FIVE FASCINATING THINGS ABOUT ALGAE Get the facts about one of the most powerful, yet unsuspecting, beauty ingredients

1. 2. 3. 4. 5.

Algae contains omega-3 fatty acids, which can soothe dry skin, psoriasis, eczema and acne.

Like many plants that come from the sea, it has a high concentration of essential minerals—including copper, zinc, magnesium, sodium, iodine and potassium—that can be absorbed into the body through the skin.

Algae is known to increase circulation and remove toxins from the body, making it a powerful weight-loss agent.

Algae regulates the body’s production of sebum, which can unclog and clarify the skin.

It naturally stimulates collagen production, encouraging elasticity and improving the appearance of cellulite.

How going upside down can benefit the body and literally change your perspective on life. Sirsasana (headstand pose) is affectionately known as the king of all yoga poses. SELF CARE

There’s no doubt about it—full, fluffy, manicured eyebrows and lashes are here to stay—no matter the season. Get the fresh-faced look with none of the everyday work this summer.

REVITALASH COSMETICS

BROW LAMINATION

Unlimited uses

Lasts up to 6 weeks

HOW IT WORKS: The founder of Revitalash Cosmetics created two medical-grade products—Revitalash Advanced and Revitabrow Advanced—for his wife who suffered from hair loss as a result of her battle with breast cancer. The serums are designed for those with patchy or short brows and lashes, using the same active ingredient that other prescription-only products use to stimulate hair growth. The keratin treatments (see below) are great for building up strength, and this line also works well for in-between treatments, providing measurable length.

HOW IT WORKS: This cutting-edge keratin procedure straightens, relaxes, sets and strengthens your brows, making them effortlessly stylish from the moment you wake up. It was created for unruly or curly brows that tend to go in every direction and need a little taming. Get the lamination alone or, for best results, pair it with a shape and tint. The lamination lasts six weeks, but the tint tends to fade after three. Aestheticians recommend getting a touch-up tint halfway through.

INSIDER TIP: “Apply Revitalash at the base of the lashes, so the product seeps deep into the roots. For Revitabrow, don’t be scared to slather it on. Be generous with the application.”

INSIDER TIP: “Come in showered because you can’t get them wet for 48 hours.”

KERATIN LASH LIFT

XTREME LASH EXTENSIONS Lasts two to three weeks

HOW IT WORKS: Individual lashes are applied to existing lashes to provide volume without the use of mascara or other products. They require a little more maintenance and some daily upkeep, but they provide the most dramatic result of all the lash treatments. These are the perfect option for a special vacation or event. INSIDER TIP: “Avoid cleansers, makeup and other products that have oil in them because oil degrades the glue.”

Lasts up to 6 weeks

HOW IT WORKS: This 75-minute treatment lifts, curls and tints the eyelashes, while infusing them with keratin for strength and fullness. Lash lifts guarantee up to 40 percent more volume, which makes it look like you used a lash curler and mascara but without the daily fuss or instruments. Looking for a subtle, natural pop for your eyes? This is your best bet. INSIDER TIP: “The lift lasts up to six weeks, but the tint begins to fade after three. I recommend getting a touch-up tint halfway through.”

MIND & BODY

A

FRONT SQUAT This is the most honest test of lower body strength as well as flexibility. It is more effective than the back squat at activating the quadriceps as well as placing less stress on the knees. Bearing the load on the front of the body will force the posterior chain and core to stay activated so the torso remains in an upright position.

B

SUMO DEADLIFT HIGH PULL This is a great exercise for building strength in the glutes, hamstrings and back while increasing athletic performance. Movements like this can also increase your ability to create force at higher velocities so you can jump higher and run faster.

C

FARMER’S CARRY Loaded carries strengthen grip, shoulder rotator cuff, upper back and core muscles while also improving posture. Other benefits include cardiovascular health and endurance.

A LOOK AT LUKE’S TIMELINE When he was 16 years old, Luke joined the British Army, specifically the Coldstream Guards, which is an infantry regiment that specializes in performing reconnaissance, operating machine guns and mortars, and engaging enemy troops on foot and in light vehicles. One of the Coldstream Guards’ principal roles is to protect the monarchy.

Forshaw became a sniper at the age of 18, and shortly after, he deployed to Afghanistan for nine months, where he was awarded a "Mention in Dispatches."

He joined the British Pathfinders at age 22. The Pathfinders act as a highly trained reconnaissance platoon that advances first into battle to provide tactical intelligence and offer offensive action when needed. The Pathfinders are always on high readiness to deploy anywhere at any time via high-altitude parachuting.

During his time in Pathfinders, he became a physical training instructor and produced programs to get soldiers prepared for any situation and environment.

E

KNEELING SINGLE-ARM PRESS A unilateral press will stimulate more muscle fibers in the working muscle groups and use more activation in the assisting muscles. Some key gains from the kneeling press are that the core and glutes are worked as well as the upper body.

To book a personal training session with Luke, please email fitness@bellevueclub.com.

D

POWER CLEANS This will help you increase muscular coordination, power output and overall athletic capacity. Explosive compound movements like this produce amazing results in power and force output, kinetic awareness and neurological adaptations needed to train harder, run faster and be a more explosive athlete.

P R OVO LETA WITH C HERRY T OMATOES & FR ES H HERBS SERVES 2-4

Here’s a showstopping appetizer to enjoy all summer long. A thick slice of provoleta (or other similar cheese like provolone) is cooked over hot coals until browned and bubbling. It’s then topped with fresh tomato and herbs and served with a toasted baguette. I like to think of it a bit like fondue or queso fundido but not as molten and melty. Use a five-inch round castiron pan because most large cheese rounds fit snuggly into this size and melt perfectly. One cast-iron portion is generally enough for two to four people, depending on how much everyone likes cheese. This dish is best served hot, so have everything prepped and ready to go, then cook the cheese just before sitting down to eat.

INGREDIENTS - 2 tablespoons olive oil, more for oiling the pan

- 2 tablespoons fresh oregano, chopped

- 1 clove garlic, peeled and minced

- 4 tablespoons fresh basil, chopped, divided

- 1 tablespoon shallot, peeled and minced

- 1 (1/8 inch thick) round of provolone (or provoleta) cheese

- ½ cup cherry tomatoes, chopped

- 1 toasted baguette, sliced into rounds

- 1 teaspoon sea salt

Preheat the oven to broil. Meanwhile, prepare a five-inch cast-iron skillet by rubbing a small amount of olive oil to season it, then set aside. In a large nonstick skillet over medium heat, add the remaining olive oil. When hot, add the garlic and shallots and sauté, stirring often, until translucent. Add the tomatoes and salt and let simmer. Once the tomatoes start to break down, add the oregano and half the basil. Turn off the heat but keep the pan on the burner to stay warm. Next, place the cast-iron skillet over medium-high heat and add the round of cheese. Cook until the cheese begins to melt and crisp on the edges. Remove from the heat and quickly transfer to the oven. Broil for 3 to 5 minutes, or until fully melted and golden. Remove from the oven and top with the warm tomato salsa and remaining basil. Serve immediately with a toasted baguette.

WINE SPRITZER WITH STRAWBERRY & CITRUS For the next summer gathering, serve this smooth and SERV ES 4 refreshing wine spritzer. A dry, crisp wine like a Torrontés is perfect and elegant because it’s light on the nose and contains enough tropical-fruit aromas to entice. Make sure to prepare the wine and fruit ahead of time so the wine has time to chill while absorbing the lush fruit flavors.

INGREDIENTS 6 orange slices 4 lime slices 4 strawberries, hulled and sliced

1 bottle Torrontés (or other dry, crisp white wine) 8 oz. sparkling water Fresh basil or mint for garnish

Add the sliced orange, lime and strawberries to a large pitcher. Pour in the entire bottle of wine and stir to combine. Place the pitcher in the refrigerator until chilled. When ready to serve, prepare wineglasses with some ice. Add the sparkling water to the pitcher at the last moment and give it a light stir. Pour in the prepared wineglasses and garnish with fresh basil or mint.

SERVES 4

bellevue club july/aug 2022 | 27

SERV ES 4

R IB EYE WITH R OSEMARY CHIMICHURRI Nothing says summer like steaks on the barbecue. For this recipe, I prefer USDA prime beef. I also like grass-finished meats. “Grass-finished” means the animal ate nothing but grass or forage for their entire life span, resulting in a beefier texture and flavor. Think of it like wild game, raised on what is most natural to the animal.

INGREDIENTS

RIB EYE 1 (32-ounce) 2-inch thick bonein rib eye Olive oil, as needed Kosher salt, as needed ROSEMARY CHIMICHURRI

Coat the rib eye with olive oil and kosher salt, rubbing the salt into the meat. Use half the Rosemary Chimichurri and coat and rub into the meat. Transfer the meat to a container with lid and let marinate for at least 2 hours in the refrigerator. When ready to cook, remove the meat from the refrigerator and bring to room temperature, about 1 hour. Meanwhile, prepare an outdoor barbecue or gas grill to high heat (450°F to 500°F). When hot, add the meat. Grill each side of the rib eye for 9 to 10 minutes, then allow it to reach an internal temperature of 130°F for medium rare. Remove the steak and let rest for 5 to 7 minutes so the juices can reabsorb, resulting in a juicier bite. To serve, thinly slice the meat perpendicular to the bone, arrange on a carving board and drizzle with the Rosemary Chimichurri. ROSEMARY CHIMICHURRI Place the shallot, garlic, parsley, rosemary and oregano in a food processor and pulse until coarsely chopped. Remove the herbs from the food processor, place in a large bowl, and mix in the salt and lemon zest. Divide the herb mixture into two bowls. If you are not serving the meal right away, keep one bowl without oil and add the olive oil right before serving. For the second bowl, add the olive oil to create a paste-like texture and use this to marinate the meat.

1 shallot 4 garlic cloves, peeled 3 bunches of fresh Italian flat-leaf parsley, stems removed ¼ cup fresh rosemary, stems removed ¼ cup fresh oregano, stems removed 2 teaspoons kosher salt 1 lemon, zested 1 cup olive oil, divided

A guide for encouraging healthy eating habits and easing the madness during family meals 30 | july/aug 2022 reflections

MIND & BODY MIND & BODY

From picky eaters to kids with intolerances and allergies, teaching your little ones healthy eating habits can be challenging—or downright maddening. There can be meltdowns, food strikes, sneaky eating behaviors, cooking way too many meals to accommodate the whole family, and much, much more.

We aren’t going to claim we know the correct approach your family should take though. Instead, we rounded up some of the best resources out there to help you compare and contrast methods that might make your mealtimes just a little easier and your kiddos a little happier.

bellevue club july/aug 2022 | 31

THE FAMILY NUTRITIONIST The Family Nutritionist was created by Alex Turnbull, a registered dietitian who wants to take the shame out of mealtime troubles. She describes herself as an “expert in introducing solids and picky eating, recovering perfectionist, cheeseburger lover, most importantly, a mom to two toddlers.” With The Family Nutritionist, Turnbull’s objective is to create a community where parents can share tips, get help, and maybe even let out a little steam. However, her most valuable resource is the “Managing Mealtimes Course for Picky Eaters.” This course includes 12 videos (all less than 20 minutes) that provide seven strategies for making feeding more enjoyable. The topics range from introducing new foods to food obsessions to making only one meal at dinner time. On her blog, she also digs into tougher topics such as pediatric feeding disorder and how to help your picky eater poop. Her candidness and honesty make her a great resource for those who realize parenting will never be perfect. ••• For more information, visit myfamilynutritionist.com. THE NOURISHED CHILD Jill Castle is a pediatric dietitian who created The Nourished Child, an online nutrition school with resources for both parents and kids. With numerous mediums available—a podcast, books, planners, a blog, and dozens of courses and classes—The Nourished Child decidedly puts science first. She addresses topics like Eosinophilic Esophagus (EoE), oral aversion, toddler multivitamins, delayed puberty and more. But it isn’t just her medical background and science mind that makes The Nourished Child stand out. She also isn’t scared to talk about the extremely difficult time she had feeding her own child, despite being in the nutrition field for more than 30 years, making her very relatable. Plus, she knows feeding troubles aren’t limited to toddlers. The Nourished Kid aims “for competence and knowledge when it comes to nourishing and nurturing kids, whether it be babies, toddlers, kids or teens.” ••• For more information or to sign up for the program, visit thenourishedchild.com. MAMA AND ME RD Alyssa is a mom, registered dietitian, writer and podcaster who is dedicated to “stopping the cyclical tendencies of diet cultures.” Her podcast, Nutrition for Littles, addresses many hot topics such as eating at day care, feeding baby myths, and how to keep your kid at the table. But, she also doesn’t shy away from the more controversial subjects either—such as passing down body acceptance (or lack thereof ) through generations and how to get your partner to be your ally. She often features guests who share their expertise, but also goes solo with some truly raw, relatable talks. Aside from the podcast, Alyssa has a vibrant presence on Instagram (@nutritionforlittles) and a helpful blog in which she shares everything from actionable tips and tricks to recipes. The cherry on top is that she offers all the resources for free! ••• For more information, visit nutritionforlittles.com. Or follow her on Instagram at @ nutritionforlittles.

CHE AT SHEET There is no shortage of opinions out there, and they can get confusing at best or completely contradictory at worst. Here are a few quick tips that most experts tend to agree on.

• Parents should do their best to model healthy eating habits, but don’t worry about being perfect. • Get kids involved in the shopping, cooking and planning processes when possible. Start positive conversations surrounding health during those times. • Don’t shame other people’s eating habits, cultures or beliefs surrounding foods (veganism, clean eating, religious restrictions, overeaters, etc.). • Don’t ever focus on weight loss or gain unless medical attention is needed. • Try not to use food as a bribe or reward, although this can be very tough. • Don’t label certain foods “good” or “bad.” • Try reframing new foods as “adventurous” or “fun.”

COMMUNITY & CLUB

PIPING

HOT

In 2022, Piper Enge, a 15-year-old swimmer for the Bellevue Club, was supposed to attend the Winter Junior Nationals swim meet in Russia. But, like many other athletic events in the past few years, it was cancelled. The meet was especially important for Enge because it’s one of only a handful in which swimmers can qualify for the U.S. National Team. Plus, it’d give her invaluable experience at larger meets.

“I was pretty bummed,” Enge says, but she kept training nonetheless. And her perseverance recently paid off when she qualified for the replacement meet—the 2022 Junior Pan Pacific Championships this August in Hawaii. The elite event allows for only 20 men and 20 women from various countries to compete and qualify for world championships. Enge will be competing in the 100-meter breaststroke, an event in which she is currently ranked fifth fastest in the country. She sat down with Reflections to talk about how she trained her way through COVID and what it feels like to swim against her heroes on the world stage.

Reflections magazine: What does attending the 2022 Junior Pan Pacific Championships meet mean to you? Piper Enge: This meet was my ultimate goal for the past

few months. All my training has gone toward this meet.

RM: When did you start swimming? PE: I started swimming on a competitive team when I

was 6. My mom swam during college, and she encouraged all my siblings to try a bunch of sports growing up. Swimming just happened to be the one I got attached to. RM: You’re currently the fifth fastest girl in the country in the 100-meter breaststroke, correct? What does that feel like? PE: Yeah. It’s really cool because a lot of the names

above me and some below have been people I’ve looked up to my entire life as my breaststroke idols. I’m in the field with past and present Olympians. RM: What’s the best advice you’ve received along the way? PE: Our head coach, Abi, has had so much experience

with the National Team and meets like this, and I’ve always dreamt really big. Abi has never once thought I couldn’t do something I said I could do. As soon as this became a meet, she said, “You can make this team.”

46 | july/aug 2022 reflections

RM: How do you handle the mental side of the sport? PE: It’s been hard because a lot of the meets, when I

was 13 to 15 years old, were cancelled. I was supposed to be hitting national meets, and so I got thrown into the deep end when things opened back up. The hardest part is not knowing whom I’m racing against. The first national meet I was thrown into, I was racing Olympians and Junior National Team members. That was a big step up, and it was really hard to focus mentally knowing these are people who hold national age group records or have been on the Junior National Team.

QUICK QUESTIONS WE ASKED PIPER SOME RAPID-FIRE QUESTIONS TO GET TO KNOW HER BETTER.

FAVORITE GEAR

I really like using fins. They get me kickstarted, and you get to adapt to the speed you want to be at. It feels cool. ROLE MODEL

Lilly King. She’s been dominating the breaststroke field for a while, so getting to race her was one of the coolest things I’ve ever done because I’ve been looking up to her for so long. FAVORITE FOOD

Italian food. I love to carb-load with pasta, pizza. SCHOOL SUBJECT

English. I like to write; sometimes it’s hard, but I get through it. FAVORITE MOVIE

Always and forever, my favorites are all the Harry Potter movies. FAMILY PET

Leo—he’s a black Lab about two and half years old. SUPERSTITIONS

I’m not a very superstitious person. I don’t rely on it. But once, at a big travel meet, I drank a bunch of red Gatorade and swam a fast time. Now I joke around about it and might drink red Gatorade before a race.

bellevue club july/aug 2022 | 47

RM: What was your mindset through COVID? PE: That was really hard too, so many people fell

off. Back in April 2020, a friend and I were swimming in the lake just to get any training in. I was just thinking ahead and trying to not get upset about meets that were cancelled. I knew bigger and better things were on the way and didn’t want to be someone with the same speed at the beginning of COVID and at the end.

RM: How have your peers and community responded to your success? PE: Everyone has been really supportive. I’m very

grateful for the help I have around me, all my high school teammates are very supportive and proud.

RM: Is going to the Olympics the ultimate goal? PE: Every little kid dreams of that, and the fact

that it’s started to become more of a reality is incredible. The fact that I can think about dreaming that big is so cool.

RM: What advice do you have for young swimmers? PE: It sounds cheesy, but you have to keep hav-

ing fun. The people who make it purely about college or winning a race might burn out. Happy swimmers are fast swimmers. I’ve always had the best meets when I’m having the most fun.

48 | july/aug 2022 reflections

“She will often come up after a tough race and say how much fun she is having. Her love for the sport and her true passion to compete have made her a pleasure to coach.”

PEOPLE & PLACES

TWO SIDES TO TULUM

MESMERIZED BY THE MEXICAN CARIBBEAN

The magic of Tulum is it offers a true yin-yang travel experience. Thrill-seekers can go scuba diving in turquoisecolored natural caves, explore Mayan ruins, or revel in a vibrant nightlife that features beach parties burning into the wee hours of the morning. On the flip side, the options for rest and restoration are also endless. Luxuriate in healing yoga classes, participate in ancient spiritual practices, and enjoy nourishing food and world-class spa treatments. Pick and choose for yourself to create the perfect balance for your next dream vacation.

STAY + S L E E P

There is no shortage of enchanting, jungleinspired places to stay in Tulum. The drive from the Cancun airport to Tulum alone is lined with dozens of regal all-inclusive resorts that sit behind giant gates and promise privacy and convenience. But, if you want to truly experience the culture of the city, branch out from the all-inclusive mentality, and stay right on Tulum Beach.

The Dune Boutique Hotel Tulum is a prime example of why. With Instagram-worthy Bohemian design, private plunge pools, a spa on site and an enchanting landscape, it’s also within walking distance of all the beach clubs, yoga studios, clothing boutiques, restaurants and mezcal bars that make Tulum one of the most soughtafter spots in the world. You are a few steps from Caribbean waters during the day and the heart of the city at night.

The beach clubs in Tulum are unrivaled, and you can hear them buzzing at all times of the day and night. From Dune, walk a short distance or bike on the bustling beach street, and you will find Mia Tulum. During the day, rent a cabana and enjoy the curated music that is both relaxing and representative of the local flavor while sipping cocktails, watching the waves roll in, and noshing on fresh food amongst the palms.

But nighttime is when Mia really shines. The club regularly hosts DJs to play intimate concerts with an out-this-world backdrop and international crowd. They have a range of other special events, including wine and mezcal tastings, all year, so be sure to line up your trip with one that speaks to your interests. >> For more information, visit miatulum.com/en-US.

SWEAT + G E T S P I R I T UA L

Yoga studios and spiritual centers also abound. You can even participate in a traditional practice known as a temazcal ceremony. Like a sweat lodge or a sauna, the main feature of the temazcal ceremony is heat. During a ceremony, led by a shaman, they will also often incorporate herb burning, chanting, singing and intention-setting into a unique experience you won’t find anywhere else. Guests at Dune are lucky in that there is a dedicated site on the property, but you can find similar setups all around the city. If you need a little more movement with your sweat session, head to the Tulum Jungle Gym. This is a beachfront fitness area that features a full gym made of tree trunks, coconuts and other beach-related equipment. It is also conveniently located on the main strip of Tulum Beach. >> For more information, visit tulumjunglegym.com.

EXPLORE + A DV E NT U R E

You can’t take a trip to Tulum without noting the abundance of cenotes (pronounced see-note-tays). There are literally signs for them everywhere, and they are a staple to the native Mayan culture. Cenotes are breathtakingly beautiful freshwater natural pools and underground cave systems, and depending on where you go, you can either dip your toes in or scuba dive into the darkest depths. Most require a small fee for entry and be prepared to shower off before entering the sacred waterholes. From there swim, explore the gorgeous natural features, and take plenty of photos. Some of the easiest to visit are Cenote Dos Ojos, Jardin Del Eden and Cenote Azul. These are close to Tulum Beach, but it’s best to try and go during weekdays or off-times to avoid crowds. >> For more information, check out this article: insiderstulum.com/best-cenotes-tulum/

Chichen Itza is the archeological site of what was once the largest Mayan city on the Yucatan peninsula. The Temple of Kukulcan is the prominent feature, and it is sure to thrill. This site, however, is a few hours’ drive from Tulum, so it’s only for those who rent a car.

EAT + D RI N K

There are never enough meals or cocktail hours in Tulum. The options range from five-star sushi restaurants that highlight the abundance of local seafood to the most authentic Mexican street food you will ever find. If you’re looking for clean, fresh dining, WILD features a farm-to-table international menu cooked on a wood fire oven and grill. The food is as spectacular as the tropical ambiance and signature mezcal cocktails. If you choose to try the street food—and you should—there are a few helpful tips for picking a vendor. Picky eaters or those worried about stomach issues should look for spots with long lines and lots of locals. This ensures the food is fresh. Also, trust your instinct and don’t choose the most adventurous thing on the menu. Go with something simple that you know you will like. >> For more information, visit wildtulum.com.
