Method 1. Add Spiced Cranberry & Orange Cake Sensation Mix to mixer and slowly add water and oil on 1st speed and mix for 1 minute.

Method 1. Add Lemon Sensation Mix to mixer and slowly add water and oil on 1st speed and mix for 1 minute.

2. Scrape down and mix for a further 2 minutes on 2nd speed.

5. Once cupcakes are cool, pipe a swirl with Lemon Rainbow Frosting and finish with chocolate eggs and crumbled chocolate.

Method 1. Add the Strawberries & Cream Sensation mix to a machine bowl fitted with a beater.

5. Deposit 80g of batter into muffin cases and bake at 185ºC (370ºF) for 30 minutes

2. On 1st speed slowly add the water and oil and mix for 1 minute.

6. Once cool, remove top of cake and cut in half to make ‘wings’.

3. Scrape down and continue mixing for a further 2 minutes on 2nd speed.

7. Pipe a swirl of Mactop® Traditional onto the cut surface.

4. Reduce to 1st speed and mix for a final 1 minute.

8. Decorate with sliced strawberries and finish with Sweet Snow®.

RECIPES CHERZIPAN CAKE • Cake batter • Water icing 1. 2. 3. 4. 5.

• Renshaw Original Marzipan White • Glace Cherries

Line a loaf tin with baking parchment and half fill with your cake batter. Place in half the cherries and top with a layer of white marzipan. Fill with the remaining batter and sprinkle over the cherries. Bake until golden and cooked through. To decorate, drizzle with a thin water icing.

HANDY HINT!

You can sprinkle Demerara sugar over the loaf cake whilst it is still hot as an alternative decoration.

MARZIPAN LAYER CAKE • Layers of coloured Genoese • Bakers coating

• Renshaw Original Marzipan White • Apricot jam (sieved)

Trim and level the coloured sponge layers. Place the first layer on your board and lightly coat with apricot jam. Layer the Genoese with a sheet of white marzipan that has been cut to size. Repeat this with the remaining layers. Finish the top layer with your choice of Bakers coating.

• 120g Renwhites solution*

Place Macaroona and Renwhites in a bowl with a beater and mix on top speed for three minutes. Pipe onto lined trays at required size. Sprinkle over with flaked almonds and dust with icing Sugar. Place a cherry half on top Open damper on oven. Bake at 175ºC (350ºF) until golden brown, 20 to 25 Mins. When cold remove from tray

* To make Renwhites solution, combine 70g Renwhites to 500ml water

FRUITED BAKEWELL • 1200g Renshaw Macaroona or Renmac • 800g Butter or Margarine 1. 2. 3. 4. 5. 6. 7. 8. 9. 10.

• 800g Egg • 600g Rice flour • 1000g Sultanas

• 500g Whole cherries • Raspberry jam to seal the pastry

Cream the Macaroona and butter together on 2nd speed. Scrape down. Add the egg in portions on 2nd speed and scrape down. Add vanilla. Fold in the flour. Finally blend in the fruit. Line a 30” x 18” baking sheet with sweetpaste and part bake for 10 minutes. Remove from oven then spread a thin layer of raspberry jam over base. Cover with mix, then bake at 175 C / 350F until golden brown. Once cool, sprinkle over with caster sugar and cut into required shapes.
