The news of a vaccine for Coronavirus was the perfect early Christmas present, however, we must wait and see what this festive season will look like. Large indoor gatherings are out of the question, however, small scale celebrations might be permitted, adding some much needed sparkle to our year. Sadly, festive staples like the Christmas Market at Belfast City Hall, pantos and shows can’t go ahead, but there will be magic in the air at St George’s Market and elsewhere. See visitbelfast.com for up to date information about virtual and live events. While it may be quieter, it’s a relief to escape the usual frenetic run up to Christmas. After having space and time to enjoy Advent with our nearest and dearest family and friends we may decide we don’t want to go rushing from one social engagement to the next when Christmas comes around next year. This strangest of years has seen a huge increase in householders doing home refurbs – that holiday money had to go somewhere, after all! Now everything should be in place and ready for the decorations to go up. Every year there are a few brave souls who put their tree up early in November. Among them is Co Armagh woman Donna Green, who is determined to make this Christmas as special as ever for her family. Given that Donna and husband Stephen lost one of

their four children just three years ago, her heroic efforts are a beautiful illustration of the spirit of Christmas. Those who splashed out on home improvements and those who didn’t are finding they have been spending less through the lockdown and the second wave of restrictions. For some, this is no time to loosen the belt while for others, there’s a bit more cash in the pot for spending on Christmas this year. Co Armagh mum Donna Green has led the way with festive cheer by putting her Christmas tree up at the start of November this year. The Lurgan family’s regular North Pole visitors Buddy the Elf and his son Alfie have also arrived a month earlier than usual to help add a bit of fun to the Christmas countdown. And it’s not just at home that everything is merry and bright but Donna’s tree has also lit up social media where thousands have viewed it on Facebook with many following her lead and decking their own homes out. Donna (45), a cleaner is married to Stephen (45), a lorry driver and they had four children, Ryan (11), Stefan (28) and Miseeire (22). The couple tragically lost their son Tiernan (24) in January 2017 when he died from an asthma attack. And while there is always the sadness of an empty chair at the family’s Christmas table, for the sake of her other children Donna is determined to keep up the tradition of making Christmas special. She says: “Christmas is my favourite time of the year. “I usually put my tree up at the end of November but because of Covid I thought we all needed a bit of cheering up this year so I decided to put it up early. “I think this year more than ever we need a little bit of Christmas spirit and it just makes everyone feel a bit happier. “My sisters, who are in our bubble, called to see it and it put a smile on their faces and that’s why I put it up. “I know things will be very different this year but I am determined to keep it festive for the family. “Ryan is already getting excited about Santa coming and he is delighted that Buddy and Alfie have arrived early. “Last year they left him a note saying they had an accident in mummy’s room and had covered my face in crayons and markers, so Ryan is hoping they will do the same this year!” Donna is one of seven children and family means the world to her, especially at Christmas. The family traditionally get together for a Christmas meal out in December but due to Covid have had to accept that won’t be happening this year. Visiting each other on Christmas morning is another tradition which is uncertain because of the health crisis. However, despite the restrictions Donna believes that Christmas can still be magical. She adds: “If we aren’t allowed to visit each other’s houses, at least we have video calls and we can still get together as a family. “It is hard not being able to get out and socialise with family and friends and it does put a bit of a dampener on things but I think we can all try and make it as special as we can.”

Christmas 2020 is set to be as strange as the rest of the year has been – but it hasn’t dimmed in importance. The season of peace, love and goodwill to all people is more relevant than ever in this turbulent, troubling time. As ever, planning is key to enjoying every moment. Settle down with a cuppa and a notebook or your notes app and start making that list – you’ll be glad you did!

Tot up: Start by working out your budget for gifts and the expensive Christmas food shop. Get a rough idea of what you need to spend on your nearest and dearest, then list everyone you need to buy smaller gifts for so you don’t leave anyone out.

Keep it real: If you realise you don’t have enough to buy everything you’d want to, be realistic. Avoid getting into debt over Christmas presents when there are cheap alternatives. Pinterest is full of ideas for home made gifts that will show you care. If you normally buy for extended family, explain if you can’t any more – the pressure to do so is coming from you, not them.

Post it: With just five weeks until Christmas day, one thing that can’t wait is Christmas cards to family and friends overseas. Buy your stamps along with the cards and cut down on hassle. The slower pace of life this year and renewed emphasis on quality relationships may well see more of us turning to this time honoured tradition.

Clear and clean: It’s hard for Christmas decorations to compete with a lot of clutter. Make time to get all your rooms looking their best for this most wonderful time of the year. All those good linens, towels and tableware gathering dust, waiting for a special occasion? Their time has come! Don’t just take them out for Christmas day but make every day of the festive season special.

Time for you: There may not be quite so many social occasions this year but you can still look your best. Make those hair and beauty appointments asap as it’s a busy time even in a normal year – worse when demand is higher after salons have been closed for a month.

Eat, drink and be merry... in moderation. It’s easy to overdo both, whether you’re having a wonderful time or frustrated at not being able to do everything you’d like to. On nights out, plan ahead how you’re getting home, either by agreeing a designated driver or prebooking your taxi. Above all, don’t drink and drive.

Tune in: For some people Christmas can be tough at the best of times and this year that number may be higher. Whether they’re grieving a loss or feeling especially lonely, what is the best of times for some, is the worst of times for others. A phone call or a chat in the street can go a long way to spreading the festive spirit.

It may be a different sort of Christmas this year, with smaller get togethers replacing large scale parties, but still lots of opportunities to get glammed up. The eyes have it in this mask wearing era and smokey, thick lashed eyes smoulder above nude lips in one of the season’s key looks. Add drama with a cat’s eye flick of eye liner. For a brighter look bring a pop of colour to your peepers with a sweep of red, blue or pink below the bottom lashes. Soft blush works best with the neutral trend but since it’s Christmas, up the ante with glittery highlighter. Alternatively, perfect your pout with sultry red or berry lips with soft, shimmering eyes for day time and bronze or gold for nights out. Ombré makes lips look fuller. Line the lips first, then apply the lighter shade of lipstick all over with a brush. Ivan is one of thousands of people who rely on NICHS’s vital services during the COVID-19 pandemic. Ivan was diagnosed with cancer in 2015. He went through chemotherapy but during his recovery he experienced problems with his lungs. It was during his Respiratory Rehabilitation that he was introduced to Pauline Millar of Northern Ireland Chest Heart and Stroke. Since meeting Pauline, Ivan participated in NICHS’s Taking Control SelfManagement Programme – a programme designed for individuals with long-term health conditions which aims to help those individuals develop the skills and confidence they need to better manage their condition. Before attending Taking Control, Ivan would very rarely leave his home due to his condition, but thanks to the programme he came out of his shell and re-engaged with life again. Ivan is now on oxygen, which can limit some of the things he can do. However, he does not let that stop him from getting out and about to visit family and friends. He even took part in a sponsored walk at the Stormont Estate just six months after starting the Taking Control programme. Ivan and Margaret continued to manage his condition each day, and thanks to the support and encouragement and the

knowledge gained from NICHS, he has been able to take on and achieve many challenges. But, sadly since early March, Ivan has had to stay in his home to avoid COVID-19. Speaking about how the pandemic had impacted on his life, Ivan said: “Due to my condition, my muscles can deteriorate quickly and in the space of a year, I have

It would have seemed unimaginable a year ago but the Christmas party season is set to be a very different beast this year – hopefully not a turkey! We may be relying on Strictly for our fix of dancing and glitterballs but that doesn’t mean there won’t be opportunities to have some sort of celebrations. While normally, everyone would have been filling their social calendar from November, this year hotels and restaurants were struggling to plan ahead, at the time of going to press. It’s likely that small get togethers will be permitted as well as dinners out and smaller events that can take place outdoors. Instead of crowded spaces and frenetic activity, Christmas 2020 is set to be much more akin to the yuletides of yore. It’s more Dickens, less diamante. Manage your own expectations by working out what is possible and desirable now and start making plans. All being well, we’ll be stepping out safely for dinner with friends, family and colleagues and supporting the beleaguered hospitality industry. Normally hotels would be at the centre of Christmas celebrations with shop and stay trips particularly popular. With all the uncertainty this year, why not go ahead and buy or ask for gift vouchers? Once life returns to normal, you can celebrate properly and in grand style. Now that’s something to look forward to!

Mince pies were originally made with minced beef or lamb, mixed with spices and (when available) some fruit for flavouring. Over time the fruits became more important and the meat content was reduced. Nowadays the only element of meat in mincemeat is beef suet. It is hard to find ready-prepared suet but, given a little warning, any good, reputable craft butcher will provide you with a piece of fresh suet which can be easily grated with a coarse grater or chopped in a food processor. Although flaky (or puff ) pastry was traditional for mince pies, it is very rich and high in fat; short crust pastry is more often used today.

1 tsp nutmeg, grated 1/2 tsp allspice, ground 1/2 tsp cinnamon, ground 1 lemon, zest and juice 125ml / 4 fl oz Irish Whiskey

INGREDIENTS FOR THE MINCEMEAT: 700g / 11/2 lb dried fruit (equal proportions of sultanas, raisins and currants) 110g /4oz mixed citrus peel (optional) 225g / 8oz moist dark-brown sugar (muscovado) 110g / 4oz beef suet, shredded 60g / 2oz ground nuts (hazel or almonds) 1 large cooking apple, peeled, cored and finely chopped

METHOD 1. Make the filling two weeks in advance to allow the flavours to develop. 2. In a large mixing bowl stir all the ingredients together until well mixed. 3. Cover and leave in a cool place for 24 hours. Mix well again before potting into clean preserving jars. 4. Cover tightly and store in a cool, dark place. Lightly grease the base of a shallow 12-space bun tin. 5. Roll out the pastry and use a 9 cm / 31/2 inch pastry cutter (or whatever size fits your bun tin) to cut out 24 rounds. 6. Place one in each of the twelve bun tins then fill it with about a heaped teaspoon of the mincemeat. 7. Dampen the edges of each pastry case before placing the remaining 12 pastries on top as lids. Press the edges together to seal firmly. 8. Bake at 220°C / 425°F / Gas 7 for about 20 minutes or until golden brown. 9. Remove the pies from the tin carefully and place them to cool on a wire rack. 10. Dust with icing sugar. Mince pies must be served warm. They are wonderful served with a little whipped cream.

8. When ready to cook, set the temperature to 350 degrees F and preheat, lid closed, for 10 to 15 minutes. 9. Bake at 350 degrees F for 8 to 10 minutes or until lightly browned around edges. Let cool. 10. For frosting, whip ingredients on high speed with mixer until frosting forms peaks and holds its shape, about 5 to 7 minutes. 11. Assemble the house using the frosting

as glue by setting them up on a cardboard base, and piping the royal icing at the joints with a medium plain tip from the inside. 12. Prop the sides up with glasses and let set for 30 minutes. Attach the roof pieces, using the icing in the same way. 13. Decorate with Royal Frosting and candy while you listen to Christmas music and visit with your friends and family 14. Makes 2 large size gingerbread houses.

MAKES ABOUT 2 X 450 G/1 LB JARS MINCEMEAT; 12 PIES

ABOUT 450G/1LB SHORT CRUST PASTRY

✸TRAEGERKITCHEN GINGERBREADHOUSE PREP TIME: 10 MINUTES COOK TIME: 8 MINUTES EFFORT: MODERATE PELLETS: MAPLE INGREDIENTS 1 1/2 cup margarine 1 1/2 cup molasses 10 cup flour 3 tsp cinnamon 3 tsp baking soda 3 tsp ginger 1 1/2 tsp salt 3/4 tsp ground cloves 1 cup water METHOD 1. Cream margarine and sugar. Add molasses. Alternate dry ingredients with water. 2. You’ll need to make 7 templates by drawing the dimensions out on butcher paper. Use the templates as a stencil to cut the dough into the required pieces. 3. Two front and rear walls: 5 inches high by 8 inches long. Cut out 2 windows from each wall, and 2 1/2 by 1 1/2-inch door in one. 4. Two side walls shaped like a house (triangle on a square): 5 inches high by 6

inches long, with a triangle 7 inches high on top (cut all in 1 piece). Cut 1 window out of each side. 5. Two overhanging roof pieces: 4 1/2 inches wide by 9 inches long. 6. One door: 2 1/2 inches high by 1 1/2 inches wide. 7. Roll out into quarter inch thick sheets and cut them into the shape of your gingerbread house using the templates.

✸CHRISTMAS SPICECAKE TRAEGER KITCHEN

PREP TIME: 15 MINUTES COOK TIME: 3 HOURS SERVES: 6–8

INGREDIENTS 115g butter, room temperature 2 tbsp chopped herbs such as parsley, sage, rosemary 1/4 tsp black pepper 1 tsp Kosher salt 1 (5-6)kg turkey 50g butter, melted As needed, Traeger Pork & Poultry Rub 200ml chicken or turkey stock METHOD 1. In a small mixing bowl, combine the 115g of softened butter, mixed herbs, salt and black pepper and beat until fluffy with a wooden spoon. (You can make the herbed butter several days ahead: Cover and refrigerate but bring to room temperature before using). 2. Remove any giblets from the turkey cavity and save them for gravy making, if desired. Wash the turkey, inside and out, under cold running water. Dry with paper towels. 3. Place the turkey on a roasting rack in a roasting pan. Tuck the wings behind the back and tie the legs together with butcher’s string. 4. Using your fingers or the handle of a wooden spoon, gently push some of the herbed butter underneath the turkey skin onto the breast halves, being careful not to tear the skin. Massage the skin to evenly distribute the herbed butter. Rub the outside of the turkey with the melted butter and sprinkle with the Traeger Pork and Poultry Rub.

✸CHRISTMAS BRUSSELS SPROUTS DIFFICULTY: 3/5 PREP TIME: 15 MINUTES COOK TIME: 50 MINUTES SERVES: 6–8 HARDWOOD: MAPLE

These aren’t the brussels sprouts you scoffed at as a kid, they’re smoky and seasoned to perfection. INGREDIENTS 1 kg Brussels Sprouts 1 medium onion, sliced 500g thick cut bacon 2tbsp olive oil Salt and pepper to taste

5. Pour the chicken stock in the bottom of the roasting pan. 6. When ready to cook, set Traeger temperature to 160C and preheat, lid closed for 15 minutes. 7. Put the roasting pan with the turkey directly on the grill grate. Roast the turkey for three hours. Insert the probe from the meat thermometer in the thickest part of the thigh, but not touching bone. Cook until internal temperature reaches 75C. The turkey should also be beautifully browned with crisp skin. If the temperature is less than that, or if your turkey is not browned to your liking, let it roast for another 30 minutes, then check the temperature again. Repeat until the turkey is fully cooked. 8. When the turkey is done, carefully transfer it to a cutting board and let it rest for 20 to 30 minutes. Do not tent it with aluminum foil or the skin will lose its crispness. Use the drippings that have accumulated in the bottom of the roasting pan to make gravy, if desired. Carve the turkey and serve.

METHOD 1. When ready to cook, set temperature to 180C and preheat with lid closed for 10 to 15 minutes. 2. Place bacon directly on grill grate and cook for 15-20 minutes, or until lightly browned. 3. Remove from grill and set aside on paper towel lined plate. 4. Slice onion in half and then slice into 1 cm moons and add to large mixing bowl. 5. Slice brussels sprouts in half lengthwise and add to bowl. 6. Cut the cooked bacon into 3 cm pieces and add to bowl. 7. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat and pour into baking pan. 8. Turn the temperature on grill to 190C and place baking pan on grill. Roast for 30 minutes mixing halfway through cooking. Serve immediately. Enjoy!

PREP TIME: 15 MINUTES COOK TIME: 25 MINUTES SERVES: 8–12

✸ROASTED CRISPY POTATOES

PREP TIME: 15 MINUTES COOK TIME: 45 MINUTES SERVES: 6–8

INGREDIENTS 1kg baby potatoes As needed peanut oil 1/2 lemon zest 1 tbsp Fleur De Sel (or sea salt flakes) 1 tbsp red onion, minced Kosher salt, to taste 1 tbsp Aleppo pepper As needed black pepper METHOD 1. Set the temperature to 180C and preheat, lid closed for 15 minutes. 2. Place the whole potatoes on a rimmed baking sheet lined with parchment paper. Bake on Traeger until they offer little resistance when pierced with a sharp, thin-bladed knife, about 30 to 45 minutes, depending on their size. 3. Let stand at room temperature until cooled. Use your hand to slightly flatten the potatoes and break their skin a bit. 4. Meanwhile, pour the oil 9-10cm deep into a large, cast iron casserole pot or other deep pot and heat over mediumhigh heat to 250C. 5. While the oil is heating, in a small bowl mix together the lemon zest and fleur de sel (sea salt flakes can be used). Set aside. 6. Fry the potatoes, in batches, if necessary, until evenly brown all over, about three minutes. Remove them with a spider or slotted spoon and place them directly into a large bowl. Adjust the heat as necessary between batches to return the temperature of the oil to 250C. 7. While the potatoes are still hot, add the red onion and season to taste with the lemon zest and fleur de sel mixture, kosher salt, Aleppo pepper and black pepper. Toss gently to coat. 8. Garnish with fresh parsley and serve hot. Enjoy!

INGREDIENTS 500-600g Cake flour 1 tbsp baking powder 1 tsp salt 11/2 tsp cinnamon 1/2 tsp ground ginger 1/4 tsp ground cloves 1/4 tsp Allspice, ground 1/4 tsp ground nutmeg

250g sugar 180ml white wine 100g margarine 1 tbsp molasses 1 1/2 tsp Vanilla Extract 120g butter, softened 200g cream cheese 400g icing sugar 1 tsp vanilla extract 2 tbsp milk 150g walnuts, toasted

METHOD 1. Grease and flour two 20cm round cake tins. 2. Set the temperature to 180C and preheat your Traegar Grill, lid closed, for 10 to 15 minutes. 3. Sift the flour, baking powder, salt, and spices into the bowl of a stand mixer. Stir in the sugar. 4. Put the wine in a measuring cup. Add enough margarine to bring the liquid up to the 300ml mark. 5. Add to the dry ingredients along with the molasses and vanilla. Beat on medium speed for two minutes. Add the milk and the eggs and beat two minutes more. 6. Divide the batter equally between the prepared pans. Bake for about 25 minutes, or until a toothpick inserted in the centre of the cakes comes out clean. 7. Cool for 10 minutes, then carefully remove the cakes from the tins, transfer to a wire rack, and cool completely. For the cream cheese icing: Beat together the room temperature butter and one 200g pack of cream cheese. Gradually beat in 400g of powdered sugar, one teaspoon of vanilla and enough milk to achieve spreading consistency, 1 to 2 tablespoons, or as needed. Assemble the cake: Put one cake rounded side down on a plate. Ice the flat side, then stack the second cake on top of it, flat side down. Ice the top and sides of the cake. Sprinkle with the nuts, if desired.
