• Zest from 1 lemon
• ¼ cup of frozen, chopped spinach, measured after it is drained well
• ½ cup grated parmesan cheese
• ½ cup of reserved squash pulp, smoother than the pulp for the filling

INGREDIENTS FOR LASAGNA FILLING:
• 8 cooked lasagna noodles
• 1 teaspoon of pepper

• 1 tablespoon of minced garlic
• 1 teaspoon salt
• ½ cup grated parmesan cheese
• ¼ cup white wine
• ½ cup grated asiago cheese
• 2 ½ cups of cooked butternut squash for entire recipe (2 cups will be for filling mixture, ½ cup will be used in the sauce)
INGREDIENTS FOR THE SAUCE:
• 1 teaspoon pepper butternut squash and spinach lasagna
• 1 egg

4. Spoon sauce on top of each lasagna roll up and top each one with parmesan cheese.
2. Next add in ½ cup of pureed squash, whisk until smooth on low heat
3. Spread 3 tablespoons of filling on each cooked lasagna noodle, then roll up and place them seam side down on a shallow baking dish
7. Could also cook, wrap and freeze this entrée as well.
Cream sauce
1. Prepare squash ahead of time. Cut lengthwise, with skin on, remove seeds
2. Add in ricotta, egg, cheeses, minced garlic, lemon zest, salt and pepper, mix together well, and then fold in spinach.
2. Ladle a ½ cup of sauce on the bottle of the baking dish

2. Roast the squash, cut side down at 350 degrees until tender and a knife goes through with ease, close to an hour.
1. Mash 2 cups of the squash pulp into small chunks, making it easy for spreading
1. Mine shallots, then sauté them in butter with sage leaves until slightly golden, then deglaze with white wine, reduce wine down 75% and then add vegetable stock. Let simmer for 5 minutes.
3. Whisk in heavy cream and add grated parmesan cheese
1. Lay out cooked lasagna noodles on a flat surface
6. Serve hot with extra sauce available.

5. Baked uncovered at 350 degrees in an oven for 15 20 minutes, sauce will be set and top will be lightly golden brown.

• 1 tablespoon all purpose flour
¾ cup caramel topping
• 1/3 cup granulated sugar

• 3 medium size apples (about 1 pound), peeled, cored and cut into1/4 inch thick wedges (about 4 cups)

Puff Pastry
1. Lay puff pastry out flat and cut into 8 equal 4’ x 4’ squares
4. Combine water and egg white, brush over edges of dough and sprinkle each galette with raw sugar.
3. Score bottom of each pastry
• 2 teaspoons lemon juice
• ¼ teaspoon salt
3. Could also add vanilla ice cream or whipped cream
1. Combine sugar, flour, lemon juice, vanilla, salt and ground cinnamon, then toss with apples
3. Fold edges of dough toward center, pressing gently to seal (dough will only partially cover apple mixture)
