Message from Councillor Richard MacRae. Following an application to FCC Communities Foundation, Broxtowe Borough Council has been awarded a grant of £49,500 for refurbishment work to the play area at Pasture Road Recreation Ground, Stapleford. This, together with funding from the Council’s Pride in Parks Initiative and £5,300 from the Council’s Construction Partner United Living Property Services, will allow a major scheme to take place in late spring. Following consultation last year, the scheme has been designed to include a range of inclusive and accessible equipment for children up to 14 years of age. This is great news for the area and as one of the Stapleford North Ward Councillors I am grateful to the hard work of the Officers at Broxtowe Borough Council and grateful to all of those who took part in the previous consultation. WINTER WARMERS Spiced Carrot and Lentil Soup Ingredients 2 x tsp cumin seeds Pinch chilli flakes 2 tbsp olive oil 600g carrots, washed and coarsely grated (no need to peel) 140g split red lentils (red split lentils are by far the quickest to cook of the lentil family. They need no pre-soaking unlike many legumes and as they are split (the skins removed so they split naturally into two halves), they cook very quickly. 1litre hot vegetable stock (from a cube is ok) 1 onion chopped 1 clove garlic (optional) 125ml milk (to make it dairy-free, see below) plain yogurt and naan bread, to serve *You can also add some tomatoes if you wish Method 1. Heat a large saucepan and dry-fry 2 tsp cumin seeds and a pinch of chilli flakes for 1 min, or until they start to jump around the pan and release their aromas. 20
2. In another pan fry chopped onion and one clove of garlic 3. Scoop out about half of the spice mixture with a spoon and set aside. Add 2 tbsp olive oil, 600g coarsely grated carrots, 140g split red lentils, 1l hot vegetable stock and 125ml milk to the pan and bring to the boil, add the onion and garlic mixture 3. Simmer for 15 mins OR until the lentils have swollen and softened. 4.With a stick blender or in a food processor whizz until smooth (or leave it chunky if you prefer). 5. Season to taste and finish with a large spoonful of plain yogurt and a sprinkling of the reserved toasted spices, or chopped parsley. Serve with warmed naan breads. Make it dairy free For a richer but dairy-free alternative, use a can of reduced-fat coconut milk instead of the milk.

Chicken and Prawn Pad Thai Ingredients
Method
125g dried rice stick noodles, broken in half (or plain noodles) 1 tbs sunflower or olive oil 200g chicken thigh fillets, cut into 2cm pieces 8 large green prawns, peeled, deveined 1 egg, lightly beaten 100g bean sprouts 1/2 bunch chives cut into 3cm pieces Chopped roasted peanuts(optional) and lime wedges, to serve PAD THAI SAUCE 2 tsp sunflower or olive oil 2 garlic cloves, crushed 2 small red chillies, thinly sliced 1 tbs for brown sugar 2 1/2 tbs tamarind puree 1 tbs fish sauce 1 tsp light soy sauce
1.Cook noodles according to packet instructions. Drain and rinse under cold water. Set aside. 2.For the pad Thai sauce, heat oil in a wok over medium-low heat. Add the garlic and chilli, and cook, stirring, for 1 minute or until fragrant. Add the sugar, tamarind, fish sauce, soy sauce and 2 tbs water, and cook, stirring, until sugar dissolves. Bring to a simmer and cook for 2-3 minutes or until reduced slightly. Transfer to a small bowl and set aside. 3.Wipe wok clean and add oil. Add chicken

and cook, stirring occasionally, for 5-6 minutes or until golden and cooked through. Add prawns. Cook, and turn for 2-3 minutes or until pink and cooked through. Push prawns to one side with chicken and add egg to empty side. Cook, stirring, for 2 minutes or until just set. 4.Add bean sprouts, chives, cooked noodles and pad Thai sauce, and cook, tossing together, for 2-3 minutes or until heated through. 5.Divide between bowls and serve immediately, sprinkled with roasted peanuts and with lime wedges on side.

Omicron Hospitality and Leisure Grant (OHLG) Launched Broxtowe Borough Council will be administering two grant schemes, to support businesses in the Hospitality, Leisure and Accommodation sectors or those businesses supporting these. The first of these schemes is the Omicron Hospitality and Leisure Grant and will be live for businesses, meeting the qualifying criteria, to apply for from 11 January 2022. The scheme will close for applications on 20 February 2022 and all final payments must be made by 31 March 2022. Businesses occupying hereditaments appearing on the local rating list with a rateable value of exactly £15,000 or under on 30 December 2021 will receive a payment of £2,667. Businesses occupying hereditaments appearing on the local rating list with a rateable value over £15,000 and less than £51,000 on 30 December 2021 will receive a payment of £4,000. Businesses occupying hereditaments appearing on the local rating list with a rateable value of exactly £51,000 or over on 30 December 2021 will receive a payment of £6,000. Further information and the application form can be found on the Council’s Business Support page The second grant scheme will be to assist those businesses that support the Hospitality, Leisure and Accommodation sectors. The Council is still awaiting details of the allocation of this grant and will be developing the policy to support businesses as soon as this information is received. In addition, the Council will also develop a Business Rates Discretionary Rate Relief called the Covid Additional Relief Fund (CARF), to support businesses that have not received any previous support but have been negatively affected by Covid-19. This scheme will be developed over the coming weeks and further information can be found on the Council’s Business Support webpage .www.broxtowe.gov.uk Leader of Broxtowe Borough Council, Milan Radulovic said: “The hospitality and leisure industry has been severely hit as a result of the Covid-19 pandemic. Glenn Tilbrook has more than earned his place at pop’s top table as one of our most cherished singers, guitarists and songwriters, not to mention an in-demand and endlessly endearing live performer. But more than 40 years after he first answered an ad placed by Chris Difford looking for like-minded sorts to form the band that became the much-loved evergreen Squeeze, an ending is nowhere in sight. Such is the continuing work ethic of a fellow who’s never been far from the action since Squeeze made their recording bow with the Packet Of Three EP in 1977. Those humble three tracks led to such enduring pop classics as Take Me I’m Yours, Cool For Cats, Up The Junction, Another Nail In My Heart, Tempted, Labelled With Love, Black Coffee In Bed, Hourglass (this could go on for a while...), not to mention landmark albums like Argybargy, East Side Story and Some Fantastic Place. Squeeze’s demise in 1998 (though not permanent) saw Glenn embark on a solo career that spawned the albums The Incomplete Glenn Tilbrook (2001) and Transatlantic Ping-Pong (2004), showcasing an ever-maturing songwriting talent. Arguably, though, Happy Ending is Glenn’s most personal work to date, a series of evocative portraits of time, people and places, that included writing and vocal contributions by his own children Leon and Wesley, in addition to old friends Simon Hanson (Fluffers/reunited Squeeze drummer) and Dennis Greaves (Nine Below Zero, also Glenn’s compatriot in the side project band The Co-operative).

Roxie Mawbey, 33, from Walton-onTrent near Burton, has raised more than £450 for the charity by taking part in gruelling 10k ‘Wolf Runs’ - tough events that involve mud, trails and obstacle running. Participants run, climb, jump, wade, crawl and even swim their way through a multi-terrain course. Roxie, mum of Ellis, seven, has been taking part in the runs with her friend, Trice Davis, and dedicating her runs to her late aunt Emma Moore, who she says was “more like a sister”. She says that she has been overwhelmed with the support and has nearly doubled her initial fundraising target. “I hadn’t checked how much I had raised until after the last Wolf Run. Seeing how much my family and friends had donated, it just means everything,” said Roxie, who works at Measham Leisure Centre with Trice. “Everyone knows what Emma meant to me. It’s just so nice that they would support me doing something that I wanted to do anyway, just for the fact that they know it means a lot to me, because it was Emma. I am just very grateful to them all, really. I think I am as mad as a hatter!” 48
Roxie explained how she had always been extremely close to Emma, who was “so much more” than an auntie. The pair used to talk every other day on the phone, and Emma “could not do enough” for Roxie’s son Ellis. She said: “The age difference between me and Emma was not an awful lot, probably about 15 years, so she was more like a sister growing up. I used to go and stay with her when I was little. When I went to university at Nottingham, I actually lived with her for a while, with her being in Sandiacre.
“She just could not do enough for people, and she was so friendly. Most people have got a couple of close friends and a few acquaintances. She had got about 100 of the closest friends. They were family as much as we were. My mum and I still meet up with her friends. “She was just amazing. In our family, we are still so close because we had Emma and we have got each other. Everybody says their family is amazing, but she truly was.” Emma was first diagnosed with breast cancer when Roxie was 22. Initial surgery removed the cancerous tissue, but the disease came back a few years

later. This time it had spread and was too advanced to treat. Emma had recently met the man who was to become her husband, and with her latest diagnosis, their wedding was brought forward to September 2015. She died in April the following year. Roxie said that throughout her diagnosis and treatment, Emma always remained cheerful and utterly selfless. “Emma was always happy. She always said that she would rather it had happened to her than to one of us who had children. She was very selfless like that. She said: ‘I’ve not got kids. I’ve got no-one dependent on me.’” So, what made Roxie choose Wolf Run events to raise money for Treetops in memory of her aunt? “Emma received care from Treetops Hospice and came for some lovely events to get spoiled, so this was my way of giving something back to the charity. I’ve always wanted to do a Wolf Run and if I set my heart to something, I will do it, and I just go hard core.” Treetops Head of Community Relationships, Adela Appleby said: “Our huge thanks go to Roxie and Trice for tackling these fun but muddy challenges for Treetops. Make 2022 the year to go Green This January, Broxtowe Borough Council is asking residents to sign up for Green Rewards – it’s free, easy to use and by signing up you are joining hundreds of Broxtowe users who are spending a couple of minutes each day to tackle climate change in Nottinghamshire. How does Green Rewards work? Users are rewarded ‘Green points’ for logging actions which reduce their carbon footprint and can then be exchanged for vouchers. There is also a leaderboard which participants can use to monitor how Broxtowe is performing. As part of Green Rewards, Broxtowe Borough Council is promoting small changes residents can make to make a big difference starting in January 2022. How have Broxtowe users already made a difference? Through participating in Green Rewards and carrying out a total of 5,000 green actions users have saved: 17 tonnes of carbon 77,000 litres of water 5 tonnes of residual waste 1603 single use items How can I make a difference? The different actions that residents can take to earn points fall under 6 categories with Green Rewards – Travel, Reduce, Reuse, Recycle, Energy and Carbon, Get Involved, Consumption and Nature. Here are some examples of how you can easily get involved and points you can earn for activities. 1.Choose public transport instead of 56
taking your car (worth 100 points) – buses and light rail networks release fewer carbon emissions - consider travelling via the tram network which runs through Broxtowe from Toton Lane. Make sure you know what to recycle (worth 100 points) – putting incorrect items in your green-lidded bin can contaminate the rest of the waste and make it unrecyclable. 3. Waste No Food In 2022 Fruit is attractive and good for you, but it also goes off. Banana’s and apples are the worst culprits. Often we are guilty of leaving them in the fruit bowl, they become withered and brown and then they’re discarded. What a waste of food and money. Try giving them a new lease of life by using them in smoothies. If you haven’t got a blender, it really is worth investing in one , they come in various sizes and prices, shop around to get the best price. A daily smoothie can offer a super convenient way to get your fruits and veggies in while also nourishing your body with many essential vitamins and minerals. The key is to maximize those benefits by focusing on whole, nutrient-dense foods while avoiding added sugars as much as possible. Children can be fussy with certain fruits or vegetables, a smoothie can be fun to make and drink! The best fruits to blend are: Banana’s mango’s, peaches, pineapple, berries, soft fruit, and cooked hard fruit like rhubarb. It’s worth looking in the supermarket fruit sections, as many sell fruit off at knock down prices and are still in date, especially bananas. A smoothie usually has the staple ingredients of banana, milk, and yogurt. Ice is optional and add honey if necessary. You can also add a small handful of oats with the fruit. There are so many yogurts, and milk products out there to choose from, regular cow’s milk or a dairy-free alternative can be used. If using a plant-based milk, here are some of the recommended ones to use: Oat milk – a good choice since it tastes the closest to regular milk and is super creamy, Almond milk, Soy milk, Coconut milk. Yogurt is actually a pretty crucial component to the smoothie formula.Not only is it thick and adds a wonderful creaminess to the mix, but it’s also got a slightly tangy bite that helps to balance out the sweet fruit. Plain, unsweetened yogurt or Greek yogurt is preferred. However, if you like your smoothies on the sweet side, you can always try using a flavoured yogurt instead. Plant and nut-based yogurt also work equally as well and can be used if on a vegetarian or vegan diet. And the Apples left in the fruit bowl? Chop them up and use them for a apple crumble . Chop them in cubes, soak in lemon juice, and then add to salads. Or heat them in a pan until soft, leave to cool , and add them to the smoothies. Come and try it for free. The first session you attend will be a free taster session. After this, there will be a fee of £2 per session, covering everything you need, plus a ‘half-time’ cup of tea or coffee + biscuits! Subsidised places are available. NEWS FROM THE DIG IN COMMUNITY ALLOTMENT STAPLEFORD Last month we ran three Christmas willow wreath workshops and were blown away by how creative you all are! Thanks to everyone who attended and for Pulp Friction for keeping us all warm with hot drinks and snacks from the catering shed. Dig In Recipe Of The Month Winter Tuscan Soup Serve 4 Ingredients 14oz tin Borlotti beans, drained and rinsed 250g (8oz) root vegetables 1 clove garlic crushed 1 medium onion 1 stick celery 100g (3-4os) winter greens 2 tblsp tomato puree 2 tblsp goose or duck fat , or cooking oil 2 litres of stock Method Peel and chop all veg except the greens to size of chunks you like in soup Saute with the garlic in the fat/oil until slightly softened Add tomato puree and stir Add stock & bring to the boil Add roughly chopped winter greens & beans, then simmer for about 10 mins and season If it tastes a little dull, a teaspoon of pesto or balssamic vinegar will lift it. Serve with crusty bread. 62

Dig In is Stapleford's very own community allotment, run by local people for local people. Based at the Albany Allotments site on Pasture Road, it offers lots of planting space, knowledge, experience, and the opportunity to get growing together in a friendly and helpful environment. It is open to all and it is completely free; all the tools, seeds, and everything you need to get gardening are provided, whatever your age or level of ability. We have people coming to the site from a variety of backgrounds and with different levels of growing experience. It doesn't matter if you don't know where to start, volunteers help each other out and we all work together. We run regular Wednesday and Saturday sessions 10 am to noon at the site which are open to all to get involved. Everyone who takes part gets to take something away with them. That might mean new skills to try in their own garden, or plants to grow at home on a patio, balcony or yard.
