dear visitor Greetings friends and welcome to Bermuda, We are delighted that you chose our island home as your vacation destination. We hope that your stay is highlighted with the sights, sounds and experiences of this vivid island. Beyond the beautiful, the pink, and the lush, Bermuda is a country steeped in history, art and culture that begs a closer look. The combination of British charm and island soul, along with friendly residents and fabulous scenery create a safe, comfortable open-air island-resort that compares to none other. Boasting the most golf courses per capita in the world, Bermuda is the ideal place to perfect your drive or putt. Our championship Port Royal Golf Course and its signature 16th hole also makes the course one of the world’s most picturesque. The UNESCO World Heritage site Town of St. George, is the oldest continuously operating English town in the Western Hemisphere. The town, situated at the water’s edge, with its cobbled-stone walkways, narrow lanes and traditional Bermudian architecture, represents a unique pairing of a ‘living historical museum’ and world-class yachting port. Hamilton, Bermuda’s business and retail center bustles with restaurants, retail shops, art galleries and historical landmarks worthy of a day’s excursion. A guided walking tour with the Town Crier lets you see areas of historical significance in the ‘back of town’ while enjoying a unique blend of urban and island chic. The South Shore continues to boast miles of pink-hued coastline, dotted with intimate coves and bays that we, and our visitors love. Beyond the world-famous Horseshoe Bay, the newly restored Gibbs Hill Lighthouse and our railway trails provide unique sightseeing alternatives to sand and sea. The Royal Naval Dockyard offers a variety of experiences in one location. From land and water excursions, a craft market, al fresco dining, beach activities, live entertainment, and more, all activities are in close proximity to one another. The Hall of History mural depicting Bermuda’s 400-plus years of existence is a ‘must-see’ amongst all of the activities on offer in the west end. Lastly, but not at all least, Bermuda’s surrounding waters and aquatic activities, including world-class big game fishing, shipwreck and reef diving, whale watching, boating, snorkeling and more are ideal island experiences. Bermuda and its people have much to share with you while you are here. We encourage you to get acquainted with the local charms and welcome you to share your fond memories with others living beyond our shores. Sincerely, BILL HANBURY CEO, BERMUDA TOURISM AUTHORITY

bermuda ha ha “I just arrived here today and didn’t know there were speed limits” BY ROGER CROMBIE

I hadn’t been in Bermuda very long — about three hours — when I bought my first motorbike. In the showroom, I simply asked for the “most powerful one” they had. I drove out on a Triumph, a massive motorcycle marque, missing a massive engine. This one was 100cc, then the capacity limit. To Bermudians 100cc sounds like 750cc does to anyone else, but I wasn’t exactly overwhelmed by riding a bike with an engine smaller than my Dad’s lawnmower. Worse, the bike couldn’t cut grass worth a damn. This will bring on a bitter and rueful chuckle: in those days, Bermuda didn’t have a lot of traffic. Sure, a few cars and bikes would accumulate near Hamilton in the morning and the afternoon, but at the ends of the Island, there was hardly any traffic. Ever. And certainly not at 11 o’clock at night, when I took the Triumph out to see what she could do on the straightaway up by Port Royal. I wondered if I could hit 60 before the road forced me to slow down. As it happened, I reached 75, almost as far as the speedometer went. Having slowed down, I turned to see if I could top that on the return journey … at which moment, a Policeman on a bike pulled up alongside me. “Your speed, Sir,” he said, with awe. “Unbelievable!” I asked what speed he thought I was doing. “I have no idea,” he said, which was an opportunity for me to say “I’m pretty sure I was doing 18 miles an hour, Officer”, an opportunity I chose not to take. “I do know that you were exceeding the speed limit,” the Policeman said, the wonder in his tone evaporating. “Why were you driving so fast?” There are moments when you have to decide: tell the truth and pay the price, or lie and probably pay a larger one in the fullness of time. I considered saying “I just arrived here today and didn’t know there were speed limits”; “I’m dyslexic, and thought I was doing 18”; or asking him how fast his bike would go, in case I had to outrun him. In the end I opted for the truth: I admitted wanting to see how far I could push my new bike. The gendarme thought about that for a minute, and then asked how fast I’d been going. “About 75, but only for a few yards,” I replied, wondering if I’d be jailed, or exported and then jailed. “Are you going to do this sort of thing again?” the policeman asked. “I was,” I replied, “but then you appeared.” I figured I was a dead man anyway. “Well, don’t,” said the copper, relenting. “Next time you go to the States, rent a bike and see if you can beat my top speed, 114mph.” With exactly the right amount of humility, I replied, “I doubt I could do that, Officer,” and rode away slowly, a free man.

JOHNNY BARNES Photo by www.moongateproductions.com

A Living legend, Johnny Barnes He’s the ultimate ‘morning person’ and a warm greeting from folk hero Johnny Barnes is the ideal way to start your sightseeing tour. Every weekday he’s at Crow Lane roundabout from 6am to 10am, showering city commuters with waves, blown kisses and a smile that could melt the heart of even the most jaded traveller. We begin our tour in the historic former capital, St. George’s. Wherever you go, don’t forget to greet all you meet: as Johnny reminds us each morning — it’s the Bermuda way!

Using our maps It’s easy to find your way around Bermuda. There are four main arteries: South Road runs along the south shore, North Shore Road hugs the north shore, Middle Road runs through the centre of the island and Harbour Road follows the inner harbour, across from Hamilton. Each road brings you into the city of Hamilton. Key attractions are numbered on our maps in this section and described in the text. In addition to the full key map of the island on pages 32 & 33 there is a large pullout map in the centre of this magazine; for a map of St. George’s, see page 19, the City of Hamilton on 24 and Dockyard on 34. ‘W’ at the end of a listing denotes ‘wheelchair accessible’.

Parishes In 1609 the survivors of the English wreck of the Sea Venture struggled onto Bermuda’s shores, well short of their intended destination of Jamestown, Virginia. By 1615 the Somers Island Company was developing Bermuda and exploiting her natural resources. The island was surveyed and what is now St. George’s Parish was set aside as public or company land. The remainder was divided into eight tribes or parishes, named after the principal shareholders in the Somers Island Company. These were, from east to west: Hamilton, Smith’s, Devonshire, Pembroke, Paget, Warwick, Southampton and Sandys. Along with St. George’s, they have become the nine parishes of Bermuda.

explore When two boys playing cricket discovered the spectacular Crystal Cave By Horst Augustinovic

Searching for a lost cricket ball, two twelveyear-olds, Carl Gibbons and Edgar Hollis, in early 1907 made the discovery of a lifetime – the subterranean wonder now known as the Crystal Cave. Searching for the ball, one of the boys discovered a small hole, which had at one point been covered with stones, possibly to prevent farm

animals from stumbling into the crevice. Unable to move the bigger rocks, the boys fetched their parents who managed to widen the hole to about two feet by four feet to allow one of the men to squeeze through. Lowering himself on a rope he found that for fifty feet or so the hole did not expand, but then opened into the spectacular world of stalagmites and stalactites. The owner of the property, Mr. Julian Wilkinson, only found out about this discovery when he saw another boy playing with a broken off stalactite and was led to the opening of the cave. After surveying the entrance he sent his two sons into the cave to investigate and, on their enthusiastic return, decided to enlarge the hole to allow the construction of a staircase. Although electricity had not yet come to Bermuda, Mr. Wilkinson also installed a lighting system based on acetylene gas. As there was a large pool in the cave, a boat was built inside to ferry visitors around the subterranean lake, but as the Crystal Cave became more popular with visitors, a pontoon bridge was finally built. After purchasing several adjacent properties on top of the cave, Mr. Wilkinson in 1914 decided to create a new entrance from the foot of the hill, making access easier and eliminating the flight of winding stairs. Two years in the making, this tunnel and the improved electric lighting made Crystal Cave one of the finest of its kind in the world and one of Bermuda’s favourite tourist attractions.

inspired by bermuda Alexandra Mosher Studio Jewellery Bermudian artist Alexandra Mosher draws from the island’s natural beauty to create inspired, sculptural jewellery. “I create expressive and original pieces; they’re certainly conversation starters,” she explains. “There is nothing more fascinating than taking art as we know it and giving it a whole new context on the body. I make sculptures to be worn.” Considering Alexandra’s background as an artist, it is no wonder her intricately sculpted jewellery designs have been influenced by her studies in fine art. “I developed a love for craft at a very young age, and was often creating little presents for my parents out of assembled found objects,” she told us. “My family still has a collection of pretty little things I made them.” Alexandra studied Studio Art at the College of the Holy Cross in Massachusetts and later, Jewellery Design at the Fashion Institute of Technology in New York. She launched her line of jewellery in 2005 and since that time has won several prestigious awards for her collections. Her process involves the ancient technique of lost wax casting; she first hand carves her designs in wax and then casts them in silver and gold in limited numbers. “I remember reading an art critic’s review of my work and feeling like I was on the right path when he said he was surprised at how I could create such original pieces at such an affordable price.” Although her work is highly coveted, she has something for every level of collector.

Alexandra is perhaps best known for her Bermuda Reef Collection in which she incorporates Bermuda’s famous pink sand into sterling silver and gold to create captivating pieces of wearable art. “‘Is it a gemstone?’ people ask me, and I just love watching their reaction when I explain how I’ve set our beautiful sand into each unique piece.” She told us that visitors often go on to say their daughter, sister or friend would never forgive them if they didn’t bring a little something from her pink sand collection back home as a gift. “It warms my heart to hear that,” she beams. Finding a little piece of your own is a delightful experience. You can find the lovely pink Alexandra Mosher Studio Jewellery Boutique in the Washington Mall at #7 Reid Street in Hamilton or some of her collections at A.S. Cooper & Son’s stores island-wide. art Celebrating the Creativity of Our Students By Lisa Howie, Director, Bermuda National Gallery

Artwork by students who participated in the 2013 Annual Student Art Competition. The theme was My Bermuda: My Community.

During the month of December the Bermuda National Gallery showcases all of the submissions to the annual student art competition. It is a time for celebrating youth creativity as we observe the expressions of local artists from Primary 3 to Senior level, and this year teachers have been encouraged to submit artwork. Each student participant receives a certificate of achievement and a place on the wall of his/her National Gallery while a select few will also be awarded a prize. This year the theme is Bermuda: Water is Me and the BNG is collaborating with the Bermuda Zoological Society and Greenrock to widen the outreach. This theme encourages students to explore their connection to water from diverse perspectives such as science, sport, or environmental preservation. On this collaboration, Dr. Jamie Bacon, Education Officer from Bermuda Zoological Society says: “As water is vital to all living things, we applaud BNG for engaging students’ creativity as a means of educating them about the water cycle and its importance for Bermuda’s residents, how water is a force of nature that can greatly affect our tiny island, and man’s impact on this precious resource.” Visitors to the island come looking for the narrative on the development of art in Bermuda and this can always be found, in some version of the story, in The Ondaatje Wing, which features our Bermuda Collection. The transition from this museum space into the student artwork display is a lively one as each artwork has an accompanying paragraph explain the work or adding a creative spin such as a poem or short story. Anthony Pettit One of Bermuda's Leading Art Dealers Bermuda Fine Art, Antique Maps, Books, Prints & Ephemera

Evelyn Montague Bicknell (1857 – 1936) Street Scene in St Georges. 12 x 16 inches. Watercolour One of the things of which Bermuda can be especially proud is the number of fine American artists that it has attracted to our shores. This was particularly evident from about 1900 onward when the island was enriched by the arrival of dozens of gifted watercolorists from the Eastern Seaboard who stayed here and worked with palette and brush often for several months at a time. Bicknell, for instance, a New Yorker, well known for his Bermuda impressions, came at least thirteen times between 1900 and 1922. He joined the Bermuda Art Association, exhibited profusely and was much in demand as a judge at art shows. The above St Georges view is a good example of his painting expertise. Price on request. a girl’s best friend Davidrose & Rebecca Little Jewellery By Nadia Hall

Put three girls in a jewellery store and you’re asking for trouble. I should have known what I was getting into when I arranged to meet Avrel Rose FernandesZuill and designer Rebecca Little at Davidrose in St. George’s. Avrel’s reputation – her sparkling personality and vivacious energy – precedes her, yet, despite the warnings, I quickly found myself caught up, waxing lyrical over all things sparkly. A third generation jeweller from Toronto, Avrel was “imported” (she jokes) by her husband David, a Bermudian and St. David’s Islander. Together they make Davidrose, a fine jewellery store specializing in luxury pieces using precious metals, carefully chosen gemstones and ethical, conflict-free diamonds, all designed in house. Alongside their sleek display cases, is a small selection of pieces by local British-Bermudian designer, Rebecca Little. Also hailing from the East End – she and David were classmates at St. David’s Primary – Rebecca honed her skills abroad in the United Kingdom before bringing that expertise home. The pair reconnected at a New Year’s Eve party in 2013 where they proceeded to “talk each other’s ears off about jewellery,” Rebecca recounts the evening. “I’m so grateful for their support and having an outlet.”

The shop currently stocks her “Bermuda Triangle” and “Linear” collections. Architecture, Rebecca tells me, is a huge source of inspiration and returning to the island with fresh eyes, she couldn’t help but be influenced by our unique structural landscape. Her collections use geometric shapes and patterns in luxury silver with freshwater pearls cultured into a triangle shape. The popular designs are all hand made by Rebecca on island and have been updated with red rubies in time for Christmas. It’s the perfect stop for “push presents,” engagement rings, weddings, birthdays and Christmas. The island is a popular wedding location for visitors and residents. “In Bermuda people are getting married 12 months out of the year. If they’re not getting married they’re getting engaged,” Avrel says confidently, proud to have a part to play in the St. George’s community. “It’s a niche market. We have a very unique product.”

golf “December and thankful for the Bermuda Goodwill” BY KIM SWAN, J.P. TEACHING PROFESSIONAL

Hello December and we welcome this holiday season which traditionally has been an important month in the Bermuda golfing calendar for more than 60 years. The Bermuda Goodwill ProAm Golf Tournament helped to make Bermuda a household name in the hearts and minds of thousands of golfers throughout Canada and the United States. Personally, I owe a debt of gratitude to the many overseas Golf Professionals and Amateurs that I have interacted with through the Bermuda Goodwill. We have become lifelong friends and shared many good times - Bob Demarco, Joe Carr, Kevin Morris, Dick Quinn and especially the late Bob Cloughen Sr. among many others. Personally, for me these visitors to our shores took an interest in me and helped insure that I got out of Bermuda to pursue my talent and broaden my horizon. Imagine, how tourism in Bermuda forged a bound between a young Bermudian golfers and the visitors on our shores through the great game we both loved. I am eternally grateful. Noteworthy, is that Port Royal’s first Golf Pro Walter E. King, the first Bermudian to win the Bermuda Open, deserves credit for being the inspiration for numerous young people (including me) who developed through golf at Port Royal following its birth in 1970. Ironically, it was Golf Pro Walter King visiting New England competing in the Minuteman Classic who encouraged a young Joe Carr to visit our shores - 44 years consecutive years later, countless visits, thousands of friends - the Bermuda Goodwill Tournament has become more than a golf tournament. Give gift of golf this Christmas Fast forward to 2014 and we are on the eve of another Goodwill Golf Tournament - with Christmas around the corner -at our Port Royal Pro Shop we have an array of gift items that make great holiday gifts. In addition, we have an ideal gift option of golf coaching packages with the Port Royal Golf Developmental Program. Family Golf At Port Royal Golf Course we are encouraging families to discover golf with a vision that they will find the special magic of golf many of us have come to experience and love . To this end our golf coaching is deliberately engaging golfers of all ages from PeeWee golfers age five to retirees. A Bella Vista Christmas Come join us at Port Royal Golf Course in December where our restaurant Bella Vista Grill is a great location to host that special luncheon or dinner for a business or family. historical stories Heritage Matters: Dr. Savage goes to T.C.D. By Dr. Edward Cecil Harris, MBE, JP, PHD, FSA

Harris Savage TCD. By 1835, some of the once magnificent marsh in Pembroke Parish had been filled in and cattle graze or lay contented by the southern side of the reclaimed land. In modern times, the parking areas and the new building for TCD now occupy the pasture area and the red dots in each image allow one to locate the position of “Mount Langton”, the original Government House in Pembroke.

General Sir R. Plunketdown-Fastt Officer Commanding The Royal Artillery Woolwich Arsenal, England SIR: Before HMS Bermuda sets sail for London on the 21st instance, I hasten to get this report to you of my journey to the City of Hamilton in these parts, with respect of the inspection of our mobile gun carriers and general carriages, as required by the local government at the Transportation Command-and-Control Department, now erecting new premises on the southern shore of the Pembroke Marsh. To get our carriages to TCD from the camp at St. George’s Island, we of course have to deal with the tiresome crossing by the ‘horse-barge’ at Ferry Reach, for there is no bridge connecting that Island. Once across the Ferry, we soon approached Flatts, a most tranquil village of sorts and I stopped to record a group of men repairing a small Bermuda sloop of the workboat variety, with its snub bow so distinctive in these waters. From the Flatts we reached the “TCD” (as we call it for short) at 11.15 in the forenoon, but alas the facility was closed for an extended lunch. That gave me the opportunity to Harris Savage TCD Flatts. Viewed from where a busy road has supplanted a beach, Dr. Savage captured the scene at the head of Flatts Inlet, the bridge to the northern side of Hamilton Parish being on the right foreground.

historical stories heritage matters Harris Savage TCD Burnaby H. In 1835, Burnaby Hill was yet to be a smooth thoroughfare and hard rock of the Walsingham/Dockyard variety had impended the construction of buildings on the upper reaches of the street.

sketch the environs nearby, which have the most idyllic character, though the marsh and wetlands, with the transient wildfowl, are much reduced in size, due to the local habit of people ‘taking de trash to de pond’. No doubt future antiquarians will be delighted with their finds, if they dig up the marsh by that new scientific method of enquiry called ‘archaeology’’! In due course, the doors of TCD opened and the inspection of our carriages commenced with the usual alacrity we have come to know. Unfortunately, I have to report that all of our vehicles failed their tests, for some reason or another, but mainly for scratches in the paintwork. That being so, I left the men to get on with fixing the matters and resubmitting the carriages to the inspectors and set off to capture a couple more scenes for your edification on the character of Bermuda. Harris Savage TCD Trim Hill. On his easel, perched on the summit of Trimingham Hill, the artist Johnson Savage has left a wonderful panorama of Hamilton and its harbor, with “Mangroville” (now the Royal Hamilton Amateur Dinghy Club) on the right and “Milford”, off Lovers Lane to the left.

Thinking you might appreciate an overview of Hamilton and its commodious harbour, I visited my local colleague, the surgeon Mr. Peckatit, at his spacious home high on the hill of Trimingham, as it affords the best vantage of the capital town. The result I lay before you, with humility, as one of my finer images of Bermuda. On my way back to TCD, the hour of afternoon tea break approaching, I tarried at the top of Burnaby Hill to give you a sense of the development of City of Hamilton, as depicted in my painting, attached. Before I sign off, I see we must welcome one of my great-great-grandsons to Bermuda: Peter Savage is here at the invitation of the National Museum and I hope that he enjoy the place much as I did in my three years, back in 1833–36. What a wonderful island it was, captured, so well, I have to write, in my marvelous series of paintings and sketches, now given by Peter and his siblings to the Museum. Your most obedient servant, Johnson Savage MD, Surgeon, The Royal Artillery St. George’s, Bermuda Anno Domini MDCCCXXXV Edward Cecil Harris, MBE, JP, PHD, FSA is Director of the National Museum at Dockyard. historical stories Do you know… about the Bermuda Dioramas? – Part 2 By Horst Augustinovic

The Wreck of the Sea Venture Diorama.

In 1950 a series of eleven Dioramas showing scenes from Bermuda’s early history were created by the Belgian artist Emil Antoine Verpilleaux and the Polish sculptor Andre Bohomolec after much collaboration with historians Commander Leslie Howarth, Walter Hayward, Hereward Watlington and Dr. Henry Wilkinson. These Dioramic Tableaux are reproduced in three dimensions by placing figures and objects in front of a painted background. The Dioramas were initially exhibited at the ‘Bermuda Cavalcade Gallery’ on Front Street in Hamilton and after they were purchased by the Bermuda Trade Development Board in 1952, they became part of a display in Fort St. Catherine, also featuring replicas of the Crown Jewels, various wax figures featuring life in a military fort as well as Boer War carvings. Unfortunately the Dioramas were destroyed during renovations in 2010. THE WRECK OF THE SEA VENTURE The Sea Venture, flagship of nine vessels heading in 1609 with 500 settlers to Virginia, found herself alone after the fleet ran into a hurricane near the Azores. With Admiral Sir George Somers in command and Sir Thomas Gates, Governor if Virginia on board, what happened is best described by William Strachy: “The clouds gathering thicke upon us and the winds singing and whistling most unusually, a dreadful storm and hideous began blow which swelling and roaring as it were by fits, at length did beat all light from heaven which like an hell of darkness turned black upon us so much the more fuller of horror . . . surely as death comes not so sudden nor apparent so he comes not so elfish and painful as at sea. For four and twenty hours the storm was fury added to fury.” As the storm finally abated, it was discovered that the Sea Venture had five feet of water in the hold and although every one on board bailed and pumped water, the ship was slowly sinking. After five days and with everyone on board utterly despaired and about to fact their death, Sir George Somers shouted “Land” and urged the men to one more effort while he was able to guide the Sea Venture hard on the reef to allow the entire company to debark safely. It was Friday, July 28th 1609.

historical stories do you know... The Diorama shows the Sea Venture in the distance and the shipwrecked people just after landing, Sir George Somers with upraised hands and behind him to his right Sir Thomas Gates instructing Robert Walsingham and Henry Shelly to go hunting and fishing for the necessary food supply. On May 10th 1610 – 10 months after the wreck of the Sea Venture – Sir George Somers and all but two of the survivors left Bermuda for Jamestown on the Deliverance and Patience, two ships they had built largely from material they salvaged from the Sea Venture. On reaching Jamestown, they found the 60 surviving settlers desolate and starving. Thinking of the plentiful supply of hogs, fish and turtles, Sir George Somers decided to return to Bermuda and bring additional food to Jamestown.

Admiral Sir George Somers.

Sailing back on the Patience, Sir George again encountered heavy storms and died of exhaustion on November 9th, 1610, at the age of fifty-six. After burying his heart in what is now called Somers Gardens in St. George’s, the body of this great adventurer was taken back to England on the Patience – the ship he helped to build only a year earlier.

That’s Amore BELLA VISTA / BY NADIA HALL

Bella Vista has just celebrated her first anniversary. We visit hot off the heels of Hurricane Gonzalo and his opening act, Tropical Storm Fay, added chaos to hosting the final PGA tournament at Port Royal Golf Courses. Affectionately called “The 19th Hole” Bella Vista is in the Club House, which sits high atop the course with stunning views of the South Shore, perfect for whiling away the hours after a round of golf. Livio Ferigo is that quintessential Italian – warm, impassioned, and oozing with amore! His menu similarly follows that of his former restaurant, Monte Carlo, with an emphasis on fresh, Mediterranean flavours. Excited to be back in the kitchen, he presents a menu that has me sharing in the enthusiasm. House-made ravioli filled with pulled pork and Brie immediately catches my interest and as I peel through the menu, Livio brings out a plate of bruschetta, garnished with a reduced balsamic heart that steals mine. With that, I leave the rest of the decision making to the chefs. His Tuna Carpaccio is a colourful version of the classic with a fresh vegetable emulsion that lifts the palate. The mussels, he explains, were a flash of inspiration, the spicy sausage pairs so well with the briny mollusk and creamy sauce, I wonder that they were never partners until now. The poppadom, though of an entirely different genre, is equally right where it should be. The juicy shrimp in creamy saffron risotto is so divine; it’s surprising I have any room left for Head Chef Raj’s Special – a 6 hour braised short rib of beef that falls off the bone. This special treatment is par for the course (excuse the pun) – Raj personally greets his diners once seated and regularly offers to cook up something off the regular à la carte. It’s his first time as head of the kitchen and Livio describes him as “young, innovative and creative” surely chosen for these qualities. Special events will be hosted throughout the winter, such as salsa dancing and sunset cocktails on the terrace with an accommodating private dining room for parties. Hungry golfers can have lunch delivered to their hole or stay for Friday Happy Hour and an outdoor barbeque.

It is an authentic Britishstyle pub with great comfort food and tasty and unique gastro pub-style dishes. The historic building the Frog & Onion is housed in (a Cooperage), was completed in 1853 after the war of 1812. The provisioning of wooden ships during the days of sail required that almost all eatables be packaged in barrels or casks so they could be man-handled, loaded and stored in the cargo areas of the ship. Empty water casks needed to be taken ashore in ships’ boats for refilling at the watering place. The cooperage space and adjacent Victualling Yard were converted to five storehouses in the 1940s and now finds itself home to The Frog and Onion, a fine victualling establishement. A Pompano Sunset POMPANO BEACH CLUB / BY NADIA HALL

Two stories high, with panoramic windows wrapping around the airy dining room, the Ocean Grill was built for sunset dining. Chef Paul Proverbs, a lofty man, looks like he belongs in a room with high ceilings and has been running the kitchen for 15 years. The cliff top setting of Pompano Beach Club’s newest restaurant takes advantage of its very fortunate coordinates – the southwest shore of the island is where you’ll see the sun lay down its head for the night. The view is incomparable, with a unique sand bar allowing guests to wade out one hundred meters from the beach, with feet still feeling the sand below. As winter approaches and the nights draw closer, sunset becomes the perfect time to enjoy that pre dinner cocktail. There’s something about the shorter days and the sun’s low position in the sky that make winter sunsets particularly vibrant, if you can catch them. Making the most of the stunning locale with buffet barbeques in the Cedar Room, family style dinners for Thanksgiving and Christmas, or drinks in the aptly named Sunset Lounge, there’s a corner for every member of the family. The Ocean Grill, with its dramatic perspective tends to be favoured by couples and honeymooners. Chef Paul is particularly proud of the Certified Angus Beef used throughout the entire beach club and we can’t resist the prized T-bone with its melting mound of Gorgonzola and thyme butter. I don’t fight the urge to slather it all over. His seared tuna achieves that difficult balance of being perfectly melt-in-the-mouth, sushi quality rare, while the edges are crisp with spicy panko. If you think you’ve tried Bermuda Rum Cake, think again. This one has all the lightness of a sponge despite having soaked in Gosling’s Black Seal Rum and dipped in Falernum, a lightly spiced syrup typically used in tropical drinks (like our famous Rum Swizzle) that draws out the cakes complementary spices. I detect some ginger, nutmeg, cinnamon and allspice and scrape the plate clean to fully confirm my findings. Bermuda’s best full-service casual resort

Ascots at the Palms ASCOTS RESTAURANT AT ROYAL PALMS / BY NADIA HALL

One of the rare establishments not in it for the numbers, at Ascots it’s as if you are part of a privileged club, in on one of Bermuda’s bestkept secrets. Only it’s not a secret. Anyone is welcome to this fine dining establishment and welcoming is unquestionably how it feels. Upon arriving you can enjoy your pre dinner cocktail at the beautiful Bermuda Cedar bar. “Maybe it’s the Irish in me,” Chef Edmund Smith begins, “but I just don’t like to have my first drink at the table. I like to begin at the bar.” This initial libation comes with a generous serving of nibbles and amuse bouches to whet the appetite, some nuts, olives, smoked salmon in chicory boats. They encourage you to wait, to linger in this space before moving to the next. Time moves differently at Ascots. The tables here are generously spaced. There’s no hurry, no “hustle and bustle.” You can feel as if you’ve been there a while, yet simultaneously you are never left waiting. “We don’t turn tables,” Eddie explains. “We’re very disciplined with what we do and how we do it.” Without necessarily cultivating it, the place has an air of exclusivity. Their private wine room, which seats 8-14 diners, has a secret entrance that leads through the office and out the back, making it the only celebrity-ready spot on an island where privacy is an impossible luxury. Curtains separate the lower dining to create a more intimate area for parties of up to 26, while the doors to the upper level are bi-folding and can create a private room for up to 30 diners or open out fully to make it one large space. There’s flow in the dining room’s architecture. Eddie and partner, Operations Manager Angelo Armano, are very focused and mindful. “We’re very proud of what we’ve achieved. If it’s not broken, we won’t fix it.” He’s a very visual cuisinier. This extends beyond the thoughtful presentation of each dish and into the old colonial home setting of the Royal Palms Hotel. It isn’t stuffy, by any means. Club chairs in traditional upholstery are offset by local artist Frank Chiappa’s interesting and colourful artwork, and clear Perspex lamps on the bar. The bespoke ceiling, commissioned by Smith, features a print of Leonardo DaVinci’s found horse studies merged with sketches by a specialist wallpaper company in the US. The same horses are etched on the glass to match. “It can be trendy, but it has to be seamless,” Eddie elucidates. “As we grew and food changed, our ambitions changed – it evolved.”

the chef’s table Griffins Bistro & Bar BY BELCARIO THOMAS

The Griffin’s Bistro and Bar experience, located within the UNESCO area is a St. George’s Club eatery providing a world class culinary adventure that may just be the highlight of your trip. We suggest that you book a Chef’s Table with Chef Piero Casalicchio. Casalicchio started out in the fashion industry, enjoying a 30 year career creating exceptional fabrics for master designers such as Halston, Oscar De La Renta and Bill Blass but was always a cook at heart. Following his passion for food, Chef Piero went on to open 26 restaurants, sold them in 2009 and in 2011 became aware of an opportunity to work in paradise, leading the team at Griffin’s and their sister summer restaurant The Beach House at Fort St. Catherine, also located in St. George’s.

eat & drink a culinary journey

A December in Bermuda fits hand in glove with art, culture and culinary experiences, a fact entirely embraced by Chef Piero and his team. My Chef’s Table experience was on a blustery November evening, soon made much warmer with the soothing live local entertainment of resident pianist James and a pre-dinner signature Single Malt Whisky in their very comfy, couch-filled Somer’s Lounge & Bar, adjacent to the main dining room. The view from up high on the hillside overlooks St. George’s harbor and is breathtakingly beautiful, though it’s a view soon somewhat forgotten when the artisan plates of food start appearing before me. With explanations of each dish by the man himself and his well spoken sommelier, dishes are paired with old grape wines tied to natural aromas. The Chef’s Table philosophy by Chef Piero is to maintain challenges and experiment with local produce. 5 courses, 5 wines, all enjoyed with a lovely couple of St. George’s Club Members from Connecticut on their 15th annual return visit, made for one of the most memorable foodie evenings ever. Some of the dish highlights included Halibut cheeks seared with honey chilly peppers, lemon-lime and a winter salsa with local fruits and vegetables. The Egg Ravioli was a table pleaser, a thin pasta filled with goat cheese, parmesan, egg yolk, nutmeg finished with butter and rubbed sage, presented with artisan flair. The Fillet Mignon, herb-crusted with rosemary, was served simply with boiled potatoes, extra virgin cold pressed olive oil and natural sea salt. Dessert was amazing and I wouldn’t do justice in trying to explain it. You’ll have to try it for yourself! Our wine pairings, a Barbera, a Trebbiano and a Primitivo came from the north and south of Italy. Open for lunch, dinner, special events and catering. A December visit comes recommended, but don’t take only my word for it, the bible of opinion travel, TripAdvisor ranks the restaurant highly, with rave reviews of their Chef’s Table experience.

the ‘bat’tender Michael Fay By Belcario Thomas

This well known bar by the Waterfront with her wrap around outdoor patio, water views, prime positioning and slick ambiance has consistently piled on the awards, from best place for a private party to best happy hour wine list. However the real key to their success, of course, is the quality and training of their staff of which Michael Fay stands amongst the finest as an up-and-coming Bartender in Bermuda. Coming previously from the Bacardi stable as a brand specialist within their local marketing division, you might say that this bartender knows a thing or two about amazing cocktails. Michael’s mixology philosophy is to create perfectly made cocktails with solid fundamentals, a seamless mix with the quality Bacardi products he specializes in and the modern, upscale Harry’s on the Waterfront location. Looking forward to the exposure gleaned from his upcoming “Tales of the Cocktails” event in New Orleans and subsequent “Bourbon Trail” in Kentucky, Michael promises to bring back some fresh new recipes for December’s Bar Menu. Amongst his current favorites? Timeless staples of course, such as a Very Classic Old Fashioned, Grey Goose Martinis and Cazadores Margaritas.

made in bermuda Bermuda Cedar Gifts by Nadia Hall

Alan Murray will be very busy this holiday season. In the wake of Tropical Storm Fay and Hurricane Gonzalo, the island lost a quite a bit of its arborous population and now there’s plenty of quality wood to spare. Not meant to kindle the fire, Alan is used to using reclaimed wood to spark, instead, his imagination. This waste not want not attitude produces some very unique pieces to covet alongside his usual collection of pens, pencils, wine stoppers, men’s razors and shaving sets. “I enjoy projects which stretch my skills and creativity,” he says and the unpredictable and varied textures of a fallen tree can do just that. The Bermuda Cedar, or Juniperus bermudiana, is indigenous to the island and was put to every imaginable use by the industrious first settlers. It also became a highly valuable export. It has a wonderful aroma, considered to be stronger and sweeter than other North American varieties, and more hardwearing. Our cedar has also been found to repel moths and fleas and to prevent mildew and rot – a necessity in our damp (but favourable) climate. It was an abundant species, but in 1944 Bermuda cedars suffered an unexpected misfortune when a fungus attacked the trees. A year later, another fungus, juniper scale, struck and ten years later, 90 percent of Bermuda cedars were dead. Alan’s wife Cindy turned on his passion for for woodturning. Her grandfather was a carpenter and made beautiful cedar pieces. In 2009, he bought a small lathe and started making pens. He now makes a number of beautiful gifts using old Bermuda Cedar. Each piece is carefully hand crafted and special orders, including engraving by Bermuda Blueprinting, can be requested. These hand-crafted pieces of art make the perfect gift for anyone who appreciates having a little piece of Bermuda. Alan’s beautifully hand crafted Bermuda Cedar Gifts can be found at the Alexandra Mosher Studio in Washington Mall just off Reid Street; on Queen Street at the Island Shop and at Hand Made Bermuda in Dockyard. Alan is happy to talk about custom designs and orders. He also works with coloured acrylic. “There is nothing more powerful than being inspired by an idea and having the confidence to create that one-of-akind piece on the lathe…this is what woodturning is all about!” 441 532 4869 info@bermudacedargifts.com www.bermudacedargifts.com
