YOU WILL NEED Medium Saucepan
colander
Cutting board
Chef knife
Measuring spoons
Measuring cups
Large bowl
INGREDIENTS
2 oz. rice vermicelli noodles
8 rice wrapper (8.5 inch diameter)
8 large cooked shrimp – peeled deveined and cut in half
1 1/3 Tbsp. chopped fresh Thai basil
3 Tbsp. chopped mint leaves
3 Tbsp. chopped fresh cilantro
1 head shredded lettuce
DIRECTIONS
1. Bring medium saucepan of water to a boil. Boil vermicelli for 3 minutes or until al dente, drain, cool with cold running water. Set aside.
2. Fill a large bowl with warm water. Dip one wrapper into the hot water for a few seconds to soften. Lay wrapper flat. In a row across the center, place 2 shrimp halves and vermicelli, basil, mint, cilantro and lettuce, leaving 2 inches uncovered on each side
3. Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce
4. Repeat with remaining ingredients and wrappers.
