I ORIGINALLY INTENDED TO TALK ABOUT SPRING TRAVEL IN THIS LETTER, BUT THE DIRECTION TOOK A TURN AFTER I SPOKE WITH A FEW OF OUR MOST KIND-HEARTED MEMBERS. As an editor, I hear a lot of incredible stories about unbelievable people. However, there are few that have stopped me in my tracks like that of the Chaffey family. I don’t want to give away the details here. You can read the full story on page 50. But what I can say is that the capacity for people to take a bad situation and turn it into a positive one is powerful, and that’s exactly what this family did when the worst thing imaginable seemed to happen. Taking it even a step further, they found a way to give back and make positive change happen for other people as well. In the same vein, another member, Jennifer Spatz, reminded me that it doesn’t always take a disaster to make you feel like doing good for others. Spatz is a travel expert who specializes in helping families make the most out of their trips abroad by serving communities in need. For instance, she plans trips to build soccer fields for underprivileged areas. You can read more about her services and how you can get your own kids involved on page 32. For some lighter reading, get some travel tips about how to combat jet lag (page 44) and the latest in travel in technology (page 38).

Big changes are in the works—and some already have occurred—at Overlake Medical Center By all definitions, last fall‘s unveiling of Overlake Medical Center’s $20 million cancer center was a big deal. The center’s patient-centered design already is saving lives and helping patients and their families feel at ease, with its dedicated entrance, single check-in area, valet service, consultation rooms, on-site financial services, beauty-related services, and an infusion “party room” where patients can visit with others while receiving treatment.

Hundreds of local business leaders convened at the Westin Hotel in downtown Seattle on Mar. 8 for the 46th Annual Economic Forecast Conference hosted by the Economic Development Council of Seattle & King County. Panel discussions explored topics such as business and technology innovations, urban development strategies, and workforce trends, while industry experts and analysts offered their thoughts on global, national, and local economic trends anticipated in 2018. BEHIND THE WINE DINNER

RABBIT PREPARED THREE WAYS

The Club hosted a five-course wine dinner in Polaris featuring wines and fare from classic regions of France such as Champagne, Loire Valley, Burgundy, Rhone Valley and Bordeaux. Guests enjoyed traditional dishes, such as rabbit, lamb and sweetbreads, with a modern twist. In hopes of inspiring your own dinner party, on the following page Executirve Chef Justin Sledge shares the recipe for the amuse bouche, which was a Buckwheat Blini with Dill Crème Fraiche and Caviar. While it sounds fancy, it’s approachable for culinary enthusiasts of all levels and is a real crowd-pleaser.

BUCKWHEAT BLINI WITH DILL CRÈME FRAICHE AND CAVIAR BLINI

1 packet of active dry yeast 1 ½ cups of warm milk (108-110 degrees) 1 cup all-purpose flour ½ cup buckwheat flour ½ teaspoon salt 1 teaspoon granulated sugar ¼ cup melted, unsalted butter 3 eggs, separated PROCEDURE

In a large bowl, mix the yeast in with the warm milk, stirring until dissolved. Set aside and let the yeast mixture bloom for 10 minutes. In a separate large bowl, sift the allpurpose flour, buckwheat flour, salt and sugar together. Make a well in the center and pour in the yeast mixture, melted butter and egg yolks (reserve the whites), and whisk until smooth. Cover with a towel and let it rise in a warm place for an hour and a half. Just before you are ready to cook the blini, beat the egg whites until stiff, the batter. w r i tand t e nthen b y nfold a m ethem h e r into e Place a griddle or non-stick skillet over medium-high heat and brush it with a little melted butter. Pour one tablespoon of the batter into the pan to make pancakes about three inches in diameter. Cook for about 30 seconds, then flip with a spatula and cook another 30 seconds. Stack the blini on a platter and wrap them in a cloth napkin to keep them warm. Finely chop the dill and add to the crème fraiche with the other ingredients. Top the warm blinis with the dill crème fraiche and then a small amount of roe or caviar.

Going to UNESCO world heritage sites, beautiful beaches and mountains can be amazing, but travel at its most fulfilling encourages genuine and meaningful interaction with others, which ultimately leads to a deeper understanding and appreciation of yourself and those you meet on the journey. RM: Any tips for traveling with young kids? JS: With young kids, you will be hauling a lot more gear, so you may not want to travel to a place where you are hiking or navigating cobblestone streets. I also recommend waiting to plan a “trip of a lifetime” until the kids are a little older. My family traveled to China when my daughter was 6 and my son 8, and I had them keep a journal and draw about their experiences climbing the Great Wall and volunteering in a giant panda sanctuary. Six years later, they still have fun memories. RM: What about older kids? JS: For older kids, I encourage families to plan vacations around your child’s interests, which allows you to engage with your child in the planning process. For example, given my son’s passion for playing soccer, we have taken several trips where we play soccer with the locals, from the slums of Mumbai to the beaches of Cuba. In Nicaragua, we built a soccer field with a local community with 16 other travelers. RM: What are some common mistakes people make when planning family vacations? JS: Not understanding the culture and some of the political issues of the destination in advance of traveling is probably one of the greatest mistakes people can make. Having such information helps you be culturally sensitive and allows travelers to engage with the locals over topics that you know they care about.

Taking a trip to a new, exciting place sounds great. Adding an element of community service probably sounds even more enriching. However, deeply immersing your entire family in another culture also might be slightly intimidating to plan. Bellevue Club member, owner of Global Family Travels and co-founder of Impact Travel of Greater Seattle, Jennifer Spatz talked with Reflections about how to give the whole family the travel experience of a lifetime.

RM: How do you suggest people better inform themselves before traveling? RM: Is there a destination you recommend families avoid right now? JS: Not really, just do your research before you go and be aware of any political unrest and steer away from the places where you feel unsafe. RM: What’s new with Global Family Travels? JS: Despite the recent reversal of travel policies to Cuba, the good news is it is still an accessible destination and we are taking trips there. We are also excited to be developing new trips to Nepal, South Africa and Guatemala for Days for Girls, a non-profit based in Washington State. We are also expanding our soccer trips, creating a Soccer Safari to Zimbabwe to play with youth teams. RM: Is there anything else you want to share about yourself or traveling? JS: One of the things I am most excited about is my new role as co-founder of the Impact Travel of Greater Seattle, which we recently introduced to Seattle-area community leaders, tourism officials, and local non-profits. WHAT IS JET LAG?

Jet lag is a series of symptoms that occur when your internal body rhythm is disrupted. We all have built-in timers that tell us when to sleep, eat, etc. A small group of cells called the suprachiasmatic nucleus, or SCN, let us know when to sleep and wake up; they also aid in regulating hunger, mood and blood pressure. One of the main signals these cells use is light, which helps to rest the clock every day as the sun rises and sets. According to researchers at NASA, it takes about a day for your body to shift one time zone. Imagine traveling halfway across the world—that’s several days of resetting to catch up on. Jet lag essentially comes from a process of “breaks” in the body. Since we’re regulated by the sun, human bodies have developed an SIK1 gene that “breaks” certain processes even when it’s light out. For example, when we see artificial light or moonlight. Without these genes, we’d have erratic body clocks. Instead, the SIK1 gene aims to preserve the stability of our internal clock and keep us on our usual schedule, negating sun and slowing down our process for adjusting to new time zones.

JET LAG AND THE BODY If you’re a frequent traveler, you probably don’t appreciate jet lag because it lessens productivity. But it can also lead to negative health effects. Common side effects are fatigue, confusion and lack of awareness. Jet lag can disrupt your genes, throwing them off their normal rhythms, and reduce neuron growth in the brain, decreasing memory and learning ability.

HOW TO BEAT IT

Adjust your schedule before you leave.

First, it’s easiest to adjust when going from east to west because your body clock can be delayed by going to bed later rather than forcing yourself to sleep earlier. Experts suggest, no matter which direction you’re traveling, that several days before your trip you go to bed and wake up an hour earlier each day. Take melatonin in the afternoon if you need assistance falling asleep. In the morning, find a bright light of any kind to sit under for a bit while your body is waking up.

Control your light exposure. A study by NASA suggests that consciously manipulating your exposure to light over time will help with jet lag, but not to do it all at once. To help your body clock reset in a new time zone, it’s important to seek out and avoid light at the right times of day. If you’re traveling east, you’ll want to advance your body clock, so seeking morning light and avoiding late afternoon light will help. If you’re traveling west, do the exact opposite.

Take melatonin. Talk to a doctor first if introducing a pill into your routine makes you uneasy. However, one study found that a dose of five milligrams of melatonin in the early evening helped participants adjust to new time zones faster.

Stay on home time. If your

trip is short, and you aren’t traveling over more than three time zones, you’re better off not adjusting. If your trip is three days or less, it’s barely enough time to adjust and it might not even be worth the effort.

The story begins with Alexander, who at age 19 was enrolled in school at Seattle Pacific University. He started experiencing painful episodes in which his chest would hurt intensely and his breath would shorten while his pulse raced and his arms became numb. After a few different physicians deemed his heart completely normal, they told the family it was a bad case of panic attacks. “Throughout the following months, I visited psychiatrists and booked appointments, got medications, got massages, and I even did meditation,” Alexander says. “Nothing, however, seemed to help this sudden formation of ‘anxiety’ I was experiencing.” The most intense episode happened when the entire family, including his mom, dad and two sisters, went on an extended hiking trip to Moab. As he was hiking back down from the famed Delicate Arch in Arches National Park, he had to stop suddenly. “I was in incredible pain. My legs were giving out and I could hardly walk,” Alexander says. His mother, Jen, did what the doctors told her to do. She encouraged him to take deep breaths and do calming techniques. Park rangers checked his vitals and eventually brought him down on a stretcher. Everyone chalked it up to another panic attack. “I knew something wasn’t right, but when you’re given the same information over and over that everything is all right, all you can do is trust it,” Jen says. The family finished the remaining days of the trip, and while Alexander says he didn’t feel great, he continued with them. Upon returning home, Jen couldn’t shake the worry, and she took Alexander to her naturopath for a full blood test. At 7:30 a.m. the following morning she got the phone every call every mother dreads. They needed to discuss the results right away. “They told me something was really wrong. His liver enzymes were really off and his liver and other organs were huge. They said I needed to take him for imaging immediately,” she explains. “The tests showed he had a bicuspid aortic valve, which I had never been told before, and that he had a really bad aortic heart valve. He had an infection that went to the valve and he needed a replacement—tissue or mechanical.” Looking back, Jen says a valve replacement seems very simple in comparison to what actually transpired. Upon closer examination, tests showed Alexander’s heart was only functioning at 30 percent and emergency surgery was needed. As the family was trying to process this information, Alexander flatlined.

In the summer of 2017, life changed for the entire Chaffey family.


“The doctors warned me he might not make it through the surgery,” Jen says. She further explains how the only thing that saved her son was that he was immediately hooked up to an ECMO (extracorporeal membrane oxygenation) machine, which artificially oxygenates and circulates blood through a patient’s body. For Alexander, it played out like a nightmare and he had no idea his whole heart was being removed. “I was told I needed a heart valve replaced, and I had chosen a pig valve as opposed to a mechanical one. This was a big decision for me. They were taking me to a CAT scan, and my parents said they would see me in an hour,” he says. “Little did I know, I woke up about a week later on an artificial heart, unable to move, and severely hallucinating. It turns out that that last episode [in Moab] was actually a massive heart attack, and that I had an infection in my heart (endocarditis).”

Some people live on an artificial heart for years. But, thankfully, Alexander cleared the necessary assessments and was placed on the list for a heart transplant. “He was on the list for only eight days before a heart became available,” Jen says. “That was a record. They told us it’s never been that fast before.” The transplant was successful. Since the transplant, life has been different for Alexander and his family. He takes many medications and is aware that this is not a lasting solution. “There is a 100 percent rejection rate; it just depends on when,” Jen explains. But, in the meantime, the whole family is elated that Alexander is getting back to a somewhat normal life and returning to school. In fact, his sister Bella, age 22, has since begun the process of starting a nonprofit called Alexander’s Hope, which advocates for organ donation education and awareness. “A lot of people think they’re an organ donor and aren’t.


Many people don’t know how to do it, or they have misconceptions,” Bella says. “People think if you’re an organ donor [that the doctors] aren’t going to try as hard to save you. That’s just not true.” Bella’s plan for Alexander’s Hope includes speaking at schools as well as pushing for possible new legislation in regards to organ donation. "Through the creation of Alexander’s Hope, my wish is not only to save lives through educating the public on organ donation, but I also hope for Alexander to know that his survival was not by chance, but that he was meant to survive in order for others to get a second chance at life as well," Bella says. Alexander shares lessons learned: Reflections Magazine: What are the most important lessons you learned throughout this process? Alexander Chaffey: Life is a lot more valuable than some people believe it to be. I have an immense appreciation for life now, as mine was almost taken from me. Also, appreciating the little things in life is important. I didn’t realize just how much I had taken for granted until I was confined to a hospital bed and couldn’t do it anymore. Something as simple as going to the bathroom by myself or taking a shower. You become so dependent. RM: Do you have any advice for other young people going through a similar medical ordeal? AC: If you are concerned about something, please get it checked out. I was falsely diagnosed at the beginning and things didn’t work out as intended (I don’t fault the doctors at the ER I originally went to. The analysis just wasn’t comprehensive enough, but they did a marvelous job and are wonderful people). For those who know they must get a transplant beforehand or are going through similar ordeals, remember this: positivity and hope will guide you and make it all the more bearable. As perhaps cliché as it may sound, this is true. People noted how I was so positive and good-spirited about my situation, and that is part of what helped me through it. Don’t be afraid to cry when you need to or to be frustrated on occasion; I definitely had those feelings and let them out. However, dwelling in negativity and self-pity does no one any good; not you, not your family, not your friends, not your nurses, and not your doctors. Positivity and hope for recovery is a powerful force.

RM: How does it feel knowing your story inspired your sister to start a nonprofit for education about organ donation? AC: I feel a bit strange, but in the best way possible. It’s honestly really heartwarming to know that my ordeal sparked the fire in my sister to create an organization that will save lives. I know the struggles of a person waiting for a life-saving donation, and I was lucky to get my transplant so quickly. Others are not so lucky. I know my story and ordeal has inspired many people from the letters I received, the stories my family would tell me, and the vast network of people they told my situation to who prayed and hoped for me. Every now and again, I’ll be in a grocery store or some other place, and I’ll get recognized by someone who had followed my story and had prayed for me. It’s a bit surreal. Bella has always had a passion for non-profit and works hard at everything she does, so I know she’ll excel with Alexander’s Hope and end up saving and educating a lot of people in the process. RM: What are your thoughts about the importance of organ donation and public education? AC: There is no doubt that education and awareness is extremely important. There are plenty of people who are uneducated or sometimes against organ donation. Organ harvest is only done on the legally dead, and some people I’ve conversed with didn’t know this information. Sure, live donations can be done with kidneys and such, but a heart? No one’s sacrificing themselves to save someone else like that. That’s not how it works. Some people have religious conflictions with organ donation. I can’t speak very much to that, but I struggle with understanding the concept; why would you not want to save someone, or several other people’s lives when you have no further use for your organs? RM: How has this past year shaped your vision of the future? AC: My own mortality has definitely been put on the table. I know I will need another transplant sometime in the relatively future, which kind of scares me, but it is something I must accept. There’s no denying this, and I’ve been through it once, so I know how to handle it. I plan to continue on with the life that was almost taken from me, thanks to the generosity of my donor. I almost feel an obligation that I need to do something ridiculously spectacular since I’ve been given a second chance at life, but I know that that sort of arbitrary pressure is pointless and not founded on anything. I will continue to live my life the way I want to live it, and I hope to be able to do something with writing or music, or some other passion of mine in the future.

While in Solvang, make a point to stop at one of the many bakeries (Solvang Bakery and Mortensen’s Danish Bakery were personal favorites) for a cheese Danish, cinnamon crisp, almond butter ring, or kringle. Of course, the Solvang pastry “rite of passage” is the æbleskiver at Solvang Restaurant—a trio of fried pancake balls slathered in raspberry jam sauce that will have you returning to your cushy bed for a nap in no time. Perhaps my favorite discovery while visiting the Santa Ynez Valley was the tri-tip sandwich—the “Philly cheesesteak” or “Mission burrito” of Santa Barbara County. Everyone has an opinion on where to find the original or best version, but most people agree that a stop at the Cold Spring Tavern off Highway 154 (San Marcos Pass) is worth the effort. An Old West watering hole open since 1886, Cold Spring Tavern will probably be full of tourists, especially bikers, but the perfectly seasoned meat roasting over open flames makes it all good. Pay for a sandwich ticket at the bar and present it to the guys around back doing the grilling. They will slice off several juicy strips of beef into a French roll, leaving the salsa or barbecue sauce toppings up to individual preference. → For more information, visit coldspringtavern.com.

One of the region’s oldest remaining vineyards, the Brander Vineyard produces several versions of its signature varietal, Sauvignon Blanc.
