navigate your way around. It’s enough to make you throw in the towel and order a takeaway instead. Before you do: there is a solution to all that. Maybe you’ve heard about it. It’s called the Big Green Egg. The Big Green Egg is not a normal cooker. For a start, it’s charcoal-fueled and sits in your garden. It might not be conventional, but by the time you’re done with your first cook, you’ll be ready to throw the rulebook out of the window. The EGG is the lovechild of ancient Japanese cooking traditions and modern sensibility. By taking a tried-and-tested way to cook and infusing it liberally with the needs of the contemporary home-chef, you’re not only left with a versatile cooking machine, you’re left with the undisputed, the original flavour maker. The EGG is an oven. But not as you know it. The secret is in the ceramics. The Big Green Egg is hand-crafted where ceramics were once invented, using ceramic technology that NASA uses to build space shuttles. This unprecedented quality allows you to get your EGG to screaming hot temperatures in 15 minutes or fewer. And it’ll stay hot for up to 24 hours if you’ll let it. Conversely, it will allow you to cook extremely low, for slow, considered cooks that your normal oven simply won’t be capable of. It isn’t just about heat, either. The ceramic dome locks in moisture and flavour, so whether you’re cooking steaks, slow-cooking some meltingly tender beef short rib, or even infusing your favourite sticky toffee pudding with the gentle, aromatic smoke of pecan chips, the result will be worlds apart from anything you’ve experienced before. And there’s no denying it: fabulous food plays a huge part, summer barbecues, dinner parties — nothing quite unites us like a good spread. All that said, don’t you ever feel… frustrated with it? The whole ritual: tending the oven, running around the kitchen while your guests are torn between having a wonderful time without you and wondering where you are. And the stress; what if by some cruel twist of fate, it all goes wrong? It happens. Too many hobs on the boil. Too many timings and temperatures to B E R E S FO R D S . C O.U K

kitchens. Or one of the thousands of EGG lovers all over the world. Better still, consider tasting the EGG for yourself. Be careful though: it might just change your life.
ROASTED FORE RIB OF BEEF METHOD 1 Set up your EGG for indirect cooking with the ConvEGGtor legs up and the stainless steel grid on top.
2 Your target temperature is 120c/230f. If you own an EGGspander, set up without the top shelf. You’ll add this later when your beef is resting.
3 Remove the beef from the fridge a minimum of 2 hours before cooking to allow it to reach room temperature.
4 Rub the meat with rapeseed oil and season heavily all over with salt. When you’re done, place it in the EGG.
5 Roast for 3-4 hours, or until the internal temperature reaches 58c — the perfect temperature for a fore rib of beef.
6 Once you’ve reached this internal temperature, remove the joint from the EGG, wrap in foil and leave to stand.
7 Remove the ConvEGGtor from the EGG and replace with the stainless steel grid or cast iron searing grid if you have one. Raise the EGG temperature to 250c.
8 Put the joint back on the EGG, and sear each side for some trademark searing lines. This should only take a matter of minutes. As a guide, for medium-rare, cook to 55-60c, medium: 60-65, or medium-well 65-70c.
9 Remove the beef, season with freshly ground black pepper and rest in a warm place for at least 45 minutes. The ideal resting temperature is 58-60c.
10 Then carve off of the bone and make sure to give each person a thick slice. It’s easier to portion and serve, and looks very impressive!
YOU WILL NEED: • 1 4-bone rib of dry-aged beef (ask your butcher to French trim the rib as this looks amazing. Also, keep the trimmings for burgers) • Maldon sea salt • 25 ml rapeseed oil • Freshly ground black pepper
METHOD
APPLEWOOD SMOKED STICKY TOFFEE PUDDING Begin by making the toffee sauce.

4 Place the Dutch oven back on the grid and add the cream, sugar, butter. Close the EGG lid and bring the ingredients to

5 Fold in the flour, baking powder and bicarbonate of soda. Stir in the chopped pecans and the dates along with the water they’ve been soaking in. Combine well.
6 Fill the ramekins with the pudding batter to within 2cm of the top of the moulds.

• 75g unsalted butter
• 2 eggs
• Pinch of Maldon Smoked Salt Flakes
• 175g self-raising flour
per pudding
• 1 tsp baking powder
• Good handful Smoking apple wood chips
• 1⁄2 tsp bicarbonate of soda
• Sticky Toffee Puddings: 150g dates,
