Fall is here and so begins the holiday season and in Florida, that also means Hurricane season, at least until the end of November. St Lucie County has many wonderful resources when it comes to business. Many large corporations have decided to call St. Lucie County home, but so have hundreds of entrepreneurs and small business owners. The St Lucie County Chamber is an awesome resource to get plugged in and up and running with a great group of people to network with. For even more support, organizations like SCORE Treasure Coast, HACCOF-Treasure Coast, and

SBA-funded and supported organizations like weVenture Women’s Business Center at FIU do so much to engage the small business owner. If you are looking to establish, grow or take your business to the next level- PLUG IN! Join a network, visit the next chamber event or register for the next online course provided by any one of these organizations.

So school is in full swing and fall sports are in full throttle. Football, volleyball, soccer to name a few… I, like many other parents, are so grateful to have coaches and staff that pour into our children. You can hear some great interviews with our local coaches as well as National Professional Coaches and athletes on The Coaches Corner with Coach Neal every Saturday Morning on WIRA Fusion Radio 1400AM & 104.9FM. Let it Go!

If you are like me and have a vi sion, a dream or a new place you want to get to, you're going to have to let go of some things in order to move forward.

Paul said in Phillippians 3:13-14, “Brethren, I do not count myself to have apprehended; but one thing I do, forgetting those things which are behind and reaching forward to those things which are ahead, I press toward the goal for the prize of the upward call of God in Christ Jesus.”

As I was preparing for a special ministry event we were having, God spoke to me and said to look up what time it was on the Jewish calendar. It was actually the beginning of Rosh Hashanah, which in the Hebrew/Jewish calendar is the New Year. In God’s time, it is His New Year. We are closing one year and going onto the next. As I began to look back through the past year, I was amazed at the things the Lord had me “let go of”. I had to let go of discouragement, fear, resentment, and some physical things as well. If you and I don’t let go of things in our life that need to go, it prevents us from entering the NEW place He has for us. There are many ways we can “let go”, but I feel the Lord wants us first and foremost to get rid of things in our spirit that are not profitable. Spirits of hate, bitterness, resentment, and a big one that is so prevalent in today’s society, “entitlement”.

If you are holding onto grudges and past mistakes, keeping ill feelings due to someone doing you wrong, or just feeling as if YOU are owed something, I am going to challenge you

A LL of us have sinned and fallen short of God's grace. (Romans 3:23) You and I have no entitlements except what God's WORD gives to us. We have authority over the evil one. We have authority and power to become the sons and daughters of God. There is so much that God has given us, but His grace and mercy is UNDESERVED! We are owed noth ing. We are to walk by faith and to live each day totally surrendered to Him and trusting Him fully. Being doers of the word and not only hearers. If we give it all to Him and trust Him to lead us and guide us, He will show us the way and give us the strength to carry our own cross. God will avenge your enemies.

hat a relaxing experience it was to sit in the Guitar Room at Chuck’s Seafood, enjoying a delightful meal and stimulating conversation. The walls are covered with photos and autographed musical instruments donated by past entertainers at Fort Pierce’s own Sunrise Theater. Charlie Daniels even signed a fiddle for the Angelos family a mere week before he passed. Notice the stars on the generous tabletop. They have been inlaid to recognize the celebrities who have actually dined at that exact spot. (With the likes of Kevin Costner, Shania Twain, The Beach Boys and many more). Think about reserving the room for your next special event. Truly, the energy in this cozy alcove is like the energy felt at a concert.

Georgette Angelos celebrated her One Year anniversary of owning the Fort Pierce landmark this past April 19th. She eagerly stepped into the role after her father Peter Angelos’ retirement. And in typical Georgette style, she took off running. Recently, Peter circulated throughout the dining room, greeting patrons, and shaking hands. When one said “Oh, you’re Georgette’s dad”, he walked over to her beaming, slapped her on the back and said “It’s YOUR place now. I’m the Dad.” As hard as she has worked, she is the first to admit she could not have reached this milestone without the loyal support of her managers, and the whole teams’ commitment to the legacy of exclusively offering Quality with a View.

She envisions not only an elaborate trellis, creating an ecosystem for butterflies, but has already added a floating dock specifically for the locals, with dockside take-out available for your favorite Chuck’s specialty drinks and food To-Go.

Notice the new drink menu, featuring Chuck’s Painkiller and Rum Buckets. I personally can highly recommend the appetizers of lobster bites and the Lobster/Crab Delight, with Uncle Nicky’s savory secret recipe calypso sauce (locals will remember Crazy Nick’s). Chuck’s is the only place in town with fresh grouper (which I had – lightly blackened – excellent) and the best stuffed lobster in season. In her own words, Georgette says “I did what I came to do – building off what was already good and making it better.” We agree.

Now that Chuck’s ownership transition has stabilized, Georgette has the time and the energy to expand her community philanthropy efforts. She is putting together a fundraising gala with Lori Murphy of Rising Tides, a 501(c) (3) organization dedicated to quarterly fundraising events will continue for Rising Tides at Chuck’s, as the family passionately supports this environmental initiative.

Her commitment to the Highwaymen Museum continues, and she is assisting in their upcoming Silent and Live fundraising Auction. The community has come forward with many, many donations. Tickets are reasonably priced but limited.

“My main focus is to keep our little slice of paradise intact, for our children, the next generation, that will be taking care of the rest of us pretty soon. Making the world a better place.”

Congratulations on your first anniversary, Georgette. You are indeed living your vision, constantly putting yourself out there for the community and for the children, the future generation of Fort Pierce. You are an ongoing inspiration.

I have never been a big fan of the pumpkin craze that occurs in the fall, mainly because all the attention is around the overly sweet drinks and desserts.

Pumpkin in all its forms deserves so much more attention than the usual Halloween and fall decoration.

Grace Packs

Anew school year is underway and Grace Packs volunteers are busily engaged in their program’s mission.  Grace Packs Inc. provides weekly weekend food to students who lack an ample food supply in over thirty St Lucie County schools.  While at school, children have the opportunity to eat breakfast and lunch, but weekends can prove challenging for many local children whose families are struggling with food insecurity.  With that in mind, Grace Packs Inc. seeks to provide breakfast, lunch, and dinner items each weekend for students in need.  A 100% volunteer-run 501 (c) (3) nonprofit organization, Grace Packs Inc. boasts many “community angels” to successfully bring much-needed food to our area’s hungry children.

School staff in participating local schools serve as the first line of defense.  It’s all about the relationships; staff members know their children and families and are able to identify kids who are showing signs of hunger.  Nominations are confidentially made by any staff member in a school for a child and his siblings to receive food for the weekend.  After parent permission is gained, the school’s Grace Packs team places orders each week with the program Orders and Delivery Coordinators to request Grace Packs for their nominated students.

Sunlight Community Church has generously donated pantry space to Grace Packs since 2017.  Each Tuesday, church and community delivery volunteers pick up assembled Packs from the pantry and then transport the food to the schools.  These “delivery friends” as they are affectionately called, use their own vehicles to transport the food.  The children they are serving may never meet these special people, but their impact is felt each Friday when the children carry home their Grace Packs.

Other dedicated volunteers serve in the pantry, completing a host of jobs from checking in food, noting expiration dates, filling bins, and assembling hundreds of Packs weekly for hungry children.

The American Legion 318 Ladies Auxiliary continues to embrace our program through donations.

Pat Agricola serves as the “Leader of the Packs”.  As the Pantry Coordinator, she shares, “Since the pandemic, we found that we’ve had to become more resourceful in acquiring food to stock our pantry.  In the past, we just placed large orders with the local supermarkets.  However, with food shortages, we have not been able to do this on a regular basis; we’ve had to rely heavily on food donations from our community.  Much of our food over the last two years has been provided by our local angels. They’ve really kept us going.  With up to 540 Grace Packs distributed each week, I’m proud to say that we did not miss one week of being able to provide our children with food.  This is a real testament to the caring people here. I have to say that there is no shortage of angels in St Lucie County.’

This year, with changes in our economy and increases in food prices, the volunteers at Grace Packs anticipate an increase in students entering the program.  With supply issues within supermarkets not completely resolved, Grace Packs Inc. welcomes food donations.  Non-expired items such as oatmeal packs, breakfast bars, raisins, soups, mac and cheese, pastas, rice, beans, and peanut butter are wish list items. These child friendly foods are a blessing to hungry students. An initiative called The Peanut Butter Brigade has been a welcomed addition to the Grace Packs program, as 12 – 17 oz. jars of peanut butter provide protein for struggling children.

A Taste of Key West…

Pan Seared Scallopswith a Garlic Lime Butter Wine Sauce

Here is a Taste of Key West Florida, the southernmost point in the continental United States. Key West is known for its vibrant downtown area with colorful shops, lively entertainment, and crowded seafood restaurant restaurants. The Florida Keys is known as the deep-sea fishing capital of the world which is one reason why you’ll find this dish on the menus of Key West restaurants. We’re making pan seared scallops, plated with black lentils and asparagus tips. The scallops will be blackened and seared in a very hot cast iron skillet, then topped with a sauce made from garlic, cilantro, butter, lime juice, & white wine. This dish is a succulent treat from the sea.

Our Mise En Place for This Dish is:

The Scallops

8 Fresh Jumbo Scallops

The Blackened Seasoning

¼ Teaspoon Each of Cayenne Pepper, Paprika, Onion Powder, Garlic Powder, Ground Oregano, and Ground Thyme

2 Tablespoons of Colavita Extra Virgin Olive Oil

2 Pieces of President Brand Unsalted Butter

Salt & Pepper

The Lentils

1 Cup of Black Lentils

2 Tablespoons of Olive Oil

2 Pieces of Butter

½ Cup of Diced Carrots

½ Cup of Diced Yellow Onion

2 Cloves of Chopped Garlic

¼ Teaspoon Each of Coriander, Cumin, Tumeric, & Black Pepper

2 Cups of Chicken Stock

The Vegetable

1 Bunch of Asparagus Cut at the Tips

2 Tablespoons of Extra Virgin Olive Oil

1 Ounce of Natalie’s Lime Juice

Salt & Pepper to Taste

The Sauce

1 Tablespoon of Extra Virgin Olive Oil

2 Pieces of President Brand Unsalted Butter

2 Cloves of Chopped Garlic (or one cube of garlic puree)

2 Sprigs of Chopped Cilantro

2 oz of Natalie’s Lime Juice

4 oz of White Wine

1 oz Vermont Maple Syrup

2 oz Heavy Cream

The lentils take the longest to cook, so cook them first. Add a tablespoon of extra virgin olive oil and a piece of butter to a small pot and turn the heat to medium. Add in the onions and carrots and cook for four minutes. Add the garlic and cook for another minute. Add the seasoning, and then the lentils, and stir them to coat the butter and olive oil over all the lentils. Then add in the chicken stock, stir, reduce to a simmer, cover the pot and cook the lentils for 30 minutes.

To get the scallops started, pour two tablespoons of the olive oil into the cast iron skillet and turn the heat up to medium high. Add a piece of butter and let it melt. Sprinkle some salt onto the scallops and then add the blackening seasoning onto them next. Season the scallops on both sides. Add the scallops one at a time to the pan; cook them for three minutes, then flip them over, and cook for another three minutes. Scallops cook quickly and you don’t want to over cook them. Place the cooked scallops onto aluminum foil but don’t cover them. We’ll place them into a 170-degree oven to stay warm open so that they don’t get soggy.

For the sauce, add the garlic puree and the chopped garlic to the pan and cook for one minute.

Add the lime juice, and the wine, bring to a simmer, and reduce by half. Season with salt and pepper, add the syrup, the cream, and a chunk of cold butter. Turn off the heat, give it a stir, and let it thicken. Add in some of the chopped cilantro.

It's delicious!

So, we all should be back into the swing of things…School, work, life.. While it’s an exciting but busy time for kids and parents, the dogs out there may not be too happy about it. Let’s chat about a few ways to make this transition easier for our dogs.

TEACHING YOUR DOG TO BE INDEPENDENT

Being able to self engage is the key to staying home alone for dogs. Teaching your pup to be independent from an early age helps prevent separation anxiety, enables us to run errands effortlessly and makes it easier for us to step outside the house without the dog for a few hours, all while making sure our dogs are not miserable at home.

Independence training must start at an early age. We must take ample time to make sure our dogs are comfortable spending time alone by starting with only a few minutes, training our way up to a few hours.

7 TIPS TO HELP A DOG BE ALONE FOR EXTENDED PERIOD OF TIME :

1.Go big on mental stimulation

Mental stimulation is not only an enriching experience for your dog, but also teaches them the art of self engagement. Ditching food bowls and using interactive puzzles and toys is a great start to keeping your engaged for a long time and an excellent way to tire them out. Kong wobblers, Classic Kong, snuffle mats, West Paw Toppl toy are some great beginner friendly toys.

2.Exercise your dog a little extra before and after

On the days you have to leave your dog alone for an extended period of time, make sure you’re providing them with ample exercise before you do so. Did you know, over 80% of behavioral issues can be prevented if a dog is getting the appropriate quality and quantity of exercise. Furthermore, take them out for a long walk and spend time playing with them once you’re back home too.

3.Schedule mid day walks

If your dog is going to be left alone for more than several hours during the day, it would be unfair to do so without accommodating one of their most essential needs – walks. Consider asking a friend, family or hire a dog walker to walk your dog and play with them in your absence.

4.Dog Camera

Dog cameras are the absolute best way to ensure your dog is safe in your absence. Furbo dog camera is one of the most popular options which also enables you to communicate with your dog and toss a treat to them when they are being good.

5.Consider day care

If your dog loves interacting with other dogs, supervised day cares are an excellent option to keep your dog from getting bored. Not only do they get to engage in safe and supervised play with other canines, but day cares also give them an appropriate outlet for their pent-up energies.

Make sure you pick a day care centre that is reputable and is constantly supervised by professionals. Lastly, day cares may get your dog used to a high energy and exciting play routine that you may not be able to keep up on a daily basis at home. Hence, it is recommended to consider this option only 1-2 times a week.

6.Music

Calming music for canines have gained popularity in recent times, especially with the soaring cases of separation anxiety in dogs. These music tracks are composed specially to soothe an anxious dog’s nerves. They are commonly used by pet parents in thunderstorms, fireworks and while leaving a dog alone for an extended period of time. In several cases, these music tracks have helped dog sleep better and calm down faster in the absence of their humans.

7.Ensure ample food, hydration and safety

Make sure your dog knows where their food and water are located so that it’s easy for them to track it every time they need it. Quick tip – Instead of leaving food in a bowl, fill up a few toys with kibbles and treats to ensure extended engagement. Focus on crate training your dog to make sure they are not getting themselves into trouble. If crate training is not an option, barricade certain areas of the house to limit your dog’s access.
