dear visitor Greetings friends and welcome to Bermuda, We are delighted that you chose our island home as your vacation destination. We hope that your stay is highlighted with the sights, sounds and experiences of this vivid island. Beyond the beautiful, the pink, and the lush, Bermuda is a country steeped in history, art and culture that begs a closer look. The combination of British charm and island soul, along with friendly residents and fabulous scenery create a safe, comfortable open-air island-resort that compares to none other. Boasting the most golf courses per capita in the world, Bermuda is the ideal place to perfect your drive or putt. Our championship Port Royal Golf Course and its signature 16th hole also makes the course one of the world’s most picturesque. The UNESCO World Heritage site Town of St. George, is the oldest continuously operating English town in the Western Hemisphere. The town, situated at the water’s edge, with its cobbled-stone walkways, narrow lanes and traditional Bermudian architecture, represents a unique pairing of a ‘living historical museum’ and world-class yachting port. Hamilton, Bermuda’s business and retail center bustles with restaurants, retail shops, art galleries and historical landmarks worthy of a day’s excursion. A guided walking tour with the Town Crier lets you see areas of historical significance in the ‘back of town’ while enjoying a unique blend of urban and island chic. The South Shore continues to boast miles of pink-hued coastline, dotted with intimate coves and bays that we, and our visitors love. Beyond the world-famous Horseshoe Bay, the newly restored Gibbs Hill Lighthouse and our railway trails provide unique sightseeing alternatives to sand and sea. The Royal Naval Dockyard offers a variety of experiences in one location. From land and water excursions, a craft market, al fresco dining, beach activities, live entertainment, and more, all activities are in close proximity to one another. The Hall of History mural depicting Bermuda’s 400-plus years of existence is a ‘must-see’ amongst all of the activities on offer in the west end. Lastly, but not at all least, Bermuda’s surrounding waters and aquatic activities, including world-class big game fishing, shipwreck and reef diving, whale watching, boating, snorkeling and more are ideal island experiences. Bermuda and its people have much to share with you while you are here. We encourage you to get acquainted with the local charms and welcome you to share your fond memories with others living beyond our shores. Sincerely, BILL HANBURY CEO, BERMUDA TOURISM AUTHORITY

on the cover On The Cover Bermuda Longtail Known in Bermuda as simply, the “longtail,” the whitetailed tropicbird makes its first appearance in March, a tell-tale sign that Spring has sprung on the island. With feathers of pure white and a graphic, black stripe along each wing, this bird earned its familiar name because of its long tail feather. Adults can measure up to 30 inches with wingspans up to 3 ft. An open ocean species that feeds off squid and fish, they only come to land to breed, laying their eggs along the limestone cliffs, or in “igloos” installed by the Bermuda Audubon Society and the Department of Conservation Services. Work Ethic, or Lack Thereof BY ROGER CROMBIE

During my working life in Bermuda, I employed about 100 people, mostly Bermudians. Having come to the island after working in the US, I was used to 12-hour days as a standard, and often worked on weekends and holidays. This approach was not entirely welcome in Bermuda, among locals or expats. On one occasion, the dreaded Immigration was called to sort me out. Throughout my career, people displayed an extraordinary set of attitudes to employment. I’ve mentioned before the man who arrived from England to work and went home unemployed, within a 24-hour span, because he simply didn’t like Bermuda. At least he put in an appearance. One woman failed to show up for work altogether. Two weeks later, after I’d hired someone else, the woman arrived in the office one Monday morning, dressed up in her finery. Asked why she was two weeks late, she explained that, since I had said at the interview that we gave two weeks’ annual leave, she had chosen to take them at the start of her employment. We hired an American fellow who became enraged when we asked him to work on Thanksgiving. “I’m an American and I don’t work on American holidays,” he said. This approach earned him a permanent holiday. His attorney threatened to sue for “ignorance of public holidays”. We argued that the ignorance was his. I had to fire a woman who arrived at 9am and then spent an hour preparing to start work. At 11, she spent an hour getting ready for lunch. Returning at 1pm, she took an hour to prepare herself for the afternoon’s effort, and then stopped work at 4 to spend an hour preparing herself for going home. Another fellow quit in high dudgeon over pay. He was angry that the annual raise was only four percent. “I’ve learned a lot in my first year,” he said, “and now I want 25 percent more for next year, since I’m that much smarter.” Not smart enough, though. A few weeks after starting work, one man told me that he found the whole thing distasteful. “I am a sensitive person,” he said. “I do not take kindly to being told what to do all the time, and then criticised when I get it wrong.” He left us and took a job in the civil service, where he didn’t have to do any work at all. One woman I hired quit her job in disgust after two days, when reminded that office hours were 9 to 5. “I was in the office between 9 and 5,” she said, blissfully unaware that actual work had to be done during those hours. Her perfect attendance record was matched by a perfect record of not doing any work whatsoever. She called Immigration, who swooped on me, but left empty-handed, after advising that the company should formally instruct all new employees that work would be required of them. “Otherwise, how would they know they had to work?” one Immigration officer asked.

THE SECOND LAST SUPPER: WHO CALLED THIS MEETING? March 29, 4:00pm, St. Paul A.M.E. Centennial Hall Written by local scholar, author and now playwright Dale Butler, the life of Jesus Christ is brought to the stage by Director Rotimi Martins. Veteran Actor Paul Hayney (pictured above) plays Peter in this World Premier of ‘The Second Last Supper’. While most people have performed the story with the New Testament as a close point of reference, Mr. Butler has highlighted the disparate feelings of the twelve disciples as their nerves are tested. Set against a colourful market place backdrop with live band, this production follows the success of “We are Climbin’ Jacob’s Ladder,” which will return on May 3rd, for its third year, at St. James Anglican Church in Somerset. With Mr. Butler’s recent success, “Hubert Smith: The Play,” there is no doubt this new production, with an experienced cast and a host of international performers, will be a hit. Info: Tickets are $25 from the church or Music Box on Reid Street. bermuda.com

Ongoing events MOVIE BUFFS ARE IN FOR A TREAT AT BIFF 2015 Bermuda International Film Festival returns for its eighteenth edition this month (March 2026) and once again promises to be a week of action and intrigue for movie buffs and occasional theatregoers alike. BIFF shows over 20 feature films, both documentaries and narratives, that have never been seen before in Bermuda. The programme is a carefully curated selection of those films that have made waves at other major festivals around the world: Cannes, Sundance, Toronto, Rotterdam and Venice, to name a few. Our popular local filmmaker showcase, ‘From the Onion Patch’, also returns this year to provide a platform on which emerging home-grown talent can flourish. In addition to the muchcelebrated World Cinema lineup, BIFF screens a series of short film packages to the public and an esteemed panel of judges to fulfil its role as one of a handful of Academy Award qualifying festivals for the ‘Short Film – Live Action’ category. On top of all the activity on the big screen, there will be the usual busy social schedule of talks, parties and networking events to keep festival guests entertained. This year we are excited to be welcoming Dallas Buyers Club screenwriter, Craig Borten, as a presenter of a special writing workshop, The Write Stuff, taking place during the festival. explore Our Enchanting Island Paradise

JOHNNY BARNES Photo by www.moongateproductions.com

A Living legend, Johnny Barnes He’s the ultimate ‘morning person’ and a warm greeting from folk hero Johnny Barnes is the ideal way to start your sightseeing tour. Every weekday he’s at Crow Lane roundabout from 6am to 10am, showering city commuters with waves, blown kisses and a smile that could melt the heart of even the most jaded traveller. We begin our tour in the historic former capital, St. George’s. Wherever you go, don’t forget to greet all you meet: as Johnny reminds us each morning — it’s the Bermuda way!

Using our maps It’s easy to find your way around Bermuda. There are four main arteries: South Road runs along the south shore, North Shore Road hugs the north shore, Middle Road runs through the centre of the island and Harbour Road follows the inner harbour, across from Hamilton. Each road brings you into the city of Hamilton. Key attractions are numbered on our maps in this section and described in the text. In addition to the full key map of the island on pages 32 & 33 there is a large pullout map in the centre of this magazine; for a map of St. George’s, see page 19, the City of Hamilton on 24 and Dockyard on 34. ‘W’ at the end of a listing denotes ‘wheelchair accessible’.

Parishes In 1609 the survivors of the English wreck of the Sea Venture struggled onto Bermuda’s shores, well short of their intended destination of Jamestown, Virginia. By 1615 the Somers Island Company was developing Bermuda and exploiting her natural resources. The island was surveyed and what is now St. George’s Parish was set aside as public or company land. The remainder was divided into eight tribes or parishes, named after the principal shareholders in the Somers Island Company. These were, from east to west: Hamilton, Smith’s, Devonshire, Pembroke, Paget, Warwick, Southampton and Sandys. Along with St. George’s, they have become the nine parishes of Bermuda.

explore Dr. Thomas Iliffe and Bermuda Cave Fauna Crystal & Fantasy Caves | By Horst Augustinovic

Dr. Thomas Iliffe earned degrees in Biochemistry and Oceanography at Penn State, Florida State and the University of Texas Medical Branch. Prior to joining Texas A&M University at Galveston, he worked for 11 years as a Research Scientist at the Bermuda Biological Station, now the Bermuda Institute of Ocean Sciences. With its many limestone caves, it was in Bermuda that Dr. Iliffe became interested in marine cave biology.

Arubolana Aruboides

Bermuda’s caves are close to the sea and contain tidal, saltwater pools inhabited by a great variety

of crustaceans and other marine animals that are found only in this environment. Diving explorations of these caves resulted in the discovery of more than 200 species, 70 of which were new to science, including 3 new orders, 7 new families and 50 new genera. inspired by bermuda Alexandra Mosher Studio Jewellery Bermudian artist Alexandra Mosher draws from the island’s natural beauty to create inspired, sculptural jewellery. “I create expressive and original pieces; they’re certainly conversation starters,” she explains. “There is nothing more fascinating than taking art as we know it and giving it a whole new context on the body. I make sculptures to be worn.” Considering Alexandra’s background as an artist, it is no wonder her intricately sculpted jewellery designs have been influenced by her studies in fine art. “I developed a love for craft at a very young age, and was often creating little presents for my parents out of assembled found objects,” she told us. “My family still has a collection of pretty little things I made them.” Alexandra studied Studio Art at the College of the Holy Cross in Massachusetts and later, Jewellery Design at the Fashion Institute of Technology in New York. She launched her line of jewellery in 2005 and since that time has won several prestigious awards for her collections. Her process involves the ancient technique of lost wax casting; she first hand carves her designs in wax and then casts them in silver and gold in limited numbers. “I remember reading an art critic’s review of my work and feeling like I was on the right path when he said he was surprised at how I could create such original pieces at such an affordable price.” Although her work is highly coveted, she has something for every level of collector.

Inspired by bermuda alexandra mosher studio jewellery

Alexandra is perhaps best known for her Bermuda Reef Collection in which she incorporates Bermuda’s famous pink sand into sterling silver and gold to create captivating pieces of wearable art. “‘Is it a gemstone?’ people ask me, and I just love watching their reaction when I explain how I’ve set our beautiful sand into each unique piece.” She told us that visitors often go on to say their daughter, sister or friend would never forgive them if they didn’t bring a little something from her pink sand collection back home as a gift. “It warms my heart to hear that,” she beams. Finding a little piece of your own is a delightful experience. You can find the lovely pink Alexandra Mosher Studio Jewellery Boutique in the Washington Mall at #7 Reid Street in Hamilton or some of her collections at A.S. Cooper & Son’s stores island-wide. art matters The Art of Risk Taking By Lisa Howie, Director, Bermuda National Gallery

“I do not set out to ‘make a painting.’ If I did that, I might likely take a ‘safe’ or ‘recipe’ route to an acceptable result. I would therefore close myself off to the privilege of so many of the wonderful possibilities that arrive when learning something new, working out of my comfort zone, taking risks.” Steven Masters Artist Steven Masters actively investigates the art making process in the current exhibition Marking Territory: A Focus on Bermuda’s Landscape. Masters pushes through his academic training to arrive at landscapes that are both readable and curious. One can see the house, one understands the splash of water- the emptiness- as a spray of seawater against a breaking wall, but there are deliberate gestures in the paint- the drips- the voids- that bend the interpretation. Steven Masters, After the Storm, 2014, watercolour on paper. Collection of the artist.

Masters says of his work: “I am quite willing to make mistakes in my endeavour to learn, an approach that produces a far greater number of ‘fails’ and far fewer successful paintings. Risk-taking does, however, produce paintings that are far more unique and exciting.” Equally risk taking, but altogether different in expression, Kok Wan Lee creates an emotional landscape. Lee has spent time in a particular park on the South Shore but has not communicated the realism of the moment, rather the feeling of the time spent there. It is vibrant in palette choices- these red and orange and blue hues- each capturing tones of emotion rather than the photograph of the scene. The risk in this landscape rendering is that the viewer might not ‘get it’. They might not ‘see’ Lee’s work as a landscape at all. But if this daring approach makes the viewer feel something, then Lee has been successful. Kok Wan Lee, Astwood Park #2, 2014, acrylic on paper. Collection of the artist.

Jean Dufy’s oil on canvas Horse and Carriage in Front of Arc de Triomphe is featured in the Highlights of the Young Collection exhibition. Here is an excellent example of the expressionist style that, in the early 1900s, was considered radical. Dufy’s busy Paris scene near the Arc de Triomphe captures the hectic city with bustling carriages and figures in elegant wear. The street is portrayed as a carousel with impossible colour. We can only imagine how this would have been ‘read’ by viewers during its time. The artwork described in this short article Dufy, Horse and Carriage in Front of Arc reminds us that risk taking and art are Jean de Triomphe, nd, oil on canvas. Collection of the inseparable. When artists take risks we are then Bermuda National Gallery. Gift of John Hinson forced as viewers to challenge our perceptions, Young II and Nelga Vivian Young. to question the actual questions that we use to read artwork. To perhaps not start with: Do I like this artwork? Rather: How does this artwork make me feel? Join us for an art experience. Take away a memento with a BNG art book. Exhibition tours on Thursdays at 10:00 am. For more information: www.bng.bm or call (441) 295-9428 For more information: www.bng.bm or call (441) 295-9428

golf “The Answer is in the Dirt” BY KIM SWAN, J.P. TEACHING PROFESSIONAL

Golf is a great game, I am so thankful to have found the game of golf or to have had the game of golf find me, as my life in golf has been a match made in heaven. Today, it is a labour of love for me to work once again in my trade as professional golfer being involved hands on with the game of golf operating exclusively as a golf coach and writing articles about the game. Each day my life revolves around the actual game of golf itself, coaching persons how to play golf, how to swing the golf club effectively, how to control the golf ball as they navigate the golf course and writing articles about the game and providing instruction based on my experiences. First and foremost, golf as a game is built on fairness ‎and fair play, which can be a challenge for many who play golf, as the world as we know and live in often encourages and rewards unscrupulous behavior. As a great model to follow, I am reminded and guided by the gentlemanlike example set by golf legend Bobby Jones, who penalized himself for an infraction known only to himself and God. Ironically, one of the greatest slogans within the game of golf is attributed to both Ben Hogan and Gary Player, which serves as a mantra that encompasses the work ethic required ‎to succeed at the game of golf. “The answer is in the Dirt” Clearly, there is so substitute for practice and it is incumbent on a player to hit through the dirt regularly in practice to bear the fruits of better golf play. Our aim at the Port Royal Golf Developmental Program is to encourage our students to practice consistently, get better at applying proper fundamentals when hitting golf shots and help them to learn to at each shot online with purpose. We invite you to contact us and join one of our programs for all ages and levels of golfer.

historical stories

The “America’s Cup” comes home By Dr. Edward Cecil Harris, MBE, JP, PHD, FSA

This painting captures Samuel Triscott’s Bermuda sloop Pearl racing downwind in the Great Sound towards Gibbs Hill Lighthouse (just erected) in November 1846. Three years later, Pearl beat the American vessel Brenda on what might be considered the first “America’s Cup” in waters off Bermuda (Fay and Geoffrey Elliott Collection, Bermuda Archives).

Bermuda is rightly agog at the prospect of having the America’s Cup in local waters in 2017. However, it is perhaps fair to say that “the America’s Cup is coming home”, for such competitive racing with fore-and-aft sail technology owes much to events at Bermuda in the early decades of settlement after the arrival of the good ship Plough in the summer of 1612. As suggested by the late Eldon Trimingham, the geographical orientation of the island led to the invention of the “Bermuda Rig” before 1674, when it appears in a manuscript drawing of ten sail types of the world as the “Bermoodes saile”, the distinctive triangular cloth that today adorns most racing yachts of the world. Other than the people-related “Tartar Saile”, it is the only one of the ten named for the country in which it was born and evolved, with the help of the diverse Bermuda boating community of the day. With the addition of high-tech enhancements, it is the Bermuda Rig which basically drives the “Search for Speed under Sail” that is the reason for being of the America’s Cup. As Charles Dickens later opined (and as may be suggested), the Rig and the Bermuda sloop (of indigenous cedar) made “Every Bermudian… amphibious…White or black, they were all sailors and seafaring to a man, almost to a woman…”. In 1859, one Samuel Truscott (sic) presented a model of a Bermudian Sloop to the United Services Museum, at which time it was noted: “this gentleman The 1674 manuscript drawing from the Pepys Library, Cambridge University, which records the “Bermoodes Saile”, as one of the ten sail types of the world at that time.

appears to have had great experience in the Bermudian sloops, and states that beating to windward nothing can compete with them”! An article in the Newport Daily News of 17 June 1954 alludes to the sponsors of the epic race from that town to Bermuda as the Cruising Club of American and the Royal Bermuda Yacht Club and suggests that “What some call the first international yacht race ever sailed was held in 1849 between the Bermuda ship [sloop] Pearl, owned by Samuel Triscott, and the Brenda, owned by George Collamore of Boston. The race, held off Bermuda, was won by the Pearl by a 55-second margin.” So we can say, in a sense, that the first “America’s Cup” was won in the waters of the American hemisphere off Bermuda fully two years before the 1851 race around the Isle of Wight, for which a trophy was awarded by the Royal Yacht Squadron to the vessel America. That cup was subsequently named for that boat and given by the Royal Yacht Squadron to the New York Yacht Club, “which made the cup available for perpetual international competition”. No doubt Samuel Triscott and Eldon Trimingham and all sailing Bermudians of generations past would be delighted that the “America’s Cup” is coming home after 168 years. To Larry Ellison, Michael Bloomberg, the Bermuda Government, and all the sponsors, officials, competitors and interested visitors: “Fair winds and following seas” for the America’s Cup 2017 at the island of the Bermuda Rig.

A painting of a particular type of local vessel, known in the 1700s as “a Bermudian”, shows it sailing off of Port Royal, Jamaica, carrying the Bermuda Rig: that type of vessel is illustrated in the present training ship, the Spirit of Bermuda.

historical stories Do you know… About the Bermuda Dioramas? Part 5 By Horst Augustinovic

In 1950 a series of eleven Dioramas showing scenes from Bermuda’s early history were created by the Belgian artist Emil Antoine Verpilleaux and the Polish sculptor Andre Bohomolec after much collaboration with historians Commander Leslie Howarth, Walter Hayward, Hereward Watlington and Dr. Henry Wilkinson. These Dioramic Tableaux are reproduced in three dimensions by placing figures and objects in front of a painted background. The Dioramas were initially exhibited at the ‘Bermuda Cavalcade Gallery’ on Front Street in Hamilton and after they were purchased by the Bermuda Trade Development Board in 1952, they became part of a display in Fort St. Catherine, also featuring replicas of the Crown Jewels, various wax figures featuring life in a military fort as well as Boer War carvings. Unfortunately the Dioramas were destroyed during renovations in 2010. WHALING OFF BERMUDA The early settlers of Bermuda were soon disillusioned when they realized that the island wasn’t quite the Eldorado they had expected. The large block of ambergris which was found early on turned out to be a one-off find, pearl diving was a non-starter and planting corn and tobacco proved disappointing. Even the wild hogs, turtles and tame cahows which supplied much of the food early on were soon exhausted. And so these early Bermudians turned to the sea for their livelihood with fishing, whaling and shipbuilding becoming important means of support. Of these endeavours, whaling was certainly the most adventurous and when successful, very rewarding. In 1667 Richard Norwood, the Surveyor of Bermuda, described Whaling rather vividly: “In the Spring-time and fair weather they take one, two or three whales in a day. They are less than those in Greenland, but more lively so that if they be struck in deep water they make into the deep with such violence that the Boat is in danger to be hauled down after them, if they cut not the rope in time. Therefore they usually strike in shoal water. For that purpose they have very good boats manned with six oars. They row gently up to the whale so he will scarcely shun them and when the Harpineer, standing ready fitted, sees his opportunity he strikes his Harping-Iron into the Whale.” A PIRATICAL EXPLOIT When Bermudians became disappointed with the poor productivity of their rocky soil and turned to the sea for a better livelihood, privateering became the most rewarding enterprise. With Britain frequently at war, Bermudian ship owners would often receive “Letters of Marque”, allowing them to prey on enemies of the Crown and essentially becoming pirates. This Diorama shows one of the more celebrated episodes involving Rhode Islander Thomas Tew and a number of Bermudians who in 1691 sailed in the Amity to the Gulf

historical stories do you know... of Aden in search of French shipping. As it turned out, they came across a convoy of six Arabian ships, an episode that Henry Wilkinson described in “Bermuda In The Old Empire” as follows: “The tallest of these soon appeared. She was heavily armed and carried 300 soldiers, but Tew, certain that to them discretion would loom large, ran the Amity alongside and boarded forthwith. The ship was carried without loss to the pirates. The booty was so immense that, notwithstanding waste, it yielded £3,000 a man. There was also a store of powder. Tew wished to attack the other ships in turn, but the crew objected, for they now desired nothing as much as a frolic ashore. The Amity was accordingly headed for Madagascar. In due time, Tew made his return voyage, carrying, it was alleged, £100,000 and reached Rhode Island without misadventure.” Much of this ill-gotten gain went into the purchase of land and houses, some of them now fine examples of early Bermudian architecture. THE GREAT GUNPOWDER SCANDAL The story of the Gunpowder Plot, when on August 14th 1775, 100 barrels of gunpowder was stolen from a British powder magazine on Retreat Hill in St. George’s and shipped to the American rebels, is well know. Just like today, most of our food came from America with Bermudians shipping salt from their Turks Island salt pans to America and returning to Bermuda with food and other necessities of life. Unfortunately the American Revolutionary War changed all that when Congress placed an embargo on exports to Britain and her colonies. Suddenly supplies were cut and Bermudians faced starvation. Fortunately Bermuda had one thing that the American rebels needed urgently – British gunpowder – and stealing must have seemed the obvious solution to the problem. The Diorama shows the daring nighttime robbery underway. On the left is a French officer being overpowered. He happened to be a prisoner on parole and as he disappeared that night, it was assumed that he was in league with the robbers and left with them, however, when the foundation of the unfinished church was being excavated a hundred year later, a skeleton with a fractured skull and fragments of French insignia was found. Bermudians then recalled the story of the Frenchman who disappeared during the gunpowder robbery and believed that he came on the scene accidentally, was mistaken for a British officer, and quickly killed and buried nearby. golf & dine The Bella Vista Express BELLA VISTA EXPRESS / PORT ROYAL GOLF COURSE / BY NADIA HALL

The average game of golf takes four and a half to five hours, which is plenty of time for the average player to work up an appetite. Now, Port Royal is not your average golf course. With breathtaking ocean views and world-class design, its famous 16th Hole is widely regarded as one of the greatest par threes in golf and has a ravine dropping down to the Atlantic Ocean between the tee and the pin. Should your energy also drop between the tee and the green then an on-course delivery service is available courtesy of the Clubhouse restaurant, Bella Vista. “It is pretty much on the course room service, to put it bluntly,” manager Gordon Reid tells us of their next hole delivery service. Order on the 9th hole and they confidently promise delivery on the 10th. With an additional concession cart stocked with snacks and refreshments that runs the course all day, Port Royal is the only golf course offering this kind of service. Each cart comes complete with a selection of menus and all food is in keeping with golf etiquette. “These are dishes that you can eat on the run,” he vows. “You can order pretty much anything including a Dark ‘n Stormy or a rum and coke. We have a full bar inside ready to make any drink order. The main thing is, we never say, No.” Of course you can still take a pit stop at the Halfway House, a snack shop located conveniently between the 1st and 10th tee box, or enjoy some well-earned libation at “The 19th Hole,” Bella Vista’s Clubhouse bar. During tournaments the bar is packed creating a buzzing atmosphere that doesn’t rely on the stunning location alone. The Bar and restaurant are both open to non-club members. “We are really getting a great response from the locals,” Chef Raj beams. He and owner Livio Ferigo are committed to serving seasonal produce from the local farms, local fish and lobster when in season and the quality shows. “I go to the table to speak directly with the customers to get valuable feedback and adapt accordingly. This way we can see the customer’s face and know how they are enjoying their visit. We really appreciate feedback from diners.” And the diners certainly appreciate the warm and uniquely personal service both on and off the course. a culinary adventure True Rustic Neapolitan Pizza SUL VERDE / ROSEWOOD TUCKER’S POINT / BY CANDICE DICKINSON

Sul Verde has always been known and loved for its authentic Italian experience so it only made sense to introduce true rustic Neapolitan pizza just last summer. Enjoy a classic Margherita complete with Italian favourites such as tomato sauce, house made mozzarella and basil or sink your teeth into a MAMA, just imagine chunks of tuna, accents of sliced red onion, capers scattered about, fresh basil, tomato sauce and house mozzarella. Meat lovers feast your eyes on a RICO’s CALZONE, house mozzarella, classic Italian house meatballs, shredded Parmesan, mushrooms, fresh basil and vivacious red peppers. A menu one step ahead of the rest wouldn’t be complete without something for seafood lovers, how about the OCEAN. Shrimps, scallops, calamari, mussels, tomato sauce, garlic, chili and fresh basil! Delicious! Chefs Max, Fabio, Riccardo and Andrea started by mastering the perfect dough following a recipe from the Neapolitan tradition of “Verace” or Verace Pizza Neapoletana (true Neapolitan Pizza). The dough is always shaped rather than rolled resulting in an authentic look allowing bubbles to expand around the crust line or “cornicione”. Only a specific oven temperature is used and the pizza is timed to perfection using the freshest ingredients with even the flour being shipped in from Italy. One of the best parts of a pizza is the crust, so when thin crust pizza became all the rage we lost touch with the very reason that we fell in love with it in the first place. Neapolitan pizza has a thin base but the crust is delightfully puffy so there you have it folks, this pizza offers the best of both worlds! Sul Verde is located inside the Golf Clubhouse at Rosewood Tucker’s Point. Locals and non-members are welcome to enjoy take-out during the day and evening or enjoy dining in during the evenings inside or on the spectacular patio.

just desserts with Chef Ryan Solien VICTORIA GRILL / BY NADIA HALL

Originally from Los Angeles, Chef Ryan Solien calls Rome, Italy, home. His Venice Beach beginnings saw him take the unconventional path of touring with rock bands and legends like Bruce Springsteen, Faith Hill and Tim McGraw, cooking for 45-300 of their traveling entourage. When he found himself mid-tour, with nowhere to go and no permanent base, this second-generation Italian decided to explore his roots. This, he explains, is when he “fell in love with Rome.” Chef Solien describes his cooking style as “heavily Franco-Italian. I’m an amalgamation of my travels.” It’s their philosophy of simplicity that appeals to him, the minimal ingredients. His time in LA brings with it the “Tex Mex vibe” – an easy transition – but fresh out of culinary school he found himself at legendary Commander’s Palace in New Orleans toiling away in the prep kitchen for six to eight hundred covers a night. If you know anything about the chefly progression, this is not a place you want to be. “If you’re going to be a chef, you have to be well-rounded,” he tells me, an attitude that has clearly taken him places. “I knew

I needed to polish my pastry skills and I saw that as a way out of the prep kitchen. It was like paid school. You get a passion for desserts after a while.” Everything in the Victoria Grill kitchen is made from scratch. The “churros,” Mexican doughnuts, are borrowed from the traditional French pâte à choux recipe; the stolen dough put in a piping bag and squeezed into a deep fryer. It is their number one selling dessert, dusted while hot with cinnamon sugar and served with a chocolate dipping sauce. The restaurant’s name change (formally Latin) brought a brief foray into Southern cuisine, but that “Tex Mex” Latin American flavour returned with the new menu. The “Chocolate Duet” is a loose take on the Latin plate, empañadas stuffed with plantain, bananas and Nutella served alongside an chocolate-avocado mousse with just a hint of cinnamon. Often referred to as “true cinnamon” or “real cinnamon,” Mexican “canela” is a mellow, sweeter version of the common bark found in most shops. The avocado is untraceable in the cocoa, lending a unique richness that is lighter on the waistline than the traditional eggs and cream. The Calabaza Cheesecake, a flame-hued, pumpkin filled version of the classic dessert, is lightly spiced like the traditional pumpkin pie, but creamy with a traditional graham cracker crust and mango glaze. It is just one example of how Solien has worked local flavours into the menu. “And who doesn’t love cheesecake?” It’s a statement disguised as a question. Who, indeed.
