When we started this project, we realized very quickly what a unique and special business the craft industry is. Dotted with people following their dreams, taking a chance, going with their gut and it shows up and down the state. We hope we can capture that creative and independent spirit in each magazine. We run down the tasting rooms, the events, and the faces and places of New Hampshire craft beer, wine, ciders and spirits. Meet Mitzy. She has been with us since 2014 and is almost 12 years old. Mitzy was the protector of the grain and night security officer at our second, warehouse-style location. Since moving to our new building in 2019 she has taken on more CEO-like duties and hangs out in the main office areas and wanders the brewery by night. Mitzy has a Russian Imperial Stout series named after her. She is loved by all employees and customers and has really made a name for herself within the 603 brand. www.603brewery.com
ROCKINGHAM BREWING COMPANY REMY 10 years old Golden-Pyrenees mix
Remy, a Golden-Pyrenees mix, was adopted weeks after Rockingham Brewing Company opened in 2015. During his tenure at the brewery, he has helped with just about everything from quality control to checking IDs in the taproom. His favorite task is brewing his annual birthday beer, aptly named ‘Remy’s Double IPA’, from which he donates a percentage of the proceeds to assist local animals. Since he just turned 10 this year, 10% of the proceeds will go to help the Greater Derry Humane Society.

Executive Director of the New Hampshire Brewers Association CJ Haines broke into the craft brewing industry nearly six years ago. She was returning from a trip and searching for a career change when “a chance encounter with a brewery owner coupled with a fondness for craft beers turned into an opportunity,” she said. CJ's time spent at the NH Brewers Association has been full of accomplishments. But one of her proudest moments came this summer when they successfully lobbied the state to pass a law allowing breweries to ship directly to consumers. “Through the adversity we faced, we were still able to push the industry toward progress,” she said.

Marketing Director at 603 Brewery Morgan Towle was already a beverage industry pro by the time she landed at 603 Brewery in 2016. Before that, she had spent more than six years working in wine and spirits but said the strong sense of community and wide array of events and experiences drew her to the world of beer. Even as a seasoned veteran, Morgan said learning to pivot and adapt to the business during the COVID-19 pandemic has been the greatest challenge she’s faced in her career. “Luckily, we’ve been very successful, the community support has been remarkable during these times.” she said. Morgan said the best part of her job is that she gets to incorporate her passion for storytelling in all her work. This year, as 603 Brewery celebrates its 10th anniversary, her goal is to continue to grow the brand and “tell the authentic story of who we are.”

Marketing Manager at Bellavance Beverage Co. Chelsea Dennis wears many hats at Bellavance Beverage Co. One day she may be shooting a product release video and the next she’ll be scheduling upcoming events. “Every day is different and fun,” she said. Chelsea now has over a decade of experience under her belt. But it took a lot of time and hard work for her to gain the

trust of her colleagues in the industry. She credits the support of her mentors at BBC for encouraging her to break out of her comfort zone and promote herself within the community. Her advice for women who are just starting out: “Don’t be intimidated! Be honest, be passionate, and be yourself. Look for a company whose vision and mission statement align with what is important to you.”

styles adopted by founding brewer John Lenzini from his years living (and teaching Chemistry!) in Europe, and wilder styles more geared to the experimental palate, Schilling is dedicated to excellence, whether that means sourcing grains directly from the Czech Republic or Germany for classic lagers or European ales, or, say, chocolate spelt from a local maltster for their Landbier Dunkel. “At the end of the day, when you drink Schilling, we want you to know that you’re getting
a delicious, high-quality beer, made with care and attention to detail, honoring tradition while making it our own,” says Schilling’s Zac Porter. And that’s no hyperbole. Being at Schilling, nestled between the mountains and the river, is truly an experience akin to the traditional, Bavarian breweries in which Lenzini and life-long friends and Schilling cofounders Jeff and Stu Cozzens imbibed. And only 2-3 hours from Burlington, Boston, Portland (ME) and Montreal,
Littleton couldn’t be a more convenient location for the nature lover looking to escape, a family eyeing a peaceful getaway. “The owners wanted to own a business in a community that they wanted to live and raise their families in, surrounded by the great outdoors and a small town feel similar to where they grew up in Michigan.” This down-to-earth mentality is not only reflected in their array of quaffable styles, but also their history. Like anyone who’s honed his craft, the work is as much desire as it is compulsion, and Lenzini’s first Schilling operation was a “janky” 2.5 x 2.5 barrel electric brewhouse behind the bar of a brewpub, the grain gravity-fed from the second floor. This instinct to make great beer despite immense obstacles is what separates the run-of-themill craft operation from the truly gifted, and the proof is in the pudding. They now boast a 20 barrel, five vessel brewhouse, and distribute throughout all of New England, New York, Virginia/DC, and sometimes Michigan. But their Littleton location must not be overlooked! In fact, it should be part of your next travel plan. A wood-fire oven for thincrust pizzas, food truck for beer companions like poutine and smash burgers, and soon to come upscale gastropub... it truly is, in Porter’s words, a beer “campus”. And what’s a campus without parties? We are already looking forward to their 9th anniversary and annual Oktoberfest celebration this September 24th, for

in the North Country), and we’ve never once regretted our decision to establish Schilling here.” But to speak less about their beer than location, albeit idyllic, is a misrepresentation of Schilling’s quality.

Brewery is a staple in the New Hampshire craft beer world. Holding a formidable spot in New Hampshire's top 10 beer breweries, this group of talented brewers proudly serves their finest creations to the New England area. However, it’s taken nearly a decade for them to get to where they are now. It all started as a passion project for the three UMass Dartmouth best friends who shared a love for home brewing. Geoff Hewes, Tamsin Hewes, and Dan Leonard each graduated with engineering degrees (Geoff and Tamsin later married), and entered the workforce. They never gave up their
passion for brewing. After graduating, they managed to find time to brew professionally on top of their day jobs. The trio started in 2012 driving to their accounts after work and fulfilling orders from the trunks of their cars. Even with their low-scale operation, their talent was recognized; The Winni Amber Ale, one of their first flagship brews, remains a top seller to this day. 603 knew they couldn’t remain a small operation for long. In 2014, they relocated from Campton to Londonderry, NH. This new, larger space allowed them to continue scaling up their operation and create new beers. This is when everything really started to come
together. They were finally able to quit their day jobs to focus on the brewery full time and hired a team to assist with concept and production. They also partnered with two distributors to help get their product on shelves and in bars. 603 remained in this location for five years, until 2019, when they moved to an even larger location in Londonderry, where they remain to this day. creativity through beer, and the results are unforgettable. The current E09 tap rotation includes a pickle sour, a milkshake sour, as well as the Ecto-9, a bright green brew straight from Ghostbusters, plus many more. Guests will not be disappointed by the taproom at 603. Their inviting indoor space is adorned with large windows that give a clear view of the brew lab, featuring aging barrels and fermentation alley. Outdoors, you’ll find a large patio with fire pits (dog friendly, of course!), perfect for relaxing on summer days. For the colder months, 603 has several large, cozy igloos, available for rent in two-hour time slots. The taproom even has a retail space where guests can purchase cans and bottles to take home, as well as trendy apparel and merchandise. HUNGRY?
Nothing goes better with good beer than good food. 603’s taproom features a scratch kitchen that dishes out inspired pub-style food, all sourced locally and never frozen. Featuring fun twists on classics like the Korean BBQ nachos, Gochujang chicken sandwich, and customizable brick oven pizzas, you’re sure to leave satisfied. It’s worth noting that 603 handled the Coronavirus pandemic remarkably well. They’ve taken a “roll with the punches” approach, and focused heavily on their to go offerings during the shutdown. efore 2001, Amy LaBelle would never have predicted that she would find her calling as a full-time winemaker. Her first career was as a business lawyer, but five years into her practice, she realized that something was missing. Then, on a vacation to Nova Scotia in 2001, Amy visited a small winery, where she had an epiphany. She began her quest to become not just any winemaker but one of the best in the world. her day job as a lawyer as she studied the ins and outs of wine production, developed a business plan, and began to make her own wine at an orchard in Walpole. On top of family life and raising her two young children, this left little time for anything else. “Amy never took a day off in her quest to become a winemaker and own a winery,” says Michelle Thornton, one of LaBelle’s first team members and current Director of Business Development, “she was not sleeping more than four hours a night.”

All the work that Amy put in through the aughts and early 2010s paid off when the first LaBelle Winery was finally ready for the public. The beautiful flagship location in Amherst now offers public wine tastings, vineyard tours, and bookings for private events, so you can visit this picturesque destination at any time of year and see it for yourself! LaBelle winery also hosts events like live music experiences, comedy nights, and cooking classes. EXPANDING TO PORTSMOUTH

she decided to study at the prestigious UC Davis. She stayed in New Hampshire with the winery and her family as much as possible, taking evening classes (which, due to the time difference, were really late-night classes remotely) and studying at the end of long workdays. She even traveled across the country for on-site tests, and in June of 2018, she finally received her Winemaking Certificate from the UC Davis Continuing
and Professional Education program. At the same time, Amy was also preparing to open a second LaBelle Winery location in Portsmouth. Located in the heart of downtown, the second location debuted in 2017 and offers a tasting room, a space for private events, a gift shop, and even an art gallery. Locals and tourists alike love the fun, modern experience that the storefront brings to its historic location.
Like many other businesses, especially those that rely on visitors or even tourists, LaBelle as a company was completely paralyzed by the COVID shutdown in 2020. It was a long, arduous, uphill battle to recovery, but they were able to survive the worst of the pandemic and continue to grow. “Because of the support of our customers and Amy’s unwavering dedication and leadership in pivoting the business in every way possible to get back on track, LaBelle Winery has made a solid recovery,” says Michelle Thornton. And not every change was bad; 2020 was also the year LaBelle acquired the property that would become their third and newest location in Derry. It opened in spring of last year and features a golf course, a restaurant, an event center, with new additions to come later this year. The new location has allowed Amy to support the community through this difficult period of the last few years by generating new jobs and making more charitable contributions. She hopes to continue this momentum not just by improving LaBelle Derry, but also by expanding the brand further in the future. AT TAMWORTH DISTILLING
W
hen founder Steven Grasse first set off on a journey to open a distillery in the tiny mountain town of Tamworth, NH, he was met with some skepticism.“As a small community where everyone knows everyone, Tamworth had its trepidations about its quiet town being overrun and industrialized by a business.” But in the seven years since Tamworth Distilling opened its doors, the business has gained

the trust of the community and won the hearts of spirit drinkers across the state, taking home the title of Best Distillery in New Hampshire five years in a row. One of Steven’s goals was to build a brand that captured the essence of northern New Hampshire. The granite state is reflected in the design of the distillery itself as well as the spirits it produces. “Taking a cue from the 19th century Transcendentalists of New England, we
pull our inspiration and ingredients from our environment,” Steven said. “We focus on locally grown ingredients, often handpicked from our own garden or foraged from the woods around the distillery.” That hasn’t stopped Tamworth Distilling from pushing boundaries and getting creative with its recipes. “Over the years, we have gotten bolder and more experimental,” Steven said. “More and more we’ve embraced a ‘test kitchen’ philosophy.”
The innovative “House of Tamworth” line includes some of the company’s most talked about spirits. Some standouts include the Eau de Musc – a bourbon infused with beaver castoreum and the Deerslayer Venison Whiskey, which consists of 3-year-old white wheat whiskey that is then distilled with slow-smoked red deer venison and seasonal ingredients like porcini mushrooms, cranberries, juniper berries, and green peppercorns. Another customer favorite is the Garden Series Gin. “We release these gins seasonally based on whatever botanicals our garden grows that season,” Steven said. “These off-beat small batches only yield a total of 50 bottles.” Tamworth Distilling currently produces 3000 cases of spirits a year, but new plans for expansion could change that. The company just purchased 105 acres of land to increase its production and meet growing demand. “Looking to the future, we’re looking to continue our growth while staying true to our core value of sustainable distilling,” Steven said.

TASTING HISTORY Farnum Hill Ciders bottles their past into dry ciders
O
n the rocky slopes overlooking the Connecticut River Valley in Lebanon, New Hampshire, is an apple growing operation with a fascinating history: Farnum Hill Ciders at Poverty Lane Orchards. During the late 20th century, a time when many Northeastern apple growers had to sell their orchards to developers, the owners of Poverty Lane Orchards saved their business by looking backward at pre-prohibition style uses for their apples. The result? A flourishing business using cider-grown heirloom apples. During the 1980’s Farnum Hill tested scores of heirloom edible apples, plus bittersweet and bittersharp cider apples which are not palatable off the tree. Back in the day, consumers were used to many more apple varieties than we are now—some of them, like Macs and Cortlands, are stunningly delicious, and grow to prime quality on Farnum Hill. The apples grown for fermentation into cider usually didn’t taste good right off the tree–like wine grapes, they were grown for making alcoholic beverages. On Farnum Hill, testing apple varieties entails grafting twigs from unfamiliar varieties onto mature trees. In three years or so the twigs become

fruiting branches, producing enough apples to evaluate. After trial and error, it eventually became possible to choose which apples deserved the time and effort to harvest. By the 1990’s, the orchards on Farnum Hill transitioned mostly away from standard 20th-century market apples and towards a range of heirloom apples delicious for eating and/or valuable for fermentation. Farnum Hill learned that by blending a range of different apple varieties, they could make superior fermented ciders with a more unique flavor. Today, Farnum Hill creates three cider styles that are extremely dry compared to mainstream American ciders. The‘Extra Drys,’which are both sparkling and still contain no added sugar or other sweeteners. The second, ‘Farmhouse’ Style, contains a few grams of returned sugar per liter–about what you’d find in most brut champagnes. Just as wines don’t taste strongly of grape juice, Farnum Hill ciders don’t shout “apple.” They offer refreshing acidity, a range of tropical fruit with herbal and mineral notes, and a clean, food-friendly finish. Much like wine making, the cider draws its character from the land that produces the base fruit. Despite being more common in recent years, heirloom apple varieties are still a rising commodity. Many more cider orchards have launched since the farm opened, but Farnum Hill Ciders will always be able to boast their trailblazing concept, with the past as their original guide. U
