elcome to the newest issue of BrewView Vermont. We’re enjoying the season. If you’re a craft lover like us, there’s always this moment of feeling lucky to live where we live and enjoy the fruits of local crafters. We think you know what we’re talking about. This issue we check out Bitter Bubble—a unique, totally Vermont approach to non-alcohol seltzer. Mixers or on their own, it doesn’t matter. Delicious! Since it’s cider season, we thought we’d introduce you to Vermont Cider Lab in the Essex Experience. We love what they’re doing. We run down a few of the many games you can play while you’re enjoying local favorites. Bags, Backgammon, Parcheesi, trivia, even simple rings on a chain at every table. The crafters all over the state have plenty to make your experience that much better. On a serious note, the flood this summer did a hell of a number on a lot of our friends, businesses, and communities. Two of those communities hit very hard were Barre and Montpelier. VERMONT CIDER LAB Keeps Family Tradition Alive
T
he new kids on the block in Essex, Vermont, are about to take the cider world by storm. Chris Line and his wife Karen Wisehart opened Vermont Cider Lab in the Essex Experience just a few months ago. Since their opening on July 8, they are already seeing tons of love from the local community. FAMILY HOBBY TURNED COMMUNITY BUSINESS Chris began his venture into cider production 14 years ago. His father made cider when he was growing up. When his father was in a biking accident, Chris decided to carry on the family tradition and tried his hand at cider making. He spent the last

decade producing and experimenting with cider in his basement, never considering it would turn into a business—until his wife came up with a great idea. “My wife and her friend had talked about opening a wine bar years ago,” Chris explained. “When the new wine shop opened in the Essex Experience, she went and talked to the owners who told her if she was thinking about opening something like that, ‘just do it.’” And so the idea of Vermont Cider Lab was created. Chris and Karen met with a Pommelier, a cider sommelier, to get his feedback on whether the product was good enough to launch a business. He gave them plenty of great feedback and encouraged them to keep going. From
there, they visited cideries across the state and met with owners to get insight into the business. Coming from a background as a personal trainer and strength coach, Chris was shocked at the help and feedback they received. “I was shocked at how welcoming and forthcoming everyone in the industry has been, with people even reaching out to offer advice,” Chris said. “We literally had the owner of another cider company meet with our loan officer on our behalf for over an hour.” A GROUP EFFORT Although Chris is new to the hospitality business, Karen is an old pro. Karen is currently the director of operations for a Best Western
hotel that boasts two restaurants, a steakhouse, and sports bar. While Chris makes the cider and handles a lot of the day-to-day operations at Vermont Cider Lab, Karen takes care of their sales and marketing. The other ace in their pocket came from a random question they posted on a cider-making chatboard, leading them to a great collaboration with a cidery consultant. Their consultant helped them learn about sourcing, cidery setup and equipment lists, and how to scale up from 5-gallon carboys to a 250-gallon fermentation setup. As all of the pieces fell into place, Chris and Karen got to work on their tasting room space. With 4,100 square feet, the tasting room has 50 seats inside and a 24-person seating capacity on their dog-friendly patio. They wanted to have an upscale rustic feel to the facility and reached out to friends and family for help to complete their vision. “Every piece of wood for the tables and bar tops was collected from family and friends and built by my brother-in-law,” Chris said proudly. look at how their product is being made. For those who want an even closer look, Chris is onsite most days to take guests on a behind-the-scenes tour. They also offer a selection of games for people to enjoy while they imbibe. Available in the tasting room right now are a selection of five ciders: three staples (traditional, cranberry, and lemon ginger), and two rotationals (currently a sour cherry and blueberry basil), plus a selection of cider-based cocktails and slushies to help bridge the gap for those just venturing into the world of cider. All of their ciders are named after their dogs or the dogs of family and friends, such as Bubba, Stinker, Cassa Frass, Willow Willow, and Sloaner. They also are running a raffle for

guests: for every cider you purchase, guests enter to win the opportunity to name a future cider after their dog. Currently, upcoming ciders include a rosemary, blood orange, and sage cider for the fall using local maple syrup, as well as a holiday cider made two ways: filtered for guests to take home and unfiltered to use in the tasting room as a hot, mulled cider. “The difference between us and a lot of other cider makers is we only ferment with local real sugar sources. We use local honey and local maple syrup,” Chris said. He thinks it adds to overall product and complexity. Plus, they are a Vermont company wanting to support other Vermont businesses and farms. “We’re really proud of what we’re doing,” Chris added. “It’s going to be a grind, but worth it in the end.”

Bitter Bubble Bursts into the non-alcoholic scene A new concept for complex seltzers
In the midst of a worldwide water craze, George Martin and Eric Warnstedt saw an opening in the market and launched a new kind of carbonated beverage: Bitter Bubble. Bitter Bubble is a line of botanical bitters and soda water created in Vermont in 2021. 28 BREWVIEW Vermont 2023 Issue 3
While new to the market, the idea was formed years prior. THIRSTING FOR THE PERFECT BEVERAGE George, a mechanical and electrical engineer by trade, first met Eric while assisting on the design of Hen of the Wood, a project being done by the engineering firm he manages. Their paths crossed again through a local cider company, Citizen Cider, where George’s families had been providing fresh juice for their hard cider production. “We became good friends and had a lot of fun during these early days where there was just so much excitement around the industry scene, especially having Hen of the Wood arrive in Burlington,” George explained. At this point, Citizen was expanding from Essex to Pine Street in Burlington, and there was some great energy around cider and classic cocktails in the region.
George recalls seeing the expensive, bright tank at Citizen that was used for finishing ciders, but was left dormant for days at a time while they waited for fermentations. Someone suggested that they should consider creating a Vermont seltzer using the equipment in the downtime. It was a fun concept, but George didn’t see how it could be much different than your everyday seltzer—still, the idea lingered in the back of their
CRAFTING UNCONVENTIONAL FLAVORS Over the years, George tried many different recipes, but nothing truly stood out. It wasn’t until he and Eric fully committed to building Bitter Bubble together in 2020 that things really took off. “Eric brings his experience from the restaurant industry and was paramount in the development of flavor profiles and branding,” George said.

It wasn’t until years later that George was served a beverage by Eric that completely changed George’s mindset on what seltzer could be. “One night at Hen of the Wood, I was given an Angostura Bitters and Soda Water, which weirdly, I had never tasted,” George said. “It was exactly what I was looking for in a daily drinkable—but complex seltzer— and began drinking it regularly as a non-alcoholic option.” And so the formation of Bitter Bubble began.
“I bring my technical background and experience with manufacturing through Citizen on how to scale and maintain quality.” Together with their good friend and branding expert, Dennis Healy, they developed and created their lineup. The flavors currently on the

market are sour cherry and chicory, rhubarb hibiscus, and blood orange chamomile. They have plans to expand their portfolio with new flavors in the future, including using some unconventional flavors such as birch bark, basil, and cardamom. They use a line of natural extracts that they source from a company in New England and pair that with their house blend “bitter base” consisting of extracts from gentian, chicory, and dandelion, which is consistent through all of the product lines. “Our primary goal is to make an approachable product with our bitters,” George said. “But we would like to branch out to some deeper bitter flavors in smaller formats for cocktail mixers or any individuals who want to play a little deeper into the bitter void.” WHERE TO FIND BITTER BUBBLE They are currently distributed directly to consumers through their website in

Vermont through Baker Distributing. They plan to be available in Rhode Island and Massachusetts by the end of the year and are looking to expand distribution into New York next year. While no tasting room plans are drawn up just yet, the idea isn’t off the table. “It would be a dream to get to the point where we could have a tasting room and fun spot to converse over all things bitter,” George shared. “Maybe 2024?” You can currently find Bitter Bubble in both City Market locations, Healthy Living, Cheese Traders, Commodities Natural Market, Killington Marker, and Jericho Market. Products are sold in single cans and four packs, typically priced around $7 per four pack. You can also imbibe on Bitter Bubble at Halvorson’s, Prohibition Pig, Honey Road, Hen of the Wood, and The Avocado Pit.

KINGDOM BREWING In northeastern Vermont, head over to Kingdom Brewing in Newport Town. “When you visit Kingdom Brewing, music isn’t the only thing being played,” said Eric Plaskonos. “With a
wide assortment of games like cards, cribbage, Trivial Pursuit, cornhole, Jenga, and Mongo Jenga, there’s fun to be had for kids of all ages at The Brew Cabin.” There's more than just great beer at Kingdom Brewing. You'll find familyfriendly entertainment, music, and plenty of games to play. SNOW REPUBLIC BREWING CO. “We LOVE our games at the brewery!” said Walt Bansley, owner of Snow Republic Brewing Company in their West Dover tasting room. With a ton of table games like UNO, cards, and Connect 4 (they also offer giant versions, if size matters), their tasting room is often filled with people playing games. With a pool table, darts, and a vintage 1950s shuffleboard table, they have the traditional pub games covered. But the games are not what truly set them apart, according to Bansley. “I believe that we are truly unique, because of our vibe. I am originally from San Diego, and I kick a laid back, SoCal vibe. Cali Reggae music is always playing on the stereo amidst
many real palm trees. We are kidfriendly, dog-friendly and just create a really cool environment to have a great beer and food.” LUCY AND HOWE BREWING If you relish some fierce competition, with a more cerebral approach to your fun, you’re probably a trivia fan. “We do a trivia night here, which has been popular,” said Jesse Croni, owner and brewer at Lucy and Howe, “Our quizmaster Libby cooks up new questions tackling topics ranging from the arts to Marvel movies to the year 1986 to famous dynamic duos. Grab a beer, a charcuterie board, or some pretzel sticks with house-made beer cheese, and see how you stack up against the other teams. Games start at 6pm.” Trivia nights happen on Thursdays. Upcoming dates are Nov. 9 and 30, and Dec. 14.

VERMONT BEER MAKERS Their competitive trivia night is fun and with a fun twist. Every Monday at 6:30pm, teams gather to compete for the coveted trivia mug. In order to win it, you must win trivia five times

“We also host Game On VT’s cornhole league every Wednesday. Teams play three to four matches a night, and all abilities are welcome. This is a social/recreational program,” said Lieblein. WHIRLIGIG BREWING Bringing the games we play into the digital age is Whirligig, featuring free arcade machines as well as the more old-school cornhole. The free arcade games are a lot of fun, of course, but the real social feature of the tasting room is its board games. According to Geoffrey Sawake, CEO of Whirligig Brewing, one of the most fun nights of the month is their “epic meetup of board gamers on the first Thursday of every month.” So, if you’re interested in playing some games with new friends, it sounds like that is a safe shot to take.

1ST REPUBLIC BREWING CO. They host some serious cribbage tournaments. Each tournament is a major event at the brewery and runs for six weeks. Teams meet Mondays at 6pm. This league of extraordinary cribbage players is pretty exclusive, as each tournament is limited to 12 teams. The current tournament
wraps up on Oct. 23, and the next begins in January. Can’t commit to six weeks of weekly cribbage? Well, that’s OK, too. They hold one-day single-elimination cribbage tournaments periodically, as well, the next set to take place on Nov. 18 and 19. So, stop in and try your hand at some cribbage, make some new friends, and try the Showtime IPA while you’re there. FOUR QUARTERS BREWING You can play a myriad of board games in their tasting room. Their chess board is, in particular, a unique feature. It’s a beautiful set, and is rarely unused on the weekends. “We’ve had chess here since we opened, plus plenty of other games like cribbage, Jenga, Uno, Battleship, Connect 4, etc. We are also hoping to have a chess tournament in November,” said Brian Eckert, owner of Four Quarters Brewing. They use local honey or maple syrup in their sapling line, and use both local and exotic herbs in their Snowdrop gin. They have a comfortable tasting room, delicious spirits, and fun games to go with them. HOGBACK MOUNTAIN BREWING In a carriage barn in Bristol, you can visit Jamie and Sam Sawyer of Hogback Mountain Brewing. They love when patrons play games at their tasting room. They have cornhole and giant Jenga in the beer garden, and a multitude of tabletop games inside, but they are most excited about resuming their trivia nights, where patrons can earn both street cred and tasting room credits in the form of Hogback Coins. “Starting in October we are bringing back Thursday Trivia, which has become a favorite of locals all trying to win the coveted Hogback Coins,” said Sam Sawyer. FOLEY BROTHERS BREWING At Foley Brother Brewing, they make beer the hard way, and as the saying goes, “work hard, play hard.” According to Bob Foley, there’s always
something to do while you’re sipping their hard-crafted beers. “Each table at Quechee has a ring toss set, and both sites have cornhole, and there’s always a set of Trivial Pursuit cards hanging around,” Foley said.

GROWER: Hey Bud STRAIN: Grape Fritter Indoor Living Soil Grown HARVEST DATE: 6/30/23 LAB TESTS: THC: 21/7% Terpenes: 1.7% With the dark purplish hue, bright orange stigmas, and frosty crystals (trichomes) covering these nuggets, your mouth waters just looking at them. As we cracked into the nugget, we could see plenty of intact mushroomshaped bulbs through our handheld jewelers loupe on the inside. The pretty purple nuggets were tightly trimmed and manicured. The cracked open nugget was immediately followed by a sensual spice and sweet aroma that offered a heavy splash of fruit. As we ground it up, we started to get a fuel smell with sweet fruit and sensual spice lingering. We were excited to get into the myrcene, limonene, and caryophyllene terpenes—add some linalool terpenes and you have something special. These pretty ground up flowers showed us the cultivator cared about the drying and curing process

post-harvest. The mouthwatering mound of fluff rolled and packed remarkably well. As we took our dry hits, we got massive sweetness as the predominant terpene, and myrcene shone through. Myrcene is most commonly known for its anti-inflammatory and sedative properties, a perfect night cap. Once we lit up, we all agreed we felt the spice in the back of the throat, sweet fruit up in the front, and a deep herbal almost flowery flavor wrapping around the rest of our mouths. The moderate-to-thick smoke left our tongues coated and feeling heavy. With a slow and even burn, the Grape Fritter smoked really well. The consistent combination of flavors only got better half way through the joint, as the flavors lingered between each pull. This left us feeling relaxed yet

This flower was so trichome covered, it appeared to be an almost grayish purple in color. The silver looking nugget had rusty colored stigmas. We were impressed by the amount of clear trichomes taking over. The shape of the nugget and tiny sugar leaves left intact showcased a remarkable trim job. Initial jar popping aromas were a whirlwind of scents and terpenes mixing plenty of sweet, gas, mint, and pepper. As we cracked open our first nugget, the gas really pumped out. On the grind, extra diesel and gassy notes pounded our senses making us beyond eager to roll it up. The dry hit was all mint, like a smooth peppermint candy, with that powerful diesel fuel gas and almost berry-like sweetness not far behind. Another sweet lip smacker with Pablos www.BrewViewVT.com

Revenge, the smoke was light bodied and enjoyable. The spicy and minty flavors blended beautifully, adding to its complexity. The flavors stayed with us for the entirety of the smoke and well beyond. Not even halfway through the joint, we could tell this was a kicker, leaving us high as can be and apparently contemplative of all things, odd or not. For being under 20% THC, the “high” was potent and plentiful, thanks to that eclectic mix of unknown terpenes. This is a strain that leaves us begging the cultivator to do terpenes testing! With a notable and increasing head high, the relaxing body buzz left us with happy dancing feet. Next time, we may put this one in a water pipe or bong to soften that peppery spice in the back of our throats. We agreed Pablo’s Revenge would be supportive for those with anxiety. Giving us all a deep and delightful night sleep, Pablo’s Revenge is not one for the newbie smoker, but one for the midnight toker. GROWER: Cloud 9 STRAIN: Monkey Mints
Indoor Grown HARVEST DATE: 7/14/23 LAB TESTS: THC:22.2%, Terpenes: 2.6% Woohoo was the word as we opened the bag to see big thick dense nugs! With moderate coverage it glistened brightly, coated in those magical trichomes. The tight but contoured hand trimming showed this cultivator cared immensely about maintaining the

quality of the trichomes, keeping each head as intact as possible. With clear bright trichomes, this flower looks like it would do great as hash or dry sift. The nuggets looked almost white with a very pale light green, almost as though it was sugar coated. With a sweet, mint cookie smell on the nose on top of the chem kick and skunky gas aromas, Monkey Mints reminded us of childhood days eating girl scout cookies while sitting at the gas station in our parents’ ride. Nostalgia, delight, and excitement. There was a slight bounce on our “squish” assessment. Squish is a very scientific and fancy word that helps us feel the moisture level and cure of the flower. The flower left our fingers feeling sandy and sticky all at once. The kind of sticky that make it easy to roll a J! Monkey Mints showed to be wet and fluffy on the grind. Though we smelled gas when in the bag, we got more of a chem on the grind, with sweet still lingering in the nose. We also found an earthiness and herbal odors that rounded this fun flower’s combination out. Sweet powerhoused on the dry pull and upon initial light. The chem rocked a little more spice once burning, assumably the caryophyllene terpene. With the sweetness coating our lips, we found this one to be a lip smacker, adding a tingle to our tongues. As this burned, we continued to look for the chem profile, the funk piss sourish kick that so many cannabis consumers love. We quickly felt the euphoric effects, as this strain had us feeling very talkative, and giggly as the subtle sustained
sweetness of the terpene myrcene had us storytelling and going deep. Burning just about perfect all the way through, the peppery spice (likely caryophyllene terpene) tickled the back of our throats. A great blend of aromas, flavors, and effects, many would call Monkey Mints a true “hybrid.” Grease Monkey crossed with Mint Chocolate Chip, with Original Glue and Cookies and Cream in its lineage, this is a perfect choice for those looking to relax, sit back, and have your head in the clouds!
