getting ready to accommodate medical travelers worldwide, its three branches — located in Makati, Tagaytay, and Baguio — are already tourist destination sites. “Foreigners...prefer countries like the Philippines for their dental services or cosmetic surgeries,” noted Dr. Nuez. “No wonder, our country ranks 24th among the 46 medical tourism destinations worldwide. We have hospitals and facilities, skilled doctors and nurses, plus the Filipino-brand of hospitality, so it’s no surprise,” she added. If you’re a patient or a balikbayan who’s looking for a facility with top medical care at reasonable pricing, then visit SansÂge Wellness & Advanced Aesthetics and make the most out of your next vacation to the Philippines. From exploring ancient Spanish colonial towns and diving into vibrant coral reefs to hiking lush rainforests and climbing iconic volcanoes, retirees will never run out of captivating experiences. 6. Investment Haven. This complements the affordable cost of living part since retirees can opt to invest and start their own businesses here. There are resort towns where expats and retirees have set up shop for cafes, bars or restaurants. Retirees can use their retirement money as capital. 12. Maybe Find Love? There are retirees who have found love in the Philippines. This means gaining an extended family who can assist them as they grow older. Retiring in the Philippines is an invitation to live life to the fullest against the backdrop of stunning landscapes, cultural vibrancy, and warm communities. With its affordability, diverse leisure opportunities, and exquisite lifestyle, this Asian paradise presents a compelling case for Western retirees seeking a new chapter filled with adventure, tranquility, and the joy of discovering a new culture. There’s even a government agency mandated to develop and promote the Philippines as retirement haven as a means of accelerating the social and economic development of the country, strengthening its foreign exchange position at the same time providing further best quality of life to the targeted retirees in a most attractive package. The Philippine Retirement Authority (PRA), a government owned and controlled corporation created and signed by former President Ferdinand E. Marcos on 04 July 1985. Through the Tourism Act of 2009, PRA became an attached agency of the Department of Tourism and placed under the supervision of the Secretary. Embrace the Philippines as your retirement haven and experience a lifestyle that is as enriching as it is enchanting.
