This National Seafood Month, we're celebrating the small but mighty tinned fish! While many cultures have a long history of eating tinned fish, they have come into vogue recently, with the likes of Bon Appétit Magazine hailing their thrifty versatility and a bevy of other journalistic outlets noting them as the internet’s latest obsession. But some tinned fish are more sustainable than others! We'll share information (and a recipe or two!) about why low trophic level fish are good for you and good for the planet.
To celebrate Hispanic Heritage Month, we're partnering with Traci Des Jardins – a two-time James Beard Award winner and the chef behind Bon Appétit's restaurants Public House and el Alto – by spotlighting her recipes by spotlighting her recipes on cafebonappetit.com, social media, and in our cafés!
The Bon Appétit Mentorship Program is a resume-building certificate program tucked inside a typical student job with Bon Appétit. Partici pants embark on a 10-hour program in a subject of their choice, taught by a subject matter expert on Bon Appétit’s corporate team.

Though most of our menus rotate on a daily basis, there is always a need to highlight a dish to keep things fun. We like to think about this like throwing a spotlight on it!
These are your monotony breakers, your low e ort menu-change ups. A place in your adventure plan where you can show consistent variety of programming, with a small amount of operational e ort. Of course, you can take a spotlight theme and run with it and turn it into a full-blown event or 'play' e ort. Or it can just be a menu special. This is your adventure, remember? You choose.
STEP 1: Plan a SPOTLIGHT using our ideas as inspiration and/or create something on the fly!
STEP 3: Pop the sign into our SPOTLIGHT easel-back sign at the station.
STEP 4: Talk about it on social media using our fun, stop-the-scroll patterned tools! Check out the library.

STEP 2: Add it to your menu in café manager, tag it as a SPOTLIGHT, and print out the sign with the rest of your daily specials. Have you gone digital? Pop over to the Marketing Help Desk to submit a request to digital signage SPOTLIGHT.

WORK SMARTER, NOT HARDER How can you use these spotlights, the work horses of your business plan, and get the maximum wow, in the most e cient Approachway?this from a campus-wide, holistic approach! Choose a spotlight theme/dish and rotate the same menu item between cafés for the week. Run a spotlight for more than one day at the same café. Consider centralizing prep for the spotlight dish out of one location. What ideas do you have? WHY NOT CHANGE IT UP? Spotlights don't always have to be all about an entrée station! Why not take over your kettles, pizza oven, or bakery and spotlight soups, individual pasta bakes, or desserts?

A Spotlight+ is still easy to activate like a regular spotlight but includes a little razzle dazzle [guest handout or a supplemental station sign] that you can download and customize on your own to add another level of fun to the experience. Here are a few of our favorites!
Take over a station and plan a menu that can be easily packaged for your guests to pick up and take outside. Feature the menu on one side of each accompanying razzle dazzle slipsheet, and entertain them with the fun on the flip side! Check out the Venture Outside-themed menu inspiration to help your team curate the perfect meal to accompany their adventures!
Do your guests fancy grammar and spelling fun? Then these are your ticket to a station takeover with a smile! Write the menu featuring one or more of the food words in our di erent razzle dazzle word games. Download, print, and have them ready at the station for guests to enjoy with their meal.

Every season has produce that some guests may not easily recognize.
