• 1 head cauliflower, broken into medium size pieces • 1 Tbsp. olive oil • salt and freshly ground black pepper • 1/3 cup Cardini’s Red Jalapeno Caesar Dressing • zest of ½ lemon • 2 Tbsp. chopped fresh parsley • 2 Tbsp. chopped cooked bacon • 2 Tbsp. chopped prepared roasted red peppers Preheat the oven to 425˚. Lightly mist a baking sheet with vegetable oil spray. Transfer the cauliflower to the prepared pan and drizzle it with the olive oil and sprinkle with salt and pepper. Bake 17 to 20 minutes or until the cauliflower is golden brown. Transfer to a serving dish. Drizzle the Cardini’s Red Jalapeno Caesar Dressing over the cauliflower and top with lemon zest, parsley, bacon and red peppers. Courtesy of www.marzettikitchens.com

Quinoa & Brown Rice Caprese Salad

• 1 pkg. Hodgson Mill Quinoa & Brown Rice - Italian • 11/2 cups cherry tomatoes, quartered • 1/2 cup fresh basil, chopped •8 oz. small fresh mozzarella balls (pearls), or diced fresh mozzarella • 1/4 cup balsamic vinaigrette dressing • salt, to taste Bring the water to a boil in a mediumsized saucepan and stir in quinoa and brown rice. Cover the pan, reduce heat to a simmer and cook until most all of the liquid is absorbed, about 15 minutes. Remove pan from the heat, take off the lid and let stand for five minutes. Transfer the mixture to a large plate to cool for 15 minutes or until just warm to the touch. Place the quinoa and brown rice in a large bowl and add the tomatoes, basil, and mozzarella. Toss everything together and add ¼ cup balsamic vinaigrette. Add more vinaigrette and/or salt to taste. Serve salad slightly warm, room temperature or chilled.
