AN ADVANTAGEOUS CHOICE Natural stone has an impressive reputation as a building material – and for good reason; natural stone is extremely durable and long lasting, with some forms of stone being heat and moistureresistant. These naturally occurring materials are readily available for use, have a high thermal capacity and can last a lifetime with proper care. Whether featuring as an island bench or unique kitchen splashback, the possibilities with natural stone are endless. However, natural stone hasn’t always been the prevailing choice for home designers. “Queensland designers went through a phase of using a lot of reconstituted stone in [their] projects, and there was some resistance to using natural products,” Edwards says. Natural stone comes in a range of unique colours, patterns, textures and tones, and according to Edwards, it was this inconsistency in colour and tone which frustrated designers, who leave nothing to chance and plan their colour schemes with careful forethought. “Now the trend is for something different, and designers are turning to soft colours of marbles and dolomites in their projects,” he says.

DELIGHTFUL DESIGNS Even if you are quite selective about your home’s interior, there is sure to be a stone and colour to suit your preference. “We import several kinds of natural stones, these being marble, granite, onyx, travertine, limestone, dolomite and quartzite,” Edwards says. “We also have an exclusive range of Italian porcelain called EPIC.” EPIC is an Italianmade porcelain, which contains realistic patterns photographed from natural stone. The impactresistant and light-weight stone is also available in polished or honed finishes. Being resistant to acid also makes EPIC a handy choice for those unavoidable spills in the kitchen. In terms of colour, the sky is your limit! While a neutral colour palette of whites and greys is always on trend, consider taking into account the flooring, cabinetry and paint colours throughout your home to find out what shades of stone can be seamlessly integrated into the existing environment. Choosing a light-coloured stone, with an ivory or white base and heavy veining can help emphasise the natural light and make a room seem more spacious. The
A STONE FOR THE AGES As one of the most labour-intense regions of the home, a good kitchen requires benches that are durable, and resistant to the wear and tear of everyday life. As such, choosing the correct stone type to suit your lifestyle is essential. “We would recommend granite, quartzite and dolomite for kitchens as they are the hardiest,” Edwards says. Marble’s elegant soft veining and white and grey colour palette has long been a popular choice for both kitchen and bathroom design; with its bright, neutral colours making it extremely versatile and adaptable to any home. However, as marble contains minerals, it can be more susceptible to rust and damage from acid-based kitchen and bathroom products. “It is important not to use any products that have lemon or orange in them, as these are acidic and can damage the marble,” Edwards advises. “Warm and soapy water is fine to clean the benchtops.” In order to preserve its integrity, ensure your stone is effectively sealed, as this will prevent scratches and permanent damage. Sealing your natural stone creates an external barrier between the stone itself and environmental pollutants, preventing any oil, water and dirt from disrupting the inner layers and slowly eroding the stone. This is an excellent option for the softer limestone which is more porous and can be prone to etching. “Sealing is essential on

Alternatively, choosing shades of dark grey and black stone can modernise any room, while combining this with a polished finish can keep the stone looking sleek, classy and elegant. A natural or engineered stone feature wall or splashback is another beautiful way to introduce this material into your kitchen and bathroom. With bold textures and tones, these statement pieces are sure to entice the eyes. Consider placing the stone feature wall behind the bath or shower to add interest, or even above the sink for users to admire. Whatever your personal preference, utilising the unique colours and textures available within stone is an excellent way to amplify the feeling of luxury in your home – making a trip to your home’s busiest rooms a captivating and enchanting experience. Stone is truly an enduring choice for kitchen and bathroom design, and Edwards attributes this glowing reputation to the material’s natural beauty, availability and durable nature. “Natural stone is unique and timeless,” Edwards says. “Nature has produced some amazing products to suit all tastes.”

Timber remains one of the most practical and popular methods to introduce a natural element into your home’s interior. Whether it acts as a hero piece, or takes a more subtle role in your design, its timeless style is unmatched, complementing almost any element of your space. Katie Livingston chats to Darren James, founder of Darren James Interiors about the benefits of incorporating timber into your kitchen and bathroom, and how you can choose the right product to suit your personal taste. Since the company’s inception in 2005, Darren James Interiors has favoured the natural, earthy aspect that timber adds to bespoke designs. Both its versatility and variety of colours and grains makes natural timber an enduring solution when it comes to adding character to your kitchen or bathroom.
JACK OF ALL TRADES While many styles and materials frequently lose their appeal with the eb and flow of new trends, organic materials can be relied upon to look stunning for years to come. “The one trend that never goes out of fashion is a natural product,” James says. One of the true benefits of timber is its design flexibility; whether your theme is modern, classical, provincial or industrial, timber adds warmth and softness to a space. “Timber is very versatile, and it can be used with anything,” James says. “Just do your research on the timber and finishes that can be applied and understand what those finishes can offer you.”
CHOOSE THE RIGHT PRODUCT Although natural timber is quite versatile in terms of design, it’s important to do your research. Think about what the timber in your home is likely to be exposed to, and take preventative measures to avoid warping or cracking. “One mistake people make is not understanding the nature of timber,” James says. “You have to treat it with respect, understand the characteristics of timber and know where to place it so that it lasts … otherwise it can be a maintenance nightmare.” Different weather conditions can have a significant impact on your timber’s lifespan. If you live in a humid climate, moisture can cause timber to expand and crack, whereas low humidity can cause your wood to dry out and become brittle. “Understanding how timber reacts in different climates is very important,” James says. “Timber is going to behave differently in Northern Territory versus a southern state [where] the weather is different.” Being conscious of these external Images courtesy of Darren James Interiors
factors will allow you to choose the right product and finish to protect your home. Assess your needs within the space and work closely with your designer or manufacturer to find the perfect product for your kitchen or bathroom.
THE BEST OF BOTH WORLDS To remove the threat of potential damage and maintain that sought-after organic appeal, opt for a timber veneer over natural wood. Available in almost any colour or texture, this option offers more flexibility for highlight pieces and vertical surfaces, without the restrictions of solid timber. “It’s a great choice for vertical surfaces as it can be more stable compared to natural timber,” James explains. Veneer also requires little maintenance and is less prone to splitting and cracking as a result of changes in weather. This offers a great alternative for bathrooms, which tend to alternate rapidly between dry and humid conditions. On the other hand, working surfaces, like your kitchen bench and dining table, are where solid timber really shines. While timber veneer can be easily scratched or damaged, natural timber is significantly more durable, and allows for more freedom in the shape and style of your fixtures.
STEAL THE SHOW Whether using timber to create contrast, establish a feature piece or add rustic elements to a modern home, natural wood is your best friend. “We use of a lot of timber as accent pieces and really try and feature it as much as we can,” James agrees. Nothing captures the eye’s attention quite like a timber panel feature wall or grand, natural oak table, but for those seeking a more
subtle motif, incorporating small touches of timber into your shelving, kickboards and moulding can really enhance the feeling of warmth in a room. When it comes to using timber either as a main feature element or as an accent piece, use in moderation and with purpose. Just by including little details of natural wood here and there you can soften your interiors. If you choose to paint your timber elements to match the colour scheme of your design, you can still achieve the same organic effect simply by choosing a coating that allows the natural woodgrain to show through. “[We’ll often have] a lovely oak product with a beautiful grain, which we’ll paint different colours, and you’ll still get that grain coming out through the colour,” James says. “There’s something really nice about having something a little bit real.” Simply by letting the texture and grain of your timber shine, you can still highlight its natural aspect without deterring from the specific colour palette of your home. James’ final piece of advice is to be open to using natural timber in your home. “It’s always going to look good and will never go out of date,” he says. “The most important thing is to trust your designer and communicate with them what you want.”

here are many elements to consider when it comes to designing and installing a butler’s pantry. This ancillary zone should be a natural extension of your primary kitchen, boasting additional kitchenware storage and extra space for meal preparation. There’s no one-size-fits-all policy when it comes to a butler’s pantry, as each kitchen and homeowner has different needs and requirements. Read ahead to learn about the various aspects that are crucial for creating the perfect butler’s pantry for your home and lifestyle.
SECRET STYLISH STORAGE One of the reasons homeowners choose to add a butler’s pantry to their kitchen is the prospect of additional storage for their kitchenware and appliances. While extra room for your cooking goods is a brilliant concept, homeowners should be wary of hidden pitfalls prior to design. Installing deep shelves can be an issue, as hardto-reach items can get lost in such a confined space. While most homeowners would assume cupboards are the go-to for optimum storage in place of shelving, opening and closing these doors can become a hindrance in these tight nooks. This is where open shelving and drawers offer the ideal solution for storing bulk goods and other kitchen utensils that you don’t want to display in the main cooking and entertaining
areas. “Shelving should be shallow: 450mm maximum is best,” Mayer advises. This size and depth will guarantee easy access to kitchenware and other household items. Installing drawers
at either bench height or lower achieves a similar result. This gives you room to move in and out of the butler’s pantry with ease, making catering and entertaining easier and obstacle-free.

TO HIDE OR NOT TO HIDE
THE MUST-HAVES
One of the main purposes of a butler’s pantry is to conceal items you don’t want to be seen; unwashed plates, meal preparation, bulk-bought groceries, and small appliances that aren’t in use. To add a mysterious element to your butler’s pantry, doors can be installed to hide this secret spot. A cavity sliding door is the perfect choice here, as it doesn’t impact the space in and around the butler’s pantry. If you go down this route, you can craft an entry door from materials, colours and textures that are used throughout the main kitchen to hide the butler’s pantry in plain sight.
As the extension of the kitchen, every butler’s pantry should have optimum bench space and dedicated storage for appliances in order to be functional and practical. “Think about what you will be using [the butler’s pantry] for and who will be using it,” Mayer suggests. If you want to have larger appliances fitted in this area, make sure that they are in proportion to the space. “Depending on the space you can have the entire range [of appliances] but most importantly, an extra sink, microwave and fridge tend to be [most popular],” Mayer says. To run such appliances, make sure there’s a sufficient number of power points to streamline meal preparation. For those who adore catering but hate clutter, Mayer continues to stress the importance of installing a deep sink inside your butler’s pantry. This feature is crucial for refilling your kettle and coffee machine in private, as well as keeping your cleaning and entertaining areas segregated while hosting guests.
For those that prefer an adjoining pantry that connects seamlessly with the kitchen, the openplan, door-less butler’s pantry is the option for you. “The pantry will get a lot of use so easy access is a good option,” Mayer says. “We have seen a lot of open-plan sculleries recently with no door.” Taking this approach to your butler’s pantry creation will ensure stylistic cohesion between the kitchen and this secluded space. Omitting a door allows for “a continuity of materials and surfaces to flow from the kitchen”, creating a pantry that’s aesthetically pleasing and harmonious with the cooking and entertaining areas. As long as the butler’s pantry is adjacent to the main kitchen and close enough for a smooth transition from one room to the next, hiding your butler’s pantry or having a walk-in space are both viable options for your home. Door-free or otherwise, having a butler’s pantry in your kitchen is a timeless investment.
Preparing meals in the dark isn’t the best way to kickstart your night of entertaining, so be sure to include sufficient lighting in your butler’s pantry design. Ceiling and in-cupboard lights are the obvious choice here, but for those wanting to harness natural light and minimise energy costs, consider the installation of a skylight to illuminate your pantry during the day. INTENTIONAL LIVING REFINED, INDUSTRIAL ELEMENTS
This striking kitchen renovation project by Darren James Interiors embraces industrial architecture and functionality. The homeowners wanted to modernise the design while also honouring the exposed columns, beams and original brickwork of the building. Inclusions such as textured patterned tiles, large format porcelain sheets and powder-coated metals accomplish this desired feel. Working within the kitchen’s existing architectural footprint was the main challenge of the design. Darren James Interiors overcame this by ensuring the layout worked effectively within the exposed structural beams, creating intention in the space, rather than divergence. A chief component of the original brief was to establish efficiency and ease for the homeowner. Darren James Interiors achieved this by installing Blum Servo Drive electoral opening systems into all drawer joinery, while the integrated Sub-Zero fridge and Miele cooking appliances are positioned at heights to suit the client’s ergonomics. An electric under-bench pop-up is situated within the kitchen’s island, housing a toaster and coffee machine to declutter the bench space.

A SHOW-STOPPING DESIGN CONTEMPORARY SOPHISTICATION
This bold statement piece by Chase Wilson showcases superb embossed cabinetry and sophisticated features while keeping clutter to a minimum. The project was a collaboration between Chase Wilson and Jitta Jack Interiors, and the impressive final product encapsulates modern elegance and ease-of-living. As the kitchen is situated just near the entry, the clients wanted a space that could always be on show without the need to de-clutter whenever guests arrived. This was achieved by converting a previously unused office into a butler’s pantry – a feat that was skilfully carried out by D Pearce Constructions. The new butler’s pantry houses a fridge, pantry and Zip tap, leaving the main kitchen free for a wealth of entertainment possibilities. Reconstituted stone was used for all the benchtops and splashback for a seamless finish, while the translucent veins coordinate with a range of colours throughout the kitchen. Constructed from the same stone, the island bench’s 80mm-thick waterfall edge further enhances the kitchen’s luxurious quality. This generous island bench acts as both a gathering point and a hero piece, while the open-plan design allows the homeowners and guests to move about with ease.

The kitchen’s refined aesthetic was given careful consideration. Although the design was to be a showpiece for the home, it was important that the space complement the existing architecture. This was accomplished through the contrast of dark shaker style cabinets above and neutral cabinets below, further emphasising the home’s contemporary feel. The design is made even more spacious by the void that occupies the section above the island bench and four large Velux windows. The addition of a simple, yet elegant linear chandelier above the island bench echoes the design’s modern style, while providing extra light in the evenings. The expansive windows facilitate ample natural light, reducing the need for internal lighting and air-conditioning during the day. The inclusion of a Zip tap, which provides both chilled and boiling water, also contributes to the energyand water-saving features of the design.

In its newest project, Maytain Cabinets has created a kitchen that is as much a statement piece as it is functional. The client wanted a spacious, easily maintained kitchen that also had a strong aesthetic appeal. Conscious of the architectural challenge of curved walls, Norm Ainsworth, Maytain Cabinets’ in-house designer, created the kitchen to optimise every corner of space. This full renovation, designed and created by Action Kitchens, combines a practical layout with a modern aesthetic. IDEAL ENTERTAINING MINIMALIST AND EFFICIENT
Renovated by MG Cabinetry, this minimalist, monochrome kitchen was designed to become the centrepiece of the home. The homeowners are passionate about cooking and entertaining, and wanted a kitchen that would act as a hub for guests and the entire family. While it was important that the space be conducive to entertaining, the client wanted the kitchen to be equally functional and accessible. In conjunction with the property’s renovation building designer, Arco Designs, MG Cabinetry achieved the brief by installing a cooktop on the island bench, rather than the backwall. This allows the homeowner to interact with guests and family while cooking. As most homeowners will spend more time at the cooktop than the sink, MG Cabinetry had the ingenuity to switch the layout, ensuring a truly user-friendly design. The pop-up downdraft rangehood on the island bench creates a safety barrier between the cooking area and adjoining dining table. The Ironbark solid timber dining table is suspended from the island bench, creating a unique feature that facilitates further interaction within the kitchen and dining areas.

The distance between the stove, fridge and sink maximises efficiency, epitomising the concept of the working triangle. In this particular kitchen, there is minimal distance to travel between these key areas; however, there is still ample room to move around with multiple people in the kitchen at once. The dual wall-mounted oven is conveniently located beside the fridge for further accessibility. The island bench is designed to have everything at the client’s fingertips when cooking, including Blum legrabox drawer runners, pull-out oil and spice trays and an ORGA-LINE utensil divider. These features ensure that the homeowner rarely has to travel away from the island bench when prepping a meal. Finger-pull and push-to-open cabinets and cupboards were also installed for added ease and efficiency. The walk-in butler’s pantry is equipped with its own sink and dishwasher, which provides a perfect place to stow away dishes while entertaining. The kitchen’s monochrome design is tied together with a sleek, black glass splashback; blackwood timber veneer floating shelves; and smoked oak timber flooring.

Satin two-pack cabinets create a clean, white finish bordered by detailed mouldings in the kick faces and bulkheads, offering a beautiful contrast with the Palermo tiled floor. The benchtops and splashbacks are constructed from 20mm-thick Calcatta Signature stone – presenting both durability and unparalleled sophistication. The curved island bench is a unique point of difference within the breathtaking design. Built with a matching Calcatta Signature benchtop and detailed to Hamptons perfection in white to match the surrounding cabinetry, unity is clearly established throughout the space. The rounded island bench immediately draws the eye while softening the harder edges of the kitchen. The client was equally concerned with functionality, so Kitchens by Bowen carefully crafted floor-to-ceiling storage spaces to ensure every appliance, utensil and ingredient has its place. From drawers to cupboards, there are storage solutions of every size hidden behind the crisp white doors, as well as bench seating at the front of the island bench, with additional storage facing the kitchen. Careful planning was vital to the successful completion of this project. The renovated kitchen had to fit inside a similar footprint to the original space, which posed a challenge when maximising functionality and creating elegance. Despite this, the experienced team drew on their shared expertise to create clever design ideas to exceed the client brief.

This gorgeous light-filled home provides ample space for the contemporary family. JNI Interiors’ open-plan design facilitates beautiful flow from one room to the next, while high ceilings and large windows fill each room with natural light and enhance spaciousness. The sharp lines and fine details that exemplify the home’s architectural design posed an initial challenge when transforming the interiors into a warm, welcoming space. JNI Interiors was able to incorporate this architectural aspect into the design using shadow lines and incorporating joinery into the home’s structure for an integrated look. Driven by functionality, JNI Interiors introduced clever storage solutions in the existing architecture to maintain cohesion throughout the home and avoid clutter. A butler’s pantry and extensive use of drawers and cabinets expertly achieve this. Additional shelving was also installed in study nooks to showcase collectables, while shelves were integrated within the kitchen island, and an expansive, wall-length wine rack was added to the cellar.

TIMELESS HAMPTONS STYLE A WELCOMING AND SOPHISTICATED SPACE
This awe-inspiring kitchen by Gatti Design creates a space where the whole family can come together. This renovation project draws inspiration from a Hamptons-style home, while working to the classical Australian architecture of the existing Queenslander house. The open layout and ample windows allow for cross ventilation and cooling with limited use of air-conditioning. Great care was taken to reduce the kitchen’s environmental impact with the installation of solar panels and waste reducing food storage, and the use of natural materials where possible. This stylish yet functional Hamptons design combines a classical aesthetic with modern features, including an expansive island bench, a neat breakfast nook, a spacious butler’s pantry, heating and cooling drawers, and three separate sink stations. Functionality is key, and although Gatti Design’s open-plan design and multiple windows connect this kitchen to both the rest of the home and the exterior, each section is clearly defined in its purpose.

The juxtaposition of light and dark cabinetry offers contrast between the butler’s pantry and the main kitchen, and the use of soft light colours in the primary space ensures the custom Caesarstone benchtops and marble tiles to stand out. Storage and appliances are neatly zoned for ease of access and offer a range of hidden features, including drawers, recessed shelves, towel racks and knife blocks. The appliances were hand-picked by the homeowners for both their design and performance. The Wolf induction cooktop and integrated rangehood form an elegant feature wall, while the Sub-Zero fridges blend perfectly into the classical shaker- style panelling. The central island bench – complete with inbuilt bar fridge – acts as a bridge between the dining and cooking areas, as well providing additional storage and workspace. The pair of crystal chandeliers above the bench add a touch of glamour to the room without distracting from the careful detailing and layering of elements throughout. A final detail of this impressive Hamptons design is the double hung windows over the kitchen bench, which open completely to the exterior deck and allow a seamless transition to the outdoor area.

Lena Gatti provides Queensland Kitchen + Bathroom Design with a plethora of options and invaluable professional insight to help you create the harmonious home of your dreams, whether you’re building anew, renovating or simply looking for tips to revitalise your existing spaces. When designing these spaces, there are plenty of ways you can ensure the final product is highly functional, and undeniably stylish. By creating innovative storage solutions, carefully selecting materials, and considering flow, a holistic design can be easily attained. FUNCTIONALITY FIRST When thinking about how to optimise harmony and balance within your kitchen and bathroom, Gatti recommends that you think first of 95

Tristan Lott speaks with Lena Gatti, senior interior designer at Gatti Design, to learn some expert tips on creating harmonious designs in the busiest areas of our homes.

Gatti Design strives to “understand how clients live and use spaces prior to any design”. You should think about your routine, and how you can optimise your space to ensure that your priorities are reflected in the final design. Gatti has found that having “zone areas” within kitchens and bathrooms can help to create functional flow in the room. For example, if you’re a caffeine aficionado you could create a coffee station with all your beverage needs in close proximity. If you love to entertain, installing a bar fridge near or amongst entertaining areas will make social engagements a breeze. Having a space that feels well-suited to your unique preferences and habits can alleviate stress during busy times, such as breakfast and dinner, and ensures that your home is customised to you and your family’s schedule.
STORAGE WARS When creating spaces that feel calming and harmonious, clutter can be your greatest enemy. “Storage provides for uncluttered benches and areas,” Gatti says. “The design of storage plays an integral part in keeping spaces clutter free.” When deciding how to organise your space, think about what needs to be kept close by and curate storage solutions that suit your purpose. Clever inclusions such as spice racks in the kitchen or towel and linen closets in the bathroom can ensure that space is used practically and efficiently. Inventive storage solutions can easily be created without having to renovate or remodel an existing space. Drawer inserts offer smart storage for utensils, make-up and other small items, while tubs and boxes can help segment larger cupboards and keep everything neat and accessible.
DÉCOR DECISIONS Furnishings play an important role in creating unified designs. When it comes to styling your harmonious home, Gatti says, “simplicity is key, especially in smaller spaces.” The most straightforward way to ensure your rooms feel cohesive and stylish, is to adhere to a strict colour scheme and choose pieces made from similar materials. “The repetition of colour, details, and both the building’s architectural information and furnishings creates cohesiveness,” Gatti confirms. Consider art pieces, rugs, vases and other décor pieces in complementary tones, adding accents in contrasting colours and patterns to create interest without detracting from the overall atmosphere of the space. If you’re unsure how to create cohesive flow throughout your home, Gatti recommends consulting a qualified interior designer. “[Interior designers] are trained to review, understand and attend to all aspects of selections and detail that bring about uniformity and cohesiveness,” she says. HARMONIOUS HAMPTONS Queensland is replete with beautiful, historical homes. Hamptons design, favoured by Gatti Design for its polished and sophisticated features, integrates beautifully with the classic structure of a Queenslander home. Gatti ascertains that Hamptons design “lends itself to precision and symmetry”, allowing ample opportunity for harmonious flow throughout your home. 96
“All design performed well is harmonious in its own way,” Gatti says. Selecting design features
and materials that work well together is a failsafe method of creating a coordinated zone within your home. Furthermore, working with even proportions and spacing between features is an easy way to create the optimal balance of functionality and style. There are design styles, like classical Hamptons, that are especially well-suited to creating evenly proportioned and balanced spaces. “[Hamptons and classical] design … almost always has a feature product or design centrally, and all other parts of the design work out from the central point,” Gatti echoes. When renovating and refreshing a historical home, Gatti strives to retain the nostalgic charm and beautiful aesthetics wherever possible. “Consider any detail that is repetitive and lovely, retain it, and replicate it into new areas,” Gatti says. “Do not feel that you have to tear everything down.” Simple changes like a fresh coat of paint, updated fixtures and new furniture can totally revitalise a room. Making similar changes throughout the space will effortlessly ensure cohesion. Creating harmony within your home can involve a lot of careful planning and prior considerations, but if you’re smart and consistent with your choices, even the busiest areas of your home will be both functional and aesthetically pleasing.

BAKED YOGHURT AND HERB SALMON It’s no secret that salmon is rich in omega-3 fatty acids, which offer a range of health-related benefits. What scientists have recently discovered, though, is that these benefits may be due in part to increases in butyrate-producing bacteria. Butyrate plays a key role in maintaining optimal gut health. What better reason to add this recipe to your weekly repertoire, paired here with fennel, lemon and mint to help aid digestion.

Extra-virgin olive oil, for drizzling 190g (1 small) fennel bulb, halved, trimmed, cored and thinly sliced 1 leek, green part only 2 large handfuls dill, coarsely chopped, plus extra to serve
Method Preheat the oven to 200°C (400°F/Gas Mark 6). Drizzle some olive oil into the bottom of a 30cm x 20cm baking dish. Add the fennel, leek and half of the dill. Drizzle with a little more oil and half the lemon juice. Season with salt and pepper. Toss to combine. Cook in the oven for 10 minutes, or until the vegetables begin to soften.
125g (½ cup) goat’s or sheep’s yoghurt
Remove the dish from the oven and arrange the salmon pieces on top of the vegetables. Drizzle with some oil, pour over a little more lemon juice and season with salt and pepper. Top each salmon fillet with a dollop of yoghurt, spreading it over the surface in an even layer. Scatter with mint, some dill and the lemon zest. Return the dish to the oven and bake for another 10 minutes, or until the salmon is almost completely cooked through (or until cooked to your liking).

PAN-FRIED CAULIFLOWER GNOCCHI
Traditional gnocchi is delicious, but can also feel a little like heavy gut luggage. That’s why I came up with a lighter, glutenfree and fibre-rich alternative that is even more flavoursome than the original. I use versatile cauliflower instead of potato and pair it with pumpkin seed and herb pesto – a great way to add a dose of manganese and zinc, which help promote digestive enzyme function.

PUMPKIN SEED AND HERB PESTO Ingredients

1½ teaspoons sea salt 120g (¾ cup) pumpkin seeds (pepitas) 3 tablespoons nutritional yeast flakes 60ml (¼ cup) freshly squeezed lemon juice Zest of 1 unwaxed lemon 4 garlic cloves, peeled
Method Fill a medium bowl three-quarters with warm water. Add the salt and stir until mostly dissolved. Add the pumpkin seeds and cover the bowl with a clean dish towel. Set aside in a warm place to soak for least 7 (and up to 12) hours. Drain and rinse. Blend the seeds, yeast flakes, lemon juice, zest and garlic in a small food processor until finely chopped. Add the herbs and, with the motor running, gradually pour in the oil until combined. Season with salt and pepper to taste.

Method Steam the cauliflower for 10 minutes, or until tender. Transfer to a food processor and blend until finely chopped. Put in a medium bowl and add all remaining ingredients except the ghee. Stir to combine. Line a baking tray with baking paper. Dust a clean kitchen bench, and your hands, with some arrowroot. Divide the gnocchi mixture into quarters. Using your hands, gently roll one quarter at a time into 2cm-thick logs. Dip a small sharp knife in some arrowroot and cut each log into 2cm pieces. Gently squeeze each piece in the centre to give it the classic gnocchi shape, then transfer to the prepared tray. Melt the ghee in a large frying pan over a medium heat. Cook the gnocchi in batches for 1–2 minutes on each side until golden brown. Transfer to a plate and set aside. To prepare the creamy pesto sauce, pour the coconut and almond milk into a frying pan and simmer over a medium heat for 2–3 minutes until reduced a bit and slightly thicker. Add the pumpkin seed and herb pesto, stirring to combine, and heat through. Add the gnocchi to the pan and ladle with sauce to coat. Serve the gnocchi in shallow serving bowls scattered with shredded basil and topped with freshly ground black pepper. 101

FIG, GARLIC AND OREGANO BRAISED CHICKEN Baked chicken is my family’s Sunday night dinner ritual. It’s so easy, versatile and full of flavour, and nourishing for the week ahead. This simple yet delectable combination of fig, lemon, garlic and oregano has been used in Mediterranean cooking well before we knew about these ingredients’ benefits for our health. Lemons are high in vitamin C, an essential nutrient for fighting inflammation, figs are a great source of fibre and garlic provides a good source of prebiotic inulin. Carvacrol, the most abundant phenol in oregano, has a bunch of benefits too, and is shown to stop the growth of several types of pathogenic gut bacteria.

4 organic chicken leg quarters 60ml (¼ cup) extra-virgin olive oil 125ml (½ cup) freshly squeezed lemon juice
Method Arrange the chicken in a large, deep baking dish. In a small bowl, combine the olive oil with the lemon juice and zest, garlic and oregano. Season with salt and pepper. Pour the mixture over the chicken, rubbing it into and under the skin to coat. Cover and refrigerate for at least 1 hour, and up to 8 hours. When ready, preheat the oven to 180°C (350°F/Gas Mark 4).

Scatter the onion around the chicken. Pour in the bone broth and vinegar and drizzle with the remaining oil. Cook, uncovered, for 50 minutes, or until golden brown and cooked through – the juices should run clear when a fork is inserted into the thickest part of the thigh. If using figs, add them for the final 15 minutes of cooking. Remove the chicken and figs (if using) from the baking dish. Place on a plate, cover and keep warm. Pour the liquid into a small saucepan and simmer for 3–4 minutes, or until reduced to a sauce that thinly coats the back of a spoon. Return the chicken and figs to the baking dish and coat in the sauce before serving.
