F&L JANUARY RECAP 2022


Omicron posed several challenges in January. Most tenants returned to working from home; businesses stopped hosting company-sponsored events, resulting in cancelations and postponements to all catering and events. While events were slow, Foundry & Lux stayed productive. Management was busy preparing for the opening of Chandlery, increased safety training for all staff members, and created new menus items and offerings to improve the tenant experience. We have begun daily deliveries to Cytokinetics, a KOP tenant, and set up a employer covered subsidy program for their staff to drive new business opportunities. Graphite Bio, a tenant of the Shore, is currently running a 100% subsidy for their employees, and Foundry & Lux is delivering lunch orders daily. Once Chandlery opens, we will shift to a monthly employee stipend to meet Graphite Bio’s subsidy needs.

FARMER’S MARKET January farmer’s market was a big hit! Capay Organics sold a variety of organic products such as farm fresh eggs, tangerines, nantes carrots, purple kale, cabbage, herbs, heirloom lettuces, kohlrabi, jarred jams, sauces and much more. Bon Appetit showcased fantastic local artisans such as Cowgirl Creamery cheeses, and Panorama breads so tenants could create restaurant worthy cheese boards at home.


MEET THE TEAM

KARLA RAMIREZ Assistant General Manager of F&L. Karla has been working at Foundry & Lux since it opened in 2016.

Karla began her career at F&L as a barista and quickly worked her way up to serving in the lounge. Her passion and dedication for her craft promptly caught the eyes of management and they promoted her to supervisor. In 2018, she began her rigorous training to become a manager through Bon Appetit's coveted Manager in Training program. Karla's dedication has moved her through the management ranks, and now she is the Assistant GM for Foundry & Lux. Stay tuned to see what Karla accomplishes next!

The Foundry & Lux team has 93% employee retention. The average length of employment for the team is three years, and multiple employees have been with the restaurant since the opening. The team is incredibly grateful to have HPP as a client, and their support in creating a wonderful and productive work environment to best serve tenant needs.

Sales: Sales for the four-week period totaled ~$105.7k with a weekly average of ~$26.4k. January was an extremely difficult month financially. With the omicron surge, all company-sponsored events were canceled or postponed and tenants were asked to work from home. Labor: Management monitored labor closely and made as many reductions as possible without impacting service levels. Other Expenses: Total other expenses were at 23.5% for the period. Expenses included services for the culinary garden, computer expenses, catering vehicle insurance, and safety equipment. Total Losses: F&L managed to stay within budgeted losses of ~$67k despite the additional challenges of Omicron. Overall losses were ~$67k for the 4week period. January is the first month we have not posted a profit since September 2021, with losses of ~$12k for that 5-week period.


A HELLO FROM NASHVILLE FROM SALLY AND DREW CRESSMAN Bon Appetit custom-made an F&L branded hat and apron for Drew Cressman. We included our very first Foundry & Lux recipe book so he could enjoy a little of F&L from home. In addition to being a retirement gift, this was truly a heartfelt thank you for his years of leadership and support.


CHANDLERY AT THE SHORE After years of waiting to open, Chandlery will finally welcome guests and tenants to enjoy a specially curated café menu. The menu highlights local ingredients and vendors crafted into a convenient grab and go format.

Silverlake 3 day catering ~$24k projected revenue for week of 2/28. Ongoing daily lunch deliveries to Graphite Bio, tenant of the Shore. Ongoing daily lunch deliveries with subsidy to Cytokenetics, a KOP tenant. Setting up employee meal subsidies for J&J and Genentech. Participation in San Francisco Beer Week. The upcoming opening of Chandlery March 2nd.
