Welcome TO

the Dominion Magazine Dear Reader,

Welcome to the November issue of DOMINION magazine. As we move into these (thankfully) cooler months and begin to look forward to the holidays, I invariably begin thinking about….food. From the family dinners at Thanksgiving, to all of the wonderful holiday parties with great dining that come with Christmas, there’s a reason that many of us pack on a few pounds during this season! So as we considered “food”, we had a wonderful time putting together our cover piece, which is a fairly comprehensive look at many of the fine dining options that we have along the I-10 corridor. These aren’t your run of the mill eateries, either. These are restaurants with chefs well versed in creating some of the most amazing dishes that our region has to offer, so I hope that you learn about a new place that perhaps you weren’t familiar, and even better, I hope that you venture outside the gates and sample from at least one of these tremendous restaurants this month. I also wanted to mention that we are always on the lookout for both writers and story suggestions. If you’ve got a knack for writing and would like to cover some of the great content that we feature each month in the magazine, send me an email. Also, if you’ve got a great article idea, tip, or suggestion, please reach out. While we know a lot of the people in the Dominion, we don’t know them all (though we’re trying)! Send us a brief summary and we’ll do our best to reach out!

CHARITY ROUNDUP By Peggy Schooley

J-JIREH Ministries J-JIREH Ministries was founded 24 years ago by Lili Kristan here in San Antonio. Her idea was simply — providing hope and promise to kids who are in shelters due to any and all of the reasons we all know and have heard. Then, as God works these things, six years ago, Lili and her business partner Dan walked into the Phyllis Browning real estate office hoping to find some property for a children’s shelter. The only one in the office that day was Greg Jones. As he told me “We looked at acreage, and we talked about what she wanted to do for the kids — to gather shoeboxes full of Christmas gifts for as many children as possible.” Greg continued “I found out, as I worked with Lili, that these kids are stressed in nearly every way possible: neglected, abused, abandoned, or any number of bad things that can happen to a person when they are young and pretty defenseless.” You may have heard of the Samaritan’s Purse shoebox drive simply because it is large and international. But, the J-Jireh program is different in one way - it is local. San Antonio and surrounding county shelters are the focus, and ‘our’ children from ‘our’ area receive the gifts you provide in your shoebox. This project is called “Christmas from the Heart” — and it really is. As Greg explained “The first year we did this, we delivered a few hundred boxes to 6 shelters around town. Last year, which was our fifth time, we delivered more than 2900 shoeboxes to 39 shelters! We are very excited to stretch to meet our goal this year of 4000 shoeboxes for kids in 50 shelters!” The process is very simple for you as a contributor. Greg explained: “First, contact me! I can give you the number of tags you need for the number of shoeboxes you have to fill. The tag will give you gender and age range. If you want to do the wrapping, do it so the lid may be removed for inspection before delivery, but that’s it!” As we talked through the process, If you find that you are already too busy to spend extra time to add another project, you can simply give what and how they can: shoeboxes and a monetary contribution! Or just a contribution! Or fill a 24

NOVEM BER 2017

shoebox and don’t wrap it. Really, whatever and however you participate will turn into a moment of joy for a child that may not have much of it in their lives. Greg told me a story of one girl at Hill Country Children’s Center in Hunt, Texas. “She was about 15 or 16, and when she received her shoebox, she simply sat in her chair staring at it. When asked, she asked ‘Is this for me?’ Yes. It is. ‘Will I have to share it with anyone?’ No. You won’t. As she looked up at the people in the room, she shared ‘I’ve never, ever, had a Christmas present that was just for me. Ever.’ Those are the kind of stories you can help make happen. It’s easy for you to do, and your help may change a child’s life in a way you haven’t contemplated. Just knowing someone cared enough to do it. For them. When not that many things have happened to them that was…for them. Greg told me “that experience changed me. I had become very cynical about Christmas and its commercialization in America. I really didn’t enjoy it because I felt it was almost offensive what it has become here. Then I saw this girl’s reaction, and many others that are similar to her. I’m a changed man.” Here’s an easy TO DO LIST: Call Greg Jones at 210 389-1282 or email him at gjones@phyllisbrowning.com Get your gender and age range tag information. Gather thought-out gifts, age appropriate, of course. Pass them to Greg. Volunteer to stuff, wrap, or deliver the gifts as you can! OR Call or email Greg and let him know you wish to donate shoeboxes. Shoeboxes don’t have to be ‘shoeboxes’. One contribution went to the Dollar Store and bought the see-through plastic shoebox-

shaped containers. “We filled them with gifts hidden in tissue paper, and no wrapping was even required!” If no shoeboxes, tell Greg you want to make a contribution. J-Jireh is a 501(c)3 and will give you a receipt as needed. “Any level of involvement is appreciated and goes to a good use” Greg explained. “It may change your life, as it has mine.” J-Jireh’s long term goal is to open a children’s shelter in the format of a spoke and wheel — separate ‘homes’ sheltering a smaller number of children overseen by a ‘mom’ or ‘dad’ to love and guide them in a loving environment. A family environment.

CHRISTIAN ASSISTANCE MINISTRY “THE ‘ER’ OF SOCIAL SERVICES’

A recent press release by Christian Assistance Ministry (CAM) outlines a bit of the background and focus of the organization. As it states “CAM began in 1977 as a joint venture between nine downtown churches, all with a goal of helping the homeless, the working poor and other people in crisis. Today, CAM’s mission is supported by 100 member churches, hundreds of local businesses, individual donors, foundations and more than 200 volunteers. In addition to its original location at McCullough Ave. and Hwy. 281, CAM operates a satellite location on the city’s northwest side. The non-profit calls itself an “emergency room of social services,” providing food, clothing, financial assistance and other critical services to more than 50,000 people every year. CAM serves as a safety net for people affected by poverty and financial issues, helping both those with multiple complex challenges and people facing a onetime crisis.” Marlo Mullins, Dominion resident, recently worked with this group, and introduced me to Marlise Kercheville, a current Board Member, and via her, Dawn Smith-Fosdisk, the Executive Director. Marlise’s background information on CAM was quite compelling related to the growth and the focus of the group. A quick overview of the assistance provided during 2016 is invaluable in making a decision regarding who you will include in your charitable giving this year. In light of that, the following information provides a wealth of information: More than 40,000 people were provided with food 18,000 were provided clothing 4,426 individuals received financial assistance, including prescriptions, utilities, and ID help 2,000 received transportation for medical and work 300 served through Back to School 870 served through the Christmas Shop open for Volunteer Opportunity now! Toy donations needed by December 7! 300 received free haircuts for employment opportunities

As Dawn said, “We served more than 50,000 individuals in 2016. Almost 75% of those are working, yet poor families. 25% are homeless and are either mentally or physically ill, and more than 14,000 are children. I am always very pleased to tell our contributors that for every $1 they donate to CAM, we generate $2 in emergency assistance. This is an outstanding result, and one not matched by many other charitable groups.” CAM springs from a scriptural basis — Leviticus 23:22 when God’s people are instructed “When you harvest the crops on your land, do not cut all the way to the corners of your field. Don’t pick up the grain that falls on the ground. Leave it for the poor.” “Our mission is to share the love of Christ by providing immediate assistance and encouragement to people in crisis,” Marlise stated. If you would like to support CAM (or to donate or volunteer specifically at their upcoming Christmas Store), please find them at www.cam-sa.org or contact the Executive Director, Dawn White-Fosdick at dwhite@ cam-sa.org or by dialing 210 697-5771.

A quick example of their work is: ARMANDO Armando came to CAM after losing everything, his home, his family, his truck and tools needed for his plumbing profession; he literally had nothing. He faced the consequences of his incarceration but never lost his desire to open his own plumbing business. One day, he made his way to CAM. During the interview process, the volunteer interviewer discovered that Armando was a trained plumber. CAM was able to provide financial assistance to purchase the tools needed for him to get back to work. Fifteen years later, Armando contacted CAM to share the good news; he opened his own plumbing company, "Aw Ready", and reconnected with his family. Furthermore, he is now hiring employees and helping families in his community. He thanked God and CAM for giving him a second chance.

In addition, everyone is in on the FUN for these once in a lifetime shots that our Members have here at our Club. Please note this is an "Opt Out" program. INSIDE THE ARTIST ’S STUDIO by Brian Kenneth Swain, Dominion Resident

ANA HOLBROOK Ana Holbrook’s art studio overlooks the Texas hill country, a vista from which she draws inspiration for her artworks in stained glass and other media, including acrylics, jewelry, paper maché, and fresco. Ana grew up in Peru, and gained her appreciation for art from her native people, food, culture, music, and animals, and, in particular, from the tranquil sense of peace she got from living by the ocean. “I was infused with a sense of serenity, closing my eyes and breathing deeply the Pacific Ocean breeze, hearing the sound of waves breaking on the rocks, whispering that I was part of a magnificent creation.” Sunday night Disney movies were the catalyst that made her want to come to America, and the inspiration to bring along her artistic skills and spirit. Her favorite medium is cut glass, an art form that affords a limitless variety of sizes, shapes, images, and colors. She attended Zavaleta Art Studio in Lima, Peru as well as Virginia Stain Glass Studio in Burke, Virginia, where she learned how to cut and form glass. Since moving to San Antonio, Ana has done numerous artworks for shows and commissions. She restored for Archbishop Gustavo a statue of the Sacred Heart of Jesus and painted a Lady of Guadalupe statue for a Mexican friend. Her works have been an inspiration to her friends and students, who seek their own self-expression through her work and instruction. “Art is an essential part of history and human expression. I am here to help it to continue and to inspire future artists.”

BUSINESS PROFILE by Ben Schooley

DOMINION CROSSING VETERINARY HOSPITAL M i ch elle Shaw, DVM offering another location closer to San Antonio benefits them as well. And, hopefully, it gives us the chance to service a new client base from San Antonio. Not only is that good for Dominion residents who are close by, but I believe some of our Boerne clients may see this location as a convenient drop off place as they travel into San Antonio for work!”

A new veterinary hospital is coming to the Dominion area! Dr. Michelle Shaw is opening the facility at Dominion Crossing imminently. I had an opportunity to meet with her and I asked her to share some details about her background. Dr. Shaw outlined her background in two ways, professionally and personally. As she told me “I grew up always having animals, including dogs, cats, horses, a donkey, and a few goats. My first horse was a really old pony named Little Champ. During my teenaged years I participated in barrel racing and trail riding. I was lucky that my mom was really open to whatever equine activities I wanted to participate in, as much as she could, being a single mom. And she was tolerant when I had the two goats, because they stayed in my bedroom! I really love medicine, all aspects of it. I am intrigued by human medicine too, so the veterinary field just seemed like a good combination of animals and medicine.” As she continued the outline of her personal experience, I was impressed by all of the balls she manages to keep in the air all the time. I suppose she is like many other working parents, but having it listed out for you is always fun to hear. As she told me, “My personal background. Well, I grew

36

NOVEM BER 2017

in up Corpus Christi and attended Texas A&M University Corpus Christi for my undergraduate work, and then Texas A&M College of Veterinary Medicine. I graduated from Veterinary School in 2009. My husband and I both love Boerne. My husband owns a residential construction company. We have two children, Paisley, who is 3 and Weston, who was just born this summer. Our family also includes a yellow lab named Cabela. My husband and I both enjoy lake time, boating, and Crossfit.” She continued with her professional story: “I started working at Herbst Veterinary Hospital straight out of vet school in 2009. I had done an externship at the practice during my 4th year, and I really loved the atmosphere and the team. I initially split my time between Herbst Veterinary Hospital and our sister practice, Kendall County Veterinary Center, which is also in Boerne. Over the years, I’ve transitioned to working full time at the Herbst Veterinary Hospital. I asked her why she chose to branch out at this time into a new facility. Her answer was filled with excitement! “The opportunity to be a part of opening a new hospital is so exciting. We have clients right now that travel a long way to see us in Boerne, so

Dr. Shaw continued by outlining the relationship between the Dominion Crossing hospital and Herbst. “The new hospital is also affiliated with our sister clinics in Boerne. We will offer the same great customer service and vet care that all of our clients are accustomed to. We will offer full service medical and surgical care. We will have digital radiography and in-house diagnostic laboratory equipment. We are definitely passionate about promoting wellness and trying to prevent as much illness as possible. I also, personally, have special interest in internal medicine and oncology.” As we spoke, Dr. Shaw’s enthusiasm, passion, and love for animals came through clearly. “I love getting to connect and form relationships with clients. A client wants to know they can call me when something comes up and I, and my partners, will recommend what is best for their pet.” “AND,” she continued, “I love the challenge of medicine. It is really extra tricky when your patient can’t speak or give clues as to what is going on with them inside. Maybe this is how a pediatrician feels! As you know, sometimes a vet simply can’t do the advanced diagnostics that we can find in human medicine, especially across multiple species. BUT, we’ve become quite advanced in several areas. I’m excited to offer advanced care and treatments when posse able. Some conditions have treatments on the par of human medicine, such as osteoarthritis, diabetes, heart disease, cancer, and the like.” “We hope to be open in early November, and you can find us at www.dominioncrossingvet. com OR, you can call us at 830 249-3543.”

Fine Dining is a big deal to Dominion residents. While our beautiful Country Club certainly has a lot to offer, sometimes we want to venture outside the gates and sample the delicacies that many of the local chefs are preparing nightly. Luckily, our area has several restaurants that focus on providing above-average fare, prepared in a gourmet style that will dazzle your senses. To assist with your exploration of some of the finer offerings, we have sampled from several of these restaurants along the I-10 Corridor and previewed them for you. While our list does not cover every restaurant in the area, we trust that you will find several that will turn your Saturday night into a cuisine event to remember!

814 – A Texas Bistro

For a quick trip to Comfort you will be rewarded. Chef Millard Kuykendall has been churning out amazing gourmet dishes for over 10 years now at this location, and has created quite the following. His menu changes weekly, and is largely dependent on the ingredients that he can source locally. Housed in a quaint limestone building on Comfort’s bustling High Street district, the humble façade and simple interior mask amazingly complex and beautifully plated dishes. As an example from our visit, enjoy the Sauteed Sea Scallops to startwith Cremini Mushroom Sauce and Crissed Crostinis. You can also never go wrong with a Grilled 14 Ounce Strip Steak with Garlic Potatoes and Maitre D Hotel Butter. They also have a great wine menu and can assist you with finding the perfect pairing for your dish. 713 High St. Comfort, TX 78013 (830) 995-4990

Peggy’s on the Green

Chef Mark Bohanan, owner of the highlyregarded prime steak and seafood restaurant in downtown San Antonio, recently opened Peggy’s, a South-inspired, all-American restaurant in Boerne. Located in the gracious, historically-significant Kendall Inn, a 19th century stagecoach stop that’s offered Texas hospitality since 1859. And hospitality is another word for “world-class cuisine”, as you will find with every visit to Peggy’s. The simplest of dishes are turned into masterpieces, as we found with our French Grilled Oysters to start. Even the salads are works of art, carefully plated, and with just the right mixture of greens and dressings. As his original restaurant, Bohanan’s, is famous, the steaks are perfectly cooked, wonderfully seasoned, and melt in your mouth. Also featuring a full bar, Peggy’s on the Green is a wonderful date-night excursion where you can linger all night and leave amazed. 128 W Blanco Rd. Boerne, TX 78006 (830) 572-5000

The Creek Restaurant

Also located in Boerne, The Creek is like a breath of fresh air. Located along the banks of the Cibolo River, and mere steps from Boerne’s bustling Main Street District, The Creek is the perfect conclusion to a day of enjoying the small town sights. As you sample a wonderful wine, you can take in the beautiful river from your simple yet elegant table. Enjoy the House Ceviche to start, featuring Red Snapper marinated in freshlysqueezed lemon and lime, with avocado and cilantro. Their entrees cover a wide palette, but we thoroughly enjoyed our Shrimp Linguini, with gulf shrimp, artichokes and fresh tomatoes, sautéed in a lemon-butter and white wine sauce. WOW. The restaurant, its décor, and the location simply begs you to relax with your meal and take your time. As the sun sets on the river, let the wine and conversation flow as you sample lovingly created dishes, presented in an elegant, simplistic way. 119 Staffel St., Boerne, TX 78006, (830) 816-2005

The Grill at Leon Springs

Right outside the gates of the Dominion, The Grill is certainly well known to many of us. If you haven’t tried it, you are missing out. The mission statement on their website sums it up nicely: “A restaurant is not a business but a way of life. When you come to the Grill, you are coming to our home and will treated as honored guests by all Grill ambassadors.” Chef Thierry Burkle has been focusing on his craft in the culinary arts since his days in Paris, and has continued that passion ever since. The Grill is a treat for the senses, with a beautifully ordained building and interior that simply welcomes you in and lets you know that you are in for a treat. Our visit included extremely tasty Calamari to start. The menu features an extensive pasta line-up, but we fell in love with the Blackened Gulf Drum topped with an Avacado Relish, Roasted Potatoes, and Lemon Butter Sauce. Chef Burkle also features a “Culinary Corner” of the menu, which are his special presentations of season dishes that you absolutely cannot miss. (Photos Courtesy of The Grill At Leon Springs)

Perry’s Steakhouse & Grille

Perry’s Steakhouse, located at La Cantera, is one of the more elegant restaurants you will ever visit. Absolutely no expense was spared with the creation of the restaurant, and that applies to the menu as well. Featuring a very popular Bar 79 area with optional open-air lounge, this is the ultimate stop for everything from important business meetings to your most elegant affairs. Chef Uriel Acevedo leads the kitchen to its nightly creations of the most exquisite dishes in the area. To start, be sure to sample the Asian Ahi Tuna Tartare, which is literally a work of art. Obviously you must have steak at such a steakhouse, and theirs delivers. Aged via their secret process, and cooked to perfection, their steaks are memorable for all the right reasons and leave you knowing that your evening is one for the ages. Complete your evening with a cocktail in the Bar 79, relax, and toast what is surely a most memorable evening. 15900 La Cantera Pkwy #22200 San Antonio, TX 78256 (210) 558-6161

MICRO

BREWERIES BIG FLAVOR ON A SMALL SCALE by Jeff Wilson

If there’s one thing that Texans love, it’s their beer. In the past 20 years, the trend of small microbreweries creating hand-crafted brews has exploded and has grown to a massive industry. We all know about the wineries in Fredericksburg, but there are a variety of micro-breweries nearby that provide you with a tour, some education on their brewing processes, and then a wonderful time of sampling their current concoctions. Here you will find a few of our favorites, and encourage you to take these cooler temperatures and sample some of the finest beer that is hand-crafted right here in the great State of Texas.

FITNESS

THE BENEFITS OF TEAM PERSONAL TRAINING Jonathan Andrews and Patrick Hafner

Health and fitness is something that we all struggle with. It doesn’t matter if you are a beginner or a professional athlete, there will always be a challenge to stay healthy. If you’ve been out of the workout world, getting back into the gym can be intimidating. There are countless excuses you can come up with to avoid getting started. And then, even once you get into the gym, going at it alone only makes it that much more challenging. We have all been there at one time or another! If we work together, however, we can make these challenges that much easier! Let’s put some strategies together that will encourage you to ‘stay on the wagon’ and never give up! One of the most effective is training in a group setting. This is is an extremely effective strategy, if not the most effective, for overcoming these obstacles.

much more likely to show up. Planning for a healthy meal in the Club after the workout helps, too! Group classes also eliminate any guesswork that may prevent you from getting an effective workout. Each session will begin with some type of dynamic warm-up, strength, conditioning, and balance exercises, and a cool-down. Your trainer will ensure all exercises are performed in a safe and controlled manner to insure effectiveness. Many people think that group exercise will only work when people at the same level of fitness work together. This is entirely untrue. Through different methods of programming we can ensure that people at different levels of fitness all get an equally beneficial workout. When we exercise with others, we tend to work harder, longer, and

at a much higher intensity. This is what we call the Köhler effect. The Köhler effect is the phenomenon that occurs when a person works harder as a member of a group than when working alone. Nobody wants to be the weakest link, and in turn we will push ourselves to achieve both mentally and physically. This yields better and more consistent results. Setting yourself up with a group of people that have the same goals as you do can be the key factor that keeps you on track. Our DominionFit Team training classes will give you all the resources you need to reach whatever goal you have for yourself. All you need to do is show up and we will take it from there! If you need more tricks and tips to ‘stay on the wagon’ we can help with that, too.

A study by Stanford University compared two groups of people who were starting an exercise program for the first time. The first group, Group 1, was composed of people only working out by themselves. The people in the second group, Group 2, were given partners to exercise with. Unsurprisingly, 48% of the people in Group 1 gave up before the experiment was over, compared to only 6.8% of group 2. Exercising with others creates a greater sense of accountability as well as camaraderie. For many people, an hour-long workout goes by much faster exercising with others and makes workouts more enjoyable. Participating in group training also helps provide structure and accountability to your work out regimen. When you make a hardline appointment with a friend to have a weekly workout date, for example, makes you

NOVEM BE R 2017

Experience FREDERICKSBURG This new section is one that has been in the works for a while, and we are excited to see it finally come to print. As residents of the area as well, we know that 99% of our time is consumed with one town: San Antonio. We work there, we go out for dinner there, and most of the events that we attend are there. However, we also know that we are surrounded by some fascinating small towns, full of charm, and we hope to highlight one in each issue as a way to encourage you to get out and explore some of these great towns. We will attempt to take you on a virtual “tour” of the town, and point you to some of the finer businesses in the area, some of the world-class dining, and other key “can’t miss” events, functions, and places.

Fredericksburg, pop. 11,350, is a short 45 minute drive from here, and hosts some amazing culture, dining, wine, and art. While it’s German name might imply lots of beer and brats (there’s some of that), the town itself has actually grown quite the personality in recent decades, and has become a mecca for those looking to experience a cultured time in the Texas Hill Country.

WINE

No trip to Fredericksburg would be complete without a tour of a few of the wineries in the area. This is also a great way to begin your trip and to set the tone for the day as one of relaxation and appreciating the beauty all around you. With dozens of wineries to choose from, you really can’t go wrong. However, Becker Vineyards is a “must-visit” as Dr. and Bunny Becker are Dominion residents! Located in the Texas Hill Country between Fredericksburg and Stonewall, Becker Vineyards was established in 1992 by Richard and Bunny Becker. The winery, located in a 19th century German stone barn reproduction, is surrounded by lavender fields. Featured in Wine Spectator, Food & Wine, the Fine Living Channel and served in The White House, these hand-crafted, Bordeaux, Burgundian and Rhone-styled award winning wines are enjoyed with fine cuisine or casual fare. Becker Vineyards is open for tastings, winery/cellar tours, wine gift purchases, wine club and picnicking. Join them on the verandah during the spring and summer, or by the hearth of an open fire during the winter in our Tasting Room. www.beckervineyards.com

ART

Once you have ventured into the Main Street area of town, you will see that Fredericksburg has a lot to offer. From boutique clothing, antique stores, and collectibles, the variety is large. Fredericksburg has also become quite the hot-spot for fine art. This is world-class, original works of art created by some of the finest artists throughout the area, as well as the world. Be sure to visit the River Rustic Gallery, which is home to over 32 unique artists who proudly display their work throughout the year. Please come and visit this acclaimed showcase featuring artists from across the nation. Find hidden treasures for your ranch, home, or office. Our gallery includes a wide variety of media such as fine rock art, paintings, photography, sculptures, ceramics, and handcrafted wood/glass, furniture, ceramics, and much more. Also, we are also big fans of InSight Gallery, featuring original art from regional and national artists. InSight Gallery represents a select group of the finest painters and sculptors living and working today in landscape, figurative, impressionistic, still life, wildlife and Western art.

DINING

With having sampled fine wines, and having perused worldclass art, take your appetite to some of the amazing cuisine that Fredericksburg is serving up. Venture to August E’s, who, since 2004, has delighted guests with their “Nouveau Texas Cuisine”. Offering fine dining, steaks, sushi and fresh fish and an award-winning wine book. Voted “Zagats” highest-rated restaurant in the Hill Country and a AAA three-diamond award member. Come enjoy their contemporary atmosphere with soothing background music and contemporary art. Another favorite is Farm Haus Bistro at Fredericksburg Herb Farm, which is a fine restaurant (and separate bar area) which features a talented, ambitious young chef and a menu that’s ever-changing based on the chef’s inspiration. A historic rock house built in the late 1890’s provides the core of the restaurant which is located only four blocks from the bustling shopping district of Main Street and only two blocks from a peaceful winding country road. Guests enjoy the activity of town and later retire to the peace of a country farm home for spa treatments, fine food, beverage and lodging.

TONY J OHNSON GOL F DI R E C T OR

If you are a golfer, you have probably already met Tony, but for the rest of us who aren’t, The Dominion Country Club has a new Director of Golf! Tony, the son of a golf pro himself, moved to San Antonio during his senior year in high school and graduated from Madison High School. “My dad moved often with his own golf pro roles. In fact, my attendance at Madison was the fourth high school I’d attended in the previous four years.” As Tony continued, he reflected back on those years. “Three days after I graduated, my dad took another job, and I decided I was ready to stay put. I found my own place, and really didn’t have anything in my pocket. But, I was truly blessed because in no time at all, I received a four year golf scholarship to The University of Incarnate Word here in San Antonio. He received his Bachelor’s in Business Management in four years’ time while working to support himself. Tony’s golf pro story begins with that graduation. “I received my first job offer from Silver Horn Golf Club during 1995 as an assistant golf Professional. I earned my Class A PGA certification from the PGA of America in 2004 and started me on the career I love today. I’ve done my turn working at facilities like the Club at Sonterra and Escondido in Horseshoe Bay up at LBJ, but my last ten years have been spent in Kerrville, Texas at the beautiful Comanche Trace Golf Club. That role prepared me to be able to take the

Golf Directorship here at The Dominion, and I can’t wait to get my feet wet!” Because I’m a little nosy, I asked Tony how he and his wife met, and he laughingly replied “At Salsa lessons!” One day, my buddy introduced me to Valerie, and I invited her to join me at the lessons. We meet at a studio where Valerie grew up taking dance lessons so the pressure was on for me because I didn’t know she knew the place. After that first date the rest is history!” Tony also told me “Valerie was already a great dancer, though. But I think I’ve improved enough that she is ok going out to the dance floor with me!” Tony and Valerie enjoy traveling, and completed a trip to the Atlantis Resort in the Bahamas this summer. “My daughter Giuliana, who is seven, wore me out by making me slide down that gigantic slide with her constantly!” They enjoy dancing, of course, and, as Tony outlined “We both work full time, and so we focus a lot on making sure we have time together, both as a couple and as a family.” Tony and his wife Valerie have been married 8 and in addition to Giuliana, they also have a six year old girl, London and a 23 year old son Larry. They are planning on relocating to San Antonio as soon as they can. As Tony told me “I can’t wait to meet the Members and to provide them with a great golf environment and experience!”

GOOD READS

by Marlene Neslund, Dominion Resident

A NY THING IS P OSSIBLE

In Anything Is Possible, the reader once again enjoys Elizabeth Strout’s simple, streamlined and succinct style of writing. In fact, this book is highly recommended because missing the sheer beauty in its writing would be a true mistake. I confess that it would be a challenge to make an elementary school level vocabulary test from this novel about small town people from the mid-west. Street’s style reflects their ordinary lives with ordinary words that paint brilliant images. In this volume of nine connected stories, each chapter has a main character somehow related to or influenced by Lucy Barton, the subject of Strout’s 2016 novel. Lucy Barton is a successful writer returning to her hometown after seventeen years’ absence. The first chapter of Anything Possible gives us Tommy Guptill, the janitor in the Amgash school system. This kind soul should be embraced because he is the only character in this book who is at peace with himself.

one of the absentee mothers in this tome, thinks that her love has given her freedom. There is the theme and truth of lost innocence, and many of the characters lament their own loss of innocence. Linda recalls a summer evening with school girls, when “the entire sky was colored in glorious celebration - all freedom, all innocence, the laughter.” War veteran Charlie also remembers his college days with his sweetheart Marilyn, “days of innocence in Autumn when we were just kids.”

Universal themes abound. In the beginning of this book, Tommy the janitor tells Pete, “Well, I guess there’s always the struggle between what to do and what not to do. That is as good a description of the battle of good vs. evil as I’ve read. Tommy continues by saying “Remorse, well, to be able to show remorse - that to be able to be sorry about what we’ve done that’s hurt people- that’s what makes us human.”

All these stories are pregnant with well-drawn similes. I applaud Strout for her easy writing and simple vocabulary which magically embraces a full range of emotions. For Pete, “Panic, like a large minnow darting upstream, moved back and forth inside him.” Other examples abound: “A complaining woman was like pushing dirt under the finger nails of God.” “Weather was different then, like a family member you couldn’t avoid.” “He was a closed book of a man; he inhabited himself with economy.” Page after page, the short, crisp sentences give evidence of the author’s talent to say a lot in a few words. “When Pete saw that Lucy had no lipstick on, he felt a tiny shudder go through him, as though his soul had a toothache.”

And we have the healing power of love. In the second chapter, “Windmills,” Patty tells Angelina, “We’re all just a mess; we love imperfectly, but that’s okay.” Mississippi Mary,

Most characters in this book, this town, these stories, seem incapable of escaping the burdens of their lives, no matter what those burdens are. We have glimpses of a parade of

In the sixth chapter, “Sister”, we meet Lucy’s older, overweight sister Vicky, and their brother Pete reappears. All three of these souls have been bruised by extreme poverty in their youth. Coupled with parental misconduct, they carry a big burden.

68

NOVEM BER 2017

people who are weakened by life’s hardships and disappointments - extreme poverty, faithlessness, war-torn souls, incest, insanity and run-away mothers. Loneliness seems to surround almost every character. But yet, as we come to the end of the stories, we hear “Anything was possible for anyone.” It sounds straightforward, but in true Strout manner, we realize that it does not ring true. Maybe that is because we want that phrase to always be a positive. But…sometimes…it isn’t. If you are looking for a story that will be an easy read that leaves you with a sense of beauty in simplicity - of words, and of people - with thought providing streams throughout, then this is the book for you.

GR AYZE ON GR AY S ON

After my visit to The Bin in June, I had wanted to go back to that up and coming strip of local chef-owned restaurants on Greyson Street. So, just down the street is a far-to-table spot with indoor and outdoor dining in both the front and back for up to about 150 people. Opening in January of this year, and set in an old house under sprawling oak trees, is this cool and very hip restaurant called Grayze. For the first time, we walked in unannounced to complete my review. In normal circumstances, I make arrangements in advance, but this time I threw that all out the window! The chef greeted us and was thrilled to have us dining that Friday evening.

70

NOVEM BER 2017

With hard wood flooring, wooden tables, and paper menus, rustic and homey is what came to mind. Our waiter told us about the special starter they were offering for the evening - lamb meatballs. We couldn’t pass such an amazing offer up! These incredibly tasty meatballs, bathing in a fresh tomato ragout, had such great flavors of cumin, coriander, caraway and fennel. We asked for one of their signature seasonal cocktails to accompany our lamb dish, and we were pleasantly surprised when they suggested one of our favorites, a fantastic muddled cucumber martini with a chili-dusted rim. We were told that Chef Cuellar prides himself on taking unfamiliar dishes and making it seem like you have known it forever… using local tastes to bring it home. We saw that all through their menu. It is a reasonably priced menu and has plenty of familiar offerings - with a twist -ranging from starters and salads to hamburgers to sandwiches to full entrees such as Roasted Chicken with crushed tomato ragout.

chilled potato salad, we managed to still have room to try The Mac! This is a five cheese blend macaroni with buttered cheese crumbs and caramelized onions. Each dish was simply great comfort food redesigned! Grayze focuses on the details. They make all of their own sauces, including ketchup and mustard, in-house. Most months they have a special dinner on one or two Monday evenings. They offer seasonal cocktails, a nice wine and beer selection. San Antonio is growing fast and especially the unique restaurant scene. Great new places are opening up all over and they are thrilled to be a part of it!
