Spring in Missouri S
now? Rain? Eighty degrees? Thirty Degrees? The answer is yes to all of these questions! But that’s what makes spring so fun. The only thing you know for certain is by the end, flowers will be everywhere, the grass needs mowing once a week, and you are fully prepared for summer. It’s kind of like this issue. We bring together many different aspects of the craft beverage industry that seem to fit nicely when we’re done. First, let’s talk about cool things to do in Missouri. And right up there, at the top of the list, is exploring the Katy and Rock Island trails. Soon they will be officially joined, but you don’t have to officially wait for anything to bike, hike, walk, whatever your mode, and you have plenty of choices to stop along the way. Stay a few days on the trail or a few hours. There are beautiful sights, an abundance of food drinks, and Missouri crafters welcoming you. Put it at the top of your “must do this spring” list. Speaking of beautiful, stop into Hummingbird Winery and Vineyard in Mexico this spring. Gerty is on hand to greet you, the vineyard looks amazing, and the setting is a perfect way to spend an afternoon. Black Silo Winery in Trenton is right there with it as well. We do believe that Missouri wine expeditions are gaining more and more attention. See what the fun is all about. We also spoke with Tom Schlafly, founder of Schlafly craft beer, and discovered that there is a reason Schlafly taprooms and brewery are located in such beautiful older buildings. It’s there by design. And we’re thankful! One of the things that always are amazes us is how the draught systems in taprooms, breweries, bars, and restaurants, work. So we asked Scott Long of Balance and Flow Draught Beer Solutions for the inside scoop. We were not disappointed. All this and so much more—so let’s get started. Happy Spring. Cheers,

Eat, Drink and be Katy Wineries, Breweries, and Distilleries dot the Katy Rail Trail
K
aty Trail State Park is the longest rail-trail in the United States, spanning nearly 240 miles across Missouri’s scenic countryside. Much of it follows Lewis and Clark’s flat, winding path along the Missouri River. The trail goes directly through farmland and small towns initially built along the Missouri-Kansas-Texas Railroad. Settling along this route capitalized on business and expansion encouraged by the rail. Along the way, there are 26 different marked trailheads to explore, along with

four newly restored railroad depots, 17 wineries, countless breweries, and more distilleries than one can shake an empty water bottle at without ever straying more than five miles from the trail. | WINE | Les Bourgeois Vineyards The Katy Trail meanders through Missouri’s wine country and follows the “Missouri Weinstrasse” — the German name for “wine road,” aka 100 miles of Highway 94. Travel into Rocheport
and jog over to another small trail that leads to Les Bourgeois Vineyards. The vineyard retreat sets atop a bluff overlooking the Missouri River Valley and encompasses the A-Frame Winegarden, the Tasting Room & Gift Shop, and the Bistro at LBV. Sweet reds, dry whites, and rosés, along with interesting hybrids and even a couple of coolers, are available. The bistro serves brunch, lunch, and dinner. Dropping by for a snack? Enjoy appetizers, charcuterie boards,
or bread laced with compound butter and seasoned olive oil. Taste, sip, and shop! In addition to wine, Les Bourgeois Vineyards sells accessories souvenirs and hosts events. | BEER | Crane Brewing The brewers and beer-loving professionals at Crane Brewing in Raytown brew inspired farmhouse ales where the Rock Island Trail overlaps the Katy Trail. From the beginning, Crane was known for its sours but has evolved and expanded its offerings. Collaboration is the name of the game at Crane. Not only do they hook up with other brewers to concoct great flavors, but they also do pottery nights, composting, and a ton of other activities and events. The taproom opened in 2016. It has a live-edge bar made from locally-sourced wood. The tables, made of reclaimed barns, and hand-painted menu boards give the space a “Joanna Gaines” vibe. Good News Brewing One of three Good News Brewing Company locations is in Defiance, Missouri. The owners, Matt Fair, and Dan Tripp started as homebrewers, gradually honing their craft. So when the two met by happenstance at a Bible study and bonded over their love of beer-making, it was “good news.” Good News features a solid mix of beer styles, including lagers, pale ales, brown ales, IPAs, and highgravity stouts. They also have guest taps, along with wine and a couple of cocktails. Good News has flatbreads and woodfired pizza on a sourdough crust with inventive combinations of ingredients to go alongside the beverages. | SPIRITS | Fernweh Distilling Company Located in a historic Missouri River-front location, Fernweh is a bit farther from the trail but worth the 1.9-mile venture. Fernweh—from German meaning wanderlust—is naturally at home on the rambling Katy Trail. They distill bourbon, rye whiskey, and vodka on-site, offering 12 • BREWVIEW

hillax Tap & Co, the Western St. Charles Chamber of Commerce “New Business of the Year” located in the fast-growing city of Wentzville, isn’t just a place to drink beer. Thanks to owners Archie and Ashley Harmon, it’s a unique space that always has something for everyone.

FROM PASSION PROJECT TO PILLAR OF THE COMMUNITY A typical tap room has hop-aliciousness from only one brewery. But Chillax, born of Archie’s long-time interest in the beverage, brings together craft beer from all over the states and even other countries.
Archie brewed his own independently for many years before realizing that it was meant to be more than a hobby; it was a calling that he genuinely wanted to pursue. His wife, Ashley, supported the idea right away, and together, they began to explore the world of beer. They delivered on their concept that
was part tap room, part carry out, and all welcoming. So when Archie and Ashley opened their doors on March 7th, 2020, the goal was simple: to create a comfortable space for patrons to relax and enjoy phenomenal local, national, and even international beer in Wentzville. Chillax isn’t your run-of-the-mill brewery. It isn’t a brewery at all. It is 30 rotating taps from Missouri and all over the country with a surprise international pour occasionally. And bottles too. Bottles that can be mixed, matched, and purchased to go. The business blueprint brings the craft beer world to the consumer—in one handy location. “We live here, work here, and play here,” says Archie, “We created a space [where] we would want to spend our free time.” That authenticity and understanding of the local community are what has allowed Chillax to become a pillar in Wentzville so quickly; their vision and their brand resonate with many, and now, people can’t imagine the city without Chillax. Chillax attributes its success, despite the pandemic, to an overwhelming amount of community support. “The community definitely rallied around us,” says Ashley. In return, Chillax made an effort to accommodate customers by bringing the Chillax experience to them using Chillax Mobile. This mobile bar service allows customers to enjoy beverage service for any occasion. Even with indoor eating and drinking allowed again, Chillax Mobile remains a great way to add pizazz to gatherings of any size. AN ESTABLISHMENT LIKE NO OTHER What makes Chillax special is its focus on and commitment to the community. They collaborate with local breweries to
make products more accessible to many people. Additionally, they support local restaurants and eateries by encouraging patrons to bring take-out or order food for delivery to pair with the many liquid options. Chillax is also a kid-friendly and pet-friendly location, making it the perfect place to spend quality time with any and all family members (even the furry ones). With its indoor and outdoor seating, welcoming atmosphere, and wide selection of local and hard-to-find

Investing in the past to forge a future
Inspiring the Region with Building Renovations and Sustainable Initiatives CRAFT COMMITTED Schlafly beer has been crafting beer and the beer culture in St. Louis since 1991. Inspired by an English ale-fueled Oxford summer, Tom Schlafly returned to St. Louis, longing for the beers he tasted abroad. He later ran into Dan Kopman, who happened to be working for an English brewery, and introduced Tom to the concept of “local microbrewery beers.” Dan convinced Tom that small-batch brews could work in St. Louis, and 31 years after opening, the Schlafly microbrewery has successfully paved the way for St. Louis to be a craft beer hub.
With more than 60 beers on tap and an annual production of 30,000 barrels, Schlafly has expanded into four different neighborhoods throughout the city. Each site, including the original taproom, occupies a pre-existing building with a unique history and design. Initially, the guys just wanted to brew good beer, but the benefits of renovating old buildings have been an exciting offshoot. “While the adaptive reuse of old buildings was not necessarily part of our plan, it turned out that every one of our four locations is in a building originally used for something other than brewing
beer,” writes Tom on the Schlafly blog. For example, the Tap Room had been a printing company, Maplewood’s Bottleworks was a supermarket (twice), Bankside’s former life was as a grist mill 250 years ago in St. Charles, and Highland Square was a bank in Highland, Illinois. By restoring these old buildings and establishing a committed presence, Schlafly has helped bolster once crumbling areas and strengthen the surrounding communities. “Our brewpubs have helped in varying degrees to the revitalization of four neighborhoods,” said Tom. structures and neighborhoods, however. The brewery has also had a significant role in shaping the identity of St. Louis as a place for a thriving craft beer scene. According to Tom, “Thirty years ago, there was a feeling among some young adults that St. Louis wasn’t cool enough to have a craft beer scene. That was something limited to places like the Pacific Northwest or the Bay Area in California. By proving that craft breweries can, in fact, thrive in St. Louis, we’ve shown that our city is able to offer the lifestyle amenities that this population wants.” SOCIALLY VERSED And just as Schlafly looks to the past to renovate the present, they are equally invested in looking ahead by pursuing a plethora of sustainability initiatives to lower the brewery’s environmental impact. The company is committed to things like renewable energy, solar power, composting, recycling, limited beer distribution channels to reduce the overall carbon footprint, and donating spent grain to local farms for livestock feed. Schlafly recently invested $1,000,000 in a new canning line. Their goal is to have 50% of the packaged beer in cans instead of the 20% today. “This is not only a response to consumer demand,” 20 • BREWVIEW

said Tom, “but will also have major environmental benefits as cans are much lighter than bottles, and shipping them uses a lot less energy.” BEER CONNECTED Schlafly’s commitment to St. Louis’s history and future stems from Tom and his team’s adoration for its humble beginnings and the flourishing contemporary society that exists. “St. Louis as a community has had to adapt and improvise as we evolve from the smokestack economy on which the city was built to the knowledge-based economy that’s a key to our future in the 21st century,” said Tom.

the final step in delivering flavor. The maintenance of the tap and its parts is every bit as important as the hops. Scott Long, founder, owner, and operator of Balance and Flow Draft Beer Solutions, provides full-scale services for draft beer, including installations, routine maintenance, and line cleaning. Scott says, “In order for a beer system to flow, it must be properly balanced. In order for a beer system to be efficient, it must be
properly maintained.” Born and raised in Kansas City, Scott’s introduction to craft beer was Boulevard Wheat. After that, he was hooked and has been in the beer industry for 20 years. Scott has been around from homebrewing to retail, working for a brewery and later with a distributor. In 2006, as assistant manager at Hy-vee Wine and Spirits, Scott flexed his knack for beer, suggesting they
carry a variety of craft beers. When his ideas proved successful, the manager let him put whatever he wanted on the shelves. “We had to turn all the six-packs sideways because we had such a big selection but no space!” said Scott. His interest in draft beer drove him to approach a local distributor to work in
the draft department. There he learned how to install the systems and perform proper maintenance. “I loved it!” recalled Scott. “They told me it was an entry-level position, and I told them I didn’t want to do anything else. I spent seven years there in the draft department.” Working with the distributor, he didn’t
have the freedom to provide the service he wanted, but the nudging of his wife Sheri ultimately convinced Scott to take the plunge. “She knew I had always felt like the draft job with the distributor was rushed,” he says. “They are not appropriately staffed to give proper draft maintenance and service to accounts. had read the Brewers Association's Draught Quality Manual years ago and knew the way things were supposed to be done, and just always felt like I could be doing a better job. I decided it was time to start Balance and Flow.” Unlike other draft installation and maintenance companies, Scott personally handles each client. “I tell my [customers] 'When you get me, you get me.' I don’t do a job and then walk away,” said Scott. “Jobs are not done until they are happy and the system is properly balanced and flowing. I am responsible for that setup.” Throughout his career, Scott has developed a reputation for clean systems. He has worked with multiple breweries, including Fringe Beerworks, East Forty Brewing, Iron Kettle Brewing, and The Goat Brewing Co., doing their installation and maintenance since day one. He also supports the Bullseye Bar and Grill in Lee’s Summit. To Ensure he provides top-quality service, Scott focuses on one account per day going in early morning to clean the lines and check the system. The importance of regular cleaning is to keep bacteria that affect the quality and taste of a draft beer at bay. “[Bacteria] is everywhere [and] beer systems are…susceptible to bacterial growth,” said Scott. “Without proper maintenance and cleaning, bacteria will ruin a system.” He continued, “I have seen so many disgusting systems that are completely neglected because proper maintenance schedules are not being followed. “I actually had stickers made for my accounts to be placed at their entrances: 'Our beer lines are professionally cleaned by Balance and Flow Draft Beer Solutions,'” said Scott. “I wanted to make their patrons think about that and know that they are being served through a pristine system.” His hope for the future is to continue focused, high-quality draft beer services, one customer at a time. “I think the world is too rushed—do more for less, do faster,” said Scott. “I take pride in doing it right the first time, properly, and when I leave an account, I am proud because I know I did it by the book! ust a half-mile northeast of downtown Kansas City is the wildly popular Crossroads Arts District, and within this cultural mecca is the East Crossroads Craft Beverage District. This little slice of homegrown MO “happy hour” heaven contains the highest concentration of local craft beverage creators in the entire Kansas City metro area. And it’s worth a visit! Each brewery in this district has a distinctive vibe which makes for an entertaining breweryhopping experience. Border Brewing Company offers free live music Sundays from 2-4pm. $2 of every pint of the rotating "Local Motive" tap at Casual Animal is donated to a local charity. Torn label Brewing Company is a "public house" concept offering Roman pizza and sandwiches expertly paired with one of their draft offerings. City Barrel Brewing is the place to visit for sours and IPAs. The two distilleries in this district are Lifted Spirits Distillery and Mean Mule Distilling Co. Lifted Spirits Distillery makes a series of gins, a wheat whiskey, absinthe, and vodka. Mean Mule Distilling Co.'s American Agave Spirits is distilled from the agave plant but offers a flavor profile all its own crafted through the distillation process. Both locations showcase their spirits through a variety of innovative cocktails. There is currently one winery in this district, KC Wineworks. They have a variety of Missouri sourced red and white wines, rosés, and ciders and boast the first-ever canned wine in Missouri, with Show Me Sangria. Boat Town Brewing Comfy like home, rare like vacation
F
or the past several years, Boat Town Brewing has been the pride of Phillipsburg, Missouri. The spot offers a wide variety of brews, pleasing various palates. From hefeweizens to lagers, New England hazy IPAs to Belgian wits, barrel-aged gems like a Belgian strong golden ale, a Scotch “Wee Heavy” and an imperial double stout, Boat Town has it all. The unique offerings on their tap list aren’t the only thing the brewery offers. THE JOURNEY Boat Town Brewing was born in 2015 after a group of medical professionals who shared a love for home brewing decided to expand on their passion. They took it to the next level in 2016 when the doors to the brewery first opened. Brian Hash, the current owner, started working behind the bar about three months after opening day. “They kind of underestimated how popular they were going to be,” explained Brian. “In the beginning, two guys and their wives were trying to do everything. They realized they needed more help, and that’s part of how I got here.” Brian grew in his role, going from being a part-time bartender to getting involved

with the brewing process, becoming general manager, and finally buying the place in August 2019. He’s also the head brewer now. “They were still working full-time and didn’t really have the time to devote to it, the way it needed,” Brian elaborated. He explained he grew up in small businesses and retail and became passionate about the brewing process while working there. Brian grew up nearby, in Lebanon, Missouri. He loved how much the community embraced Boat Town. Many of the customers were familiar, but many also came from afar. The brewery sets
right off Route 66 and is close to popular fishing spot Bennett Springs. “It’s really cool to see people enjoying something that you created, and that’s a real hook for us,” said Brian. THE DESTINATION Now, the brewery is a beautiful, family-friendly space. Brian says he took great efforts to differentiate Boat Town’s taproom from the environment at bars. For example, there’s a large outdoor area where people can relax and let their kids roam free, and on the weekends, they can listen to live music.
One of the benefits of being the owner and head brewer is that Brian is free to experiment. He and his right-hand-man Justin, who brews and handles the cellar, have been trying unique flavor combinations. “We really do like the, ‘What would happen if?’ We enjoy trying new things. We like to take beer that we make that we know is great and then play with it some,” said Brian. One example is a smoked pepper beer called Smokin’ Hot Date. They also do a Mexican hot chocolate beer for the holidays, using their imperial stout as a base, then adding cinnamon, vanilla, cocoa nibs, and dried ancho chilis. THE FUN Boat Town always has about a dozen beers on tap and also shares the love by featuring a few offerings from guest taps chosen by Brian. In addition, he makes an effort to partner with other local businesses, like Leaky Roof Meadery in Buffalo, Missouri. “We know the owner of that meadery, and we love their products, we love the fact that they’re neighbors, and that’s really neat to be working with someone that’s very local to us,” said Brian. “Like I said, I grew up in small business, and we really do want to lift other businesses up and do what we can to help.” Another way Boat Town Brewing “supports local” is by leasing an on-site food vendor space. Rather than having a restaurant or rotating multiple food trucks, in 2018, Boat Town created a kitchen in a neighboring building and leased it. Recently, a new vendor, Hot Mess Express, moved in. Want a Boat Town Beer? They are only served in the taproom conveniently located just off I-44 at exit 123, just west of Lebanon. But Brian acknowledges they could change their business model in the future. U

A Small-batch Winery Offers Local Nectar
HUMMINGBIRD VINEYARD AND WINERY GROWS THEIR OWN
T
wo miles down a remote gravel road in Mexico, Missouri, sets a small vineyard. Visitors are greeted by the wagging tail of onsite “security” officer Gerty. A friendly boxer, Gerty prefers to give guests kisses instead of hassles before they begin their Hummingbird Vineyard and Winery experience. “Once you get here, it’s a beautiful country setting, and it’s absolutely gorgeous,” said Hummingbird’s office manager, Heather Thewlis. “We’ve got an outdoor fireplace and plenty of outdoor seating, and there’s a creek that runs down in the back.” The small winery stands apart from the field of more than 100 others in Missouri for its dedication to an entirely local and hands-on process. Workers oversee each step, from growing the grapes to bottling the finished product. As a result, each wine is carefully crafted and delivers a unique flavor profile. “Everything we bottle that year is what

we sell for the year,” said Heather. “We like to use just our grapes. So whatever we grow with is what we use, so we don’t have big quantities, typically when we bottle smaller batches. It gives a more personal feel to it.”
THE STORY BEHIND HUMMINGBIRD VINEYARD AND WINERY Seduced by Napa Valley, California, former State Farm catastrophe insurance adjuster David Runge was enamored by the rows of grapes and hillside vineyards
that have made that region one of the world’s most-popular wine-producing areas. David’s retirement adventure would eventually become an award-winning vineyard and winery. “He realized that there is a lot more work that goes into it than he thought,” said Heather. “You can’t simply stick a grapevine into the ground and watch it grow. So a friend... suggested he make wine.” The initial vines were planted in 2011 and “became” wine by 2014. In 2015, he was fine-tuning recipes and knee-deep in the details. His first offering was the Semi-Sweet Vignole, and David gifted it to family and friends that year. The crisp, clear white with a citrusy, off-dry, light-bodied flavor remains a customer favorite, even though Hummingbird has eight other varieties. “You’ll get kind of a fruity taste with it; it’s our semi-sweet white,” said Heather. “People kind of like it because it’s right there where it’s not too sweet, not too dry.” AWARD WINNERS Hummingbird wines are popular with guests and judges alike. Another hit is the 2021 American Wine Society bronze medal winner Autumn Frost. Silky and
voluptuous, Autumn Frost is a blend with brilliant coloring and a sweet, fruit-forward appeal. In addition, the 2020 SemiSweet Vignole and 2020 Hickory Ridge Apple received silver medals at the 2021 Missouri Wine Competition. MISSOURI RIVER WINE TRAIL Hummingbird Vineyard and Winery is one of seven on the Missouri River Wine Trail. Customers can drop in for a tasting of nine different varieties, and on days when it’s not too busy, even take a tour of the small facility. The tasting room also sells wine slushies and domestic beer.
Pizza and small bites are available, but guests are also invited to bring food and snacks. Hummingbird has occasional live music and a tranquil, rustic vibe, making it an excellent location for bridal showers and other events. U

property into one of the most exciting wineries and event spaces in northern Missouri – Black Silo Winery. Jenn Hottes and her husband Duane Urich, also known as the Biscuit and Turbo, purchased the farm as an early retirement project. Duane spent time in California wine country as a National Guard airman. This time inspired them to open a winery. “Just the organized beauty of the vineyards and winery grounds was so inspiring just in themselves that he never forgot that,
and it ultimately manifested 20 years later in Trenton, MO,” Jenn said. After taking classes in the science and study of wine and winemaking and the cultivation and harvesting of grapes, the two got to work planting their first harvest in 2010. Three years later, they opened their doors to the public. They now produce 12 different wines from eight grape varietals. The most popular is the “2 Lane”—a sweet, aromatic blend of seven other grapes. Visitors can enjoy a bottle or glass
inside the tasting room—once the farm’s milking parlor—or drink al fresco on the patio. Aside from the wine, Black Silo has become a popular spot for weddings and other gatherings, including the annual Mid America Music Festival, which Jenn and Duane started in 2017. For this year’s festival, “We expect to exceed 5,000 festivalgoers coming to watch 12 bands over two days with seven of those bands being national tour acts!” Jenn said. Last year’s event featured Autograph,
Slaughter, and Great White. Watch the website for this year’s lineup. So what is in store for the future? This year, the winery will delve into the world of beer with Black Silo Brewing. They hope to unveil one or two this summer and eventually expand the operation with four mainstays and new specialty brews each month. has teamed with our friends at Alpha Brewing Company for a very special collaboration brew. This go around, we’re riding the milkshake-sour train with a Cherry Pie Sour. Take time to unplug and go back to the days of pies in windows and being home by dinner time with this decadent sour ale brewed with loads of cherries, a dash of vanilla, and a hint of cinnamon. It’s a tart cherry pie in a can. The name is still in development, and the release is tentatively set for mid-July.
