There’s nothing better than good conversation around the table, and our three Somms have a lot to share. Who doesn’t love a good wine story, and Elijah, Tim and Dustin have a lot of them. Here, we thought we’d talk a few notes about wines, food pairings, the art of winemaking, and what makes a good vintage so special to uncork and savor!
BHC: First Big Wine Moment?

TIM: I first tried my favorite wine
Eight Years in the Desert at an Orin Swift wine dinner at my prior club. This wine opened me up to just how powerful and intriguing wine can be and kicked off my interest in wine.
BHC: Your favorite food + wine pairing, and why?
DUSTIN: Vintage Champagne and fried chicken! The acidity from the Champagne matches perfectly with the fried dredge on the chicken. Absolutely delicious and I’ll never forget my first experience with this pairing. Back in Los Angeles, with veteran restaurateur and master sommelier Michael Jordan at Bashan restaurant. (Who happens to be one of only 15 experts in the world who have been awarded both master sommelier and certified wine educator diplomas.)
BHC: What first drew you to the art of winemaking?
ELIJAH: In 2010, as bar manager and wine buyer for an upscale restaurant, I was invited to a sommelier summit during harvest in Walla Walla. I spent an afternoon with the director of winemaking at Long Shadows winery, which produces 6 different style wines from world-renowned winemakers, helping where I could. As the grapes went from vineyard to winery, to fermentation and press to barrel, I saw the marriage of science, agriculture and artistry, and I was hooked. It really felt like I had fallen in love.
Years later, I’m the guy making decisions, when to pick and which lots to process. I loved working in the lab, adjusting treatments. Making my own wine from vineyards I was familiar with, hands-on by vine training and dropping fruit, was a joy.
BHC: From the wine list - Top summer wines and best to pair with?
TIM: When I think summer, my mind immediately jumps to Rosé. Our Elizabeth Spencer Rosé of Grenache offers lovely notes of fresh strawberries, peaches, and bright acidity. This wine is a go-to for many appetizers, but I would especially recommend with our Tuna Tartar.

ELIJAH: I love rosé! Especially excited about: Wolffer Summer in a Bottle Rose Cotes de Provence. (Provence rosés are the industry GOATs!)
BHC: What should we be trying right now?
DUSTIN: Pinot Noir from the Willamette Valley. There are a multitude of styles and producers that offer a different experience. My top choice at the Club right now: Domaine Serene Evenstad Reserve Cheers!
