SaLtEd CaRamEL gatEaux Ingredients 1kg Macphie Mississippi Toffee Muffin/Cake Mix Macphie Salted Caramel Luxury Filling 425g Water 235g Vegetable Oil Salted Caramel Frosting (made from Rainbow Frosting Vanilla beaten with 20% added salted caramel Luxury Filling) method • Add the liquids to the Macphie Mississippi Toffee Muffin/Cake Mix in a machine bowl fitted with a beater and mix on slow speed for 1 minute. Scrape down well then beat for approximately 6 minutes on middle speed. • Deposit approximately 400g of batter into 8" cake tins and bake at 182ºC (360ºF) for 40-50 minutes. • When cool, divide cake into three layers and spread with Salted caramel filling and Salted caramel frosting (see above). Coat the outside of cake with frosting and drizzle with salted caramel filling. • Finish with a spun sugar decoration.

Filling: 600g Cream Cheese 600g GlenDelight® (lightly whipped) 10g Gelatine method • Crumb the biscuits, add melted butter and line bottom off 3 x 8" hoops. Put in refrigerator to set. • Soak gelatine in cold water until soft, drain off water then melt in microwave with half the cream cheese (warm not hot). • Whisk GlenDelight® and other half of the cream cheese into gelatine and pour into hoops. Put back into refrigerator to set. • Finish with a generous covering of Orange Luxury Filling.
doughNutS Ingredients 500g Macphie Premium Fermented Doughnut Concentrate 500g Bread Flour 40g Yeast (approx) 420g Water (approx) method • Place all ingredients into spiral mixer and mix for 2 minutes on 1st speed, then 6 minutes on 2nd speed. • Divide into round 60g dough pieces. • Prove for approx. 50 minutes at 38°C / 75- 80% R.H. • Remove doughnut from prover 5-10 minutes before frying to allow a dry skin to form. • Fry at 375ºF (190°C) for 90 seconds each side. • Inject with choice of Luxury Filling (20g) and finish with appropriate icing. Finishing: 5th Avenue® Orange Icing, 5th Avenue® White Icing flavoured with the addition of 20% Banoffee or 5th Avenue® Caramel Icing with the addition of 20% Orange, Banoffee or Salted Caramel Luxury Filling.
