NACAD TOURNAMENT The Bellevue Club’s Masters and Golden Masters basketball teams qualified for the NACAD tournament in Las Vegas. Earning 7th and 6th place (respectively), each unit played admirably throughout all their games. CONSTRUCTION UPDATE: REGIONAL BUILDING BRIEFS Seattle-Tacoma International Airport Seattle-Tacoma International Airport is about to get much busier, thanks to a variety of construction projects. The Central Terminal Renovation Project will add more than 10,000 square feet of dining and retail space, with a second floor of restaurants, family-friendly seating, and charging stations. Also underway: the modernization of the dated North Satellite; an updated internal baggage system; a hardstand facility for Concourse D; and a state-of-the-art International Arrivals Facility, which will include a massive sky bridge tall enough for aircraft to pass underfoot. East Link Light Rail — Bellevue Segments As Sound Transit continues to bring East Link—the Eastside extension of Link Light Rail—to reality, drivers and pedestrians still will feel the growing pains. Currently six East Link stations, as well as the downtown tunnel in Bellevue, are being constructed in staggered segments. These projects are expected to begin reaching completion beginning in early 2020, with a projected end date of 2023.
BELLEVUE-BASED SMARTSHEET RAISES $150 MILLION IN IPO
Smartsheet, a Bellevue-based company that creates cloud-based software for teamwork and project management, raised $150 million in its initial public offering. Its 11,633,920 shares of Class A common stock were set to be priced at $15 per share on the first day of trading, April 27. However, the company’s stock opened at a few dollars more per share, around $18.40, and closed at $19.50. Ten million of the shares come from the company itself. The rest are from a number of selling shareholders.

Bellevue Club personal trainer and cardio coach Melanie Baker recently flew halfway across the world to run the Barcelona marathon. A veteran marathoner, she says incorporating a long flight into your race plan can be challenging and takes a little more forethought. She passed along the seven lessons she learned from the experience so others can enjoy sightseeing after crossing the finish line.

WHAT SHE LEARNED 1. Arriving four to five days before the race is ideal. 2. Adjust to the new time as soon as possible. “I had a 1:00 p.m. flight, but it was 9:00 p.m. in Spain, so I immediately set my watch to the new time and tried to go to bed a couple hours into the flight so I could adjust quicker,” Baker says. 3. Drink a lot of water before, during and after flight. 4. After landing, try not to sleep until their nighttime! Stay up and avoid naps to adjust quicker. 5. Stay loose, walk around the next couple of days, and try putting in a few short runs (two to three miles) every other day until the race. 6. Pack race attire you know works. Don’t try anything new. 7. Bring your own fuel. Don’t rely on getting new bars or sports drinks there. They will have different brands and ingredients.

YOUR GUIDE TO A TASTING You might be a divine wine taster or a whiskey connoisseur, but what about tequila? written

or whiskey tasting, there’s an art LIKE wine to tequila tasting. The different smells,
colors and tastes all tell stories about the tequila, how it’s made and where it comes from. “It’s no surprise that most people’s knowledge of tequila only really extends as far as shots and margaritas,” Bellevue Club Director of Food and Beverage Tyler Hathaway says. “When you go to a tasting, you should expect much more variety.” Unlike wine, which is made of grapes that can be grown all over the world, tequila is a regionally distilled drink made from agave. Tequila is primarily made from blue agave from the area surrounding the city of Tequila, northwest of Guadalajara and in the highlands of the central Mexican state of Jalisco.

“The place where grapes are grown will affect the taste of a wine,” Hathaway says. “Unlike wine, tequilas are more affected by their aging process, what they’re aged in and for how long.” There are two basic types of tequila: mixtos and 100 percent agave. Mixtos use no less than 51 percent agave with other types of glucose and fructose sugars making up the remainder. This type is bottled in one of four categories based on aging time. From least to most: blanco (white), oro (gold), reposado (rested) and añejo (aged). Don’t expect margarita mix when you go to a tasting. Proper tequila tastings feature room temperature spirits, sometimes with a water back or citrus zest, if needed.

HOW TO PROPERLY TASTE TEQUILA

Pour one ounce of tequila into a brandy snifter. Hold the snifter at the base, not the bowl, and hold it up to your eyes to determine color. Blanco will be clear, oro and reposado will be golden and añejo can range from gold to a deeper amber.

Swirl the tequila to release the aromas, then, holding the rim of the glass about a half inch from your nose, give it a sniff. Tequila blanco may have notes of citrus, while reposado and añejo varieties may exhibit aromas of vanilla, honey, caramel, toffee or chocolate.

Take a sip of tequila and hold it on your tongue. Swallow and exhale through your mouth to mellow the “burn” feeling. Evaluate the texture and finish. Tequila can be smooth, mellow, fullbodied or light. The flavors that linger should be similar to those you smelled and are considered to be a “long finish.”

STUDENT ATHLETE Bellevue Club trainer Jerry Flynn was a college football player who admits he trained all wrong. Going from high school football at Tahoma High School to the college field at Yakima Valley College and then Western Washington University, he was plagued with hamstring injuries and a general sense of frustration with his performance. Adding confusion to the mix, he was spending all his time in the weight room to get stronger but had few results during game time. “I didn’t have power; I didn’t have explosiveness,” Flynn says. “We were doing stuff that just wasn’t right, and we were all doing the same thing at the time. I didn’t realize until I started studying the science of performance training that I was on the wrong path.” While at Western, Flynn got a degree in exercise science and ever since has dedicated his career to helping other student athletes train smarter. He’s since worked at Washington Institute of Sports Medicine, where he trained athletes from University of Washington and area high schools. In all this time, he’s boiled down a few often-overlooked tips for student athletes looking to make their career as successful as possible.

MOBILITY IS KING
Flynn says many athletes come to him worried that they can’t touch their toes. “That’s static flexibility, and it’s not a bad thing to have, but in sports it’s not nearly as important for performance. The more important thing is mobility. Athletes need to be able to move their body through ranges of motion involved in their sport with ease and no pain—it is much more important than a static, or a hamstring, stretch,” Flynn says. “But that’s everybody. I always emphasize mobility.” On the other hand, Flynn says some female athletes (think gymnasts) have too much mobility without the strength to properly balance certain movements, and therefore risk injury. No matter which side of the spectrum an athlete is on, Flynn says mobility should be trained with equal importance as strength work or endurance to maximize performance.
REWARD RECOVERY
The old adage “less is more” should be applied to student athletes who are balancing a heavy workload, practices and a social life, according to Flynn. “We’re finding that doing less is often better for an athlete than doing more,” he says. “I see it all the time: people are not recovering enough and they are drinking tons of coffee or caffeine without enough sleep to make up for it.” Flynn cites hydration, nutrition, sleep and stress management as critical aspects of recovery that should be weighted with equal importance. “A lot of kids will do fine in a training environment, but when it comes to critical times, they underperform because they are completely burned out. Sometimes the best performance enhancement is just getting kids to recover.”
PRACTICE DECELERATION
In sports like football, basketball, track, soccer, tennis and so on, the most common injury remains an ACL tear, and it often occurs when an athlete is decelerating, stopping and pivoting into a different direction. “If you just think about someone traveling really fast and then stopping to change directions quickly, you can see where stabilizer muscles become hugely important,” he says. When training athletes, Flynn uses a wide range of deceleration and agility drills to prepare students’ bodies for the task and to minimize the risk of injury. “There is no such thing as injury prevention, but there is a lot we can do for injury reduction, and a lot of that has to do with how to decelerate properly.” 32 | june 2018 reflections

Part of Flynn’s own frustrations, and injury, as a student athlete came from misunderstanding the mechanics of movement. “I didn’t train properly to use the glutes for springing actions. Later I realized I had been using the hamstrings to extend the hip—but they can’t be used as a hip extender, so I didn’t have the right mechanics,” he says. Flynn says none of his coaches at the time were breaking down the exact way in which he was running, sprinting or jumping, so he now spends time evaluating each athlete’s unique way of using their body, fixing specifics about ways in which people are compensating.
CORE CONCENTRATION
“A lot of kids these days are exposed to the concept of holding planks for extended periods of time,” Flynn says. “But actually we’ve found that the core fatigues in about 30 seconds, so what happens is they just start hanging on with whatever they have and they aren’t actually doing something productive.” Recognizing the core is still important for most athletic movements. Flynn’s solution to this training flaw is to practice very dynamic core training that integrates movement versus static holds or basic crunches. “Even with sports like baseball, where the arm is typically susceptible to overuse injury, you can help that with solid core training, teaching students to move from the base of their body,” Flynn says.
PSYCHOLOGICAL STABILITY
No matter how hard athletes train, injury is always a possibility with sport. In his experience as a trainer, he says getting back into the mental game can often be the hardest—and most neglected—part of the process due to a lack of trust with the injured area. If working with a post-injury athlete, Flynn is a big believer in trust-building exercises. “Going through drills to get them to trust that they, for instance, can balance on one leg again is important,” Flynn says. “Aside from physical drills, I also heavily encourage visualization, working on seeing themselves making the movements and performing again.”

The Power of Team Building Thane Liffick is the managing director of Slalom Consulting, president emeritus for Bellevue United FC and the father of two sports-loving daughters. Growing up as an elite soccer player, he says athletic endeavors made a massive impact on his personal and professional life, and now he spends his spare time sharing his passion for the sport with the Eastside community. The following is a conversation about how he believes sports have a uniquely endless capacity to bring people together.

Reflections magazine: Why soccer? Thane Liffick: I grew up playing soccer in Ketchum, Idaho, a little ski resort town, and the go-to team there was not the football team; it was the soccer team. We had great players and went to state, and I developed a passion for soccer there. RM: How did you get involved with the Bellevue United Football Club? TL: I was a volunteer coach for Bellevue United FC before I was a board member. What drew me to the board was that the people there had a lot of passion about making the program better and they had equal passion for improving our community, which really resonated with me. I visited the first board meeting and saw a lot of people with the same mind-set and thought, What a great group of people. I wanted to also make an impact, so I said sign me up.
RM: For those unfamiliar with the program, what is it about and what are the main goals? TL: We are a 501(c)(3) nonprofit organization that supports soccer in the West Bellevue area. We have almost 1,000 kids in the program divided between a recreational program and a select program. Our mission is about developing healthy, well-balanced kids and focusing on how to bring our community closer together. RM: What’s your definition of a healthy, wellbalanced kid? TL: It’s a kid who can be winning a game and handle that well, but also be in a more challenging game and stay positive about that. We want to teach our kids about good sportsmanship and how to have fun while building other teammates up.

You’ve chosen a vegan lifestyle, either for health or personal reasons—but what does that really mean? Whether it’s a new change or a lifelong practice, choosing veganism affects many decisions from the food you buy and products you use to the clothing you wear. Veganism is a lifestyle in which you choose to avoid any animal products. “Vegetarianism has a lot more flexibility,” registered dietitian and nutritionist Ashley Besecker says. “Some vegetarians eat fish [pescatarians] and eggs and cheese, while others don’t eat fish but will have dairy.” In simply going to the Club for dinner or a spa treatment, veganism limits your menu. However, it shouldn’t keep you from having a relaxing spa treatment or delicious dinner.

Each of the Bellevue Club’s restaurants have vegan options, as well as meals that are vegan-substitute friendly and most importantly, healthy. “In general, it’s important for everyone to eat a plant-based diet,” Besecker says. “First, think about the main vegetable, then build the rest of the meal around that.” At Splash, enjoy the Vegan Bowl prepared with these dietary restrictions in mind. Or opt for the Super Power Salad without goat cheese. The Sweet Potato Hummus and Guacamole are also appetizer options. At Luna, you will find sides of grilled veggies or grain-based sides with quinoa or fruit. The smoothies are all vegan friendly; just make sure the protein being used is plant-based for whichever drink you choose. Or opt out of the protein powder altogether. Polaris’s beet salad is an easy, delicious choice. Pair it with sides of cauliflower, mushrooms and Brussels sprouts to create a several-course meal.

VEGAN BOWL WITH CURRIED CAULIFLOWER SAUCE
Serves: four people
1 head cauliflower 1 large yam ½ cup olive oil 1 bunch asparagus, sliced 4 cups chopped kale 2 cups garbanzo beans 4 cups cooked brown rice 4 cups cooked quinoa Kosher salt, to taste Cracked black pepper, to taste 6 cups Curried Cauliflower Sauce (see recipe below) Cut the cauliflower into small florets. Peel and cut the yam into half-inch pieces. Toss the cauliflower and yam pieces in two tablespoons of olive oil, and lay out the vegetables on separate sheet pans. Season lightly with salt, and bake in the oven at 350 degrees F until lightly browned and the yams are tender (about six minutes for the cauliflower and 12 minutes for the yams). Set aside. In a saucepot or large sauté pan, heat the remaining olive oil at medium to high heat. Add the asparagus and kale, and cook two minutes to soften. Add the cauliflower, yams and garbanzo beans, and cook an additional two minutes. Stir in the cooked rice and quinoa, and cook until heated through (add a little water to prevent sticking if needed). Season as desired with salt and black pepper. Plate with 1½ cups curried cauliflower sauce per portion.
CURRIED CAULIFLOWER SAUCE
Makes: about eight cups
1 head orange cauliflower, chopped ½ cup white leeks, chopped ½ cup white onion, chopped 3 garlic cloves, chopped 3 tablespoons canola oil ½ cup yellow curry paste ¼ cup rice wine vinegar ½ cup white wine 3½ cups coconut milk 2 cups water 1 teaspoon kosher salt 2 teaspoons lemon juice In a saucepan, cook all the vegetables and garlic in canola oil at medium heat until the vegetables are soft (about six minutes), but do not brown. Add in the curry paste, and stir to coat the vegetables. Add the rice wine vinegar and white wine, and simmer to reduce liquid by half. Stir in the water and coconut milk, and reduce heat to a low simmer for 20 minutes or until vegetables are very soft. Season with salt and lemon juice, and remove from heat. While hot, puree mix in a blender until smooth. Serve warm.

Makes: four entrée salads
3 cups champagne 1½ cups sauternes wine ¼ cup granulated sugar 1 cup apple cider vinegar 1 teaspoon cardamom seeds 1 teaspoon whole black pepper 4 bay leaves 1 cinnamon stick 4 Bartlett pears (or preferred variety)

In a small saucepot, combine all the ingredients except for the pears and bring to a simmer. Peel the pears, quarter and remove core. Carefully add all the pear pieces to the simmering liquid. Cover and simmer until pears are tender all the way through, about 15 to 18 minutes. Turn heat off and cool pears in the liquid to preserve them. If using pears that aren’t sweet, you may want to add an additional ¼ cup sugar. Keep pears refrigerated in the liquid (these can be held up to one week in the cooking liquid). Enjoy pears sliced on arugula and baby kale salad with toasted almonds and golden raisins.

TALI ROSE ESTES
is only 12 years old, but she has been making headlines from the day she started running competitive track at 9. The 2018 season is no different. In April, Tali Rose competed in the Fifth Annual V12 Invitational in Jacksonville, Florida, an elite national event in the outdoor track season, and she took home two silver medals in the 100 and 200 meter races. As the season continues, her coaches predict that “she is poised to have a special year running national times,” says Joe Estes, Tali Rose’s father and coach. “And we just got started.” Joe brings plenty of athletic experience to the table. He played football at Southern Illinois University and briefly for the Los Angeles Rams and Green Bay Packers. After declining an offer to play on the World League, he turned to mixed martial arts and competed on an international stage.

“I was young back then, late 20s, and it was a lot of fun, a great experience.” Joe says. “But at some point it was time for me to make a career decision; fighting wasn’t paying well back then.” So he quit professional sports, met his wife, Maria Stoodley, who was an elite sprinter, and they started a family. Tali Rose is his eldest daughter, and she took to sports right away. “We knew Tali was going to be fast when she started racing and beating everyone on the playground, but we had no idea she was this fast,” Joe says. Both parents dedicate a lot of time to coaching and supporting Tali in her endeavors, but they also realized early on that her talents needed more direction than they could provide. Joe reached out to Colan Sewell, the coach and founder of the Sewell Institute of Speed in Kirkland. Sewell was hesitant to take such a young athlete, but Joe says all it took was one meeting.

“I’m meant to be a sprinter,” Tali Rose says. “The way I run, my form, everything.” But she explains it has to do with much more than athletic pedigree or a knack for good form. She genuinely loves running fast. “My dad played sports with me when I was younger, and I fell in love with everything. Anything athletic, I just love,” she says. However, it’s sprinting drills she finds herself practicing and perfecting in the hallways of her house or walking through the grocery store. “She’s a really fun kid,” Joe says of her passion for the sport.

Tali Rose is currently practicing on the track three days a week with two days of supplemental strength training, and all the hard work is paying off. She recalls one of her proudest moments occurring at a recent invitational that was held at Washington State University. “She was running the 200, and on one side was a girl from Gonzaga and one from Central Washington on the other. And she beat those girls,” Joe says. Tali Rose is the youngest girl to race in that particular invitational and is aware of her prowess, but she remains extremely humble about her accomplishments. “It’s just inspiring to know that I’m at the level of all those collegiate athletes,” she says. “It’s been really fun to meet all these new people too.” Joe simply hopes that one day Tali Rose will end up in a similar position. “My dream is for her to get a scholarship,” he says. But Tali Rose has other ideas. “The Olympics, that’s the goal,” she says. 54 | june 2018 reflections

There are few pleasures greater than sipping wine in a vineyard at sunset—except, perhaps strolling hand in hand with a sweetheart for an overnight in a lovely cottage amid the vines. Only a few such locations exist here in the Northwest, and they are largely concentrated in Walla Walla and Oregon’s Willamette Valley. Both are about a 4.5-hour drive from the Seattle area—flights to Walla Walla are a short 45 minutes.

Located four miles east of downtown, this stunning property offers a variety of accommodations. An estate vineyard lines the northwest edge of the property, and the gated entrance sets an elegant tone. The 35-acre estate was once part of the Kibler Farm, and most of the century-old buildings were in a state of disrepair when purchased by the Finches in the mid-1980s. They began renovating buildings, transforming the farm into the Mill Creek Inn. In September 2000, the property was sold to its current owners, Ken and Ginger Harrison, who continued restoring and transforming buildings. The small barn houses check-in for guests and the tasting room, and serves as a grand setting for breakfast each morning (possibly the best breakfast you’ll ever have).
